How green was my valley L ast week I had the opportunity to spend a night in Africa’s “greenest” hotel, Hotel Verde Cape Town Airport, located in Airport Industria. Not exactly the location you’d expect to find a four-star establishment, but don’t let the gritty, industrial surroundings fool you. Inside, the hotel is neat and classy, and the service – from the security guard at the boom to the front desk staff – warm and efficient.
The reason for my visit? To sample the new menu that chef Adrian Schreuder and his team have put together for onsite restaurant Nuovo. Their mission is to create fresh, simple, delicious, locally sourced dishes while staying true to sustainable and local influences. “Our aim is to source ingredients within a 160km radius of the hotel. We’re able to reduce our carbon footprint by cooking with what is on our doorstep and available at the time. In doing so, we’re able to support local and small businesses. We also only procure fish from the Sassi green list,” says Adrian. A noble and challenging task, and one ably performed by the Nuovo team. The entire menu is, in a word, delectable. To start, there’s a white bean and truffle velouté served with a Klein River grana padano cheese twist; then gin-and-tonic-cured trout, squid ink aioli, papaya, avocado and cucumber; and a superfood salad – baby spinach, butternut, pear, blueberry, zucchini, avocado, and cocoa nibs, drizzled with a light soya sauce dressing. The coconut sorbet palate cleanser that follows is to die for.
In between courses, Adrian comes out from the busy kitchen to explain his approach to cooking and running Nuovo’s kitchen. “There’s a considered focus on consumption of resources, says Adrian. “We use less water by using low-flow fittings and blast chillers over ice baths to cool food. The kitchen keeps the use of extraction fans to a minimum, employs induction cooking methods, and we switch off gas burners when not in use. The food and beverage department also filter, bottle and carbonate water on site, using reusable glass bottles. Green cleaning is essential and the kitchen uses only non-toxic, eco-friendly products.” According to Adrian, food waste represents a significant cost to the restaurant sector. “Thought needs to be given on how to use produce effectively and get creative with what you might normally throw away. We pretty much recycle everything,” he explains. With all of that in mind, I make my way to my room, where a super comfortable king-sized bed awaits – so comfortable that I almost want to cry when I have to get up the next morning. Luckily, the breakfast buffet helps to ease the pain.

Then we move on to the big guns: lamb loin chop and shoulder with aubergine, beetroot and peas; chicken with sour cream samp and broccoli; and game with a juniper and cacao nib crust, biltong pap and butternut tart. The vegetarian alternatives are equally impressive. In fact, the eggplant parmigiana was one of the highlights of the evening. And then, the pièce de résistance: ginger cake, grilled pear and crème fraiche ice cream; and sago pudding, cinnamon biscuit crumble, vanilla ice cream and raspberry coulis.

or a product made of little more than grape juice, it surprises many wine-drinkers to discover that their favourite tipple isn’t always a vegan-friendly product. Whether it’s for cutting costs or shortening the production process, animal products are widely used in the wine industry. One of the oldest examples of animal products in winemaking is the use of egg whites for “fining” astringent tannins out of red wines. Similarly, the milk protein casein is used to improve the clarity of white wines, while gelatine is sometimes used in both red and white wines. Perhaps the most bizarre agent is isinglass. Made from the swim bladders of fish, it is used to improve the clarity of white wines by removing solids in suspension. Why are they not listed on the label? These fining agents are filtered from the wine before bottling and are therefore not deemed ingredients but mere processing aids. While many cellars have found veganfriendly alternatives, such as bentonite clay, for others it’s about getting it right in the vineyard first. “We have been a 100% organic wine farm from day one and just naturally extended the organic, natural approach from the vineyards to the cellar,” explains Frank Meaker, cellar master of Org de Rac in the Swartland. “With a white wine such as verdelho, there are no tannins needing straightening out. On our reds, which

are from thick-skinned, tannin-holding grapes, we pick at healthy pH, sugars and acids, ensuring structure and balance in the wines not requiring any gizmos.” Starting out with balanced fruit makes all the difference, agrees Thys Louw, owner-winemaker at Diemersdal Wine. “We’ve never needed animal products such as egg whites on our merlot – the brilliant expressive sugars and integrated tannins make the wine easy and soft, so we don’t need to fine-out the tannins.” Not sure where to start your adventures in vegan-friendly wines? On the outskirts of Pretoria, Restaurant Mosaic at The Orient, already famous for its award-winning wine cellar, recently launched a dedicated vegan-friendly wine list.

rom the colourful graffiti art entrance and stairs, to the wall projections, long communal tables and bar stools, The Commissary has an informal, funky street vibe. Chef Wesley Randles and Simon Widdison – the dynamic duo heading up the Shortmarket Club, part of the Luke Dale-Roberts group – are firmly at the helm of The Commissary. It gives Wesley an opportunity to play with creative twists on street food classics and experiment with seasonal ingredients. “Wes chops and changes the menu as he feels inspired to keep it fun and fresh,” says Simon. They’re going on a street food recce to Japan next month, so expect new dishes inspired by their travels when they return. Operating evenings only, The Commissary opens at 6pm, with
no reservations and streamlined fast service. Once all seats are taken, newcomers put their names on the blackboard at the door and hang out over drinks at next-door House of Machines until called.
The Pani Puri Ceviche was a delight – crispy puri shells filled with yellowtail ceviche cured in tiger’s milk, avo and coconut yogurt, a creamy fusion burst of citrus and garlic with a touch of gentle spice.
The short, frequently changing menu of impeccably executed and innovative sharing plates has people lining up to eat here every evening.
Brussels sprouts were transformed into crispy nuggets of almost caramel mellowness with miso and garliccured egg yolk, black vinegar and a sprinkling of crumbled gorgonzola.
A couple of fixtures are the LDR sliders, beef patties rich with bone marrow, and the crispy Korean fried chicken wings, dunked in miso mayo. Each dish is designed to be shared and the informal ordering procedure has us greedily ticking five dishes on the list, which are delivered on enamel plates one by one as they are ready, skilfully timed so that as we finish one there’s only a short pause of appreciation before the next arrives.
Though not strictly still hungry, we couldn’t resist ticking a few more boxes – a pork taco with aromatic kimchi, and two dessert dishes for good measure. A chewy, gooey, burnt white chocolate, rooibos and peach cookie still hot from the oven, and a bowl of superb yuzu and mango ice cream made for a deliciously simple finish.

ecycling encompasses a range of concepts, from buying second-hand, repurposing furniture, to giving existing favourites a new lease on life. As Beverley Burne of Fat Flower Upholstery says, “Recycling gives a home a unique quality. There isn’t another person on the planet who will find an old piece and recycle it the same way you do. It’s the total opposite of waltzing into a chain store and picking up four chairs out of 100 identical rowed up in the showroom.” She adds, “Recycling is not only an amazingly rewarding, often emotional journey, but it’s also brilliant for nature and Planet Earth.”
Emotional
Recycling can be an emotional trip, as artist and owner of retail outlet Anthology, Terry Angelos, explains, “My favourite item is my grandmother’s wingback chair... it was faded and
outdated, so I recovered it, but patchwork-style with mismatched fabrics. I was able to use some of her original fabric that was still good, and added other sentimental fabric pieces. It’s not only preserved some sentimental fabrics, but it’s a real statement piece now.” Burne says she’s often asked to rework a piece which has sentimental value. “My clients are often given pieces by parents or grandparents due to downsizing, so we take care to keep the original shape and energy of the piece, while simultaneously transforming it into a bespoke item that fits into a usually more modern environment.
Can recycled look chic?
“Absolutely,” says Burne, “In my opinion, brand-new, contemporary furniture and art – or one composed of 100% recycled decor items, art and furniture – doesn’t have the correct energy. It’s all about the art of blending and combining old and new. It’s critical to include in a room – like a bold statement wall and fresh contemporary frames wrapped around old ‘found’ paintings. Using a bold print on a Biedermeier sofa creates a magical energy in one’s home. By the same token, taking gran’s collection of velvet and transforming it into a pair of soft ottomans for the playroom works wonders too.”
Second-hand shops
Angelos grins, “My husband jokes that when I take things to donate to charity shops I probably
bought it there in the first place!” For her, “Recycled and found objects are very much part of my art work, such as the art plates I do with illustration and collage on vintage plates. I think we are drawn to things that have a sense of story and history.” As always, paint is a cost-effective way to update second-hand furniture. “Do something unexpected like painting an old chair bright yellow. If you paint unmatched items the same colour, they start to look like they belong together,” says Angelos.
Recycling fabrics
Putting together unrelated fabrics on a chair or couch can look sensational – like an artwork. “We transform old fabrics into teddy bears, fabric offcuts into rope to weave lampshades, sentimental clothing and fabric into quilts and throws. Each piece is unique. Who wants their home to look like everybody else’s?” shrugs Burne.
Money-savers?
Burne says, “Unless you are committed to using Christian La Croix fabric to recover your found object, recycling always ends up being economically worthwhile. Having said that, many of my regular clients use the money they have saved buying good secondhand pieces, and spend more on the fabric. The results are gorgeous!” Angelos suggests, “If you don’t feel creative but want to decorate with recycled items, there are so many talented artists, craftsmen and empowerment groups making incredible things. Support them and buy something with heart and soul, and that will make a difference.”

Estate living inland in South Africa offers more choice of lifestyle than ever before
he dream of escaping the city, living close to nature but still having security and convenient infrastructure is at the heart of the huge growth in popularity of the new generation of secure estates. Whether they’re on the urban edge or deep in the bush, lifestyle is the primary attraction.

“Today, homebuyers are increasingly focussed on living in a secure environment while having easy access to amenities and outdoor and sporting activities,” says Dr Andrew Golding, CEO, Pam Golding Property. “Wellness, equestrianism, fishing, walking, and other sporting pursuits are all used to differentiate the product offering from one estate to another. The fact that more and more estates are including a wider range of accommodation – sectional title and retirement villages – suggests that demand is across the board, not just from the high-end buyer.” The types of estates on offer can be bewildering – game estates, eco-estates, country living and golf estates, and often the distinctions are blurred with many embracing elements of each.
Game estates The term game estate usually refers to fully-fledged private game reserves that earmark a section of securely fenced wilderness for residential or holiday home development. SADDLEBROOK ESTATE, MIDRAND

Eco-estates

Often also termed wildlife estates, eco-estates make conserving nature a priority. They might be close to a city or deep in the bush and generally offer large plot sizes, low housing density, indigenous landscaping or unspoilt bush, and a large section reserved
for wildlife conservation. Due to the conservation goals there are usually restrictions on domestic pets. “Buyers investing in wildlife estates in Mbombela (Nelspruit) are usually family buyers who reside in their homes themselves rather than buying for investment purposes,” says Carien Brink, Seeff, citing The Rest Nature Estate just outside Mbombela as one of the top performers in the area. Birdwatching, indigenous trees and plants, small game, dams, cycling and running trails are the appeal, with an extra drawcard for families being a Curro school within the estate. “Good pricing, excellent security features, quality finishes, a secure investment, and a relaxed lifestyle all within reasonable proximity to activities and amenities, play a big role when purchasing property in an eco-estate,” adds Carien. In Hoedspruit the Southern Cross environmental school is a factor in families moving to nearby ecoestates such as Raptors View, Hoedspruit Wildlife Estate and Zandspruit Bush and Aero estate – which has its own runway. Near Pietermaritzburg, a new ecoestate development, Intaba Ridge, markets itself to families with a similar lifestyle appeal, close enough to the city’s excellent schools, with wildlife and open views of grassland and bushveld.
Country estates Country estates are often on the urban edge or within commuting distance of the city, offering a secure green village community and catering to a live-work-play lifestyle. “Lifestyle estates are one of the fastest growing property trends that we’re seeing in SA,” says Samuel Seeff, chairman, Seeff Property Group. “Living in a secure estate where you can enjoy space and a quality lifestyle brings peace of mind, and buyers are prepared to pay a premium of 20% to 40% for a luxury home in a country lifestyle estate. Capital growth tends to outstrip that of other freehold property in an area and these properties are regarded as excellent investments.” In the Winelands outside Cape Town, Val de Vie provides the complete luxury lifestyle, with golf course, polo and equestrian facilities, fynbos reserve, spa and restaurants, and
