y first job many, many years ago was working for a property development company. One of my duties was driving around the suburbs of Cape Town, looking for viable properties for the company to buy. I have no idea why they asked me to do that – my knowledge of commercial and industrial units was dangerously limited, but I always enjoyed looking at the different buildings and the areas they were in.

he great thing about the “restaurant with rooms” tradition in the UK and Europe is that the food leads the way. Diners flock from afar to the lure of a fabulous meal based on the chef’s reputation, the rooms being the icing on the cake, a comfortable refuge to save you from driving home afterwards. Le Petit Manoir channels this spirit in a prime location on Franschhoek’s main street with a beautifully curated contemporary guesthouse and a menu worth travelling for. Serendipitously, chef Kevin Grobler, then head chef at Michelin-starred restaurant Jan in Nice, was already thinking of moving back home, when the owners of Le Petit Manoir were searching for the right chef. Everything quickly fell into place, and soon he’d swapped the French Riviera for the mountains of Franschhoek, meeting local suppliers and

building his menu around the best of what they offer. “I’m trying to keep it simple; let the produce do the talking,” says Kevin. “We’ve got amazing produce in South Africa.” His à la carte menu balances the techniques and complexity of fine dining with a refreshingly uncluttered approach. The braised beef shortrib is a case in point – a simple plating of a cube of beef, disk of kohlrabi and quenelle of kale and mustard green pesto – but the intensity of each element – the beef essence concentrated after a three-day cooking process, as is the jus, mellow-grilled kohlrabi, and rich pesto complementing both – makes it a substantial and satisfying main. Mackerel with calamari and smoked

mussels was a revelation, served on a mound of glorious fennel chutney and pickled fennel surrounded by burnt onion broth with dashi. The rich fish and lively fennel was a memorable combination, one to go back for. Our dessert of whiskey tart with real honeycomb and salted caramel was a delicious finale. Our only regret was that we were visiting for lunch, so we had no excuse to book into the luxurious upstairs rooms and wake up to sample the tempting breakfast menu (breads, croissants and pain au chocolat are baked in-house), and indulge in room service on the balcony, overlooking the lawns of the historic Dutch Reformed Church and glorious mountain backdrop.

I

n August the winners of the sixth annual Distell Inter Hotel Challenge were announced during a glamorous ceremony at the Belmond Mount Nelson. These hospitality industry awards were founded by dynamic duo Annette Kesler and Chania MorrittSmith, aiming at mentoring promising South African talent. “Tourism employs more people than the mining sector and continues to grow,” said Minister of Tourism Derek Hanekom, who attended the event. The primary objective of this competition is therefore to create and sustain a strong national base of top-quality chefs, bakers and wine stewards, through a rigorous mentorship programme. After six months of workshops, lectures and cook-offs, awards are given in categories such as Chef of the Year, Mentor of the Year, Most Promising

Baker, Best Menu Presentation and Wine Steward of the Year. Annual winners then go on to make a name for themselves, such as Tinashe Nyamudoka, head sommelier, The Test Kitchen. “Winning the inaugural competition gave me the impetus to further enhance my career, and the recognition allowed me to get more opportunities,” he comments. It also helps them to dream bigger, says Gizelle Els, who was the runnerup Best Chef in 2016 and 2017. She says the competition opened doors for her internationally, when she was offered the opportunity of a lifetime: a three-year contract at Michelin Star Hotels in the NH Hotel Group. “I will always remember where my roots are in South Africa and the mentorship that Jean-Pierre de la Motte provided during my culinary traineeship,” she says. She’s now gaining invaluable

experience under chef Arturo Dalhuisen at The White Room, learning about food preparation and plating to world-class Michelin standards. But it’s not only about nurturing promising stars, it’s about continuing the cycle of mentorship, says Ndaba Dube, Square Restaurant manager, The Vineyard, who won 2nd runner-up Best Wine Steward in 2014. “Personally I grew in confidence, which helped me become a better ambassador for the hotel. What then stood out was that my role changed from being a mentee to a mentor,” he says, which has been hugely fulfilling for him. After all, as organiser Kesler says, “The hotel industry is the heartbeat of tourism”, and these awards make a tangible difference towards maintaining high standards in an industry that is crucial to the future of South Africa’s economy.

inemakers have long given credit to indigenous fynbos for the role it has to play in crafting great wine, whether it’s pungent buchu-imbuing vineyards with wild and herbaceous notes, or fynbos corridors providing safe harbour for the natural predators that keep vineyards free of disease. Across the Winelands, it’s a key element of the Cape’s unique terroir. Happily a handful of winemakers are giving fynbos its due, naming their wines in honour of the unsung bossies that play their own small part in crafting the Cape’s fine wine. If a celebration’s in order, then it should begin with the Strandveld Vineyards Skaamgesiggie Pinot Noir Brut Rosé. This delicious Méthode Cap Classique is named after the rare Protea pudens, endemic to the hills of the Overberg. Flowering in the winter, it’s also known as the bashful sugarbush, due to the fact that its flowers face the ground, not the sun… all to make life easier for the mice that pollinate the flowers. Made from 100% Pinot Noir, this bubbly boasts a fine mousse and wonderful palate of strawberries, cherry and toasty brioche. Over on the borders of the Swartland, the Paardeberg is home to the rare

and endemic Babiana noctiflora, its delicate yellow flowers releasing a heady scent at night to attract moths. It was the perfect inspiration for the Vondeling Babiana, a delicious Rhône-style white blend with a palestraw colour to match its namesake. Winemaker Matthew Copeland builds the Babiana on a foundation of Chenin Blanc, sourced from lowyielding, 30-year-old vineyards, with the inclusion of Viognier, Roussanne and Grenache Blanc for aromatics, body and freshness. No surprise that the 2016 vintage bagged a five-star rating in the Platter’s Guide this year. In the Breede River valley the organic winery of Waverley Hills is keenly aware of the importance of fynbos, and nearly 20% of the estate is set aside for conservation. A labelling revamp put fynbos front and centre, along with the Cape sugarbird (Promerops cafer) that is essential for pollinating many species of protea. If you’re new to their range, start with the delicious Waverley Hills Grenache. Single-varietal Grenache is growing in popularity, and the herbaceous fynbos notes here are neatly balanced by the addition of small portions of Shiraz, Mourvèdre and Viognier for spice and aromatics.

illy Now encompasses a fashion line of vintage-inspired classic designs, Billy Now Corporate, an upmarket corporate-wear section, and Billy XL, a ready-to-wear collection for “bigger and stronger men”. Owner and bespoke tailor Adrian Heneke tells us more. Q: How did your business start? A: W hen I sold my previous fashion retail brand, bluecollarwhitecollar, I noticed there was a huge gap in the market for quality, upmarket corporate wear. I wanted to offer a locally produced product with better fit, fabric and detail; and use my fashion background to add a bit more flair and edge to the corporate-wear game.The name Billy comes from a bespoke pattern I developed for a client a few years back. He was a slightly bigger gentleman; instead of writing 5XL on the pattern, I wrote his name, Billy. It’s become part of what I do, offering a designer shirt range for big and tall guys called Billy XL (Extra Love for big guys). Billy Now Corporate wear is our main business, catering to small restaurant groups and boutique hotels, and Billy Now is our fashion offering, to keep myself in touch. It’s also my fun outlet, doing all the crazy things that pop into my head. Q: Why did you choose Woodstock to set up shop? A: It’s smack bang in the centre of the

creative clothing hub of the city and all my suppliers and service providers are in the area, plus some great coffee spots and other entrepreneurs. We all support each others’ businesses, so it’s the ideal area to operate from. Q: How did you find your premises? A: It was luck, really, and also speaking to the right people. It’s close to the Biscuit Mill where I trade with my fashion brand Billy Now each Saturday at the Neighbourgoods Market. My persistence paid off and I was rewarded with great studio space. Q: Why are the premises ideally suited to your business? A: It has wooden floors, high ceilings and a bit of an honest retro feel about it, which helps in the overall creative experience. Q: Who are your neighbours? A: Luke Dale Roberts’ restaurants, The Test Kitchen and The Pot Luck Club, Espresso Lab, and Blood Sweat & Polony graphic design studio.

Q: Do you operate online as well? A: We’ve just launched an online site, which is still quite new, but developing slowly as we grow the brand. Q: What’s your most popular item? A: We make great quality corporate shirts, tees, golfers, etc. and the Frankie Apron has been a big hit, made of denim and leather and personalised for our clients’ branding.

Q: What are the rental/sales prices like in this area? A: I think it’s reasonable for the space, but the area is getting more expensive as it’s being developed.

lobal Brands Magazine, a leading international publication providing opinions and news about top brands across the globe, has announced that Tyson Properties has won its Most Trusted Real Estate Brand Award for 2018.

Storage wars – the latest emergent trend

T

he demand for selfstorage space has grown exponentially in recent years, with most of the conveniently situated facilities already full. Chris Cilliers, CEO and principal, Lew Geffen Sotheby’s International Realty Winelands, says the shortage persists despite a number of new facilities becoming available. “The growing shortage of development land in densely populated areas and cities in particular, has resulted in changing housing trends with more compact homes being built. Smaller homes usually have less storage space and only one garage. Another contributing factor is the inevitable downscaling of residential accommodation

resulting from the economic crunch, as well as increased downsizing by empty-nesters,” he explains. Unlike new residential developments, which require large tracts of vacant land, there are still ample suitable locations that can easily be converted to storage facilities. “Any industrial or commercial areas close to town centres are ideal for such properties and in more built-up locations, old office blocks and commercial buildings are being converted,” Cilliers says. According to lead auctioneer and director of The High Street Auction Company Joff van Reenen, they have seen a significant increase in demand for such properties. “Stock is scarce,

especially in densely populated areas and when they do come onto the market – old or new – they get snapped up quickly. We are finding that demand is greatest in CBDs and the high-density, higher LSM residential markets where people can afford to pay for storage of goods they don’t often use.” And in a property market that has been in the doldrums for some time, this is one sector that offers prospective investors a promising return. “If a storage unit is in a well-positioned area it can be a good investment as it’s cheap to maintain with little or no water usage, little electricity required and security the only real priority. It can offer a great rental return with a low expense cost,” he concludes.

Our extended longevity means retirement consists of a number of phases, and due to medical intervention, the pace of deterioration in the last phase of life seems to be lengthening dramatically. “This is the phase that is so extremely expensive – it exhausts financial resources faster than almost any other event in life,” says Paul Rosenbrock, director, SA Association of Retired Persons (SAARP). Rosenbrock’s a firm exponent of retaining independence by moving early into your choice of retirement village – he urges retirees to explore all options, comparing apples to apples financially and otherwise, and choosing a home which ticks their particular boxes. He places special emphasis on doing homework, particularly financial, before getting involved in anything.

Levies

This is always a tricky one. Rosenbrock says, “A single generic problem facing all retirement village developments – in fact, retirement as a general concept – is that over a protracted period, many people are faced with the problem of increasing expenses versus inadequate increases in income. When this situation arises, the crisis is very difficult for both trustees and residents. It cannot be expected that other residents subsidise one person by using, for instance, accumulated reserves.” Rosenbrock believes if dissatisfaction arises because residents deem levies to be “too high”, it’s often

because they didn’t do their financial homework when they were purchasing. “Because I can just afford the levy when I purchase and don’t take account of inflation and so on (factoring these matters into my future budget), I can hardly blame the trustees. A history of the levy growth is something one should study prior to purchase commitment. “In all likelihood, one will naturally be going smaller as you age. It is far more appropriate and satisfying from a dignity perspective to start a bit smaller and not be faced with the issues which may otherwise arise.”

Life rights or sectional title

Stefan Botha, Rainmaker Marketing, examines the levy factor for both retirement models. “With sectionaltitle ownership you own the asset, and your levy works in the same way as any other sectional-title scheme – it includes aspects such as estate security, refuse collection, insurance of your unit, and maintenance of common areas. As the owner, you are responsible for your unit’s maintenance and would pay extra for medical care, meals or cleaning, depending on your requirements. “With life-rights, because the unit doesn’t belong to you, the unit’s upkeep and surrounds is the developer’s responsibility, which may result in a lower monthly levy. There is also no risk of incurring a special levy related to development upgrades. The life-rights levies also need to be estimated by the developer two years in advance, which does assist with a retiree’s financial planning.

“No standard levy – for either sectional title or life rights – includes medical care, cleaning solutions or meals. Both ownership options would generally provide options to utilise these services at an additional monthly cost.”

On-site care or outsourced medical?

Increasingly, new developments are outsourcing care or creating stand-alone medical facilities – essentially, pay as you go. At Mount Edgecombe Retirement Village (MERV) – sectional title – you’re living within a greater estate: Kindlewood. Developer representative David Cameron unpacks the levies, “The monthly Home Owners Association (HOA) levy (currently R1,700) covers Kindlewood Estate’s features and amenities, such as security, general road and estate maintenance, landscaping maintenance, building insurance, common property lights and electricity, communal facilities, and pool maintenance. The body corporate levy covers external home insurance, personal garden service, retirement village upkeep and maintenance, and a village nurse able to provide basic tests and check-ups in your home (varies according to your unit size). There is a once-off levy – a stabilisation fee of R20,000 – used to enhance the estate’s capital growth like building a gym. At MERV, you only pay for what you use, so if you live there and are fit and healthy, it costs nothing. The care facility is a stand-alone business, so only when and if you need the care, it’s there.”
