ust Bistro and Bakery on Vrede en Lust Wine Estate near Franschhoek, is quiet at lunchtime midweek in early spring, with customers peacefully soaking up the sun on the terrace. Weekends are a different story, every table filling up with families and foodies for chef Jean-Pierre Smith’s excellent bistro fare, gourmet sandwiches and pizzas. These are made in the huge wood-fired bread oven once the morning baking of five different artisan breads is complete – these are the real deal, taking three days from start to finish using BioWheat flours from Golden Reef Milling. While Jean-Pierre is still firmly at the helm, Lust has grown beyond being a one-man operation with chef Johan van Schalkwyk joining the bistro as head chef at the beginning of August. a spell as head chef in a Normandy chateau with its organic vegetable garden, and several years of running his own catering and restaurant ventures in Wellington, Johan was excited to find that Jean-Pierre’s philosophy of fresh local ingredients, simply prepared, completely matches his own approach. “When ingredients are good and organic they have plenty of their own flavour and don’t need lots adding to them. My idea has always been to put the ingredients on the plate and let them do the talking.” He loves “the luxury of a chalkboard menu”, each day deciding what to serve according to the weather and the freshest produce. On my visit the first nectarines of the season had just come in. Wrapped in Richard Bosman’s prosciutto and grilled, on a salad of thin, crunchy asparagus, creamy chevre, with a peppery mint and apple dressing, it tasted like spring on a plate.
Fat West Coast mussels in a creamy saffron curry sauce followed – indulgent comfort food – then the Asian salad of tender rare beef on noodles topped with zesty pickled celeriac and apple, fragrant with star anise, revealed another palette of flavour. The informality of build-your-own sandwiches and pizzas is appealing for a casual family lunch, and one Sunday a month Lust is packed for its renowned buffet, but I’ll be back to discover the seasonal flavours on the chalkboard menu and revel in the amazing variety of excellent breads.

Ken’s dirty little secret Ken Forrester, the Chenin King, is shaking up the local wine industry with an eye-catching new release WORDS: RICHARD HOLMES
H
ow much would you pay for a bottle of Chenin Blanc? R40? R100? Perhaps R180 at a push? How about R950? That’s what a bottle of Ken Forrester’s Dirty Little Secret will cost you.
“This was probably one of the most stressful winemaking projects I’ve ever embarked on,”

says Forrester of his latest Chenin Blanc project. “I wanted the wine to be from a venerable old vineyard, and finding old vineyards is hard enough, let alone finding one that nobody else is using. And finding one that’s an old Chenin Blanc vineyard is another thing altogether!” It took Forrester three years of searching before he discovered an old Chenin Blanc vineyard, planted in 1965, tucked away in the Piekenierskloof near Citrusdal. It’s no surprise that he wanted the wine to speak for itself in the bottle. “I wanted to show the taste of the soil and the true terroir of that vineyard,” says Forrester. “All of our interventions in winemaking are the things that dull that resonance of the terroir in the wine.” In the cellar Forrester let the wine run its own course. The grapes were left soaking on the skin and stalks for two weeks to provide natural tannin and structure, with natural fermentation from wild yeasts taking place in old oak barrels. With three barrels going awry during fermentation, and some wine lost to careful siphoning from the barrels, in the end just five barrels of Forrester’s natural unfiltered (hence the name) handcrafted wine were left. A mere 2,000 bottles of the Chenin Blanc labelled simply, Dirty Little Secret: One (One indicates the series of wines). So after all that, would you pay R950 for a bottle? “Given the effort that went into it, I think it should sell for twice that price,” argues the ever-bullish Forrester. “I think the wine stacks up, but I also think too many South African winemakers are unaccustomed to asking a fair market price for their wines.” The proof is in the sales and the first vintage is all but sold out, although a few bottles remain available for tasting at the cellar door in Stellenbosch. So will we see number two coming from the 2016 harvest? “This year, the wine is giving me even more grey hairs!” says Forrester. “It’s really given me a hard time. So unless it starts behaving, it’s going to get sold off as box wine!” Will it make the grade for being a Dirty Little Secret? Until next year, that’ll be Forrester’s little secret.

abrielskloof, a familyowned and -run wine and olive estate, has released a new collection of wines that encapsulates the gorgeous hills of the Overberg which surround it. Aptly named The Landscape Series, the first two vintages – Elodie and Magdalena – are the summer wines you need in your life. “The inspiration behind The Landscape Series was to create a platform where we could have a range of wines that combine South Africa’s old vine treasures with our own best vineyards,” says winemaker, Peter-Allan Finlayson. However, the theme of landscapes that ties the series together came from a somewhat unlikely source, as Peter-Allan says, “When artist Niel Jonker was exhibiting his landscape paintings in our chapel, the idea of using his work on the labels evolved into calling the range The Landscape Series.” As a plein air artist, bronze sculptor and artisanal bread maker, Niel is renowned for his landscape pieces that he paints directly from nature, submitting to the rigours of natural processes. Each wine in the collection is adorned with its own, once-off painting on the label, which provides insight into the terroir of the wines. The Chenin Blanc, Elodie 2015 and the Magdalena 2015 (a blend of Semillon and Sauvignon Blanc) are the first of five wines that will be released as part of the series. Each of the wines is named after
the two sisters of Bernhard Heyns, owner and founder of Gabrielskloof and father-in-law to Peter-Allan. “I hadn’t worked with Chenin or Semillon before, but my winemaking philosophy is one of representing the vineyard above all else and as little intervention in the cellar as possible, which simplifies the process. And I knew that if I could secure the right vineyards, then the rest would be relatively straightforward,” adds Peter-Allan. Both naturally fermented wines, The Elodie is from old dry land Chenin Blanc bushvines, while the Magdalena has been made since 2009 and was the first vintage made by Peter-Allan since his arrival at Gabrielskloof in 2014. What can we expect from the rest of the vintages in The Landscape Series? Peter-Allan says, “We will be launching two new Syrahs from our own vineyards next year as well as a Cabernet Franc. The idea behind having two Syrahs is to represent the two major soil types we have on the property – our sandstone vineyards produce a Syrah that is elegant and perfumed, while the heavier shale soils offer fruit concentration and depth.”

A: A fter eight months of production, we needed to move to bigger premises. We looked at a few spots in industrial areas as rent is generally cheaper and space is bigger. We love Paarden Eiland as it’s becoming one of the in places in town for business, and for logistics purposes the location could not be more ideal. If there’s no traffic, it takes a mere 12 minutes to get to the CBD. Q: H ow did you find your premises? A: We drove by and saw an ad on the building. Q: What are the rental/sales prices like in this area? A: Rental prices are generally R55 to R75/m 2 for smaller spots, and the larger factory spaces (300m 2 and more) R40 to R50/m 2 .

Co-owner Gabi Esposito tells us about the production base in Paarden Eiland with its new coffee shop, Affogato. Q: H ow did your business start? A: Jarred Plu’g and I both have a passion for health, wellness, balance and nutrition. We saw a gap in the market for no-added-sugar, gluten-free desserts that actually tasted good! So, we added some raw protein to the mix to increase the

Then we have an awesome private tiling company who come join us for their daily coffee fix, as well as a cold storage company and a fire training department. Q: Why are the premises ideally suited to your business? A: T he fact that we found our gem of a spot on the busiest street in Paarden Eiland is a win in itself. Once here, we discovered another
gap in this particular market for a decent cup of coffee. We had enough space to open Affogato Urban Cafe – a green, rustic, coffee-on-the-go shop where we sell fresh croissants, confectionary and Giovanni’s coffee. Q: What is your shop foot traffic? A: It’s hard to say now as we just opened, but we probably sell around 20 cups of coffee a day and plenty of toasted bagels and chocolate croissants. Q: D o you have any expansion plans? A: If we expand, it will be to an independent ice-cream producer taking on large orders. We will be in this spot for the next two and a half years. So after that, who knows? Maybe we will then be setting up in Europe. One can only dream. Q: D o you operate online as well? A: At the moment, no, but people can order and collect from our premises. We just don’t deliver. Q: What’s your most popular item? A: O ur most popular ice cream is Afterdark Cacao. At Affogato: cappuccinos, toasted bagels and our toasted chocolate croissants.

Lessons from Brand Pretorius I
n 1997, McCarthy Limited was a blue-chip listed company that traded at R21/share. By 2001, the share price had collapsed to 18c. The company that employed 15,000 people was technically insolvent. It owed eight banks a cumulative R1,5bn. In this turmoil, the man responsible for turning things around was the CEO, Brand Pretorius. And his success in doing so has made the soft-spoken, but steel-nerved Free Stater an icon of South African business. A more unassuming hero one is unlikely to meet, but the manner in which Pretorius ultimately saved the company and saved thousands of jobs has attained legendary status. This is not because of some remarkable idea or brilliant innovation, but actually quite the opposite. He went back to the very basics of why anybody does anything. For Pretorius, the key to sustainable success was that you had to stand for something. Whatever decisions were made in the company had to be based on a set of principles and values. In his own words, this is how this realisation came about: “Many years ago somebody said to me, ‘Do you have clarity regarding the principles you stand for?’ That made a big impression on me, and late one night I sat in my study and developed my own personal code of conduct. I listed the principles I believe in and stand for. “That is the best one hour I have ever spent, because thereafter whenever I had to do an assessment of my own behaviour or make a difficult decision, I revisited those principles and values that I believe in and anchored my behaviour on them. It was Malcolm X who said that should you not stand for something, you’ll fall for anything.” Pretorius went to the extent of keeping this code of conduct in his desk drawer so that he could refer to it at any time. If he ever had any doubt about doing anything, he would check how matched he was against these principles and values and use that to guide him.
McCarthy is now part of the Bidvest Group, and has an annual turnover of more than R20bn
There is no question that right now South Africa is in desperate need of more men and women like Pretorius, whether in business or the government – people who can offer principled leadership. As Pretorius has shown, the less you think of your own selfish interests and the more you consider the values you should be standing for, the greater the benefit – both personally and for those around you.

Elections improve buyer sentiment
I
n the 3rd Quarter FNB Estate Agent Survey, agents point to local government elections having improved consumer sentiment, although they are not seeing a stronger housing market just yet. John Loos, household and property sector strategist, FNB Home Loans, says, “We saw business confidence in the residential industry (which is not the same thing as the housing market) being strongly buoyed by the outcome of the early-August local government elections, at a time
when nothing very exciting appeared to be happening in the actual housing market itself.” Loos says it’s reflective of the importance of the local government for the smooth functioning of the property market. If there is an expectation that a local government change will bring about better service delivery, this would understandably buoy confidence among many property industry players. He said that in those major metro regions where
local government change had taken place, the perceptions of the agents regarding positive consumer sentiment were stronger than those where it was business as usual. In eThekwini and Cape Town, only 9,1% and 10,7% of agents respectively cited a successful election outcome as boosting consumer sentiment. By comparison, in Tshwane, 45% cited this driver of consumer confidence, in greater Joburg 27,5%, and in Nelson Mandela Bay the estimate was 36,4%.

T
here are pros and cons for selling your home in any season, but market activity is invariably highest in spring and early summer, says Tony Clarke, managing director, Rawson Property Group. “Part of this is the psychological effect of the warmer weather, but it’s also because there are a lot of new properties being listed. It’s an ideal time to think about what you’ll be
needing in the new year, and what you can afford with expected bonuses and annual increases on the way.” More buyers means more contenders for properties, and Clarke warns that spring purchases tend to be faster-paced and more competitive than other seasons. “Buyers in spring should get prequalified by a bond originator,”
he says. “This will give them an accurate idea of what they can afford, and also strengthen any offers they decide to make.” Sellers tend to enjoy this kind of buyer rivalry too, as it often means faster sales and higher prices. However, since there are also more properties going up for sale during spring, they could find themselves facing stiff competition.
From a sector perspective, we favour the mid-market, budget and serviced apartment segments over luxury and upper upscale for hotel investment. High currency volatility across the region has caused challenges to investors in terms of inflation, rising lending rates and uncertainty in investment underwriting. The pace of demand growth is disparate across the continent. As a result, hotel performance and investment sentiment across the continent has proved mixed thus far this year. Brettenwood hits R11m sales record T he Home and Country Property, the in-house sales entity for Brettenwood Coastal Estate, announced that it had recently sold a home for R11m. Outside of Zimbali Coastal Resort, only three homes within an estate in Ballito have fetched over R10m. With the recent sale in Brettenwood Coastal Estate doubling the average
estimate of Ballito property prices, and being one of the few homes to sell for R11m in Ballito, this is a clear indicator how Brettenwood has grown into one of the most prestigious estates within the area.

T
he first thing you notice about Constantia is how green it is. Despite increased development in recent decades, the old wine farms, the forest stretching down from the mountain, the green belt areas and commons, preserve the feel of the rural agricultural valley that for hundreds of years supplied Cape Town with everything from wine to fresh flowers. Long country walks along the green belt enjoying the prolific birdlife, large tree-filled gardens, mountain and forest hikes, and easy access to horse-riding and mountain biking trails, more than make up for the slightly longer commute into town. And residents who choose Constantia value that semi-rural lifestyle. Not that the conveniences and luxuries of life are too far away. Shopping is easy and varied at Constantia Village and High Constantia shopping centres, with everything from supermarkets and delis, to upmarket boutiques and chic decor shops. Agent commentary Q: What attracts buyers to the area? A: Constantia has traditionally been a highly sought-after area and is particularly appealing due to the natural beauty of the valley, world-class restaurants and wine farms, sports complex and shopping centre, as well as its close proximately to the city, good private and government schools and, of course, beaches. Buyers are attracted to the area for its abundance of space and picturesque surroundings. Coupled with this, Constantia offers fantastic value for money when compared to surrounding areas. The large erf sizes and spacious homes are ideal for family living or for those who simply enjoy their privacy and quiet.
Q: What can buyers expect to pay for property? A: Price ranges in Constantia are highly dependent on position, as there are many different pockets within the suburb. Looking in real terms, a buyer is looking at an entrylevel price of about R6m in the Constantia Upper area. Property in this area is likely to be about 30 years old and in need of renovation. With excellent design and finishings, a property can easily have value added, and there is low risk of overcapitalisation. Constantia Upper is a fantastic area to invest and live in, as it offers a unique lifestyle, green spaces and excellent security. It also holds value even in uncertain times.
Q: What types of properties are available? A: Constantia comprises a number of areas with a wide range of properties. In the Upper Constantia area, you find top-end mansions, generally on large plots priced in the upper millions. There are no apartments and the only sectional title properties are in Rushmere, a security village where a small unit starts at R3m.
