After two or three days, the fermentation is halted with the addition of wine spirits or unaged brandy before the fortified wine is matured. The length of maturation dictates the eventual labelling and style of the wine: Cape Ruby for wines aged between six months and three years; Cape Late Bottled Vintage for those aged a minimum of three years, of which two must be in oak barrels. And while they may not be able to use those four naughty letters, leading Cape producers typically rely on the classical Portuguese cultivars to make top-notch Port-style wines: the likes of Tinta Barocca, Touriga Francesa and Touriga Nacional.

jing Tjing rooftop bar has been a happening spot for cocktails and after-work drinks since it opened five years ago and regularly features on the lists of Cape Town’s top bars. But, if food is your focus (and having scooped Eat Out awards two years running, the food is well worth focusing on) rather skip the climb to the rooftop and enjoy the oasis of elegant calm provided by Tjing Tjing Torii on the first floor. Here you can explore the full menu of Asian-inspired small plates, bowls and larger dishes and enjoy a relaxed tapas-style meal. Chef Christi Semczyszyn is the mastermind behind all three levels of the historic building, including the day-time cafe Dear Me on the ground floor with a flexible menu that caters to all dietary requirements. “I love Japanese food and when The White Room closed we decided to go that route,” says Christi about opening Torii as a regular evening restaurant two years ago. “But there are so many other Asian things that I love to do that we've kept the menu broad Asian with a focus on Japanese.”

On a chilly winter evening, we fell in love with the ochazuke, a bowl of sushi rice in matcha and dashi broth topped with succulent strips of fried linefish – the ultimate umami comfort food. Small tastes that also wowed us were the tempura oysters (heaven in a shell), beautifully fresh and zesty tuna tataki, and bang bang cauliflower – deep fried and piping hot, which made a substantial winter-warming starter. The casual finger food that also appears on the bar menu upstairs is well worth tucking into: try the pork atsui dog with plenty of miso and ginger enlivening the pork sausage and home-made kimchi topping, duck bao rich with hoisin sauce, crispy karaage chicken wings with a lime and chili aioli, and succulent sticky pork belly either on skewers or in a bao. Christi recently came back from maternity leave and is planning to change up the menu this month. “The menu started out just being two pages and it actually keeps on getting bigger and bigger. As we come up with new dishes, we never want to take any old favourites off!”

last 24/7 provides essential corrosion control services to the maritime and industrial sector. Christopher Mathobie, owner, tells us how he discovered the gap in the market. Q: How did your business start? A: At 43, I found myself unemployed and knew it would be a challenge to re-enter the job market due to my age. Business has always been a passion of mine. While employed, I was exposed to various projects in and around Cape Town Harbour and observed that one of the major challenges to most companies was the availability of a service provider doing blast and coating to protect metals from degradation. In 2006, Blast 24/7 was established and we pursued this gap in the market. I joined the Shanduka Black Umbrellas programme in 2014, as I knew that I needed more exposure to business processes, and within a
year I was able to give my business a handsome boost, applying the knowledge and skills supplied by them. The most important lesson learnt was to work on the business, as opposed to working in the business. Q: Why did you choose this area to set up shop? A: Blast 24/7 originally operated from the harbour, then we moved operations to Paarden Eiland for five years. That location didn’t support our long-term plans, as we needed bigger premises and laydown area. We moved back to Cape Town Harbour to place our business in direct traffic of our target client base, ship owners and engineering companies responsible for maintenance of ships and vessels in the harbour. Q: How did you find your premises? A: The premises we now occupy are part of the TNPA (Transnet National Ports Authority) property. They were advertised for lease early 2016 and, on inspection, I realised that this would be the perfect fit for our business and expansion plans. Q: Why are the premises ideally suited to your business? A: We needed a large laydown area and workshop. The premises offer 800m2 under roof, so we were able to build a large blasting booth and ample spray booth.
Q: How many people go through your business each day? A: A n average of four to five people come through our doors weekly, this accounts for a portion of our revenue. Q: Do you have any expansion plans? A: We started our expansion in 2016, by acquiring bigger premises, and we invested in the right equipment to concentrate on doing ship hull painting and tank cleaning. Our initial business was more workshop based; now we put more emphasis on site work. Q: Do you operate online as well? A: We plan to have a website soon. Q: What’s your most popular service? A: Our most popular service I like to refer to as “hit and run”: this is the first step in the corrosion process, blasting and applying a primer coat to the steel. But as a company we’ve evolved and now are changing our processes to include coating systems.

W The Northern Suburbs area is very convenient – it's close to the city, the wine farms and the beach, the Cape Town CBD and the Waterfront; it’s very easy to get everywhere ANITA VOS, RESIDENT
hen you think of luxury living in Cape Town, areas like Clifton and Constantia are the first to spring to mind. However, the residential estates of the Northern Suburbs are quietly rivalling them in lifestyle and demand. The convenience of the location – with easy access to the N1, the airport, the CBD and the Winelands – is the deciding factor for many residents. “The Northern Suburbs is a growth area space-wise and businesses follow that, placing us closer to work and pleasure,” says Hugh Ferguson, a resident at Baronetcy Estate in Plattekloof. The Northern Suburbs area, extending from Plattekloof to Durbanville, Bellville, Goodwood and Parow, has well-established facilities including public and private schools, top medical facilities at Mediclinic Panorama and Tygerberg Hospital and shopping shopping and entertainment amenities such as Willowbridge, Tyger Valley and Canal Walk. The Northern Suburbs area has another big drawcard: several prestigious residential estates are clustered around Tygerberg Hill, a nature reserve and green lung which counteracts the suburban sprawl and links into the green spread of the Durbanville Wine Valley, with wine farms, mountain bike
trails and nature, in your backyard. “I most like the tranquillity of Baronetcy Estate,” says Hugh. “It’s a closed environment and the residents decide on what to do to enrich the quality of our lives. I love the mountain and the feeling of closeness to nature with all sorts of wildlife in the form of birds roaming as if we live in the country.” On the Durbanville side of the hill, two more prestigious estates flank each other, Kanonberg and longstanding Welgedacht. Demand is so great at Welgedacht that the trend is to buy an older house, demolish and then rebuild just to secure a place within the estate. “Although it’s very central and close to the city, Welgedacht has got a relaxed feel and the houses aren’t close together; it’s very spacious,” says resident, Anita Vos. “We’ve got 8ha of open natural space with parks and dams, which is nice for walking and for kids to play.” On the other side from Plattekloof and Burgundy, the grand view over Cape Town is the icing on the cake. “The view is of the most beautiful city in the world edged by the mountain and the sea,” says Hugh. “You see the ships at the harbour and a view over tomorrow’s weather before even the weather bureau knows what’s coming.”
