n this week’s issue, local wine fundi Richard Holmes takes a look at one of my (recently rediscovered) favourite drinks: rosé. And what better way to enjoy a few glasses than with a delicious meal. Chef Mynhardt Joubert from Mynhardt’s Kitchen in Paarl developed this recipe for home-cured salmon trout, to accompany the Roodeberg Rosé 2018, but it would work equally well with any of the ones Richard mentions. Says Mynhardt, “You can prepare this as a side dish or even serve it as a main course with some crusty baguette. The trout needs to be cured for at least a day in advance and improves with standing.” Perfect for those balmy summer evenings. Enjoy!

Tickled pink Summer is here, and that means it’s time to put the rosé on ice! Try these five tipples… WORDS: RICHARD HOLMES

ver the past few years rosé has gone from being snootily sniffed at to sipped and swirled with a smile. Part of it is changing fashion, but we also have the winemakers to thank for giving pinks a little more love and attention.

For the salmon trout • • • • • • • • • • • • • •

600g–800g filleted fresh salmon trout (3–4 fillets) lemon juice 1t fennel seeds 1t dill seeds 1t aniseed 1t dried coriander seeds 1t yellow mustard seeds 1 small chilli, deseeded and chopped 25g peeled and sliced fresh ginger 100g sugar 100g coarse salt 1 cup chopped fresh fennel bulb and leaves 1 cup chopped red onion 200ml KWV Cruxland Gin

Crimson-red, overly sweet fruit bombs are few and far between, with nuanced and complex rosé wines now commonplace… and affordable. What’s more, rosé is versatile enough to sip on its own – nobody will stare if you add a block of ice – or serve with light summer dishes. If you’re stocking up for the holidays, try these five favourites…

Method 1. Wipe the salmon trout with a wet clean kitchen towel dipped in lemon juice and place in a flat oven tray. 2. Mix together the dry spice ingredients and dry roast in a pan for three to four minutes until the first popping sounds and hints of smoke occur. Remove and leave to cool. 3. Mix the dry roasted spices, salt and sugar and rub carefully into the fish. 4. Lay down the first fillet of fish and cover with some chopped fennel, onion, chilli and ginger and the dry spice mix and continue by stacking and spicing the fillets on top of each other. 5. Pour over the gin and place plastic cling film over the fish, place another oven tray or pan on top of the fish, and press down with a heavy object. Place in the fridge and let it cure for at least 24 hours. 6. Remove and wipe off all the excess spices and slice thinly.

Method Arrange all the ingredients onto individual plates or one large platter and season with salt and pepper to taste.

One minute you’re cocooned in soft muslin and the next you’re showering off scented herbs that leave your skin glowing and healthy

A

hidden courtyard (with parking) leads to an unassuming historic building off Stellenbosch’s Dorp Street. This is Eike, Bertus Basson’s sixth restaurant and brimming with excitement and creativity. “It’s all about being South African,” says Chef Bertus. “We’ve got so many quirky, cheesy bits of being South African that we all understand.” He serves up a snapshot album of nostalgic food memories, culinary time-travel that is sometimes playful, sometimes down to earth, and always delicious. The multiple-course tasting menu (we lost count!) kicks off with the aperitif trolley. With a bloedlemoen gin and tonic in hand, we sample a series of canapes: a chakalaka, maize and morogo mouthful; a bite-size “bobotie” – springbok tartare with gentle bobotie spices; and sweet potato and curried custard. Bertus channels fancy 80s restaurants with an over-the-top prawn cocktail, his version a convincing argument for bringing that retro cliché back. Next a bit of cheesy fun as a “jolly jammer” and milk is served, a savoury Gruberg cheese biscuit, centred with tomato and thyme jam, dunked in an almond milk and spring onion gazpacho.

ou won’t want to rush off after enjoying a treatment at Delaire Graff’s recently revitalised spa. First up, you could drink in the view from the infinity pool which overlooks the valley below, or lounge inside by the fireplace, enjoying some freshly brewed kombucha. Or perhaps you want to round off your experience savouring their unique Afro-Asian high tea with green tea and chocolate Swiss rolls, accompanied by raspberry meringues. Whatever you choose to do, I recommend setting aside more than a couple of hours for a visit to this spa. From their reception area overflowing with the most exquisite flowers, to the five suites all featuring luxurious little touches, to the treatments themselves, you can tell that new spa director Hildegard Carstens has put a lot of

thought into crafting a holistic wellness experience that will leave you feeling utterly pampered and renewed. I was lucky enough to experience the Terres D’Afrique Healing Fynbos & Mud Cocoon, perfectly timed to revive this winter-weary body. It’s a rich experience for the senses, featuring varying smells and textures, so that one minute you’re cocooned in soft muslin, and the next you’re showering off scented herbs that leave your skin glowing and healthy. But if the treatment was a treat, lunch afterwards at their restaurant Indochine was the standout. Sitting beneath an arresting “Swallows in Flight” art installation, their special spa menu is all about light, lean dishes bursting with flavour. Think ancient

grains with truffle and poached egg, red curry with tofu and snow peas, or donburi: a dish with brown rice, avocado, edamame and salmon. Every plate of food is a feast for the eyes as well as the palate, featuring exquisite crockery and gorgeously bright colours; no wonder it was an Eat Out Restaurant Awards Top-30 nominee. Walk off lunch in the botanical paradise that is Delaire Graff’s gardens, designed by Keith Kirsten to be in flower 365 days of the year. Pause beneath olive groves, pass the kitchen’s vegetable and herb gardens, or glimpse some of Laurence Graff’s art during your stroll. Whether it’s to celebrate a special occasion or simply to get away from it all, this is certainly a spa experience above the ordinary.

Bread dough that was proving on the table on arrival is cooked over the wood fire into roosterkoek. A candle with a

story is lit in the centre of the table and the substantial bread course comes with cucumber and amasi, pig’s head terrine and asparagus. As the edible candle melts, we dunk sourdough bread chunks into tasty beef tallow and onion. An unusual highlight is the salted lamb ribbetjies slow-cooked over the fire: crispy fat, tender meat on malted sorghum, with broad beans from the garden. Bokkoms have never before appealed to me, but Bertus considers them South Africa’s own umami treasure, served with fresh harder from the Abalobi fishermen, popcorn puree and viskopsop, it comes together beautifully. No-one needs to worry about going home hungry; if you manage to polish off the final meat course of succulent dry-aged sirloin, potato-topped beef pie and signature pumpkin tart, you’re hospitably offered more. We saved ourselves for the dessert sequence: a granadilla ice lolly palate cleanser, then a showstopping and decadently delicious peach confection. There’s an optional cheese trolley, and a garden of strawberry delights to accompany coffee. The Eike experience is three hours of superb fine dining, with its feet firmly planted on South African soil.

T

here’s a hot new bakery and eatery in Salt River. Owner Ciska Roussouw was head baker and chef at The Bakery at Jordan before opening Loaves on Long in 2015. Now she’s relocated the business and renamed it Loaves by Madame Baker. Q: How did your business start? A: My business started as Loaves on Long when a friend and I decided to take a leap of faith and try to make our dreams come true. It’s been a rough ride to where we are today, but almost four years down the line I would take nothing back. Q: Why did you choose this area to set up shop? A: Woodstock/Salt River is a beautiful trendy area. I feel like it’s a breath of fresh air compared to what I was used to in Long Street. Everyone seems so friendly and excited to have us here.

Q: How did you find your premises? A: I was looking for a place to relocate to from Long Street and had a space lined up to see. The agent also suggested another spot to show me. I walked in and fell in love! It was one of those right-place-at-theright-time situations, and I’m so grateful! Q: Why are the premises ideally suited to your business? A: I’m in a new development called Salt Orchard on Briar Street. The space boasts a beautiful deck wrapping all around my restaurant. It has a beautiful feeling of old and new coming together. Ample windows allow for a nice flow of air and natural light with fantastic views from the deck. Q: Who are your neighbours? A: Businesses like Table Seven, Food Jams, Dando Coffee and JPN Concept store. We also have a hot-pod yoga studio, boxing gym, Italian cheese producers, shared office space and an IT company. Q: What are the rental/sales prices like in this area? A: The prices in Woodstock and Salt River are very different from Long Street. I also feel that it’s much better value for money as you’re not merely paying for the Long Street name. Q: How many people visit your business each day? A: Hard to say exactly, especially with

us only being open for such a short while... but I have a steady flow of people coming through for breakfast or lunch and perhaps just to grab a cup of coffee. And our bread-baking classes are well attended. Q: Do you have any expansion plans? A: For now we’re focussed on having Loaves grow and making it the go-to bakery, breakfast and lunch stop in the area, but the plans to expand have always been there. Expansion and franchising ultimately. Q: Do you operate online as well? A: We’re having our website developed and our Ubereats and Orderin should be up and running shortly. Q: What’s your most popular item? A: At this point the most famous item is by far the “mother of dragons”, our spicy chicken aioli sandwich made with homemade pickled chilli sauce. And a double flat white of course. Our glutenfree brownies also sell out faster that I can bake!

I love the sunsets and the light at dusk that lingers on. The beachfront buzzes with families strolling, dogs and babies being walked, serious athletes in training, lycra-clad cyclists, funky kids on skateboards whizzing past the regular seniors out for a stroll. T

he Atlantic Seaboard sparkles with superlatives: it’s the glitziest part of Cape Town, with the best sunset views, and has recorded the highest ever house prices and daily rental amounts. It’s Cape Town’s Riviera, loved by celebrities both international and home-grown, the wind-free beaches of Clifton an illustration of all that is glamorous about Cape Town living. But the Atlantic Seaboard is also richly varied, from the V&A Waterfront all the way through Sea Point and Camps Bay to Hout Bay, with plenty of everyday communities keeping the glitz grounded. “I love the buzz that happens in our area, and how it’s constantly changing and evolving,” says Denise Levy of Ginger and Lime in Fresnaye. “It’s great to be so close to the city, to the beaches and to the Waterfront. I enjoy the mix of people, as it’s truly a cosmopolitan and international crowd. Because of this, great businesses have sprung up around us.”

Property The Atlantic Seaboard starts with the marina developments at the V&A Waterfront and Silo District,

desirable for the secure living, convenience and proximity to the CBD. Next are Mouille Point’s sea-front apartment buildings, some spacious but old-fashioned, others newly renovated, convenient for the city and the promenade. Sea Point is the vibey younger sibling, an ever-changing mix of brand-new developments and old family properties, and home to people of all income brackets with its famous promenade a melting-pot of ages and backgrounds. “There’s a sense of community,” says Emma Wright of living in Sea Point. “Because you likely live in a flat or a cluster of small townhouses, you will know some of your neighbours. People who will feed your kitty when you’re away for the weekend, hold a spare set of keys, and help you in an emergency.” Around the curve of Signal Hill in Bantry Bay and Clifton property prices soar, with exclusive villas, bungalows and mansions overlooking the sunset ocean views. Camps Bay with its palm-lined beach conveys an air of glamour, but also has a down-to earth community aspect with family homes and apartment buildings as well as holiday villas. After an unspoilt stretch of wild coastline, Llandudno is all about escape from the city, a tiny

seaside village backed by the mountain. Lastly you reach Hout Bay, a selfsufficient seaside town backed by a rural valley where family homes have gardens and there are smallholdings, paddocks and horse-riding.

Schooling Schools reflect the cosmopolitan nature of the area. Private schools include Reddam House Atlantic Seaboard, the Cape Town French School, Herzlia Primary, Camps Bay Preparatory School and Hout Bay International School. Camps Bay High School is one of the most popular public schools in the area, with Camps Bay Primary, Sea Point Primary and Llandudno Primary feeding into the high school.

Explore Beach, promenade and mountain hikes are part of everyday life on the Atlantic Seaboard. “I love being able to walk from home either along the beachfront or on the mountain, as the walk around Lion’s Head is incredible,” says Denise. “All my best creativity comes from these special times close to nature. There aren’t many places in the world that you have sea and mountain so close together.” It’s an easy place to lead an active lifestyle, whether surfing and kayaking or on land. “There are running and cycling groups meeting on certain days,” says Emma. “I’m part of a group who runs to Camps Bay twice a week and we end at Bootleggers for a coffee. There’s a mini sub-culture and strong friendships and partnerships are formed.” A vibrant cafe culture, shopping from the designer brands of the V&A Waterfront, to the small independent boutiques of Regent Road, the foodie heaven of Oranjezicht City Farm market on weekends, strolling in Green Point Urban Park, and salsa dancing on the promenade – there really is something for everyone on the Atlantic Seaboard.
