hile you may be lucky enough to have fond memories of your parents or grandparents dishing up perfectly cooked roasts for Sunday lunch, for many of us the memory of Sunday roasts – especially eaten at a restaurant – are more often of dry, overcooked meat, tepid potatoes and mushy vegetables. Which is why I was delighted to hear that Makaron, the inventive gourmet restaurant at boutique hotel Majeka House in Paradyskloof in Stellenbosch, was tackling Sunday lunch head on. I anticipated that this would be a meal to remember. And I was right. For starters, Makaron is a beautiful place to while away a few weekend hours. Whether it’s cold and wintry or sunny and warm outside, the space adapts to be cosy or cool, intimate or spacious. Service is top class, with an enthusiastic restaurant manager and sommelier on hand to ensure your every need is met, and the food is the stuff memories are made of. We started with some raw beef, warm lettuce, garlic and crispy onion – as you do – and a breathtaking Parmesan risotto with truffle, before moving on to the main act. What’s so wonderful about Makaron’s Sunday lunch is that you can choose your main – perfectly cooked beef, lamb, chicken or fish, depending on the week and what the kitchen has on offer – and pair it with familystyle sides, including some pretty remarkable duck fat roast potatoes. If the whole table orders the same thing it arrives on big platters; if you each order a different main you simply share the sides. But the feeling is one of sharing: of a family meal, and coming together to bond over food. Isn’t that what Sunday lunch is all about?

Wild at heart

alking into the gracious historic werf at Steenberg, it’s hard to envisage the farm back when intrepid Catharina Ras was granted the land in 1682, surrounded by bush with wild game roaming. But this is the imaginative journey that chef Archie Maclean takes us on with his new tasting menu. Taking over the kitchens at Catharina’s from Garth Almazan, he was looking for something new but rooted in the history of the farm. Inspired by the spirited life of the farm’s founder, South Africa’s first female landowner, he dreamed up flavours that would have been familiar to her, living off the land through good times and lean.

reshness and elegance. These are the two words winemaker Andries Burger returns to again and again as we sit sampling the wines from Paul Cluver estate, where he has held the keys to the cellar for every one of the estate’s 20 vintages. Yet Burger is far too humble to claim much credit for the awards racked up over the past two decades, notably the Platinum and Gold medals from the 2016 Decanter World Wine Awards. Instead, he turns to Elgin’s famous cool climate terroir – the happy coincidence of altitude, a cooling southeasterly wind in the summer, and the valley’s proximity to the ocean. Little wonder winemakers from warmer Cape vineyards are seeking out parcels of Elgin grapes. The farm has been in the Cluver family since 1896, and Paul Cluver Snr was a pioneer of wine farming in the valley in the late-1980s. Since then the farm has become particularly famous for its Pinot Noir and Chardonnay.

“From our vineyards I can produce wines that are fresh and elegant, which are hallmarks of Elgin Chardonnay,” says Burger. “When you look at Chardonnay worldwide, most winemakers have made
the mistake of thinking more wood is better. In the new world we’ve moved to incorporating less wood, but the wines still have great individuality.” The estate’s Pinot Noirs are similarly elegant, favouring complexity over boldness. Although the Village range is an entry-level offering with plenty of bright berry fruit, the Estate Pinot Noir is “about purity of fruit and acidity”, says Burger. He is also devoted to the lesser-known German grapes of Weisser Riesling and Gewürztraminer, which both thrive in the cool Elgin terroir. “Our Gewürztraminer just has so much perfume,” says Burger, adding that the balance between sugar and acidity in the Paul Cluver Dry Encounter Riesling makes it an ideal food wine. “Our vines really show what Riesling is capable of.” Sustainability is also a key focus of the Cluver estate, where alien vegetation is mulched, composted and returned to feed the vineyards. Above the cellar, a bank of photovoltaic panels provide most of the energy required, while wilderness zones through the farm provide crucial corridors for wildlife wandering off the Groenlandberg.
“I want South Africans to remember how good meats like crocodile, zebra or wild boar taste,” Archie says. “They would have been on the table regularly in Catharina’s time. I want people to be adventurous like Catharina, to open themselves up to trying new things.” His experience in top kitchens, including three years with Margot Janse at Le Quartier Français, ensures that there’s nothing gimmicky about his approach. Exploring these heritage flavours with contemporary finedining flair, he has put together a superb tasting menu, with well-chosen wine pairings including Steenberg Pinot Noir MCC and Mulderbosch barrel-fermented Chardonnay 2012.
We started with an earthy umami risotto of Franschhoek salmon trout, with sour fig, piquant horseradish and pops of roe. Next grilled cauliflower played a starring role supported by bright splashes of beetroot, as a ragout, a purée and a foam, and excellent Parmesan gnocchi. The crocodile is imaginatively served, salted crocodile tail as a brandade accompanying panfried crocodile, the richness of the light firm meat cut through by a blackened corn salsa with balsamic vinegar. Discovering a source of culled wild boar, Archie added a pork belly dish that celebrates the leaner wild meat’s depth of flavour, set off by a deep cauliflower rice and blue cheese jus. Zebra turns out to be full flavoured and delicious, the pap-en-vleis creatively plated, with aubergine maize meal, a chakalaka setting sun over a bushveld salad – vibrant flavours. The cheese course, dessert and petits fours complete the story, perfectly judged to keep the palate absorbed and entertained to the end of a leisurely celebration of place and time.

oing away for the weekend is usually a negotiation between myself and my partner who prefers to be out in nature, surrounded by all kinds of bugs and sleeping in a cold, damp and uncomfortable tent. Camping has never been my idea of a getaway, so when we found out about Thali Thali Game Lodge, I was extremely excited. Why, you may ask? Well, my partner gets his tent, and I get the luxury of a B&B. Introducing glamping, SA-style. Thali Thali is situated just off the R27, near the well-known town of Langebaan. The West Coast, in all its beauty, has a certain charm that’s unlike any other area within the Cape. Thali Thali is made up of 1,460ha and is home to animals such as ostrich, steenbok, caracal, camel, eland, zebra and giraffe, to name but a few, along with hundreds of indigenous fynbos species.
Upon arrival we were warmly welcomed by owner Amalia, with two glasses of sparkling Sauvignon Blanc. Sitting on the deck of the lodge restaurant, you are instantly mesmerised by its natural surroundings. There is not a sound to be heard but the chirping of birds and the occasional moo of a herd of cows. From there we were taken to our luxury tent. The en-suite bathroom has a gorgeous cobblestone exterior and the interior of the tent is humble and exquisite, equipped with a double bed, cupboard, sleeper couch, a few kitchen amenities and even a little chandelier. The plan for our first night was to make a fire and have a good old-fashioned braai. While we were enjoying the sunset, a springbok wandered around our tent, and in the morning, while drinking my cup of coffee, a herd of wildebeest ran from the horizon toward the cows on the
further end of the farm. An experience that no words can do justice. Our second day was one we were both excited for, as this is when we would go on our first game drive. From seeing the gorgeous spring flowers in bloom, to watching giraffe graze on the fynbos, we found the game drive thoroughly enjoyable and the guides highly informative. When dawn broke on Sunday, it was bittersweet. The hazy dawn coupled with joyous birdsong made me sad to have to say goodbye. Visiting Thali Thali reignited my love for nature and I cannot wait to return to try a few more of the activities on offer.

ucking the trend, Charlie Stewart and Jakes Redelinghuys decided to cut the commute and base their web development agency in Durbanville. Charlie tells us about finding their base in Mark Shuttleworth’s former office building. Q: How did your business start? A: We decided to focus on a very specific type of website development using an open source platform called Drupal which was gaining a following overseas but still relatively unheard of in South Africa. We then set up a search engine optimisation team and started to win awards, establishing the business as one of the country’s top SEO consultancies. We gradually extended our service offering into content marketing, social media consulting and a full range of digital marketing services. Q: Why did you choose this area for your business? A: Both Jakes and I have families and maintaining a work-life
balance is really important. Although Woodstock is Cape Town’s digital marketing hub, we live in the Northern Suburbs and it made sense to locate the office to Durbanville. Q: How did you find your premises? A: We wanted somewhere with lots of natural light and outdoor space, so when we heard that Mark Shuttleworth’s old office with its beautiful sculpture garden was available, we jumped at the chance. Given our interest in open source software, it’s inspiring working in the building where the Ubuntu operating platform was conceived. Q: Why are the premises ideally suited to your business? A: O ur co-tenants are the City of Cape Town team rolling out the metro’s fibre network, so we have direct access to one of the fastest internet connections in the country. The office block is equipped with a generator and UPS backup. The gardens provide a really creative environment, and the entire team has free onsite parking. Q: Who are your neighbours? A: A nother digital agency, Swipe Interactive, and the City of Cape Town. Q: What are the rental prices like in this area? A: Durbanville is far cheaper than central Cape Town, but quality office space is much more limited. Rentals vary from about R80/m2 for industrial space to R130/m2 or so for environments like ours.

The super-wealthy want their privacy T
here was a time when the ultra-rich showed off their wealth, but people’s priorities have shifted over the years, according to David Forbes, head of private office at Savills, Pam Golding Properties’s strategic partner, who advises wealthy buyers. Now the top priorities for the ultrawealthy are security and privacy. While the majority of homeowners still want what’s known as kerb appeal, there is a growing trend among the ultra-wealthy to
hide from the public eye in an attempt to protect their homes from unwanted attention. The demand for this under-theradar living has fuelled the rise of affluent neighbourhoods like Hidden Hills and Bell Canyon in California, US – all of which guard their privacy by refusing to appear on Google’s Street View. Analysts have dubbed these attempts to take entire communities out of the public gaze an “urban-scale non-disclosure agreement”.
The wealthy are also using shell companies and other ownership structures to give property buyers anonymity, while the use of jamming signals to block location trackers such as GPS are being used to prevent attempts to follow individuals. On a larger scale, architects have begun to experiment with ways to conceal entire buildings. One of the simplest ways to remove a home from public view is to put it underground, with basement dig-downs or even entire subterranean properties.
Now is the time to go through all your bank and card statements, monthly bills and payment records to find out exactly where you stand financially. This is not the time to avoid the issue if you have too much debt and too little income. Look at your situation honestly and take whatever action is necessary to improve it. Landlords should know eviction procedures
T
he current challenging economic circumstances have not only had an effect on those wanting to own property, they have also impacted many tenants and landlords within the residential market, says Adrian Goslett, regional director and CEO, RE/MAX of Southern Africa. “Some landlords may find themselves in the situation where their tenant is no longer able to pay their monthly rent. However, landlords cannot simply
evict the tenant as they are protected by the Prevention of Illegal Eviction from and Unlawful Occupation of Land Act, No. 19 of 1998, also known as the PIE Act,” says Goslett. “The act applies to the occupation of premises which constitute a dwelling, which in the case of a landlord and tenant relationship would be the residential property in an urban area. The reason that the act was introduced was to ensure that tenants were protected from being unlawfully
evicted from the property. It is important to note, however, that while the act aims to prevent wrongful eviction, it does not mean that the tenant cannot be evicted, merely that the correct procedure needs to be adhered to during the process.” It’s imperative that any homeowner or investors who wish to let out a property, familiarise themselves with the PIE Act, along with the numerous procedures it advocates for the lawful dealing of a defaulting tenant.
Domestic and commercial entities to get involved in sustainability
H
aving an environmentally aware society starts in the home. That’s according to Lisa Reynolds, sustainability development director, SaintGobain, a leader in the habitat and construction market. “It is our responsibility as parents to teach our children to be environmentally aware, and demonstrate practical ways of making a difference to the planet starting in our own homes,” says Reynolds.
“Teach kids that littering is forbidden, to use water sparingly, to turn off lights and electrical appliances not in use, and implement basic recycling practices so that everyone in the home makes an active contribution to the process.” But she says while households can make a difference en masse, industry needs to make the biggest contribution to sustainability, and erode the age-old mindset of purely driving profitability. “The environment must be a priority, businesses must implement sustainable practices,
which will, in the long-run, result in major financial savings and improve their bottom line,” she adds. Sustainability in South Africa is certainly making significant strides to catch up with commonplace practices employed across the globe. In 2011, energy efficiency for buildings was legislated. Every five years the standards are redrafted to increase the requirements, with the long-term vision as per the National Development Plan, for a zero-carbonemission building standard by 2030.

A vision for SA
T
he South African economy is likely to grow between 0,0% and 0,3% this year. In a country where the population is growing at just over 1% per year, that really means that we are going backwards. There is no shortage of opinion on what is behind this poor performance. Many argue that the country’s problems are largely the result of government interference and mismanagement, and that if the government just got out of the way, the free market would solve all of South Africa’s problems. While there is no doubt that a more effective and efficient government is necessary, it is neither reasonable nor practical to expect the government to play no role in the economy. Not only has history shown us that the free market is incapable of proper self-regulation, but in a country with South Africa’s social structure, the government is obligated to find ways to address poverty and inequality. That means setting the rules that promote inclusive growth and intervening in areas where there would really be no business incentive to do so.
And an honest assessment will tell you that neither the government nor the free market can solve this issue on their own. History is pretty decisive on this point. But in this challenge, South Africa has an enormous opportunity. As a country, we can find the model in which inclusive growth becomes a reality, in which the government and business develop a genuine symbiotic partnership for the good of everybody. This is not utopian thinking. It’s a simple reality check. Business cannot thrive in a country that is failing, and a country cannot prosper without a vibrant private sector. What that means is that private interest and public interest are ultimately the same thing. And if all South Africans appreciated that, this really could be the great country it has the potential to be.
For example, it is extremely difficult to build a business case for rural electrification projects. If Eskom were entirely privatised, no company would see any benefit in investing in the infrastructure that this requires because the returns simply wouldn’t be worth it. The reality is that South Africa’s economy really faces one huge, overarching problem. That is that around a third of its population is excluded from the formal economy. This is more than tragic – it is foolish. Imagine a company where a third of the workforce was paid to sit around doing nothing. It would find it extremely hard to be profitable, and to a large extent this is exactly the problem in South Africa. We have this huge pool of people who could be productive and contributing to building the country, and yet they remain systematically excluded.

he glorious view over Cape Town and Table Mountain is just one of the attractions of living in Plattekloof. Q: How has the area changed over the past five years? A: Plattekloof has shown phenomenal growth in popularity and values within the last five years. Modern luxury homes, and breathtaking views have become Plattekloof’s signature and attract buyers from all over the Western Cape and beyond, especially Gauteng and KwaZulu-Natal. Some homeowners have invested millions in building new masterpieces increasing the market value. Baronetcy Estate Phase 9, the last and final phase, has sold out at a fast pace, with homeowners building to stay and investing substantial amounts in building their dream homes. Q: What types of properties are available and what can buyers expect to pay? A: Plattekloof consists of residential and security complexes. With each new suburb extension, there has been more focus on security complexes. Plattekloof I is mainly residential with one or two secure apartment blocks. Plattekloof II is also mostly residential, but has slightly more security complexes. The same goes for Plattekloof III. However, Plattekloof IV/Baronetcy Estate consists of security estates only. It seems that the growing trend is set towards living in gated security complexes. We have stands available from R2m, and entry-level residential properties from R3,8m. The most expensive property I have sold in Plattekloof is priced at R20m.
