hef Linda Burger and her husband, Russell, own the well-known Spice Restaurant in Westbrook on the North Coast. They live in the area with their five-yearold son, James Kiran, in a charming old original Tongaat-Hulett property. They bought the property because of its unobscured sea views, original parquet flooring and, says Linda, “the fact that the house felt like a home.” For her, one of the great joys of her home is the tropical garden, teeming with a range of magnificent bird species. “Every day, we spot louries, kingfishers, Natal robins, butcher birds, swallows, Cape weavers, woodpeckers, storks and the omnipresent Indian myna!” Linda loves Westbrook. “It’s a unique suburb, with a caring community, and rich in Tongaat-Hulett history. The quaint Methodist Church is at the heart of it, and we have the legendary Mala always perched at the local cafe, Seagull’s Roost, greeting all residents by name – you only find gems like her in close, caring communities! I mean, where else do you still find a suburb where neighbours bake you chocolatecoated crunchies and cook you a meal when you’re down with flu?” Westbrook has the best of many worlds; it’s five minutes’ drive from the airport, eight minutes from Ballito and about 15 minutes from Umhlanga. Linda describes it as “devoid of any skyscrapers and traffic pollution, a sanctuary suburb shared with vervet monkeys, birdlife, a couple of slithery reptiles and loads of cats and dogs.

One of Linda’s favourite spots in the area is her lounge. “We have French doors that open up onto our outdoor lounge, which offers breathtaking, uninterrupted views of the ocean and almost brings the garden and sea into our home. Early morning tea in our lounge gives me the momentary feeling of being on holiday, if only for 20 minutes, before I get cracking to make school lunch.” Weekends are busy workdays for restaurateurs, but Linda and Russell always make time for family. “Sunday is my busiest, so I’m playing at work with beautiful food and meeting beautiful people. But on Sunday evening, I sit down to supper with my family. It’s a ritual we look forward to every week, as running a restaurant doesn’t permit that on a daily basis. Monday afternoon is my Sunday and we usually have a braai at home with family and friends.” Sitting at home and enjoying homemade lamb’s kidneys on toast is one of Linda’s favourite things to do. She also enjoys having breakfast at Delish Sisters at The Litchi Orchard in Salt Rock. If James Kiran chooses, they go to La Piazza Restaurant – the play park is a big drawcard. Their favourite family getaway spot is Mkuze Falls Game Lodge in Pongola. “There’s nothing like some African bush therapy,” says Linda.

Q: How did your business start? A: I’ve always loved helping people bring out the best in themselves, but realised that it didn’t help to focus on the outside only. I wanted to help others feel good on the inside too. I did a lot of research and then decided to work out a programme that addresses all the things that would help the youth holistically. Q: Why did you choose this area to set up shop? A: My classes run from a business park in Ballito, which is central to accommodate my students. I also have classes in Amanzimtoti. Q: How did you find your premises? A: We were looking for a space that was safe and easily accessible. One of our student’s parents suggested that we team up with Skye Aerial Arts and Fitness, as it has an empty upstairs studio with mirrors and enough space. It was perfect for us and we were positive about the collaboration between our two businesses right from the start. Q: Why are the premises ideally suited to your business? A: The venue is big enough for our students/models to practise their walk and ramp skills and has enough parking in a safe area. Q: Who are your neighbours? A: The space I occupy forms part of

the Skye Aerial Arts and Fitness studio. My neighbours are a boxing gym and a dance studio. Q: What are the shop rental/ sales prices like in this area? A: I’m not sure because I rent my space on an hourly rate. This works best for us because we just pay for the hours that we use the studio. The studio is always available, but we book it as we need it. Q: How many people go through your business each day? A: I currently have about 50 models/students signed up with the academy. Q: Do you have any expansion plans? A: I have plans to start classes in Pinetown and Pietermaritzburg in 2018. Q: Do you operate online as well? A: The students enjoy learning how to walk on the ramp, and the highlight at the end of every year is the graduation ceremony where they show off their skills.

abio Venturi, director, Terramanzi Group, works as a sustainable design consultant and believes that going green starts at home. He presents homeowners with an opportunity to be eco-conscious and save money. “There are over 50 shades of green, so step back, take a deep breath and start with good, rational design – ideally aligned with a tested, best practice standard for homes, which here is the Excellence in Design for Greater Efficiencies (Edge) rating system, managed by the Green Building Council of South Africa,” says Fabio. Homes following Edge principles are designed to use at least 20% less water, electricity and embodied energy, he says, and there are many things to consider when retrofitting an existing home or building a new one. Aside from improving behavioural habits (like switching off lights), it’s possible to have an eco-friendly home through clever design and other technical features.

Energy

• Windows are one of the biggest conduits for heat loss (in winter) and heat gain (in summer). Only 20% of your wall area should be windows. • If you enjoy views and window space, install Low-E glass. This helps retain heat in winter and reduce heat gain in warmer seasons/climates. • A light-coloured roof and external walls will reflect heat and keep the home cool inside.

• External shading limits the amount of heat coming into the home and helps keep the interior cool. • Roof insulation is one of the most cost-effective ways to reduce the amount of energy needed to heat up or cool a building. In cold or temperate climates/seasons, insulate the home thoroughly before installing the heating, ventilation and air-conditioning systems.

Equipment

• About 60% of energy used by a washing machine goes towards water heating, so models that use less water use less energy. • CFL, LED, or T5 bulbs reduce a building’s energy consumption. These bulbs last longer than incandescent bulbs, so maintenance costs are also reduced. • Motion sensor lights also reduce energy consumption.

Water

• Low-flow showerheads reduce the amount of water used. • A dishwasher uses less water than washing dishes in the sink, and also saves time and money. • Dual-flush toilets reduce the amount of water used from around 13L in a single flush to 6L and 3L respectively. • Install rainwater harvesting systems and pipe the water to your washing machine, dishwasher and even shower and bath areas. Grey water also works, but requires diligent maintenance to contain odours.
