ost South Africans are familiar with Seline van der Wat and her equally talented sister, Leandri. The pair became popular for their enigmatic personalities and food creativity during the second season of MasterChef South Africa. We thought that engineer-turnedaward-winning foodie Seline would be the perfect person to chat to us about the ins and outs of whisky. Here’s what she had to say. Q: Tell us how and when your passion for whisky kicked off. A: My oldest sister married a whisky enthusiast and he was devastated that we didn’t drink whisky at the time. My new brother took me under his wing and taught me everything he knew. We ended up at Whisky Live Festival one day and it was then that I was able to find my preferred taste and style of whisky. What this taught me is that whisky is as diverse as every other beverage. I have quite an extensive whisky collection now and each flavour evokes a different memory. I love that. Q: What makes a whisky a good one? A: This is a totally loaded question! You can’t determine a good whisky by age (some young whiskies are punching above their weight).
You also can’t determine a good whisky by whether it’s single malt or not. While I prefer a single malt, my husband loves a blend. That’s the joy of whisky – each to his own. I would say, however, that process makes a good whisky, because a great process means consistency and that’s what you need from a whisky. If you’re looking to get into whisky, my personal suggestion is to find a single malt, older than 12 years from a reputable distillery to start. You might as well kick off with the good stuff! Q: What do serious whisky connoisseurs look for when choosing a whisky? A: I’d say you can divide whisky into two categories – peaty and nonpeaty. A peaty whisky has a coal-like character, making the whisky especially smoky. This includes whiskies like Johnnie Walker Double Black or a good Laphroaig. On the other hand, non-peaty whiskies are fruitier and have sweet juices of caramel or honey for instance. This includes ones like Glenmorangie or Glenfiddich.
meat marinades and in sauces. But my favourite way to use whisky is actually part of a recipe we ended up putting in our recipe book called TWO – it’s a whisky toffee apple with a creme anglais. It’s to die for because the whisky adds a stunning dimension to the dish. Q: What would you say is a major whisky don’t? A: I’d say don’t buy cheap whisky, but that makes me sound like a snob. However, honestly speaking, you do get what you pay for. Also, try buying local. Check out Three Ships Bourbon cask – it’s totally underpriced! Q: How do you best like your whisky served? A: Whisky is best served with a single block of ice. Why mix a drink, or add water to something that distillers took more than a decade to remove? It might taste harsh when you start, but you’ll learn to appreciate the strength of undiluted whisky and the effect it has on your taste buds. But if you are going to use whisky as a mix, give this recipe a try!

Q: Any secret uses for whisky that you can share with us? A: I use whisky in
Whisky sour (serves 1)
Ingredients: • 60ml whisky/bourbon • 30ml fresh lemon juice • 15ml castor sugar • 15ml still water • 1 slice of grapefruit • 1 fruit jelly starfish (250ml berry juice and 4ml agar-agar will make 4) • cubed ice Make the starfish by boiling the berry juice and agar-agar together for 4 minutes. Pour into molds and allow to set in the fridge. Remove from mold and keep in the fridge until needed. Fill a whisky tumbler halfway with cubed ice and place the jelly starfish on top, with the slice of grapefruit. In a cocktail shaker, combine the rest of the ingredients and shake until the sugar has dissolved. Pour over the ice and serve.

hen you start scouting for conference venues in Durban, you’re probably instantly attracted to those beachfacing hotels that everyone wants to go to. After my experience at the Premier Hotel Pinetown, I’ve got a new recommendation for you.
An unexpected location
I’ve lived in Durban almost all of my life, and have never once connected the idea of Pinetown with conferencing facilities, or even hotels. But this unexpected, comfortable spot changed my perspective entirely. Booking in to the cozy yet elegant suite for a Friday night, I instantly relaxed into the homely surroundings.
An incredible team
Chatting to the hotel’s general manager Ettalize Maclean it was quickly apparent to me that Premier Hotel Pinetown is not your standard hotel. Catering primarily for conferences and business travel, its unique location makes it easy to do business in the Upper Highway area. But it’s the team’s easy and interested approach to each guest that makes Premier Hotel Pinetown feel like home. When I check into a hotel that’s part of a chain, I almost expect to be thought of by room number – but that’s not how it is at Premier Hotel Pinetown, and I’m not the only one who thinks that.
Food, glorious food
I was lucky enough to experience a rather relaxed Friday night’s
dining at Saratoga Restaurant, with a special menu drawn up by head chef Jermaine Govender. It’s been a week since I visited and I’m still daydreaming about that dinner. I’m going back one day soon to treat my family to Jermaine’s desserts.

r Pixley KaSeme Street (formerly West Street) is the heart of Durban’s city centre. Bustling and home to many commercial enterprises, it has recently become the focus of a unique residential offering – Pixley House. “The conversion of commercial spaces to residential has always been in our DNA,” says Rethabile Skosana, Durban brand coordinator for Propertuity, the developers, also responsible for Joburg’s Maboneng precinct. “We are more neighbourhood developers than traditional property developers, although developing the properties is central to what we do in realising our vision.” Turning their attention to urban renewal in Durban, Propertuity identified Art Deco gem Prefcor House and converted it into 115 apartments above anchor tenant Game. Apartments are available to rent from R3,900 to R7,500. The rental scheme was a necessity after it proved difficult for potential owners to get finance from the banks
to purchase apartments, despite Pixley House selling out within months of launching. “The banks use a comparable valuation method, meaning that the subject property is not valued for what it is and what it has to offer, but rather on the surroundings and what the neighbours are selling their property for,” says Skosana. Renting has proved popular, though. “We have found that people are really interested in getting back to the city and they just need spaces that understand the customers’ expectations,” Skosana notes. Urban regeneration specialists Urban Lime has also seen the potential of the area and has converted 320 Pixley into commercial office space aimed at young professionals and entrepreneurs. “320 Pixley is a prime example of an iconic building that became unfashionable and was allowed to run down due to corporates’ migration to the north,” says Nadeem Shahid, MD, Urban Lime, Durban. “We are investing

Get pre-approved home loan finance. This creates confidence in sellers and saves you disappointment. Buy in the best area you can afford, near schools you’ve researched. Choose a lesser property in a better area. Seek out proximity to work in particular, but also schooling/transport/retail and social amenities. It’s good for you and good for resale.
L
et’s not talk about what you’d like to buy. Let’s rather begin with what you’re able to buy, in other words, affordability and how you’re going to fund it. Clearly, if you’re about to begin the search, you’ve done your financial homework. In all likelihood, you’re going to apply for a home loan or a bond. In the current financial squeeze, banks are, at best, cautious about lending, so it’s smart to get yourself pre-approved. That pre-approval is not so much for the estate agent or seller – although it does give you some clout – but rather for yourself. Although the pre-approval doesn’t come with a foolproof guarantee, it does provide you with a clear idea as to the price band in which you can look, and the deposit you’re going to need. One other thing: if you’re self-employed (and therefore can’t produce that magic three months’ worth of salary slips), raising a bond is difficult, often impossible. Banks are uncomfortable with the self-employed – ironic considering it’s the category so badly needed in the South African economy – and you’d be well advised to enlist help in amassing the required documents.

You also need to ascertain that the bank actually deems you selfemployed – you have to have a shareholding in the business where you work, and that shareholding percentage requirement differs from bank to bank – from 9% to 19% – that’s where a bond originator is very helpful. Simply put, as a self-employed person, you need a full, up-to-date history of your business over the past two to three years – audited financials or ITA34 forms – plus business and personal bank statements, and a letter of drawings from the accountant.

It’s very difficult to raise a 100% home loan, so you’ll need to provide at least a 10% deposit. When you’re calculating monthly repayments, make sure to give yourself leeway. The bond rate has been creeping up, so assume it’ll continue to do so, albeit by small increments – make sure you can cover that additional cost. House hunting is exciting, and often, frustrating. Our dreams are usually bigger than our pockets. Keep your eye on your needs, less so on the wants. Buying a property to live in, is rarely a short-term investment. Buy smart, and you’ll reap the financial rewards.

eigh’s designs aren’t new to Durban, South Africa or internationally, but her brand-new footprint in the heart of design city is an exciting one. Q: How did your business start? A: I launched my own label in 2003 after earning my stripes in years of commercial design, manufacture and retail. I’d always nurtured my design talent by competing in various design competitions, where I earned many accolades, but it was after winning the Invited Designer Category of the DDC in 2001, that I decided to go solo. I’ve supplied The Space and other SA designer emporiums since, and also now export. Q: Why did you choose this area to set up shop? A: There was a demand from inner city customers who’d always ask if they could come and shop in our studio/distribution centre. We realised we wanted something more official and comfortable as a shopping destination. 8 Morrison Street is part of the Rivertown Precinct, focusing on design and entrepreneurs which was a perfect match for us. Q: How did you find your premises? A: I’d heard about the development, and a colleague opened a collaboration pod there. I loved the layout, vibe and style. Q: Why are they ideally suited to your business? A: It’s important that my brand be part of the founding of a reputable design quarter that promotes Durban and South African design in a central and affordable location. There is a worldwide trend away from commercial shopping centres, to business and lifestyle hubs where like-minded people gather to enjoy
themselves and buy ethically made, home-grown, unique products. Q: Who are your neighbours? A: Mi Africa Decor Experience (an African craft shop), and SMB #BAPS (selling unisex streetwear). Q: What are the shop rental/ sales prices like in this area? A: Depending on what everyone sells, the prices vary. Rentals are good, and substantially less than big shopping centres. Q: What is your shop footprint? A: The foot traffic is growing now that people are getting to know we are there. There’s more development still happening which should bring more feet to the area. We also hope it’ll become a must-see for national and/or international tourists. There’s still work to be done by the developers to get the tenant mix perfect, but it’s getting there. Q: Do you have any expansion plans? A: Yes. I am about to open another stand-alone store in Work Shop New Town in downtown Joburg. Q: Do you operate online as well? A: Not independently, but I do supply Spree and Zando. Q: What’s your most popular item? A: About 80% of my assortment is dresses. I have a couple of classics we’ve repeated over the years to keep up with the demand. We always update and innovate, so our styling is fresh and current.

I
t’s easy to understand why Essenwood is still regarded as one of Durban’s better suburbs. Beautiful properties, many of which boast Victorian architecture, give the area an olde-worlde feel and are utilised by both the commercial and residential sectors. This doesn’t mean, however, that its residents are stuck in some sort of time warp. A growing number of homes are being transformed into modern masterpieces by those who prefer a more contemporary look. The area is also home to a large number of apartment blocks that display various architectural styles, including some of the best examples of Art Deco around. Freehold property only represents 21% of available accommodation and it therefore makes sense that buyers are willing to pay a premium for the privilege of owning such a property. Lightstone’s statistics indicate that 44 such homes have been registered at the Deeds Office in the past 12 months.
A total of 22 homes sold for between R1,5 and R3m, and 22 sold for R3m and above. Although the stats peg the overall average selling price at around R2,9m, it’s worth noting that the median price paid for a home in the over R3m sector was approximately R4,4m. A total of 227 sectional title units with an average price of R953,000 changed hands during the same period.
