Weekend treats
H
ow have you been spending the winter weekends? I am prone to hibernation at this time of year. I think I would’ve made a good bear. There’s something so comforting about being at home under your favourite blanket. To keep things interesting I use the time to write while sipping on something new. Here are some of my recent favourite discoveries.
Pure gold
Krone has released its latest Cap Classique called “The Phoenix Prestige Cuvee”. This multivintage wine is an assemblage of the best vintages from 2004, 2005 and 2006. Arriving in a sleek jet-black and rosegold bottle it is gorgeous to look at. Named after the mythical bird this bubbly symbolises renewed energy in recognition of the renovation of the historic Twee Jonge Gezellen estate. What takes this bubbly to the next level is the combination of vintages. Darker in colour because of maturation The Phoenix looks like honey, is silky smooth and complex. I loved the biscuity notes. It’s a taste journey that starts with fresh apple and lemon cream with a delicate mousse and ends on a crisp note. It’s a special release, so don’t miss out.

If the winter months lead you to the warmth and comfort of red wine then I suggest that you head the Syrah route. Kleinood wine farm in the Blaauwklippen Valley in Stellenbosch has just released a new vintage of its flagship wine, Tamboerskloof Syrah 2013. This handcrafted beauty is the ideal companion for a wintery evening indoors. If you like the complexity and depth of Syrah then you’ll enjoy this wine. It’s easy to understand why it’s scoring high with international wine critics. This red has dark spices on the nose and aromas of violets, red fruit, cherry, plum and rosehip. Expect to enjoy flavours of strawberry, Turkish delight and goji berries. I loved the overall dryness and weight of the wine.

ave you ever wanted to drink a coffee decorated with a swan or a horse icon? Or perhaps you fancy hearts swirling on top of your caffeine fix? It’s almost become the norm to have a pretty cup of coffee these days. At Ginger and Fig, a well-known restaurant and eatery in Pretoria, you will receive a perfect coffee blend in your cup and a picture on top. The coffee success is thanks to a great and long-standing partnership with smallbatch coffee roasters, Doubleshot. But the main man behind each creamy cappuccino is Jabu Donovan Thumbani. We caught up with him to find out more about what he does. Q: How long have you been a barista? A: I have been a barista since April 2012. Q: Why did you want to become a barista? A: At first it was about having a job, but after about three months I fell in love with being a barista and I love the industry.
Q: Who is your inspiration and why? A: In South Africa, at the time that I started, Ishan Natalie was a great inspiration. Internationally, I follow people on Instagram who give me inspiration for my latte art. Q: What is your favourite drink to make? A: My favourite is a latte, because of the opportunity to show my skills with latte art. Q: Why do you serve Doubleshot at Ginger and Fig? A: We serve it because it is the first coffee that Zane, the owner, fell in love with. We have a really great relationship with Alain and love the roast profiles that he develops for us. Q: What is your favourite thing about going to work at Ginger and Fig? A: My favourite thing is the atmosphere and my relationship with the customers. I really enjoy my job and I love what I do.

lias Letswele, executive chef at the South African Reserve Bank, has been a chef for 34 years and ensures dishes for governors and deputy governors are prepared on time and meet all dietary requirements. This successful chef has achieved numerous awards for his cooking abilities including the South Africa Chefs Association Presidents Award in 2008. Q: When did you start cooking? A: I first discovered my love for food when I was 14 years old cooking with my mother. After finishing Grade 11, I went to hotel school in GaRankuwa. I then did my in-service training as a junior pastry chef at the Southern Sun Hotel group and began my career as a chef in 1982.
Q: What does an average day entail for you? A: I send out emails with the menu to secretaries so staff can book meals for the following day. I then check bookings so I can start preparing dishes. There can be as many as seven dining rooms booked in one day and I need to ensure meals are prepared on time. I coordinate work in the kitchen, manage staff and food costs, plan menus, order supplies and ensure quality and presentation of the food is correct. Q: Who is the most interesting person you’ve served? A: I have served Gill Marcus, the ninth Governor of the South African Reserve Bank. She is always so grateful to the kitchen team and sometimes comes into the kitchen and gives
great recommendations regarding healthy ingredients to use in dishes. Q: What’s your advice for budding chefs? A: Don’t panic as few mistakes are insurmountable, and mistakes can turn out to be new discoveries. If we don’t make mistakes we don’t learn. It is vital that individuals aspiring to be chefs have a passion for cooking. Cooking is an art and a successful dish is created when one flavour does not overwhelm the others, but harmonises with others to create a taste sensation. Q: What is your favourite meal? A: My favourite meal is braised oxtail and samp, which is a wonderful winter time dish and goes well with red wine. Q: What is your signature dish? A: My signature dish is grilled salmon with poached asparagus and Hollandaise sauce because it is a light dish which is healthy and easy to prepare. Q: Who inspires you? A: Jeff Forrer, former group development director, Peermont Global: Hotels, Casinos and Resorts, is an inspiration to me. When I was around 20 years old, I worked with him at a construction company building a plant. In the evenings I assisted the cooking manager on site who prepared meals for the team. Jeff saw I had an interest in cooking and paid for me to go to hotel school.

Granted, it’s an old property, but it was well maintained. I knew that older homes could potentially present with challenges around older infrastructure such as the electrical wiring, plumbing, roof trusses and building materials. Fixing such issues if they did pop up after the sale could be frustrating and cost a truckload of unplanned money, but I loved everything about this property. None of these issues were visible when I viewed the home, but obviously it remained a real concern,” explains Ross. “When estate agent Ahmed Moosa, from Ennik Estates, informed me that the seller had signed up for a Hollard home warranty and explained what it was all about, I knew it was a win-win situation. Not only could I get the home I wanted, but I had the security of a warranty to protect me against the financial implications of unseen defects cropping up later,” he adds. And so an idea took hold that this was something we needed to share with our friends and neighbours up north, and five years later Fullinatural was born.

Q: Why did you choose this area? A: We know the area and the people in the area quite well. We know they are health-conscious and very aware of what they eat, and that’s exactly the market we wanted to target. Q: How did you find your premises? A: Knowing the area quite well, we knew about this small shopping centre in the heart of Moreleta Park (Moreleta Lifestyle Centre), which made it a very simple choice for us.

ullinatural is an independent family bakery, reviving the old ways of making bread. Located in the heart of Moreleta Park in Pretoria East, the shop started around twoand-a-half years ago with one simple mission: to show Pretoria and South Africa that you can have a slice of bread and not feel ill, guilty, or both about it.
Q: Why are the premises ideally suited to your business? A: The small shopping centre is literally surrounded by residential areas to all sides. People walk their dogs, joggers jog by and cyclists struggle up the hill in front of the centre. What’s better than having a community bakery, right in the heart of your community?
Q: How did your business start? A: Our entire family was almost completely off bread, some because bread just didn’t taste like anything real anymore, and for others because of gluten intolerance and IBS. However, while on vacation at our uncle’s wheat farm in the Western

Q: Do you have any expansion plans? A: Yes, we are busy partnering with a few new enterprising businesses to help supply a combination of the healthiest foods straight to your door. Q: Do you operate online as well? A: We do have an online presence with a website and Facebook page, but currently we are not directly selling products over the internet, but it’s also part of the expansion plans for the future. Q: What’s your most popular item/service? A: Our “plain” wholewheat sourdough bread.

The rise of the unprotected T
he outcome of the Brexit vote in the UK came as a shock to financial markets. The British pound lost 10% against the US dollar in just eight hours, and the FTSE 100 on the London Stock Exchange fell nearly 6% in two days of trade. This market turmoil showed that it was an outcome few analysts expected. However, it is worth asking whether it should really have been such a surprise. Populism is a growing political phenomenon all over the world. Donald Trump’s success in the Republican primaries in the US and growing support for far right parties in many parts of Europe bear this out. In many respects, what this is about is a revolt of the economically “unprotected”. All over the world people in middle- to lower-income groups are getting poorer and more vulnerable. If you are comfortably upper middle class, you can afford to pay for good education for your children, you can secure your home with private security, you can manage the inflationary increases to your living expenses, and if the worst happens, you can pay a good lawyer to get you out of trouble. For those of fewer means, however, all of these things may be out of reach.

ccording to the recent Knight Frank Global Residential Cities Index, Durban is one of the few areas in the country that has seen growth in house prices. Durban is listed as one of the top-performing South African cities (placed 14th out of 165 cities) with property prices increasing by 11,6% on average between the fourth quarter of 2014 and the fourth quarter of 2015.

Durban residential market sees growth
Just consider that in South Africa the official inflation rate in urban centres was 6,2% for April. For poorer people, however, it was 8,2%, while among the richer it was only 5,9%.

lympus is an upmarket suburb with bright-coloured trees and situated east of Pretoria city, which has rapidly developed from mainly agricultural holdings to an area filled with modern estates, mansions, shopping centres, schools and businesses. It lies between Hans Strijdom Drive to the north, Saints Street to the south, Atterbury Road to the west as well as Leander and Achilles roads to the east. This suburb has a pleasant, quiet and secure atmosphere alongside the beautiful scenery of the Bronberg Mountain range, and is a popular area for professionals, families and the elderly. The area is conveniently located close to main routes such as Hans Strijdom Drive and the N4 highway, and residents enjoy a quality lifestyle in a country ambiance.
