Our authentic Greek meal started with a mezze platter with pita bread, goat’s cheese spring rolls (phyllo pastry cigars filled with diced olives, sun-dried tomatoes and goat’s cheese rolled up and oven-baked till golden) and a variety of dips – taramosalata, tzatziki, hummus, skordalia (blended potato with olive oil, lemon and garlic) and olive pâté. I could immediately taste the freshness of the ingredients used.
For dessert I sampled the baklava, halva ice cream and goat’s cheese, and black cherry cigars. I usually find that baklava can be too sweet, but with Toula’s baklava the honey is less prominent and this gives the cinnamon spice and the pastry a chance to shine, which makes it exceptional. Lastly, the goat’s cheese and black cherry cigars rolled in phyllo and served with dark chocolate had a surprising flavour combination that I enjoyed.

The tiny mosaic tiles artistically exhibited on the pillars, the dark wooden beams on the ceiling with white fabric criss-crossed in between, and glass lampshades of different shapes hanging from the ceiling create a romantic vibe.
With the beef fillet Riganato for mains served in a creamy lemon and oregano sauce and pecorino cheese, my system was almost shocked at how good it was. The amount of lemon used added a great zestiness to the dish complementing its creaminess.

glass of good white wine is always great company on a breezy summer’s day. Great white wine is often paired with white meats such as chicken and fish. However, these are not the only areas where white wine excels. With the help of an experienced sommelier you can find the right bottle of white wine that can be wonderful even in winter. This week, we continue our discussion about wine, focusing primarily on white wine with David Clarke, renowned sommelier and vice-chairman of the South African Sommelier Association.

Q: What kind of white wine is a safe bet as a crowd-pleaser and is still great during winter? A: Chenin Blanc. Every time. It is the most planted variety and it is available in different styles, which unfortunately can be somewhat confusing. It is easily the best value for money. I would suggest trying the following local wines: Joostenberg Chenin Blanc 2016 and Intellego Chenin Blanc 2014. Q: Does white wine get better with time? A: Some do. However, most don’t. If in doubt, like I always say, drink it!
Q: When a bottle of white wine has been opened, for how long and how can it be kept? A: Two to three days if you keep it closed and cold in the fridge. Q: How do South African white wines compare to international white wines? A: Very well, in general – usually great value thanks to the weak rand and a history of the co-ops keeping grape prices very low. Q: What is the most important information to include when you ask a sommelier to suggest a bottle of wine? A: A good sommelier will ask the questions they need to find out. But whether you like light-bodied or full-bodied wines, if you like oak, and the price you want to pay are all good starting points. Also which wines you have previously enjoyed. Q: What should not be a contributing factor when choosing a bottle of wine? A: Medals on the bottle. Usually they represent a minimum standard rather than actually winning or being the best. Usually these wines are tasted in vastly different environments and circumstances to which the consumer will actually drink the wine.

Former industrial engineer Carike de Villiers, has taken it upon herself to demystify the fermentation process by making it easy for anyone to fill up their pantry and their fridge with home-made goodies. Crafty Cultures workshops started to take shape when Carike realised that there was a big misconception regarding the ease with which anyone can make their own cheese and other fermented foods. What makes these events so special is the enthusiasm with which Carike undertakes each workshop. Not only is a Crafty Workshop open to anyone, regardless of their knowledge, Carike also makes sure to give attendees the necessary tools to continue
making their own edible goods at home. Upon leaving a Crafty Cultures workshop, attendees receive carefully constructed recipes and the basic equipment required to practise their newly honed skill at home.

Crafty Cultures will be buzzing with activity during the following weeks with a variety of workshops being hosted. You can join in on 1 September for a mozzarella-making workshop, and on 4 October attendees will be able to make their own ricotta. This year, Crafty Cultures will also be hosting informal workshops about the art of fermentation at the Finery Fair on 24 and 25 September. The good news for all the vegans out there is that Carike herself is lactose intolerant and is working on some vegan workshops to be hosted in 2017. hen people first started bringing electronics into their homes, they took the form of enormous statement pieces. From imposing radiograms and TVs built into cupboards, the technology was part of the furniture. From there the trend was to make technology increasingly discreet (and discrete). What we’re seeing now, however, is the reintegration of
technology with furniture, albeit more as an added benefit and less as a way to showcase the devices themselves. A great example of this trend is the Plug and Dream headboard. Q: How did your business start? A: A fter resigning from work, I saw a brochure advertising a business opportunity in laundry and thought it was a simple business with a reasonable capital outlay, so I started my first laundromat in Montana in 2005. I now run four laundry and dry-cleaning shops in Montana, Magalieskruin, Moreleta Square and Irene Village Mall, a mobile service and an industrial plant at N4 Gateway Industrial Park. Q: Why did you choose this area to set up shop? A: I chose Moreleta Park because the area consists of the business target market (LSM 7 upwards), who are busy working professionals who don’t have time to do their laundry and dry-cleaning, and would buy back the time it takes to do laundry. Q: How did you find your premises? A: I identified the area as a good location and called a letting company for a property in the area, but at the time all spaces were let. I drove around the area regularly to see if there was an opening until I eventually found one. Q: Why are the premises ideally suited to your business? A: The property is the right size for my requirements and is centrally located. The property is situated at

a convenience centre with a good tenant mix and people visit the centre daily for perishables. Q: Who are your neighbours? A: A grocery store, hair salon, restaurants and an ATM, which increases our footprint. Q: What are the shop rental/sales prices like in this area? A: You can look at paying R240/m2. Where’s our innovation? I
t is not difficult to identify the global companies that have been at the forefront of innovation over the last few decades. It’s also not hard to spot a pattern on which countries they come from. In the US, tech giants Apple and Alphabet, which owns Google, are now the two biggest companies in the world by market capitalisation, while Elon Musk’s firms Tesla and SpaceX are smashing the boundaries of what only a few years ago was believed to be possible. In Japan, firms like Toyota, Panasonic and Canon have become household names across the world.
South Africa has seen exponential growth in certified green buildings. Despite this, there are many buildings that could be going green but are not... The findings of this study show that green buildings can be built for a negligible premium – between 1% and 10% – and that this premium is declining. emigration into George from towns and cities around the country is now conservatively estimated to be around 50 families per month – significant enough numbers to be having a real effect on the property market. “Demand for residential property in George is exceptionally high,” says Stephen Lubbe, resident franchisee, Rawson Property Group. “This
is almost certainly due, in part, to the number of new residents moving into the city each month.” Lubbe believes the main driving force behind the high numbers of families moving into George is the relative safety, stability and high quality of life the city offers. The influx of new residents is doing more on the property market than just driving demand. “Traditionally,

In South Africa, however, almost the opposite is true. Spending on R&D in this country fell to an all-time low of 0,44% of GDP in 2014, and recent figures from Statistics South Africa show that in 2015 it only recovered marginally to 0,47%.

This would include a closer link between universities, government research agencies, and the private sector. It would also require that the executive management of South Africa’s larger companies recognise the benefits of product innovation and development and are willing to become less risk averse.”

he mortgage industry’s total volumes are a far cry from the height of the pre-2008 boom, but 100% to 109% home loans are most common of all the loan-to-purchase price bands. So says John Loos, FNB household and property sector strategist. “We find that the 100% to 109% Loan-To-Purchase (LTP) band, that is those homes where the bond
registered is from 100% to 109% of the home transaction value, were estimated at 41,5% of the total number of bonds identified in the 2nd quarter of 2016. Most of these would be 100% exactly, but a minority do venture above 100%.” This percentage is slightly lower than the 43,1% multiyear high reached in the final quarter of 2015, but not sufficiently lower as
to draw any conclusions regarding a possible declining trend yet. “To get the full perspective, one needs to examine the absolute numbers too. During the 1st quarter of 2016 we identified 9,951 bonded transactions by individuals in the 100% to 109% LTP range, more than double the 4,117 low of the 3rd quarter of 2009, but well down on the 33,825 high reached in the 3rd quarter of 2006,” says Loos.

What is undeniable is that spending on R&D can be key to growing an economy. Countries with high levels of R&D spending are without exception competitive and productive. South Africa can, and should, be in this company. A country that innovates is a country that succeeds, and South Africa should be doing more to create an environment for this to happen.

ierdapark is one of Centurion’s older but fairly modern suburbs established in the ’70s. Typical of that building era, the stands are rather sizeable and the houses considerably bigger than what followed in the ’80s. The streets are wide and lined with many tall trees and most of the properties have large wellestablished gardens creating a tranquil environment and breathing space in the residential portions. The main roads running through the neighbourhood are busier as the bigger properties are also well-suited for business activities. Wierdapark is situated in the northwest of Centurion and is bordered by the suburbs of Eldoraigne in the north and east, Raslouw to the west and Rooihuiskraal North in the south. This location – close to most main roads in Centurion, such as Ruimte Road, Saxby Avenue, the R55 and the Old Johannesburg Road – makes travel in and out of the suburb easy. It also
offers comfortable access to Gauteng’s freeways (N1 and N14) and thus the suburb is also popular with commuters travelling between Pretoria and Joburg, and even Krugersdorp and Ekurhuleni.

Wierdapark is a little town on its own and boasts just about every amenity, facility and service needed for daily life.
