Get mixing: the double cream until you get soft peaks in 1 Whip the cream 2 Fold in the condensed milk your puff candy, Crunchie or your preferred sweet and 3 Take fold this into the mixture into a tub suitable for the freezer and freeze for 4 Pour around 6 to 8 hours

Ingredients: 175g unsalted butter 200g caster sugar 3 tablespoons golden syrup 250ml milk 250g plain flour 1 tablespoon ground ginger 1 teaspoon ground allspice 1 teaspoon bicarbonate of soda

Get mixing: 1 Preheat oven to 180°C/350°F/Gas Mark 4 2 Grease then flour a 20cm x 10cm loaf tin saucepan combine butter, sugar, golden syrup 3 Inanda small milk over a medium heat. Bring to the boil, then remove from heat and set aside the flour, bicarbonate of soda, ginger, and allspice 4 Sieve into a large bowl in the boiled mixture until just blended, pour the 5 Stir batter into the prepared tin

Pro Tips: Add a touch of lemon juice or lemon essence to the icing for a slightly zingier treat! You could also try adding some chopped crystallised ginger to the batter.

Peterhead has had a long attachment to the RNLI with the first lifeboat station being built in the town in 1865, and at one time there were two lifeboat stations in the town. In almost 150 years Peterhead and the surrounding area have been looked after at sea by a grand total of ten lifeboats. There’s also a great history of bravery among the crews of the boat - they’ve received no fewer than 20 awards for gallantry! The Julia Park Barry of Glasgow was one of the longest serving lifeboats in Peterhead, being operational from 15th June 1939 to 14th January 1969. It was also one of the most active and successful boats in the port being launched 162 times and rescuing 496 lives.

In 1940 she undertook an impressive 4 rescues in one 9 hour period, saving over 90 people from the S.S. Lisbon, S.S. Simonburn, S.S. Baron Minto and S.S. Alcora. She then went on to rescue the crews of three other steamers in March of 1942. These two rescues sealed The Julia Park Barry’s fate as one of the most successful lifeboats in Scottish History. It was these amazing rescue stories that were the catalyst for the beginning of the return of the Julia Park Barry of Glasgow back to Peterhead. She was purchased by Professor Sir Lewis Ritchie during 2012 and he has decided to gift the vessel back to Peterhead. Sir Lewis has practiced medicine in Peterhead for over 30 years and as he approached retirement he wanted to gift something to the community. Plans are now afoot to bring the boat back from Northern Ireland where she is currently berthed and find a permanent home for her in Peterhead.

The Peterhead Lifeboat Museum trust is exploring the possibilities of a modern interpretation of the original lifeboat shed that the Julia Park Barry would have been in. This building will be as self sustainable as reasonably possible and will house the vessel as a permanent exhibition to the public. The exhibition will be placed within the locality of the bay but the final site has yet to be agreed upon.

A ‘weel kent’ face Every month we celebrate a local business; this month it’s Paul Haggath.

Paul Haggath is a ‘weel kent’ face around Peterhead and the surrounding areas. As the joint owner, with his wife Wendy, of local coffee house chain Symposium, Paul can often be seen serving the community of the north east with their daily dose of caffeine. Paul and Wendy also own the Bright Beginnings nursery in Peterhead and I wanted to find out more about the man behind these businesses. Paul always knew that he wanted to run his own business and was always a hard worker. From leaving school at the age of 16 with no formal qualifications he held down jobs in various industries, both here and in America, before embarking into the world of study at Aberdeen College at the age of 18. He completed an HNC in Hospitality before progressing to an HND at Robert Gordon University, and he then moved on to a BA in Hospitality Management – a great achievement for someone having left school with no qualifications! All through his study years he supplemented his income with employment in bars and hotels, but owning his own business was always foremost in his mind. After Paul graduated he was appointed as Assistant Manager at a local hotel but this was not to be permanent as the long hours placed increasing pressure on the newly married man with the beginnings of a young family.

“Disaster struck just seven weeks later when a fire damaged the coffee shop and it had to close its doors” Paul found employment elsewhere to maintain an income for his family and it was during this time that Symposium was born. He worked on building a strong brand for the business and, with some assistance, the first Symposium Coffee House was opened in May 2005 on Broad Street, Peterhead. Disaster struck just seven weeks later when a fire damaged the coffee shop and it had to close its 18 • www.YourTownCentre.co.uk • April 2013

doors having only just opened. But, undeterred, on the 7th September 2005 Symposium once again opened its doors and began on a path of growth and development with a boldly stated mission to deliver Great Coffee, Great Food and a Great Atmosphere. It soon became apparent that the Broad Street site was becoming a bit of a squeeze for the successful young business and Paul began to explore the possibility of other premises. Various locations were explored within Peterhead and eventually they relocated to their current Queen Street premises in October 2008, and completed a management buyout in January 2009. “Growth continued in 2011 with the opening of a second Symposium shop in Ellon and the third at the Lido location in late 2012” and it wasn’t going to be plain sailing. Their greatest challenge turned out to be funding; with banks reluctant to lend to small businesses the couple resorted to borrowing smaller amounts from family and friends to supplement a small bank loan. They completed the buyout of the business and then had to rely on hard work and the resilience of their business plans to ensure that they could successfully manage the business they now ran.

The entrepreneurial pair went from strength to strength, with the opening of Bright Beginnings Nursery in August 2009, but a struggle to get essential pre-school funding from the authorities placed such an enormous restriction on the business that in October 2010 they made the difficult decision to shut the nursery – but that very same morning they received a letter granting them funding from the following January. They took this as a positive sign and worked to stretch their finances a little further to make things last until January 2011. Growth continued in June 2011 with the opening of a second Symposium shop in Ellon and the third at the Lido location in late 2012. sacrifice or hard work. They are a great example of how if you have a dream and the determination to make it work you can achieve anything. Drawing on his Christian faith, Paul has developed a very people-centric ethos for his businesses. This concerns not just the 30 staff in his Ellon and Peterhead premises but also the local communities who seek the comfort of Symposium for a cuppa and a natter, or for a business meeting. This mentality means that what some call Corporate Social Responsibility, caring for society as a business, is not simply a policy to be written or a box to be ticked for Paul, who strives to find ways to respectfully and discreetly help those who are disadvantaged where and when he can. When asked what his advice would be to anyone looking to start in business. Paul’s reply was, “Do your research, make sure you have passion for what you do and borrow as little as possible.” Sound business advice for anyone looking to embark into the world of self employment. 20 • www.YourTownCentre.co.uk • April 2013

The Secret Keeper

‘The Secret Keeper‘ is a story of mysteries and secrets, murder and love.

‘Stranded’ tells the story of Esther Lomax, a mother of one in her late 30’s, who’s struggling to come to terms with her recent divorce and the realities of being single again.

In the present day Laurel is coming to terms with the imminent death of her mother and as a way of coping decides to re-examine events from her childhood which leads into her exploring the early life of her mother - with some surprising results. The story moves from the 1930’s to the present day and is told from the points of view of Laurel - the daughter trying to make sense of an horrific event from her childhood, Dolly - a young girl trying to survive the war, Vivian - a young girl coping with the loss of her family and a new life on the other side of the world and Dorothy - a mother at the end of her life trying to come to terms with the things she has done in her past. This is a great read especially if you like family drama and suspense; it will have you laughing, crying, worrying and wondering until the very end when a brilliant twist turns everything on its head.

After a chance encounter at a party she decides that the time is right for an adventure and so she heads for Malaysia and the island of Pulau Perhentian Kecil. A sinister turn during a boat trip leaves Esther and 6 other holiday makers stranded with no communications and no one knowing where they are. As they all fight to survive on the island the reader is introduced to the true story of each character, proving that some things are never what they seem! The books has 2 major twists as the story unfolds - the first of which I personally didn’t see coming, but the second was easier to guess. ‘Stranded’ is a great read, keeping the reader hanging on until the very end.
