I S A J O U R N E Y, N OT A DE ST I NAT I O N . A winemaker’s journey doesn’t start at excellence. But you set that as your destination, and you start passing milestones. You grow new kinds of grapes. You innovate. You seek out new markets, all over the world. That’s what our family has done for three generations. We make some excellent wines, and we’re New Zealand’s most experienced family owned winery. But along the way, we’ve learned that there’s always room for improvement. Why? Because true excellence always lies a bit further up the road, and we plan to never stop. It’s something we never take for granted. New Zealand’s Best Dining Guide

Editor’s Letter Welcome to our new look of New Zealand’s Best Dining Guide. At the back of this issue you will find our new section called What’s Cookin’ - little snippets of news and foodie profiles for you to devour. Our pages also have a new layout with a lot more editorial and gorgeous images for you to feast your eyes on, enabling you to choose well for your next dining experience. I am in a panic to get to all the new restaurants that have opened in the last six months. There is an incredible array of new dining spots with menus ranging from the exotic to smoked American barbecue style food to try. One of the new locations features on our cover, Palazzo Italia – a ‘true’ Italian restaurant! There is nothing like a glass of Italian red and home made pasta – in fact, I have made it a goal to have a glass of red wine every day as it is very good for you! Are you a waiter in Auckland? If so, get your tray and apron ready and sign up to the famous Parnell Waiters’ Race that is happening on Sunday 12th November. The Grand Prize includes flights to London and dinner for two at Galvin at Windows, a Michelin star restaurant and bar at the Hilton Park Lane, with stunning views over London and the winning restaurant receives $6,000 of advertising in New Zealand’s Best Dining Guide! Register here parnell.net.nz/parnell-waiters-race-registration-2017/ A big congratulations to the team at The Cow Restaurant in Queenstown who are celebrating their 40th anniversary. What a great milestone.

Antoine’s 333 PARNELL ROAD, AUCKLAND | +64 9 379 8756 ANTOINESRESTAURANT.CO.NZ Antoine’s is an experience not to be missed. Owners Beth and Tony Astle have presided over Antoine’s since 1973, serving presidents, royalty, rock stars and of course, lovers of fine food and wine. Antoine’s Restaurant proudly creates a feast of New Zealand cuisine with distinctively French-European undertones. It is both classical and innovative as diners choose from the popular Nostalgia Menu or the regular Table Menu featuring daily specials. Beth and Tony take enjoyment in regularly reviewing their menus, which evolve with Tony’s annual overseas visits to research new dining trends. As you ring the brass door bell of Antoine’s, hidden away in a brick courtyard off Parnell Road you may begin to smell the aromas drifting from the kitchen. Your impeccably dressed waiter will usher you to a table of white linen. French and local wines feature in a vast private cellar selection. You’ll find an extensive range of French champagnes, and on request, Antoine’s has an exclusive cellar list of fine wines from Bordeaux and Burgundy. Enjoy subtle lounge music while you’re treated to an evening of fine dining. After four decades, we are still certain Antoine’s Restaurant remains one of the finest dining experiences in Auckland, if not New Zealand.

After perfecting his smoking skill, Davies felt compelled to bring barbeque to his homeland of New Zealand. Davies combines homemade rubs and sauces with hand-picked premium cuts of meat and smokes them low and slow in New Zealand’s first custom built smoker, co-designed and co-built by the chef himself. Pedro’s House of Lamb 4 WILLIAMSON AVE, PONSONBY, AUCKLAND | +64 9 376 1631 PEDROS.CO.NZ As culinary experiences go you could say Pedro’s House Of Lamb has broken the mould. In a world of complex menus, degustations and various cross culture fusion dishes, Pedro’s have kept it simple, really simple by serving just one dish. A beautiful slow cooked lamb shoulder, so tender the meat just falls off the bone, served with a side of scalloped potatoes is a restaurant quality dish that you can take home. The owners know a thing or two about fine dining. Pedro’s House Of Lamb was established by two veteran restaurateurs of the Christchurch dining scene, Pedro Carazo and Iñaki Sanchez. The two previously owned Pedro’s Restaurant, one of the most established and popular restaurants in Christchurch, until the earthquake ended that venture and sent the duo down an entirely different path. From a vibrant inner city restaurant with a full Spanish menu; to a modular container serving just one dish. Conceptually Pedro’s House Of Lamb was a world away from where they’d started - but the one constant was the dish. They turned a much loved meal from Pedro’s Restaurant, Paletilla al Horno (whole lamb shoulder baked with rosemary and garlic) into a premium takeaway product. The concept proved a success and they haven’t looked back since - recently opening their fourth outlet and first in Auckland. Already a well-established foodie favourite in Queenstown and Christchurch, Pedro’s House Of Lamb is ready to reinvigorate Auckland’s love affair with New Zealand lamb from its brand new Ponsonby location. With top TripAdvisor rankings and a loyal local following Pedro’s appears to have the winning recipe. Proving that keeping it simple is a winning formula.

Celebrating the Langham’s Platinum Milestone The world’s leading international sustainability certification programme for the tourism and travel industry has awarded The Langham, Auckland, the EarthCheck Platinum Certification. New Zealand’s Best Dining Guide attended the media launch, where we learnt about the amazing, decade-long sustainability journey that leads The Langham, Auckland, to be the first and only luxury hotel in Australasia to achieve the prestigious status. The decade long sustainability journey with EarthCheck embarked after a Kitchen Steward inspired the Managing Director with their idea to save resources and money. From there The Langham, Auckland underwent some major changes based on the EarthCheck framework for environmental and social sustainability. Some of the changes made included the placing a beehive on on the hotel roof, after research found that 62.5% of urban bees survive the winter, in comparison to only 40% in rural areas. Another included installing 20 energy meters on The Langham, Auckland’s electric board helping them to monitor the hotel’s consumption and address areas that need changes and so many other inspiring changes made to achieve the Platinum status they have today. To top it all off, The Langham’s Head Chef, Volker Marecek created a stunning edible centrepiece dedicated to the EarthCheck Platinum Certification awarded to The

Langham, Auckland. The sensational centrepiece resembled the earth’s forest floors, with its mossy rocks, tree roots and twigs and fallen leaves; a true piece of art that showcased the many talents of Volker Marecek, “I wanted to create an edible garden inspired by land fields and play with the minds of the guest by including both savoury and sweet.” The Langham, Auckland latest milestone has truly inspired and amazed us with the changes they have made in a decade. We weren’t the only ones who were inspired however, it was announced at the media launch that The Langham, Auckland has stimulated the entire international group of Langham Hotels to invest in the EarthCheck certification programme. It is without a doubt, that The Langham, Auckland has made an international difference in showing the world that luxury can be sustainable.

Vinomofo’s New Zealand Love Affair When it comes to good wine, New Zealanders are harsh critics. Rather than from an elitist point of view, we tend to take our wine seriously as it’s such a big part of who we are. Whether it’s relaxing at home, enjoying drinks with friends, or finding that perfect bottle to impress a certain someone - wine is just part of our vernacular. This is something that Vinomofo know all too well. A members-only website that’s free to join, Vinomofo is self-described as a global tribe of wine lovers. Representing a revolution against the exclusivity of wine snobs, the site offers a range of carefully selected brands, types and encourages customers to step out of their comfort zone and try something new. vinomofo.co.nz

Choose Sugar Free Ketchup Ketchup, the majority of recipes are 50% sugar which is no help to New Zealand’s increasing obesity rates. Simon Gault however, has spent three years creating a sugar-free Ketchup sweetened naturally with vegetables, offering Kiwi’s a healthier option, that is nearly impossible to tell apart from the original. Keep an eye out in local stores and supermarkets near you, Gault’s aiming to have the sugar free ketchup stocked on shelves soon! However here at NZ’s Best Dining we can’t wait so we’ve ordered some from his online store. souschef.co.nz

Spice Makes Everything Nice

PARSLEY

TUMUERIC

There is nothing quite like the fresh smell of spices wafting through the kitchen - especially in winter! Many herbs and spices are not only flavour enhancers but also have a range of health benefits. From chilli to cloves - we’ve put together a guide to get to know your spices. Chilli is the most recognisable and polarising spice. Some like it hot, while others do not! However, chilli is more than just a flavour enhancer. It contains up to seven times the vitamin C level of an orange and has a range of health benefits, including improving sinus congestion, helping digestion and aiding in relieving migraines and muscle, joint and nerve pain. Turmeric is instantly recognisable by it’s bright, yellow-orange colour. It’s commonly used in curries and sauces but has been used for medicinal, antioxidant, and antiinflammatory purposes for thousands of years in Southeast Asia. Studies have shown that curcumin - the active ingredient in turmeric - could even potentially ward off dementia and prevent cancer. Ginger produces a strong, hot spice to cooking and is used in many curries, drinks and even candy. This root has a long history of use for relieving digestive problems such as nausea, loss of appetite, motion sickness and pain. It is also used as a soother for winter colds and flu, mixed with hot water, lemon, and honey.

CHILLI

CLOVES

“Sea salt is sourced from the sea where there is an abundance of minerals rather than from a salt mine. Who doesn’t like sprinkling a healthy dash of salt over their meal? All types of salt contain 100% sodium chloride, which means there are negative health effects from consuming too much. However, some salt may be better for you than others. Sea salt is sourced from the sea where there is an abundance of minerals rather than from a salt mine.

NUTMEG

ROCK SEA SALT GINGER

Cloves are synonymous with a warm, sweet, aromatic taste and smell. Used in a variety of cooking baking, cloves are available all year round. However, it is the eugenol in cloves that has captured the attention of researchers. Studies claim that cloves can help indigestion, liver problems, boost your immune system and even display aphrodisiac properties.

Waiters are now expected to know about wine and food pairings, ingredients in the dishes, and make food recommendations to customers; even occasionally prepare specialty food items at a customer's table. Provenir Restaurant at luxurious Paihia Beach Resort Provenir Restaurant at Northland’s luxurious Paihia Beach Resort chose not to compete with the iconic sights and leisure pleasures of the Bay of Islands. Instead, it joined in, celebrating the Bay of Islands’s sparkling waters and magical views, inviting them in and then serving food so good that customers say publically that they’re spoiled for going anywhere else. Northland’s #1 fine dining destination. Whatever way you enjoy Northland and the Bay of Islands it will be partnered, enhanced and made more memorable by sharing the hospitality and memorable experiences of dining at Provenir on the Paihia shoreline. PROVENIR Restaurant at Paihia Beach Resort soothes and stimulates with scintillating menus that were honoured with an accolade for innovation at the 2016 Plate of Origin Awards. Luscious breakfasts include home-churned butter and prize-winning dinners are offered from 6pm, with every dish a celebration of organic produce from Northland’s gardens, farms and waters in a light-filled restaurant that’s not just poolside but has fabulous sea views, too. Light, airy, relaxing, memorable. And that’s before you’ve sipped or taken your first bite. Dinner menus offer tantalising new ways with favourite ingredients and also tempt you to try something original. Perhaps smoked celery root to accompany butter-browned pork fillet or a smoked-garlic emulsion on shoestring fries; braised beef cheek might be rich with Chinese savour and served with smoking cinnamon. Naturally dishes change constantly but a typical first course partners blackened scallops with shavings of rare paua and a

prawn ‘white pudding’. Local Orongo Bay Oysters are also regularly underpinned with tangy seaweed accents. Main courses can include duck breast with sweet spices and mandarin or grassfed Angus beef with hearty roasted beets and chorizo balanced by a gentler pairing of plum and Italian amaretti biscuits. There’s always sea-fresh fish and you could find it twinned with a fascinating crab and currant couscous.

For your just desserts? As well as freshly

churned sorbets, there might be Kerikeri Clementine cake with almond nougatine, orange puree and a cardamom-scented sorbet of crème fraiche, or something chocolate or something refreshingly citric . . . whatever the chefs create there’ll be just the right unctuous New Zealandcrafted, late-picked wines, of course. New Zealand’s Best Dining Guide

The Bottom Line: how toilet cleanliness can affect a diner’s experience More often than not, when dining, we need to excuse ourselves for a quick trip to the bathroom. For some restaurants, this adds to the overall experience with beautifully scented soaps, large clean mirrors, and stunning faucets. However, it is becoming more common for dinners to encounter unhygienic and horrific standards. AND SO, LET ALL RESTAURANT OWNERS TAKE HEED. You may provide good quality meals, pleasant customer service and a beautiful atmosphere, however, if your bathroom facilities are not up to scratch, that is all a diner will remember. No one wants to be scared to touch the handles of doors or unwashed taps. Rather, we want to plunge our hands in a clean sink as we lather them with luxurious soap, warm water, and dry off with a fluffy towel. This leaves us willing and ready to stay, spend, and enjoy ourselves. Moral of the story? Don’t fail to take into account your bathroom when planning your interiors. If not, you may end up being judged on your toilet rather than your cuisine.
