The Best Pork Ribs I Ever Had Last July 4th my husband made what I call “The Perfect BBQ Ribs”. They were falling off the bone & oh so “Sticky”. I will now tell you how he did it on our gas grill.

Time: 4 hours Shopping list: 1 rack pork ribs

2-3 cups(24 oz = 3 cups) bbq sauce (ours was homemade) See below; 1 bag Hickory chips (presoak before using) Heavy Duty Foil ½ cup favorite dry rub (ours was homemade) See below;

Prepare ribs in the morning by removing thin membrane from the bone side of the rack of ribs. Clean & trim any excess fat or bone chips. Coat rack of ribs lightly with the prepared rub mixture & place in a loose foil wrap in the fridge. [PIC HERE] In the afternoon make a foil bomb of hickory chips by laying two layers of foil flat & placing presoaked wood chips at one end. Then fold foil over & crimp all edges to make a pillow shaped bag. Poke several holes in top of the foil pillow. [PIC HERE] Heat grill to 400 deg. using only the outside or end burners & place wood bombs directly on burners under the grill with pin holes facing up. After smoke starts coming from wood bombs place ribs directly on grill (not over burners) bone side down for 10 minutes, turn over & cook for ten minutes more. This is to sear the meat. [PIC HERE] Remove from grill & place on a double thickness foil sheet brushed with oil. Place another foil sheet on top & pinch edges together to seal the package. [PIC HERE] Turn grill down to 250 deg. & place ribs in package on the top shelf of the grill (not over the burners) & slow cook for 2 hours. Remove Foil from ribs & brush with sauce. Lay sauce side down on lower grill for 5-7 minutes, then brush with sauce & turn the other side onto the grill for 5-7 minutes. Continue this until desired amount of stickiness is achieved (we turned ours twice). The more times you brush & flip, the stickier they get. I would not suggest more than three per side or you may end up making them tough or burnt.
