- Oye, ¿tu sabes quién es Carlos Yebra? - Sí, es el fotógrafo, el de las tapas de la ruta del atún, del retinto, del polo…. - ¡Ah! El de la revista, Zahara Magazine, ¡si yo las colecciono hace años! - Que sí, el padre de Henar y Marina. - Claro, el abuelo de Jimena y Mateo. - Ya, ya, ¿al que vimos el otro día con esa mujer tan guapa? - Ese mismo, el que iba con chapela y bebía manzanilla. - Pero también bebe tinto, ¿no? - Supongo, lo que te puedo decir es cocina estupendamente, tiene un paladar divino para las especias. - Es un hombre curioso, siempre anda jugando con el lenguaje, no se le ve venir, en parte por lo escueto de su figura, y en parte porque camufla sus palabras con una pícara mirada que te confunde sobremanera. - Sí, es muy agudo, tiene un sexto sentido. - ¡Y un séptimo! Aparte de un ojo excepcional. - Me sorprende, ¿no es mayor para llevar todo esto adelante? - ¡Que va! ¡Sólo tiene 13 años! Por mucho que conozcas a Carlos, nunca dejará de sorprenderte, es imposible definirlo, no encaja en ninguna casilla. Porque según el no hay un Sur, hay miles, y Carlos Yebra habrá sólo uno, pero vale millones.n

Una revista que crece en calidad y contenidos, Con una realización fotográfica exquisita que refleja la realidad de Zahara de los Atunes a lo largo de todo el año. Una selección de profesionales del mundo de la fotografía nos brindan su visión de nuestro pueblo, su entorno y su cultura. Y van doce ediciones ya. De la misma manera tengo el placer de presentarles la edición n.11 de nuestra afamada Ruta del Atún, la más ambiciosa y evolucionada de todas. Con un compromiso firme de esta nueva junta directiva de ACOZA de intentar mejorar las precedentes, agradeciendo el trabajo de los anteriores responsables que han conseguido que esta ruta se convierta en un éxito y un ejemplo a seguir. Tenemos un objetivo claro: Superar las 120000 tapas vendidas. Para ello contamos con una nueva aplicación para servicios dispositivos móviles que acerca la oferta gastronómica de la ruta al consumidor. Deseamos que se convierta de nuevo en todo un éxito, como así ha sido en otras ocasiones. Por último, y no por ello menos importante, es para todos nosotros un placer presentar el VII Gran Premio de Zahara. Las carreras de caballos en uno de los hipódromos más bonitos del mundo: La playa de Zahara. Y el torneo de polo arena 2019, donde polistas internacionales que compiten dentro y fuera de nuestras fronteras nos brindan un espectáculo de deporte y habilidad en el recinto de la muralla. El polo y las carreras también se han convertido en un patrimonio de Zahara. Por ello esta junta directiva ha tenido un compromiso firme e inequívoco de que volviera a ser así. EL PÁJARO DE LAS M

e resulta imposible rescatar de mi memoria los matices y las sensaciones que trajeron a mi mente la luz, el sonido y el olor del mar, la primera vez que pisé sus orillas. Mi proximidad y la relación que establecí con la playa desde mi más temprana infancia, hacen que el mar forme parte de mi visión y de mi concepción original del paisaje donde vivo, y por ello, mi mente no ha sido capaz de retener la primera vez que me situé frente a esa

infinita masa de agua, del mismo modo que no soy capaz de recordar el instante en que mis ojos se abrieron a la vida. A menudo me asomo al mar sintiéndome como si nunca antes lo hubiera visto, y descubro el horizonte más infinito, evocador e inspirador de cuantos conozco o existen, probablemente equiparable en sensaciones al horizonte de un interminable desierto o al que podemos contemplar desde la cumbre de una gigantesca

montaña. El caso es que la playa nunca ha dejado de sorprenderme y regalarme momentos maravillosos a lo largo de toda mi vida. Nunca olvidaré aquel atardecer del verano de 1993… Mientras caminaba sobre el montón de arena más grande que yo jamás había visto, descubrí una forma de vida tan sorprendente como insospechada para mi hasta aquel momento. A medida que subía por tan particular montaña arenosa, mi emoción crecía hasta ha-

cerse enorme, tanto como la dimensión que se abría antes mis ojos, cautivados con el paisaje natural, virgen y agreste de la costa gaditana, las salvajes y agitadas aguas del Estrecho y la costa norteafricana al fondo, allí donde la vista se pierde y sueña la mente. Mis pies, emborrizados por la cálida arena de aquella duna esculpida por el viejo viento de Levante, se abrían paso entre cardos marinos, enebros, azucenas de mar y tupidos ma-

nojos de barrón, cuando… inesperadamente, mi caminar sosegado se vio interrumpido por el acontecimiento que cambiaría para siempre mi relación con la playa. Como nacida de entre las arenas, un ave, cuyo color se fundía con el paisaje, del tamaño entre una tórtola y un gorrión, de cuerpo rechoncho, cabeza gruesa, con pico corto y de patas negras y esbeltas, apareció inesperadamente ante mi, arrastrándose y moviéndose

como quién huye y quiere volar y no puede, sacudiendo con ímpetu sus alas contra el suelo y alzándolas en forma de “v” mientras deslizaba su vientre sobre la arena, manifestando síntomas inequívocos de estar mal herida. Impactado por la escena y preocupado por el estado de salud del ave, fui tras ella con la intención de capturarla y acudir a un veterinario de la zona para que la atendiera. Recorrí más de setenta metros tras ella, y cada vez que

estaba apunto de apresarla con mis manos, el ave aceleraba su marcha y siempre conseguía ponerse fuera de mi alcance; no había manera de capturarla. Muy alejados ya del punto exacto donde había dado comienzo la persecución, la situación cambió, y el ave comenzó a caminar normalmente, erguida y en equilibrio. Después aceleró el paso y a continuación echó a volar, mostrando una soltura y una destreza impresionantes en el arte del vuelo. Yo me quedé perplejo, atónito, con cara de no saber muy bien como interpretar aquel comportamiento. Con el pájaro fuera del alcance de mi vista, pensativo y descolocado, volví al lugar de partida con el objetivo de recoger la mochila que yo llevaba y había dejado sobre la arena, justo antes de emprender mi carrera tras el ave. Unos metros antes de alcanzar mi mochila, el ave apareció de nuevo, realizando maniobras idénticas a las que minutos antes había estado haciendo en aquel mismo lugar. Sin moverme del sitio observé muy atento sus movimientos durante unos minutos; el pájaro no dejaba de dar vueltas entorno a mi posición, alejándose y acercándose. Continué caminando hasta tomar mi mochila. El ave, dislocada, comenzó a desplazarse en zigzag bajo mis pies, al tiempo que emitía un característico e incesante silbido. Me fui alejando de allí todo lo que pude, hasta que el ave dejó de acompañarme. Desde lejos seguí con mi vista sus movimientos, y observé como el pájaro volvía

a la misma zona. En un punto muy concreto de la duna, se agachó y permaneció quieta todo el tiempo que yo la estuve observando. “¿Que misterioso secreto esconden para mi el pájaro y la duna?” - me preguntaba yo entonces. Intrigado y decidido, fui acercándome cautelosamente al ave, hasta que se levantó y una vez más dio comienzo el “baile del pájaro herido”; pero en esta ocasión no desvié mi trayectoria y continué directo hacia mi objetivo. En el preciso y precioso instante en que fijé mi mirada sobre el punto exacto donde había estado echada el ave antes de comenzar su “danza”, la duna me desveló su secreto y el pájaro herido descubrió para mi el más valioso de sus tesoros… A cielo abierto y directamente sobre la arena, sin otra protección que su propio mimetismo, yacían tres huevos, tan perfectamente modelados e integrados en aquel paisaje dunar, que, ni el Miguel Ángel más diestro ni el Picasso más prodigioso, hubieran podido esculpir o pintar ejemplares de tan sublime belleza. Aquella obra magna solo podía ser atribuible a la madre naturaleza en esencia. El tiempo se detuvo… y mientras… yo observaba con fascinación como se quebraba el cascarón de uno de los huevos, y me maravillaba viendo como la vida contenida en su interior se abría paso hacía los últimos rayos de luz de aquella inolvidable tarde de verano; era el nacimiento del que para mi y desde

entonces viene siendo: El Pájaro de las Arenas. SUGERENCIA: foto de un pollo o pollos recién nacidos Tan pronto como fui consciente de la delicada situación y lo que significaba mi presencia en aquel lugar, me retiré apresuradamente todo lo lejos que pude. Mi corazón palpitaba al máximo, y mi mente, en una sola fracción de segundo, comprendió que el extraordinario “baile del pájaro herido” era una magistral y auténtica representación “teatral”, la más impresionante, trascendental y vital de cuantas yo hubiera podido imaginar o soñar. Fingiendo estar herida, aquel “ave magnífica del paraíso”, había sido capaz de confundirme y captar mi atención para desviar mi trayectoria del lugar donde se hallaba su nido, evitando que yo lo descubriera o lo pisara, y así poner a salvo su futuro; del mismo modo que hubiera hecho con un zorro (Vulpes vulpes), un gato montes (Felis silvestris), una culebra de herradura (Hemorrhois hippocrepis) o cualquier otro peligro o depredador natural. Antes que cualquier humano hubiera pisado nuestras costas, es más que probable que los chorlitejos patinegros ya pusieran sus huevos en las playa que hoy todos visitamos y conocemos. Estas aves son conocidas desde muy antiguo, sobretodo a partir de que los pueblos se asentaran en el litoral y las personas hicieran uso de las playas y obtuvieran un aprovecha-

miento de sus recursos naturales (actividades pesqueras, agrícolas, ganaderas, lúdico-recreativas, turísticas, etc). UN DATO CURIOSO E INTERESANTE: Hasta el siglo pasado, y más concretamente durante los años sesenta-setenta, muchos de los habitantes de la Comarca Litoral de la Janda incluyeron al chorlitejo patinegro como parte de su dieta. Manuel, natural de Zahara de los Atunes y conocido con el apodo “diez reales”, es un vivo ejemplo de ello. Sus comentarios personales atestiguan como él y otros vecinos y familiares del pueblo se comían, hasta no hace mucho, los huevos y pollos del chorlito de playa (como llaman algunos lugareños al chorlitejo patinegro). Pero aquellos eran otros tiempos. Las costas no sufrían ni una mínima parte de la presión, sobretodo humana, que ahora padece todo nuestro litoral nacional. En la actualidad, el chorlitejo patinegro presenta una situación de alta vulnerabilidad dentro de nuestra geografía. En numerosas localidades costeras, tanto mediterráneas como atlánticas, ha llegado a extinguirse como ave reproductora. Allí donde aún sobrevive, su situación poblacional a nivel local va de vulnerable a peligro crítico de extinción. Ejemplo de todo ello son la Cornisa Cantábrica, la Costa del Sol, Castellón, la Comunidad Valenciana, etc. A principios de este año, la Sociedad Española de Ornitología concedía el “galardón” de “Ave del Año 2019” al Chorlitejo patinegro, que no es precisamente una buena noticia para la especie. Aunque por otro lado, esta triste “distinción” supone un impulso o

ayuda para la especie, ya que tiene como objetivo principal hacer visible a la sociedad y las administraciones en general, los problemas de conservación a los que se enfrentan estas aves y el reto al que nos enfrentamos nosotros como herederos y custodiadores de uno de los ecosistemas más amenazados, sensibles y frágiles de cuantos nos rodean. La playa, con toda probabilidad, el más importante recurso natural y turístico del que dependen y del que se benefician cientos de pueblos y millones de personas a lo largo de toda nuestro litoral nacional. Cualquier lugar no es apto para que una pareja o una población de chorlitejos pueda existir. Eligen vivir allí donde la naturaleza está bien conservada; muchas veces, donde queda algo de ella. El impacto o huella de origen humano en nuestro litoral, crece sin parar desde los años setenta, ya sea por el desarrollo de infraestructuras o por los diferentes usos del territorio costero. Allí donde se da el equilibrio entre lo humano y el paisaje natural original, existe una oportunidad para la supervivencia de las especies autóctonas de nuestra flora y fauna. Las Playas de Zahara de los Atunes, El Retín, Atlanterra, Barbate, Trafalgar, Bolonia, Los Lances, Valdevaqueros o Punta Paloma, son lugares y paisajes donde hoy día sobrevive una población viable de chorlitejo patinegro. Pero también es cierto que en los últimos años ha comenzado a remitir el número de parejas reproductoras, llegando a ser alarmante en algunos casos. En la actualidad, buena parte

de la ciudadanía y algunas entidades y administraciones, públicas y privadas, se están implicando y comprometiendo activamente en la conservación del chorlitejo patinegro, y por tanto en la salvaguarda de la playa como paisaje y como ecosistema natural vivo. Un gran porcentaje de la población de la España de interior, y otra parte extranjera, visitan la playa en algún momento durante el verano. El número de habitantes por kilómetro cuadrado en las costas se dispara hasta crecer muy por encima de sus posibilidades de acogida. Todos cabemos en la playa, pero no de cualquier manera. Al igual que en una gran ciudad somos capaces de convivir y respetar ciertos espacios, en las playas, o hacemos una ordenación adecuada y una gestión impecable del uso público, con la responsabilidad de las administraciones y también con el compromiso personal de cada ciudadano, o de lo contrario, el futuro que se avecina es poco alentador. La playa es un ecosistema vivo, sensible y frágil, limitado a nuestras costas. Es único e irrepetible tierras adentro. El futuro de la playa, y el tuyo propio, está en tus manos. Cuídala. “Cuando descubres el secreto del Pájaro de las Arenas, y eres consciente de una forma de vida tan sublime, tan magnífica y extraordinaria en el arte de la supervivencia… entonces, cada vez que vuelves a la playa, sabes que estas pisando uno de los últimos paraísos vivos, y que su continuidad o su destrucción dependen de ti”. t is impossible for me to rescue from my memory the nuances and sensations that brought to my mind the light, the sound and the smell of the sea, the first time I put my feet on its banks. My proximity and the relationship I established with the beach from my earliest childhood make the sea part of my vision and my original conception of the landscape where I live, and therefore, my mind has not been able to retain

that first time I stood in front of that infinite mass of water, just as I can not remember the moment when my eyes opened to life. I often look at the sea with the feeling that I have never seen it before and discover the most infinite, evocative and inspiring horizon of those I know or exist, probably comparable in sensations to the horizon of an endless desert or that one we can contemplate from the top of a huge mountain.

The fact is that the beach has never ceased to amaze me and give me wonderful moments throughout my life. I will never forget that sunset of the summer of 1993â&#x20AC;Ś While I was walking on the biggest pile of sand that I had ever seen, I discovered a way of life that was as surprising as unsuspected for me until that moment. As I went up that particular sandy mountain, my emotion grew until it became enormous, as

much as the dimension that opened in front of my eyes captivated with the natural, unspoiled and rugged landscape of the Cadiz coast, the wild and agitated waters of the Strait and the North African coast in the background, at that point where the sight is lost and the mind dreams.My feet, covered with the warm sand of that dune sculpted by the old east wind, made their way through sea thistles, junipers, sea lilies and thick bunches of beach grass, when … unexpectedly, my peaceful walk was interrupted for the event that would forever change my relationship with the beach. As if it had arisen from between the sands, unexpectedly in front of me, a bird, whose color was confused with the landscape, of a size between a turtledove and a sparrow, plump body, thick head, short beak and black and slender legs, crawling and moving like who was running away and wanted to fly but can not, shaking its wings with force against the ground and raising them in the form of “v” while sliding his belly on the sand, manifesting unequivocal symptoms of being badly wounded. Surprised by that scene and worried about the health condition of the bird, I followed with the intention of capturing it and then go to a veterinarian in the area who could attend it. I followed the bird in this way more than seventy meters after it, and every time I was about to capture with my hands, the bird accelerated its flight and always managed to get out of my reach; there was no way to capture it. Far away from the exact point where the

chase had begun, the situation changed, and the bird began to walk normally, upright and in balance. Then accelerated its move and then began to fly, showing an ease and an impressive skill in the art of flight. I was perplexed, astonished, with a face of not knowing very well how to understand that behavior.With the bird out of sight, thoughtful and misplaced, I returned to the starting place with the aim of picking up the backpack that I had been carrying and had left on the sand, just before starting my run after the bird. A few meters before reaching my backpack, the bird appeared again, making movements identical to those that minutes before had been doing in that same place. Without moving from that place I observed its movements very attentively for a few minutes; the bird did not stop circling around my position, moving away and approaching. I continued walking until I got my backpack. The bird, dislocated, began to move zigzagging under my feet, while emitting a characteristic and incessant whistling. I went away from there as much as I could until the bird stopped accompanying me. From a distance, I followed the movements of the bird with my eyes, and watched as it returned to the same area. At a very specific point on the dune, it crouched down and remained still the whole time I was watching. “What mysterious secret does the bird and the dune hide for me?”- I asked myself then. Intrigued and determined, I approached to the

bird cautiously until it got up and once again the “dance of the wounded bird” began; but this time I did not deviate my path and continued straight to the site that was my goal. In the precise and precious moment in which I directed my gaze on the exact place where the bird had been perched before beginning its “dance”, the dune revealed to me its secret and the wounded bird discovered for me the most valuable of its treasures .. .Under a bare sky and directly on the sand, with no more protection than their own mimicry, lay three eggs, so well modified and integrated into that dune landscape, that neither the most skillful Michelangelo nor the most prodigious Picasso could have sculpted or painted some examples of such sublime beauty. That great work could only be attributed to mother nature in its full essence. Time stopped … and while … I watched fascinated the way the shell of one of the eggs was broken, and I marveled seeing how the life contained inside it made its way to the last rays of light of that unforgettable summer afternoon; It was the birth of what was for me and since then it has been: The Bird of the Sands. As soon as I was aware of the delicate situation and what my presence in that place meant, I hurriedly moved as far as I could. My heart was pounding, and while my mind, in a single fraction of a second, understood that the extraordinary “dance of the wounded bird” was a masterly and authentic “theatrical” representation, the most impressive, transcen-

dental and vital of all I could have imagine or dream ever. By pretending that it was wounded, that “magnificent bird of paradise” had been able to confuse me and capture my attention to divert my way from that place where the nest was, preventing me from discovering it or stepping on it, and thus safeguarding its future; exactly as it would have done with a fox (Vulpes vulpes), a wild cat (Felis silvestris), a horseshoe snake (Hemorrhois hippocrepis) or any other danger or natural predator. Before any human being had stepped on our shores, it is more than likely that the ćhorlitejo patinegro´ lay their eggs on the beach that we all visit and know today. These birds have been known for a long time, especially since the villages settled on the coast and people began to use the beaches and get a benefit from their natural resources (fishing, agricultural, livestock, leisure and recreational activities, tourism, etc). HERE IS A CURIOUS AND INTERESTING FACT:Until the last century, and more specifically during the sixties-seventies, many of the inhabitants of the Comarca Litoral de la Janda included the ćhorlitejo patinegro´ as a part of their diet. Manuel, a native man of Zahara de los Atunes and known locally by the nickname “diez reales”, is a living example of this. His personal comments attest to how he and other neighbors and family members of the town used to ate, until recently, the eggs and chicks of the “beach plover” (as some locals call the ćhorlito patinegro´ ). But those were other times. The coasts did not suffer then a minimum part of the pressure, more than all the human presence we now find in our national coast. At present, the ćhorlitejo patinegro` suffers a situation of high vulnerability within our Foto: Carlos Yebra

geography. In many of our coastal towns, both Mediterranean and Atlantic, it has become extinct as a breeding bird. Wherever it still survives, its population situation at the local level goes from vulnerable to a critical danger of extinction. Examples of these are the Cornisa Cantábrica, the Costa del Sol, Castellón, the Valencian Community, etc. At the beginning of this year, the Spanish Ornithological Society granted the “Bird of the Year” award 2019 to the ´Chorlitejo Patinegro´, which is not exactly good news for the species. However, on the other hand, this sad “distinction” supposes an impulse or aid for the species, since it has as main objective to make visible to the society and the administrations in general, the problems for its conservation that these birds face and the challenge that we face as heirs and custodians of one of the most threatened, sensitive and fragile ecosystems of those around us. The beach, in all likelihood, represents the most important natural and tourist resource on which they depend and also benefits hundreds of towns and millions of people along our entire national coastline. Any place is not suitable for a couple or a population of ´chorlitejo patinegro´ to exist. These birds choose to live those places where nature is well preserved; many times, where there is hardly anything left of it. The impact or footprint of human origin in our coastline has been growing steadily since the 1970s, whether due to the development of infrastructures or the different uses of the coastal territory. In the few places where there is a balance between the human and the original natural landscape, there is an opportunity for the survival of the native species of our flora and fauna. Beaches as Zahara de los Atunes, El Retin, Atlanterra, Barbate, Trafalgar, Bologna, Los Lances, Valdevaqueros or Punta Paloma, are places and landscapes where an acceptable po-

pulation of the ´chorlitejo patinegro´ survives today. But it is also true that in recent years the number of breeding pairs has begun to decrease, becoming alarming in some cases. At present, a large part of the people and some entities and administrations, public and private, are getting involved and also actively committing themselves to the conservation of the ´chorltejo patinegro´, and therefore in actions aimed at safeguarding the beach as a landscape and as a natural ecosystem. A large percentage of the local population of Spain, and another part of foreign tourists, visit the beach at some time during the summer. The number of inhabitants per square kilometer on the coasts shoots up to grow well above their possibilities of reception. We all fit on the beach, but this can not be in any way. As in a large city we are able to live and respect certain spaces, on the beaches, or we do an adequate management and impeccable management of public use, with responsibility of the administrations and also with the personal commitment of each and every citizen, or otherwise, the future that is coming is not very encouraging. The beach is a living, sensitive and, above all, fragile ecosystem, limited to our coasts. This is unique and unrepeatable inland. The future of the beach, and your own, is in your hands. Take care of it. “When you are able to discover the secret of the Bird of the Sands, and you are aware of such a sublime way of life, so magnificent and extraordinary in its art for survival… so, every time you go back to the beach, you know you’re stepping on one of the last living paradises, and that its continuity or destruction depend on you”. Carnival is transmitted from parents to children as a tradition and it is an important part of the cultural heritage. It is about preparing “el tipo”, tuning the voices, memorizing the repertoire and performing the characterization trying to get the audience up and receive the ovations. Only a lucky few pass through the Olympus of Carnival and their stories are recorded over the years. First of all, is the first thing, here you come to have fun. ELABORACIÓN DE CONVENTO SAN FRANCISCO 2015 D.O. Ribera del Duero. Viñedos ubicados en Quintana del Pidio, Gumiel de Izán y Fuentenebro, con edades entre 30 y 105 años, a 760 y 970 metros de altitud, en laderas y páramos. Los suelos están compuestos por arenas con gravas, arcillas rojas y calizas con guijarros. Las parcelas se vendimiaron entre el 26 y 30 de septiembre de 2015, manualmente, en cajas de 15 Kg. Éstas se recibieron a través de una doble mesa de selección, de racimos y uvas. Fermentado y macerado a temperatura controlada durante 20 días con remontados y bazuqueos manuales diarios. Envejecido 16 meses en barricas bordelesas de 225 y 300 L. de roble francés (80%) y roble americano (20%). Vino no sometido a ningún proceso de filtrado ni clarificado. Obtuvimos un total de 57.840 botellas de 750ml.

EDRO BALLESTA NACIÓ HACE YA UNOS CUANTOS AÑOS EN EL MUNICIPIO SEVILLANO DE LA CAMPANA Y SE TRASLADÓ A LOS POCOS AÑOS A SEVILLA. SE CONFIESA UN APASIONADO DEL TRABAJO Y DEL DEPORTE, PERO SU VERDADERO AMOR HA SIDO, DESDE LA PRIMERA VEZ QUE LA VIÓ, ZAHARA DE LOS ATUNES. ¿CUÁL FUE SU PRIMER CONTACTO CON ZAHARA DE LOS ATUNES Y LA ZONA? Todo

empezó en el año 80 cuando todavía estaba trabajando en el sector bancario. En uno de los viajes que hice de vacaciones con un amigo, llegué hasta Zahara de los Atunes. El enamoramiento fue instantáneo. Me dije que tenía que tener algo por aquí. Entonces, por esta zona, no había ninguna infraestructura ni promoción, y apenas en la zona de Atlanterra estaban establecidos algunos alemanes. ¿CÓMO EMPEZÓ LA AVENTURA DE PUERTO ZAHARA? La creación de Puerto Zahara fue de

una forma natural. Aunque yo a finales de los años 80 aún trabajaba en el banco, por casua-

lidad o por intuición tuve conocimiento de que había una operación inmobiliaria importante por la zona. Entonces me propuse a realizarla. Debido al éxito que obtuve con esa primera venta se me presentó la oportunidad de vender alguna de las promociones que iban saliendo. En un principio costó sacar adelante la primera, por ser la más novedosa, pero en cuanto el mercado comenzó a ver que se construía, se fue animando. Me ofrecí de nuevo a sacar adelante otras promociones a base de comisiones, con mucho tesón y esfuerzo. No recuerdo los kilómetros que habré hecho ni las promociones que habré vendido tan

sólo con mi coche y un maletero. En esos años creé la empresa, mientras todavía compaginaba mi trabajo en el banco. En principio de los años 90, con la sociedad ya creada, abandoné el banco por un corto espacio de tiempo. Pero ya no volví y me dediqué al 100% a lo que hoy es una parte importantísima de mi vida. Zahara y Puerto Zahara. ¿POR QUÉ SE ELIGIÓ EN CONCRETO EL NOMBRE DE PUERTO ZAHARA?. Como te digo, nada más llegar por primera vez a esta zona me quedé enamorado, aunque también tenía otro lugar muy importante en mi corazón, El Puerto de Santa María. Unificando los nombres de El Puerto de Santa María y de Zahara nació el nombre de Puerto Zahara. Desde entonces así se ha quedado. A LO LARGO DE ESTOS AÑOS, ¿EXISTE ALGÚN HITO EN LA HISTORIA DE PUERTO ZAHARA QUE CONSIDERE RELEVANTE?

Sin duda venta de la promoción Atlanterra Playa. Resultó compleja. Por aquel entonces los bancos habían decidido dejar de conceder financiación y básicamente estaban cerrados. Ante ese panorama a mí me hicieron una oferta, “Si era capaz de sacar 50 viviendas en un año la promoción me la adjudicaban”. Me

atravesado momentos complicados jamás se me ha pasado tirar la toalla. Siempre he sido cauto y previsor en mis negocios. En la crisis de los 90 nos costó salir adelante y gracias a la venta de algunas propiedades que tenía, mis empleados y yo pudimos capearla. Con esa experiencia aprendida, la crisis de 2000 pudimos afrontarla también. Me siento muy orgulloso de no haber tenido que despedir a nadie por ese motivo. El gran patrimonio de la empresa es mi plantilla y mis trabajadores, sin ellos Puerto Zahara no existiría. Ellos y yo, nosotros, somos Puerto Zahara. ¿CÓMO HA CAMBIADO EL NEGOCIO DE LA PROMOCIÓN Y DE LA INMOBILIARIA EN ESTOS 30 AÑOS? El negocio no ha cambiado, lo que ha cambiado es el consumidor, que cada día está más informado. Cada día sabe más, cada día exige más, y cada día está más al tanto de las calidades, de la financiación… El consumidor se ha profesionalizado y universalizado. Ante eso sólo podemos responder con profesionalidad y preparación. En realidad, el mercado sigue siendo el mismo, aunque el consumidor ha aprendido mucho. ¿CUÁLES SON LOS DESAFÍOS QUE UNA EMPRESA COMO LA SUYA SE ENFRENTA DE AQUÍ AL FUTURO? El cliente también se ha internacionalizado y nos vienen potenciales compradores de toda Europa. Tenemos que estar preparados para atender convenientemente y dar una servicio inmobiliario que se adapte a sus necesidades. Los mercados internacionales también fluctúan y para ello tenemos que estar listos para dar una respuesta adecuada. ción geográfica de Zahara de los Atunes es muy particular. Se encuentra encajada entre tres parques naturales, el Parque Natural del Estrecho, el parque natural de la Breña y las Marismas de Barbate y el Parque Natural de los Alcornocales. Geográficamente no podemos crecer más. Toda la proyección de futuro y el desarrollo de Zahara tiene que estar orientado hacia la exclusividad y la excelencia. El entorno que nos rodea nos lo exige, así como el patrimonio cultural, paisajístico y gastronómico que podemos ofrecer. Cuando hace unos años los grandes cocineros de renombre llegaron a Zahara, inspiraron a la industria y hostelera de la zona subrayando que teníamos la mejor materia prima del mundo. La despensa estaba en nuestras costas, en nuestros campos… El mejor pescado del Estrecho, el mejor atún rojo del mundo y, por supuesto, una de las carnes más exquisitas: La carne de retinto alimentada con el pasto azotado por el viento de levante. Tenemos que ser conscientes que en un pueblo que tiene censados no más de 1100 habitantes cuenta con un centenar restaurantes de lujo. A SUS CASI 79 AÑOS, MANUEL BENÍTEZ, CONOCIDO POPULARMENTE EN ZAHARA COMO MANOLITO DUARDO, RECIBE A ZAHARA MAGAZINE. BONACHÓN, SINCERO Y AMABLE, NOS CONFIESA EN ESTA ENTREVISTA QUE LE ENCANTA QUE VENGAN TURISTAS A ZAHARA. ¿Natural de Zahara? No, nací en Vejer, ya que toda mi familia era de allí, pero vivo en Zahara desde que tenía tres meses, por lo que me considero de Zahara.

¿Cómo recuerdas la Zahara de tu niñez? Con muchas carencias. Había mucha po-

breza, poco trabajo, hambre y piojos. No siempre había médico ni maestro. Cada vez que el médico del pueblo se iba porque lo trasladaban o se jubilaba tardaban mucho en cubrir la plaza. Eso si, siempre había cura. A diferencia del médico o del maestro, el cura del pueblo siempre estaba, nunca faltaba, se iba uno y rápidamente venia otro. A finales de los años sesenta, con la llegada de los alemanes, empezó a cambiar la cosa. Llegó

el turismo y muchos trabajadores del campo y de la mar se colocaron en el sector de la construcción. Fue un gran cambio. ¿Cómo ves actualmente Zahara? Es evidente que el pueblo cada vez está mejor, con buenos hoteles, con un turismo de calidad…pero tiene algunas carencias que hay que mejorar. A mi me encanta que vengan turistas a Zahara, a mi pueblo, pero faltan muchos servicios básicos, como, por ejemplo, médico los fines de

Estuve navegando un año. Salimos de Cádiz y visitamos Santa Cruz de Tenerife, Buenos Aires, Montevideo, Río de Janeiro, Fortaleza, San Juan de Puerto Rico, Charleston, Nueva York, Plymouth y Pontevedra. Desde Santa Cruz de Tenerife a Buenos Aires tardamos 43 días, de Nueva York a Plymouth 35 días…

semana de invierno. También faltan policías. La Guardia Civil tiene asignada la vigilancia de las playas con carácter prioritario. Si los llamas para una emergencia te dicen que no pueden ir, que no pueden abandonar su puesto y que llames a la Policía Local, y esta casi nunca viene. Hay un cierto abandono por parte del Ayuntamiento. ¿A que edad empezaste a trabajar? Con doce o trece años ya trabajaba en el campo, de vaquero, guardando vacas y con los caballos. Cuando cumplí los 16 años me saque el folio, que era un documento administrativo que te permitía poder trabajar en la mar. Me embarque en un pesquero y recorrí un montón de puertos de Canarias y Marruecos. En 1971 emigre a Barcelona, donde trabajé durante tres años en la multinacional General Electric. Recuerdo que me contrataron porque en la entrevista fui el único de los aspirantes que dije la verdad. Nos enseñaron un aparato eléctrico que nadie podía conocer, porque solo lo usaba Renfe, la empresa de trenes. Todos los demás aspirantes, cuando se lo mostraron, dijeron que lo habían visto anteriormente, que sabían lo que era, lo cual era mentira, ya que esos aparatos eran exclusivos de los empleados de Renfe. Yo fui sincero y dije la verdad, que no lo había visto en mi vida y que no tenia ni idea

de lo que era. Por eso, por decir la verdad, se fijaron en mi y me contrataron. Estuve hasta el año 1974. Después volví a Zahara y empecé a trabajar de albañil. ¿Estuviste embarcado en el buque escuela Juan Sebastián Elcano? Si, al estar

adscrito a la marina, hice el servicio militar en Elcano, de marinero de maquinas. Estuve navegando un año. Salimos de Cádiz y visitamos Santa Cruz de Tenerife, Buenos Aires, Montevideo, Río de Janeiro, Fortaleza -donde desembarcamos

a un marinero enfermo de apendicitis- San Juan de Puerto Rico, Charleston, Nueva York, Plymouth y Pontevedra. Recuerdo perfectamente la navegación. Desde Santa Cruz de Tenerife a Buenos Aires tardamos 43 días, de Nueva York a Plymouth 35 días… Fue una experiencia inolvidable. En todos los puertos nos recibían estupendamente, el trato que nos dispensaban era inmejorable. Recuerdo que en Uruguay me encontré a un emigrante español que me dio recuerdos para un primo suyo de La Barca de Vejer. Son cosas que no se olvidan nunca. Termine con graduación de marinero de primera. Después del servicio militar empecé a trabajar de albañil. Ahora que estás jubilado, ¿Cómo pasas el tiempo? En agosto cumplo 79 años. Llevo

una vida muy tranquila, con mi familia. Tengo dos hijos en Zahara y otros dos en Fuerteventura. Algunas veces he ido a visitarlos y he pasado allí algunas temporadas, pero a mi mujer y a mi nos gusta poco viajar. Hasta hace algunos años pescaba con mi barco, pues siempre he tenido una gran afición a la pesca. Tenía un barco de seis metros en el puerto deportivo de Barbate, pero lo tuve que dejar. Me costaba muy caro mantenerlo y alguna vez que otra me robaron los inyectores. Así que me cansé y se lo regalé a mi hijo.n

since my whole family was from there, but I live in Zahara since I was only three months old, so I consider myself to be from Zahara.

¿What memories do you have of that Zahara of your childhood? We had many

needs. There was a lot of poverty, little work, hunger and there were also lice. There was not always a doctor or a teacher. Every time the village doctor left because it was transferred or if he retired, it took a long time to fill the vacancy. Instead, there was always a Priest. A difference between the doctor and the teacher, the village Priest was always there, never missing, if one was leaving another quickly came. At the end

In all the ports we were welcomed and we were given a treatment that was unbeatable. I remember that in Uruguay I met a Spanish emigrant who gave me memories for his cousin from La Barca de Vejer. They are things that are never forgotten. I finished with the degree of first sailor. After the military service I started working as a bricklayer.

At what age did you start working?

When I was twelve or thirteen, I was already working in the fields, as a cowboy, keeping cows and also horses. When I turned 16, I took out the Folio, which was an administrative document that allowed you to work at sea. I embarked on a fishing boat and toured a lot of ports in the Canary Islands and Morocco. In 1971 I moved to Barcelona, where I worked for three years in the multinational General Electric. I remember that they hired me because during the interview I was the only one of the aspirants who told the truth. They showed us an electrical device that nobody could know, because it was only used by Renfe, the train company. All the other applicants, when they showed it to them, said that they had seen it before, that they knew what it was, obviously a lie, since those devices were for the exclusive use of the Renfe employees. I was honest and I told the truth, I said that I had not seen it in my

Until a few years ago I was fishing with my boat, because I have always had a great fondness for fishing. I had a six meters boat in the marina of Barbate, but I had to leave. It was very expensive for me to keep it and the injectors were stolen from time to time. So I got tired of this and gave it to my son.n

o es que las bodas en la playa sean tendencia, es que siempre han estado de moda. Tienen unos alicientes que hacen que un reportaje se convierta en un trabajo muy especial, el entorno, las parejas, la hora, el sol… muchos factores que la experiencia te enseña que son el ingrediente secreto para conseguir un resultado irrepetible. “Ni a todas las novias les favorece el mismo traje, ni tampoco las mismas fotografías” Mary ha realizado más de 900 bodas que la han llevado a lugares inolvidables: Cuba, Dubai, Londres, París, Roma, San Francisco, Suiza… Recientemente ha sido galardonada con el primer premio FDF certamen internacional de fotógrafos de boda, reconocimientos a nivel nacional e internacional hacen que cada día

esté más enamorada de su trabajo. Como bien dice “Mi premio más importante es compartir con vosotros unos momentos tan especiales. El único recuerdo de boda será el reportaje y qué mejor inversión que en algo que perdurará en el tiempo contando vuestra historia de amor. Vuestra satisfacción es la mía”. Entre sus logros profesionales destacan el premio Principado de Asturias de retrato en 2001, el QEP en retrato y el MQEP de la Federation of European Photographers. he organization of weddings on the beach is not something that is a trend, it has always been fashionable. They have some incentives that make a wedding photography become a very special work, the environment, the couples, the time, the sun. In this experience there are several factors that you learn over time that represent the secret ingredient to achieve an unrepeatable result. “Not all brides are favored by the same suit nor all of them the by same photographs”. Mary has photographed more than 900 weddings that have taken her to unforgettable places: Cuba, Dubai, London, Paris, Rome, San Francisco, Switzerland … She has recently been awarded with the first place at ´FDF International Wedding Photographers Award´, a recognition of national and international nature that

make her every day more in love with her work. As she says, “My most important prize is to share with you some special moments. The only wedding memory will be the wedding photography and what can be better investment than something that will last in time telling your love story? Your satisfaction is my best recognition”. Among his most outstanding professional achievements we have the Principality of Asturias Portrait prize in 2001, the Portrait QEP and the MQEP of the Federation of European Photographers. Hace algunas ediciones concebimos esta sección para mostrar la visión de Carlos Yebra a través de sus experiencias de Oriente, en el momento en el que el fotógrafo hace la maleta y se transforma en viajero. Soñamos con Egipto y Jordania. En Marruecos volamos por Chaouen, Tánger y Assilah. En esta ocasión os ofrecemos un pequeño compendio de imágenes con la potencia y expresividad del blanco y negro. Retratos crudos de realidad, bocados de vida, instantes robados y magia en las luces orientales. Desiertos de arena que vomitan su barro sobre nuestra tierra traído en volandas por los asfixiantes vientos del sur. Piedras milenarias que aparecen en superproducciones de Hollywood, caballos árabes hermanos de los de aquí, aparecen en estas páginas de una revista cuyo nombre, como no puede ser de otra manera, también es origen árabe. es presentamos la nueva edición de la Ruta del atún de Zahara de los Atunes, la más ambiciosa y la más evolucionada de todas. Un compromiso firme de la nueva Junta Directiva de ACOZA para mejorar y complementar el éxito de las ediciones precedentes. Un jurado formado por prestigiosos profesionales del mundo de la gastronomía han evaluado tapa a tapa toda la oferta gastronómica que compite, para conseguir cada uno de los premios en cada categoría. La tecnología está presente en esta edición a través de nuestra app, que puede descargarse a través de Google Play y Apple Store, donde se pueden consultar las tapas, comprobar los ingredientes, elaboración, establecimiento y lugar donde se pueden degustar.
