Un sur que se escribe con mayúsculas en esta zona, reino de los gigantes de plata, del Atún Rojo, de las fuerzas desatadas de la naturaleza y del todo el arte que, por doquier, se respira en cada esquina de nuestro pequeño pueblo. La gastronomía se mezcla con la cultura para convertirse en el binomio perfecto para deleite de zahareños y zahareñas y de todas aquellas personas que nos visitan. Exposiciones, conferencias, talleres, cuentacuentos, representaciones teatrales…, se entremezclan con las mil y una maneras en las que se prepara el atún. ¡Que más se puede pedir! PURA RAZA E “TOMO DIOS UN PUÑADO DE VIENTO DEL SUR Y PRESTÁNDOLE SU ALIENTO, CREÓ AL CABALLO”

sta cita no es una quimera, es una realidad en el actual Centro Militar de Cría Caballar de Jerez de la Frontera,el cual es la integración de la Yeguada Militar y el Depósito de Sementales El Servicio de Cría Caballar esta considerada desde el siglo XIV una de las grandes riquezas del Estado Español. Los inicios podemos situarlos con los Reyes Católicos, los cuales crearon la Yeguada Real , sufriendo en el transcurso del tiempo numerosos altibajos debido a su larga trayectoria Felipe II construye la Caballeriza Real en base a las Caballerizas del Rey Almanzor de Córdoba. Felipe IV crea la Real Junta de Caballer a en acti o asta final de la uerra de Sucesión, desapareciendo más tarde. Felipe V logra reorganizarlo dando lugar a la creación de la 1ª Remonta del Ejercito, de inspiración castrense. Fernando VI incluye las Paradas Caballares y Mulares. Carlos IV incorpora La Escuela Veterinaria y crea la Junta Suprema de Caballería del Reino presidida por Luis de odo En 1.812 Las Cortes de Cádiz suprime la tutela del Estado para otorgársela a particulares, lo que condujo a un total fracaso teniendo que volver de nuevo a gestión estatal.

Desde ese momento se producen decisivos cambios y creaciones de diferentes departamentos ,Yeguada Militar de Córdoba, Reconstrucción del Caballo Pura Raza Española, Servicio de Remonta, Creación del Registro de Matricula, Junta de la Cría Caballar de Reino y en 2007 el Real Decreto sobre la Selección y Reproducción de ganado equino de Razas Puras dependiente del Ministerio de Agricultura. En la actualidad El Centro Militar de Cría Caballar de Jerez esta ubicado en : inca arrapilos reser ada a los sementales de las diferentes Puras Razas: Española, Inglesa, Árabe, Anglo Árabe e Hispano Árabe. Y el cortijo de Vicos donde se encuentran las yeguas, tiene como objetivo obtener mejor calidad y selección de reproducción en machos y hembras atendiendo a genealogía y morfología. Muestra del logro de estos objetivos son: el Diploma Olímpico en Atlanta conseguido por el caballo Evento y la medalla de plata por equipos en Doma Clásica en las Olimpiadas de Atenas obtenida por el caballo Oleaje.n

his quote is not a chimera, is the reality in the Military Center of Equine Breeding located in Jerez de la Frontera ere we can find the integration of the Military herd of horses and the stud’s warehouse. The Equine Breeding Service is considered one of the greatest riches of the Spanish State since the XIV century. We can set the beginnings of the equine breeding with the Reyes Catòlicos, who created the Royal Herd of horses, which suffered many ups and downs over time due to their long trajectory. Felipe II of Spain built the Royal Stable based on the stables of the King Almanzor of Córdoba. Felipe IV of Spain created the Royal Calvary, which was active until the end of the War of the Spanish Succession and disappeared later. Felipe V of Spain managed to reorganize it and created the 1º Army Remount, inspired in the Cretans. Fernando VI of Spain included the Equine and Mule breeding places. Carlos IV of Spain incorporated the Veterinary School and created the Supreme Board of Cavalry of the Kingdom directed by Luis de Godoy.

In 1812, the Cadiz Cortes abolished the tutelage of the State in order to award it to private individuals, what lead to a total failure so the state management started again.Since then, decisive changes have been made and different departments have been created such as the Military Herd of horses in Córdoba, the reconstruction of the Purebred Spanish Horse, the Remount Service, the creation of the register of enrollment, the Reino Equine breeding and in 2007 the Royal Decree about the selection and reproduction of the Purebred equine herd. Nowadays, the Military Center of Equine Breeding of Jerez de la Frontera is located in Finca Garrapilos, reserved for the different Purebred studs: Spanish, English, Arabish, Anglo-Arabish and Spanish-Arabish. El cortijo de Vicos, where the mares are found, has the aim of obtaining the best quality and selection of reproduction in males and females according to the genealogy and morphology. Indications of the achievements are the Olympic diploma in Atlanta achieved by the horse Evento and the silver medal by teams in dressage in the Athens Olympics games, which was won by the horse Oleaje.n

haouen durante siglos una ciudad considerada sagrada, donde se prohibía la entrada a los extranjeros. Por esta razón se ha mantenido con pocas alteraciones toda su fisonom a medieval. Está situada en el noroeste del país, en la región de Tánger-Tetuán. Chaouen está construida sobre un pequeño valle. Fue fundada en 1471 en el empla-

zamiento de una pequeña población bereber. Su población original estuvo compuesta sobre todo por exiliados de alÁndalus, tanto musulmanes como judíos, razón por la cual la parte antigua de la ciudad tiene una apariencia muy similar a la de los pueblos andaluces, con pequeñas callejuelas de trazado irregular y casas encaladas (frecuentemente con tonos azules).

Los cambios en la estructura urbana y poblacional de Chaouen son muy recientes. Fueron las tropas españolas las que abrieron Chaouen al tomar el control de toda la zona norte del actual Marruecos para instaurar el protectorado concedido por la on erencia de l eciras definido por el tratado hispano-francés de 1912. Fue una de las principales bases del ejército español, y en esta ciudad se produjo la ce-

remonia de traspaso de la soberanía de la región a Marruecos, arriándose la bandera española, en 1956. Por ello gran parte de sus habitantes sabe hablar español. Chaouen estuvo bajo control de la autoproclamada República del Rif entre 1924 y 1926, tras la retirada de las tropas españolas en donde estuvo a punto de producirse un desastre para el ejército español debido a la gran ofensiva de los rifeños.

En la actualidad Chaouen es un importante centro de turismo. Toda la medina de la ciudad es interesante: sus calles empedradas y estrechas llenas de comercios de artesanía, sus casas pintadas de azul y blanco y sus acogedores habitantes. Pasear por sus calles es una buena forma de pasar el día.n

It is located in the Northwest part of the country, in the region of Tangier-Tetouan. Chaouen is built over a small valley. It was founded in 1471 in the location of a small Berber settlement. Its original population was formed mainly by Al-Andalus exiles, not only Muslims but also Jews, reason why the old part of the

city has a very similar appearance to the Andalusian villages, with small narrow streets of irregular design and whitewashed houses (frequently in blue tones). The changes in the urban and population structure of Chaouen are very recent. The Spanish troops were the ones that opened Chaouen when they took over the control of the whole North part of the current Morocco to institute a protectorate given by Algeciras Conference and defined y the anish French treaty of 1912.

It was one of the main bases of the Spanish Army, and in this city the ceremony to transfer the sovereignty of the region to Morocco took place, owering the anish ag, in That is why a great part of its people can speak Spanish. Chaouen was under control of the self-proclaimed Republic of the Rif between 1924 and 1926, after the withdrawal of the Spanish troops, when it was about to occur a disaster for the Spanish army due to the great offensive by the Riffs. Nowadays, Chaouen is an important tourist centre. The whole medina (Arab quarter) of the city is interesting: its cobblestoned and narrow streets full of craft shops, its houses painted in blue and white and its welcoming people. Going for a stroll is a good way to spend the day. n

Durante unos pocos días, en Navidad, zahareños y zaharauis se vuelcan en organizar una de las tradiciones más entrañables que pueden disfrutar grandes y pequeños. En el recinto de la Muralla del Palacio de las Pilas, costureras, ganaderos, pastores, panaderos, labradores, todos ataviados con la vestimenta de época, representan el misterio de la natividad de nuestro señor, en un escenario que no tiene igual.

he sierra of Retin, in the municipal district of Barbate, has been occupied from Prehistory. During the Reconquest, and to improve the repopulation of the area, the Castilian Kings created in the surroundings of Retin the so-called Hazas de la Suerte, which were communal pieces of land, whose usufruct was raf ed a ong the population. About 5400 hectares of the sierra were expropriated by the Ministry of National Defence in 1982 with the purpose of settling in those lands a military servitude and it was considered a key point by Defence to allow the soldiers perform amphibious manoeuvres.

It is an impressive performance, watching the manoeuvres and the military deployment that the international troops develop annually in the coasts and waters of our neighbours of Barbate.n

Tiene sus orígenes en la construcción del Castillo de las Almadrabas por los Duques de Medina Sidonia, que transformaron un antiguo saladero en una capilla para realizar sus oficios, en las numerosas isitas realiadas a la almadra a en poca esti al ll celebraban misa cada día con la pequeña corte de la que se hacían acompañar. Fue bendecida el 30 de mayo de 1906. Esto fue posible en gran medida a los esfuerzos del sacerdote Francisco de Paula Fernández Caro Pareja, el Padre Caro, entonces arcipreste de Vejer. Hoy en día ha sufrido una profunda remodelaci n, encontr ndose toda a incorporada a la muralla que da a la calle Gobernador Sánchez González.n

he church of Nuestra SeĂąora del Carmen was built between the sixteenth and seventeenth centuries. Its origins come from the construction of the castle de Las Almadrabas by the Dukes of Sidonia, who transformed an old curing-plant in a chapel to celebrate the mass, in the very numerous visits they paid to the almadraba in the summertime. Every day they celebrated a mass there with the small court that accompanied them. It was blessed on 30th May 1906. This was possible mainly due to the effort of the priest Francisco de Paula Fernandez Caro Pareja, Father Caro, archpriest of Vejer by that time. Today it has suffered a deep remodelling, being still part of the wall that faces the street Gobernador Sanchez Gonzalez.n

NATURE PARK DEL ESTRECHO This maritime-terrestrial nature park has unique countryside, located between the Atlantic and the Mediterranean. It is marked by the area’s harsh climatic conditions and the presence of various civilisations over the ages, and is ho e to high y ada ted ora and fauna, fruit of the convergence of very different natural areas. Easterly and westerly winds play a fundamental role in the essence of this area: they have sha ed the andsca e, defined the igratory routes of birds and formed dunes. Visitors can enjoy beautiful beaches like Los Lances, which has the Natural Area protection designation, or Bolonia, which has a famous sand dune recognised as a natural monument. In the surrounding area there are stone pines which were re-planted in the 1960s to contain the dunes, along with ecologically valuable scrub plants. Moving further into the mountains there are holm oaks, cork and wild olive trees, along with re-planted eucalyptus. Special mention should be made of the rock samphire to be found on the cliffs, as well as daffodils and gorse that appear all over . The waters of the Strait of Gibraltar are home to important wildlife, and this area still produces new discoveries for the world of science ore than , s ecies of arine ora and fauna have been registered here, with sea turtles, dolphins and porpoises being the most common large ones. The area is ideal for scuba diving and there are extensive meadows of algae, and indication of the environmental qual-

ity of the water. Laminaria algae are especially noteworthy for their spectacular size. For those interested in the marine environment, there are boat trips from Tarifa and Algeciras where you can see dolphins. Cultural heritage is another of the park’s attractions; there are numerous archaeological remains, including the outstanding Roman town

of Baelo Claudia, a strategic location for the fish sa ting industry in aetica urther ore, the archaeological heritage of the Strait is not limited to the land. There is important underwater heritage, with a large number of wrecked ships. Mention should also be made of the centre of Tarifa, whose buildings have the Historic Site designation.

Special mention should be made of the stunning Tajo de Barbate. It is more than 100 metres high and is the most famous

area of cliffs on the Atlantic coast of Andalusia. Another characteristic landscape is La Breña pine grove. Una furgoneta Citroën de la II Guerra Mundial, de donde nacen platos de nombres un tanto peculiares… Bajo la denominación Cervezahara, elaboran de

En nuestro local se comercializan en barril en tamaño pinta y 1/2 pinta y si te la quieres llevar a casa a disfrutar con amigos tenemos formato exclusivamente de 0´75 , con un diseño muy elegante. Malas le fueron dadas a nuestro insigne escritor, que, junto a su hermano Rodrigo y otros, fue a dar con sus huesos en una cárcel de Orán. Después de muchas calamidades y a cambio de un importante rescate, que no con poco esfuerzo logró juntar su familia, el señor Miguel de Cervantes fue liberado y las olas atlánticas le trajeron a estas playas zahareñas. Aquí parece ser que escribió algún que otro pasaje de una de sus obras más representativas: La Ilustre Fregona. Zahara de los Atunes, a tiempo ya, dedicó a este hecho una de sus calles que lleva por nombre el de esta novela ejemplar. En esta calle, encontraréis el Mesón Pericayo, uno de los establecimientos con más solera de Zahara. Henar Yebra y Rafa Quintero, sus nuevos gerentes, aportan a la sabiduría de tiempos pretéritos, la frescura de tiempos nuevos.

on Miguel de Cervantes Saavedra arrived to these sailors’ lands, as it is said in the gossip mills of History. They say that the most distinguished representative of the Spanish letters, once recovered from his injuries in the battle of Lepanto, where he lost his left hand, and after asking for permission to his lord King Philip II, embarked in a galley called SOL, willing to battle the Turkish. Our notable writer was not very fortunate, since he ended up in jail in Oran together with his brother Rodrigo. After many misfortunes and in exchange for a ransom, that his family managed to get together with a lot of effort, Miguel de Cervantes was released, and the Atlantic waves brought him to Zahara beach. It seems that he wrote some another passage of one of his most remarkable novels: La Ilustre Fregona. Zahara de los Atunes dedicated the name of this novel to one of its streets long time ago. In that way, Venta “A los Cuatro Vientos” (To the four winds inn) was born. , Paco Espinosa completes the adventurers group, a chef formed in Zahara’s school that so much impression has created. They called it “inn” since they wanted to evoke the sense of a place for meeting on the road, simple and with a very familiar spirit. Their purpose was to provide a friends’ encounter and to manage that clients enjoy a meal that respects the customs and tradition of the place, with a raw material of quality and a very plain elaboration, in which it is essential to achieve the point. They named it “A los Cuatro Vientos” looking for the sense

of an open and clear place. Rodrigo, Paco and a team of very young people, all them from the area, put the air of the South. Pilar and Roman contribute with the air of the North and the land is in charge of the East and West. They wait for you, open to the four winds, where you are going to eat healthy and naturally, blow the wind that blows.n
