1. Make Satay marinade by grinding lemongrass, galangal, coriander seeds, cumin seeds, and turmeric powder with pestle in a mortar.

Then mix everything in coconut milk along with salt and sugar.

2. Marinate ground pork in Satay marinade for 1 hour.

3. Make Satay sauce by first stir-frying red curry paste in cooking oil while gradually adding coconut milk, palm sugar, salt, and tamarind paste. When the coconut milk starts to boil, remove the pan from the burner and add fried shallots and ground peanut.

Mix everything well.

4. Make cucumber salad by diluting sugar and salt in warm vinegar.

When the vinegar is cool, add sliced cucumber, red chili, and shallots.

5. Remove the crust from the slices of toast. Flatten each slice with a rolling pin and then spread marinated ground pork on it. Roll the toast slice tightly and pierce through it with a toothpick to hold the roll together. Deep fries the rolls in 160 ํ C. cooking oil until the pork is cooked. Strain the oil before cutting and serving them with the sauce and cucumber salad.

1. ทำ�เกี๊ยวกุ้งโดยโขลกรากผักชี กระเทียม พริกไทยให้ละเอียด ผสมกับเนื้อกุ้งสับ ปรุงรสด้วยเกลือ และน้ำ�มันหอย 2. นำ�ส่วนผสมที่ ได้มาห่อในแป้งเกี้ยว ลวกให้สุกดี ตักใส่ชามพักไว้ 3. ทำ�น้ำ�ต้มยำ�โดยนำ�ซุปไก่ไปตั้งไฟจนเดือด บุบตะไคร้ใส่ลงไป ตามด้วยข่า 4. พอเดือดอีกครั้งจึงใส่เห็ดฟาง ปรุงรสด้วยน้ำ�ปลา ใส่พริกขี้หนูบุบ และมันกุ้ง ยกออกจากความร้อน ใส่น้ำ�มะนาว แล้วชิมรส 5. เทน้ำ�ต้มยำ�ใส่ชามเกี๊ยวกุ้ง แต่งด้วยผักชี ตะไคร้ซอยและ ใบมะกรูด

1. To make prawn filling, coarsely grind coriander roots, garlic, and white pepper with pestle in a mortar. Then mix everything with grounded prawn and seasoning with salt and oyster sauce.

2. Wrap the prawn filling with wonton sheets, cook the prawn wontons in boiling water, set aside.

3. Make Tom Yam soup by first heating chicken broth until boiling then adding lemongrass and galangal.

4. While the broth is boiling, add straw mushrooms and chili and flavor with prawn fat and fish sauce. Remove the pan from the heat, add lime juice.

5. Pour the Tom Yam soup in the bowl with the wontons.

Garnish with coriander, chopped lemongrass, and kaffir lime leaves.

วิธีทำ�น้ำ�ยำ� 1. โขลกพริกแห้ง ปลากรอบ หอมแดง กระเทียม เข้าด้วยกันให้ละเอียด 2. ปรุงรสด้วยน้ำ�ปลา น้ำ�ตาลปิ้บ น้ำ�มะขามเปียก ตั้งไฟกลาง เคี่ยวพอข้น ยกลง วิธีทำ�เทมปุระ 1. ทำ�ความสะอาดกุ้ง ใช้มีดบั้งหลังบางๆ เป็นระยะๆ ใช้นิ้วกดให้กุ้งยืดตัว ทำ�ความสะอาดผิวของกระเจี๊ยบโดยวางกระเจี๊ยบบนเขียงหรือจานแบน โรยเกลือ ใช้อุ้มมือดันกระเจี๊ยบไปมาให้ถูกับเกลือ เกลือจะทำ�ให้ขนอ่อน เส้นเล็กๆ บนผิวกระเจี๊ยบหลุดไป พักไว้ 2. ผสมแป้งสาลี แป้งข้าวโพด ไข่แดง กับน้ำ�เย็นด้วยตะเกียบ (ไม่จำ�เป็นต้องให้ ส่วนผสมเนียนเข้ากันดี) ตั้งนำ�มันที่ 160 องศาเซลเซียส 3. นำ�กุ้งและกระเจี้ยบคลุกแป้งแห้งอีกส่วนหนึ่ง เคาะให้แป้งส่วนเกินหลุดออก นำ�ไปชุบแป้งเทมปุระแล้วทอดจนสีเหลืองสวย พักไว้ (เศษของแป้งเทมปุระ ที่เหลือ สามารถสะบัดใส่ในน้ำ�มันทอด ให้เป็นเกล็ดเล็กๆ นำ�ไปใส่ในยำ�ส้มโอ เพื่อเพิ่มเนื้อสัมผัส) วิธีทำ� 1. แกะเนื้อส้มโอให้มีลักษณะเป็นชิ้นเล็กๆ (เรียกว่ากุ้ง) หั่นกระเจี๊ยบทอดเป็นท่อนๆ 2. ใส่ส้มโอ กระเจี๊ยบและเกล็ดแป้งทอดลงในชามผสม เคล้าด้วยน้ำ�ยำ�เบาๆ โรยด้วยหอมเจียว มะพร้าวคั่ว ใบมะกรูดซอย และถั่วลิสงคั่วตะล่อมเบาๆ ให้ส่วนผสมกระจายทั่วๆ 3. ตักยำ�ส้มโอใส่จานที่รองผักสลัด โรยด้วยพริกชี้ฟ้าซอย ใบมะกรูดซอยอีกเล็ก น้อย ตกแต่งด้วยกุ้ง และกระเจี๊ยบทอดเทมปุระ

To make the dressing: 1. Coarsely grind and mix the roasted dried chili, dried fish, shallots, and garlic with pestle in a mortar.

2. Flavor with fish sauce, palm sugar, tamarind paste. Heat until slightly thickened.

To make the tempura: 1. Wash the prawns, slit their backs, and uncurl to keep them straight when deep-fried. Clean each okra by rubbing it with some salt against a flat surface to remove the hair on its skin.

2. To make tempura flour mix, coarsely mix all purpose flour, cornstarch, and yolks in cold water. Heat cooking oil to 160 ํ C. 3. Lightly coat the prawns and the okra with some all purpose flour and then dip each and every one of them in the tempura flour mix.

Deep-fried them in the oil until they turn golden. The left over from the flour mix can be sprinkled into the oil to make crispy-fried tempura flakes for the side salad later.

To make the salad: 1. Peel off the pomelo and break its meat into smaller chunks.

Cut the deep-fried okra into smaller pieces.

2. In a bowl, lightly toss the tempura croutons, the pomelo chunks, and the okra pieces together with the dressing. Sprinkle the mixture with more shallots, roasted coconut, kaffir lime leaf, and peanuts.

Briefly toss everything together.

3. Serve the salad on a plate, on a bed of other salad vegetables of your choice. Garnish on top with some red chili and decorate with some Art of Cooking 11 pieces of tempura and on the side.

To prepare shrimp paste mix 1. Heat vegetable oil in a wok at medium heat and lightly fry garlic until fragrant. Add shrimp paste and stir fry for a while, then add water and mix everything well.

2. Flavor the paste with sugar and lime. Turn down the heat to low and add ground dried shrimp. Taste the paste and add more flavor to your liking. When the paste thicken, set it aside.

To prepare some shredded omelet: 1. Separate egg whites and yolks. Beat the yolks into smooth liquid.

2. Heat some oil on low in a nonstick pan and spread the yolk thinly on the pan to make a thin sheet of omelet. Then roll the omelet on a cutting board and crosscut the whole roll to make thin long strips of omelet.

3. Repeat step two with the egg white.

To prepare sweet pork: 1. Mix thoroughly all the ingredients in a pan first, then heat the pan on low on a burner.

2. Keep stirring to separate the chunky pork while slowly cooking all the ingredients until the liquid is nearly all evaporated. Then set it aside.

To make the Donburi 1. Heat the shrimp paste in a pan, followed with the rice.

Stir to mix well, and then serve in a bowl.

2. Garnish with the mix of shredded omelet, sweet pork, mango, chili, cucumber, shallot, winged bean, Art of Cooking and lime dices.

To make donuts: 1. Boil water in a pan, then dilute sugar, salt, and butter, and mix them well.

2. When the mix boils again, add all the flour and stir with a wooden spoon until the mix turns into a doughy clump.

3. Put the dough in a bowl and spread it with a spoon to dissipate the heat. Add and mix one egg at a time in the dough until the dough is smooth.

4. Heat oil in a frying pan to 160 ํ C. 5. Use two wooden spoons to form round-shaped dough and deep-fry it until turning gold.

To make custard: 1. Beat egg yolks with sugar to mix well, then add cornstarch and mix them well.

2. Heat milk in a pan until boiling and remove it from the burner.

Add half of the milk in the egg mixture and mix them all well.

3. Pour the mix back in the other half of the milk in the pan and heat it on the burner again. Keep stirring.

4. When the mix boils and thickens, add red syrup and stir for another 20 seconds.

5. Transfer the mix to another container to refrigerate for a while until it turns lukewarm. Then serve with thong plu.

1. Wash crab shells and wipe them dry.

2. Coarsely grind coriander roots, white pepper, and garlic with pestle in a mortar. Then mix everything with crabmeat, ground pork, fish sauce, and one egg.

Knead the mix very thoroughly.

3. Stuff the crab shells with the mix, then steam them for 10 minutes (or until the filling is well cooked).

4. Heat cooking oil to 170 ํ C. Beat 2 eggs together and then dip the steamed crabs in the egg. Deep fry the crabs with the filling facing down and turn the crab to have both sides fried thoroughly.

5. Splash or sprinkle the remaining egg in the oil to make nice flaky & fluffy chunks of omelet, then strain the omelet.

6. Make mango sauce by mixing all the ingredients in a blender.

Then simmer the sauce on low heat for 5 minutes.

To make cheese scallops: 1. Slice each scallop open, not all the way into two pieces.

Put a small piece of emmental cheese inside the scallop.

2. Coat the scallops with wheat flour, egg, and breadcrumb, then deep-fry at 170 ํ C for 3 - 5 minutes or until the scallops turn gold.

To make corn soup: 1. Stir-fry onion, leek, and celery in olive oil for 5 minutes.

Add corn and potato cubes and continue to stir-fry for 5 more minutes until everything turns light brown.

2. Add chicken broth to the mix and boil for 15 minutes, until everything is soft. Then blend the mix in a blender and strain.

3. Add cream and mix well. Flavor with some salt and pepper, then serve with the cheese scallops.

1. Cut potato into 8 - 10 pieces. Deep-fry the potatoes at 160 ํ C, until well-cooked, and then strain the oil.

Sprinkle the potatoes with some salt while they are still hot.

2. Mix wheat flour, baking powder, and salt very well in beer.

3. Remove most water off pieces of cod with paper towel.

Thoroughly sprinkle the cod with some salt and pepper and thinly coat it with some flour. Then dip it completely in the beer-flour mix and deep fry about 3 - 5 minutes, until turning gold. Strain the oil.

4. Mix curry powder well with gherkin, caper, shallot, parsley, and chopped egg. Add mayonnaise to thicken the mix as much as you like. Serve with the fried potatoes and the fried fish.

1. Remove the apple cores and cut half each apple.

2. Heat butter on a pan and toss the apples in it until they are thoroughly coated with butter. Add rum and continue tossing until fragrant.

3. Thoroughly sprinkle all of both the brown and white sugar onto the apples. Continue to toss in the pan until the melted sugar turns darker.

4. Then add cream to the pan, which will slow down the heating.

Mix well everything in the pan.

5. Serve on a plate with vanilla ice cream. Sprinkle on top with some almonds.

1. Hard-boil all the eggs by heating both the water and the eggs simultaneously until the water boils. Then turn down the heat and continue to boil another 7 - 8 minutes.

Strain the eggs and immediately put them in cold water to remove the heat, which will prevent the surface of the egg yolk from turning dark. Peel off the eggs, cut all of them in halves, and separate all the yolks from egg white. Set all of them aside.

2. Stir-fry curry paste in oil until fragrant and gradually add coconut milk. Flavor with fish sauce and palm sugar.

Remove from the heat and set it aside.

3. Boil or steam potatoes for 30 minutes, or until well cooked.

Peel off the potato skin while still hot. Mash and mix thoroughly and smoothly all the potatoes with the stir-fried curry mix and all the egg yolks.

4. Put the mashed potato mix in a pastry bag with your favorite tip. Squeeze and fill the mix in each piece of egg white.

Serve with a topping of chicken breast and red chili on each deviled egg.

วิธีทำ�ขนมปังรสแกงกะหรี่ 1. โขลกพริกแห้ง ข่า และตะไคร้ให้ละเอียด ปรุงรสด้วยเกลือ น้ำ�ตาล และน้ำ�มะนาว ใส่ใบมะกรูดซอยและ น้ำ�มันลงไปผสม 2. หั่นขนมปังฝรั่งเศสให้เป็นชิ้นแผ่น ทาพริกแกงต้มยำ�ลงไปบางบนขนมปัง แล้วจึงนำ�ไปอบที่อุณหภูมิ 180 องศาเซลเซียสเป็นเวลาประมาณ 2 - 3 นาที จนขนมปังเหลืองกรอบดี วิธีทำ�ซุปมันฝรั่งรสแกงกะหรี่ 1. นำ�หอมใหญ่ ต้นกระเทียม และเซเลอรี่ลงผัดกับน้ำ�มันมะกอกประมาณ 5 นาที แล้วจึงตามด้วยมันฝรั่ง ผัดต่ออีก 5 นาที 2. เติมน้ำ�ซุปไก่ลงไป เคี่ยวต่อไปอีกประมาณ 15 นาที จนกระทั่งส่วนผสม ทุกอย่างนุ่มดี นำ�ซุปที่ ได้ไปปั่นให้ละเอียด แล้วกรอง 3. ใส่ครีม ปรุงรสด้วยเกลือ พริกไทย และผงกะหรี่ นำ�กลับไปตั้งไฟอีกครั้ง พอเดือด ให้ลดไฟ แล้วค่อยๆ หยอดไข่ขาวลงไปในซุป ให้ไหลลงไปเป็นสาย ช้าๆ คนเบาๆ ให้ไข่ขาวมีลักษณะเป็นเส้นเล็กๆ และเนื้อนุ่มไม่แข็งกระด้าง 4. ตักซุปมันฝรั่งใส่จาน เสิร์ฟพร้อมกับขนมปังรสต้มยำ�

How to make curry croutons: 1. To make Tom Yam mix, thoroughly grind chili peppers, galangal, and lemongrass with pestle in a mortar. Flavor the mix with salt, sugar, and lime juice. Add kaffir lime leaf and oil.

2. Slice French bread 1/2 inch thick. Thinly spread the Tom Yam mix on the bread, heat all the slices in an oven at 180 ํ C for 2 - 3 minute, and you’ll get crispy Tom Yam croutons.

How to make the cream soup: 1. Stir-fry onion, leek, and celery in olive oil for 5 minutes.

Add potatoes and continue to stir-fry for 5 more minutes, until the potatoes turn light brown.

2. Add chicken broth and continue to stir the mix for 15 more minutes, until everything is soft. Blend the mix in a blender and then strain.

3. Add cream to the soup and mix well. Flavor with salt, pepper, and curry powder, and reheat the soup until boiled. Then put the heat on low and gradually pour egg white in while still stirring the soup so that the egg won’t clump and spreads into tender streaks.

4. Serve the creamy soup in a plate with the crispy Tom Yam croutons.

1. Debone and mash fish, and then deep-fry the fish chunks.

Strain to leave the fish crispy and then cut into smaller pieces.

1. Rest tofu on a strainer to remove water. Then dry tofu with some cloth or a paper towel and cut it into 2 cm cubes.

2. Slit open the lower white part of leek, remove and chop the core, cut and julienne the outer part into 10 cm strips, and then soak them in water.

3. Stir-fry garlic, ginger, and the chopped leek core in vegetable oil and sesame oil until fragrant.

4. Add massaman curry paste and ground pork until it is almost cooked, then add all the sauce ingredients.

5. Continue to stir until the curry is boiled and the pork is completely cooked. Then add the tofu.

6. Wait until the curry boils again and then thicken it with the thickenings.

7. Once the sauce is nicely thickened, add sesame oil.

8. Boil the ramen noodles and rest them in a bowl.

1. Soak gelatin in cold water to soften the sheets.

2. Blend milk and Pandanus leaves in a blender and strain through white cloth.

3. Boil palm sugar and icing sugar in cream until about 3/4 evaporates.

4. Remove the cream from the burner and melt the gelatin sheets in the cream. Mix everything smoothly.

5. Add the Pandanus milk and mix everything well. Put the mix in jelly molds, leave it to cool down, and then refrigerate for 6 hours.

6. Meanwhile, make palm sugar whipped cream by boiling palm sugar in 50 ml of cream until it completely melts.

Remove it from the burner, mix well with the rest of the cream, and refrigerate it.

7. To easily remove panna cotta from the mold, put it in warm water for 10 seconds.

8. Before serving, whip the palm sugar cream, serve with the panna cotta and top with shredded coconut.

1. Sift all the flour in a bowl and mix with salt and sugar.

2. Add limewater and mix with the flour by hand. Gradually add water while still mixing the flour until it is mixed well. Set it aside for 30 minutes.

3. Heat about 5 cm-deep cooking oil in a flat-bottomed pan. Simultaneously heat the tartlet molds by submerging them in the heating oil.

4. Meanwhile, prepare a small plate with baking parchment paper to soak up oil.

5. When the oil heats up to 160 ํ C, remove the molds (with the hot oil still in them) out of the pan. Sit the molds on the paper to soak up the dripping oil underneath, and then dip each greasy mold in the bowl of the flour mix, no deeper than the rim of the mold. The flour, which will later become the tartlet crust, will coat and cling onto the outer surface of the mold because of the heat from the hot oil still inside the mold.

6. Dip the mold coated with the batter back in the pan of the heating oil to deep-fry the batter. Count to three so that the batter is briefly fried and set. Press the mold against the bottom of the pan just for 5 seconds to flatten the bottom of the tartlet crust. Then lift the mold with the crust from the bottom of the pan and continue to deep fry the crust. Remove the mold from the crust when the flour is nicely set, and continue to deep-fry the crust until it turns golden. Then strain the crusts and set them aside.

7. Meanwhile, stir-fry garlic and chili in oil on medium heat until fragrant and turning gold. Add grounded shrimp and continue to stir-fry briefly.

8. Flavor with sugar, fish sauce, oyster sauce, and light soy sauce while still stir-frying.

9. Add basil and mix everything well. Add a dash of white pepper before turning off the burner. Fill the tartlet crust with the basil prawn and garnish on top with some red chili and crispy basils.

1. Cut one shitake mushroom into 4 pieces.

2. Blanch the peapods in boiling water for 20 seconds and rinse of cold water. Set them aside.

3. Flavor Dashi soup with salt, Japanese soy sauce, and Mirin and thenstrain the soup.

4. Add a raw egg and mix very well.

5. Fill 3/5 of each cup with the egg mix and set aside the rest of the mix.

6. Put all the cups in a steamer with boiling water and close the lid with some small space to still let the steam out. Turn the burner on high heat to steam the egg for one minute. Then turn the heat down on low and let it cook for 8 - 10 more minutes, until the egg is partially cooked.

7. Remove the cups from the steamer. Arrange some peapods and shitake on the egg in each cup and pour the rest of the soup mix on top but not completely cover up the peapod and shitake. Put all the cups back in the steamer and turn up the heat on high for one more minute and then turn the heat on low for another 5 - 8 minutes, until the egg is completely cooked. The best way to check the egg is to poke through with a toothpick the egg is done when it is no longer liquid on the toothpick after you pull it out.

8. Serve the egg while it is still hot.

1. Make the dipping sauce by smoothly blending all the ingredients in a blender and set it aside in a cup.

2. Julienne carrots and all the sweet peppers, and thinly slice eggplant.

3. Thinly brush vegetable oil on a grill pan. Start grilling asparagus, carrots, and sweet peppers, and sprinkle with some salt, pepper, and a little vinegar.

1. Remove some water from the tofu block by wrapping a piece of cloth around it and leaving it sit for 30 minutes in a strainer with a cutting board weighted on top. Then cut it into bite-sized cubes.

2. To make burger mix, stir-fry onion in apple cider & oil on low heat. Add garlic, salt, pepper, and mix well. Then add the tofu and continue to stir-fry until the pan is dry. Put the tofu mix in a food processor with prawn and blend them well.

3. Spread some butter on burger buns and bake in an oven until the crusts turn slightly crispy gold.

4. Roll burger mix into balls and slightly flatten them into patties.

Cover the patties with all purpose flour, dip in egg, and then coat with breadcrumb. Deep-fry the patties in 170 ํ C oil until turning gold thoroughly and then rest them on a strainer.

5. Make the sauce by mixing mayonnaise with tomato sauce, parsley, and salt.

6. Take the buns out of the oven and make sandwiches with the tofu patties, Mizuna, lettuce, and sauce.

2. Mix milk with vegetable oil and gradually add it to the egg mixture while still whipping.

4. Beat cream and icing sugar until firm peaks form.
