W
hen a decade arrives of being in the industry and you ask yourself if the time invested was meaningful, you look back at how it unhinged everything you used to believe in and how willing and raw you allowed yourself to be to the lessons it presented. You realize you’ve only just begun. The big question looming in our heads these days is about being sustainable to last another 10 years (I only work in numbers with 0 at the end). Change is the only constant as we are faced with challenges on how to do things, which is why we officially launch the Zee digital issue this month to usher in 2019 in full acceptance. I am also immensely grateful to the constant of being guest F&E Editor for this digital revolution. We are navigating our way in and will happily lead you to what a full year 2018 was through food and entertaining, recipes to file, and the coveted emergence of a collaborative economy coupled with the digital stratosphere that knows no boundaries. We are an online magazine and it feels great. No paper trail, no pollution, just intellectual property through and through to live your life fully optimized. For this holiday and entertaining issue, I am happy to engage you with amazing stories of tablescape wanderlust. Our themes take you from the classic Retrospective Christmas, to The Belle Epoch period, transition to The Modern Filipino, and finish with an elevated epicurean theme of exotic taste. There is no right theme, just experiences that arouse curiosity and create laughter. And our theme takes you to the one that marks life milestones. Someone said to me, “I still remember that one meal from 20 years ago”—it must have been so memorable and impactful. It’s amazing how entertaining can now be without the inconvenience (Honestbee has changed my life. Yep, I just press buttons now on my phone and suddenly groceries appears on my doorstep) and with the reverence of cooking (Homemade is still happiness—see recipe guide). Then, there are the “reinventors” who share how to live life happier. I
Oj Hofer writes about two exhibits and a Broadway show that highlighted his two-week hiatus at The Big Apple.
t was the fastest and shortest two weeks that I had ever spent in New York. I had initially cancelled the trip but decided on the last minute to fly-thanks to the prodding of Charles Lahti, a serigraph and mixed media artist who is also a creative force within New York’s art community and his partner Greg Urra, a vintage fashion connoisseur who owns a posh boutique on Lafayette Street. I was juggling a schedule of teaching Taiji and holding Reiki healing sessions at my nephew’s mixed martial arts gym called Fight Lab USA while allocating time for brunches, luppers, and dinners arranged by good friends and relatives. On top of that, I had to purchase dress shop supplies and go to fashion and art exhibits plus watch my first Broadway show. I somehow managed to do all of those mentioned above. Thus, here’s the story on the Warhol exhibit at The Whitney Museum. The stories on the color pink at The Fashion Institute

ANDY WARHOL-From A to B And Back Again Very few American artists are as ubiquitous, influential, and instantly recognizable as Andy Warhol (1928–1987). I couldn’t fully appreciate Warhol’s work prior to this show. Luckily, I had the chance to walk through the exhibit with Charles Lahti (charleslahtistudios.com/about/) who actively shared techniques and artistic precepts through lectures and collaborative work with artists in the US and other parts of the globe. It was much easier for me to grasp pop art this time because of Lahti’s practical and technical explanations since he worked with Donald Judd, Leroy Nieman, Robert Rauschenberg and Warhol himself. Andy Warhol understood the growing power of images in contemporary life and helped to expand the role of the artist in

society. Through his carefully cultivated persona and willingness to experiment with non-traditional art-making techniques he predicted and heralded the advent of selfies, vlogs and everyone’s claim to going viral or enjoying “15 minutes of fame.” The ongoing Warhol at The Whitney exhibit, which runs until March 31, 2019, is currently the first Warhol retrospective organized by a U.S. institution since 1989. Its mounting reconsidered the work of one of the most inventive, influential, and important American artists. Building on the wealth of new materials, research and scholarship that had emerged since the artist’s untimely death in 1987, the exhibition revealed new complexities about the Warhol that we thought we knew, and introduced a Warhol for the 21st century. If you don’t know Neil Felipp’s name by now, you must have been living in Bantayan the last 2 years. Neil’s celebrity followers who wears his minaudieres keep growing. He has created so much buzz particularly after a mention in Kevin Kwan’s Rich People’s Problems, the 3rd in his book series of Crazy Rich Asians, that he is almost like a celebrity himself! It’s easy to see how Neil got in the business — he comes from a family of fine art engravers. On his mother’s side, he is a Suarez and in Cebu, this is synonymous with Suarez Brothers, noted for their quality metal works like class school rings, medallions and nameplates. After college in UP he ended up working with Kenneth Cobonpue for three years. Getting exposed early to metal works, it is easy to see how his clasps are always exquisitely twisted and manipulated that they are art by itself.
Mia Arcenas
A graduate of Fashion Institute of Design & Merchandising in Los Angeles, Mia honed her skills early at her mom Iris’ costume jewellery export business, Ferimar. Working with different materials and colours for specific clients in Europe and the Middle East, this early education left a strong impression to the young Mia, and it has manifested in her work. Less monotones and more vibrant — she produces beachwears that all the titas in Cebu love, bags and bangles, hats and chunky neckpieces. Mia is the poster girl for Cebu island living! These days, she is more in Manila with her husband Jacques Branellec although her manufacturing is still in Cebu. She is also kept busy with a collaboration of vintage denim jackets embroidered with the artworks of Solenn Heusaff and her sister Vanessa Heusaff for their collection called Lahi (meaning race in Tagalog and different in Bisaya!). The travel jackets are so fashionably hip and truly Filipino that clients wait for months for these bespoke items to be delivered.

D’oro has been around for sometime, but don’t call him old school! Nikki Minaj was seen wearing his crumpled brass cuff recently, and he is preparing to send pieces to Europe where he is represented by a prestigious lifestyle brand based in Paris. D’oro’s work have evolved through the years, from visual arts, to furniture to home design. He has a degree in architecture from the University of San Carlos, and this discipline has formed his strong visuals which are always bold and sculptural. His latest collection, inspired by blades are elegantly minimal and yet whimsical, forming strong statement pieces.

The mother of two toddler boys, Liane is more in Manila than Cebu these days. But in this world of online shopping it doesn’t matter where you are. She is still home-grown though, having spent her formative years in Cebu. A graduate of FIDM in LA (same as Mia), Liane’s jewellery pieces can easily go from daytime to night life. With the breakthrough debut of her website and several pop-up stores this year, Liane’s label Flora Magica is fast gaining traction not only among women who lunch, but the younger set who loves to pair them with jeans or sarongs for a quick and easy up-look. It is easy to see how Liane can produce this pieces — her design inspiration, in addition to her mom Bernie and her abuela Ching Montinola, is her group of friends whose taste sensibility runs from the Italian Riviera to the beaches of Cebu and Siargao. To this end, she uses mother of pearls, seashells, semi-precious stones and coral combined together to form statement pieces or laid back chic depending on what you pair them with — stilettos or flip-flops.

After attending London’s prestigious Central St Martins (Alexander McQueen’s alma mater) patternmaking course on scholarship as part of PDI’s Look Magazine and the British Council’s initiative to support promising local artists, Rei honed his talent further in his brother Jun’s busy workshop. Rei’s clothes have that sculptural touch that make them look trendy and new, but at the same time, clean and classic. He’s keen on ensuring that they’re wearable and comfortable. His designs are versatile and have walked runways to red carpets to pageant stages to aisles at a wedding.

I
t’s an exciting time to travel from Cebu these days — a brand new terminal, multiple airline choices and competitive flight pricing. As I write, I am dreaming of the winter markets in Europe, the Festival of Lights in Macau, or walking the holiday festooned Fifth Avenue in New York. Everytime I’m in this mood, my fingers automatically flip thru the Skycanner app in my iPhone, and input far flung destinations, just in case there’s a bargain to be had. This futile process of mental calisthenics that calculates the prices and time schedule always brings me back to the Cathay Pacific website though. There is much to be said as to why seasoned traveller smartly stick to one
airline, or to an airline alliance such as One World or Star Alliance, two of the biggest network of airline partners. My tried and tested preference is One World alliance of which Cathay Pacific is an active member. One World rewards loyal customers with so many perks, depending on current status. The lounge access at most of the major airport terminal worldwide tops the list. This privilege is given to Cathay Pacific’s top tier members of their Marco Polo loyalty club, those in the Gold or Diamond level, mostly travellers who fly more than 3 long haul flights a year in business class. Lounge access is important for international travellers — more than the excellent coffee or tea, there’s free wifi.
If you’re transiting for example tru Lima, Peru, going online just to send a short viber text or post one Instagram photo doesn’t merit turning on your data roaming. At One World airport lounges, you are signed in within seconds. More significantly, the member airlines of One World Alliance have pushed up their standards in the last 12 months. American Airlines, another member airline, renovated and vastly improved their Admiral’s Club Lounge. In major US cities like Los Angeles, Dallas or Miami, they have the Flagship lounges, where travellers are often offered an array of meals that include steak or scallops during meal times. Not to be outdone, Cathay Pacific’s Hong Kong hub which currently has several lounges scattered all over the terminal, are becoming destinations on its own. The latest one is The Deck located near Gate 16, while The Wing near Gate 4, The Bridge near Gate 35, have been there for sometime. My favourite though is The Pier, located near Gate 65. Perhaps because of its proximity to the more known First Class Lounge (accessible only to First Class and Diamond Marco Polo members), many people think its only for first class, and so it’s less crowded. The Pier features Cathay’s signature The Noodle Bar which serves Hong Kong classics, including wonton noodles in a broth, fish ball noodles and a variety of dim sum and buns as well. There’s a food hall, with several hot selections, the usual bar and coffee cart, a tranquil Teahouse. There are 14 shower rooms, and, best of all, a Relaxation Room a quiet nook at the end where you can snooze, hopefully not long enough to miss your flight! Cathay Pacific chief customer and commercial officer Paul Loo affirms that the airline is committed to “investing in experiences that our customers value and consider important is at the heart of our product and service philosophy, and helps us differentiate ourselves from other airlines”. Cathay clearly exceeds expectations when it comes to its airport lounges in Hong Kong. In most cases, particularly for the high income millinenials, as long as there’s free wifi and a beer, its cool enough. But for savvy business and leisure travellers, this is expected from an airline that has continued raising the bar to make sure its loyal customers continue flying with Cathay Pacific.

Caorunn Gin
Caorunn Gin originates from the Scotland, and has a strong flavor profile of juniper, with hints of citrus, floral and heat. A faint tinge of spice rounds off this gin. Unique botanicals in this gin include coulee blush apple, heather, bog myrtle, rowan berry, and dandelion leaf. Here, orange slices and a cinnamon stick are added to bring out its citrus undertones.

Roku Gin
This craft gin hails from the Land of the Rising Sun. In Japanese, roku means “six”. Suntory’s take on gin is called such, after six quintessentially Japanese botanicals. There’s green tea two ways: sencha and gyokuro. Cherry, also two ways: blossom and leaves. And then there’s yuzu and Japanese pepper. A couple pieces of star anise add a fragrant touch to this gin.

Launched in 1999, this likely needs no introduction. A lot of what Hendrick’s does set the stage for some of the contemporary gin fashions we see today. While Hendrick’s signature is its cucumber gin and tonic, a tea-smoked gin changes up the usual.

SWEET POTATO CASSEROLE WITH MARSHMALLOWS INGREDIENTS 40 ounces boiled sweet potato 1⁄2 cup brown sugar 1⁄4 teaspoon salt 1⁄2 teaspoon cinnamon 1 egg, beaten 4 tablespoons melted butter 1 (16 ounce) bag miniature marshmallows DIRECTIONS 1. Spray 1 quart baking dish with Pam. 2. Heat oven to 350 degrees. 3. Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter. 4. Mix well. 5. Place 1/2 mixture in baking dish. 6. Top with a layer of marshmallows, then add remaining mixture. 7. Bake for 30 minutes. 8. Remove from oven and top with remaining marshmallows. 9. Turn oven to broil and move casserole to the upper middle rack. Broil for approximately 5 minutes or until marshmallows are lightly browned.

The Food The Dinner was a kindred collaboration with online grocery shopping powerhouse, Honestbee, making lives convenient during the holiday season. Meat & salmon were elevated and showcased for you to make in your own Home (See recipe guide). Delicate items such as white Wine jellied Liver pate, popovers, cured lavender salmon, and smoked fish pate, were first impressions (See recipe guide). For the main course, a deep fried Sriracha Turkey was immersed in peanut oil, and wild bouche sage stuffing with roasted chesnuts were a fingerling delight. A traditional baked turkey cooked for 15 Hours was served with a spiced fresh cranberry & mustard seed jam, with a unique stuffing of pecans, prunes, dates, smoked sausages and mushrooms that necked the cavity of the bird. A sous vide rib-eye was cooked in 62.5degrees for 8 Hours, seasoned with fennel, anise seed and carrot & dill, then Pan fried in its juices. A red wine reduction glaze was chosen as a serving sauce. Fine sides such as masa harina pouches (also known as pintos) were rendered with a recipe of local maize, chorizo and pulled pork. Some local greens in a sage butternut infusion completed the course.

Bird’s Sky View Having known each other for more than ten years now, Michel Lhuillier and Louis Thevenin aren’t just mere business partners. T
here’s this old saying that goes “the sky’s the limit”. It’s a phrase that’s familiar to most people, as an encouragement when trying to reach their dreams. And it’s a phrase that this writer finds applicable to the lofty dream of La Vie in the Sky. It’s on a sunny afternoon that the Zee editorial team, along with our makeup artists, found ourselves crammed into a vehicle to climb our way to Busay. The drive up the winding roads doesn’t deter us from excitedly chattering about how the place
would look until we arrive. From the outside, La Vie in the Sky’s facade already looks promising. Its glassand-white-walled exterior is reminiscent of an old-fashioned retreat house away from the city. When we step into the building, workers are scurrying to polish the wooden staircase and numerous mirrors hung around the establishment. It’s still half an hour before our agreed time, but Michel Lhuillier emerges from the basement to say his hellos. “So, this is the place,” Michel says, gesturing around. On this floor, guests can
take their picks from the array of pastries and breads laid out. The iconic wine cellar from La Vie Parisienne is replicated here, albeit much roomier to accommodate more guests. The La Vie French gelato cart is also available for guests to try Filipinoinspired flavours such as mango or balut. La Vie in the Sky gives off a vibe that’s a mix between luxe and industrial, with antique furniture, leather chairs, crystal chandeliers, the purposely-unfinished cement, and the quirky artworks every now and then. A huge fireplace occupies the space on the left, and the tall French

windows offer an unobstructed view of the sky above and the city below—seemingly peaceful—but this writer knows better of the terrible traffic that fills the city’s streets. Michel ushers us to follow him. Looking polished in a blue and white striped shirt and white pants, his hands are crossed behind his back as he gives the floor a once-over. He ascends the stairs, exuding a level-headed personality as he tours us around. On the way up, we pass three infinity mirrors lined up in a row, and our reflections seemed to go on
“If you go down to the basement, there’s four.” Michel explains. “Here, the sun is a bit strong,” he says as we step out onto the terrace. Just like he says, the sun greets us with its bright rays. “I plan to put a dome, so it should be all-weather.” It’s a very nice place, and I voice my thoughts to Michel. He looks over his shoulder at this, replying cheekily, “I would think so. That’s why I bought it.” Pablo, being the photographer he is, finds the perfect spot for the first photo of

To the left, there’s a huge, full-length mirror with its edges lined with lights, much like a ring light. To the right is a room with more contemporary-themed furniture and lights. “So the place has three floors?” I query as we make our way upstairs once more.
the day: a sunny spot in the corner near the ledge that offers a stunning background of the city below. “Let’s take this shot, we can only do it in ten minutes, or the light’s not going to stick around.” Michel nods in approval, walking over to the spot, saying out loud, “We’re running late. Monsieur Louis, you’re out of the picture. Monsieur Pablo says the soleil will
not wait for you.” This brings out a burst of laughter among us. As Michel’s shots finish, the team takes a few moments in the shade. When asked if he had a hand in the design, Michel immediately shakes his head. “No,” He states. “I don’t have any hand in it. It’s all Louis—he’s the artist. He manages the place, I just pay the bills.” “He works very hard,” adds Michel, “Very passionately. Everybody tells me that no one understands him the way I do.” Right as he says this, Louis Thevenin chooses this moment to appear. “I’m just on time, no?” He asks with a laugh.True enough, he’s on the dot on the agreed time. Louis is the other half of this duo, and the pair have been working together for more than ten years now. Prior to managing La Vie Parisienne, he’s worked in the French Embassy and then became Deputy Director of Alliance Française de Manille. He’s also Alliance Française de Cebu’s Director. It was Louis who found the location for the restaurant. He shares that after a drive up to Busay, he saw how full the neighboring restaurant was, and knew

that Michel owned the house beside it. It was in ruins; however, Louis already saw its potential. A week later, he dragged Michel—who hadn’t been there for years—to the site, and they immediately began to envision what they could do with it. Three hours of talking later, and La Vie in the Sky was born.

Louis shares that at the same time, he didn’t want to get trapped in replicating just one era, so he flew to France, went to garage sales, and visited antique dealers emptying their worn-out stocks.

“We created La Vie Parisienne about seven years ago,” Louis says. “After seeing the ruins in Busay, I wanted to make a palace in ruins. But they are not simple ruins. It’s designed by a genius architect who replicated Frank Lloyd Wright’s Kaufmann House, also known as Falling Water, one of

“I spent a month shopping for old furnitures,” he shares. “With two Russian guys I had found, we carried all those antiques and filled up a forty-footer truck. I still have back pain!” Later, he went to Mongkok’s fabric market and upholstered the furniture with modern fabrics.
He’s mixed traditional patterns like machuca and fleur-de-lis with some shockingly red electrical pipes, royal blue and gold—the colors of the king of France, ropes to hang crystal chandeliers, 18th century paintings, and industrial lamps. He also wants to add some street art, but shares that he lacks walls. “I just wanted it to feel homey,” Louis adds. The restaurant offers affordable luxury with their salad station, cold cuts, cheeses, pasta, brick oven pizza, and French breads and pastries. Its added charm is the VIP room located on the second floor, which accommodates up to 20 guests, inclusive of a private chef and show kitchen. Off to the side, Louis shares that the challenge in creating the venue was having to put things off. “Doing things ‘tomorrow na lang’,” he says. “What I wanted to happen today, happened always a month later!”

As of writing, La Vie in the Sky still has more to offer. Michel and Louis have many plans, such as adding five tents on the property’s cliffside, with a glass elevator that leads down to it. Michel says he’s the type to do constant upgrades.

“I wouldn’t dare,” Louis says. “There is really no need for that,” Michel adds. “I mean, it would just be a waste of time and energy. We are both intelligent people and we share each other’s ideas.” “He believed in me, and this made me grow,” Louis divulges. “My own dad never gave me that.” Just as we wrap up, the sun begins to set over Cebu, turning the skies into a lovely mix of pink and orange hues. It’s near-cliche, albeit fitting, to end the shoot this way, alluding to the ending the day on a warm, colorful note. The two crack open cold beers, clinking the bottles as a toast to all the hard work done—and to the sky-high future of La Vie in the Sky.

EVENTS ZEE PARTY SUMMIT Last December 14th, all roads led to Busay for Zee’s Digital Edition Launch Party. Aptly called the Party Summit, it was held at the newest spot in the city, La Vie in the Sky. In the day, it’s a charming four-storey house with tall glass windows that allow the sunlight to filter in and illuminate its quirky yet elegant interiors.
