Christmas season is definitely upon us, more obviously so because of the traffic jams that have begun to clog up the city streets come 5:00 PM. Of course, the holidays aren’t solely for gift-giving and the party circuit—more than that, it’s about celebrating the little things you find happiness in, especially in family, friends and the less material things in life. However, there’s also happiness in some sweet treats, such as Mochiko’s round delights of creamy artisanal ice cream and soft mochi. For Cebuanos, the beginning of the year signals another major event—it’s Sinulog season once again, and everyone’s in a frenzy to party hearty for the weekend. There’s a party every day and it’s going to get crazy, so we rounded up a few locals who give some sound advice on how to survive the festivities. My essentials? Comfortable shoes, a phone to take photos—because cellphone coverage is impossible on the streets—and your inner party animal. You can save being cautious for the rest of the year—this is the time to live it up and let loose!
These days, many are fans of mochi ice cream—a dessert which combines the sweet creaminess of ice cream with the soft gumminess of the Japanese rice cake. Mochiko does it one better though, with a mochi perfected from studying traditional Japanese mochi and gourmet ice cream that uses only the best ingredients for a rich flavor. “Mochiko was a product of traveling,” owner Nowie Potenciano reveals. “We’ve been visiting Japan for several years, as well as other Asian cities, and that’s where we discovered mochi in its different forms. We tried all sorts of mochi, from the traditional ones outside temples in Kyoto to the more modern ones found in depachikos (deparment store food courts) with chocolate. Since we like to eat, of course we tried everything!” The exposure to the various kinds of mochi inspired the idea of bringing the dessert to the Philippines, but Nowie and his team were dedicated to creating the perfect mochi before putting out a product in the market. “I decided to go to Japan and learn how to make mochi myself. It was difficult, because there aren’t really any schools for such a thing—imagine coming to the Philippines and looking for a school where you can learn to make puto. I had to go around and learn how to make various kinds of Japanese desserts first,” he shares, revealing that learning it the traditional way proved to be a challenge upon returning to the Philippines. “I had to rethink a lot of the processes because working with ice cream is very different and difficult. It took me several months to get it right and up to today, we are still fine tuning the process.” The pursuit of perfecting the product didn’t stop with just the mochi—Mochiko partnered with Fruits in Ice Cream for their special ice cream flavors. “FIC only uses real dairy milk, and it’s so good that it’s exported to other countries like Japan, so they’re perfect for us,” he explains. The specialty flavors are made with premium ingredients sourced both locally and internationally. “We use real Biscoff Cookies for our Speculoos Cookie Butter mochis, and for our Fruit & Yoghurt mochi, we use real fruit jams from The Fruit Garden, a local company that uses French techniques with local ingredients. We don’t use any cheap substitutes.” The list of quality products goes on, as does their selection of flavors that bring mochi ice cream to another level. From the Oreo & Milk with a whole cookie inside or the Red Velvet stuffed with an actual slice of its namesake cake, Mochiko has a wide variety that will satisfy any kind of sugar craving. “We come up with flavors just by eating a
lot and putting in what we like,” Nowie says. “We like Cookie Dough ice cream but it’s hard to find it in the country, so we decided to make it ourselves with homemade cookie dough and buttery French Vanilla ice cream. Red Velvet cupcakes are also very popular and we thought it would be great to make it into a mochi, so we did using real red velvet cake and cream cheese ice cream. We generally get so many ideas just by eating all sorts of desserts that we already know what flavors we’ll release a year in advance.” One of our personal favorites is the Potato Chip Chocolate Mochi, which Nowie reveals he’s also partial to—it’s potato chips coated in milk chocolate, then stuffed into a mochi with Belgian Chocolate ice cream. “You get a great sweet-salty hit, plus a crunchy-creamy-chewy texture combination that you really can’t get anywhere else.” With 14 outlets around the Philippines— including locations in Cebu, Cagayan de Oro, Bacolod and Boracay—Mochiko is set on spreading the mochi ice cream craze around the islands. To make sure a high standard of quality is always maintained though, Nowie insists on maintaining control over all branches. “We’re currently not franchising,” he says. “We want to make sure the customer experience is at its best so we would rather have full control, from making the produce up to getting the mochi into the hands of our clientele.”

Savvy The weekend isn’t just about the floats, parties and fun-loving crowds—beyond that is a cultural institution that celebrates the province’s acceptance of the Catholic faith and its unwavering devotion to the Santo Niño. HISTORY Ferdinand Magellan presented the image of the child Jesus or Santo Niño as a gift to Hara Amihan, the wife of Cebu’s ruler Rajah Humabon, when he landed in Cebu in 1521. It’s said that Hara Amihan was overjoyed at the sight of the Santo Niño and started dancing, paving the way to the conversion of 800 natives to Christianity and the changing of her own name to Queen Juana. After Magellan was killed and Miguel Lopez Magellan de Legazpi arrived more than 40 years later, his men found the Santo Niño in one of the local houses. The devotion to the Santo Niño has steadily grown stronger since then, with the annual Sinulog parade that has gained momentum since it started in 1980. THE FESTIVITIES The Sinulog festivities begin with a nine-day novena before its culmination of the grand parade on the third Sunday of January. Before the weekend, it has become tradition for the image of the Santo Niño to be brought to His parents. On Friday, He’s first brought to the St. Joseph Parish in Mandaue, where He spends the night as devotees hold vigil. Come dawn, the image is then brought by boat through the Mactan Channel to visit the Virgen dela Regla or the Virgin of the Rule. By the time the sun is up, a fleet of colorful bots join the Santo Niño in its journey back to Cebu City for the reenactment of the Cebuano’s acceptance of Christianity from the Spanish. At sundown, a solemn procession is held throughout the city’s main roads, where the large crowd can number in millions as they walk with the Santo Niño as it returns to the Basilica. On Sunday, the crowd goes into a more festive mood, with the grand parade of floats and dancers through the city’s main roads. Contingents from around the island and neighboring provinces make their way through the streets and into the Cebu City Sports Complex to show off their choreographed presentations. Outside, revelers celebrate throughout the afternoon, dancing alongside performers while done up in face paint and feathered accessories. The day ends with elaborate fireworks displays throughout the city, while the crowd continues to party well into the night.

Anyone who’s been in a theme park can tell that stepping into the brightly lit gates of one immediately means ages are checked out the door. Somehow everyone’s inner seven-year-old is out and about, taking in the neon lights, the heart-pumping rides and the awe that comes from seeing something that seems far removed from the everyday routine. It’s the kind of escape that St. James Amusement Park offers to Cebuanos, a welcome one, in fact, considering it’s the first one that has opened permanently in the city. Sitting across the Cebu International Convention Center, the park comes alive with crowds of all ages who come to enjoy the variety of experiences offered. Kids can enjoy the Journey to Mars, which lets them “fly” their own plane, or the
