By the time you receive your copy of ‘I’d rather be in Deeping’ your strawberries and blackberries will be ripening. Protect them from hungry blackbirds with a net or gauze gently thrown over.

Plant two fuschias in the container. They will also be in flower now and they will create a pretty display through the summer months. In September/October their fruits can then be eaten or whizzed up in a blender, frozen in ice cube containers and added to drinks. Alternatively, they can be added to salads or fruit salads where they will give a peppery taste.

Now you can pick your jewel-like blackcurrants and fresh juicy strawberries. Wash and whizz them up in a blender. The puree can be frozen in ice cube containers for use later or you can use it straight away for your delicious summer drink.

Take a large bowl, a punch bowl, usually glass with cups hanging round the sides, this will make a nice centre piece on a summer table; they can often be dusted off from the back of a cupboard or bought for a song at a car boot sale or charity shop.

Place your strawberry and blackcurrant puree in the bowl and add four parts ice cold fizzy water to one part lderflower cordial. The recipe for Elderflower Cordial was in the May/ June issue of I’d rather be in Deeping or it is possible to buy Elderflower Cordial from the Deeping Fudge Tea Rooms at Swines Meadow Farm Nursery, junction of Linchfield Rd and Towngate East.

Decorate your bowl with a sprig of mint, rose petals, lavender and slices of lemon. Ladle into punch glasses! Enjoy!
