LETTER
A
s I am about to receive my second vaccine jab, I thought it was rather apt to have a double dose of Steve Backshall. Avid readers will remember that we covered his work back in the March issue, but given I was not in the editor’s chair back then, I decided that the coverage was not enough. There’s his many, many TV shows to cover off, acclaimed books, important conservation work both here and abroad, and, of course, there’s Strictly too. The Marlow local simply warranted a revisit. Talking to Backshall was a stark reminder that, even though things aren’t anywhere near back to normal yet, life goes on. He was en-route to another vital expedition, to Kyrgyzstan no less, in a critical search for snow leopards. Closer to home, I am hearing about many local businesses that have reopened and, pleasingly, their footfall has been good. This month’s cover has been inspired by Fabric in Old Amersham, who were prepared to launch just as a pandemic struck, yet they have managed to establish themselves through ingenuity and a little local support. It’s important that we continue to do our bit to help the local community out where we can.

WALL As he heads out on yet another expedition, Steve Backshall discusses conservation issues, local nature and how COVID ruined three momentous occasions in 2020 By MARK KEBBLE
T
here’s no escaping the embarrassment, but I have to be honest with Steve Backshall because he is a thoroughly nice chap: the first time I really got to know him was when I noticed how ripped he was on Strictly Come Dancing, which is an ever so slightly worrying thing to admit when I am speaking to someone who has appeared in countless TV shows and written many acclaimed books. “Ha ha,” is his response. “The people who recognise me have different perceptions about who I am and what I do. Some see me as a kids’ TV presenter, others as a biologist or an explorer, and some as that cringey bloke who dad danced the cha cha…” Maybe I would have been a tad uneasy raising this point if we were speaking in person, but in fact I am catching up with the Marlow local as he is travelling to a destination for his next series of Expedition. “I am heading to the mountains
of Kyrgyzstan in search of snow leopards,” he explains, “potentially the most important expedition I have ever done. Together with the Snow Leopard Trust, we’re aiming to find the first evidence of these critically endangered cats in an area of largely unexplored high mountains on the border with China. They are super vulnerable to cross-border poaching, and the local government need a reason to turn these mountains into a protected national park. Any evidence of a new population of snow leopard could be critical.” It’s the latest in a long line of important conservation work Backshall has been involved in, both off and on screen. In 2011, he won two BAFTAs for Best Children’s Television Presenter and Best Factual Series, and his resume includes everything from The Really Wild Show and Springwatch Trackers, to Backshall’s Deadly Adventures and the acclaimed first series of Expedition. “I could choose three just from this latest series of Expedition,” Backshall helps me out when I suggest
going over his entire career for highlights would take an exceptionally long time. “Making the first descent of a raging white water torrent in the volcanic wonderland of Kamchatka, where there was literally a brown bear round every corner. Another is paddling an unknown jungle river in the magnificently named Moukalaba Doudou range in Gabon. Then exploring and mapping a gargantuan lava tunnel in the deserts of the Arabian Peninsula, and finding a few surprises deep inside…” Talking of stand out experiences, last year – despite the obvious downer of a global pandemic – certainly was one to remember for Backshall. “I got three of the biggest achievements last year,” he says. “There was [being awarded] an MBE, being named Explorer of the Year [by the Scientific Exploration Society], and I graduated in my MSc, which I’d been working on for five years (sequencing the venoms and salamanders). special for my mum as well – she’s very sad not to have had an invite to meet Liz at the palace! Plus, it was my first chance to equal Helen at something. Denied!” Helen Glover is his wife of five years, a professional rower and a two-time Olympic champion, triple world champion, quintuple World Cup champion and quadruple European champion no less. The two have been involved in some amazing experiences during their careers, but it’s not all been plain sailing. In 2018, the couple announced that they were expecting twins, but one died in stillbirth before they welcomed Logan into the world in July of that year. Happily, at the start 2020, they announced the birth of twins, Kit Newlyn and Willow Bo. Has his growing family meant lockdowns actually proved to be a blessing? “Though it’s been an incredible opportunity to stay home and be dad to the three Backshall babes, it’s also been the busiest and most nerve-wracking year of my life,” he says. “Work didn’t disappear, I just ended up having to do my programmes as a one-man band; camera, editor, director, researcher, tech support and sound recordist all rolled up in one overstretched package. All that plus being there for Hels as she launched a late Olympic bid… I’ve aged a decade in a year!”

Being home has also meant being closer to some of the many charities he is involved with, which includes being President of the Berks, Bucks and Oxfordshire branch of The Wildlife Trusts. “Conservation has to begin at home,” Backshall states emphatically. “Young people need to learn that there are ways we can help our wildlife, and make our own patch a better place to live. I’ve been lucky enough to have been President of BBOWT for a decade now, and the team there are wonderful people, good scientists, ecologists and conservationists who believe in the cause. I guarantee we have a reserve somewhere near you that you didn’t even know existed.” Also local is Wild Training in High Wycombe, which has played a key role in not only the shape Backshall is in, but on a higher level too. “James, who set up Wild Training, got me back fighting fit again after a near fatal rock-climbing accident [in 2008, when he fell 33ft on to rocks: the impact sent his heel bone through the bottom of his foot, dislocated his ankle and fractured two vertebrae in his back]. That was back in 2010, training in his garage in Wycombe. Even then he always stayed ahead of the fitness trends and had big ideas. More than anyone else in the fitness industry, he studies the field, old and new, current and classic, and most of the big modern fitness zeitgeists of today – from GETTING INTO SHAPE AT WILD TRAINING

Considering everything he has been through, was that show the most terrifying experience of his life? “No,” he bats the question away. “It’s certainly nerve-wracking, and it feels like the whole world’s watching at the time, but at the end of the day it’s just dancing. Q For those who don’t know Heart of Bucks, what do you do? A Heart of Bucks is the community foundation for Buckinghamshire, created in 2000 by the late Sir Nigel Mobbs. We are a registered charity, and provide grants to small, grassroots charities and community groups in the county. Our focus is first and foremost on local philanthropy. We enable local people and businesses to target their charitable funds and activities in the most effective way possible. We work with a number of private philanthropists and businesses to understand their interests and intentions, and use our well-established local knowledge and research to guide and shape their giving.

Q Looking at some of the local causes you have been involved in, which ones really stand out for you? A One area of work that we are getting more involved in is local environmental and sustainability issues. We are currently running a funding programme called ‘Green Future Bucks’, which encourages grassroots environmental activity in both local schools and community groups. Talking to our donors and supporters, we know that they are extremely interested in providing resources to ensure our local environment is protected and looked after effectively. Not every project has to set out to change the world – small scale, local initiatives can be incredibly powerful and this is very much the case with the environment. Q What can you tell us about the Family Angels campaign? A Family Angels is a small but very high impact fund we manage, which provides support to households with dependent children who might otherwise be left with nowhere to turn. We work with community advocates like social workers, volunteer advisors, and housing workers, to ensure that there is some support for moments when all other doors have closed. We

Q Has there been a real demand for your help during the pandemic? A Our funding linked to Covid was perhaps the pinnacle of the support that we have provided for our community, throughout our 21-year history. Thanks to the generosity of our supporters, in the 2020-21 financial year we were able to distribute £1.5m in charitable funding to the Buckinghamshire community (our largest ever amount) at a time when it was most desperately needed. Even at these record-breaking amounts, demand far outstripped supply, and unfortunately we had to turn away many deserving applications due to pressure on our resources. We anticipate this being the case for many months, perhaps even years, as our communities feel the long-term effects of the disruption of the pandemic. Q How long have you lived
in Buckinghamshire?
A I’ve lived in Bucks for almost 25 years.
I was fortunate enough to benefit from the excellent education system, and grew up playing sports locally. After leaving to study at university, I returned and worked in local government, before taking a hugely rewarding step into the non-profit sector. Having grown up in the area and worked in such Bucks-centric organisations, I’m really pleased to now have a small family of my own and will be making this our permanent home.
Q What is your favourite
thing about the area?
A I love the variety that runs throughout
the county. From Pinewood Studios in the south, to the Silverstone circuit in the north, and everything in between. There are a huge number of SMEs in Buckinghamshire, and some real innovation and entrepreneurial activity takes place in Bucks – it’s not all sleepy commuter country and Midsomer Murders!
Q Have there been any outdoor
spots that have been a godsend during these lockdowns? A The views from Coombe Hill are probably the best in Bucks – a walk there never gets old. And the Gruffalo Trail at Wendover Woods was well-used with a three-yearold! But the pandemic has made me appreciate the small green spaces around our local area so much more. The Waterside Theatre is the most recent modern and purpose-built theatre in the country, and it’s great to have that resource on our doorstep. Hughendon Manor near High Wycombe is set in spectacular grounds and is somewhere I’m looking forward to taking my daughter around for the first time soon. Q Do you have a local secret or

A Wescott in the west of the county is home to a cluster of companies working on some of the most cutting-edge space technology in the world. ood Timing is a real father and son business, where we repair, restore and rebuild watches. I do all the initial appraising and deal with customer calls and the such-like, and my father takes on the actual repairs. We repair and service quality clocks and watches and we are able to completely rebuild a treasured timepiece, restore the dial, re-plate a case if it’s badly scratched or corroded, or bring back to life a watch that has possibly been in the sea and rusted. We get a great many enquiries from people who have been bequeathed a watch from a close relative. They want to use it again to remind themselves of that person, and we take great pride in bringing a treasured watch back to life. I have lost count of the number of people who have been so emotionally overcome with joy when they see the finished result of our work that they have actually wept. On one memorable occasion, a big burly lorry driver asked us to restore his late mother’s watch so that he might give it to his wife. When he saw the finished result, he then had to ask for a box of tissues! Other customers have found a longlost watch in the back of a drawer and ask us: can we service it? Most watches should be serviced every three to five years. It’s false economy not to service a watch because, just like a car engine, microscopic metal particles will enter the old oil. This creates a “sandpaper effect” as the watch movement revolves and this motion will actually wear the other parts of the watch, with the result that you’ll be faced with a costly repair bill in the future. My father has been a watchmaker all his life and began his long apprenticeship from

the tender age of 15. There’s not much he can’t repair and many other watch dealers beat a path to his door because they have got stuck trying to repair something tricky. Now 80, his life-long passion with watches has never left him. When I ask when he will retire, he just answers that he cannot. “What will my customers do if I tell them I can no longer help them,” he says. Another thing that frequently happens is when we are handed a bag of watch parts from a customer who tried to repair their own watch. “If you don’t know what you’re doing,” says my father, “don’t even think about repairing your own watch!” My father is very lucky, he still has all his hair, his eyesight is pin-sharp and his fingers are as nimble as a fine pianist – and when I take him a case of watches to repair, his eyes light up and he can’t wait to get stuck in.

t’s almost unimaginable given the past 16 months we have all endured, but there was a time when we could invite as many people into our home as we wanted. Dinner parties didn’t have to be staged outdoors when spring weather decided to act like winter, and you weren’t faced with that difficult conversation with one of the group when you realise there’s seven of you wanting to eat. Then again, no-one did inviting people round quite like Jimmy Garcia. It was a decade ago that Garcia decided a career in the City wasn’t for him and that, in fact, he wanted to tap into a love for cooking instilled in him by his parents. Living in Balham in London at the time, rather than fret about the costs of opening a THE POP UP WILL HAVE AN ECLECTIC MENU

restaurant with extortionate rents, he simply opened up his home to the public. “At the time, I thought why not?” he laughs. “I always loved entertaining and partying, so why not do it in my home?” His living room became one of the most sought after 25-seater restaurants around. “There was a genuine buzz,” he says of the time, “the feeling of creating something that felt really special. It was a real one off, a bit underground, a little bit wild and a lot of fun. After it kept selling out, however, my housemates wanted their house back and I was motivated to create a credible business.” Garcia swiftly moved on to host dinners all over London in everything from wine shops to warehouses, and as the business grew, so did the scope as the pop up restaurants started appearing outside of the capital. By the time this magazine goes to print, Garcia’s latest visit to Henley-on-Thames will be up and running. “We chose Henley due to its genuine beauty, it’s just stunning,” he says. “There’s huge amounts of uninterrupted river frontage and it’s only a five-minute walk from the centre of one of the most beautiful villages in the country. The surrounding produce also offers us a great variety to work with in our dishes.” Styled over four shipping containers, the pop up restaurant at the Upper Thames Rowing Club will have two decks: a dining room on the upper deck, and also a BBQ street food bar for passers-by below. Garcia says each of his pop up restaurants offer a different experience based on the
area surrounding it, saying “a Taste of Henley is all about championing local suppliers”. So what will we find on the menu? “We start with a delicious selection of canapes, then other courses include Bosley Patch tomatoes, La Latteria Stracciatella, and Gabriel Machin smoked salmon with an oyster leaf emulsion,” he starts to whet the appetite. “A favourite of mine is the English Farm Longhorn sirloin with pickled tropea onion petals, smoked baby leeks, cured egg yolk and a watercress emulsion. Not forgetting, to finish, the amazing Honeys of Henley set cream with lavender sable, toasted barley and fresh raspberries. It’s a really fresh, summery menu.” We are also looking forward to the street food element of the pop up that will include a signature burger (bone marrow beef), lamb wraps, English halloumi wraps, and chickpea and squash falafel wraps. Considering the thought that goes into the pop up menus, it’s little surprise that Garcia’s business has flourished so much over the past decade. “We aim to always offer a bookable restaurant offering as well as a passing street food operation, allowing us to cater to both markets,” he adds. “As a team, we love nothing more than putting the experience in ‘experiential’ – creating bespoke menus and concepts with all that we do.” It all started in a London dining room, but now Jimmy Garcia is the undisputed “pop up king”. I love risotto. It’s a dish we always eat at home and have on my restaurant menu. Ever popular, it’s also a dish that you can eat throughout the year. There is something so wonderful about courgettes and their beautiful flowers, so very versatile, too. This lovely recipe is just delicious and something different, using up every part of the courgette and flower. It reminds me of long summer days, when supper is eaten outside and when the time seems endless. At this time of the year, sweet broad (fava) beans and peas are delicious and adding them to this risotto at the end just brings even more summery high notes.
INGREDIENTS • 10 courgette (zucchini) flowers with baby courgettes still attached • 2 tablespoons olive oil • 1 garlic clove, finely chopped • 1 small onion, finely chopped • 400 g (14 oz/scant 2 cups) Carnaroli or Arborio risotto rice • 1.5 litres (50 fl oz/6 cups) vegetable stock, hot • 60 ml (2 fl oz/¼ cup) white wine • 100 g (3 1⁄2 oz) Parmesan, grated, or to taste • Cornish sea salt and freshly ground black pepper • Fresh basil leaves, to serve

and sun blush tomatoes on rosemary skewers Serves 8
METHOD 1 Detach the flowers from the courgettes, remove the stamens and gently wipe the flowers clean. Slice the courgettes into rounds.
2 Heat the olive oil in a large pan and fry the garlic and onion until softened. Add the courgette flowers and stir for 1 minute, then add the rice and stir until well coated in the oil. 3 Pour over a ladleful of stock and stir until it is absorbed. Repeat until the stock is finished. 4 Add the courgettes and stir through, then add the white wine. Cook for a further 5 minutes, then remove from the heat. 5 Add Parmesan and season with salt and pepper to taste. Serve garnished with basil leaves and extra Parmesan.
• 100 ml (3 1⁄2 fl oz/scant 1/2 cup) olive oil • Cornish sea salt and freshly ground black pepper To serve • Handful of rocket (arugula) leaves • Hot buttered Cornish new potatoes • Mixed leaf salad with edible flowers
METHOD Monkfish, or lotte in French, is known as the poor man’s lobster. It is a delicious, robust and wonderful ingredient that I love to cook and eat. It works so well with bolder flavours, such as curries, or can be cooked over fire or even refined by serving as a ceviche. Here, the combination of monkfish, chorizo and sun blush tomatoes is delicious. Threading them on to rosemary skewers is pretty and adds a depth of flavour to the fish.
INGREDIENTS • 1 x 200 g (7 oz) jar sun blush tomatoes, drained, reserving the oil • 1 medium chorizo, about 225g (8 oz), cut into 1 cm (1⁄2 in) rounds • 650 g (1 lb 7 oz) monkfish fillet, cut into chunks • 12 long rosemary sprigs, plus extra leaves for sprinkling
1 Preheat a barbecue or grill (broiler) to high. 2 Place the sun blush tomatoes in a large bowl and add the sliced chorizo. Using a skewer, pierce a hole through each piece of monkish, then toss in the bowl with the tomatoes and chorizo. Thread alternately onto rosemary skewers, allowing 3 pieces of each ingredient on each skewer. 3 Barbecue or grill (broil) the monkfish skewers on all sides, keeping them moving, for a total of 6 minutes, or until browned at the edges. Drizzle with olive oil and sprinkle with salt, pepper and rosemary leaves. 4 Lay the grilled monkfish skewers on rocket leaves and serve with hot buttered Cornish new potatoes and a kitchen leaf salad with summer flowers.

top of one of the foil pieces, then brush the salmon with oil, too. 3 Put the parsley, lemon slices and bay leaves into the body cavity. Crimp the edges of the foil together to make a parcel, but just before sealing, pour in the wine. Seal tightly and bake the fish in the oven for 50–60 minutes. 4 Allow the fish to cool in the parcel, then gently peel off the skin and serve cold, garnished with thinly sliced cucumber, watercress, lemon slices and citrus mayo. Note Leftover salmon can be used the next day in a salad with Cornish new potatoes, dill and mayo. TARRAGON MAYO – Serves 6 • 3 egg yolks • Juice of 1 lemon • 1 teaspoon Dijon mustard • 250 ml (8 1⁄2 fl oz/1 cup) sunflower oil • A handful of fresh tarragon • Cornish sea salt and freshly ground black pepper
Whole Baked Salmon with cucumber, watercress and mayonnaise for days Serves 8
On summer days, my mother Lucy was always the best at bringing everyone together. This recipe of whole baked salmon is somewhat retro but it is a wonderful dish for the middle of a table, served alongside Cornish new potatoes with herbs and crème fraîche, bowls of garden leaves and wildflowers. Finish the meal with English strawberries, meringues
and cream. Think of warm days, with Champagne by the glass, or chilled rosé. Days when life seems uncomplicated and simple.
INGREDIENTS • 100 ml (3 1⁄2 fl oz/scant 1⁄2 cup) sunflower oil, for brushing • 1 whole salmon, 2–3 kg (4–6 lb), gutted, cleaned and scaled • 1 large sprig of flat-leaf parsley • 2 lemons, cut into sunshine rounds • 2 bay leaves • 300 ml (10 fl oz/1¼ cups) white wine
1 Place the egg yolks in a food processor and add the lemon juice, mustard and a good pinch of sea salt. Whiz until just combined. With the motor still running, slowly pour the oil through the funnel in a fine, slow stream until all the oil is incorporated and it has emulsified. 2 Remove the tarragon leaves from the stalks and roughly chop. As you chop, the delicious fragrance will be released. Fold through the mayo, taste and season as needed.

Q What inspired you and your cofounder Ailsa Feroze to open Fabric? A While running our PR business we often talked about how one day it would be great to take on the challenge of opening a clothing boutique and offer a relaxed shopping and browsing experience in a super-chic environment. In 2019 we decided it was now or never and took a leap of faith into the fashion and retail world. Q Why did you look to open in Old Amersham? A Who wouldn’t choose Old Amersham?! It’s such a glorious town, which of course was recently chosen by the Sunday Times as one of the best places to live in the UK. The high street today has a terrific mix of artisan cafes, superb restaurants, interior shops and independent boutiques. And just 45 minutes from Central London, it’s fast becoming a top destination for days out and weekend breaks. Q How did the first lockdown affect your plans? A All the planning, renovating and

Q Why the focus on European brands? A There are some really fantastic and unknown small brands that in our opinion should be brought DIANA HALLEY AND to the wider attention. buying our opening stock was pre-March 2020. In fact we were all set to open the first weekend of the first lockdown. We had a big launch party planned, but obviously all that had to be put on hold until the lockdown was lifted in June. Q How tough was it to take when all shops were closed? A It was really tough. We’d spent a year planning the business, sourcing the designers and clothes, plus finding premises and then fitting it out so, although understandable in the circumstances, not to be able to open on our planned weekend was devastating. Q What did you do during the lockdown periods? A We quickly got to work designing a website and focusing on a strong social media presence, all of which led to good awareness for the new business and a kick start for sales. Q How exciting was it to re-open on 12 April?
A It was just incredible. The previous
year had been a rollercoaster ride with the Covid restrictions, so to finally open was amazing. The day itself was so much fun as we opened live on air with Heart Radio on Jamie Theakston’s breakfast show. There was a feature on the various businesses finally opening their doors on 12 April and we were delighted to be chosen to represent independent retail shops.
Q What kind of experience do you offer at your boutique? A Our aim was always to create a unique and contemporary destination boutique, bringing shopping back to the bricks and mortar experience. Fabric’s aim is to create a compelling in-store shopping experience – from the look, feel and spirit of the shop, to the friendly and personal approach and, of course, the cool contemporary clothes collections. Shopping is fun, it’s sociable and a way to feel good about yourself, and we believe Fabric offers unique and exciting fashion brands to women of all ages in a cool and stylish environment.
Q Can you pick out three brands that are really standing out for you right now? A We love them all of course, but three that really stand out for us this season are: POM Amsterdam, two sisters who design and create fabulous clothes in bold and contrasting colours using amazing original prints; Moliin, a Danish brand with a feminine, bohemian rock’n’roll vibe; and Stripe & Stare is a super-sustainable brand who were initially known for their knickers made from beech wood trees, but became so successful that they have recently moved into loungewear and nightwear. Q Why is sustainability important to you? A The world around us is changing and
as we all move forward into a new era, we believe it’s so important to consider the planet with future generations in mind. If we can contribute in some small way, while also running the business we love, then we believe it is our responsibility to do so. We encourage customers to create their own personal style, say goodbye to fast fashion and wear key pieces that reflect their personality.

ccording to the NHS, most adults need between six and nine hours of sleep every night, but achieving this can be easier said than done. There is no getting around the fact that sleep is essential for our health, vitality and wellbeing. What you eat and drink, and even the times of day you do so, can impact how well (or not) you get those zzzzzs. CHERRIES Cherries are good for promoting sleep because they naturally contain melatonin. Snack on fresh cherries or drink tart cherry juice to help you to nod off.
NUTS Many different types of nut, including almonds, walnuts and cashews, are known to be good at helping us sleep. This is because they contain melatonin, as well as other essential minerals such as magnesium and zinc. Almonds are particularly good because they contain high levels of muscle-relaxing magnesium.

RAW HONEY
Most people need to eat more veg, and the dark green leafy vegetables like spinach, kale, and watercress are packed with minerals such as magnesium known as an aid with sleep.
Honey helps to stimulate melatonin so this is also great for promoting sleep. Taking it in hot water with lemon can be a soothing alternative to a cup of tea or coffee, which will only serve to keep you awake due to the caffeine content.
It’s no secret that we fall asleep after a Christmas turkey dinner, but this is rooted in genuine nutritional fact. Protein-rich turkey contains tryptophan that helps to promote sleep and is good for balancing hormones and calming anxiety.

Top tips for a
good night’s sleep Foods rich in the amino acid tryptophan can help you get to sleep. For this choose chicken, turkey, milk, dairy and nuts. Try to eat your evening meal at least three hours before going to bed. Eating increases our body temperature, which can prevent sleep, so the earlier you can eat the better. Reduce and restrict your caffeine intake. Caffeine stays in the system for up to six hours, so if you’re drinking tea and coffee at 7pm, it can still be keeping you awake past midnight. Snacking on refined carbs and sugars will contribute to disrupted sleep by impacting on blood sugar control. Eating foods high in sugar in the afternoon can affect cortisol levels, which in turn blocks melatonin. Try and do some exercise every day as this will ultimately help your sleep. Yoga and meditation are wonderful ways to calm down and prepare your body for a good night’s sleep. Take a warm bath a few hours before you go to bed, but don’t have it too hot as this can have a negative effect on your blood pressure.

When it comes to cellulite, it’s important to look past the myths and understand what can be done By DR SELENA LANGDON
C
ellulite is extremely common, impacting around eight in ten women (although men can suffer with the condition, it is much less prevalent). Cellulite is caused by lobules of fat that are tethered downward to the deeper layers by connective tissue bands. This creates an uneven surface, which can cause the dreaded “orange peel skin”. Along with damaged collagen fibres, loss of elasticity, genetic and hormonal factors, and poor circulation, there are additional factors which can influence the appearance of cellulite...
Weight gain: the larger the fat lobules, the more pressure that is placed on the skin. Weight loss will help to reduce the appearance of cellulite and participating in regular exercise, even something as simple as a brisk walk, will improve circulation as well as general health. Ageing: as we age the dermis becomes thinner, increasing the appearance of cellulite. Simple lifestyle changes that can help to improve the health of our skin include UV protection, smoking cessation, drinking less alcohol and following a healthy diet. There are several myths regarding cellulite including: It is caused by toxins: magazines often report that cellulite is caused by a
Dry brushing and lymphatic drainage are a cure: they are effective treatments, but will have a short-lived result as they focus on water retention and not the underlying causes. There is no sure-fire permanent treatment for cellulite, but there are several methods that can reduce and improve the appearance of cellulite. The in-office surgical options are effective at targeting the deeper dimples; however, the side effects of these can be significant with patients reporting ongoing pain, bruising and swelling for several weeks. In my clinic I use Emtone, which combines radiofrequency and acoustic wave therapy. The synergy of both these therapies helps to tighten, tone, and strengthen the skin and diminish the fat chambers that give the skin a bumpy orange peel appearance. The results are maintained for up to 18 months, dependent on lifestyle and the baseline grade of cellulite. My patients love that there is minimal downtime and the improvements can be significant for many. Of course, there is the choice to accept cellulite as a normal part of our bodies. Appearance-based treatments are a choice, not a necessity; however, in my own practice the aim of aesthetics is to help people feel comfortable in their own skin, and as always it is best to find a practitioner who will listen first and treat only if appropriate. re you looking for a fun way to get fit? Do you enjoy fresh air and meeting new people? If the answer is yes, then Beaconsfield Cricket Club women’s team could be just what you’re looking for. After more than a year of disruption to sports and fitness activities across the country, the club’s women’s section has seen a surge of interest from locals keen to give the game a try. Beaconsfield women formed in 2016 and play T20 cricket (a much shorter version of the traditional game) in Division 3 of the Home Counties Women’s Cricket League, with each game taking around three hours to complete. Team members range in age from 17 to 55, so it really is a game for everyone. “It is rare to come across a team with such mixed ages and abilities, who all just love to play together,” says BCC captain, Alex Clarke. “I joined Beaconsfield two years ago having previously played for a number of teams, but this has to be my favourite of them all. Everyone is supportive and friendly and focused on getting women involved in the sport – no matter what their ability. If you are in any way thinking about joining, I would wholeheartedly say go for it! Captaining this team is genuinely such a privilege.” Sky Sports presenter, Gabby Logan, is a fan of the sport too. “I am thrilled to see that the women’s and girl’s section at Beaconsfield is thriving. When I drive past I love seeing the girls wandering up to the cricket club with their big bags of bats and pads ready for training. We need to encourage girls to play a wide range of sports and to see fitness as fun and something that they will be involved with for their whole lives. The community around the clubs we have

in the county are vital to the growth of women’s sport and the work that happens at grassroots benefits society as a whole. “I have become friends with the wonderful Isa Guha who works for the BBC now as a presenter of our test match and 100 coverage. Isa is a former student of Wycombe High and her dad used to coach at Beaconsfield, I know she is enormously proud of the growth too.” With so much interest from women with no previous experience of the game, the club has decided to run a soft ball cricket taster session where beginners can try the sport without the need for special equipment or kit; just throw on some leggings, a t-shirt and a pair of trainers, and everything else will be provided. Training will be followed by drinks in the bar and a chance to get to know the team. The taster session takes place on Friday 9 July from 6.45pm-8.30pm. e have been living with Covid-19 for well over a year now. The pandemic has impacted everyone in different ways as people have learnt to adapt the way they live their lives. Face masks, social distancing and Zoom meetings have all become the norm. A consequence of working from home and having to conduct meetings over Zoom has been a renewed awareness of how we look. It’s hard to ignore puffy eyes and jowls when spending so much time looking at your own reflection. This has directly led to an increase in enquiries relating to cosmetic surgery to address wrinkles, jowls, scars, skin moles, eye lids and eye bags as well as excess skin through weight-loss. The time and isolation from others has afforded people with the chance to reflect on their appearance and even the appearance of others. Perhaps noticing a birthmark on the skin of their child for the first time. Or maybe they have made the decision their family is complete and want their body back. Now that life is returning to some form of normality (at least for now), people are empowered to make positive changes to their lives. Be it getting fit, eating healthily or looking at cosmetic surgery to address problem areas. TREND SETTERS From uplifting colour to a yearning for the past, here are the key looks right now in interiors By SANDRA ROTHWELL

was excited to be back at Chelsea Harbour for London Design Week in May. It was an absolute riot of colour and style – a much needed injection of inspiration! So much creativity has been going on behind closed doors and it was exciting to discover just what’s been going on. There are quite a few trends for this season:
NOSTALGIA
We all feel the need for comfort and this is reflected in many of the new designs, with archives revisited, but with a contemporary twist. Global brand Rubelli is a great example of this, reinventing a contemporary version of their hugely popular San Marco silk damask.
BOLD PATTERNS

COLOUR
Joyful and uplifting colours are very much in and we as designers are trying to inject emotion and passion into interior schemes. Hot pinks, cobalt blues, natural greens, and sunshine yellows are all inspiring. Earth colours are making a comeback and New York-based Weitzner has a new range of wallpapers and fabrics that reflect this.
LAYERING
This has been taken even further and British brand Colefax and Fowler illustrates this brilliantly with their new collection. The secret to layering is to use different patterns, shapes, textures and colours to add depth, balance and create contrast.

This was an influence for many of the designers with Venice, Provence and India proving popular. Rubelli has a beautiful collection based around Venice – their silks are spectacular.
NATURE
A love of nature shines through, with many designs mirroring the natural environment – beautiful florals were in abundance.

I originally studied Hotel Management at Bournemouth University (Dorset Institute of Higher Education) and pursued my early career in Corporate Hospitality and Event Management. I worked in the hospitality industry for 15 years, organizing events in luxury hotels and venues around the world, but I have always loved being in beautifully designed spaces. In 1997 I took a gamble and embarked on a full-time interior design course at the Design School in London
following my dream and passion of becoming an interior designer. I found this change was incredibly rewarding and since then have really enjoyed working with lovely clients throughout the UK, spending time enhancing their family life and how they use their homes. I ask lots of questions to clarify a client’s goals, their lifestyle, design tastes and the specific requirements of the project. Spending time defining the overall objectives, outcomes and requirements is time well spent. It means that you’re designing from a position of knowledge, which means you’re more likely to create a design that meets your client’s needs and helps to avoid costly mistakes. My clients are intrinsically involved in the initial stages of the project through to design approval. At the implementation stage, clients can decide to manage the project themselves with advice and support from me, or I can manage the entire project, co-ordinating suppliers and tradesmen to ensure that everything is on site exactly when it’s needed, and in perfect condition. Interior design has become more accessible and affordable as a result of technology. Online shopping and the increase in ecommerce has inspired many manufacturers to sell direct to consumers. The emergence of social media channels, such as Instagram and Pinterest, has created interest in the latest interior design styles and trends, which has made interior design available to a broader audience. Virtual reality and 3D visualisations will also become commonplace and will influence most design decisions. As design becomes more mainstream, clients will start looking for more bespoke, one-of-a-kind interiors and commissioned pieces. The kitchen was an absolute priority – so I created a wonderful open-plan room perfect for entertaining and with a wealth of personal touches, like the handpainted tiles and wine display cabinet. Throughout there’s a real verve and originality to the home.

When my clients swapped London living for an Edwardian country house in Berkshire, they knew they’d found an absolute gem of a home. My challenge was to capture the original spirit of the property while updating it for 21st century family life. To do that, I integrated many of the existing features within a contemporary design style. While the drawing room’s rich wood panelling makes it an exceptional space for evening entertainment, the original floors – for example in the hall – have been brought to life through lighter tones of paint.

Buckinghamshire The home of one of my recent completed projects is set in the Taplow Riverside Development along the Thames. A large five-bedroom Berkeley new build with very little personality has been transformed with soft blues and pinks throughout harmonising a simple modern style to relax and enjoy.

Berkshire’s Shikha Gill has an Instagram account featuring healthy, exciting recipes for children that has amassed 200,000 followers – and the next course is on its way By MARK KEBBLE
A
s a child, I was a terribly fussy eater, and that lack of foodie adventure has hindered me in adulthood too. There are some cuisines I simply can’t stomach, and those that I have started to enjoy have come off the back of many, many years of painful experimentation. What I really needed was Shikha Gill in my life. The Berkshire mum is behind @my.little.food.critic, the go-to Insta account for parents looking for recipe inspiration for their whole family to enjoy the same tasty meal which, at last count, has over 200,000 followers. “It started as a hobby,” she says. “Then my family and friends suggested that I share my recipes on Instagram, and it quickly evolved when I started getting lots of amazing feedback. I wanted to introduce my son to a diet rich in fruits, vegetables and world flavours that would stay with him for life, and this is the ethos behind my recipes. I

wanted my son to enjoy eating what my husband and I enjoyed, and for our meals to be healthy and flavoursome.” Recounting my own unadventurous beginnings in food, does Gill think it’s important children are exposed to different flavours at a young age? “Yes I do,” she states. “Use the opportunity when you’re weaning to offer lots of different flavours – babies are definitely more receptive. There are some important things to remember: no salt for little ones and no chilli to start with as it can irritate their tummies. But other than that, don’t be afraid of world spices – they can quickly elevate simple meals and add so much depth of flavour. Start small with aromatic spices and build up flavours over time. The other thing is that spices are a great talking point – you can chat about different flavours, colours and where they come from.” Given the success of the Instagram page, it’s little surprise that Gill has decided to take things further by launching @my.little.food.critic’s first app. “From idea to delivery, it’s

been 18 months and a labour of love,” Gill reflects. “I wanted to ensure that I continued providing the same delicious, nutritious, flavoursome and healthy recipes and meals for the whole family to enjoy. I wanted to make life easier for parents and thought about important functionality such as automatically generated shopping lists, a weekly meal planner, lifestyle articles from industry experts, as well as play and learn activities as a useful resource to help support learning through play. “I know so many parents struggle with finding recipes to suit dietary and allergy requirements,” Gill adds, “so I worked hard to offer alternatives for the majority of the recipes and cater for different dietary needs. I also wanted to incorporate an advanced search functionality so users can filter recipes, such as gluten free, dairy free, quick meals under 20 minutes.” Why the focus on providing ideas that suit all the family? “In my own experience, and what my followers have shared with me on Instagram, having to prepare different meals for different family members is time consuming, tiring and often
results in mealtimes not being a family experience,” she says. “Family mealtimes are such a fantastic bonding experience and eating together allows positive role modelling, exposes little ones to a wider variety of food, and can help reduce picky eating.” Gill describes the response to the app as “overwhelming” and it’s not surprising with recipes such as Thai Green Curry, Cardamom French Toast, Chickpea Flatbread Pizza and Four Ingredient Bagels, so she deserves a night off and a meal out in Berkshire. Where would she head to? “My husband and I do have our favourites, but we always end up at the Ivy Market Grill as that’s our son’s favourite restaurant,” she laughs, showing how well developed that little palate is. “He simply devours the food there. E X C E P T I O N A L S E R V I C E Absolutely speaks to Kate Hetzel, the founder of Eximius, about why their care provisions go above and beyond Q Before you formed Eximius, what
was your background in care? A I worked in the flavour industry for 16 years when I left college. I spent 10 years in the States working with McDonald’s and Burger King, so when I returned to the UK in 2000 I wanted to do something more meaningful! My father had been a surgeon and I always regreted not having gone into the medical profession, so care seemed to use my business skills and my desire to follow my father. I bought a care franchise in 2002 and ran this for 13 years. This was a domiciliary company and focused on short calls for clients. We always had a few live-in care clients and I was passionate about the difference live-in care can make. I was able to sell my franchise in 2015 and decided to set-up Eximius to focus purely on live-in care, which I believe to be very different. Eximius means “exceptional” in Latin, and that is what we aim for every day.
Q From day one, how did you want to set
yourself apart from other care providers?
A We wanted to be a high quality,
personalised care provider, where we know all our clients, and our carers are called “companions”. No-one aspires to have care when they’re older and many of our clients are very resistant when they first come to us. It is lovely to see their change in attitude after a very short time! Many tell us they don’t know how they coped without our service.
Q How important is it to individuals
or couples to be able to remain at home and receive care? A Most people we talk to want to stay in their own homes. Their belongings, memories and often their pets are there and no-one wants to leave them behind. People also like their own routines and flexibility and often this is not achievable in a care home setting. This was especially
the case during the pandemic. Live-in is particularly good for couples allowing them to stay together and is often more cost effective than a care home. Q Can you explain your different
live-in care services you offer?
A We offer four types of live-in care to
cover whatever needs people might have. To put very simply: Day Live-In means the companion works through the day and sleeps at night; Night Live-In means the companion works throughout the night and sleeps during the day. Some of our particularly ill clients have both day and night; Clinical Live-In is for our clients that need more clinical input. This includes spinal injury, brain injury and some longterm conditions. The companions providing this type of care are more highly trained in clinical skills such as bowel management; Respite Live-In care is short term live-in care – normally two to four weeks. This is for clients either coming out of hospital and needing some short-term support or where a family carer may need a break.
Q How does it feel to be rated
as an "outstanding" live in care provider by the CQC? A We were so proud to be awarded an outstanding rating by the Care Quality Commission. Only 5% of companies nationwide are awarded this and it is for companies that go above and beyond the regulations. We were awarded it in “caring”, “well-led” and “responsive”. eximiussupport.uk

oing through a divorce can be very stressful, particularly when it wasn’t your choice to separate. Here at B P Collins, we can offer advice to help you through the first few months.
ASK FOR SOME TIME You may feel devastated when your partner wants to divorce, so it is always worth asking for some time to process the situation, so that you can both move forward constructively. Very rarely do I meet someone who, six months down the line, does not feel better, more positive and less overwhelmed than they did in the grief-stricken days of early separation.
CONSIDER COUNSELLING Having a discussion in a neutral environment, where you and your former partner can air how you feel and why, can be helpful, both to the formal divorce process and relations with your former partner going forward. This is particularly important when children are involved.
AVOID POSTING ON SOCIAL MEDIA Don’t post anything online that you would not be happy being read by your ex-partner. This can make things more acrimonious for you in the middle of your divorce. It is also possible that your children could read these posts leading to accusations of parental alienation.
With all of the emotional turmoil you may be experiencing, having to worry about your future finances and child arrangements may add to your anxiety. If you’re financially dependent on your spouse, you can ask for suitable arrangements to be made. If your spouse refuses to make adequate provision, you can apply to the court for an interim financial order, requesting your spouse to meet your financial needs until a final agreement is reached.
CHOOSE A LAWYER WHO WILL LISTEN TO YOU Look for a specialist, experienced family lawyer with whom you have a rapport and you do not feel intimidated by. It is often a good idea to get advice early on since if you know what to expect, that should remove some of the uncertainty that is often felt, and discussions on a more informed basis are usually more constructive. Lawyers give advice, but remember it is your divorce and it is you who gives the instructions. While you may need firm guidance, you need to remain true to your own values and principles.
LOOK AFTER YOURSELF Take time for self-care. Do things that you love and surround yourself with supportive family and friends who will be positive and uplifting.

HIGH H POINTS We go inside one of Amersham’s most talked about properties
igh and Over in Amersham is widely considered to be the first and finest house to be built in the Modernist style in Britain. It was designed in 1929 by Amyas Connell, who later became part of the pioneering architectural practice Connell, Ward & Lucas, for Bernard Ashmore, the then Professor of Archaeology at London University. The Grade II* listed property is now regarded as one of the most important buildings to be built in the country in the 20th century and provoked much debate and controversy with Sir John Betjeman commenting on Metroland at the time saying: “In 1931 all Buckinghamshire was scandalised by the appearance, high above Amersham, of a concrete house in the shape of a letter Y.” It was built for a young professor, by the young architect Connell. piece of architectural history the house as featured in many famous publications from Pevsner’s Buildings of England to Taschens World Architecture, as well as appearing in television and film such as Poirot. High and Over, often referred to locally as the “Aeroplane House” due to its three wings leading off the hexagonal reception hall, was sympathetically divided in 1962 and was occupied as two separate dwellings until 2008 when it was reunited into one substantial property offering extensive and flexible accommodation over its three levels. In recent years the current owners have undertaken a comprehensive programme of refurbishment to restore much of the property to its former glory. With a fine attention to research and detail many of the original features have been reinstated including restoring the original ground floor configuration with its glazed doors and ceiling light boxes in the principal reception rooms. A sweeping staircase in the turret leads to the upper floors, and an inner hallway leads to the kitchen and back staircase used by servants in its heyday. The three reception rooms comprise the triple aspect drawing room with a fireplace, the library (again triple aspect) with fitted display unit and ornate steel radiators, and the formal dining room. The custom made kitchen/breakfast room with stainless steel trim and work surfaces incorporates a La Cornue range cooker with extractor above, integrated fridge, freezer and dishwasher. There are feature port hole windows to the far wall. The matching first floor hexagonal landing, with its circular gallery, provides access to an adaptable combination of bedrooms and laundry room. For example, bedroom five could become a dressing room or en-suite to the main bedroom and bedroom two could be enlarged by
removing the partition wall. There are two further bedrooms accessed from the back staircase. The top floor has further rooms including a study and additional lounge, which provides access to about 1,000 sqft of part covered roof terrace for both relaxation and entertaining, offering commanding far reaching views over the roof tops of Old Amersham and Misbourne Valley beyond. The property still retains about 1.7 acres of its original gardens and grounds with a gravel driveway and turning area in front of the main entrance door with a spur leading to the large lower ground basement store rooms. There is also an additional detached garage with planning permission. The beautiful landscaped gardens are as originally landscaped with areas of terrace and steps down to the circular swimming pool with extensive areas of lawn and a lightly wooded backdrop.
