t's a tough part of the job, but during my 20 plus years as a journalist, I have been whisked off to some far flung places in the name of work. I have had some incredible experiences, but also some terrifying ones: there was the room on a cliff, with no wall, when a hurricane decided to rear its head; and the other time I was literally chased down a road by a Komodo dragon. Our postmen don't know how lucky they are. Hospitality has not had it easy over the last couple of years, so kudos to all those who have been running hotels during such a difficult time. This month, we profile Alex Polizzi, who of course has made a name for herself helping others to realise their own hotel dreams. Now she and her mother, Olga, have opened The Star in Alfriston, so the boot is very much on the other foot. We take a sneaky peek behind closed doors. The Chichester International Film Festival has been going even longer than my trusty typewriter (OK, I am not that old) as 2022 sees it celebrate its 30th anniversary. I really enjoyed speaking to the man behind it all, Roger Gibson, and taking a trip down cinematic memory lane. It certainly shows that the best things in life are close to home.

Petworth’s Beauties Until 30 October P E T WO RT H H O US E This summer, the National Trust’s Petworth House in West Sussex is exhibiting two 17th-century portraits that were recently restored to full length after being shortened around 200 years ago. The portraits of Rachel Russell, Duchess of Devonshire, and Mary Somerset, Duchess of Ormonde, were painted by artist Michael Dahl and are considered to be some of his finest works. Originally displayed in the Beauty Room at the heart of Baroque Petworth, they are part of a series of eight female portraits best-known as the ‘Petworth Beauties’ that have given this room its name. nationaltrust.org.uk/petworthhouse-and-park

Eye on the PRIZE The Sussex Contemporary’s Joanna Myles has some rather big art news to announce

ast month I mentioned a piece of exciting art news that we couldn’t share. I’m pleased to say that the embargo has been lifted and we can tell you that the world’s leading prize for contemporary art, The Turner Prize, will be presented at the Towner in Eastbourne in 2023, as the centrepiece of their centenary celebrations. The exhibition of the Turner Prize's four shortlisted artists will feature at the Towner from 28 September 2023, with the winner being announced on 5 December 2023. Although some time away, this is big news for Sussex and is expected to generate an additional 100,000 art tourists to Eastbourne. Don’t worry, you don’t have to wait until next year to see some amazing art in Sussex. There is a lot to see before then and first up is Artwave Festival. This annual event runs from 3-18 September in Lewes District, which reaches from Newhaven and Seaford on the coast and up to Haywards Heath. Artwave is an inclusive and uncurated festival with no jury selection that started back in 1993 and has been growing year on year. Next month will see 900 Sussex artists and makers opening their studios and homes to display their work across 160 venues. It is one of my favourite Sussex art events and the venues are spread out across the beautiful Sussex countryside. Artwave 2022 is particularly special for me as my art and hand-printed wallpaper have been chosen as the cover image and I am super excited about that. thesussexcontemporary.co.uk

This unfolding structure provides the focal point to a new garden that reveals how much the ancient Silk Route has influenced English gardens of today. Born to Exist (wednesday 5th October)

Joseph Toonga returns to Worthing with the third part of his nationally-acclaimed hip-hop trilogy, Born to Exist (Wednesday 5th October). A fantastically poignant performance that looks to challenge the stigmas society holds towards ethnic minorities, it’s here to analyse representation with an intersectional focus to show untold, underrepresented, individual journeys. Our Life at the Barn by Flavia CacaceMistry and Jimi Mistry (Sunday 9th October) offers you the chance to delve into the personal and unique setting of their lives together. The infamous dancers have fallen in love with the English countryside, and they’re here to tell you all about it. An intimate and passionate evening that will inspire you to follow your dreams. Othello (Tuesday 29th November - Friday 2nd December) is brought to you by Frantic Assembly, and they’re dragging Our Life at the Barn this classic Shakespeare (Sunday 9th October) tragedy well into the 21st century. This electrifying take on the vintage tale promises to modernise the paranoia, sex, and murder, making it accessible for everyone. Set in a pub on a rundown Yorkshire housing estate this is Shakespeare as you have never seen it before.

Over in the museum, Henny Beaumont’s Invisible People exhibition (running until Sunday 30th October) is challenging the way we see our peers with additional needs. The fantastic display of passionate artwork is a celebration and recognition of the beauty and value of the work of artists with learning disabilities and neuro-diverse people. It showcases the work of Brighton’s Rocket Artists and Worthing’s Superstar Arts, alongside the work of Henny’s daughter Beth, who is an artist with Down’s Syndrome.

Invisible People (Until Sunday 30th October)

The Kintsugi Women (running until Sunday 25th September) display is a result of collaboration between Kintsugi Women local charities and (Until 25th services supporting \September) people experiencing homelessness across West Sussex. Female service users were invited to think of something they value about themselves, or highlight something difficult they’ve learned through their experiences. Their experiences and expressions are captured in a chosen art form with the common thread of gold running throughout their creations to evoke and symbolise the repair, like the Japanese art of mending broken pottery with gold medium which renders it stronger and more beautiful than before.

ith a clash of steel and thunder of hooves, the thrill of international medieval jousting is back at Arundel Castle. After a three-year absence due to the Covid pandemic, organisers of this premier UK jousting contest are pulling out all the stops to offer a fantastic family event with opportunities for hands-on activities at a medieval encampment as well as the excitement of the tournament. Between the jousts, arena events will include a falconry display, fire eater and the opportunity to participate in the castle’s renowned ‘Kids Battle’.

Young and old have a chance to get immersed in how people lived in the late 1400s with displays, demonstrations of crafts from the period, music, cooking, armour-making and woodworking. Find your inner warrior at a training camp or have a go at activities including traditional archery, axe throwing and using a crossbow. Face-painting and storytelling will keep little ones amused, and the jousters and other combatants will be on hand for photo opportunities. Against the magnificent backdrop of the castle, birds of prey will fly high over the tented encampment in displays of falconry prowess which were common 500 years ago. Historical accuracy is important for everyone taking part in this fantastic event. All participants will be in costume, jousters will be in replica steel plate from the period and even the horses wear special harnesses and protection. Each day, the arena will echo to the shouts of the challenging jousters and their supporters as each rider thunders into combat with a 10-feet long lance aimed at scoring points by striking the other. Regular English jouster Mark Capel says that Arundel is an important tournament as it’s the only international event where the same opponents are faced over several days of competition with accumulating scores, testing the true mettle of a jouster. He says that “anybody can get lucky and win a one-day competition; it’s only when there are several days’ worth of competing that you start to see the riders really stand out as first class jousters”. This is a sporting event like no other with strict rules adapted from the past to ensure the safety of horses and riders in a colourful and noisy spectacle. Even the food has an authentic touch. P R E AC H Alex Polizzi became a household name thanks to The Hotel Inspector – so how different is it when it comes to running her own establishment? We head to Alfriston to find out more

F

or anyone visiting The Star in Alfriston, you may not be able to quite match up what you see with a TV show called My Hotel Nightmare. The Channel 5 programme tracked Alex Polizzi and her mother, Olga, as they looked to transform a rundown watering hole into something worthy of joining The Polizzi Collection of luxury hotels. “It continues on occasion to be a nightmare,” smiles Alex. “There are moments of complete joy in this industry, and there are moments of complete pain!” If anyone knows, it’s Alex Polizzi. She has become a recognisable face thanks to The Hotel Inspector, another hit show on Channel 5 now into its 16th season, where Alex heads to hotels seeking to transform their fortunes. Given the premise of the show, it certainly adds a twist to actually running your own hotel. “Of course,” she nods. “I acknowledge that

I set myself up as a rather large target, so can’t complain if people take aim!” So what was it about The Star that caught the Polizzis’ eyes? “We knew The Star historically because we walked so much in the area and saw it gradually becoming more and more dilapidated,” Alex explains. “The thought of making a silk purse out of a pig’s ear was quite attractive as there was a lot we could do to make it better, and as my mother always says, it is a lot more fun to turn a disaster into a miracle than merely gilding the lily. “We started by doing what my mother always does on bigger projects, which is to create a sample room,” Alex continues. “We did two sample rooms in two different colourways while we were applying for planning permission, which we had to get because the building is Grade II listed, so we didn’t go hammer and tongs at it, we took it all quite gently. Its history is pretty evident at the front

of the building, but the truth is that like any old building that has been endlessly extended added to and altered, it is really interesting to see the different stages of its genesis. So, we have tried to stay true to the various elements of the building and make a harmonious whole.” The final result is truly astonishing. The hotel has been transformed with the addition of floor to ceiling windows through much of the more modern part of the building, and some of the smaller bedrooms have been combined to form 30 larger bedrooms. Many of the rooms in the new wing, built in the 60s, have small private patios or Juliet balconies; one junior suite has its own terrace. The central part of the modern building was demolished to create an internal courtyard. “That was the biggest undertaking,” Alex says on the courtyard. “To create this area, we got rid of a lot of offices and what were the public loos and two A B S O L U T E LY m a g a z i n e s

bedrooms, but without it we had no outside space. It was my genius brother Conrad’s idea and it has really made an enormous difference to the hotel.” The Heritage Suite, on the first floor of the oldest part of the hotel, The Inn, is directly above the bar and has beautiful oriel windows looking out over the High Street. Its bathroom has a freestanding bath and a fireplace. The bedrooms have been designed in Olga Polizzi’s style, using contemporary furniture and local antiques, English wallpapers and fabrics by Richard Smith, with splashes of vibrant colours and textures. Some of the furniture in the newer 60s wing is by Julian Chichester and other pieces are individual one-offs bought locally.

Tim Kensett, formerly of The River Café, is head chef and serves simple, unfussy dishes with a focus on clarity of flavour. The ever-changing, highly seasonal menus utilise the abundance of exceptional Sussex produce. At the heart of the hotel is a large 60 cover restaurant with a striking black and white stencilled Elizabethan design on the floor, painted by local artist Amanda Lawrence. “I love how much lighter and airer the whole hotel appears,” Alex says on the final result. “With the internal courtyard that opens onto three sides of the building, the outside has come in, and my mother’s brilliant planting scheme had made it all much greener and it feels now like a hotel for all seasons.” And how is it working with mum? “Hell and heaven simultaneously,” Alex laughs. “I love working with my mother, and she teaches me so much every day. I suppose I am glad I came to this project at this point of my life, aged 50, rather than younger, because I think I hold my own better than I would have done before, but I keep thinking of other projects that would be fun to do with her. happy place. Every time I come here I feel really cheerful. I have great friends in the village, Beverley and Rob in the Village shop, Will Emmett and Nick White who have a vintage clothing store and an antique shop, Diana Kelly who has a design shop, Amanda and Alfonso in their perfectly curated curiosity shop, Objet Trouve, and obviously Cate and Nash who have the wonderful bookshop Much Ado Books, who have been endlessly supportive and kind to me. I feel like here I have a place to work, but also a place to have fun. Q Where else in Sussex would you venture to? A I would go to Rathfinny vineyard, which I love. It is so beautiful and the owners have deep pockets and immaculate taste and the combination is a winning one. I love Glyndebourne, I don’t go often enough, but it is always magical when I do go. I would also recommend any walk on the South Downs, something that I encourage each guest to do at least once during their stay.

I became a cartographer, which I imagined would combine my interests in geography and art. Family life took over until 1996 when my youngest child started University and I decided it was time to pick up with the art I had always loved. I started with courses in watercolour at Chichester College and then went on to study with many other artists and teachers taking short courses at West Dean College, Sir John Soane's Museum, Earnley Concourse and I took private tuition in Print Making and Silversmithing. I enjoy working with oils and prefer to work mainly in this medium. Once colour is committed to paper with watercolour your work has taken a direction which is not always where you wish it to be. With oils there is more freedom to change and lighten an area. I enjoy the freedom of painting now after the restrictions of cartography, I can now place a road or a tree wherever I wish!

Q Is it possible to sum up your style? A If I am honest my most popular work is

based on the local scenery from the South Downs to the coast. As a multimedia artist this can be either realistic scenes in oils or printmaking taking a subject towards a more abstract image. If I find myself in my studio on a dull or rainy day I tend towards a painting of a place I would like to be. I have also found working with silver and copper to be very rewarding. The thrill of taking an enamelled item out of the kiln has the same unexpected twists and effects in the same way as print making. This means every day I can do whatever medium I fancy and produce something different.

Q How did the little art gallery come about? A My friend was looking to move to my area and found a house with an empty shop unit. As he knew I had friends who had discussed setting up a gallery together, he asked if my friends and I would like a little art gallery, which is how the little art gallery in West Wittering came about. It is only a small space and the name just stuck. Q Who do you look to display at the gallery? A When the gallery started, I had a large group of artists I had exhibited with for many years and they became our core artists. We then were approached by many more professional artists looking for a new place to exhibit their work. We used to have themed exhibitions or shows by specific artists. When Covid came along this all changed – we had 63 artists we had represented who had all lost their planned shows and events so we changed our displays to mixed work rotating and changing on a regular basis. Q What’s coming up this summer? A At the moment we have the Festival of

Chichester show with two popular artists displaying new work on the theme of “from the Downs to the Sea” until mid July. We will then follow this up with a mixed summer show of mainly scenes of the sea and local countryside as that is most TRUNDLE VIEW

“Whilst it is lovely to travel, Sussex is a place that is always a delight to return home to” likely the type of customer who will be looking for something to take home from a holiday, day out or visiting friends locally. Q How long have you lived in the area? A I have lived in the area for 46 years. We

have a very mild climate and big open skies, which gives us wonderful light and cloud formations, sunsets and sunrises in addition to the variation of the sands and sea, tides and harbour views. Whilst it is lovely to travel and see other areas and countries, it is a place that is always a delight to return home to. No two days ever feel the same.

Q The little art gallery aside, where else do you love visiting in the county? A We are lucky to have so much choice in Sussex. East and West Sussex both have

a different appeal. The low lying flat land along the coast and the rolling hills of the South Downs and farmland in West Sussex open out to more undulations in East Sussex and the striking cliffs beyond Brighton. Chichester Harbour is full of activities on the water and the wildlife to be spotted is always changing. In my local area I would choose The Trundle above Chichester for the views. West Wittering beach and East Head, which are excellent for surfing and bird watching as well as painting. A third place would also be Harting Down, which has terrific views both North and South, and it is also part of the South Downs Way. R

oger Gibson is an incredibly modest man. Not only the president of Chichester Cinema at New Park, which was founded in 1979, he is also the man who decided the area needed a proper film festival. “There were local and other film groups at the time (including the Chichester Festivities in the 90s) showing a few films over the weekend and calling themselves 'Film Festivals', which spurred me on to create a more ambitious event, a proper Film Festival, originally as part of the Chichester Festivities,” he says. “I thought we should do something, which was relatively ambitious for the time.” This was in July 1992 when, as Gibson explains, he put on “50 screenings, 12 previews, nine new British films and 12 new European films”. When I say that sounds like a lot, he almost nonchalantly adds: “I suppose it sounds a lot, but the A-list festivals show about 500-600 films! It was ambitious, but I didn’t really think about it too much, I thought let’s see what we can do. Having already negotiated films for the normal runs [at Chichester Cinema], I had the contacts and I went from there.” Does he recall a particular highlight from the very first festival? “Christine ALEC GUINNESS'S VISIT IS A HIGHLIGHT FOR GIBSON

KATHLEEN TURNER WAS A MEMORABLE GUEST

“I have correspondence with Alec Guinness on these little postcards” Edzard [the director] came down to present As You Like It. We had a few guests and Christine was big at the time, [her film] Little Dorrit with Alec Guinness was quite an epic thing. Looking back, I was quite impressed with some of the films I got. We had Terence Davies’ The Long Day Closes, we had the opera Rigoletto, and Howard’s End was probably the biggest British film looking at the programme.” The positive response was immediate and has grown substantially across the decades to where we find ourselves today, preparing for the 30th anniversary event and a much-evolved festival. “We only had one venue 30 years ago, which was just the main auditorium [of the cinema],” Gibson reflects on how things have changed. “We also started with 50 shows and we now have over 150. We are now using Chichester Cathedral for a screening of Pasolini’s The Gospel According to St. Matthew, we have got open air screenings in Priory Park, and Petworth is joining us for some screenings, which is a new venue for us. So there’s the development of the venues, development of the number of previews and premieres, but the other important thing is I have been importing films from abroad too that are not released in this country, so they are very exclusive.” When Gibson looks back at highlights over the years, he picks out some extra

special guests. “It was quite amazing that we had Alec Guinness,” he says delightedly. “He was wonderful, speaking for about an hour. He never gave interviews, or very rarely, and I have correspondence with him on these funny little postcards as he never had an agent or anything like that. Then there was Kathleen Turner – I wrote to her immodestly and she agreed to come along, and she introduced War of the Roses. More recently, we had Ralph Fiennes for Two Women, which was based on A Month in the Country, a Russian film. He actually spoke Russian, too. He closed one of the festivals a few years back.

What to expect at the 30th Chichester International Film Festival This August, Chichester International Film Festival (CIFF) will celebrate its 30th anniversary with an outstanding programme of quality film screenings and special events.

But there have been so many others.” This year’s schedule looks a belter, but two things stand out for me, one close to home, the other a little further away, but extremely pertinent. “We are doing an extensive homage to Ukrainian cinema,” Gibson says about the latter. “Then we have Made in Sussex, where we are going to be showing three films that were created in the county. The most relevant one for Chichester that never got a theatrical release is a film called Blackbird. There’s Stan & Ollie, shot largely in Worthing. Then there’s a lovely little documentary about an 87-year-old weaver, Ann Sutton, and it’s called My Bones are Woven – she is from Arundel.” How does Gibson feel when looking at how far the festival has come? “I am amazed that we have reached 30 years,” he smiles. “I do remember a journalist saying to me when we started, ‘do you think this will be the Cannes of the South Coast?’ and I said don’t be ridiculous. And although I am not claiming that, it’s certainly closer to that than it was when we first started!”

Derek Malcolm, one of the UK’s greatest living film critics at the age of 90, will officially open the annual festival, which runs from 5-28 of August. His impressive career in film spans several decades: having worked for the Guardian and the Evening Standard, he is also a published author and president of the British Federation of Film Societies and the International Film Critics’ Circle. This year’s festival promises to be an outstanding event with over 130 feature films including exclusive premieres and previews from around the globe as well as tributes and retrospectives, silent film screenings accompanied by live music and inspiring talks from special guests. The festival will commence with three open air screenings over 5-7 August in Chichester’s beautiful Priory Park: Baz Luhrmann’s Elvis,

Steven Spielberg’s West Side Story and family favourite, Lightyear. Recognised for its diverse programme, this year’s festival will include a special homage to Ukrainian cinema, in recognition of the ongoing conflict and to honour the Ukrainian people as well as the country’s rich culture through the art of film. The festival will also take a fascinating glimpse closer to home with Made in Sussex, a selection of films that were shot in the local area. This year’s selection of retrospectives, which aim to showcase the work of actors, composers, film directors and screenwriters who have helped shape the industry, include Olivia Colman, the anniversaries of Ralph VaughnWilliams, Pier Paolo Pasolini and Alain Resnais with tributes to the late Peter Bogdanovich, Jean Paul Belmondo and David Gulpilil. Film composers including the late Ennio Morricone, Vangelis and Charles Mingus will also be celebrated with aplomb.

he Festival of Speed presented by Mastercard was back in full swing this year after selling out quicker than ever. Spectacular vehicles, drivers, partners and exhibitors were present at motorsport’s ultimate summer garden party for its 29th year, celebrating the world of motoring, technology and future mobility. With over 60 supercars on display across the weekend, the event saw global debuts from many renowned manufacturers, include the unveiling of the BMW M3 Touring, Mercedes AMG Project ONE, Range Rover Sport and Pagani Huayra Codalunga, in addition to Porsche’s latest Le Mans showstopper, the Porsche 963. The Festival of Speed welcomed motorsport legends from across the spectrum. Wayne Rainey joined the festivities as he returned to the saddle for the first time in 30 years. In a blast from the past, ‘Mansell Mania’ took over Goodwood as Nigel Mansell joined for the whole weekend. The 1992 Formula 1 World Champion was reunited with his championship-winning Williams FW14B for the first time in 30 years and fans saw the iconic ‘Red 5’ storm up the hill as Mansell celebrated the anniversary of his win. pectators flocked to Cowdray Park Polo Club on Sunday 26 June for the muchloved Midhurst Town Cup, where they enjoyed a range of activities prior to the match, including tractor rides, laser clay shooting, face painting, fun fair rides and mini rugby. Award-winning gundog trainer, Jason Mayhew, took to the pitch to demonstrate the skills of his canine pupils, and at half time, the Polo Academy ponies and ‘fluffies’ came onto the field ridden by some of the youngest members of the Cowdray Hunt branch of the Pony Club. The Gold Cup match for the Midhurst Town Cup between Scone and Dubai did not disappoint, with Dubai capturing a 12-10 win in an exciting game. The historic trophy was presented to the Club in 1953 by the tradespeople of Midhurst in recognition of the business brought to the town by polo. Nick Ferrier, of presenting partner JacksonStops Midhurst, handed the cup to Rashid Albwardy, while the glamorous Mariya Dykalo, creative director at Aspinal of London, gave beautiful prizes to each of the players, including the Most Valuable Player prize which was awarded to 18-year-old Camilo ‘Jeta’ Castagnola. The Best Playing Pony rug was awarded to stunning bay mare ‘Calloway’.

CAMELLIA OFFERS A REFINED DINING EXPERIENCE

I

t’s not easy to find a chink in Josh Mann’s diary, but somehow we have managed it as we needed to speak to the head chef at Camellia restaurant about his first year at the helm. And what a first year it has been. “It has been a whirlwind time,” he smiles. “In my first month of starting, my daughter was born, so the last year has been crazy. Trying to change a restaurant around and bringing up a baby girl hasn’t been easy to say the least.” Perhaps not easy, but Mann has clearly put in the hard graft as, within eight months of starting at the Horsham restaurant, he saw Camellia move up from two AA Rosettes to be awarded the prestigious three. “This is the first time I have taken a restaurant from two to three,” he says proudly. “Previously I have just retained the Rosettes already in place, so this time around is definitely the most significant for me. I wanted to bring my flair to the menu and achieve three AA Rosettes in the shortest

time possible. Changing people’s perceptions of the restaurant has probably been the hardest challenge.” Mann has come far from his earliest experiences in a kitchen when growing up in the East Midlands. Looking back at his first job at a local pub, he describes the kitchen as “being small and hot, I did not enjoy it one bit” – but he still decided to head off to catering college for two years. He never looked back as his career has taken him all over the UK and overseas, nurturing his culinary skill set and developing a globally influenced palate. He worked in France and Portugal, fully embracing their local cuisines, and back on these shores he has spent years in the kitchens of Restaurant Tristan, Alexander House Hotel and Langshott Manor – and then Camellia came calling. “Since I have lived in the South East, South Lodge has always been on my radar of places I would love to work at, so naturally when I heard of the position in Camellia I jumped at the opportunity,” A B S O L U T E LY m a g a z i n e s

he says. “Along with a better work/life balance and knowing that the company wanted to invest and push Camellia to greater heights really shouted to me.” Then there’s the South Lodge grounds, too. “The grounds are wonderful and vast,” Mann enthuses, “I can often be found wandering the gardens looking for inspiration. We make use of as much as we can, whether foraged or grown by our garden team.” As we talk, Mann is busy preparing new dishes for the tail end of summer, and if what has come before is anything to go by, foodies everywhere should be excited. Previous menus have reflected the seasons, featuring fresh, local produce and typically making the most of one single ingredient on each plate. A stand out dish Absolutely Sussex sampled, and which truly showed what Mann’s ethos is all about, was South Downs venison loin featuring venison faggot with Medjool date, Choucroute and wild garlic. Other highlights on the menu include Rabbit black pudding-stuffed loin and buttermilk-fried leg with nettle and black garlic, and Butter-poached squid with braised oxtail, smoked potato, and preserved lemon jam for starters. For

mains, South Coast brill with brassicas, crab ravioli and lime, and Wild garlic gnocchi with braised chicory, smoked broccoli purée, pineapple and chamoy dressing. For dessert, Mann and the pastry team have created a Rhubarb Mille-Feuille with vanilla crème pâtissière, white chocolate crèmeux, orange and rhubarb sorbet; Chocolate and coffee delice with cocoa nib tuille and coffee ice cream; as well as Pear and limoncello tart with Mouneyrac pear, limoncello and pear ice cream. You can see why the AA Rosettes were awarded. With that in the bag, does Mann and the team feel any added pressure to deliver constantly? “I don’t feel it has added more pressure as we have been consistent in delivering food to the highest standard anyway,” he says. “The pressure for me comes from wanting more for the restaurant – let’s not stop at three AA Rosettes. I am really focused on giving Camellia its own identity. We have invested in a top of the range dry ageing fridge that gives us a unique opportunity to create our own charcuterie, cheese, dry aged meat and fish. That coupled with my obsession with everything BBQ and/or smoked makes me really excited for the future.” What pressure? camelliarestaurant.co.uk

interests and got to know him outside of work. The relationship grew from there and I was introduced to Penny when he thought I would be a good fit for a new restaurant venture they were beginning. Q How do you look back on your time working for her in South Africa? A Very positively – it was the beginning of the relationship we have and was the base for her giving me my big chance in the UK. Q When did you decide you wanted to be a chef professionally? A Cooking and messing around at home [in South Africa] really pulled me in. I always felt I needed to do something with my hands, to keep constantly busy. Cooking seemed like a great option. Q How different is the food and

drink industry in South Africa? A The food and drink scene in South Africa really has come on leaps and bounds in the last 15-20 years, and can really compete on an international stage. We have a massive diversity in South Africa that is very well catered for, and ever-growing on trends. So, I would think anyone travelling to South Africa would be in for a real treat when eating out in restaurants. Q How did you come to meet Penny Streeter? A I met Penny through her son Adam. He was completing a placement at the restaurant I was then working at for a chef diploma he was enrolled in. I became quite friendly with Adam as we had similar

Q Was it an easy decision to come to the UK to launch Restaurant Interlude? A I really needed the correct setting and customer base to cook the food that I cared about and showcase my philosophy in food. When we started talking and planning a move to the UK, it became a no brainer for myself and my wife. Q What did you make of Leonardslee when you first visited? A It was an overgrown garden of Eden with so many hidden treasures. There was a lot of work to do, but you could just see the bags of potential the site had. It was very different to what I knew and grew up around. Q How did you approach the menus at Restaurant Interlude? A I wanted the garden to really guide me on our first menus. My palate was very different to the average UK guest, so I needed to tone it back a bit. As we got more comfortable with what we were doing, we started growing and pushing our roots out further and showcasing the gardens more in unique and innovative ways.

Q How do you make use of the Leonardslee gardens? A As much as possible without forcing it. It needs to be natural and make sense for the dish. For every course on the menu there is an element from the garden – it may not always be the star on that specific course, but it plays an important part on the dish. Q What did it mean to you for the restaurant to be awarded a Michelin star? A It meant a lot. It put us on the map and showed us that what we believe in has potential. It transformed our small little restaurant to something we can grow. It’s something that as a kid I would never have thought possible, so it’s an incredible feeling for it to now be a reality. Q Does such recognition add a touch more pressure in having to deliver? A I think naturally it always will. We can always be confident on what we do and execute, but it will always be in the back of my mind that we have a certain standard that we have to achieve now day in and day out. Q Where would you like to take the dining experience from here? A The dining experience is ever evolving. We have a lot of potential to make us a true destination experience restaurant. The second star is our next natural goal, but ultimately I want Restaurant Interlude to be a special experience that will be long remembered – not for being different, but being true and unique to itself.

Roasted cabbage

with mango and harissa sauce S E RV E S 4 A S A S I D E

INGREDIENTS

• 1 medium Savoy cabbage • 1 teaspoon flaked salt • 3 tablespoons olive oil • 1 jalapeño, thinly sliced into rounds (optional) • 5g fresh herbs (preferably a mix of dill and coriander) • Greek-style yoghurt, to serve (optional) • lemon wedges, to serve Mango and harissa sauce: • 3 tablespoons olive oil • 4 large cloves of garlic, very finely chopped • 1 mild red chilli, deseeded and very finely chopped • ⅛ teaspoon fine salt • 2 tablespoons rose harissa • 2 teaspoons tomato purée/paste • 100g very ripe, sweet mango flesh, peeled and chopped into 1cm cubes • 2 teaspoons lemon juice

METHOD

The mango and harissa sauce is the star here and couldn’t be easier to put together. It works well in so many contexts: try it with roast chicken, marinated tofu or grilled fish or prawns, or let it come to room temperature and use it as the base for a fish or prawn crudo dish. For a quick midweek dinner, serve the cabbage with fried eggs. Preheat the oven to 220°C fan/240°C. 2 Separate the cabbage leaves to get 400g of the brightest green leaves (save the rest for another recipe). Cut the leaves in half along the ribs, then cut in half again. Put them into a large bowl with the flaked salt and oil and massage together. Transfer to a large, flat tray and spread out as much as possible – it’s fine if some leaves overlap, as they’ll shrink. Roast for 12 minutes, tossing the leaves halfway, until the edges are beginning to brown and crisp up. 3 To make the sauce, put 1

the oil, garlic, chilli and fine salt into a large sauté pan and place on a medium-low heat. Gently fry for 6–7 minutes, stirring often, until the garlic is very soft. You don’t want the garlic to brown, so turn the heat down if necessary. Remove the pan from the heat. Stir in the harissa and tomato purée/paste until combined, then stir in the mango and lemon juice 4 Spoon the sauce on to a platter and top with the roasted cabbage leaves. 5 Squeeze over some lemon juice, then top with the jalapeño and herbs. Serve warm with yoghurt on the side, if you like.

Brown butter sea bass with tangerine dipping sauce and lots of herbs S E RV E S 2

INGREDIENTS

• 1 x 800g sea bass, at room temperature • 2 stalks of fresh rosemary • 40g spring onions (about 4 thin ones) • fine salt • 1 baby gem lettuce, leaves separated • 5g fresh mint leaves • 5g fresh coriander leaves • 5g fresh basil leaves • lime wedges Citrus butter: • 40g unsalted butter • 30g olive oil • 1.5 tablespoons tangerine juice • 2 teaspoons lime juice

• 3 cloves of garlic, skin left on and crushed with the side of a knife • 1 teaspoon fine salt • about 20 twists of freshly ground black pepper Tangerine dipping sauce: • 1.5 teaspoons pul biber (use red bell pepper flakes if you don’t like heat) • 1 small clove of garlic, finely chopped • 1/4 teaspoon finely grated fresh ginger • 3/4 teaspoon tomato purée/paste • 1/4 teaspoon fine salt • 1.5 tablespoons mild and light olive oil • 40g sweet, ripe cherry tomatoes, such as Datterini, very finely chopped • 4 tablespoons tangerine juice • 2 teaspoons lime juice • 1/4 teaspoon fish sauce or light soy sauce

METHOD

Don’t be put off by the longish ingredients list and method. Read through it once and you’ll realise this recipe is actually very straightforward and requires very little hands-on cooking. This is a great interactive sharing dish; stuff pieces of fish into the lettuce leaves (fresh corn tortillas would be great, too), top with the herbs and dipping sauce and let it trickle down your wrists as you eat with your hands. You’ll need four tangerines and two limes in total for this recipe. Preheat the oven to 190°C fan/210°C. Pat the sea bass with kitchen towel to make sure it’s as dry as possible. Transfer it to a 33 x 26cm non-stick high-sided baking tray, arranging it diagonally so it fits. The tray shouldn’t be much bigger than the fish, otherwise the citrus butter will burn. Use a very sharp knife to make 1

5 diagonal slits in the fish. Season the cavity with ¼ teaspoon of fine salt, then stuff with the rosemary and spring onions. Put all the ingredients for the citrus butter into a small saucepan and place on a medium heat until the butter has melted. Pour over and around the fish. 3 Bake for 14 minutes (or longer if your fish is larger than 800g), then baste the fish well and turn the oven to the highest grill setting. Grill on the top shelf of the oven for 4–6 minutes, or until the skin begins to bubble and crisp. Keep a close eye, as some grills are much hotter than others. 4 While the fish is cooking, make the tangerine dipping sauce. Put the pul biber, garlic, ginger, tomato purée/paste and fine salt into a mortar and pound with a pestle to a rough paste. 5 Heat the oil in a small saucepan on a medium heat for 1 minute, then pour the hot oil into the mortar. Stir together, then add the chopped tomatoes, tangerine juice, lime juice and fish sauce. 6 Once cooked, transfer the sea bass to a large platter with the browned citrus butter. Discard the garlic skins. Serve with the lettuce and soft herbs to make parcels with, and the dipping sauce and lime wedges alongside.

Whipped yoghurt: • 150g mascarpone, fridge-cold • 200g yoghurt, fridge-cold • 1/2 teaspoon vanilla bean paste • 1 tablespoon maple syrup

Roasted strawberries: • 300g frozen strawberries, defrosted (frozen strawberries will produce a redder syrup, but you can use fresh strawberries – stalks removed and roughly chopped – just make sure they’re extra ripe) • 50g caster sugar • 1/2 lime • 2 cinnamon sticks, roughly broken

Peanut fudge sauce: • 50g smooth peanut butter (I use Manilife) • 1.5 tablespoons cocoa powder (15g) • 75g maple syrup • 1 teaspoon soy sauce (or tamari) • 1.5 tablespoons water

METHOD

The lime-roasted strawberries and peanut fudge sauce are essentially a refined combination of peanut butter and jelly, and boy do they sing together! Here I serve them with a simple whipped yoghurt, but you could serve with plain yoghurt or shop-bought ice cream. If you’re feeling wild, pile the whipped yoghurt, roasted strawberries and fudge sauce on top of a caramelised

roasted crumpet and dust with cocoa powder to offset the sweetness. 1 Preheat the oven to 200°C fan/220°C. 2 For the roasted strawberries, place all the ingredients in an ovenproof dish just big enough to fit the strawberries in a single layer. They should be snug, but not piled on top of each other. Bake for 20 minutes, stirring halfway. Set aside to cool. 3 Place the mascarpone, yoghurt, vanilla paste and maple syrup in a large bowl and whisk together until completely smooth. Keep the bowl in the fridge until ready to serve. For the fudge sauce, whisk all the ingredients together in a small bowl until smooth. You may need to add more water or maple syrup, depending on the thickness of your peanut butter. You’re looking for a smooth, thick but pourable consistency. In individual glasses, layer the chilled yoghurt with the warm strawberries and the fudge sauce and serve.

I

started my career in Brazil working for a bank and it was only really when I came to London and started working in hospitality that I became more involved in the wine world. I left to live in Geneva and there I started spending time in vineyards in the Jura. After seven years in Hong Kong, my husband Nick and I came back to England and that’s when I decided to study Viticulture and Oenology at Plumpton. I wanted to plant my own vineyard and start making wine. At that time there was no Oastbrook Estate – just a house and some land. It was only when we realised that our neighbours had successfully planted a vineyard and we did some studies into the microclimate and terroir here that we realised that the land we had bought was perfect for growing vines. We realised that as a smaller vineyard we would have to offer accommodation and hospitality for the venture to be successful, and we decided to focus on high quality wines made in small batches. A lot has changed at Oastbrook – we have planted 15 acres of vines, built a winery, laboratory and tasting room, plus a number of holiday homes including our very own Hobbit House. We wanted something that was different and iconic and unlike anything else that could be found.

ON ONE OF THE VINEYARD TOURS

To start with we had put the whole estate over to organic pasture to improve the soils and only after a few years did we plant the vines. We’ve focused all the way through on the sustainability of the estate and reducing our carbon footprint. The Oastbrook range changes quite often as we only make smaller batches that sell out, but to name a few, our Pinot Gris, Sparkling Rosé, Chardonnay, Pinot Blanc and white Pinot Meunier are some of our most popular wines. In the height of summer, we hold tours five days a week, but otherwise from April to October we do them at weekends. Nick and I host all the tours, as we think it’s really important that people have contact with the owners and winemakers. I do the vineyard tour and it’s fun and informative, and people learn about our story and the history of the area. Then we go into the tasting room where Nick shares his story, and we talk about all the wines that our guests taste. What’s next? We have a Bollywood, wine and dine event planned for September. Q What inspired you to launch Liberty & Love? A I wanted to do something where I was working from home that I could work around childcare. And also, I felt like as a 50-year-old – 49 at the time, actually – why wasn't I represented in the lingerie marketplace? I felt like all the marketing was aimed at women in their early 20s and it was very much aimed at men too. It wasn't about feeling good about yourself.

Q How have you evolved? A We've evolved into offering pieces

including swimwear, gifts, jewellery and nightwear, which we love. Our swimwear is also ethical and vegan! Our pamper boxes are made with love, with products that we are fans of ourselves and include my delicious handmade vegan truffles. We have also seen our fans grow, I have been educating people on why they must be measured for their bras and I was even featured nationally and invited to speak on BBC London about this very important topic. We are excited about the future and empowering women to look and feel good – for themselves! Q What's the response been like from the buying public? A Really fantastic. My clients have come in to be measured in a relaxed positive

environment and gone away feeling fabulous, many saying they feel more confident. Some have invested in a whole new wardrobe of lingerie after not buying any for years! Some have come in having their first fitting with their mum and it was quite a bonding experience supporting your young daughter turning into a woman. People also love the beautiful packaging as well – and what was really important to me is that my products don't just get slung in a bag and go out. They are all boxed and wrapped and beautiful and they all go out with a little extra thing like some bath salts, or a little massage bar, or some soap. Q What are your ambitions? A I would like Liberty & Love to become

more well-known and inspire other women of all ages. I would love to see our beautiful Liberty & Love studio booked with people wanting personal bra fittings – and I know they will feel so much better when wearing the right size bra. I would like to be busy sending out as many orders as possible, knowing each customer will open

their box of items with a lovely surprise as well as great quality underwear. Q You are also a vegan personal chef and a mum of three too – how do you fit all this in? A I'm still a private vegan chef and that's something I love very much. It's something that people book months in advance, so I can fit it in quite easily because it's almost always an evening thing. I've got someone here that puts the children to bed. I may have three or four gigs in one month, but then you don't work again for two months, so both businesses actually go hand in hand quite well. Q Whereabouts in Sussex do you live and what do you love about it? A I live on the Ashdown Forest. I love it because it's open, it's green, and it's peaceful. There's a good vibe. I can walk my dogs and ride my horses straight onto the forest from where I live. I wouldn't want to live anywhere else.

first developed an interest in aesthetics when I had my first round of Botox due to deep forehead lines and wrinkles causing insecurities. The idea of helping others become more confident the way Botox made me feel confident was a career I knew I had to pursue. Q What is Botox? A The most popular treatment for both

men and women alike is Botox. Botulinum Toxin, or “Botox”, is a neurotoxin capable of blocking the signal from the nerves to the muscles. This in turn reduces the muscles’ ability to contract. Fine lines and wrinkles come from over stimulation of the muscles leaving behind “wrinkles” over time. Botox stops the muscle from doing this, therefore preventing the lines from setting in. Prevention is key with treatments, and Botox is a fantastic way of smoothing and softening lines which occur over time. The smoothing effect lasts around 12 weeks and if done well provides a natural, more youthful appearance.

A Unfortunately, the aesthetics industry

in the UK is completely unregulated. This means anyone, regardless of background, can do a one-day training course and then legally inject someone’s face. We don’t believe in taking chances and nor should you, especially when it comes to your health and appearance. When choosing to have a non-surgical cosmetic procedure, selecting the right practitioner is vital! Each and every practitioner and clinic listed on the registers has been inspected against a robust set of standards to ensure they are a registered nurse/midwife, doctor, dentist or prescribing pharmacist with specialist training and insurance in each treatment listed on their profile, they use licensed

products sourced from reputable suppliers, they have all of the necessary paperwork in place to protect you from undue risk and harm, and their practice standards meet the requirements to provide you with safe treatments, in a safe environment. Q Could you tell us what after care clients

need to consider on certain treatments?

A Most patients will be able to continue

with normal activities straight away with immediate improvement in their appearance. Some will have some redness, pin prick marks, possibly swelling and bruising particularly in the lips. Any swelling and bruising may

be more apparent the next day. Makeup should not be worn for 12 hours. Patients are advised to avoid alcohol, vigorous exercise, sunbathing, and extremes of heat or cold for 14 days post treatment. These activities have been found to increase and prolong swelling. Swelling may worsen in the first 24 hours, and then should settle within the first few days. Cold packs can be helpful in reducing swelling. As a consequence of swelling, the product may feel harder or lumpy and you may notice some asymmetry. The final result may take two weeks. Bruising may take a few days to appear. It is advisable to avoid aspirin and alcohol for 12-48 hours after treatment. Tenderness should settle as swelling goes down. Q During an initial consultation,

what sort of things do you discuss?

A A thorough consultation is carried out

before every treatment whereby goals and aims are discussed, and we can give a realistic expectation of results and talk you through the treatments best suited to the patient's case profile and desired end result. This is also a great time to ask any questions the patient may have, such as the name of the products that will be used, where the product came from and what qualifications, training and experience the practitioner has. often hear clients talking about getting fit,” says Mick, “but as a sports science graduate and former personal trainer, I try to get a deeper understanding. By focusing on what you’d like to achieve – whether toning up, building muscle or strength, improving cardio fitness, or enjoying the benefits of all-round health and fitness later in life, I can design a gym that’s going to meet your particular needs. I often see home gyms full of equipment that isn’t being used because this discussion about fitness goals hasn’t taken place.” Here are some things to consider. To improve your running time/technique, an indoor treadmill is a great option, allowing you to create and track structured programs that will accelerate your progress – and you can run whatever the weather. Supplementing this with some lower body strengthening work with free weights will help you take the impact off the joints as well as give a spring to your stride.

To tone up, High Intensity Interval Training (HIIT) is a great all-rounder, firming up muscles while burning body fat. However, be careful with jumping exercises as although they burn calories and fat they can also wreck your joints, especially as you get older. Supplementing with resistance exercise offers continual muscle tension to help turn your muscles into effective shock absorbers. A combination of cardio and functional equipment such as a treadmill or spin bike along with core bags, kettlebells, medicine balls and dumbbells is one good solution. To build strength/muscle, allowing space for an Olympic barbell and plates and a rack to use them with gives you a lot of muscle-building and strength options. Free weights, medicine balls and kettlebells are a good start but cable machines offer a greater range of power, as the resistance tends to be similar through the entire range of movement.

A quality dual adjustable cable machine can make a big difference to your sporting performance, as well as minimising injuries. It’s very important that you understand how much room you need to exercise, and to factor in space for activities such as yoga, Pilates and stretching. Most home gyms do not have the space for every single piece of equipment available, so look for machines that provide versatility. Barbells, dumbbells and cable machines are a good start. Peloton is a great brand but if you buy a Peloton machine, you are limited to the Peloton app. Is the whole family happy with this? Consider cardio machines that are compatible with not just the Peloton app but also other third-party apps including but not limited to Zwift, iFit, Les Mills and Sufferfest. Finally, make sure your gym is an inviting space. Although it initially costs more than a gym membership, you gain back time and it allows you to exercise more regularly than going to a standard gym. HEART IS Award-winning interior architect Marta Nowicka invites you inside her two East Sussex homes By REBECCA PITCAIRN

H

ave you ever pored over interior design or architectural magazines and wondered what it might be like to live in the homes that grace their pages? It’s one of those dreams award-winning interior architect and property developer Marta Nowicka believes shouldn’t be kept so far from reach. The mother-of-one, who specialises in redeveloping commercial property, buys abandoned buildings and transforms them into beautiful homes. But, rather than sell

them on when she’s finished repurposing them, she keeps them, living in them some of the time and renting them out the rest of the time. It’s a process that not only allows her to enjoy the properties she has worked on because, “sometimes I can’t quite let go,” she says, but also share her creativity with others. Creativity is in Nowicka’s blood. Considering her father was an architect and mother a fashion designer, it was perhaps inevitable that she would follow in one or the other’s footsteps. In fact, she has carved out a career that merges aspects of both her parents’ disciplines.

“My mum had her own boutique on Brompton Road and my dad had his own architectural practice in Chelsea, so it was in my DNA that I was going to do something creative,” she says. “I worked at my father’s practice for a while, but felt architecture was all a little too technical and that the design side of things was probably more my bag.” She studied for her art foundation at Kingston University before doing a BA in interior architecture – a course led by Fred Scott that focused on reusing, recycling and readapting existing buildings and ignited Nowicka’s passion for converting derelict commercial buildings. “It was indoctrinated in me not to develop greenfield sites and instead look at spaces in between, look at brownfield sites, look at voids, think about what else you can use instead of our landscape,” she explains. “It’s all about readapting use of spaces.” Among her work is a garage in Dalston, which she converted into a three-bedroom, three-bathroom home, and a former print factory, off Old Street in London, which is now her own family dwelling. However, it is the homes she has created and admits she has “fallen in love with” in East Sussex which led her to set up DOMstay&live – a unique collection of architecturally eye-catching homes available to book for a holiday or longer-term let. After initially discovering Rye with her late husband 25 years ago, Nowicka revisited the area in the late noughties and began looking for a second home away from London. “I realised there was

a huge draw for creative people there; a like-minded energy and spirit, which I found really enjoyable. So, I started looking for a project down there,” she says. That project was a former coastguard’s cottage at Jury’s Gap, which had fallen into a state of complete disrepair after years sitting empty. “It’s actually the only non-commercial property I’ve ever bought,” she explains. “Although it was, I suppose, semi-commercial as the coastguards used to work on the bottom floor.” Nowicka began transforming the fivebedroom sea-front property into a home for her and her son, Lucas, restoring its many original features, such as timber panelling, brick fireplaces and an old gun cupboard. so that nothing is wasted. For example, she has recreated the huge ambulance doors, using the old ones to provide a striking backdrop on the dining room wall. It means that while the home is now very contemporary, it retains that historic charm which runs through the heart of Rye. “Rye is a medieval town and in old medieval halls, everybody used to live around the fire. So, that’s why I built the concrete plinth in the middle of the space with a big double-sided wood burner as the focus of the room for everyone to congregate around,” she explains. “Then I’ve put in very modern windows to contrast so there’s a real mixture of languages.” The two East Sussex properties provide Nowicka with the best of both worlds. It borders MOD land and is often completely desolate so you get the entire stretch of beach all to yourself. You also get to see some incredible wildlife.

She advertises both as holiday lets and splits her time between them and another of her converted properties in London, depending on what’s available. “It is a logistical nightmare sometimes, because everything is often in the wrong place, but you do get used to it,” she laughs. “For me it’s about flexibility, and flexibility of space. Life changes all the time and it’s about embracing those cycles of life. for a new project that would place her more centrally within the Rye community. “Coastguards Cottage is lovely and tranquil, but at times it can feel very isolated, I could go a whole week without seeing anyone and I also wasn’t quite prepared for how harsh the winters could be,” Nowicka admits. So, when she discovered that Rye’s old St John’s Ambulance Station was up for sale, she snapped it up as quickly as she could. “It had been an ambulance station since the 1950s and so it was a real part of the community. They held all sorts of medical training there, but it was also a place where they’d host Friday night discos for the local kids,” she says. “Local people often tell me they remember doing their Saturday first aid course there or it was where they had their first snog!” The project was risky as it involved applying for the change of use for a building situated slap-bang in the middle of a conservation area, plus it needed a lot of work, from rewiring and plumbing to completely flattening a badly-built 1970s extension. But it was a risk that has paid off and is probably Nowicka’s most fascinating redevelopment to date. While many of the building’s features were no longer fit for purpose, Nowicka has managed to incorporate them in other ways

Make a STATEMENT How to get the most out of your bedroom’s design B y E M M A VA N S A G N E W

ou spend more time in your bedroom than any other room in the house – so it needs to be a special, beautiful, sumptuous space, somewhere where you are happy to spend private time. We all love to visit smart, expensive hotels, so why not get the look in your own home? With popular interior designers such as Kit Kemp leading the way with her bedroom designs for the collection of boutique Firmdale Hotels, upholstered statement headboards have become increasingly popular. They unapologetically hog centre stage, stealing the show and adding a touch of drama to the room. When designing any room a focal point can dictate how you decorate the rest of the space. In your bedroom, a statement headboard can be exactly that, in its proportion, scale and pattern. Large-scale florals, geometrics, theme fabrics and abstract patterns look especially magnificent; fabrics with bright colours and high contrast attract attention and make the biggest impact in your room. The idea of colour, vibrancy and bold patterns would be a fantastic focal point, but scale and shape can do the same if in a plain simple pattern and maybe a contrast piping to add a little detail can give as much impact in the room. The shape of the headboard can change the look of your room – large high headboards and lovely curves give an instant impression. They heighten the room and give it a softness at the same time. A rectangular headboard, with some added detail, such as an applied border, contrast piping, nailing or buttoning, makes for a smart and slightly more masculine look.

Twin headboards can also give a great effect, either butted together or when the beds are pulled apart. The overall effect can give the room focus; for example, a simple single arched headboard together provides a lovely gothic effect. In children’s bedrooms fun and jolly fabrics on the headboard, or primary colours with contrast piping, can really make an impact. A bedroom no longer needs to be a discreetly decorated traditional area of your home. ou would think that Biophilic design came as a response to our increased time in the home and reduced contact with nature. But this big home trend has been steadily growing for years. Biophilic design, which began in modern architecture, is about purposefully incorporating nature into our interior spaces, so we can connect to the outdoors. The benefits include increased creativity, reduced stress, quicker healing, improved mood and general wellbeing. And thankfully you don’t need to install a huge living wall or bi-fold garden doors to get the effect. Just a few simple considerations can make a world of difference.

PLANTS AND DRIED FLORALS

The 60s and 70s saw a boom in houseplants. Today, they’ve become an ever more popular way to add personality to your space (minus the lava lamp). For striking yet easy to keep varieties, try Fiddle Leaf figs, Chinese Money Plants, Yuccas, Aloe and Spider Plants. If you’re busy (and perhaps a bit forgetful), succulents and cacti will endure shameful neglect. But for real no-maintenance options, go for dried florals. ell, another academic year is over and another long summer holiday stretches ahead. School is out for everyone. Here at Laidlaw Education, we always have questions from parents about what work and activities will benefit their children through the holidays. In other words, how do we keep the young minds of our children ticking over? For the Latin scholars amongst you, perhaps the clue lies in the word, “education”. The noun “educatio” can be translated in a number of ways obviously “education”, but also “bringing up”, “training” and “instructing”. All these translations seem excellent starting points for guidance on how to spend the summer holidays. So, in answer to the question that so many parents consider, the answer is simple

– balance all the wonderful opportunities that weeks of no school can embrace. You will, no doubt, take them out and about – to the local park, to woodlands, to the seaside – and maybe, at last, to overseas destinations. Outings and expeditions do not have to be planned, children love to explore with you. It may be as simple as playing in the garden, watching a snail, chasing a butterfly, playing in the water sprinkler. All these things are “bringing up” children in the way they should go – and educating them. I have also written, on many occasions, of the need to let children get bored. In other words, have times when you don’t organise them or make plans. Days of nothing can lead to creativity. I can still remember, as a child, playing in the garden until dusk – our bare feet could feel the evening dampness of the grass. I can remember being told to “put everything away” – the bits and pieces that had formed the obstacle course. It is much the same for my own children – the dog was constantly asked

“Sailing, kayaking, pottery... There is so much around to absorb” to be an active participant in the obstacle course, and the companion in the tent! All these opportunities are the substance of childhood, and I am sure that so many of you will recall similar happy days. And of course, there are opportunities for education, hence training. Wonderful opportunities to learn how to sail or kayak or throw pottery, there is so much around to absorb young minds. It would be naive not to address academic opportunities and, at Laidlaw, we have planned a rich, creative and varied program of courses and lessons. A morning or afternoon or a few lessons each week is a good balance amongst all the other opportunities and adventures that the summer weeks will hold. The key is to present everything in a targeted and fun way and present academic work creatively. As well as courses and lessons delivered by professionals, you might enjoy a few suggestions of how to present academic work to your children. My wonderful, non-teacher husband hit the jackpot with our children one summer. He took them on local adventure walks to aid their creative writing – one daughter was taken to the fish and chip shop, bought fish and chips and sat eating them out of newspaper with Daddy, on the church steps. “Smell, taste and listen, and then we will think of all the words that we can think of to describe everything! You know Mummy wouldn’t approve, so we will tell her when we have finished!” Such is the fun of summer – and how could Mummy disapprove of that? Enjoy all that the summer holidays have to offer to your children.

Matt King, headmaster of Great Ballard School in Chichester, discusses preparing for the future on the eve of their 100th anniversary

Q How have the staff responded? A I have asked a lot of them and I am

really grateful for their energy and buy-in. It helped that our strategy was bound by very simple concepts and ones they already embraced. Our ‘Head, Hand, Heart and Health’ mantra encapsulates a promise upon which all good prep schools deliver. But our teachers have really enjoyed the challenge of extending that holistic imperative into the senior school and shaping a curriculum that will truly prepare our students for their futures.

Q What attracted you to the headship at Great Ballard? A Challenge, opportunity, potential. I’ve worked in a number of schools and this is my third headship, but the excitement I felt when I first visited was something quite new. I saw our size as an advantage and loved the inclusive family story at the heart of the school. I was impressed of course by the outstanding location and the proprietor’s ambition, but also reassured by the space, funds and energy already assigned for development. Q Great Ballard will be 100 years old in 2023. In such a historic school has change been difficult? A Let’s be clear that change is never easy. I have a clear vision of what great education looks like and it’s not possible to achieve

that goal in every school environment. A number of things here at Great Ballard have made progression possible. Importantly I took over a school that had already recognised a need for change. The plan to move to 16 was in place, staff with GCSE experience had been appointed and two million pounds invested in new property. It’s often hard to crowbar something fresh and new into a building as historic as this, but the decision to stop boarding was a pragmatic one and has opened up whole new floors for development. It’s great to know we have room to keep growing.

Q Exactly how is the curriculum different at Great Ballard? A We take longer to find our way to GCSE, not to permit more cramming and testing, but to ensure more breadth, creativity and relevance. Q What impact has the new approach had on the students? A We are still at the start of a journey, but the green shoots are there for all to see. Staff and visitors remark on growing confidence and a louder, more focused student voice. But the real fruits will be seen in years to come. We are coaxing students out of their comfort zones and THE FOREST SCHOOL

“We are coaxing students out of their comfort zones” asking them to learn both from what works and what doesn’t. To camp out in the snow as our seniors did in March, to diversify your business when Avian flu decimates your egg supply, to make lemonade from lemons (both figuratively and literally) is part of the Great Ballard experience. Q The school has been growing fast, but where have those students come from? A The speed of our growth has surprised us and we have welcomed students from all sorts of schools and backgrounds. The growth is certainly being driven by the move to 16 and there is no doubt that our unique approach appeals to many families. Great teaching, our sense of community and our core values hold a strong appeal. We are seeing healthy numbers joining us from local schools at 11+ and 13+ and some returning or transferring now that they can continue on to GCSEs at GB. Our fee structure has also made our education more accessible to families who would not have considered an independent option in

the past and are looking to bridge the gap between nurturing local primaries and some excellent sixth-form colleges nearby. Q What does the future look like for GB? A There’s lots to look forward to in the

next coming years. Our first GCSE cohort in 2023 and our Centenary that same year. The completion of work on Eartham House, turning the former boarding corridors into a senior school with 12 new classrooms, offices and common rooms. The development of the stable block and its surrounds into a new centre for Art and Design. The transformation of our Forest School area, and the launch of the GB Diploma recognising life skills. It’s easy to be impressed by what Great Ballard is and has been but, just like I felt on that first visit two years ago, it’s what it could be that drives us and excites me.

S

wimming offers a multitude of benefits for children. Aside from keeping the blood pumping through our bodies and brains, which is essential for development, those children who follow active lives are reportedly happier, healthier and smarter. But swimming is not just about encouraging good physical health, there are benefits to mental wellbeing too. Swimming can give children an immediate emotional boost and is great for inspiring body confidence and self-belief, both in terms of athletic ability and social skills. When it comes to overall health, there is no better sporting activity than swimming. From heart health, to circulation and building muscle, swimming challenges the body and helps to release endorphins, which also induces feelings of happiness. In many cases, the skills developed through swimming are also very transferrable to the classroom and to everyday learning. Anything that supports wellbeing and happiness will undoubtedly have a profound effect on a

child’s capacity to retain information and indeed their approach in class. It’s true that after a swimming session, pupils may appear more alert and able to focus more intently in lessons. This transfers to academic studies too, because even though swimming is an individual sport, it does teach self-reliance and also encourages children to push boundaries to achieve their individual goals. It’s a great form of self-motivation and certainly equips children with those vital preparation skills ahead of important exams.

JUMP IN AND SHINE

It’s no secret that the mental wellbeing and emotional health of the young has been a growing concern for schools and parents alike. Although swimming events such as relays are popular with pupils in terms of training and competing, they also have a huge impact on their social wellness. Finding common ground as a team can see different friendship groups connecting via their love of swimming. It is not uncommon to see children finding new social skills, bonding with others and creating memories and forever friendships through their love of the water. In some cases these have been children that have struggled socially, but jump into the pool and shine. Swimming teams can become a family and that water world becomes their home. Unlike some other sports, swimming doesn’t need to be about competing either, from the advanced to the beginner, anyone can develop and share a love of swimming. Fears around mental illness and anxiety in children can be a real worry and often simple activities like swimming can really give pupils clarity and focus. There are few things more uplifting and relaxing than stepping into a warm pool and swimming a few lengths at your own pace. The rest of the world stops and there is often a sense of tranquillity to be gained from being in the water. It also allows one to focus on important aspects like breathing. This, in turn, supports all kinds of anxieties and mental health issues. The water often conveys calming feelings of safety and peace.

Of course, swimming has hidden benefits too. For example, for those children that want to be football or rugby players, there is often a reluctance to engage fully in swimming related sports. However, once pupils are in the pool and learn that swimming is the best kind of fitness not only for cardiovascular health but also for their joints, it does become a lot more popular. It is hugely beneficial to all sports and for generally keeping fit because it is kinder on your body while still giving you a full-body work out. When it comes to water-based activity it’s not just about swimming either, there are so many different skills to be gained. Water polo is growing in popularity in prep schools today too. This is where children can transfer their team sports skills to the pool. Equally, fundraising swims can really help to create a sense of purpose around the pool; London to Brighton for example is something many aspire to. Younger children love the water too and often activities such as water aerobics can be fun and exciting for energetic little ones. It also means that those pupils that struggle with their strokes can participate on a level playing field with everyone else.

FINDING YOUR RHYTHM

Probably most importantly, swimming allocates time just for you. It is a break in your day where facts and figures don’t matter. It is a time where you don’t have to be up with the latest trend, it doesn’t matter if you’re not the best, the most fashionable, the funniest, or the coolest person in school. It is just a time to be you. Because it really focuses on your breathing, swimming also helps with mindfulness and meditation. Breathing techniques learned in the water can also be transferred to outside of the pool during times when you may feel anxious. Those who embrace swimming will usually find a rhythm in the pool that they can use in everyday life both now and in the future.
