T

is the season, once again. Trees are being decorated, mince pies munched and mistletoe is causing awkward moments at office parties. No matter how old I get, I can’t supress a feeling of rising excitement at this time of year; all it takes is one of those perfectly crisp, cold, clear days and the opening strains of ‘Last Christmas’ drifting through an open window and I start making plans. Luckily, our December issue has Christmas covered from start to finish. There’s no excuse for last-minute shopping this year with our gift guides in every section to give you a helping hand. Everything a traveller could want can be found on page 73 whilst a true gourmand would be thrilled to recieve anything on page 55. We have also rounded up the best cards and crackers on page 83 to make sure the festive period goes off with a bang. Sorry. Couldn’t resist. Christmas is also a time to indulge and we here at Absolutely don’t do food and drink by half measures. Recipes

way from the spotlight, 2015 has been a very big year for Teddington-born actress Keira Knightley. She recently became a mother to daughter Edie, an experience she has since described as being “f***ing extraordinary”, her film career has gone from strength to strength, and off the back of her Oscar-nominated performance in last year’s The Imitation Game, she is set to make her Broadway debut in a revival of Thérèse Raquin. She is understandably delighted with recent events, but humbly so, in that coy manner for which she is known. The girl who once played Sabé, the decoy queen to Natalie Portman’s Padmé Almidala, in Star Wars Episode I: The Phantom Menace, has grown up.

BECOMING a mother TO EDIE WAS f***ing EXTRAORDINARY It is over a decade since Bend it like Beckham was released, and Knightley is finally being recognised for her excellent acting ability. From her role as Elizabeth Swann in The Pirates of the Caribbean series, which made her name global, to other flicks such as Love Actually in 2003, Pride and Prejudice in 2005, Atonement in 2007 and The Duchess in 2008. Her most recent release is biographical disaster drama Everest, in which she plays a small but key role as the pregnant wife of one

of the guides who died on the tragic expedition. Based on the true story of the 1996 Mount Everest disaster – in which eight people lost their lives after the mountain was engulfed by an unremitting blizzard – the film makes for a nail-biting drama and a heart-breaking finale. In the film, Knightley is Jan Hall, the wife of Rob Hall, a dedicated mountaineer who lost his life when he refused to abandon a fellow climber on the descent. Having met eachother on an Everest climb in 1990, Jan Hall was an equally experienced climber to her husband. Tragically, two months prior to losing Rob, Jan gave birth to their daughter Sarah. One particularly poignant scene shows a distressed Knightley talking over satellite phone to her onscreen husband as he struggles to battle the mountain’s blizzard.

ARTS & CULTURE / PROFILE “I read several books about the climb and its impact on the survivors and it’s one of those terribly tragic stories which also says a great deal about the human spirit,” explains Knightley, while we discussed how she prepared for the role. She also spent time with the real Jan Hall to ensure she told their story as acurately as possible: “Jan has climbed Everest seven times since and she’s such a wonderfully open and strong woman.” Though most of the action in Everest takes place during the climb, the contrast between the men on the mountain and the quiet anxiety of Knightley’s portrayal of Jan Hall is what brings the reality of such a tragedy home. “Rob and Jan lived a very intense relationship and their love story is so beautiful and inspiring,” she says. “Those conversations they had are some of the most fundamental and dramatic scenes in the movie and it was such an important experience for me to be able to do them.” While the story of Everest, and the role Knightley played, is truly sad, in real life she couldn’t be in a happier place. She married Klaxons musician James Righton in 2013, and claims it has settled her and given her unrivaled confidence in who she is and what she wants from life. A change from the deep anxiety she suffered from during her rise to fame in her twenties. “It was overwhelming,” she says. “It was hard for me to understand and make sense of everything that was going on. I lived for some years in between London, where I still live, and Los Angeles. During that time my life changed completely. It became a nightmare to even take a walk. People

It’s one of the positive sides of growing older and maturing in life.” Currently living in New York with her husband and daughter while she is rehearsing for her first Broadway show, Thérèse Raquin, she remains adamant that London is her home. She was in fact born in Teddington, in the borough of Richmond upon Thames, to an actorturned-playwright mother and an actor father. The legacy and close connection The Imitation Game, 2014

to the theatre set her on this path from the tender age of six, when she first signed with an agent. After a small role in Star Wars Episode I: The Phantom Menace, it was her part in the 2002 film Bend it Like Beckham that really grabbed the film industry and the public’s attention. Very soon she was lauded as the new ‘It Girl’ of Hollywood, and conseqentually film offers began pouring in Ω from Jane Austen’s heroine Elizabeth Bennet in Pride and Prejudice, a performance which earned her first Academy Award nomination; to machine-gun-toting bounty hunter Domino Harvey in Domino. Despite her burgeoning acting career, Knightley has a reputation for shying away from the glitz and glamour of Hollywood. When she was dating Pride and Prejudice costar Rupert Friend from 2005 to 2010, the pair were often photographed around London shielding themselves from the flash of the paparazzi camera. Rarely seen on set without a book in her hands, Knightley is an avid reader and has a slew of authors who she follows “with a passion.” She also starts every day by reading a newspaper to make sure she is up to date on current affairs. Knightley has also become a fashion icon. She’s graced the cover of many magazines and is the face of Chanel’s fragrance, Mademoiselle. One of the most recent adverts sees Knightley zoom around Paris on a motorcycle in a Chanel beige jumpsuit. She has jumped from the rigs of pirate ships and hunted dangerous criminals, but Keira Knightley is as human as the best of us. As she prepares to grace Broadway in her inaugural performance she is filled with nerves. “I wanted to experience going on stage, performing live and being part of that world in every sense,” she says. “I was very attracted to the idea of being a part of this play, that is based on the novel by Emile Zola, which is a magnificent work. Also, my father has always been a great lover of theatre and still goes to see as many plays in London as he can. He enjoys watching actors like Benedict Cumberbatch, who takes time away from making movies so he can perform on stage. But I have to admit that I have some fear of taking on this role, particularly as we get closer to the opening. A men’s guide to buying lingerie for their partners and getting it right Wo r d s a b s o l u t e ly ABSOLUTELY: What is the most common mistake men do when buying lingerie? CATHERINE AUBERT: Not knowing the size of the person they are buying for. To be fair, as 70% of women wear the wrong size bra, we don’t expect the men to know any better! But for some reason, before Christmas and Valentine’s day, everybody seems to be a 34B bra and 8-10 Bottom. And trust me, most women are not. Our best selling sizes throughout the year are 32D, 32E and 34E in that order.

LINGERIE doesn’t HAVE to BE PRACTICAL all the TIME

ABS: How can they get it right then? CA: Well, they can start by having a look into their partner’s lingerie draw, and check out the size of their favourite bra and pants. Even if it is not the size they should be wearing, at least it is a size they are happy wearing. And they need ALL the information ABS: What if they don’t have access? CA: Then, a picture of the person they are buying for will be a lot more helpful to us in guesstimating the size they need then saying she is about this size whilst demonstrating with your hands. And no, she doesn’t need to be naked, or wearing lingerie.

ABS: So, what should they buy? CA: They should buy whatever they want to see their partner wear. Bearing in mind, that depending on what they buy, the items might get used a lot, or on special occasions only. Lingerie doesn’t have to be practical all the time, or just for the bedroom. Just remember that she will have to wear it, so be realistic about your expectations.

ABS: What is the most popular item men like to buy? CA: There is a tendency to think men like to buy red and black lingerie. That is not true. If they are buying for the first time, they tend to go that way, but I think it is because they think it is what is expected of them.

ABS: When is the best time for Christmas shopping? CA: We all know most men hate shopping, but that is probably because they do it on Christmas Eve! Any gift purchased between now and Christmas Eve will be exchangeable up to the 14th January 2016, so any time you can pop in will be good. We will also have a few late night openings the week before Christmas and we will be open all Sundays in December from 11.00am till 4.00pm. If you are planning on a getting her a lingerie set, I would recommend coming sooner rather than later as there comes a point when we get a very limited selection in the right size bra and matching underwear. Guilt-free cocktails for the holidays by Imbibery’s Lily & Meryl Chocolate Martini

● One cup almond milk (we use Imbibery Almond Mylk, but you can make your own – just be sure to read the label if you purchase almond milk as many have additives and extra sugars). If you’re not using Imbibery Almond Mylk, scrape the inside of a vanilla pod, use one heaped tablespoon of cacao powder and 1/4 tsp lucuma powder, then place all ingredients in blender with a handful of ice cubes. Blend quickly. Add a measure of vodka and either shake or blend for another 15 seconds. This result is a super creamy, fun, healthy take on a chocolate martini!

The No Guilt Mojito

● Chop two big bunches of mint and pour in a pitcher of water. Stir and then fill an ice tray with this mixture and freeze. Use either Imbibery’s 100% Pure Cucumber Juice or juice two whole cucumbers. Shake a measure of Belvedere Vodka with the cucumber juice. Place the mint ice cubes in a tumbler and pour the cucumber and vodka mix over the ice. Add a splash of sparkling water if you wish. Enjoy!

● Juice about 1-2 tomatoes per person, 1/4 beetroot per person, 1/4 cucumber per person, and 1/8 lemon per person. Add a a dash of cayenne pepper. Shake with Belvedere vodka. Garnish with a celery stick and sliver of cayenne pepper (their colour is amazing!). Alternatively, mix Imbibery’s Hail Mary with Belvedere and garnish as above.

his December, even if you don’t have the time to head to the Alps and hit the pistes, you can still experience the best of après-ski in the heart of Clapham. Part of Jimmy's Pop-up, the Lodge is located a stone’s throw from Clapham North Station. Ascending the unassuming staircase through the somewhat nondescript door, one could be forgiven for thinking they had the wrong place. That is, until you step into an Alpine wonderland. Benches festooned with cosy cushions, vintage skis crossed on the walls and wood and mirrors providing a forest-like effect, we really feel as if we could be on a mountain-side. We begin our meal with a cocktail – a Gentaine Mulled Wine for my companion and a Marmottes Hot Chocolate with blood orange liquer for me. These set the scene and warm us both up before our starters. I choose the scallop carpaccio with pancetta, melon and pickled cucumber. The sweetness of the melon and the saltiness of the pancetta contrast wonderfully while the scallops provide a crisp, clean-cut baseline. We can’t resist following up with the fondue (one of the Lodge’s signature dishes) and as we dip bread, potatoes and meat into the melted cheese, the feeling of warmth and gratification spreads until we find ourselves in a happy, cheese-induced haze. I order the delicious Jivara Chocolate Mousse to finish and leave having found the perfect antidote to British winter. ◆

bbeville Road boasts a delightful hub of independent shops, restaurants, cafes and delis. Amongst them sits Comensal, an exotic addition to Abbeville’s restaurant scene. Taking Mexican street food indoors, Comensal’s coloured tiles and quirky decor offer up a vibrant feel, the perfect destination to inject a bit of sunshine into the dark nights. On entering, there is a contagiously cheerful vibe amongst staff and diners and the attention to detail doesn’t go unnoticed. From the patterned tiles and intricate artworks, to the bright pink walls and spaghetti-hung light bulbs, the place managed by a charming ‘his and hers’ team is truly refreshing. The service started at the front door and felt just like a friend welcoming us in for dinner. We were seated in a cushioned corner of the restaurant, in perfect view of the dazzling bar area. Kicking things off with a bowl of tortilla chips and house guacamole, we studied the cocktail menu for a pre-dinner

drink. Tequila, of course, in the forefront of the mind, I opted for ‘The Comensal’, a cocktail recommended by our waitress. With hints of chilli, mint and lime, the combination of flavours took the edge off the tequila. A delicious mix of sweet and spice, perfect for some post-work downtime. Settled with cocktails and tortillas, I was quite content, but onto the food… The menu is packed with contemporary tacos, enchiladas, ceviche and burritos oozing with all kinds of flavours. Keeping to the luxury street food experience, we opted for the ‘Mexican Street Food’ snacks and sharers. With assistance from our friendly waitress, we ordered a selection of tasty tacos and tortillas. The assortment of bold and punchy flavours brought out to us tapas-style, transformed our table into a real Mexican feast. Head indoors this winter for a refreshing street food fix. ◆

◆ Ingredients 2½ oz / 62.5 ml gin ½ oz / 12.5 ml dry vermouth ◆ Method Stir the ingredients in a stirring or mixing glass with ice for about 30 seconds, then strain into a chilled Martini glass. To garnish, peel a strip of zest from a lemon, fold it lengthways over the drink to express the oils, wipe it around the rim, twist it and drop it into the drink.

hen looking at the evolution of cocktails from the 19th century through to the present day, it becomes apparent that the Martini has become drier over the years. It appears in Harry Johnson’s 1882 Bartender’s Manual as being 1:1 gin and dry vermouth, while a more recent book, duffy’s 1934 Official Mixer’s Manual, has it at 2:1. Later, David Embury’s classic The Fine Art of Mixing Drinks from 1947 suggests 7:1, but states that the proportions can vary according to taste. The ratio can be as much as 10:1 for the driest of Martinis, at which point you can employ the vermouth rinse - rinsing the glass with vermouth before pouring back into the bottle - or use an atomiser to spray vermouth over the iced gin.

I n g r e d i e nt s • 550 g plain flour • 1 teaspoon bicarbonate of soda • 1 teaspoon ground ginger • 1 teaspoon ground cloves • 2 teaspoons ground cinnamon • 1 teaspoon ground cardamom • pinch of ground allspice • pinch of salt • 150 g butter, room temperature • 200 g golden syrup • 100 g granulated sugar • 100 g dark brown sugar • 150 ml double cream • 1⁄2 teaspoon orange zest • icing sugar, to dust

M e th o d 1 Mix the flour and bicarbonate of soda with the dry spices and salt. Add the butter and all the other ingredients and mix until you have an even dough. It may still be sticky, but shape into a log and wrap in clingfilm and leave to rest in the fridge overnight before using. Try to resist eating the dough every time you pass by the fridge. Yes, we know it is hard not to do. 2 Preheat the oven to 200°C (400°F) Gas 6. 3 Roll out the dough thinly on a floured surface and use cookie cutters to cut your desired shapes. You want the biscuits to be thin. 4 Bake in the preheated oven on lined baking sheets – each batch will take 5–6 minutes depending on the thickness. You want the biscuits to be a darker shade of brown. 5 Remove from the oven and cool on a cooling rack. Dust with icing sugar and serve or keep in an airtight container. Serve on a pretty patterned plate. ◆

CINNAMON WREATH WITH RYE Ser ves 10-12

sometimes make this when I need a centrepiece for a big fika session or birthday party. Essentially, a big cinnamon bun with a bit of extra oomph.

I

I n g r e d i e nt s Dough: • 25 g fresh yeast or 13 g dried yeast • 80 g butter, melted • 300 ml whole milk, at room temperature • 50 g sugar • 2 teaspoons ground cardamom • 375 g white strong flour • 80 g rye flour • 1/2 teaspoon salt • 1/2 beaten egg

dough hook, or 10 minutes by hand. The dough should only just reach the point of not being sticky. Leave to rise until it’s doubled (around 40 minutes). 3 To make the filling, put the softened butter, cinnamon, cardamom and sugars into a bowl and mix well. 4 Tip the dough out on a floured surface and work it with your hands, adding more flour, until you have a good, mouldable dough that does not stick and can be rolled out. Cut the dough in half and roll

each piece in a rectangular shape (around 50 cm x 40 cm/16 x 20 in.). Spread the butter mixture evenly across the dough. Add three-quarters of the chopped nuts across the surface. Roll the dough up lengthways so you end up with a long, tight roll. Place on a baking sheet and shape into a round circle, attaching the ends. Using scissors, cut slices almost to the base. Spread each roll out to the side and flatten slightly until you have done the whole wreath. Ensure the wreath is quite flat. Let the wreath rest again for 30 minutes under a clean dish towel. 5 Preheat the oven to 200°C (400°F) Gas 6. Brush the wreath gently with the remaining egg/ milk and bake in the preheated oven for 20–25 minutes or until done. 6 Brush at once with a very thin layer of warmed syrup, then sprinkle over the rest of the nuts and keep under a damp dish towel until cooled a bit. Once cooled, make the icing using a little icing sugar and a few drops of warm water and pipe over the wreath. ◆

Filling: • 100 g butter (spreadable) • 3 teaspoons ground cinnamon • 1 teaspoon ground cardamom • 125 g dark brown sugar • 25 g caster sugar • 70 g chopped toasted nuts, e.g. almonds and hazelnuts Topping & Brushing: • 1/2 beaten egg mixed with a dash of milk, for brushing • Syrup (see page 150) • icing sugar and warm water • piping bag fitted with a plain nozzle M e th o d 1 If using fresh yeast, pour the melted butter into the milk. The temperature should be between 36–37°C (97–98°F). Add the yeast and stir until dissolved. Pour into a mixing bowl. 2 If using dried yeast, heat the milk to 36–37°C (97–98°F) and pour it into a bowl. Sprinkle in the yeast granules and whisk together. Cover with clingfilm and leave in a warm place for 15 minutes to activate. Pour the mixture into a mixing bowl. Add the melted butter, sugar and cardamom and stir again. Add 250g strong flour and all the rye flour, salt and egg. Mix until everything is incorporated. Work the dough until it almost stops sticking and has a shiny surface – about 5 minutes with a mixer using a

GLÖGG is an ESSENTIAL part

of Christmas all over SCANDINAVIA.

IT’S ENJOYED THROUGHOUT the COLD MONTHS and especially on SUNDAYS in ADVENT leading up to CHRISTMAS

• 1 teaspoon dried Seville orange peel (or other orange peel if you can’t get Seville) • 7 whole cardamom pods • 15–16 whole cloves • 80 g caster sugar • flaked almonds and raisins, to serve M e th o d 1 Pour the wine into a saucepan, add the rest of the ingredients and heat to around 75–80°C (165–170°F), stirring to dissolve the sugar. Be careful not to heat it above 80°C (170°F) degrees, or the alcohol will start to evaporate. Remove the saucepan from the heat and leave to infuse for at least one hour, longer if possible.

GLÖGG NORDIC MULLED WINE Ser ves 4

lögg is an essential part of Christmas all over Scandinavia. It’s enjoyed throughout the cold months and especially on Sundays in Advent leading up to Christmas. Glögg tends to be traditionally mulled with cinnamon, cardamom, cloves and dried orange peel. This is recipe is borrowed from my sister-in-law Annika, who makes bottles and bottles of this in

Place a few flaked almonds and raisins in the bottom of your serving cups, and pour the Glögg over the mixture. 4 If you want to give your Glögg an extra kick, add a splash of either vodka, aquavit, rum or cognac to the bottom of the cups just before you pour in the Glögg. ◆

ven the most hardened traveller couldn’t climb the steps of Bulgari Bali’s breathtaking open-air reception pavilion without gawping at the panoramic view of the Indian Ocean. From the restaurants to the villas to the pool, ocean views are everywhere. Whether it’s solitude or socialising you’re after, the resort balances both options with aplomb; you could spend an entire stay holed up in your very plush villa. But, if seeing and being seen is your thing, then throw on your finest resort chic attire and head to the pool and adjoining lounge bar to be at the heart of it all.

THE ROOM

T

here are no rooms at this resort, only villas, all with ocean views and plunge pools. And although villas are built close to each other, we feel a remarkable sense of privacy in ours, thanks to an intelligent design feature that encloses a very spacious outdoor living room and pool area within a high-walled lush garden setting. Inside, we love the dramatically dark bathroom with its black Terrazzo floor, glass walls and inviting sunken bathtub, which takes centre stage. As standard, leisure concierges are on hand to help with activities like market tours and day trips to neighbouring islands. But don’t

pack too much in: the area is known for its stunning sunsets, so you’ll want to be sitting comfortably on the villa patio, aperitif in hand, to witness the magical sight.

THE SPA

A

n imposing antique Joglo house, transported all the way from Central Java, signals your arrival at the spa’s reception. Inside, a breezy courtyard leads with a serene pond and walkway lead to an open-air relaxation lounge, yoga pavilion and swimming pool. With its mesmerising unspoilt ocean views, my semi al fresco clifftop treatment room is an experience in itself. But this spa isn’t just style and no substance. The Bulgari Balinese massage is positively blissful, as is the longer and

I

t doesn’t get any fresher than the winning combination of grilled seafood and a bracing ocean breeze at beach restaurant La Spiaggia, located under the cliff and charmingly accessed via a funicular railway. The resort’s all-day dining space, The Sankar, has prime position on a cliff edge and window seats overlook the island’s shores, so make sure you arrive early at breakfast. Naturally, given the Bulgari brand heritage, there’s also an Italian restaurant. Open only for dinner, Il Ristorante, with its pretty open air pavilions and ornamental lake, offers a fine dining experience. We were blown away by the elegant degustation dinner. Opt for the wine pairing menu option and request a table at the front, which affords a stunning view of the surrounding seascape. ◆

Y

ou know you’ve entered the realm of the sublime when you check in to an Aman hotel. And Amandari is no exception. Set among verdant fields of green rice terraces close to Bali’s spiritual and cultural heart of Ubud. Amandari channels a very different feel to the beach resorts that most people associate with the island: This inland retreat is an enchanted wonderland filled with lush green flora and fauna. Airy communal areas and 30 thatched villas are connected through an artery of pebbled walkways and beautifully landscaped rounds adorned with shrines and ponds. Our experience begins on touchdown at Denpasar airport, where a representative of the hotel meets us off the plane and fast-tracks us through security into a waiting car. After an hour’s drive, we turn off at a discreet entrance, making our way down a long foliage-lined driveway and into a charming walled Balinese village. Following a warm greeting by friendly staff, we are whisked off to our villa. The whole process is seamless from start to finish. Because service is paramount at Amandari; the perks of your stay include a return car service into Ubud whenever the mood strikes, and (parents, take note) four hours of babysitting per day.

THE ROOM

E

ntered through a Balinese-style stone gateway, our spacious duplex Pool Suite is like a village in and of itself. Enshrined in a beautiful landscaped garden, the villa’s coconut wood

and teak fixtures made it feel natural and sympathetic to traditional Balinese design. Floor-to-ceiling glass doors open onto a private patio and generous private swimming pool. Televisions aren’t something you’ll find at Amandari, not that you’ll even notice, with the highwalled outdoor sunken marble bath adjoining the bathroom to sink into. Here, it’s not only the sights and sounds, but also the smells that make for a complete sensory takeover – bamboo-framed roofs feature alang-alang grass thatching that gives off a gently rustic, fresh fragrance.

THIS INLAND RETREAT is AN enchanted WONDERLAND room, sauna and marble steam room. I visit the spa just as the sun is setting, and my pleasant walk is enhanced with the sight of candles lining the path and the sound of haunting Balinese music from one of the resort’s weekly dance performances taking place back at the open-air lobby. Treatments – including my detoxing Zone Facial Massage – make use of local Balinese ingredients and range from holistic facials to traditional Indonesian treatments and a selection of massages and scrubs.

C

ommanding a spectacular view of the hotel’s infinity swimming pool and the lush green surrounding Ayung Valley, the fantastic openair teak-framed restaurant, aptly named Restaurant, offers a host of Indonesian and Western dishes for breakfast, lunch and dinner. Soothing Balinese music, performed by a gamelan orchestra positioned on a pavilion in the pool area, can be enjoyed from the restaurant or adjoining coconut palm column bar. ◆

We stay in a luxuriously appointed Garden Villa, a one bedroom double-height villa with its own private plunge pool and outdoor shower – perfect, if you can ever drag yourself out of the kingsize bed or stop twirling around in your walk-in wardrobe. Aesop products furnish the bathrooms and in-room facilities include a Nespresso machine, mini bar with free soft drinks, BOSE entertainment system and a futuristic touch-screen control panel for lighting, drapes and temperature.

antonese fine dining restaurant Cassia, designed by famed interior designer Andre Fu, is an intimate space that sits within the hotel’s colonial building and is well worth a visit for its refined take on haute Cantonese cuisine. We sample its exquisite weekend dim sum brunch and are blown away with its quality. Breakfast is taken at the seafront-facing Knolls restaurant, which transforms into a Mediterranean-inspired dining experience for lunch and dinner. And if you can pry yourself away from the pool, the outdoor daybeds at Cuban-inspired Bob’s Bar are the only place to be in the evening. ◆

et amidst the unparalleled natural beauty of the Lake District, Gilpin consists of two separate entities located a short drive from each other. The Hotel, whose smart gravel drive and pretty facade are warmly lit at night, is instantly inviting and home to the Gilpin restaurant. The Lake House (where I was staying) is located (unsurprisingly) on the banks of a small lake and comes with charming jetty complete with rowing boats and a newly opened spa. My friend and I stayed in ‘Gertie’, in twin beds. Decorated throughout in creams and golds with views down the Lyth Valley and cosy armchairs to curl up and enjoy them from. Walking around the grounds is a treat and if you do nothing else, do take a turn around the lake. ◆

THE SPA

e spilt our meals between the Lakehouse dining room and the Gilpin restaurant and on the last day, in truly indulgent fashion, had our breakfast brought up to our room. The standard of the fare throughout the weekend was exceptional. The fillet of beef and the scallops in particular were outstanding, made with the very best ingredients and packing a serious punch in every mouthful. Another wonderful touch was the amusebouches we were brought before dinner every night. My friend, who is gluten intolerant, was served with incredible attention and was never made to feel like she was missing out. ◆

T

he Jetty Spa has not been part of Gilpin long but it is now a defining feature. Located down a small, winding path through the trees, it is an oasis of calm in what is admittedly already an incredibly soothing atmosphere. To get the full effect, I recommend trying the Jetty Spa Trail. This starts with an aromatherapy consultation where, clad in a fluffy robe, you choose the scents you want to combine for your massage oil and which will also be made into bespoke products to take home. A stint in the pool and sauna is followed by glorious massage, private afternoon tea and then champagne in on of the outdoor hot tubs. Heaven. ◆

Previously exploring food and design, this final offering filters today’s most influential art names through Farfetch’s luxury fashion lens. With so many women regarding fashion as wearable art, it seems to be a natural pairing: “Fashion and art are intrinsically linked; there is a reason why people who are passionate about fashion are usually passionate about art, too,” explains Stephanie Horton, Chief Marketing Officer at Farfetch and Editorial Director of the Farfetch Curates series. What makes a good education? Sir Anthony Seldon set out his stall at the Tatler Schools Live! Event Wo r d s A M a n d a C o n s ta n c e

W

hat makes a good education? That’s what a lot of women with glossy hair and good heels wanted to know at the first Tatler Schools Live! event in London. Described by the compere, newsreader Mary Nightingale, as “a drinks party, with headmistresses” the Tatler show brought some of the brightest stars from the educational firmament together to discuss, debate and inform. Sir Anthony Seldon, puckish as ever, set out his stall for why former independent school pupils have become dominant across society. This is not because of their academic achievements, he argued, but because their grounding in so-called soft skills prepared them well for 21st century jobs. “If it’s not tested, measured and examined, it’s not education is it?” he poised in typically controversial style. Sir Anthony has often criticised the state education system, saying that its “remorseless drive for exam success” and obsession with league tables means that it’s no longer “fit for purpose”. He said – perhaps unsurprisingly given that his audience had shelled out hundreds of pounds for a ticket – that the state sector has “much to learn from the success of the British independent school model”. But Sir Anthony cautioned parents against getting caught up in the arms race that private education has become. “The best parents choose the school for the child, the worst parents choose the school for themselves,” he said. “There is something terribly wrong about parents who push their child towards a certain school – who tutor, stress and strain. An unhappy childhood will stay with you for the rest of your life,” he warned. He

academic, sporting or creative; it is the job of education to tease them out. Independent schools have embraced positive psychology. Sir Anthony described the rising incidence of mental health issues in senior schools as a “terrible malaise”. He pointed out that when he introduced well-being and positive psychology techniques at Wellington College more than a decade ago he was “blasted by the Mail and Telegraph for indulging in psychobabble”. Now techniques such as mindfulness are becoming the norm in the private sector.

The best parents

CHOOSE THE SCHOOL FOR THE CHILD, the worst parents CHOOSE THE SCHOOL for THEMSELVES revealed that his own parents had wanted him to go to Winchester, but “I wasn’t bright enough” and didn’t get in. “Mum and Dad were mortified, it took them 20-30 years to recover,” he joked. “Love is about letting people be independent, not creating a mini-me. As a head, I see it again and again.” Sir Anthony set out his (very personal) list of five things about educating people for life that he believes independent schools do well. Independent schools work with the whole child. Citing Howard Gardner of Harvard University’s work on the theories of mulitple intelligences, Sir Anthony explained that every child has extraordinary faculties whether they are

Sir Anthony has gone on record on the need for more creativity in education. He urged the audience to watch educationalist Ken Robinson’s Ted Talk on the subject of creativity and education. Character and grit. A good, modern education must build resilience for the stresses and strains of the modern world. He told the audience to turn to Artistotle because “everything we need to know about what being a good human being is was written by Aristotle (and Buddha and Confuscius)”. And finally, he dwelled upon the famous quote by American poet Henry David Thoreau: “The mass of men lead lives of quiet desperation and go to their graves with their song still inside them.” He said: “Our jobs as educators is to release that song,” he said. “As parents you must release the inner song of your child, not impose your own. Your children are not your children, they are themselves... I’m going to say something pretty shocking,” he said. “Your child will get the same grades whatever senior school they go to, but if you get the right school you’ve got a happy child.” And he left the stage to thunderous applause. u
