ARTS & CULTURE / SPOTLIGHT SK: Your new book, Inside the O’Briens focuses on Huntington’s Disease. In your opinion, what is the biggest misconception about this neurodegenerative disorder? LG: The hallmark symptom of Huntington’s is chorea. Greek for ‘dance,’ chorea involves jerky, involuntary movements. The person with HD stumbles, slurs his words, flings an arm in the air, falls out of her seat. People often assume they are drunk or on drugs. SK: You address the fact that 90 percent of people who are at risk of HD choose not to find out. Why do you think this is? LG: In part, because there is no treatment to delay the disease's progression and no cure. There’s the notion that nothing can be done about it, so why find out? Also, genetic testing for HD came onto the scene in the early 90s, before the Information Age. I think we’ll see a rise in takeup as more young adults who grew up with iPhones and Google are faced with this decision.
MIND’S EYE Acclaimed author of Still Alice, Lisa Genova shares her inspirations and challenges Wo r d s S t e p h a n i e K i n g
SK: Firstly, congratulations on the huge success of Still Alice. What inspired you to write it? LG: Thank you! My grandmother was diagnosed with Alzheimer’s when she was 85. She had progressed quite far into the disease when my family finally recognised it as something other than a normal part of aging. I kept wanting to ask her what it felt like to be confused, not to be able to access information about herself and the world, not to recognise her own face in the mirror, but she didn’t have the communication skills to answer. And I wasn’t finding answers in scientific literature or self-help books either. Everything was written from the
perspective of the outsider – a scientist, a clinician, a social worker or a caregiver. So my question – what does it feel like to have Alzheimer’s? – was the seed for Still Alice. SK: While your career is highly academic [Genova is a neuroscientist], you write fiction. Have you always been creative? LG: I think scientific research requires creativity, the ability to imagine how the brain might work and to invent a plausible molecular world. Designing an experiment that examines how the brain works takes creativity. And yet writing a novel is definitely a different skill set. The creativity involved draws from an even deeper well.

SK: Your novels investigate how families and loved ones are affected by neurological illnesses. What is your message to readers? LG: In Still Alice, I think the main message is that we are more than what we can remember, that our ability to understand and feel love cannot be diminished by Alzheimer’s. With Inside the O’Briens, I think Katie came up with the main message of the story. “Every breath is a risk. Love is why we breathe.” SK: The common thread seems to the struggle to hold on to identity. Would you consider this to be the biggest struggle of AD or HD sufferers, for example? LG: That’s certainly an enormous struggle for Alice and Joe. I think loneliness is one of the biggest struggles as well. People with AD and HD suffer so much unnecessary isolation. Who we are, how we matter, how we stay connected, how to live in the moment, how to love—these are probably the common threads in all of my books. SK: Looking forward to your Wimbledon Bookfest appearance, what can we expect? LG: I’ll talk about why I chose to write about Huntington’s disease, a bit about the process of writing this story, and what I learned about living from people affected by Huntington’s. ◆

CATHERINE HALES: You didn’t start off doing art full time, as your aim always to be an artist? BENJAMIN HOPE: Yes, pretty much. I knew from fairly young that I would eventually. My other interests were long distance running and I was a physicist, so I did that at university. And then after my PhD, I realised that it was about time I pursued what I thought was my real talent. I committed myself to pursuing a career in it, which meant going to the City. You come out of a PhD in horrible debt.
journey. I lead a sort of a secret double life when I was working [in the City] because you’re supposed to behave as if it’s going to be your career, when I knew it wasn’t going to be... CH: Little did they know... BH: [laughs] I know, on my final day I handed out my new art business cards and walked out. CH: When did you set up your studio? BH: It’s in Blackheath. It is actually in my flat. So, it’s a two bedroom flat, one of which is my studio. And now I have a lodger so actually my studio is my bedroom!

CH: Yes, I can imagine – an undergraduate degree was bad enough. BH: Exactly. No one was going to give me any money to pursue a career completely different to any other that I have done before. So, I worked for a few years and just saved as much as I could to put a mortgage on a studio flat. CH: And you saw it through? BH: Yes, it was a very exciting

CH: You live and breathe the work? BH: Yes, exactly. I literally breathe in all of the fumes. But a lot of my work is actually on the street. So, I go through long periods where I don’t do any work in the studio at all, and I am just in the street with an easel. CH: What is Observations about? BH: The title refers to the way I work.

ARTS & CULTURE / PROFILE of straight lines that form perspective. I also like chimneys and wires that cut through the sky and things like that. CH: How is the physical experience? BH: It depends on time of year. In the winter, I get painfully cold. I’ve got more and more warm kit like crazy Canadian polar explorer boots. It looks ridiculous, but when you are standing still for four hours, unless you are wrapped up warm, it gets very uncomfortable. And in the summer I do get caught out a couple of times a year getting very sunburnt.
I want to RECORD as much of MODERN life as I CAN
I always work exclusively from the subject. I never use photographs. If I’m on the street I am just painting what I see. I’ll walk around and if there’s something hooks me like a bit of light or an interesting composition, I will set my easel up and paint it. And similarly in the studio, I work directly from the subject, same with portraits. In terms of what’s in it, it’s mainly paintings of London, but also Oxford and Cambridge and a few still life and one self portrait. CH: What is it about watching things in real life that inspires you? BH: Good question. I like the bustling atmosphere of cities. And the other good thing about places with architecture is you can quite easily get a sense of depth because
CH: You never think it’s going to happen in England... BH: But it does! Apart from that it’s a lot of fun because although you’re concentrating very hard, you meet people and they will come in and out of your scene and they’ll talk to you. CH: You feature people in your street scenes, is it hard to capture them? BH: Actually, that is the hardest part of that kind of work. The vehicles and the people. Because you think someone’s eating lunch and then just as you mix the colour, they’ll go off. What you have to do essentially is get the tone and shadow from one person and then use that for the next person that replaces them. So, they’re kind of mongrels. CH: They look quite characterful. BH: I’m glad because I do find it hard. It’s important to record modern life and not ignore the fact that it’s there. People say, ‘You are going to leave the crane out, aren’t you?’ I completely disagree with that. I want to record as much of modern life as I can.
CH: What parts of Battersea or Clapham? BH: I loved Lavender Hill. There are a few paintings that I did, one looking from Lavender Hill and one looking towards it. Those were my two favourites, especially the one looking down. It took far longer than I expected it to so I got to know the local cab owner. CH: How would you describe your kind of overall style? BH: It does vary depending on what I’m doing. With my outdoor work, I try to make it impressionistic and much looser, so that you can see the brush strokes. But when I get back in the studio and do my still life, I spend 300 hours painting a cup, it’s stupid. I deliberately change my set up depending on what I’m painting. When I’m painting portraits I often use a palette knife and not a brush at all so I can use a very thick piece of paint. I aim to have three distinct styles. CH: What do you have coming up next? BH: At the moment it’s all going towards the show but throughout the year I’ve been jotting down ideas. I feel like my portraits have been neglected somewhat but my list of things to try is getting ridiculously long. CH: How do you pick models? BH: So far it’s been largely people I know but I certainly see faces that I would like to paint a lot. Next year, I hope to be a bit more brave and approach people. I would love to do some big commissions but portraits are particularly hard so I don’t quite trust myself to paint the Queen [laughs]. ◆ Observations, 12 -25 November at JP Art Gallery, 18 Battersea Rise, SW11; jpartconsultancy.com

Then again, when you debut your new luxury accessories brand at London Fashion Week, Spring/Summer ’16 had better make a statement. The former Mulberry Creative and Brand Directors, respectively, premiered their capsule collection of bags at an intimate breakfast presentation, with Hill introducing the industry’s elite to a new fashion philosophy: “I love to invite the audience into our imagination and let them share in the fun!” The brand’s name alone indicates Hill and Fendley’s significant role in dissolving fashion’s longstanding #youcantsitwithus reputation. Case in point: the emoji-like Wink and Smiley Face hardware. This playful spirit also extends to Hill and Friends’ six silhouette’d Happy range comprising glossy goat, calf and calf hair leather mini and large satchels in neon pink, leopard print, emerald green, black, toffee and oxblood hues. What could be better? Well, this: “From day one we wanted to make key styles available from the day of the presentation,” said Fendley. Ahead of the curve yet again. But, while Hill and Fendley have already made some pretty industry-revolutionising moves, will their cheeky, irreverent designs and ‘Fashion just got friendlier’ mantra bring them future success? hough winter is pretty much here, sometimes a hefty winter coat can be a little too much for our temperate British climate. Enter the shirt jacket, more commonly known as ‘the shacket’. Effectively a shirt cut from thick, hard wearing fabrics such as boiled wool, gabardine, canvas or leather, shackets ruled the runways for Autumn Winter '15. At Prada, Miuccia’s boys wore theres buttoned up beneath mackintoshes. At Louis Vuitton, creative director Kim Jones cut his from cashmere and wool in neutral shades and teamed them with tonal outer layers. At Richard James the same jackets were cut from cotton canvas and worn with suit trousers. The effect is smart without being

dressy. These shackets can be worn over smart poplin shirts to the office; over chunky heavy knit jumpers at the weekend, or buttoned beneath heavier layers when the weather really comes in. he appeal of IPL or laser hair removal for me has always been rooted in laziness. Despite craving lovely smooth legs and hairless underarms, the idea of shaving, waxing or otherwise ridding myself of this unwanted layer of insulation always seems expensive and a lot of bother for something that I have to deal with again, three weeks later. Enter the Panasonic ES-WH80 IPL Hair Removal System, the answer to if not prayer, then at least a few wishes made during particularly intense waxes. The Panasonic IPL, which can be used on the arms, underarms, legs and bikini line, uses Intense Pulsed Light to cause your hair to shed and to inhibit its regrowth. The more you use it, the lighter and thinner the hair grows back until it’s barely noticeable. For me, the advantages of this nifty handheld device are threefold. One, it can be used in the comfort of your own home. This means, no matter how hectic your schedule, you can fit in your hair-removal. he recently refurbished Hotel du Vin at Cannizaro House, which once hosted Lord Tennyson and Oscar Wilde, feels like a country retreat, with tranquil views of the sloping green banks of Cannizaro Park from every corner of the large French windows. Despite a wobbly start, with our excellent bottle of Albarei Albarino wine trembling for its life on the uneven legged wicker table, the rest of the meal proved to be more than stable. We began the meal with a rather hefty but delicious portion of chicken liver pate and onion chutney, which melted together seamlessly on toast and a warm roasted pear, walnut and Roquefort salad. Next was a mighty black pot of steaming Moules Marinières; succulently soft and with a feisty kick of white wine. We also enjoyed the Basque Piperade, a stew made with tomato and roast pepper with a hen’s egg on top, served with soft, crusty bread. The rustic, hearty consistency and spicy flourish are very warming, perfect for a winter evening. The desserts were delivered with faultless French accents: Pear Bordeleau, an delicious almond and pear puff pastry served with a trickle of custard, and Raspberry Financier, a perfectly cooked cake, light yet dense, bitter yet sweet all at the same time, soaked in raspberry syrup and drizzled with pistachio sauce. I’m already looking forward to the Boeuf Bourguignon I was eying up on the menu for my next visit. u

French Fancy
The White Onion is a very welcome addition to Wimbledon Village’s restaurant scene

imbledon Village is not actually a village. The shops and cafes in this corner of SW19 constitute a different institution: the high street. The distinction matters. Villages are cosy bastions of traditional British life but high streets are where community identity squares up to the agents of global capitalism. Implicated bystanders in the stockbroker belt choose between independent retailers and ubiquitous franchises. Man was born free and everywhere he is in chains. For this reason alone, The White Onion should be welcomed. The latest restaurant at number 67 to seek the mantle of ‘classy local favourite’ picks up roughly where its predecessor left off, eyeballing homogeneity across the street. The owners, Eric and Sarah Guignard, have form in this area – more specifically in Surbiton where The French Table has been going strong for 14 years.
Their new venture should become as popular as its precursor, especially as The White Onion has inherited young chef Frederic Duval (check out his Instagram), a man with a flare for flavour combinations. Scallops can be an insubstantial starter but ours were invigorated by parmesan. The venison’s epilogue of tamarind provided a surprising flourish that, once experienced, seems to have been inevitable. Tamarind has found its calling. The winning duo, however, was coco paimpol beans with lobster sauce. Rich and hearty, homely and luxurious, they outshone the pan fried stonebass they accompanied. Proceedings were concluded by figs with blood orange sorbet - strangely not in the promised mille feuille but perhaps the better for it - and a coconut, white chocolate and lime pave. The wine list is superb. u

Your local fail-safe with good vibes and even better food Hang out; indulge: have fun” reads the Ben’s Canteen chalkboard. Not a difficult task when you have as fantastic an atmosphere as this Battersea rest-stop. Warm, relaxed, totally cool: the unassuming corner café’s wonderfully chilled atmosphere is precisely the thing you crave on a Saturday morning. Ben’s Canteen is a safe haven for nursing fragile bodies (be they weary from the week or last night’s festivities), and its reputation certainly precedes it. With a winged pink neon heart mirror and breezy interior, the unpretentious industrial design provides the perfect backdrop to tuck into equally unfussy fare. Sunny staff promptly take your drinks order and swiftly return with silky-smooth coffees (in your choice of ‘civilised’ cup size or heavy duty mug) and mason jars of Bloody Marys for those in need of hair-of-the-dog remedies. As the outside queue starts to extend and toile de Jouy plates of Smashed Avo
arrive at the table, it’s increasingly apparent that the legend of Ben’s Canteen is true. A sourdough chariot covered in nutty, mushed avocado bears a softpoached egg and roasted vine tomatoes, where their tangy-sweet taste is rounded out by the rich, gooey egg yolk. Perhaps, though, the main star of this morning meal is the Banana Pancakes. Made on a griddle and served in generous, three tier stacks, people apparently leave if they can’t get them. Understandable, considering their fluffy state and almostmolten bananas. The pancakes’ oozey salted caramel sauce and ramekin of thick maple syrup confirm this menu option’s ‘cheat day’ status. From the (extensive) menu, we chose The Convict, comprised of English muffin, bacon, sausage, egg, hash and a wonderful creation named ‘Hangover Sauce’. Hale and hearty, this was the epitome of one breakfast cures all; the hash was a particularly nice touch. The Sweet Maria, a vegetarian option, offered sweeetcorn fritters, grilled haloumi, avocado, kasundi and lime. A more refreshing option, the fritters and cheese were the perfect base note and ensured that this leaner option was just as satisfying as the aforementioned Convict. I opted for one of the specials and was served up with undoubtedly the most delicious hot dog

Your juice and pancake go-to very café has its strengths. I travelled to Brew in Wimbledon to discover theirs and came away with a comprehensive list. Reclaimed wooden walls and glossy white tiling give an airy feel, while graffiti scrawled on the large pizza oven foretell breakfasts future. The overall impression is one of space – or it would have been if the place wasn’t packed to the rafters. After being seated, the charming staff made me feel welcome and attended to, despite their hectic whizzing from table E

to table in order to cope with the hungry horde. After browsing the menu I chose the Turkish eggs. Well-seasoned and all the better for the addition of parsley and toasted Turkish fingers – think classic eggs and soldiers with an Eastern twist. My only criticism was that the hung yoghurt somewhat cooled my egg, meaning it was a little more tepid than toasty. One of Brew’s aforementioned strengths? Their juice game is on point; the Autumn Blues Juice combines blueberries, ginger and apple to create a counterintuitively warming yet refreshing drink. The strength that lifted the whole meal, however, was the pancakes. After a recommendation from my brunch-neighbours (‘The pancakes are exceptional!’ they exclaimed) I awaited their arrival. What quickly manifested were the fluffiest, lightest pancakes I have ever had, with that barely-attainable crispy edge that pushes pancakes from good to transcendent. Crème fraîche, blueberries and syrup almost finished them (and me) off, until I realised that there were baked bananas hidden in the middle. Brunch accomplished. u Stephanie King

ABS: Your new opening in Clapham Junction will the newest addition to the family. Tell us a little bit more. BZ: We’re extremely excited about our new branch; it’s on Lavender Hill. With over 100 seating covers, 150 wines and 1,500 products, all selected by us, it’s been an incredible project. It’s in a brilliant location, close to Clapham Junction station, and we think it will be very popular with the locals. Our executive chef Massimo Grippa is from Naples and trained in some of the leading hotels in the Amalfi coast. It really is going to be amazing.

ABSOLUTELY: How was Valentina born? BRUNO ZOCCOLA: We started out as a small deli in East Sheen. We quickly picked up a reputation as the Aladdin’s cave of Italian goodies. People would come in and want to sit down and sample the food and wine so it naturally progressed into a restaurant. We rebranded and our new deli-cum-caffé-cumrestaurant concept was so popular that we opened more. We’re now opening our ninth branch in Clapham Junction in November. ABS: How do you differentiate yourself from other Italian restaurant chains? BZ: We’re authentic. What does that mean to you? It means we’re real. For real Italian food made with the love and passion of
an Italian, you have to come to Valentina. We’re family-owned and work hard to make sure that each of our delicatessens and restaurants are just right before we open another. Each one needs to be as good as, if not better, than the one before it. ABS: What are you most proud of? BZ: We’re Italian, we’re family. My nephew Fabio, a certified sommelier, is a partner in the business. He works on the procurement of our wine selection. He also looks after operations with my daughter Gabriella. We’re all a part of the same thing. We know that anyone can make a bowl of pasta but we do it properly, we don’t cut corners. All of our produce comes from Italy and is cooked and loved by Italians.

ABS: What do you think Valentina will bring to the area? BZ: Well apart from the obviously great coffee, food and wine, we’ll be offering a home and office delivery service for local residents and businesses. This will give locals the opportunity to fill their pantry with an array of items from our deli, including fresh hams, salami and cheese as well as store cupboard essentials such as olive oil and pasta. We’ll also have a catering service for private and corporate events. ABS: For anyone coming to Valentina for the first time, what dish must they try? BZ: Well, I know that from looking at me you think I’m going to tell you to eat the pasta but my favourite is the antipasto board. The meat is cut fresh from the deli so that, with a glass of Italian red wine, is delicious. ◆

GNOCCHI
With Wild Mushrooms Ser ves 4 -6
here is something undeniably comforting about little pillows of potato gnocchi. When cooked properly, they should be tender and fluffy rather than dense and heavy.

I n g r e d i e nt s • 500 g even-sized small floury potatoes, such as Maris Piper, unpeeled • 100 g 00 flour, plus extra to dust • freshly grated nutmeg • 1 egg, beaten • 30 g unsalted butter • 1 tablespoon olive oil • 2 banana shallots, finely chopped • 2 garlic cloves, crushed • 300 g wild mushrooms, cleaned and sliced if large • 75 ml dry white wine • 150 ml double cream • a small handful of fresh parsley leaves, chopped • fine sea salt and ground black pepper • freshly grated Parmesan, to serve

M e th o D 1 Cook the potatoes, whole in their skins, in boiling salted water for 25 minutes. 2 Drain the potatoes and, once cool enough to handle, peel the skins off and mash the flesh using a potato ricer or by pushing it through a sieve so it is lump-free and fine. 3 Put the flour, 1 teaspoon salt and a little nutmeg into a bowl and add the potato, mixing with the blade of a knife. Make a well in the centre, add the beaten egg and mix together until well combined. Bring together with your hands but don’t knead or you could make your gnocchi tough. 4 On a lightly floured surface, roll out the dough into sausage shapes, about 1 cm wide, then cut into 1 cm pieces. Use the tines on the back of a fork to roll the gnocchi, giving them the characteristic ridges. Put on a floured baking sheet and chill until you are ready to cook. (Cook now or chill for up to 24 hours.) 5 Make the sauce. Melt the butter in a pan and add the oil and shallots. Cook for 10 minutes. Add the garlic and fry for a further 30 seconds then add the mushrooms. Increase the heat and fry for 10 minutes until they are golden brown. 6 Add the wine and bubble for a minute. Add the cream, a splash of boiling water to loosen it a little and plenty of salt and pepper, then stir in most of the parsley. 7 Bring a pan of salted water to the boil and add the gnocchi. They are cooked once they float to the surface, about 1–2 minutes. Scoop out with a slotted spoon and divide among warmed serving bowls. Warm through the sauce and spoon over the gnocchi. Scatter with the remaining parsley and serve. ◆

BUTTER TARTS Makes 24
wonderful Canadian speciality, these tarts are a little like a treacle tart but without the breadcrumbs. Everyone I asked had their own recipe, but this is my version, simple and sweet with a rich hint of maple syrup and a hit of nuts. I like these warm with a drizzle of cream.

I n g r e d i e nt s • 250 g plain flour, plus extra to dust • 2 tablespoons caster sugar • a good pinch of fine sea salt • 100 g cold unsalted butter, cut into cubes • 75 g cold lard, cut into cubes • 1 egg yolk • 2–3 tablespoons ice-cold water FO R TH E F I LLI N G • 2 eggs • 00 g light muscovado sugar • 75 ml maple syrup • 1 teaspoon pure vanilla extract • 100 ml double cream • 60 g unsalted butter • 50 g chopped walnuts or pecan nuts • 125 g (dark) raisins • 2 x 12-hole tart pans
M e th o D 1 Mix the flour with the sugar and salt. Either in a food processor or with your fingertips, rub in the cold butter and lard until it resembles breadcrumbs. Add the egg yolk and then add enough cold water to bring the mixture together. Knead briefly into a smooth dough then shape into a disc and chill for 10 minutes. 2 Roll out on a lightly floured surface and cut out 24 discs 7.5 cm in diameter using a fluted cutter. Line the tart pans with the pastry and chill in the fridge while you make the filling. 3 Preheat the oven to 190°C Gas 5. 4 Beat the eggs with the sugar, syrup, vanilla and cream. Pour into a pan, add the butter and cook over a low heat until the butter is melted and the mixture thickens and coats the back of the spoon. Remove from the heat. Stir in the nuts and raisins. Divide between the tart shells. 5 Bake for 16–18 minutes until the filling is set and golden. Cool for a few minutes before turning out. Serve warm or cold. ◆
TROUT A LA MEUNIERE Ser ves 4
here is a surprising amount of fish in the mountains, such as fera and perch from the deep, cold lakes. These fish don’t often find their way to the UK or US, and even when they do some people seem to be suspicious of freshwater fish, fearing that they may taste muddy, which they never should. This classic dish is delicious with rainbow or brown trout, but you could also make it with sea trout when it is in season.

I n g r e d i e nt s • 4 trout fillets • plain flour, seasoned, to dust • olive oil, to fry • 30 g unsalted butter • freshly squeezed juice of 1 lemon • 3 tablespoons capers, drained and rinsed • a handful of fresh flat leaf parsley, finely chopped sea salt and ground black pepper M e th o d 1 Dust the fish fillets in seasoned flour, shaking off any excess. Heat a layer of oil in a non-stick frying pan and fry the fish until golden brown on both sides and just cooked through. Remove from the pan and set aside 2 Add the butter to the pan and allow to foam and start to become brown and nutty. 3 Stir in the lemon, capers and parsley and serve immediately with the fish. ◆

ESTERHAZY CAKE Ser ves 12–14
his beautiful hazelnut layer cake is a labour of love, but it’s worth every second. I love the way the cake looks, with its spider’s web icing. Once I got over my initial shock at how many layers this cake needed, I found it to be a simple cake masquerading as a technical challenge.
T
FO R TH E S P O N G E • 400 g blanched hazelnuts • 3 tablespoons plain flour • 9 egg whites • 200 g caster sugar FO R TH E F I LLI N G • 9 egg yolks • 200 g caster sugar • 1 teaspoon pure vanilla extract • 225 g unsalted butter, softened • 20 g unsweetened cocoa powder
FO R TH E TO P • 3 tablespoons apricot jam • 40 g dark chocolate • 3 teaspoons vegetable oil 300 g icing sugar • 1 tablespoon freshly squeezed lemon juice • warm water • 2 baking sheets, lined with baking parchment • small disposable piping bag M e th o d 1 Preheat the oven to 160°C (325°F) Gas 3. 2 Put the hazelnuts on a baking sheet and roast for 20 minutes. Cool and then blitz in a food processor until roughly chopped. Take out 150 g and set aside. Add the flour to the food processor and blitz to fine crumbs 3 In a clean bowl, whisk the egg whites to stiff peaks, then whisk in the sugar, a spoonful at a time, until you have a smooth, glossy meringue.

Fold in the hazelnut and flour mixture. Take the lined baking sheets and draw on five 20 cm circles. Divide the mixture among the circles and spread evenly. Bake for 16 minutes until golden brown and not sticky to the touch. You may need to do this in batches. 4 Make the filling. Put the egg yolks, sugar and vanilla in a heatproof bowl and set over a pan of barely simmering water. Whisk with an electric hand whisk until pale and voluminous. Remove from the water and whisk for a few more minutes then let cool completely. Beat the butter until light and fluffy, then fold in the cooled egg mixture and cocoa powder. 5 Peel all the meringues off the baking parchment. Put one on a clean piece of baking parchment on a baking sheet and spread with about one-quarter of the filling. Top with another meringue and layer up in this fashion, ending with a meringue, but reserving a little buttercream. Use the remaining buttercream to spread around the outside of the cake. Top with another piece of parchment then put a baking sheet on top. Weigh down with a couple of cans and chill for 1 hour. 6 Melt the apricot jam in a pan with 1 tablespoon water, then push it through a sieve until smooth. Put the chilled cake on a cake plate, still on its bottom layer of parchment. Spread the apricot jam over the top. Chill for 10 minutes. 7 Melt the chocolate with half the oil in a small heatproof bowl set over a pan of barely simmering water. Pour into the piping bag and set aside. 8 Whisk the icing sugar and lemon with the remaining oil, then gradually add warm water, a little at a time, until you have a smooth, spreadable glaze. Pour about half the glaze over the cake and smooth it out – don’t worry if it drips down the side. 9 You can add more glaze if you need to – you want to create a really smooth layer. Snip a small hole at the bottom of the chocolate piping bag and pipe a spiral of chocolate over the icing. Use the tip of a sharp knife to drag six lines from the centre of the cake to the outside. In between each outward line, drag the tip of the knife back into the centre of the cake to create a spider’s web effect. 10 Clean the sides of the cake with a spatula and press the reserved chopped hazelnuts around the edge. Into the

I
’ve only been to the Caribbean twice in my life. The first time was when I was 12; my family decided to hop aboard my dad’s Boeing 747 (he was a long-standing pilot for British Airways) and fly to Barbados for a week in the sun, while the second happened more than 15 years later. There was something really magical about my first experience of the Caribbean. Perhaps it was my parents' mutual adoration for this small mound of paradise in the Lesser Antilles (they spent many summers here, including their honeymoon, prior to the arrival of me and my brother) or that it was my first experience of the Caribbean. Or perhaps it was just how perfect it all was. Crystal azure seas, barbecued jumbo prawns, me with braided hair closed with multicoloured beads, body boarding, sitting up front in the cockpit as my dad brought the plane into land – every last bit of the holiday was a dream. Which is possibly why I’ve not been back, for fear of spoiling my memory of it. Until now. The invitation landed in my inbox towards the end of last year: a five-day trip to Virgin Gorda, a small isle in the British Virgin Islands. Richard Branson has a couple of islands in this neck of the woods (Necker and Moskito), Google’s Larry Page owns a neighbouring island, while Morgan Freeman has a home on Virgin Gorda, which only furthered my desire to go. I was in. The trip would take us to the ‘ultimate Caribbean retreat’ otherwise known as Valley Trunk, a private estate on Virgin Gorda, the third largest island in the BVIs. Virgin Gorda was discovered by Christopher Columbus on his famous voyage to the Americas. He spotted the undulating isle from afar and, after likening it to a pregnant woman reclining on her side, christened it Virgin Gorda, which when translated means 'the fat virgin'. Charming. The island itself is verdant, lush and

TRAVEL / WANDERLUST steep, populated by no more than 4,000 people. Some of the main tourist attractions − aside from the white sand beaches, turquoise waters and warm weather − are the prehistoric granite boulders, evidence of the island’s volcanic origin, that scatter the coastline and form bathing grottoes that fill with warm water from the sea. Valley Trunk, a 19-acre coastal estate owned by the prominent Wildenstein family, has been private since the 1980s, but since opening last year has become a key destination for those with enough spare cash to holiday in this part of the Caribbean. The Wildenstein family, who made their hefty fortune in art and horseracing, decided that while they would still use the home on occasion, they needed to keep it alive and working and so opened it up to the public. This might usually imply financial woes, but instead the rental income goes straight back into the family’s black rhino conservation farm, Ol Jogi, in Kenya. The gardens are a thing of beauty: paths are lined with palm trees and vivid borders hold explosions of hot pink and fuchsia bougainvillea. The lagoon-shaped pool is retro, but works in its environment, while the interior decor is smart 70s – though nice and clean, it could have done with a slight update. That said, there is something about the bamboo furniture, pink-and-green bathrooms and mirrored walls that works. Away from the bedrooms (of which there are eight) a couple of essential updates have taken place, the best being the newly added screening room with an HD projector and a library of films. Although exploring the 19 acres of gardens and beach is not too much of an ask to do by foot (there’s a nice jungle walk down to the beach) the resort actually has a troop of golf buggies for you to race around

CONSERVATION FARM IN KENYA the estate in. A short drive down to the beach brings you to the Bali House, which is set back from the beach and raised up on bamboo stilts. The Bali House offers great vistas out over your very own private beach, perfect for a lunch to escape the midday sun or a late night dinner before strolling on to the beach for a bonfire. There are a couple of treatment rooms below deck, but I’d recommend being super lazy and ordering a massage (or some other treatment) to enjoy in the comfort of your own room. The beach is probably one of the highlights of the estate; a long stretch of pure white sand hemmed by crystal clear Caribbean-cum-North Atlantic sea. The Valley Trunk Bay is perfect: Jurassic Park
style boulders are perched along the coast, which remains shallow until there’s a sudden dip in the seabed. I could have swapped between sun lounger and shallow bathing for the full five days, but activities were a must, and so came an afternoon of paddle-boarding, canoeing and snorkeling, enhanced by a few bottles of Carib beer. We were reluctantly torn away from our lazy beach days for a full-day excursion out on a boat. The boat wasn’t anything too snazzy, but comfortable nevertheless, and had a nice nostalgic feel in keeping with the rest of our stay. While my travel companions were more than happy to sunbathe on the bow, catch glimpses of Branson’s islands and jump into the cerulean sea, for me the offer of scuba diving was too good to pass up, particularly as I’ve never done it before. I had the chance to practice in our pool earlier that day, but being strapped and hooked up in all the apparatus, standing precariously on the side of a boat, was a different state of affairs. Not thinking too much about what lay beneath, I hurled myself off the side of the boat and into the clear water. Before long I was floating through the warm waters of the BVIs with my instructor, who had told me that we would explore for no longer than 20 minutes. Nearly an hour later, we rose for air. Diving is something I have always wanted to try. The beautiful coral, electric blue fish and (planned) diversion via an underwater plane wreck had me breathless. Back on dry land, we experienced one of the estate’s famous beach bonfires: the night began in the Bali House where we were treated to a feast of barbecued wahoo, yellowtail, grouper and red snapper; with fresh salads of rice, okra and saltfish; and some signature British Virgin Island green soup, Kallaloo, all washed down with excellent wines and a myriad of cocktails. After dinner we were escorted to the beach, where we lounged as locals played folk songs in a type of ‘scratch band’ famously associated with the British Virgin Islands. The five days flew, and while the journey home wasn’t as quick (or exciting) as the one-stop flight from Barbados with my dad, it was far smoother than expected. A swift change in St Maarten and a quick turnaround in Paris meant we were back in London 13 hours later. Barbados, Antigua and the like may be slightly more convenient to visit, but I recommend taking the extra flight – you’ll discover a whole new world somewhere as beautiful and relatively untouched as this. u Rates start from £3,850 per night based on 1-4 people. hough hardly an undiscovered area, Clerkenwell’s charm feels somewhat hidden in plain sight. Crammed with acclaimed eateries and quirky museums, there is plenty to fill a weekend. For those looking for a little retail therapy, the Clerkenwell Vintage Fashion Fair in The Old Finsbury Town Hall on Rosebery Avenue will have you feverishly rifling through racks of stunning clothes (despite not intending to buy anything, I came away with a 1980s Burberry trench coat and rather fetching deerstalker). For cocktails in the evening, there's nowhere with more character than Zetter Townhouse but before you settle in for the night, make sure to take a wander through Exmouth Market to discover its abundant and multicultural restaurants. THE BUILDING OF BATTERSEA
s demand grew, electricity companies came under increasing pressure to supply London with more and more power. In 1927 the London Power Company applied to the electricity commissioners to build a power station with the capacity to generate 400,000 kilowatts – equivalent to the total output from their nine existing stations – to supply central and west London. Big ideas need big spaces – the building alone was to cover some 6 acres! A 36-acre site south of the river known as Battersea Fields had been found – a disused area adjacent to Battersea Park, ideally situated next to the River Thames. Originally marshland, the site was once reputed to have been the venue for a duel between the Duke of Wellington and Lord Winchelsea in 1829 (the result was a draw). A storm of protest erupted as soon as the plans were announced. Building such a large structure was one thing, but building it so close to town was another. The subject was debated heatedly in the House of Commons and even the Archbishop of Canterbury got in on the act. There was serious concern that the resulting smoke might damage the
paintings in the nearby Tate Gallery and that it might have an adverse effect on the very fabric of London’s historic buildings. Two neighbouring boroughs, Chelsea and Westminster, both petitioned to have the building stopped with many of their residents worried about the smoke, noise and, not least, the effect it might have on the value of their properties. The effect that smoke might have on the people actually living in Battersea seemed to be largely overlooked – or at least minimised. At the time, Battersea was home to thousands of people working in local industry and the railways. Living conditions were poor and overcrowded with many families living in just one room. The local council were fighting hard to improve the health and welfare of their residents and invested heavily in building housing, libraries and wash-houses, including Nine Elms Baths, which was the largest covered swimming pool in Britain at the time. However, the new power station was far too important a project to allow local councils to get in the way of progress. Approval for the scheme was the responsibility of the wider-reaching London County Council, whose main concern seemed to be protecting their legal liability for the effects of smoke and dust and the

HOME & INTERIORS / EXTRACT possibility that the wells needing to be sunk could affect the water supply to the baths. There was also some concern that the laying of electricity cables would cause problems with the already overcrowded underground services in place. Their stance was that they were prepared to oppose it ‘if necessary’. By October 1927, the Minister of Health announced that recent experiments in smoke cleaning were encouraging and consent for the construction was given with the following condition: ‘The company shall in the construction and use of the said generating station take the best known precautions for the due consumption of smoke and for preventing as far as reasonably practicable the evolution of oxides of sulphur, and generally for preventing any nuisance arising from the generating station or from operations thereat.’ As a nod to public concern, permission was granted to build the station in two parts, ‘A’ and ‘B’, in case the smoke cleaning proved inadequate. The first was to be in operation within five years. Having taken years to arrive at such a major development, things moved ahead at an amazing pace. Technical specifications were immediately prepared by chief engineer Sir Leonard Pearce and the technical design developed by Manchester engineering firm S. Alliot & Sons. James Theo Halliday of architects Halliday & Agate proposed a building based on a steel framework with brickwork curtain walling – a contemporary method of construction that was used in the USA to build skyscrapers. The site was duly cleared and prepared without further delay and construction began in 1929. Meanwhile the public debate continued to rage.

he original design for the power station was somewhat different to the ‘inverted table’ appearance that we have come to know as Battersea Power Station. James Theo Halliday initially proposed a structure with nine metal chimneys in single row. When the decision was taken to build the station in two halves, this was changed to just two pre-cast concrete chimneys, one at either end of a long narrow building that was to be Battersea ‘A’ station. A third chimney was to be added with the completion of ‘B’ station and it was only when the need for gas washing became apparent that the fourth chimney was added, completing the building’s famous silhouette. The importance and impact on the general public of such a monumental building was not underestimated, and in 1930 the CEGB sought the services of Sir T

BATTERSEA Power Station HAD the APPEARANCE of a three-pin PLUG Giles Gilbert Scott, a respected architect of considerable note, to add distinction by lending his name to the building and ‘assisting in connection with the architectural features’. Given the sheer size and scale of the enterprise, it’s easy to see why they felt it necessary to safeguard their investment (and perhaps spread the responsibility) by employing the services of an established and highly respected ‘name’. Scott was not overly impressed by the basic design but realised it was too late to make major changes. Favouring the middle line between the ‘trad’ and the ‘rad’ schools of architecture, he favoured a neo-classic style to give the building a less brutal appearance. The decision to use the Monoyer pre-cast concrete system to construct the chimneys gave them their distinctive fluted finish. Scott picked up on this, adding the fluted exterior Worcestershire Blockley brick with strawberry-coloured mortar cladding and distinctive tower-like bases to the chimneys. A last minute government report added the final touch to ensure Battersea would become a distinctive part of London’s skyline by recommending that the chimney height be increased to disperse the smoke more effectively. The final height was increased to 337ft. The exterior of Battersea ‘A’ Power Station was completed in 1933 and the station startedsupplying electricity in June
of that year, even though the station was not fully brought into commission until 1935. The total cost was just over £2m! The whole of the east side of the building was left unfinished and consisted of a vast wall of corrugated iron for 11 years, awaiting the construction of Battersea ‘B’. This wasn’t started until 1944 and took a further 11 years to complete – a far cry from the speedy three years the original building had taken to rise from the ground! For several years, Battersea Power Station had the appearance of a three-pin plug, the final, fourth chimney not being added until 1955.

f the outside of the building was designed to be a statement of power, the inside was unmistakably one of opulence. This was not just a functional space but a monument to a powerful and wealthy new age. Renowned theatre designers Marc-Henri and Gaston Laverdet were commissioned to add their art deco flourish to the interior. Famous for their extravagant style, the pair were also responsible for London’s Piccadilly Theatre’s green and gold interior (1928), The Prince Edward Theatre with its unusual circular foyer (1929) and the Whitehall Theatre’s distinctive black and silver interior (1930). Marc-Henri also designed other notable interiors, including the Brixton and Finsbury Park Astorias with their flamboyant Italian and Moorish themes. ◆ I

“I
believe design and daily life are intrinsically interlinked. We live design in everything we do,” says interior designer Greg Natale. The Australian should know; he’s headed up his own, highly esteemed brand, Greg Natale Design for almost 15 years. “To me, design can be decorative and beautiful, but the way in which it improves or enriches our lives is when it’s successful,” he continues. Success should be a familiar concept to Natale, who has received multiple accolades, including 2011 and 2014’s Interior Designer of the Year at the Belle Coco Republic Interior Design Awards. What is his award-winning aesthetic?
one-trick pony; he loves to challenge himself and his team – such being the case when fitting out Sydney women’s boutique, Uscari, which he says was “aesthetically a bit of a divergence from my usual work… The industrialchic direction created an opportunity to really exploit materials and the space for decorative and functional effect.” So if this was an unusual client request for Natale, what is the designer’s typical brief? “Broadly speaking, it’s a clean, pared-back look. [Australia’s] climate and light dictates that we probably lean more towards a Scandinavian aesthetic, though we have a more open relationship between indoors and out.” Which is probably why Natale titled his first design tome, The Tailored Interior, as his use of “decorative elements is very considered and completely tailored.” Having just been

published in the UK, Natale explains how the book came about: “I’m always asked for design advice on what makes a space work... I don’t pretend to have all the answers, the book comes from my experience and the techniques and tools I employ to complete my projects.” Can he give us some tips? For an instant update, “Rugs and cushions really change a space and make it appear so different, really effortlessly.” This is probably why, in addition to his many brand collaborations, he’s also released his own cushion range (available online) comprising “21 designs: The colours range from black and white, to elegant blues, vivid greens and some warming greys and burnt orange... There is pattern, texture and so much colour to work with.” What’s next for Greg Natale? “By mid-next year we will have completed some landmark projects in Australia and the United States; our new headquarters will be complete; and we have so many exciting product and furniture lines that I can’t wait to share.” ◆

hat’s your child like with a smartphone? Does removing it feel like stealing a banana from a starving monkey? Given their addictive power over our children, what place do they have in our schools? That’s what the government’s education advisor, Tom Bennett, has been tasked with finding out. As part of a wide-ranging inquiry into discipline in schools, he’s investigating the effect of mobile phones in classrooms and whether they should be banned. Bennett says: “Technology is transforming society and even classrooms – but all too often we hear of lessons being disrupted by the temptation of the smartphone. Learning is hard work and children are all too aware of this. So when there's a smartphone in their pocket offering instant entertainment and reward, they can be easily distracted.” More than 90 per cent of teenagers now own mobile phones – the majority of which are smartphones– yet there is now compelling evidence that academic results improve when phones are banned from schools. A recent study from the London School of Economics found phone-free classrooms showed sustained academic improvement with test results boosted by six per cent. The research, published last May, found that banning mobile phones from classrooms could benefit students’ learning by as much as an additional week’s worth of schooling over an academic year. The report also suggested that banning phones would most help low-achieving children and those from the poorest backgrounds. There is currently no official government policy about mobile

One third of schools ban mobile phones outright - GCSE results at Ebbsfleet Academy in Kent have almost doubled since the school banned smartphones in 2013 - with a further fifth limiting their use in lessons; other schools allow phones on the school premises, provided they are kept on ‘silent’ all day. Boarding schools have an additional set of challenges. Heathfield School in Ascot has dealt with it by giving girls aged 11-13 old-fashioned mobile phones with no internet access, apps or camera; they can only ring or send text messages. Pupils are allowed smartphones in

Year 9 but have to hand them in before they go to bed. Last month, the head of Ofsted, Sir Michael Wilshaw, called for headteachers to ban mobile phones from secondary schools but not everyone agrees. Brian Lightman, general secretary of the Association of School and College Leaders, says: “Smartphones are powerful technologies which most people use in their working lives therefore schools must teach young people to use them responsibly. How they do that is a professional judgment.” Some schools — mostly independent — are actually encouraging pupils to bring their phones into the classroom. John Moule, warden at Radley School, says: “The use of mobile phones is encouraged if the teacher wants them used. It can be extraordinarily helpful in a lesson to have several internet searches going on or for an experiment to be videoed.” Andrew Halls, head of King’s College School in Wimbledon, says smartphones “can be a huge distraction but, like nuclear weapons, they cannot be disinvented. As schools, we have to find ways to permit them but to control them. A screenshot of the board can be a useful revision tool.” As yet, Bennett is undecided about a blanket ban. “My personal recommendation is that schools think very cautiously and carefully before allowing them.” He is concerned that children are getting access to the technology too young. “People ask me, ‘When should I give my child a smartphone?’ and I say, ‘Whenever you’re comfortable with them viewing pornography’, because their curiosity will take them there. “My personal belief is that I don’t think a child should have a smartphone until they are 16, unless it is under adult supervision.” ◆

I
started working in the property industry at the tender age of 21 when the central London property market was an appealing and somewhat daunting prospect. I loved the idea of having freedom, of not being tied to a desk, or stuck in an office all day. It always struck me as being a sociable job with opportunities to form relationships and see a lot of London in the process. And despite my relative ignorance to the corporate world my perceptions were, in the most part, accurate. I have worked all over central and west London in the 13 years since, from Chelsea to Chiswick, and I have learned so much about our great city thanks to that exposure – not only in terms of property but of people and culture, too. In writing this article I tried to approximate how many transactions I have been involved in over that time and it is close to 500 – a number I can hardly believe looking back on it.

And yet while there are certain houses or deals that stick in the mind, the lion’s share of my memories are of the people, not the properties. People of all ages and all walks of life, buying or selling for every reason imaginable and all with their own story to tell. With each transaction and interaction you become a little wiser. There is something to learn from everyone, in everything we do, and I truly believe that there is no substitute for experience. Being able to thrive in a sociable environment is quite something; I consider myself to be very lucky. It was almost a year ago to the day that we opened the doors
to our new office in Clapham Old Town. Situated in the charming surroundings of the leafy streets and handsome Victorian houses, it is a wonderful place to work. The past year has seen us successfully hosting Summer Fetes, Village Fairs, a stall at Venn Street market, a charity garage sale and helping to sell Christmas trees. In 365 days we have given away 2,000 mini Rugby balls, written 10,000 words in the local press, eaten hundreds (!) of Club Sandwich’s from 32 Old Town, competed in three quizzes at The Bobbin, and swam 21 miles across the English Channel (well, one of us did!). We also found the time to add a little more experience and put some deals together: Knight Frank has sold £65m worth of property in SW4 alone and has seen applicants from over 100 different countries view properties for sale in Clapham via our website. That’s a lot of people and a lot of stories. u

WOW-HAUS The ‘German spaceship’ has landed
I
t would seem that we cannot get enough of Huf Haus, the pre-fabricated German homes made famous by the Channel 4 TV series Grand Designs. The company recently built its 200th in the UK and yet, such popularity is hard to fathom. The Huf Haus does not fit the accepted norms for a classic new-build luxury home. As London’s leafier suburbs bear witness, these tend to be Georgian, Victorian or Arts-and-Crafts influenced designs.

Just how much the Huf Haus is a design departure can be seen at the company’s new showhouse overlooking the Brooklands motor racing circuit in Surrey. It’s a fitting place to have built it – Huf Haus is the Audi of house building as the company delights in embracing both Vorsprung (‘progress’) as well as Technic. The latest great leap forward, as featured within the show home, is insulation so efficient that the property has zero fuel bills, the company claims, helped by a heating system that runs off the power of melting ice. The Huf Haus is also popular because it is so modular. Peter Huf, chief executive of the company, says: “The layout of the property safeguards absolute flexibility and while a family might outgrow a standard family home, the layout of the HUF accommodates growing families and their changing needs.” But it’s the speed of their construction that has made the Huf Haus a growing trend. A traditional build can take a year or more and requires an architect, designer,
planning consultant and an army of builders. A Huf Haus normally takes only a week to make watertight, 12 to 14 weeks to fit out and just a handful of technicians to build. The company has been heading up Europe’s ‘pre-manufactured’ home revolution since the early 1960s and it now exports to China. But Huf Haus got its big break here back in 2003 when Channel 4’s TV programme Grand Designs featured Greta and David Iredale, a retired couple who were building a four-bedroom Huf Haus in Waltonon-Thames. Overnight the fortunes of the company were transformed, helped by presenter Kevin McCloud’s ecstatic marvelling over the ‘German spaceship’; its engineering quality; the ‘construction superheroes’ who put it up and the fact that it took just four days to build against a six-day schedule.
There is just one downside to the Huf Haus – the expense, which can work out more than a traditional build. While the entrylevel Huf Haus, the Modum, costs approximately £300,000 to build the bigger Huf Haus designs start at £500,000 – and that’s excluding the cost of the land. But the good news is that, once built, a Huf Haus can be worth 5-10% more than its traditional counterpart of the same size, making up for the extra construction cost. u For more information visit

While it’s true for some, data from removals website ReallyMoving. com suggests that for others it’s done in stages. So, firstly it’s a more modest relocation out of central London into areas that are part rural, rather than all-in Barbour. Rob Houghton, the website’s
chief executive, says that the KT postcodes are the most popular with South West London first-time escapees. This includes both the semiurban areas of Kingston-uponThames, Worcester Park, New Malden and Walton on Thames but also the almost-rural Epsom, Ewell and Ashtead. So if you live in Battersea, Wandsworth, Clapham and Putney, what sort of value do these areas offer? u

Commuters in Epsom have been getting excited recently after it was confirmed that its station would be included within Zone 6 – making it an Oyster card town, at last. The rail commute from Epsom into London is only 35 minutes long even though it’s outside the M25. House prices are great value despite Epsom’s racing pedigree and Surrey location. And particularly so between Epsom station and Ewell East – whose homes are 42% cheaper than in Clapham, for example.
