hen I was five years old something magical happened: Miracle on 34th Street was released on the silver screen. The iconic film sees Richard Attenborough playing St. Nick. He is wrongly accused and imprisoned for ‘assault’, until a thick-fringed little girl, dressed in shiny Mary Janes, helps to clear his name. This film, for me, epitomises Christmas, and I've watched it every year since in the run up to December 25th. I also re watched the film a few months ago to get me excited about an imminent trip to New York City. Keeping that Empire state of mind, in mind, in this month's issue we take a trip stateside to discover the magic of the Big Apple. We also head to mountains nearby for a luxurious ski break. Turn to page 74 for our New York special. With movies in mind, we grab a moment with London-born actress, Rosamund Pike, who opens up about playing a psycho in Gone Girl, acting ambition and showering with Batman. The Rise of ROSAMUND From London schoolgirl to Bond Girl and beyond. The dramatic rise of Rosamund Pike Wo r d s S H A U N C U R R A N
A
classic beauty: Rosamund Pike made a spectacular debut in the world of movies by playing the glamorous Miranda Frost in Die Another Day; the Pierce Brosnan Bond film that propelled the then 21-year-old actress into a life of fame and fortune. Moviegoers were captivated by her glacial, Hitchcock-blonde looks and classic British accent. Her eloquence was initially taken with scepticism, seeing the general public stereotype her as a “really posh English woman, when really I am just a bit of a wild girl from London.” This didn't last, with Pike scoring the lead in the epic new thriller, Gone Girl. The early typecasting that resulted from her successful stint as a Bond Girl, set Pike on her path to Hollywood. Since Die Another Day, Pike has landed roles in acclaimed hits, such as Pride and Prejudice and Made in Dagenham. She has also worked alongside some of the biggest names in movies, including Tom Cruise, Jonny Depp and Ryan Gosling. Most recently, Pike has been under the
guidance of David Fincher (the esteemed producer behind the super successful Netflix series, House of Cards, as well as The Curious Case of Benjamin Button and The Social Network) who was in the director's chair for the film adaptation of Gone Girl, which is based on the bestselling novel by Gillian Flynn. Like the book, the film is a mystery thriller in which Amy Dunne (Pike) is married to Nick Dunne (Ben Affleck) and is already topping the international box office. It has garnered widespread acclaim, alongside its fair share of controversy. While both Pike and Affleck have been praised for their performances, the narrative of Gone Girl has prompted a slew of newspaper think-pieces, as well as a huge reaction on social media, with thousands of people debating whether the movie is a brilliant example of feminism in action, or a horrifically negative depiction of the female psyche. The seemingly perfect wife, Amy Dunne disappears, revealing a much darker side to her seemingly perfect life. That said, Pike's off-screen life has been almost as dramatic as Dunne’s.

Pike is currently pregnant with her second child with partner Robie Uniacke; the latest installment in a love life that has seen Pike endure two serious heartbreaks. She met and fell for her first love, fellow actor Simon Woods, whilst they were studying at Oxford University, but after two years together – which included an engagement – Woods declared he was gay and went on to marry Burberry’s Creative Director, Simon Bailey. Pike remained on good terms with her ex, and even acted alongside him again when the pair were cast as lovers Jane Bennet and Charles Bingley in Pride and Prejudice. Pike then fell in love with the director of that movie; Joe Wright, which was quickly followed by plans to marry. But after a falling out over some minor wedding details, he called off the wedding. After meeting Uniacke four years ago, who is 18 years her senior and twicedivorced, Pike seems to have at last found happiness. Their first son Solo was born in 2012 and they are currently expecting their second child any moment now. “As soon I finished Gone Girl I thought to myself, I need to go and make a human being now,’” she smiles. Pike’s calm demeanor makes it impossible to imagine her ever behaving like Amy Dunne, even in her younger, wilder, West End days. “Never!” she says with a laugh. “I was never that cool girl. I remember when I was reading the book; I had a strong feeling when I started reading about Amy, because I'd been asked to like this girl but something made me really uneasy about her. I sort of didn't ‘buy it’. It's so funny, because of course Gillian Flynn, the author, had put her finger on the pulse of

GONE GIRL I thought to myself, ‘I NEED to go and make a HUMAN BEING NOW’ this notion that if a woman is more free and easy she will get the guy she wants. If she stays up until five in the morning and drinks bourbon and doesn't sleep, but can still look hot in the morning as well as eat junk food, yet somehow still manages to get into her size four dress, that'll do it. There is a juggling act behind all of that in order to maintain the image, and it's an interesting concept.” Despite her self-professed squeaky clean lifestyle, Pike enjoyed taking on the role of Amy. “It was really fun to be able to be every kind of woman that you can put out there, and know that she's veering on palatable, compelling, confounding; all those things in one person.” Knowing that she was starring next to the new Batman made it all the more fun; her co-star Affleck has been cast as the protector of Gotham City in Batman vs. Superman, and began his training whilst still filming Gone Girl. “Ben was working out during the shoot and he was becoming Batman before my eyes,” she smiles. “By the time we were in the shower scene, I was with Batman!” Born in Hammersmith on 27th January 1979 to opera singers Caroline and Julian Pike, she

was immersed in a culturally rich environment from the word go. Acting was soon “all I wanted to do, from about the age of 10, and I made that very clear to everyone,” she recalls. Boarding school and a place at the University of Oxford were, in Pike’s opinion, only taking up valuable time in her quest for stardom: a turn as Juliet in Romeo and Juliet at the National Youth Theatre reminded her where her heart truly lay. “I auditioned for so many parts after [playing Juliet], but I couldn't find another one! ith cold weather come the obligatory roll necks, thick knits W and long scarves. For me, it’s also time to go back to my roots. For the past three consecutive summers, I have transformed my hair with subtle ombre or balayage, by progressively adding blond touches to the tips, while each autumn returning to the dark side. Sticking to tradition, it was time to get my hair looking healthy for winter. Camerini were my salon of choice: well reviewed, local and independent. Located just up St John’s Hill, Camerini is the kind neighbourhood salon most people would love to have, a place where the cuts are good and the staff are efficient. My stylist took time to listen to me, “I just want it to look natural,” I said, pointing to my roots and flashing a picture of Alexa Chung's über chic mid-brown locks. My natural colour is a mid to dark brown, with natural caramel and auburn hues, much like Miss Chung's. The stylist used Joico hair colour and treatments, a brand dedicated to “pushing the boundaries of technology to improve the performance of our products in the salon and at home.” The Chrome semi-permanent colour was natural brown and was simply painted onto my hair, left for 20 minutes then washed off. This quick colour conversion was followed by the intense Joico Protein treatment, a swift trim and blowdry. I walked out of Camerini the happiest I have walked out of a salon in a long time. Good job, Camerini, good job. ◆

THE PERFECT ROAST 01 Quarter an onion and core a Cox’s apple. Place these in the body cavity with a sprig of rosemary. Only ever stuff from the neck and fill it full of sausage meat and sage. 02 Cook the bird on its back until the last half an hour of roasting. This will keep the breast meat succulent while the brown meat cooks evenly. Insert Copas’ heat-activated pop-up timer into the breast and only remove the turkey from the oven once this has popped-up. 03 For homemade gravy, boil the vaccuum-packed giblets provided in water with celery, carrot, sage, rosemary, parsley, bay leaf, pepper and salt for a couple of hours. Once the turkey is out and resting, transfer this stock into the baking tray and scrape off all the delicious caramelised flavours from the bottom of the tin.
THE SKILLFUL CARVERY 01 Once the turkey has been rested, hold the leg by the knuckle and twist while slicing along the space where the leg meets the body. Once removed, slice large pieces of meat away from the drumstick. To do the same to the wing, simply slice through the joint and pull. 02 For the breast meat, slowly follow the breastbone with your knife and carefully cut from one side at an angle. Cutting along the grain of the meat will make the most out of the turkey and result in evenly succulent slices. 03 Every turkey has an extremely tender and juicy round piece of meat hidden in the middle of its backbone. This is called the ‘oyster’. To locate, place the turkey on it’s back and poke around – it’s a bit of guess work but dig in and it should pop out. ◆

t’s not every day a Spanish waiter can convince me of the elegance inherent in a cocktail honouring the adult entertainment industry. Then again, it’s not every day Clapham can be called a hotbed of culinary innovation. Zumbura, the latest Indian eatery to land in SW4, manages to achieve both. Three former furniture retailers have turned a slice of Old Town into a delicately dazzling gem. Aamir Ahmad, Sean Galligan and David Garrett (if they sound familiar, it’s because you almost definitely own a piece of their Dwell furniture) have fulfilled Aamir’s lifelong dream of opening a restaurant that serves the food he grew up eating. Their secret weapon? A menu of recipes passed down
through generations of the Ahmad family, Raju Rawat in the kitchen - fresh from 15 years at stellar Indian eateries Benares, Cinnamon Club and Bombay Bicycle Club - and a cocktail list to boot. Several tables were already full as we took our seats at the bar, an intricately carved wooden beauty cut from a single oak that runs the length of the room. We kicked off with cocktails - fruity wallahs (Bacardi, mint, lime, apple and lychee juice stirred with chaat masala - yes, chaat masala) and the signature Zumbura martini. Fragrant, refreshing twists on Western classics, both packed a serious punch. Menu-wise, Zumbura leaps aboard the sharing-plate bandwagon, but again adds its own twist: enough food to stem

the panic of not getting enough food. And boy, what food it is. Spiced potato cakes and fresh, crispy pakora start the meal. Both are exquisitely cooked with none of the grease that is so often associated with Indian starters. On to mains - sikkiwe lamp chops, twice marinated in herbs are an aromatic, finger-licking riot, cooked to tender perfection. Spiced mutton with peas is understated, whilst the beef kofte meatballs are a rich, velvety sensation. This is grown up comfort food at it’s best. Hari murghi chicken, dryer than it’s counterparts, left a little to be desired, and the dahl was too runny for our liking. Desserts are the Indian restaurant’s Achilles heel, and Zumbura makes a valiant effort to shift perceptions. It’s a mixed bag of knockout triumphs - rose milk kulfi and pistachio ice cream will have you closed-eyed with joy - and a bravely bizarre failure in the gajjar ka halwa. A creamed carrot pudding, served warm, and I couldn’t seem to get past how similar it looked to cat food. Overall, Zumbura proved informal, laid back and insatiably quirky, both in food and atmosphere. pyramidal cusps and its black brown flesh with white veins. It has an intense smell and is often used in haute cuisine. Black truffle is better to cook with, but can also be grated raw onto dishes. Bianchetto Truffle (Tuber Borchii Vittadini) is a white spring truffle found from January to early April. It has its own distinctive flavour milder than the Magnatum Pico and is best shaved on fresh pasta dishes. Tartufo Bianco d’Alba (Tuber Magnatum) white truffle is the most expensive, rare and sublime of the truffle species. The most prized of these comes from Piedmont in Langhe, around the town of Alba with its annual Truffle Fair. The intensity of the flavour of this tuber is such that 2 to 3 grams are enough to make a simple butter tagliolini or Parmesan risotto an unforgettable experience. With such flavour comes an unforgettable price, which can range from £2,500 per kilo to £5,000 per kilo depending on the quality and availability of the season. ◆

ruffle or Tartufo in Italian (derived from the Latin T Tuber) is a mushroom that grows underground on the roots of trees such as beech and hazel. Since antiquity the truffle has been a highly prized luxury. In Ancient Rome Plutarch and Juvenal noted that these fungi resulted from the god Jove throwing bolts of lightening near an oak tree. Because of this belief, it was also thought to have aphrodisiac qualities. Although modern science has rendered this myth untrue, due to its rarity and flavour, the fungus remains one of the most cherished delicacies in the world. It is important to know your truffle, as the price will vary from £ 150 per kilo to £5,000 per kilo.
That begs the question, which truffle? Tartufo Estivo (Tuber Aestivum) and Tartufo Nero Scorzone (Tuber Uncinatum), are two similar varieties of black truffle, perhaps related, most widely used in restaurants due to their versatility and relative value. Estivo harvested from March to September has a mild hazelnut flavour, pale flesh with grey veins. Nero Scorzone, similar in appearance is collected from October to February and is particularly good in sauces with game. Tartufo Nero Pregiato (Tuber Melanosporum), also known as black Périgord truffle, is the king of the black truffle. Found in late autumn, it is distinguishable from the other varieties by its black-brown skin with small

Three-Bird Celebration Roast S erves 1 0 Takes 5 h ours • 5kg (11lb) goose, tunnel-boned • 1.3kg (3lb) chicken, tunnel-boned and skinned • 1 pheasant, tunnel-boned and skinned • 25g (10oz) flour
For th e stock • Bird bones from butcher • 2 carrots • 2 celery sticks, cut in half • 2 onions, peeled • 1 bouquet garni
For th e stuffi n g • 1kg (2lb 4oz) pork sausage meat • 3 shallots, peeled and diced • 2 garlic cloves, peeled, crushed and diced • 4 apples, peeled and grated • Zest and juice of 2 oranges • 1 tbsp chopped sage leaves • 1 tbsp chopped parsley • Sea salt • Freshly ground black pepper
ME T HO D 01 First make the stock. Place the bones in a pan and add the carrots, celery, onions and bouquet garni, cover with water and simmer for 1 1/2 hours. Strain discarding the solids, then simmer the stock again to reduce to about 750ml (1 ¼ pints).

03 Fill the pheasant with a small amount of the stuffing and place inside the chicken. Carefully insert a layer of stuffing between the pheasant and chicken. Place these two birds inside the goose, then insert the remaining stuffing between the chicken and goose, working it to recreate the shape of the outer bird. 04 Secure each end with a couple of skewers to keep the stuffing inside.

02 Meanwhile put all the stuffing ingredients in a bowl, add seasoning and mix thoroughly by hand.
05 Preheat the oven to 180°C/350°F/gas mark 4. Place the three-bird roast in a lightly oiled roasting tin, cover with a foil tent and cook for 3 hours and 20 minutes, checking and basting a couple of times. Remove the foil and roast for a further 40 minutes so that the skin can crisp up. 06 When cooked through, transfer the roast to a warm serving plate, cover and keep warm for at least 25 minutes before carving. 07 Meanwhile, make the gravy. Sprinkle the flour into the roasting tin and blend until smooth. Place over the heat and slowly pour in the stock, stirring constantly until boiling and just thickened. Season and serve hot with the three-bird roast. ◆

Indian Roast Game Birds S e r ves 4 - 5 Ta k es 1 ho ur p l us o v e rn igh t m a r i n a ti n g I n gr e d i e nts • 4 small game birds e.g. pigeon, partridge, pheasant • 1 tbsp oil
F or th e Marinade • 6 cloves • 1 ½ tsp ground cinnamon • 2 tsp ground coriander • Generous grating of fresh nutmeg • 1 tsp turmeric • 2 tsp ground cumin • 8 cardamom pods • 2 tsp cayenne pepper • 2 tsp sea salt • 5cm (2in) piece of fresh root ginger, peeled and roughly chopped • 5 garlic cloves, crushed, peeled and roughly chopped • 200ml (7fl oz) natural yoghurt • Zest and juice of 1 lemon
ME T HO D 01 First make the marinade. Put all the spices and salt in a blender and whiz together until all finely ground. Add the ginger, garlic and onion and whiz again until you have a paste. Finally, blend in the yoghurt, lemon zest and juice. 02 Skin the birds and cut in half along the breastbone and then the spine. Cut these pieces in half and score 3 slashes in the flesh of each piece. Place in the marinade and stir to coat thoroughly. Cover and place in the fridge overnight. 03 Remove the chilled game from the fridge at least 1 hour before starting to cook, so it can come up to room temperature. Preheat the oven to 200°C/400°F/gas mark 6 and heat the oil in a large roasting tin.
Roast Duck With Cherries
04 Arrange the game in a single layer in the tin and place at the top of the oven. Cook for 8-10 minutes, then turn and cook for a further 8-10 minutes. Serve with spiced rice, a tomato, onion and coriander salad, and naan breads. ◆
Cherries will be out of season over Christmas but don’t feel ashamed to use a tin of cherries to add a juicy sauce to this simple but delicious roast duck.
S erves 2-3 I N G RE DI E N TS • 2kg (4lb 8oz) Yorkshire duck • Sea salt • Freshly ground black pepper • 200g (7oz) cherries, stoned • 50ml (2fl oz) Port • 75ml (3fl oz) chicken stock • 4 sprigs of thyme • 2 tbsp Ginger Pig Redcurrant jelly
ME T HO D 01 Preheat the oven to 180°C/350°F/gas mark 4. Trim the duck of any excess skin and remove the fat from the inside cavity at the neck end. Jab the duck all over with a finepronged fork to help release the excess fat while cooking. Season well and place the duck on a roasting cradle over a roasting tin. Cook in the oven for 1 ¼ hours. 02 Increase the oven temperature to 220°C/425°F/gas mark 7 and roast for a further 20 minutes until the juices run clear when the thickest part of the leg is pierced with a skewer and the skin is crispy. Remove the duck from the oven and leave it to rest in a warm place for 15 minutes. 03 Remove the excess fat from the roasting pan with a metal spoon and pour the cooking juices into a saucepan with the cherries, Port, stock, thyme and Ginger Pig redcurrant jelly. Bring to a boil and simmer to reduce by half. Add any juices that have come from the resting duck. Carve the duck and serve with the cherries and juices. ◆

ME T HO D To make the pastry, sift the flour into a large bowl. Melt 50g (2oz) of the butter and mix with the salt, vinegar and 230ml (8fl oz) of ice cold water. Add this liquid to the flour and mix to a smooth dough. Cover in Clingfilm and place in the fridge for 1 hour. 01
I N GR E D I E NTS • 550g (1lb 4oz) minced pork • 175g (6oz) pork fat, minced • 100g (3½oz) breadcrumbs • 2tsp dried mixed herbs • 1tsp chopped sage • 150g (5½oz) stilton cheese, crumbled • 50g fresh cranberries • Sea salt • Freshly ground black pepper • 1 egg, beaten (for brushing the pastry)
F or th e past ry • 600g (1lb 5oz) very strong white flour, preferably ‘00’ • 450g (1lb) chilled butter • Pinch of salt • 2tbsp white wine vinegar
02 Place the remaining butter between 2 sheets of Clingfilm and roll it out to the thickness of your finger. On a lightly floured work surface, roll out the chilled pastry to a rectangle just over twice the size of the butter. Place the butter in the middle and fold the sides of the pastry over it. Roll out again to a rectangle the same size as it was before the butter was added, then fold in thirds. Roll out once more, give it a quarter turn and fold in thirds again. Cover in Clingfilm and chill for 1 hour. Repeat the rolling and folding 4 more times, adding a light dusting

of flour each time, then wrapping and chilling as before. Leave to rest in the fridge overnight. 03 Combine the pork and fat in a bowl. Add the breadcrumbs, herbs, cheese, cranberries, seasoning and 125ml (4fl oz) of water. Mix with your hands until evenly blended. Chill overnight. 04 Preheat the oven to 180°C/350°F/gas mark 4. Roll the pastry out to about 40 x 30cm (16 x 12in) and cut it into 3 lengthways strips about 10cm (4in) wide. Work the sausage meat into a long roll as thick as your thumb and place along a strip of pastry. Brush the exposed pastry with egg, then roll over and crimp the edges. Repeat twice more. Brush with egg, place on a baking sheet and bake for 50 minutes. ◆

Her business, Absolute Taste, is based in Wandsworth town and has been there for 15 years. Although the business has outgrown the small town with regards to clients and the magnitude of the events (one such recent event was the Centrepoint Winter Whites Gala at Kensington Palace, hosted by HRH Duke of Cambridge) she is dedicated to the area and tries to get involved in local events as much as she can. urveyor of the Sunday Roast variety, P Lamberts in Balham is a modest culinary gem. The Sunday roast may be a pub staple, but this smart restaurant gets it spot on. Come Sunday, the restaurant knocks out killer mains alongside great starters. Begin your Sunday with one of their signature Bloody Marys: the vodka is infused with horseradish, white pepper and celery, and comes topped with thick spiced tomato juice. Starters are good, but we'd recommend the ham hock with split peas and parsley yoghurt. Obviously, the star of the show is the roast. Choose from seasonal game birds or classics like rare roasted Angus rump, which is ridiculously tender. But it was the spatchcock poussin served with crispy roast potatoes, sweetcorn, parsnips and creamy homemade bread sauce that won them the top spot. ◆

ith Christmas just around the corner there's one thing that we can't seem to get off our mind: Christmas Dinner. Arguably one of the best, and biggest, meals of the year, there is only one thing to satisfy our cravings ahead of the big day, a decent Sunday Roast. Food. Edited. trailed the breadth of Southwest London to find you three Sunday Roasts good enough to make you wish it was Christmas, or at least Sunday, everyday.
THE ABBEVILLE
f you ever feel nostalgic for your childhood, I head to The Abbeville in Clapham, where the lamb is pink, the red cabbage is crunchy and the Yorkshire puddings are, quite literally, bigger than your head. Ideal for families, the rustic pub’s exposed beams, open fire and village-style atmosphere mean that you soon forget you’re in zone 2. The free-range and grass-fed meat, raised by Jamie

urprisingly elegant for a traditional British pub, the interior of The Dog and Fox in Wimbledon is fresh and modern with lilac and yellow accents. The roast has been named one of the best in the area, so we thought we'd better come and sample it for ourselves. The beef was cooked expertly: lean, tender, blushing red in the middle and impossibly flavoursome, which meant it required none of the usual lashings of horseradish or mustard. The goose fat roast potatoes were fluffy on the inside and crispy on the out, while the accompanying cabbage, carrots and parsnips were buttery and delicious. The real triumph was the pumped up Yorkshire pudding, which sat proudly atop the roast. The only thing missing was our own boat of gravy to drown it all in. Despite this minor detail, which was quickly resolved by requesting more, The Dog and Fox takes a deserved spot on our podium. ◆ S

Try the Bread and Butter pudding with caramel sauce, it's sweet and pleasantly stodgy, and the Plum and Rhubarb crumble with Clotted Ice Cream. The cinnamon crumble worked in perfect harmony with the tartness of the rhubarb and plums. A champion finish to a pretty flawless meal. ◆
Williams at Locks Drove Farm in Hampshire, is straight from farm-to-table so is both high in quality and rich in flavour. Taking pride in their awardwinning Sunday Roasts, the chefs at The Abbeville have perfected their zingy mint sauce, rich gravy and fluffy-inthe-middle roasties. While I would have left my parsnips in the oven for quite a while longer, that’s more of a personal preference than a complaint. The roasts are immense, but

PORK
he number of wines that work with meat probably matches the T number of meat dishes that exist – an infinite number! Having said that, there are certain grapes and wine styles that work time and again with different meat dishes. These wines, like Beaujolais or the grapes Pinot Noir and Syrah/ Shiraz are so versatile with meat that it’s always worth having one or two of them stashed away.
Ribs When ribs are sticky and slathered in gooey barbecue sauce, two styles of red spring to mind. Firstly, Syrah/ Shiraz, because it has this ripe, jammy flavour and is delicious with the barbecue sauce. It doesn’t just have to be Australian; any ripe New World style would be great. My Old World suggestion is a super-ripe red from Portugal, which is made from the same grapes that are used to make Port. ◆
BEEF
POULTRY
Grilled Malbec and beef is a quintessential match no matter how you’re eating it, and beef in one of its purest forms – when grilled with little or no other ingredients – is especially good with a ripe and fruity Malbec. There are two places where Malbec takes centre stage and they make very different styles of wine, but such is the intrinsic affinity of beef and this grape that they both work like a charm. In Argentina, and in the Mendoza Valley especially, Malbecs have a sweet blackcurrant flavour, with dense spice

and full tannins. They’re delicious and concentrated wines, perfect with beef. The other is in Cahors in south-west France, where Malbecs have more of an earthy character, with handsome richness and bold flavours.
LAMB Roast As with beef, the ultimate roast lamb needs the ultimate red wine, and luckily we’re not short on choice. Something big and rich with a depth of flavour speaks to me of European classics like Brunello di Montalcino from Tuscany, especially if there are herbs involved. Brunello is a butch wine that’s best when it’s older, so that the tannins have softened a little, but even then the wine is quite meaty. Another option would be a Spanish red like a Priorat or a Ribera del Duero. Again, try not to drink them too young, as they mellow beautifully with age, and roast lamb is a dish that likes a mellow but rich wine.
CHICKEN Roast he rich and comforting flavours of roast chicken are best with a wine that has those same qualities, so a supple, nutty, gently oaked Chardonnay is the out-and- out winner here. If you’re in France, or just want to be in France, look at the richer and more expensive styles of Chablis: Premier Cru and Grand Cru. If you want a white Burgundy, that can work too – the expensive choice would be PulignyMontrachet; the value-for-money choice would be Rully. In the southern hemisphere, Australia’s Mornington Peninsula is crafting some seriously elegant Chardonnay that is a great choice with roast chicken. And speaking of Australia, if you really can’t do Chardonnay, then pick up a bottle of slightly aged Semillon from the Hunter Valley instead – it’s full of nutty, waxy flavour. ◆

Creamy chicken in a pastry coating is a winner with Chardonnay, again. Perhaps with the extra buttery richness you want a full and frank style, so try a Californian Chardonnay, one from Limari in Chile, or from Mendoza in Argentina.
ROAST GOOSE
This expensive, fatty meat is best matched with wines that happen to be pricey. I’d usually go for a Barolo with a few years of age on it. But that’s assuming you’re having a red wine. It might seem bizarre, but German Spätlese Riesling actually works brilliantly. It does a beautiful job at cutting through fatty meat, and is especially good with apple sauce. ◆
GAME VENISON
f all the game meats, venison is the one where you can really bring out the big wine guns. Grapes that make wines with an earthy, mushroom or truffle character are awesome, as they really heighten that umami game flavour, so try a truffle-laden wine made with Nebbiolo, like a Barolo or Barbaresco. If the budget doesn’t stretch to this, try a Langhe Nebbiolo instead. Pure fruit is great for the density of lean venison, especially when served as carpaccio or with beetroot/beets. Venison is the meat that’s commonly paired with rich sauces like chocolate or balsamic vinegar. Even though these aren’t very wine-friendly, it’s worth going for a big southern Rhône red like a Châteauneufdu-Pape, or even something with a hint of sweetness, like an Amarone della Valpolicella.

RABBIT & HARE
The wine choice for these depends on what they’re cooked with. If there’s cream or white wine involved, go for dry Pinot Gris, Pinot Blanc or a dry-ish Vouvray. But if it’s cooked in red wine, then a rustic red works brilliantly. Try a Marcillac from south-west France, or an Aglianico from Campania.
earthiness and delicacy, we just need to be on tannin-watch because, unlike pigeon, these meats will struggle to cope with strong tannins. Sometimes these meats are served with a white sauce and if so a white that doesn’t shout too loudly, like Chardonnay, is best.u
PIGEON
Pigeon needs a big and bold black-fruited wine to do it justice, and something with lots of grip to the tannin. Try Bandol in southern France, Aglianico from Italy, claret, or Priorat from Spain.

STATE OF PLAY This year, combine skiing, shopping and sightseeing in New York state for a quirky alternative to the Alps Wo r d s A b i g a i l B u t c h e r
T
o walk through Central Park, snow falling softly all around, temperatures of -20c nipping at your cheeks, must be one of the most magical of New York experiences. The ‘city that never sleeps’ is at its most atmospheric in the winter, encased in a thick blanket of snow to temporarily muffle the sounds of the bustling streets and slow the traffic. Bright yellow cabs throw a sharp contrast of colour against the white park, and a low winter sun burns brightly in the blue sky, belying the chilliness of the morning. Diving into a café for blueberry pancakes and a steaming mug of coffee to warm my hands, I feel hugely grateful for the warm clothes I packed in order to explore a side of New York rarely considered by Brits, outside the city. New York State is scattered with a surprising number of ski resorts to which city dwellers bolt at weekends and which offer a snapshot of rural America just a few hours’ drive from the Big Apple. The most obvious first stop is Windham Mountain in the Catskill Mountains; the
East Coast ski version of The Hamptons. A two-hour drive out of the city, this boutique resort is home to stunning, million-dollar timber-clad chalets dotted around the 52 tree-lined pistes — or ‘trails’ as they are called Stateside. This is no Trois Vallées, but there are 278 skiable acres served by 12 lifts — plenty to keep you amused for a weekend including a couple of unexpected steeps. Perhaps the name Upper Wheelchair should have been a warning — with a burst of enthusiasm on the beautifully groomed descent I went head over heels and decided it was time for a break, and retired to the divine oak-panelled Club at Windham to warm up with a hot cider. The waiters know a chilly skier when they see one and persuaded me to try a shot of cinnamonflavoured Fireball whisky — creating possibly the best après-ski drink known to man. US ski resorts are not known for their ski-in, ski-out accommodation and New York State is no different. So instead grab a taste of rural Catskills in nearby North Creek, a slightly hippy but all-American town lined with clapperboard houses,

It’s also home to the charming Alpine Lodge with sprawling, rustic but luxurious beds. Heaven after a hard day on the slopes. Drive on upstate another few hours towards the border with Canada, and you reach the Adirondacks, and stunning wooded scenery surrounding the two biggest New York State resorts of Gore and White Face. The 1980 Lake Placid Olympics were held up here and the US Olympic teams return each season to train — it’s ‘proper’ skiing here, with off-piste options, double blacks and wonderful long cruises among the glades. Neither resort is vast but both offer plenty for a couple of days on the slopes. The Adirondacks have a distinctly
Alpine feel, with all of the skiing in the treeline; silver birch mixed with Scotch pines and oaks. You can see for miles around from the top of these mountains — with views from Little White Face back on to Lake Placid a particular highlight. One of the best things about skiing in the US is the service, and the luxurious Whiteface Lodge in Lake Placid is the best there can be. A 20-minute drive from White Face, the lodge was built by Olympic luge athlete Joe Barile and offers five-star US accommodation at its best, with a leading spa, cinema, ice rink, bowling alley, outdoor pool and hot tub and a huge platter of s’mores (a sickly biscuit/Hershey bar/marshmallow mix) set beside a roaring fire. These ‘ma and pa’ resorts don’t compete with the likes of Aspen and Vail for ski area nor infrastructure, but they are filled with incomparable charm.

Driving through the Adirondacks in the snow, watching children file on and off their yellow “cheese buses”, and meeting the local characters who run these little resorts is an experience that will stay with you for life. Fly in to Montreal and drive down state to New York City, or top-and-tail a weekend in the hills with time in the Big Apple and you’ll enjoy a winter trip to the States like no other. Wander out of the bar and you’ll find yourself in the midst of the flower garden. If the sun in shining, stop for a game on the Croquet Lawn before climbing up to the Kitchen Garden, the only oval walled garden in England and the jewel in Gravetye’s crown. u

A Tale Of Two Cities The backdrop for so many Hollywood blockbusters, everyone knows New York... or do they? Our reporter travels across the pond to discover the real Big Apple Wo r d s E d w i n a L a n g l e y
I
n my mind, there are two types of New York: the factual and the fictional. The latter is the one I first heard of. It’s Sinatra’s city that ‘doesn’t sleep’; it’s where I would go to eat breakfast at Tiffany’s, to shop on Madison Avenue like Carrie Bradshaw, to discover Tom Hanks (or similar) on top of the Empire State Building. Then I actually went to New York, and discovered that Tiffany’s is closed for breakfast, that I could afford little more than a pretzel on Madison Avenue and that all I discovered on the top of the Empire State Building was that I have vertigo. Having come to terms with the fact that fictional New York is a myth, I made a return visit to the Big Apple with my eyes open. No rushing round Central Park singing to myself like Charity Hope Valentine in Sweet Charity, and absolutely no ‘I Love New York’ t-shirts. I was there to see New York, the proper New York. And nothing was going to get in my way. So, having flopped my jetlagged body onto an enormous bed at the Loews Regency Hotel, and woken up to discover my room overlooked the bustling Park Avenue, I felt none of the exhilaration that, say, Annie might have felt in her

I was there to see NEW YORK, the proper NEW YORK
eponymous film, when she woke up at Daddy Warbucks’ mansion on Fifth. None at all. I merely noted, nonchalantly, that in addition to the gigantic, soft bed, and spacious cupboards, the en-suite bathroom featured a TV built into the mirror so I could watch Food Network as I showered. The American dream.
Having recently undergone a $100million renovation, Loews Regency New York is undoubtedly one of the smartest hotels Midtown has to offer. An ornate entrance lobby greets you and leads into a bar and restaurant discretely to the left. Famous for its cuisine, food at the Loews Regency is some of the finest you’ll eat in the city, and the ‘Power Breakfast’ is what they’re best known for. Running from 7-10am on weekdays, you have to book well in advance to get a table. When you finally do, it’s obvious why it took you so long. Because as Wall Street hot shots chat numbers on nearby tables, you too find yourself numbercrunching: ‘how many eggs can I fit in in one sitting?’ And then ‘do I have the Three-Egg Omelette, the Eggs Benedict, the Eggs Florentine or the Smoked Salmon Benedict?’ It’s a very taxing decision first thing in the morning. Upstairs, the 379 guest rooms include 58 suites, all designed in muted colours, classic and chic, and each boasting dramatic views of the city. On the first floor you’ll find the magical Julien Farel Restore Salon & Spa, which includes a well-equipped fitness centre and a salon with 32 cutting stations. I went in for the ‘Power Hour’ – three services in 60 minutes – and I tell you, my body has

In just over an hour, my hair had been blowdried so expertly it actually ‘swooshed’, my nails had been polished so well they practically blinded me, and I underwent an extreme MAC makeover. I looked really quite Hollywood – had it been 7am, I could have ordered Tiffany’s for breakfast. Probably. But it wasn’t 7am, it was 7pm, and since I was dolled up, I needed somewhere to go. Tourists (and fantasists) would take on Broadway, but since I was there to discover the real New York, I did as real New Yorkers would do: went ‘off-Broadway’. Queen of the Night by Randy Weiner (directed by Christine Jones) is an ‘immersive theatre experience’. Set in the Paramount Hotel, it’s a bit like London’s The Box in Soho – a sort of weird and wonderful nightmare (if such a thing exists) made-up of daredevil acrobatics, kinky dance acts and circus tricks. For a Premium Reservation ticket at $190, you enjoy an all-you-can-drink bar tab and an excessively gluttonous dinner (think: towers of hot lobsters served in cages and suckling pigs on platters). Neither the show, nor the dinner, were for the faint hearted. If suggestive codpiece rubbing, or being led backstage to be stroked, don't float your boat, steer clear. As a closeted extrovert, and after a decanter of wine, I was more than up for both. In fact, I’ve still got the note given to me by my backstage stroker [sic]. Written on a Guest Check receipt, it cryptically reads: ‘Pass your kiss to a stranger that gives you pause’. When you’re not out kissing strangers like real New Yorkers (apparently) do, perhaps you might consider learning a bit about the city itself. I’m not suggesting a day-long schlep through the Metropolitan Museum of Art, but a morning spent in the city’s finest living museum, Central Park. A tour with the park’s Conservancy Historian and Photographer, Sara Cedar
Miller, is the way to do it. Why? Because there’s no traipsing round miles of parkland involved (though, in truth, I’d have also loved that). All it entails is a leisurely drive to various park locations, where you get out to learn about them, and also, the park’s history in general. Did you know, for example, that Central Park was originally a rocky swampland, chosen as the park’s location because it was cheap to buy? That there is an ‘adopt a bench’ programme where you can adopt one of the park’s 3,000 benches (for $7,500) to support the park’s conservation? That chipmunks have finally returned, and that I got to see one? Sara’s intelligent guide was enchanting; you knew you were in the presence of a truly passionate pro. Alternatively, if it’s an indoors activity you’re after, you won’t regret the hardto-book (but totally worth it) ‘secret’ tour round Grand Central Station with Daniel Brucker. The first thing you’ll learn on the tour though, is that the title ‘Grand Central Station’ is entirely wrong. Its real name is Grand Central Terminal. The world’s largest for trains, with over 750,000 people pass through it each day. In his comically loud delivery (guaranteed to shock you out of your Queen of the Night-induced stupor) Daniel divulges all sorts of nuggets of information. Such as: the most expensive artefact in the Main Concourse is the clock (with its four oval opal faces, it’s been valued at between $10-20 million). And that the lagoon-coloured zodiac on the ceiling is

actually one big mistake (it was painted backwards). And that there’s a rather large hole in the ceiling made from the Redstone rocket displayed there in the late Fifties to counter the Space Race media advantage gained by the Soviet Union following Sputnik’s launch in 1957. Behind the scenes, you scuttle through underground tunnels before climbing to the highest point of the terminal, to view the Main Concourse via the half-moontopped glass windows. Not ideal for me and my vertigo, but luckily I kept the fear at bay just long enough to realise this was a once-in-a-lifetime experience. In fact, my entire trip was a once-in-alifetime experience. And I mean that to sound like a cliché, because it ties-in with the fictional New York I had described earlier; the one I thought didn’t exist. Now I know it does exist. It is possible to explore the factual, actual New York, and still experience an almost too-goodto-be-true, worthy-of-Hollywood, side to it as well. BATTERSEA POWER STATION
London’s entire electricity supply; the most thermally efficient power station in the world had 338ft-high chimneys fitted with water and alkaline scrubbers to minimise sulphur emissions and atmospheric pollution. The waste heat was used to power the Pimlico district heating scheme. Both stations were designed to form a coherent whole under a design team led by S Leonard Pearce with Henry Allot as consulting engineer, but in order to appease public opinion, exercised at the construction of such a monumental industrial complex on the banks of the Thames, Sir Giles Gilbert Scott was brought in to remodel the exterior with his characteristic use of sparse but subtle ornamental brick detail of brown Blockley brick cladding over a colossal steel frame. The inside of Control Room A overlooking the original turbine hall, is like a vision from Fritz Lang’s Metropolis. It is the work of J Theo Halliday in an extraordinary transmutation of Art Deco

ith its sublime external silhouette that has made it one of London’s most iconic riverside landmarks, Battersea Power Station is also its most conspicuous listed building at risk, and the largest brick building in Europe. It was built over a period of 25 years by the London Power Company as two individual power stations side by side. Station A was begun in March 1929, but not completed until 1935, and was only complemented by its identical twin, Station B, in 1953-5 when the fourth south-east chimney was completed. cinema design to an industrial utility. The quality of the finishes is astonishing. The walls are lined with Ribbon Napoleon marble, with black Belgian marble fluting to the windows. The ceiling is divided into eight huge bays, each coffered and glazed with linear decorative lighting and the original Halophane light fittings. The original L-shaped control panel and walnut veneer furniture all still survive in front of an intriguing array of levers and dials. The post-war Control Room B (below), which opens directly into its own turbine hall, is plainer, but nonetheless impressive, with faience cladding and an arc of stainless steel control panels. Above, the upper control room, added in the 1950s, retains its banks of control desks and panels. The power station remains one of London’s most intractable conservation problems. Since its closure in 1983, it has defeated three major attempts by developers to adapt and convert the building as part of a massive regeneration of the wider area. Its long-term future remains uncertain, but behind its forlorn brick shell lies one of London’s most atmospheric and awe-inspiring spaces. ◆
WANDSWORTH TOWN HALL ◆ Wandsworth High Street, SW18 2PU Listed: Grade II
W
andsworth Town Hall was built in four separate phases over a 60year period, but the rather ragged piecemeal complex of buildings was given a clear compositional focus in 1935-7 when a large Moderne-style building was erected as the architectural centrepiece of a wider redevelopment of the town centre. Located on a triangular corner site with low-hipped pantiled roofs and pavilions topped by tall flagstaffs, the building has a distinctly late-colonial flavour and would not be out of place in Singapore or Rangoon. It was designed by Edward A Hunt, who was responsible for numerous buildings in the area, with restrained classical elevations of Portland and Corsham stone, the High Street frontage with a bas-relief frieze depicting scenes from local history by David Evans and John Linehan. Beneath the corner entrance a carriageway leads to a small

courtyard garden and the principal ceremonial entrance for municipal events. The entrance hall is a superb period piece and one of the best-preserved town hall interiors of its time. The walls are lined with beautifully patterned African onyx. At the centre a grand Imperial stair with an intricate bronze- scrolled balustrade leads to the upper hall, which has a glazed ceiling from which is suspended a ritzy Art Deco chandelier. The theme is continued in the principal rooms beyond, which are oak panelled with moulded cornices and pink Art Deco light fittings and, in the Mayoral Parlour, a tapestry overmantel. The hexagonal Council Chamber has diagonal-paned top lights and another elaborate chandelier. ◆

THEN FOLLOW THESE STEPS 01 Preheat the oven to 170c/350f/gas mark 4. 02 Sift the flours together into a mixing bowl; add the sugar, cinnamon and orange zest. Mix well. 03 Add the butter. Rub the ingredients until the mixture resembles fine breadcrumbs. 04 Make a well in the centre and add the syrup and the egg. 05 Mix well and stop as soon as a ball has formed. 06 Divide into two and squash the dough into two even-sized flat discs. 07 Place the dough on a sheet of parchment and gently squash the dough with a rolling pin. Cover with a sheet of parchment and then roll out. 08 Gently roll the dough until it is 5mm thick all over and place in the fridge to chill for 20 minutes. 09 Make your own cutters by tracing and cutting the desired shape on a sheet. 10 If you plan to hang the biscuits on your tree, remember to make holes with cocktail sticks. 11 Cook for 14-18 minutes. 12 When the biscuits turn golden remove them and cool. 03 Cool totally before starting to ice. Outline the bauble in parma violet line icing, add pink tine tassel and fuchia detail around ribbon hole. When dry, flood the circle with red and let it set. Pipe the criss-cross pattern in parma violet, then add dots of lime green icing and little golden baubles to decorate. CANDY CANE
Pipe around the outline and hole in pink line icing and allow to dry. Flood with white runny icing, remove any air bubbles with a cocktail stick and leave to set. Ice the candy striped in alternate colours in line. ◆ B IS CUIT EERS

GREAT EXPECTATIONS A new regular column tracking the highs and lows of pregnancy from the first inkling to the final push

I
’ve decided to look at being pregnant at Christmas as some sort of weird and wonderful social experiment. I refuse to be put off by a month that is traditionally filled with office gettogethers, fun outings with family and friends and booze-fuelled parties. Surely I can reconceptualise socialising as an opportunity for riveting (rather than drunken) conversation? I can spend quality time with friends capitalising on the season’s wealth of decent exhibitions, plays and cultural pursuits, things I would never usually get round to doing – like going to see The Nutcracker or perusing a Christmas Market? Or maybe now is the time to make new friends – pregnant ones, the kind who can become a pillar of support in the months to come? My calendar needn’t be dry just because I am… right? One positive is that I can eat mince pies and stollen (love that stuff ) with abandon this year. In addition, I have the perfect reason not to be drawn out of my zen state by the usual stresses of yuletide logistics. I shall embrace my urge to nest and get cosy; I shall make the most of the virtues of online shopping (all the better for being able to buy a few supercute baby things while I’m at it); and I’ll be distracted, I hope, from the recent nagging idea that pregnancy seems to last an awfully long time.
Until now, I’ve remained surprisingly un-hormonal and calm – only succumbing to the occasional freak-out over the ever-expanding ‘no-can-do’ list. (In a well-intentioned bid to get my baby off to a superfood-laden start, I knocked back a cold-pressed kale juice, only to discover that unpasteurised juices are a no-no: error. I’ve already switched to decaf coffee because, and maybe this seems silly in retrospect, I wasn’t quite aware of how much caffeine I was actually consuming what with my tea, chocolate and Diet Coke intake. Though I by no means guzzle any of the above, it’s better to err on the side of caution. As my bump gets bigger and the temperature turns, I can also no longer get away with maxi dresses – my so-called ‘baggy’ boyfriend jeans aren’t so baggy anymore and my trusty dungarees look decidedly too tight for purpose. Tiffany Rose is a good heads up for maternity occasionwear at this time of year (they even do ballgowns for mums-to-be, if you’re in need of such attire) and discovering Seraphine maternity jeans has saved me from the perilous lure of maternity leggings. Come the New Year, I’ll be looking more closely at antenatal classes and birth plans, as I pass the halfway point and head into the home straight. Until then, Santa and I have something in common – we’re both big fans of elasticated waistbands. u

t’s hard to believe I’ve been selling property in SW18 since the late 1980s. Having abandoned my original plan (which was to study veterinary medicine), I began my career in the SW17 branch of a small estate agency chain. Looking back, I’m sure my parents were bemused by my lack of desire to attend university, but in a somewhat headstrong fashion I decided my interest in property and interiors made estate agency the natural choice – and I wanted to get on with it. Starting at the bottom, I found myself part of a fabulously energetic and talented team, unusually all-female. It seemed to be a winning formula perfect for that moment and although we worked extremely hard, we also had great fun. I moved on, although not far geographically, to Bellevue Road and then to Earlsfield. Here, I worked in an office decorated with vintage prints depicting nostalgic scenes of sheep grazing on Wandsworth Common in the late 1800s. I doubt buyers of the early 1990s ever imagined the road would change just as dramatically again, blossoming into the elegant streetscape we see today with its chi-chi boutiques, cafés and restaurants. Despite the scale of change, there are things that have remained constant, like the breadth of property and the extraordinarily friendly and upbeat atmosphere. Here there are flats of all sizes, and houses ranging from little two bedroom cottages, right up to the grand detached Victorian villas in roads like Westover Road, “The Toastrack” and Spencer Park, as well as those around Wandsworth Common, to which we can all look longingly! Having put down roots in the area, I’m part of the community and enjoy bumping

into people when I’m out and about. There are people I’ve known now for 20 years and I’m often asked for property advice, or a bit of local insight by the newer residents. I’m helping clients navigate the property events which tend to accompany all our familiar milestones and enjoy witnessing the natural progression of the generations; growing older and moving from a first flat to a slightly bigger one, settling down, upsizing to a family home to accommodate an expanding household, or downsizing once the children have left home. So, twenty-something years on, here I am running an office for John D Wood & Co., a company which feels like a beautifully updated version of an independent estate agency, despite its size and stature. We do not compromise, always putting our clients first and I’m really proud of my successful and committed team who are happy to be part of our community and whose life stages reflect the clients we represent. Our office is on the edge of Wandsworth Common’s cricket pitch with windows framing a view of stately plane trees, a lovely café and a duck pond a short stroll across the grass. This green lung is at the top my list of why I love Wandsworth. Just a few minutes in the fresh air with dogs and children scampering around is enough to lift anyone’s spirits. It doesn’t take much to remind me why I have stayed in Wandsworth all this time despite being a country girl at heart!
