don’t know about you, but as the shadows lengthen and the nights grow colder, there is nothing I would rather be doing than eating. Snug and cosy at home with friends and family or out at a restaurant. And the best part? This season’s chunky knit jumpers can cover all manner of sins. In keeping with all this winter indulgence, our November issue is crammed with reviews, recipes and round-ups to inspire and enthuse. If you’re a dab hand in the kitchen, the recipes on page 46 from Winter Cabin Cooking by Lizzie Kamenetzky will have you hightailing it to Waitrose for ingredients – the butter tarts look devilishly good. Prefer eating out? We’ve got you covered with our reviews of the newly opened future-favourite local eatery, The Perryvale in Forest Hill. If you prefer to stick close the river, rediscover recently refurbished Le Pont de la Tour – you can find both reviews on page 51.

In addition, we have a wonderful countryside property round-up that begins on page 127 for anyone looking to up sticks for a stunning rural pile. Enjoy the issue and please dig in! ◆

ARTS & CULTURE / SPOTLIGHT SK: Your new book, Inside the O’Briens focuses on Huntington’s Disease. In your opinion, what is the biggest misconception about this neurodegenerative disorder? LG: The hallmark symptom of Huntington’s is chorea. Greek for ‘dance,’ chorea involves jerky, involuntary movements. The person with HD stumbles, slurs his words, flings an arm in the air, falls out of her seat. People often assume they are drunk or on drugs. SK: You address the fact that 90% of people who are at risk of HD choose not to find out. Why do you think this is? LG: In part, because there is no treatment to delay the disease's progression and no cure. There’s the notion that nothing can be done about it, so why find out? Also, genetic testing for HD came onto the scene in the early 90s, before the Information Age. I think we’ll see a rise in takeup as more young adults who grew up with iPhones and Google are faced with this decision.
MIND’S EYE Acclaimed author of Still Alice, Lisa Genova shares her inspirations and challenges Wo r d s S t e p h a n i e K i n g
SK: Firstly, congratulations on the huge success of Still Alice. What inspired you to write it? LG: Thank you! My grandmother was diagnosed with Alzheimer’s when she was 85. She had progressed quite far into the disease when my family finally recognised it as something other than a normal part of aging. I kept wanting to ask her what it felt like to be confused, not to be able to access information about herself and the world, not to recognise her own face in the mirror, but she didn’t have the communication skills to answer. And I wasn’t finding answers in scientific literature or self-help books either. Everything was written from the
perspective of the outsider – a scientist, a clinician, a social worker or a caregiver. So my question – what does it feel like to have Alzheimer’s? – was the seed for Still Alice. SK: While your career is highly academic [Genova is a neuroscientist], you write fiction. Have you always been creative? LG: I think scientific research requires creativity, the ability to imagine how the brain might work and to invent a plausible molecular world. Designing an experiment that examines how the brain works takes creativity. And yet writing a novel is definitely a different skill set. The creativity involved draws from an even deeper well.
13 YES B&C_Nov15_HAMPTON.indd 13
SK: Your novels investigate how families and loved ones are affected by neurological illnesses. What is your message to readers? LG: In Still Alice, I think the main message is that we are more than what we can remember, that our ability to understand and feel love cannot be diminished by Alzheimer’s. With Inside the O’Briens, I think Katie came up with the main message of the story. “Every breath is a risk. Love is why we breathe.” SK: The common thread seems to the struggle to hold on to identity. Would you consider this to be the biggest struggle of AD or HD sufferers, for example? LG: That’s certainly an enormous struggle for Alice and Joe. I think loneliness is one of the biggest struggles as well. People with AD and HD suffer so much unnecessary isolation. Who we are, how we matter, how we stay connected, how to live in the moment, how to love—these are probably the common threads in all of my books. SK: Looking forward to your Wimbledon Bookfest appearance, what can we expect? LG: I’ll talk about why I chose to write about Huntington’s disease, a bit about the process of writing this story, and what I learned about living from people affected by Huntington’s. ◆

Blackheath-based artist Benjamin Hope on his upcoming exhibition Observations Wo r d s c at h e r i n e h a l e s
CATHERINE HALES: You didn’t start off doing art full time, was your aim always to be an artist? BENJAMIN HOPE: Yes, pretty much. I knew from fairly young that I would eventually. My other interests were long distance running and I was a physicist, so I did that at university. And then after my PhD, I realised that it was about time I pursued what I thought was my real talent. I committed myself to pursuing a career in it, which meant going to the City. You come out of a PhD in horrible debt.
journey. I led a sort of a secret double life when I was working [in the City] because you’re supposed to behave as if it’s going to be your career, when I knew it wasn’t going to be... CH: Little did they know... BH: [laughs] I know, on my final day I handed out my new art business cards and walked out. CH: When did you set up your studio? BH: It’s in Blackheath. It is actually in my flat. So, it’s a two bedroom flat, one of which is my studio. And now I have a lodger so actually my studio is my bedroom!
I led a secret DOUBLE LIFE when I was WORKING in the City
CH: Yes, I can imagine – an undergraduate degree was bad enough. BH: Exactly. No one was going to give me any money to pursue a career completely different to any other that I have done before. So, I worked for a few years and just saved as much as I could to put a mortgage on a studio flat. CH: And you saw it through? BH: Yes, it was a very exciting

CH: You live and breathe the work? BH: Yes, exactly. I literally breathe in all of the fumes. But a lot of my work is actually on the street. So, I go through long periods where I don’t do any work in the studio at all, and I am just in the street with an easel. CH: What is Observations about? BH: The title refers to the way I work.

ARTS & CULTURE / PROFILE I always work exclusively from the subject. I never use photographs. If I’m on the street I am just painting what I see. I’ll walk around and if there’s something hooks me like a bit of light or an interesting composition, I will set my easel up and paint it. And similarly in the studio, I work directly from the subject. In terms of what’s in it, it’s mainly paintings of London, but also Oxford and Cambridge. CH: What is it about watching things in real life that inspires you? BH: Good question. I like the bustling atmosphere of cities. And the other good thing about places with architecture is you can quite easily get a sense of depth because of straight lines that form perspective. I also like chimneys and wires that cut through the sky and things like that. CH: How is the physical experience? BH: It depends on time of year. In the winter, I get painfully cold. I’ve got more and more warm kit like crazy Canadian polar explorer boots. It looks ridiculous, but when you are standing still for four hours, unless you are wrapped up warm, it gets very uncomfortable. And in the summer I do get
caught out a couple of times a year getting very sunburnt. CH: You never think it’s going to happen in England... BH: But it does! Apart from that it’s a lot of fun because although you’re concentrating very hard, you meet people and they will come in and out of your scene and they’ll talk to you. CH: You feature people in your street scenes, is it hard to capture them? BH: Actually, that is the hardest part of that kind of work. The vehicles and the people. Because you think someone’s eating lunch and then just as you mix the colour, they’ll go off. What you have to do essentially is get the tone and shadow from one person and then use that for the next person that replaces them. So, they’re kind of mongrels. CH: They look quite characterful. BH: I’m glad because I do find it hard. It’s important to record modern life and not ignore the fact that it’s there. People say, ‘You are going to leave the crane out, aren’t
you?’ I completely disagree with that. I want to record as much of modern life as I can. CH: Where are your favourite places in Blackheath? BH: I live in the Royal Standard area but I wouldn’t say that is the bit I love by any means. I love the village area with the row of Georgian houses, like Tranquil Vale. I run most days and I love going into Greenwich as well. But it’s mainly the Georgian houses around the edge. CH: How would you describe your kind of overall style? BH: It does vary depending on what I’m doing. With my outdoor work, I try to make it impressionistic and much looser, so that you can see the brush strokes. But when I get back in the studio and do my still life, I spend 300 hours painting a cup, it’s stupid. I deliberately change my set up depending on what I’m painting. When I’m painting portraits I often use a palette knife and not a brush at all so I can use a very thick piece of paint. I aim to have three distinct styles. CH: What do you have coming up next? BH: At the moment it’s all going towards the show but throughout the year I’ve been jotting down ideas. I feel like my portraits have been neglected somewhat but my list of things to try is getting ridiculously long. CH: How do you pick models? BH: So far it’s been largely people I know but I certainly see faces that I would like to paint a lot. Next year, I hope to be a bit more brave and approach people. I would love to do some big commissions but portraits are particularly hard so I don’t quite trust myself to paint the Queen [laughs]. ◆ Observations, 12 -25 November at JP Art Gallery, 18 Battersea Rise, SW11; jpartconsultancy.com

hetland ponies prancing through Claridge’s ballroom and bellboys swathed in satchels: Emma Hill and Georgia Fendley know how to make an entrance. Then again, when you debut your new luxury accessories brand at London Fashion Week, Spring/Summer ’16 had better make a statement. The former Mulberry Creative and Brand Directors, respectively, premiered their capsule collection of bags at an intimate breakfast presentation, with Hill introducing the industry’s elite to a new fashion philosophy: “I love to invite the audience into our imagination and let them share in the fun!” The brand’s name alone indicates Hill and Fendley’s significant role in dissolving fashion’s longstanding #youcantsitwithus reputation. Case in point: the emoji-like Wink and Smiley Face hardware. This playful spirit also extends to Hill and Friends’ six silhouette’d Happy range comprising glossy goat, calf and calf hair leather mini and large satchels in neon pink, leopard print, emerald green, black, toffee and oxblood hues. What could be better? Well, this: “From day one we wanted to make key styles available from the day of the presentation,” said Fendley. Ahead of the curve yet again. But, while Hill and Fendley have already made some pretty industry-revolutionising moves, will their cheeky, irreverent designs and ‘Fashion just got friendlier’ mantra bring them future success? They’ve got it in the bag. ◆ ● HILL AND FRIENDS From £495; netaporter.com

ibration Plates generally conjure up images of wobbling belts or of ladies standing around doing very little while a vibrating machine does all the work. “This is an issue and image we’ve had to overcome from day one” says High Vibe owner Gianni Ingrosso. These assumptions are obviously untrue and Vibration Plates have become increasingly popular for anyone who struggles to find the time for, or feels apprehensive about entering a gym environment. “People are often sceptical and are surprised at just how tough the sessions are… It does work and we’ve had some incredible results to prove it…” “One problem is the huge disparity between different vibration plates. At High Vibe we use Vibrogym, one of the best plates around and used by many professional sports clubs. But it’s not just the plate, it’s what you do with it; at High Vibe you always have a trainer, you’re never left alone…” Since 2010 High Vibe has helped hundreds of people improve their health and fitness. They offer a bespoke service with a maximum of 3 people per class. You’ll receive a tailored workout that’s suitable for your fitness level and addresses the issues that matter to you, and it only takes 30 minutes! High Vibe offers a Free Trial Session so you can see if it’s right for you with no obligation to buy. ◆

THE INDIE DARLINGS OF PERFUME W o r d s L AW R E N C E R O U L L I E R W H I T E

t is unsurprising, given the maverick and enterprising nature of this cool isle, that Britain is spearheading the global rise of the indie perfume house moment. The past few years have seen the arrival of some truly remarkable brands. In fact, it was the lovely Sarah McCartney of ‘4160 Tuesdays’ (one of the aforementioned brands) who directed me to the door of dashing new brand ‘Handsome London’. Founded by Jason Leonard and Richard Holmes, the duo is inspired by their patch of East London. ‘Master Jojo’ [01] is a modern mix of sandalwood and patchouli that is elegant and refined, whilst ‘Redchurch’ [02] with its spiced cardamom, apples, green tea and cedarwood is, to my mind, Britishness in a bottle. Also based in creative East London Timothy Han, who launched his first ‘Editions Perfumes’ fragrance ‘She Came to Stay’ [04] last year, has just released his second scent, ‘On the Road’ [03]. I am in love with this brand and the exquisite attention to detail that has been paid to it by its self-effacing creator – whose talent 07

TIMOTHY HAN
The past few
YEARS HAVE SEEN the ARRIVAL of some remarkable BRANDS was spotted many years ago by Francis Kurkdijan when Han was displaying the candles he was the making at a Paris trade show. ‘She Came to Stay’ quite literally turns traditional perfumery on his head, inverting the perfume pyramid and opening with what would usually be the base notes; labdanum, patchouli and oakmoss. The middle notes of cedarwood and vetiver remain where they would at the heart, before the typically top notes of basil and lemon take your breath away with a sharp surprise. Also riding the waves of the indie boom is the beautiful ‘Beaufort London’ with its triumphant trio of fragrances, ‘Come Hell or High Water’, that explores and expounds upon Britain’s maritime history. This is uncharted water in terms of fragrance inspiration and the results are – a witty literary device would be to say ‘admirable’
39 DUL_Nov15_Perfume.indd 39
but that would be doing a great disservice to these gloriously epic and enigmatic scents. ‘1805’ [05], referencing the Battle of Trafalgar, is an explosive mix of smoke, gunpowder, irony blood and brandy with a splash of sea spray and the limey citrus after which British sailors were given the nickname that transferred into popular parlance. ‘Coeur De Noir’ [06] summons images of Admiralty House and naval campaigns being planned; parchment nautical charts spread over leather lined desks, the air heavy with tobacco and dying embers smoldering in the fireplace. ‘East India’ [07] imagines the notes blown by the trade winds as the majestic clippers cut through the crested waves, their holds full of precious tea, tobacco, spices and that most contentious of cargoes; opium. This month Australian-born, Londonbased, artist Paul Schütze launches his eponymous perfume line. As an artist Schütze is one of the few to work in the medium of scent, captivated by the notion of capturing the ephemeral. His collection of evocative and remarkable scents are olfactory snapshots of three fleeting moments. All I can say is, thank you for the memories! ◆

CHESTNUT AND LEEK TART
ith the earthiness of chestnuts and the richness of pastry there’s no better a grape match than Chardonnay with this recipe, preferably one with a hint of oak (but not dominated by oak). This Chilean version is seriously classy with gentle buttered pastry flavours and a good freshness to cut through the rich tart filling. ◆ Randolfi Price Los Patricios Chardonnay £16.95, Berry Bros & Rudd, bbr.com

MOULES MARINIÈRE
classic dish that’s packed with flavour, the creamy garlic sauce A plays just as important a role as the juicy fresh mussels. Riesling from Alsace is a winning match because it’s usually dry as a bone but has a real depth to the honeyed flavour, which is sublime with a garlic and cream combination, plus dry Riesling is generally a useful seafood wine in any case. ◆ Cave de Hunawihr Riesling Vieilles Vignes 2013, £12.99, Majestic, majestic.co.uk
CLEMENTINE CAKE
henever the tang of orange is in a recipe, savoury or sweet, I always think a wine with a distinct orange flavour makes the best pairing. Tuscany’s celebrated sweet wine Vin Santo – here made with Trebbiano grapes – is the perfect answer because it’s packed with marmalade lusciousness and this one is so intense and long lasting it really hones in on the cake’s signature flavour. ◆ Vignamaggio Vin Santo del Chianti Classico 2008, £21.50 Corney & Barrow, corneyandbarrow.com

M e th o D 1 Cook the potatoes, whole in their skins, in boiling salted water for 25 minutes. 2 Drain the potatoes and, once cool enough to handle, peel the skins off and mash the flesh using a potato ricer or by pushing it through a sieve so it is lump-free and fine. 3 Put the flour, 1 teaspoon salt and a little nutmeg into a bowl and add the potato, mixing with the blade of a knife. Make a well in the centre, add the beaten egg and mix together until well combined. Bring together with your hands but don’t knead or you could make your gnocchi tough. 4 On a lightly floured surface, roll out the dough into sausage shapes, about 1 cm wide, then cut into 1 cm pieces. Use the tines on the back of a fork to roll the gnocchi, giving them the characteristic ridges. Put on a floured baking sheet and chill until you are ready to cook. (Cook now or chill for up to 24 hours.) 5 Make the sauce. Melt the butter in a pan and add the oil and shallots. Cook for 10 minutes. Add the garlic and fry for a further 30 seconds then add the mushrooms. Increase the heat and fry for 10 minutes until they are golden brown. 6 Add the wine and bubble for a minute. Add the cream, a splash of boiling water to loosen it a little and plenty of salt and pepper, then stir in most of the parsley. 7 Bring a pan of salted water to the boil and add the gnocchi. They are cooked once they float to the surface, about 1–2 minutes. Scoop out with a slotted spoon and divide among warmed serving bowls. Warm through the sauce and spoon over the gnocchi. Scatter with the remaining parsley and serve. ◆

I n g r e d i e nt s • 250 g plain flour, plus extra to dust • 2 tablespoons caster sugar • a good pinch of fine sea salt • 100 g cold unsalted butter, cut into cubes • 75 g cold lard, cut into cubes • 1 egg yolk • 2–3 tablespoons ice-cold water FO R TH E F I LLI N G • 2 eggs • 00 g light muscovado sugar • 75 ml maple syrup • 1 teaspoon pure vanilla extract • 100 ml double cream • 60 g unsalted butter • 50 g chopped walnuts or pecan nuts • 125 g (dark) raisins • 2 x 12-hole tart pans
M e th o D 1 Mix the flour with the sugar and salt. Either in a food processor or with your fingertips, rub in the cold butter and lard until it resembles breadcrumbs. Add the egg yolk and then add enough cold water to bring the mixture together. Knead briefly into a smooth dough then shape into a disc and chill for 10 minutes. 2 Roll out on a lightly floured surface and cut out 24 discs 7.5 cm in diameter using a fluted cutter. Line the tart pans with the pastry and chill in the fridge while you make the filling. 3 Preheat the oven to 190°C Gas 5. 4 Beat the eggs with the sugar, syrup, vanilla and cream. Pour into a pan, add the butter and cook over a low heat until the butter is melted and the mixture thickens and coats the back of the spoon. Remove from the heat. Stir in the nuts and raisins. Divide between the tart shells. 5 Bake for 16–18 minutes until the filling is set and golden. Cool for a few minutes before turning out. Serve warm or cold. ◆

here is a surprising amount of fish in the mountains, such as fera and perch from the deep, cold lakes. These fish don’t often find their way to the UK or US, and even when they do some people seem to be suspicious of freshwater fish, fearing that they may taste muddy, which they never should. This classic dish is delicious with rainbow or brown trout, but you could also make it with sea trout when it is in season.
T
I n g r e d i e nt s • 4 trout fillets • plain flour, seasoned, to dust • olive oil, to fry • 30 g unsalted butter • freshly squeezed juice of 1 lemon • 3 tablespoons capers, drained and rinsed • a handful of fresh flat leaf parsley, finely chopped sea salt and ground black pepper M e th o d 1 Dust the fish fillets in seasoned flour, shaking off any excess. Heat a layer of oil in a non-stick frying pan and fry the fish until golden brown on both sides and just cooked through. Remove from the pan and set aside 2 Add the butter to the pan and allow to foam and start to become brown and nutty. 3 Stir in the lemon, capers and parsley and serve immediately with the fish. ◆

ESTERHAZY CAKE Ser ves 12–14
his beautiful hazelnut layer cake is a labour of love, but it’s worth every second. I love the way the cake looks, with its spider’s web icing. Once I got over my initial shock at how many layers this cake needed, I found it to be a simple cake masquerading as a technical challenge.
T
FO R TH E S P O N G E • 400 g blanched hazelnuts • 3 tablespoons plain flour • 9 egg whites • 200 g caster sugar FO R TH E F I LLI N G • 9 egg yolks • 200 g caster sugar • 1 teaspoon pure vanilla extract • 225 g unsalted butter, softened • 20 g unsweetened cocoa powder
FO R TH E TO P • 3 tablespoons apricot jam • 40 g dark chocolate • 3 teaspoons vegetable oil 300 g icing sugar • 1 tablespoon freshly squeezed lemon juice • warm water • 2 baking sheets, lined with baking parchment • small disposable piping bag M e th o d 1 Preheat the oven to 160°C (325°F) Gas 3. 2 Put the hazelnuts on a baking sheet and roast for 20 minutes. Cool and then blitz in a food processor until roughly chopped. Take out 150 g and set aside. Add the flour to the food processor and blitz to fine crumbs 3 In a clean bowl, whisk the egg whites to stiff peaks, then whisk in the sugar, a spoonful at a time, until you have a smooth, glossy meringue.
49 B&C_NOV15_RECIPES.indd 49
Fold in the hazelnut and flour mixture. Take the lined baking sheets and draw on five 20 cm circles. Divide the mixture among the circles and spread evenly. Bake for 16 minutes until golden brown and not sticky to the touch. You may need to do this in batches. 4 Make the filling. Put the egg yolks, sugar and vanilla in a heatproof bowl and set over a pan of barely simmering water. Whisk with an electric hand whisk until pale and voluminous. Remove from the water and whisk for a few more minutes then let cool completely. Beat the butter until light and fluffy, then fold in the cooled egg mixture and cocoa powder. 5 Peel all the meringues off the baking parchment. Put one on a clean piece of baking parchment on a baking sheet and spread with about one-quarter of the filling. Top with another meringue and layer up in this fashion, ending with a meringue, but reserving a little buttercream. Use the remaining buttercream to spread around the outside of the cake. Top with another piece of parchment then put a baking sheet on top. Weigh down with a couple of cans and chill for 1 hour. 6 Melt the apricot jam in a pan with 1 tablespoon water, then push it through a sieve until smooth. Put the chilled cake on a cake plate, still on its bottom layer of parchment. Spread the apricot jam over the top. Chill for 10 minutes. 7 Melt the chocolate with half the oil in a small heatproof bowl set over a pan of barely simmering water. Pour into the piping bag and set aside. 8 Whisk the icing sugar and lemon with the remaining oil, then gradually add warm water, a little at a time, until you have a smooth, spreadable glaze. Pour about half the glaze over the cake and smooth it out – don’t worry if it drips down the side. 9 You can add more glaze if you need to – you want to create a really smooth layer. Snip a small hole at the bottom of the chocolate piping bag and pipe a spiral of chocolate over the icing. Use the tip of a sharp knife to drag six lines from the centre of the cake to the outside. In between each outward line, drag the tip of the knife back into the centre of the cake to create a spider’s web effect. 10 Clean the sides of the cake with a spatula and press the reserved chopped hazelnuts around the edge. Chill the cake overnight. 11 Carefully remove the parchment from the base and pop the cake back on your cake plate and you are ready to serve. ◆ Winter Cabin Cooking by Lizzie Kamenetzky Ryland Peters & Small, £19.99; rylandpeters.com

the perryvale Brilliant British fare in Forest Hill Wo r d s c at h e r i n e h a l e s
erched atop the crest of the hill, a stone’s throw from Forest Hill station, sits the Perryvale. Newly opened, the British bistro has an inviting feel and on walking in we were greeted warmly and lead to a well-appointed corner table. The interiors are stylish without being brash, with a theme of dark, rich wood and dangling lampshades running throughout. We turn our attention to the menu and decide to try some nibbles while we make our choices. The cheese puffs live up to their name by being both creamy and light and the baked chorizo is spicy and succulent. Munching away, we make our decisions: I opt for the pork and smoked chicken rillettes, red onion marmalade and toast which is the perfect balance of sweet and savoury, with a subtle smoky finish. My friend chooses the mushroom and three cheese quiche, tomato and leek fondue which she declares to be rich and buttery and wholly delicious. Our mains arrive shortly afterwards and are similarly scrumptious. My confit duck leg, butterbean, pancetta and spring green cassoulet is the perfect winter dish; hale and hearty, it warms me through and fills me up wonderfully. My companion’s venison and wild boar sausages with mash and mustard sauce are a sophisticated twist on the classic bangers and mash combo. We finish with a shared crème brûlée, which puts the cherry on top of a fabulous evening of quintessentially British fare in charming surroundings. ◆

had Thames is one of those places in London where you can easily envisage the hustle and bustle of Victorian street life. The site of the classic French restaurant, Le Pont de La Tour, was in fact a 19th-century tea warehouse. Nowadays, the art deco interior is utterly opulent, all burnished copper and gold, plush red carpets, and service to match. I wait for my companion at the bar with a signature “French Riviera”: vodka, fresh lemon, basil leaves, gomme syrup, topped with champagne. I’m told it’s a twist on a mojito but to me it tastes of powerful lemons – a great start. My companion arrives and orders a more demure glass of champagne. The view of Tower Bridge from the dining room is fantastic. I start with Orkney king scallops in a Jerusalem artichoke puree; they are wonderfully tender and delicate. My companion meanwhile goes for the seared duck foie gras with black fig. For me the sommelier suggests a lovely MuscadetSèvre-et-Maine. For the duck there is
Monster Riesling, which is well-balanced despite its brash name. For my main I choose roasted veal sweetbread, kohlrabi and truffle. It comes in a light sherry sauce that combines with the truffle to make a stunning dish. My companion plays it safe with loin of venison and poached quince. For dessert I opt for the citrus chiboust – an indulgent cross betweeen meringue and custard – with a clementine, marmaladelike, sorbet. The dish is emblematic of the restaurant as a whole; rich yet refined, and quintessentially French. I manage one last effort; a bite of my companion’s tarte tatin and prepare for my much needed cycle ride home through the chilly streets. Despite its retro grandeur, I found Le Pont to have a very warm atmosphere. So whether dining with a friend or if you’re out to impress, it is the perfect option. ◆

ou know you’ve entered the realm of the sublime when you check in at an Aman hotel. And Amandari, set among verdant fields of green rice terraces close to Bali’s spiritual and cultural heart of Ubud, is no exception. Chanelling a very different feel to the beach resorts that most people associate with the island, this inland retreat is an enchanted wonderland filled with lush green flora and fauna. Airy communal areas and 30 thatched villas are connected through an artery of pebbled walkways and beautifully landscaped grounds adorned with shrines and ponds. Our experience begins on touchdown at Denpasar airport, where a representative of the hotel meets us off the plane and fast-tracks us through security queues into a waiting car. After an hour’s drive through the island’s

busy streets, we turn off at a discreet entrance, making our way down a long foliage-lined driveway and into a charming walled Balinese village. Following a warm greeting by friendly staff, we are whisked off to our villa. The whole process is seamless and stress-free from start to finish. Because service is paramount at Amandari: the perks of your stay include a return car service into Ubud whenever the mood strikes, and (parents, take note) four hours babysitting per day. The resort is very much grounded in its Balinese roots and its surrounding community too – local schoolchildren come here to practice Balinese dance (you might be lucky enough to catch a performance one evening during the week), and villagers use the resort’s grounds for their daily tasks.

and teak fixtures made it feel natural and sympathetic to traditional Balinese design. Floor-to-ceiling glass doors open onto a private patio and generous private swimming pool. Televisions aren’t something you’ll find at Amandari, not that you’ll even notice, with the high-walled outdoor sunken marble bath adjoining the bathroom to sink into, or the view of the rice paddies below to enjoy. Here, it’s not only the sights and sounds, but also the smells that make for a complete sensory takeover - bamboo-framed roofs feature alang-alang grass thatching that gives off a gently rustic,

I visit the spa just as the sun is setting, and my pleasant walk is enhanced with the sight of candles lining the path and the sound of haunting Balinese music from one of the resort’s weekly dance performances taking place back at the open-air lobby. Treatments – including my detoxing Zone Facial Massage – make use of local Balinese ingredients and range from holistic facials to traditional Indonesian treatments and a selection of massages and scrubs. ven the most hardened traveller couldn’t climb the steps of Bulgari Bali’s breathtaking open-air reception pavilion without gawping at the panoramic view of the Indian Ocean. Perched on a cliff more than 150 metres above sea level, the very seductive, smouldering Bulgari resort resides on the island’s far southwestern tip near Uluwatu. Designed by famed Italian architect Antonio Citterio, the resort is a beautiful marriage of contemporary Italian and Balinese design. Here, dark exotic woods and hand-cut volcanic stones intermingle as effortlessly as the resort’s stunning cliff-edge infinity pool does with the ocean’s horizon. Which, by the way, is unmissable – from the restaurants to the villas to the pool, ocean views are everywhere. Whether it's solitude or socialising you're after, the resort balances both options with aplomb - you could spend an entire stay holed up in your very plush villa, but if seeing and being seen is your thing, then throw on your finest resort chic and head to the pool and adjoining lounge bar to be at the heart of it all.
THE ROOM
T
here are no rooms at this resort, only villas, all with ocean views and plunge pools. And although villas are built close to each other, we feel a remarkable sense of privacy in ours, thanks to an intelligent design feature which encloses a very spacious outdoor living room and pool area within a highwalled lush garden setting. Inside, we love
the dramatically dark bathroom with its black Terrazzo floor, glass walls and inviting sunken bathtub, which takes centre stage. As standard, leisure concierges are on hand to help with activities like market tours and day trips to neighbouring islands. But don’t pack too much in – the area is known for its stunning sunsets, so you’ll want to be sitting comfortably on the villa patio, aperitif in hand, to witness the magical sight.

t doesn’t get any fresher than the winning combination of grilled seafood and a bracing ocean breeze at beach restaurant La Spiaggia, located under the cliff and charmingly accessed via a funicular railway. The resort’s all-day dining space, The Sankar, has prime position on a cliff edge and window seats overlook the island’s shores, so make sure you arrive early at breakfast. Naturally, given the Bulgari brand heritage, there’s also an Italian restaurant. Open only for dinner, Il Ristorante, with its pretty open air pavilions and ornamental lake, offers a fine dining experience. We were blown away by the elegant degustation dinner. Opt for the wine pairing menu option and request a table at the front, which affords a stunning view of the surrounding seascape. ◆

here is no stopping Ian Schrager, the prolificate behind the Edition brand (and Studio 54), who plans to open a further nine boutique hotels over the next four years, including one in Shanghai and one in Reykjavik. The London branch was the first to open back in 2013 and received rave reviews from the get go. A place of elegance and originality Ω expect modestly-sized rooms lined with contemporary woodpanelled walls, cloud-like beds draped with lavish fur stoles and delicate Art Deco furnishings. And it’s not style over substance. The hotel is set within five circa-1835 Georgian townhouses that have been meticulously restored (with a few modern twists) to their former glory. u

ou’ve spent the day shopping on Oxford Street, you’ve had a bath in your grand tub, you’re relaxed and dressed for dinner, now head down to the hotel’s impossibly stylish bar, Punch Room. Designed to emulate a 19th century London members club, Punch Room is all about the cocktails. While you can order all of your favourite drinks, Punch Room is known for its punch bowls, which come in several sizes for one person or for a group to share. Our favourite has got to be the house Edition punch Ω a lethal concoction of Tanqueray and oak moss syrup. u
erner’s Tavern, the brainchild of Michelin-starred chef Jason Atherton, is housed in what is quite possibly London’s most beautiful dining room. Oozing style and sex, Berner’s is a place you go to be seen, and to get fed. The food is British with a Franco-American twist, and is served all day, but go late and order the prawn cocktail with lobster jelly followed by the macaroni cheese. Don’t judge a book by its cover, the mac‘n’cheese is a thing of beauty: al dente tubes of pasta drowned in the creamiest cheese sauce and finished with hunks of tender ox cheek and a sweet crust of brioche and bone marrow. AT HIS CORE We go inside the mind of multi awardwinning designer Greg Natale, as his debut tome, The Tailored Interior, hits UK shores Wo r d s S t e p h a n i e K i n g
“I
believe design and daily life are intrinsically interlinked. We live design in everything we do,” says interior designer Greg Natale. The Australian should know; he’s headed up his own, highly esteemed brand, Greg Natale Design for almost 15 years. “To me, design can be decorative and beautiful, but the way in which it improves or enriches our lives is when it’s successful,” he continues. Success should be a familiar concept to Natale, who has received multiple accolades, including 2011 and 2014’s Interior Designer of the Year at the Belle Coco Republic Interior Design Awards. What is his award-winning aesthetic?
one-trick pony; he loves to challenge himself and his team – such being the case when fitting out Sydney women’s boutique, Uscari, which he says was “aesthetically a bit of a divergence from my usual work… The industrialchic direction created an opportunity to really exploit materials and the space for decorative and functional effect.” So if this was an unusual client request for Natale, what is the designer’s typical brief? “Broadly speaking, it’s a clean, pared-back look. [Australia’s] climate and light dictates that we probably lean more towards a Scandinavian aesthetic, though we have a more open relationship between indoors and out.” Which is probably why Natale titled his first design tome, The Tailored Interior, as his use of “decorative elements is very considered and completely tailored.” Having just been
“I always explore what’s new and push the boundaries, but I am currently loving brass and using metals to make spaces pop.” Although, the Sydney University of Technology graduate maintains “layering of patterns and playing with contrast and colour have always been signature gestures.” Yet Natale is no

published in the UK, Natale explains how the book came about: “I’m always asked for design advice on what makes a space work... I don’t pretend to have all the answers, the book comes from my experience and the techniques and tools I employ to complete my projects.” Can he give us some tips? For an instant update, “Rugs and cushions really change a space and make it appear so different, really effortlessly.” This is probably why, in addition to his many brand collaborations, he’s also released his own cushion range (available online) comprising “21 designs: The colours range from black and white, to elegant blues, vivid greens and some warming greys and burnt orange... There is pattern, texture and so much colour to work with.” What’s next for Greg Natale? “By mid-next year we will have completed some landmark projects in Australia and the United States; our new headquarters will be complete; and we have so many exciting product and furniture lines that I can’t wait to share.” ◆

Given the addictive nature of smartphones, should they be allowed in our schools? With a possible ban in the offing, Absolutely looks at the evidence Wo r d s A M a n d a C o n s ta n c e

hat’s your child like with a smartphone? Does removing it feel like stealing a banana from a starving monkey? Given their addictive power over our children, what place do they have in our schools? That’s what the government’s education advisor, Tom Bennett, has been tasked with finding out. As part of a wide-ranging inquiry into discipline in schools, he’s investigating the effect of mobile phones in classrooms and whether they should be banned. Bennett says: “Technology is transforming society and even classrooms – but all too often we hear of lessons being disrupted by the temptation of the smartphone. Learning is hard work and children are all too aware of this. So when there's a smartphone in their pocket offering instant entertainment and reward, they can be easily distracted.” More than 90 per cent of teenagers now own mobile phones – the majority of which are smartphones– yet there is now compelling evidence that academic results improve when phones are banned from schools. A recent study from the London School of Economics found phone-free classrooms showed sustained academic improvement with test results boosted by six per cent. The research, published last May, found that banning mobile phones from classrooms could benefit students’ learning by as much as an additional week’s worth of schooling over an academic year. The report also suggested that banning phones would most help low-achieving children and those from the poorest backgrounds. There is currently no official government policy about mobile
SMARTPHONES – like NUCLEAR WEAPONS – cannot be disinvented. WE MUST find ways to CONTROL THEM phone use in schools and school rules differ widely. One third of schools ban mobile phones outright - GCSE results at Ebbsfleet Academy in Kent have almost doubled since the school banned smartphones in 2013 - with a further fifth limiting their use in lessons; other schools allow phones on the school premises, provided they are kept on ‘silent’ all day. Boarding schools have an additional set of challenges. Heathfield School in Ascot has dealt with it by giving girls aged 11-13 old-fashioned mobile phones with no internet access, apps or camera; they can only ring or send text messages. Pupils are allowed smartphones in
79 CHIS_Nov15_Education.indd 79
Year 9 but have to hand them in before they go to bed. Last month, the head of Ofsted, Sir Michael Wilshaw, called for headteachers to ban mobile phones from secondary schools but not everyone agrees. Brian Lightman, general secretary of the Association of School and College Leaders, says: “Smartphones are powerful technologies which most people use in their working lives therefore schools must teach young people to use them responsibly. How they do that is a professional judgment.” Some schools — mostly independent — are actually encouraging pupils to bring their phones into the classroom. John Moule, warden at Radley School, says: “The use of mobile phones is encouraged if the teacher wants them used. It can be extraordinarily helpful in a lesson to have several internet searches going on or for an experiment to be videoed.” Andrew Halls, head of King’s College School in Wimbledon, says smartphones “can be a huge distraction but, like nuclear weapons, they cannot be disinvented. As schools, we have to find ways to permit them but to control them. A screenshot of the board can be a useful revision tool.” As yet, Bennett is undecided about a blanket ban. “My personal recommendation is that schools think very cautiously and carefully before allowing them.” He is concerned that children are getting access to the technology too young. “People ask me, ‘When should I give my child a smartphone?’ and I say, ‘Whenever you’re comfortable with them viewing pornography’, because their curiosity will take them there. “My personal belief is that I don’t think a child should have a smartphone until they are 16, unless it is under adult supervision.” ◆

oxtons has announced its new three-year charity partnership with London’s Air Ambulance. The charity has become Foxtons first long-term official partner and was unanimously chosen by employees following the charity’s current ‘Your London, Your Helicopter’ campaign to acquire and sustain a much-needed second helicopter. London’s Air Ambulance provides an advanced trauma team to critically injured patients and serves the 10 million people living and working within London and the M25 using a helicopter during daylight hours, replaced by rapid response cars at night. The charity is the only one of its kind in London to perform immediate life-saving medical procedures normally only found in a hospital emergency department, at the scene of an accident. Nic Budden, CEO of Foxtons, commented: “We are delighted to be supporting the vital work that London’s Air Ambulance does.” ◆

hilst at college, I worked W part time for an Estate Agency in different departments and branches across London, yet my preference has always been Lettings. I love the fast paced nature of it and opted to work in this field when I started my career in the City, before continuing when I moved to KFH’s Blackheath branch in 2002. My admiration for the area has only grown in the years that I’ve been here - the green open spaces of Blackheath really do give it a village feel, yet we have the best of both worlds, due to the convenient transport links. You can be in central London in ten minutes via the train, so a lot of my clients tend to be professionals who work in the City and Canary Wharf areas. I’ve always had an interest in architecture, particularly old buildings with historical significance, so love the many period properties that Blackheath and Greenwich offer. These types of property range from the one bedroom conversion flats to the six bedroom houses. Yet there is also a good supply of modern apartments and houses due to the regeneration that has taken place in Lewisham and Greenwich over recent years, Span houses in

particular are very popular. The rental market is strong, with demand generally greater than supply. Landlords receive a good return, whilst tenants flock to the area due to rent being more affordable than in other parts of London. I can only see good things happening for Blackheath in the future as it continues to be popular with landlords and tenants alike.
PATRICIA IRWIN-BROWN
efore joining KFH, I ran my own fashion business. Having always had a creative side, I was interested in interior design and homes, but it was my friend who spotted my potential. She suggested that I become an Estate Agent and arranged my interview with the Area Director for me. It turns out she was right and I have just enjoyed my ten year anniversary here at KFH! B
Blackheath ticks so many boxes as there is something for everyone. With so many places to eat every type of palate is catered for, from Argentinian to British, to French and Thai. The Heath always has something going on, whether it’s fairs, the circus or concerts, you’ll be sure to find entertainment. I always want to keep an eye on what is going on with fashion too, so the shops and boutiques are a wonderful, if dangerous, bonus. My clients vary from first time buyers to families. At the moment the market is very busy with one and two bedroom flat sales as we are seeing a high demand from first time buyers and investors who are capitalising on the better value for money offered in Blackheath and Greenwich compared to East Dulwich. Families are drawn here for the schools as we have the option of fantastic private ones, as well as good and outstanding state schools. Having been based in Blackheath for twenty years, we decided earlier this year that the office needed a spruce. Now, after a six month refurbishment, we’re thrilled to have opened our doors again and can’t wait for everyone to see the space, so do pop in and say hello! u

FROM PAVEMENT TO PASTURE
FIRSTLY, IT’S A MORE MODEST RELOCATION OUT OF CENTRAL LONDON INTO AREAS THAT ARE PART RURAL, RATHER THAN ALL-IN BARBOUR
READY FOR A FIRST MOVE INTO THE STICKS? Words NI G EL L EWI S
T
V programmes like Channel 4’s Escape to the Country like to make out that Londoners of a certain age all hanker after a country bolthole and a pair of Hunter wellies. While it’s true for some, data from removals website ReallyMoving. com suggests that for others it’s done in stages. So, firstly it’s a more modest relocation out of central London into areas that are part rural, rather than all-in Barbour. Rob Houghton, the website’s
chief executive, says that the KT postcodes are the most popular with South West London first-time escapees. This includes both the semiurban areas of Kingston-uponThames, Worcester Park, New Malden and Walton on Thames but also the almost-rural Epsom, Ewell and Ashtead. So if you live in Battersea, Wandsworth, Clapham and Putney, what sort of value do these areas offer? u
NEW MALDEN KT4
for example. While a two-bedroom flat in Wandsworth sells on average for £679,301 you can buy a threebedroom house in New Malden for just £571,131. u
To be found north side of the A3, New Malden are coming back into fashion as high prices in neighbouring Wimbledon force many people to look further afield to places such as Raynes Park and New Malden. Famed for its Korean community and their restaurants, it nevertheless offers incredible value if you’re selling a flat in SW and looking to upgrade,
Waterloo but if, for example, you live in Battersea and move to Worcester Park then on average you’ll pay 35% less. For four bedroom houses the gap is even bigger at 44%. u
WEST EWELL, NORTH EPSOM KT19
Commuters in Epsom have been getting excited recently after it was confirmed that its station would be included within Zone 6 – making it an Oyster card town, at last. The rail commute from Epsom into London is only 35 minutes long even though it’s outside the M25. House prices are great value despite Epsom’s racing pedigree and Surrey location. And particularly so between Epsom station and Ewell East – whose homes are 42% cheaper than in Clapham, for example.
KINGSTON UPON THAMES KT2
WORCESTER PARK KT4
Like New Malden, Worcester Park offers fast trains into central London but property that’s substantially cheaper. It takes just 28 minutes to get from Worcester Park to ASHTEAD

This area is hugely popular at the moment as it’s got fast and relatively cheap transport links into London plus a large and pedestrianised town centre with plenty of shops, restaurants, bars and a cinema. More importantly, house prices are cheaper. For example, detached houses here are on average 25% cheaper than in Battersea. It’s also popular with first time buyers; the average price for a two-bedroom flat here is £515,723 – significantly less than near Clapham Common where it’s £806,203. u
ASHTEAD KT21
Ashtead is only four miles from Epsom and Ewell but is a very different place. It’s an area where much larger, detached houses dominate the market. Even so, if you are selling up your fourbedroom semi on Wandsworth Common (for on average £1.15m) then you’ll get a large detached house in its own gardens with a drive and much larger rooms (but the same number of bedrooms) for the same price. u

PROPERTY / STYLE BIBLE THE HUF HAUS DOES NOT FIT THE ACCEPTED NORMS FOR A CLASSIC NEW-BUILD LUXURY HOME
WOW-HAUS The ‘German spaceship’ has landed
I
t would seem that we cannot get enough of Huf Haus, the pre-fabricated German homes made famous by the Channel 4 TV series Grand Designs. The company recently built its 200th in the UK and yet, such popularity is hard to fathom. The Huf Haus does not fit the accepted norms for a classic new-build luxury home. As London’s leafier suburbs bear witness, these tend to be Georgian, Victorian or Arts-and-Crafts influenced designs.

Just how much the Huf Haus is a design departure can be seen at the company’s new showhouse overlooking the Brooklands motor racing circuit in Surrey. It’s a fitting place to have built it – Huf Haus is the Audi of house building as the company delights in embracing both Vorsprung (‘progress’) as well as Technic. The latest great leap forward, as featured within the show home, is insulation so efficient that the property has zero fuel bills, the company claims, helped by a heating system that runs off the power of melting ice. The Huf Haus is also popular because it is so modular. Peter Huf, chief executive of the company, says: “The layout of the property safeguards absolute flexibility and while a family might outgrow a standard family home, the layout of the HUF accommodates growing families and their changing needs.” But it’s the speed of their construction that has made the Huf Haus a growing trend. A traditional build can take a year or more and requires an architect, designer,
planning consultant and an army of builders. A Huf Haus normally takes only a week to make watertight, 12 to 14 weeks to fit out and just a handful of technicians to build. The company has been heading up Europe’s ‘pre-manufactured’ home revolution since the early 1960s and it now exports to China. But Huf Haus got its big break here back in 2003 when Channel 4’s TV programme Grand Designs featured Greta and David Iredale, a retired couple who were building a four-bedroom Huf Haus in Waltonon-Thames. Overnight the fortunes of the company were transformed, helped by presenter Kevin McCloud’s ecstatic marvelling over the ‘German spaceship’; its engineering quality; the ‘construction superheroes’ who put it up and the fact that it took just four days to build against a six-day schedule.
There is just one downside to the Huf Haus – the expense, which can work out more than a traditional build. While the entrylevel Huf Haus, the Modum, costs approximately £300,000 to build the bigger Huf Haus designs start at £500,000 – and that’s excluding the cost of the land. But the good news is that, once built, a Huf Haus can be worth 5-10% more than its traditional counterpart of the same size, making up for the extra construction cost. u For more information visit

I AM HOPING TO BUY A PROPERTY SOON BUT THE SELLER IS ELDERLY AND INFIRM. I AM WORRIED ABOUT WHAT WOULD HAPPEN IF THE SELLER WERE TO DIE ONCE CONTRACTS HAVE BEEN EXCHANGED.
I
n this situation, the seller’s personal representatives are bound to complete the contract. The trouble is that they can’t actually do this until the grant of representation has been issued. If completion doesn’t take place on the contractually agreed date, then a breach of contract would have taken place and damages will be available to the innocent party. In these circumstances, your solicitor could have a discussion with the deceased’s elective. They can then find out whether it would be possible to postpone the completion date until the grant of the representation has been obtained. It is also possible for an expedited grant of representation to be issued in the case of emergency and, as the deceased’s estate may be open to a claim for damages, it is likely that the Probate Registry will help turn around
an expedited application. If the estate is likely to be liable for inheritance tax, the consent of HMRC will need to be obtained before an application for an expedited grant is made. This is because they will need to agree to postpone the payment of inheritance tax. If you have to vacate your existing property, the executors could also allow you to occupy the property pending formal completion. You might be required to pay a licence fee which could then be offset against any compensation payable by the personal representatives for late completion. So in summary, the death of the seller in this situation (after the exchange of contracts but before the completion) does not affect the validity of the contract. The responsibility simply passes to the deceased’s representatives, who are legally obliged to complete. u
