He’s been known to drink his own urine, scoff scorpions and sleep in a carcass but Bear Grylls is also a family man I n t e r v i e w C A M I L L A D AV I E S

ometimes a TV star’s tough guy image seeps into the public consciousness. But former SAS man Bear Grylls, the face of Mission Survive, The Island and Escape From Hell, can’t help but give off the niceguy vibe. According to Bear, it’s not about the brawn: anyone with their wits about them can become a survivor. “Knowledge is such an important tool for survival, but a real key to it is about heart, the determination to keep going despite the pain. And that’s in all of us, it’s how we’re made,” he says. Bear himself learnt his survival instincts from an early age, exploring at weekends with his dad before joining the Scouts – today his official title is Chief Scout – and then the military. A back injury forced him to leave the army but after an impressively fast recovery, by the age of 23 he had succeeded in his goal of climbing Mount Everest, making him the youngest Brit to do so. “Survival is in us all, it takes a bit of scratching beneath the surface to find. And also practice.

The more you get used to hardships and discomfort the better you become at coping with it. It’s definitely in everyone, it’s just about grit and heart.” Of course, some people are more prone to the adventure bug than others. It seems Bear can’t stay still for long, and even at home he isn’t quite on solid ground, choosing to live on a barge along the Thames. “The houseboat is a great way of being in London,” he says. “You don’t necessarily feel like you are stuck in the middle of a big city and yeah, I love it. It’s a really good community, great views…” The idea of Bear in a semi-detached redbrick doesn’t quite compute, anyway.
His waterside home is his rest spot to recover from his stays in the wild. “We originally bought it when I was leaving the army and I got married. We were pretty broke and it was a fun way of us being in London.” Even now, three children on, the couple show no signs of jumping ship. “Many years later, we still don’t feel any temptation to go and get a big house in London. We love it, it is a wonderful thing in our lives and we’ll always love it.” If the family want to get somewhere quickly, their mode of transport sure beats the tube. “We have a little speed boat tied to the side and it’s a great way to be in London.” Bear may be a London boy, but he also owns St Tudwal's, a Welsh island, just off the South Caernarvonshire coast – which many would consider an unusual holiday home. He also spends time in the heart of TV world, Los Angeles. “But when we’re in London, we love it,” he says firmly. “We try to film during term time when the boys are at school… I try to be pretty disciplined about taking days off when they are at home, saying no to all the other fluff.”

Bear may crave time at home, but he’s aware that his 9-5 is very different to most Londoners’ jobs. “It’s never felt like a job. I love it, I work with my best friends, I get to travel the world, so I feel super lucky,” Bear grins. “I’ll probably pick up a few more scars and a few more aches and pains along the way but I’ll try and keep on going for as long as I can.” Tenacity is an important skill in Bear’s line of work, but he admits there have been times where he’s worried about where an adventure will be leading him. He says that the goal of any show he presents is always getting home in one piece. “There has been a tonne [of accidents], from parachute failures to being caught in rapids, chased by sharks
and crocodiles... but again I try to focus on the good times, the times it worked out. I always say to the crew that you only get it wrong once. If there is doubt, then there is no doubt, stop and we’ll reassess, no ego, we’ll find another way round it. It’s actually about getting it right rather than wrong.” He knows better than to be reckless – whether it’s swimming too close to crocodiles or simply biting the head off a tick. “Because we film so much of it, we are pretty smart as a team about managing risk and we’ve all learned the thing about no egos and bravado when we film. We make quiet, smart good
decisions, but once we decide on something we really go for it and throw ourselves into it.” Of course, occupational hazards do come with the job - otherwise Joe Public would be harpooning his dinner and frying beetles for an afternoon snack. “There is a tinge of recklessness that the wild demands, but I think the skill is knowing how to use that and when to use it,” Bear says. “But essentially, if we were just reckless in the stupid sense we wouldn’t still be here. It’s reckless in the sense that it does demand a little bravery pill to do something, but that is a kind of recklessness that is healthy. But as the crew say, we used to be 100% reckless and now we’re 70% reckless, so that is good progress.”

Bear’s survival tips spread far and wide; from what to eat when you’re trapped in the wild to how to create a sleeping bag out of a dead animal and so forth. For urbanites in the capital however, perhaps his best life lesson is one that applies on a day to day level: to never give up. “That is at the heart of a great survivor… Everything else can be learned but the real heart of great survival, whether it’s in the jungle or everyday life, is to hang on in there.” u Bear Grylls has just launched the Bear Grylls Survival Race: an event designed to empower people to test and extend their adventure fitness. n fashion, September is a time for beginnings. It is a fresh start, as I designers unveil new season collections and directions for their brands. So what better way to ring in Fashion's New Year than with our discovery of recently ope ned KOKORO, a lifestyle store with its own special vision. The Japanese name, translating to “heart; mind; spirit,” encapsulates owner/ designer Dawn Green’s Connaught Street boutique, which has a selection of fashion and home accessories. KOKORO’s very essence is a contemporary take on historic Japan: the in-house womenswear label alone is made in Kyoto using traditional production methods, but bears Green’s fashion forward aesthetic, with input from illustrator/textile designer Bella Gomez and Tokyo-based Sachika Nakama. And AW15 is no different: the collection is a collaboration with renowned tattoo artist Alex Reinke, AKA Horikitsune, who specialises in the ancient art of Irezumi. While luxury fabrics convey the brand’s East-meets-West spirit, the seamless fusion of ‘the old’ with ‘the new’ demonstrates the level of thought behind KOKORO, as gold feature walls, vintage Japanese photographs and cherry blossom bouquets frame the latest bags and shoes from Amelie Pichard, fine jewellery from Alice Cicolini, Yastik cushions and Assouline books. Within moments of stepping inside, it is obvious that the harmony between KOKORO’s beautiful, albeit juxtaposing, pieces requires a skilled hand to achieve it. Actually, no; this sense of balance requires something much bigger: heart. Something of which Green evidently has in spades. u

ud, oodh, agar or agarwood is a mysterious, misunderstood, incredibly expensive and controversial ingredient that is highly prized in perfume making. Used for millennia in the Middle East, where it was imported from its native Indonesia, oud is the product of the Aquilaria tree, an inner secretion that the tree produces to protect itself against disease. Unlike other tree resins that seep from the bark, oud is not detectable from the outside and so over the course of history many trees have been fruitlessly felled looking for this rare commodity. Hopefully today oud is mainly sustainably farmed but farming is in itself a very lengthy and costly process, with the tree being introduced to infection and left to grow, hoping it will successfully combat disease by the production of the grey, distinctive smelling substance. The tree must be cut down and opened before any oud can be discovered, and then a sapling is planted in its place and the whole process starts all over again. The most successful tree is the Aquilaria Crossna that is cultivated in Vietnam where the tree is left to grow unattended for seven years, drilled and infected; six bore holes every six months during the rainy season. This process is repeated for three years after which it is left to grow for ten years until it is harvested. Any resulting grey wood is soaked in water and left to distil for six days. One tonne of grey wood makes one litre of rich, dark liquid oud, with the value of around 15,000 euros. Given its expense it is not surprising than many perfumes purporting to contain oud in fact contain a synthesised molecule. Like many things, the smaller the maker the closer the association she or he will have

with the ingredients they use; the supply chain will be shorter and with fewer links they are more likely to deal directly with producers providing a clear and certified provenance. People looking for the inclusion of genuine oud are therefore well advised to look to the smaller independent brands. One brand that has one of the most transparent provenances is Ex Idolo, a small London based perfume house run by the highly talented Matthew Zhuk. With just two fragrances in its collection, Ex Idolo places the importance and emphasis on the authenticity of what is in the bottle. Thirtythree is named after the age of the vintage Burmese oud that was originally distilled

in 1980 and aged until its use in 2013. The fragrance opens with delicate accords of black pepper alongside lush, juicy mandarin orange. A pair of rose notes, Chinese rose oil and famous Taif rose, form the heart that sits on a base of aged patchouli and the most subtle, sophisticated oud, used as it should be: to underline not overpower. Matthew’s latest creation, Ryder, released this month, is an intoxicating swirl of rare notes blended with skill and exquisite attention to detail. Sweet, smoky, and luxuriously rich, Ryder makes use of a rare Omani frankincense giving it a real sense of opulence. Inspired by the mahogany-paneled private members clubs of Mayfair and St. James with complex wood notes, wafts of sweat tobacco and elegant, aged amber. I detect the faintest wisp of rarefied oud in Ryder too, whether I am right or wrong, and I suspect I might be right, Ryder is a truly amazing scent. ◆

Method 01 First, make the cashew crumb. Preheat the oven to 200°C/180°C fan/400°F/Gas Mark 6. Melt the butter in a heavy-based saucepan over a low heat and stir in the ground and chopped cashews and brown sugar. Spoon the mixture into a baking tray and spread into an even layer. Bake in the oven for 15 minutes, stirring halfway through. Set aside to cool. 02 Marshmallow: Whisk the egg whites using an electric stand mixer to stiff peaks and set aside. Pour the boiling water into a bowl, evenly sprinkle over the powdered gelatine and cinnamon and gently whisk until fully dissolved. 03 Use the sugar, golden syrup, cold water and 150ml (5fl oz) of the apple purée to make a hard-ball sugar syrup, add the gelatine and combine with the egg whites until they turn glossy. Keep mixing on full speed for 5 minutes, stop mixer and add the remaining apple purée. Turn the mixer back on to full speed for a further 5 minutes until the mixture is the same consistency as lightly whipped double cream. Add the green food colouring and mix for another 30 seconds until completely mixed in. 04 Pour the marshmallow into the baking tin, making sure it is evenly spread out. Sprinkle the surface with cashew crumb and a little extra ground cinnamon, then cover with cling film. Leave to set as described above. 05 Turn out and cut the mallow as described above. ◆

LIME AND DARK CHOCOLATE MARSHMALLOW TEACAKES eacake lovers rejoice – this super-tasty but sophisticated version ticks all the boxes when it comes to flavour.

Ingredients Makes 6 • 300g (10½oz) dark chocolate, chopped For the biscuits • 50g (1¾oz) wholemeal flour • 50g (1¾oz) plain flour • Pinch of salt ½ teaspoon baking powder • 25g (1oz) caster sugar • 25g (1oz) unsalted butter • 2 tablespoons semi skimmed milk For the lime marshmallow filling • 1 quantity of Marshmallow Crème (see below) • Juice of ½ lime • 2 dashes of lime
extract (optional) • ¼ teaspoon natural green food colouring • 7.5cm (3 inch) round cutter • Silicone mould for 6 teacakes • Piping bags with plain wide nozzle and small nozzle. Method 01 First make the biscuits. Put the flours, salt, baking powder and caster sugar in a bowl and rub in the butter with your fingertips until it resembles breadcrumbs. Add the milk and stir everything together to form a smooth ball. 02 On a floured work surface roll out the dough to about 4mm (⅛ inch) thick. Cut out 6 rounds with a 7.5cm (3 inch) round cutter and chill in the fridge for 10 minutes. Meanwhile, preheat the oven to 190°C/170°C fan/375°F/Gas Mark 5. 03 Transfer the chilled biscuits to a baking tray and bake for 10–12 minutes. When they’re done, remove from the oven and leave to cool on a wire rack. 04 Next melt the chocolate. Put approximately 1 litre (35fl oz) water in a large saucepan and place a large heatproof bowl over the pan. Bring the water up to a steady simmer and then turn off the heat. Place 200g (7oz) of the chopped chocolate into the bowl and leave for 5–10 minutes, stirring occasionally, allowing the residual heat to melt the chocolate. Melting chocolate at a lower temperature results in a glossier finish. 05 Get your teacake mould and coat the inside of each mould with the melted chocolate – you’ll need about 1 tablespoon of
chocolate in each half-sphere. Use the back of a spoon to work the chocolate up and around the sides of the spheres, adding more chocolate if necessary. The chocolate needs to be thick enough to hold the shape of the teacake but not so thick that you end up with a chocolate-heavy teacake. 06 You should have some melted chocolate leftover. Take the cooled biscuits and dip one side in the remaining melted chocolate and set aside on a tray to harden. 07 Now, make the marshmallow filling – follow the Marshmallow Crème recipe above. Once the crème is made, add the lime juice, lime extract and food colouring, mixing them in for 30 seconds. Spoon the mallow filling into a piping bag with a plain wide nozzle and pipe the mallow into each of the 6 chocolatecoated moulds, remembering to leave a 4mm (⅛ inch) gap at the top so the biscuit will sit flush. Carefully place the cooled biscuits on top of the mallow chocolate side down. The chocolate will stop the biscuit going soft. 08 Melt the remaining 100g (3½oz) chocolate and transfer into a piping bag with a small nozzle. Carefully pipe around circumference of the biscuit and pipe a small amount on top of each biscuit. Spread the chocolate evenly over the biscuit using a palette knife. Leave the teacakes to cool and set overnight or for at least 8 hours; do not refrigerate, as the chocolate will lose its glossy shine. 09 Carefully remove the teacakes from the moulds, trying not to handle them too much as fingerprints will mark the glossy dome. These teacakes will last for 2 days. ◆
MARSHMALLOW CRÈME ( for teacakes!) arshmallow crème is a soft fluffy alternative to normal marshmallow, it can be spooned liberally onto pancakes, waffles or hot chocolate and later in the book you will see how we also use it to create toppings and fillings for many other treats.

Ingredients Makes a 180g (6oz) jar of Crème • 150g (5.oz) white granulated or caster sugar • 3 medium egg whites • 30g (1⅛oz) golden syrup Method 01 Set a large heatproof bowl over a saucepan of just simmering water, making sure the water is not touching the base of the bowl. add all the ingredients and whisk with a handheld electric whisk for 12–14 minutes. 02 Once the mixture forms stiff, glossy peaks, transfer to a sterile jar or bowl and cover the mallow surface with cling film or parchment to prevent a skin from forming. The crème can be enjoyed straightaway or kept in the jar in the fridge for 3 days. ◆

The cod skin and roe were lip-smackingly salty and gone too soon, the razor clams were piquant and I wanted to roll around in the champagne snow and make snow angels but the standout were the cleverly named and familiar-looking Storeos. The inky black biscuits had an amazing texture, crumbling and contrasting beautifully with the creamy mousse. We were then presented with a candle – a strange addition to the table at lunchtime in a restaurant with floor to ceiling windows. It all became clear however, when we were told it was in fact beef dripping and were presented with some soda bread to soak it up along with onion, apple and old tom to pile on top. Decadent and frankly delicious, this has become one of Story’s signature dishes. What followed was course after course of thoughtfully prepared food with unusual flavour combinations, inventively presented. Highlights included the Herdwick lamb, sheep’s yoghurt and ramson, the almond and dill pudding and

T
he first thing you need to know about Restaurant Story is that, to do it properly, you need to dedicate some time. An hour at lunch will not suffice and if you go in the evening, don’t make after-dinner plans. The second? Make your reservation in plenty of time. Story is booked solid at least two months in advance for evening meals. Housed in a wood-clad pseudo cabin in the heart of London Bridge, Restaurant Story is an experience from the moment you approach the front door. Dotted with paraphernalia, books and curiosities, the interior manages to be characterful without feeling cluttered or try-hard
and the feeling of being in a cabin is increased by the pale wood of the tables and the rough exposed brick and the visible stove pipe. Contrary to my own advice at the beginning of this review, I didn’t have an entire afternoon to kill so was unable to attempt the ‘Full Story’ which is a whopping 9 courses, not including the mini courses beforehand. On my particular visit, we started out with cod skin, smoked cod roe and gin botanicals, razor clams with champagne snow and crispy pearl barley, heritage tomato and vanilla and a wonderful invention called a Storeo, made from smoked eel mousse sandwiched in between two black squid ink biscuits. The presentation was

the scallops, cucumber and dill ash. The lamb, served three ways, was rich and succulent and the pudding was unusual and wonderful in equal measure with the subtle almond flavour brought out by the herbaceous taste of the dill. But for me it was the scallops that really stole the show. Every bite of the slippery slivers of raw scallop packed a magnificent punch, flavourwise. Every detail was considered from the old fashioned candle holder to the custom made cocktail we were given mid-meal; suffice it to say, this story has a very happy ending. ◆

FOR THOSE WITH ALLERGIES icking off with the most significant dictator of diet, food allergies have been identified by the World Health Organisation as the No. 1 environmental epidemic disease facing children of the developed world. One of the most common is hypersensitivity to tree nuts and peanuts (technically a legume), according to leading allergy resource Allergy UK. Parents can now breathe a sigh of relief, because within Simpson and Hobson’s The Detox Kitchen Bible and Ward’s upcoming release, The Naked Diet, are nut-free salads substituting in seeds, such as sunflower and pumpkin, which Simpson says “add that nutty depth of flavour and a good crunch.” Knowing a few nut-free recipes is especially important nowadays, seeing as 2015’s study conducted by King’s College London’s Professor Gideon Lack, published in February’s New England Journal of Medicine, found that the incidence of food allergy continues to increase, where 1 in 50 school age children in the UK suffer from a peanut allergy – over double the statistics recorded in the last decade. Clearly awareness and knowledge of foods to avoid / completely nut-free products to purchase is key, as allergic reactions can vary in severity – from mild responses of itching and swelling of the lips and mouth, to potentially life-threatening anaphylaxis. Thankfully health food stores such as Holland & Barrett have an extensive range of brands – including our favourites, Biona, Clearspring, Meridian Foods, Naturya, and Propercorn – promising products that are prepared in factories totally devoid of the common potential allergens, nuts, fish / K

But for the 20% of the population experiencing reactions to food that aren’t indicative of an allergy, a statistic estimated by the British Dietetic Association, Corrett suggests this may be due to a food intolerance: “If you feel tired, groggy, lacking in energy, [or have] bad skin, look at what’s on your plate.”

FLYING VISIT La Compagnie transforms New York into a viable weekend destination Wo r d s c at h e r i n e h a l e s
W
hen considering a weekend away, there are several popular options: Paris, Berlin or perhaps this time you’ll head to Prague or Amsterdam and really shake things up? But New York? The prohibitive fares and the crippling exhaustion involved in being on an aeroplane for 16 hours in a three-day period kept it off the shortlist. But that was before luxury airline La Compagnie came along. Launched in June 2014, the allbusiness-class airline initially flew only from Paris but, as of May this year, London is now in on the action. Founded by two Frenchmen, Frantz Yvelin and Peter Luethi, with a wealth of experience in aviation between them, La Compagnie’s Boeing 757-200 aircraft is configured to provide 74 plane-wide business class seats at a significantly lower price point than the same class in larger airlines. The first thing I notice when boarding after having been whisked through security at Luton – yes, unglamorous but uncrowded Luton – is how much space there is. Two flatbed seats on either side of the aisle mean that passengers barely have
to acknowledge their neighbours, while the acres of legroom would have had my 6ft 5in father weeping for joy. Suddenly, eight hours didn’t seem such an ordeal. I lay back in my incredibly comfortable seat, which had a control more complicated than most television remotes, and perused my Samsung Galaxy Pro 12” tablet for films and music. Each seat comes equipped with one of these, as well as a pair of large over ear headphones. I spent my journey sipping champagne from La Compagnie’s wine cellar, sampling the salmon from French chef Christophe Langrée’s menu, watching my tablet and sleeping. To say I got off at Newark feeling refreshed would be an overstatement but for once the flight was an integral part of the experience not a preliminary to be endured. After a quick cab ride on the New Jersey Turnpike, we emerged in Lower Manhattan and soon arrived at our hotel. The Conrad Hotel New York is located in Battery Park City, practically on the banks of the Hudson River. The Conrad is an excellent base for those looking to explore or for those in Manhattan on business as it is next to the Financial District. On arrival, it is hard not to notice the enormous artwork that

neighbourhood
extends considerable height of the lobby, lit by atmospheric blue lighting that gives the whole area a space-age feel. A tangle of dark purple lines on a blue background, the piece is entitled ‘Loopy Doopy’ and lends its name to the hotel’s rooftop bar which, having come off the flight feeling considerably better than I thought I would, I decided to visit. I took in the stunning views out over the Hudson, while sampling one of the bar’s signature Boozy Ice Pop cocktails before retiring to my wonderfully comfortable room. I had flown in on a Friday night and I woke up in fear of my precious Saturday in the Big Apple being blighted by stiff limbs and jetlag but I felt well rested and made my way down to ATRIO, the Conrad’s sophisticated, Mediterranean-inspired restaurant for some crispy bacon and a damn fine cup of American coffee. A quick tour of the hotel revealed a combination of unfussy luxury and modern amenities, including two ballrooms and a foyer ideal for large events and stylish workspaces for those on business. The hotel manages to retain a distinct personality, however, with touches like the running theme of the ‘Loopy Doopy’ artwork and a delightful barbershop run by a New York legend named Sal. Lower Manhattan has become a vibrant and commercial neighbourhood and this is down, in part, to the opening of Brookfield Place. A gigantic glass structure filled with
towering palm trees, high-end shops and eateries and it is at one of these (Beaubourg, a lovely French restaurant) that I stopped for a small feast before continuing down to the marina. Here, I began to regret my gluttony as I took in the swaying masts before donning a lifejacket and stepping carefully down on deck. I was being treated to a sailing lesson by the North Cove Sailing School and before I knew it we were tacking across the Hudson. There really is no better way to see Manhattan’s famous landmarks: I spied Ellis Island, Governor’s Island and Brooklyn Bridge from the boat but the real highlight was getting up close and personal with the Statue of Liberty herself. Back on dry land I headed for Midtown and made my way down through Madison Square Park, past the magnificent Flatiron Building and on through the markets in Union Square, past (and sometimes into) the vintage shops and cafés of Greenwich Village, lusting after Tribeca’s lofts, before walking back along the banks of the Hudson. Still full of beans, I devoured a truly scrumptious dinner at ATRIO and then returned to Tribeca in search of cocktails. Luckily, Mark Ricci,

Hilton’s affable director of communications, had a suggestion and I was soon sipping sidecars in The Brandy Library, a delightful bar with hundreds of shelves of bottles full of amber liquid lining the walls. Sunday was spent sightseeing and if I have one tip to share it is to forgo the Empire State Building in favour of Top of the Rock at Rockefeller Centre. Not only are the queues non-existent, you actually have a far better view of the iconic Empire State Building itself (not to mention Central Park and the Chrysler Building) from its uncrowded viewing decks. After a mandatory photo op in the admittedly hellish Times Square I stopped for a light lunch under the awnings in Rockefeller Plaza and listened to a little live music. Shopping on the swanky Upper East Side (mandatory) followed by Aperol in the East Village found me still going strong. The grid system of New York’s streets makes it easy to navigate and I found I had covered a lot of ground by the time I caught my evening flight. Back at work I could not help thinking that thanks to La Compagnie the City that Never Sleeps feels that much closer to London. ◆

old winner of the 2014/15 for Holiday Resort of the Year, The Headland is a stunning four star hotel and spa perched on the cliffs overlooking Fistral Beach. Visually arresting, the red brick Victorian edifice is just as impressive on the inside with sweeping staircases, rich wood panelling alongside more contemporary decor in the terrace and the bedrooms. Those thinking that the hotel looks familiar may recognise it from the film adaptation of Roald Dahl’s The Witches. During my stay, I had the opportunity to venture into the, Cornwall’s first to be awarded ‘Five Bubble’ status. I opted for the Elemis Deep Tissue Massage, which was administered with great skill and which left me feeling incredibly relaxed. I was then able to unwind further in the leisure area – the Cornish salt steam room, in particular was a real hit. ◆

he rooms fall into six categories, ranging from Courtyard at the more inexpensive end of the spectrum up to Best which feature four poster beds, balconies and individual decor. I was staying in an Fistral View room, with wonderful views out over the moody ocean and windswept beach. This also offered an adjoining bathroom with stunning standalone tub and twin sinks, making it an ideal room for couples. The bed was exceedingly comfy and the decor chic. Visitors should note that althoughThe Headland has much to offer in summer (beautiful views, surfing) it is an incredible experience in winter, with dramatic storms and bracing winds whipping the cliffs. On our stay we discovered that there is nothing more cosy and comforting than being nestled in a massive armchair at the bar, sipping a cocktail, while driving rain and storm clouds roll in off the ocean. ◆

hether you are looking for a fine-dining experience or a more casual meal, The Headland has it covered. Book a table at the Restaurant for a sophisticated evening, with gentle piano tinkling away in the background and atmospheric lighting making the ample dining hall feel intimate and ambient. I would recommend ordering the risotto aux fruit de mer for two as it showcases the briliant, locally caught seafood that is a staple at The Headland. For a lunch with a view, the Terrace is the clear choice. Choose the fish and chips accompanied by a glass of rosé to fully get into the seaside spirit. For visitors just popping in, few things are as popular as the Afternoon Tea, a traditional feast of finger sandwiches, cakes and scones accompanied, of course, by Cornish clotted cream. This is served with loose tea or champagne. ◆

his is an exuberant book of repetitions, rhymes and weird creatures: the result of a dream collaboration between two of the biggest names in children’s publishing. Reading it with Callum aged two, I have to admit being hilariously challenged by the tongue twisting delights of ‘TippyTappy’ and the ‘Button Bop’ – the latter celebrating the difficulties of doing up a coat correctly. HEAD SPACE Psychometric profiling is increasingly being used in the education arena Wo r d s A M a n d a C o n s ta n c e
“Y
ou’ve taken my soul and put it into a book.” So said a Year 10 girl on reading the results of her psychometric profile. Having read the 38 pages (yes, that’s 38) of computer-generated self-analysis produced when I completed my own profile – the Insights Discovery Personal Profile, no less – I find it hard to disagree with the sentiment. I dashed off 25 multiple choice questions in 10 minutes – what I got back was page after page of my inner workings laid bare. Not always 100% accurate but mostly on the nail and eerily prescient. In schools, psychometric profiling is on the up – it’s long been used in the corporate sector –but it is now being increasingly used in the education sector. At the HMC annual conference earlier this year (the Headmaster’s and Headmistress’s Conference is the association of leading independent schools), headmaster Jon Reid from Larbert High School described the extraordinary successes his school achieved after using a psychometric evaluator to improve pupil performance. Colfe’s School in south-east London uses psychometric profiling for its Year 11s to help make career and university choices and there are a number of educational consultancies on the web offering profiling to enhance your child’s learning. Ian Wigston, the co-founder of Bright Field Consulting, uses the Insights Discovery Profile, a psychometric evaluator built around the personality models originally developed by Swiss psychoanalyst Carl Jung. The Insights model is based around a colour wheel of four personality types: the extroverts Fiery Red and Sunshine Yellow; and the introverts Cool Blue and Earth Green.

PSYCHOMETRIC PROFILING to help Year 11s make CAREER & university CHOICES Each personality has many variations, strengths and weaknesses. For example, on a good day a Fiery Red personality can be strong-minded and purposeful, on a bad day they might be controlling and aggressive. As Wigston puts it, “the Insights Discovery Profile is a questionnaire which uses 25 bits of data to come up with a picture of the individual”. The “craft of it” is that, despite being entirely created by clever algorithms and tech wizardry, its ‘voice’ is very human. You feel like you have sat down with an eminent psychologist. Bright Field Consulting works with school leadership teams, particularly if there are new team members. As Wigston says, the profile “gives us a picture of

the DNA of the team”. This can help greatly with improving efficiencies and performance. It is important work: there is more burnout in the teaching profession these days than in any other, apart from foreign exchange brokers. Wigston should know, he used to be a banker. The Insights profile can also help school children. Using the Insights Young Adult Profile for 15-year-olds plus, can, for example give “us a picture of why they might struggle with certain subjects” says Wigston. They have worked successfully with a variety of schools, including Thornhill Community Academy, the school featured in Educating Yorkshire and the Woodard Corporation, which numbers Lancing College and Ardingly College amongst its independent schools. Where it gets really interesting is the work Bright Field has done with both the teachers and the students in the same school. By gaining a psychological understanding of both, they have come up with some interesting ideas, not least that, in some cases, so-called bad behaviour in class or lack of academic attainment are sometimes because of a mismatch between teaching styles and students. Certain personalities learn in certain ways. As Wigston says: “If we work only with the leadership team or only with students –we can deliver that part of the equation – but if we work on both then we can say, this is how the pedagogy could be, in order to effect better results.” But before every pushy parent runs out to get their child profiled, take note. Wigston says that using a psychometric profile “is only one way of enabling a conversation to take place”. It should only be used in conjunction with coaching or guidance for that individual. Trust me, if you go down this route, you want somebody holding your hand. u

he A Level results are in and many students are about to embark on an exciting new stage in their lives as they head off to university. This is a time for celebration! Prospective students then have a few weeks for that trip to Ikea for university essentials and planning how to make the most of Freshers Week. It’s also a good time to think about what you want to get out of your university experience. A good degree, naturally; making new friends is also incredibly important; but what else is there? Academic results are only part
of the picture. Employers are looking for a wider skill set in an increasingly competitive workplace. A degree alone will not get you the job in a world where most candidates will be able to produce a degree of the same class or higher. In fact in this year’s CBI/ Pearson skills survey, 89% of employers said they valued the right attitudes and aptitudes above factors such as degree subject and degree class when they are recruiting graduates and professional services forms PwC and EY are now discounting A Level results and their usual 2:1 requirement. They are testing a different range of competences. Expect more firms to follow suit.

y memories of growing up in East London during the heady mid70s are rose tinted I’m sure. I remember balmy summer evenings spent playing football in the road with jumpers for goal posts and a real sense of community. One of my fondest memories is the day of the Golden Jubilee in 1977. The whole street was busy painting the curbs red, white and blue, with trestle tables as far as the eye could see, all overflowing with food and drink. London was buzzing and so was I, having come third in the fancy dress competition dressed as a natty little knight of the round table with a feather duster crowning my foiled helmet. At the age of 11 my family moved to Cambridgeshire, but the legacy of this time in East London lives on in the form of West Ham United, the team I support and the bane of my life! My first introduction to estate

CONSERVATION CRAZY Is London becoming one huge conservation area?
Y
ou may not realise it but more and more areas of London are being hyperprotected from change. There are 1,014 conservation areas in London (out of 10,000 nationally) that are increasingly eating up streets in the capital – with new areas being proposed in Brockley, South London as well as Dalston and Stratford. Some boroughs are keener than others: Lambeth, Tower Hamlets, Richmond-upon-Thames and Westminster all have more than 50 conservation areas – the average is around 30 – while Barking and Dagenham have just four. Croydon gets the top gong though, with nine of its 20 conservation areas created during a flurry of activity during 2008. Yet London is unique: it’s the only city in which Historic England can designate conservation areas as well as local planning authorities. But what exactly is a conservation area? Officially, it’s an area of ‘special historic or architectural interest,’ but they vary enormously and include small passageways, parks, industrial and transport heritage sites, remnants of small villages, town centres and, sometimes, entire areas – West Putney being a good example. Some

are stranger, like Botwell in Hayes, which contains the site of Nestlé’s former coffee factory. So, what is it like to live in a conservation area? One thing is for sure: figures show that conservation is good for house prices. In 2012 the London School of Economics (LSE) completed an exhaustive study of house prices and the results were eye-popping: raw data showed that conservation areas had a price premium of 23.1%, while even those waiting to become one were 16.5% more expensive than surrounding areas. Even if you take out factors such as existing architectural beauty and location, the research showed that even at a most conservative estimate, the price boost is between 8.5% and 9.5%. Also, conservation areas tend to rise in value faster than others – by 0.2%. What’s also interesting is that the people who live in conservation areas don’t mind the sometimes draconian architectural and planning laws that come with residency. The LSE canvassed residents in ten different areas and most, regardless of the downsides, appreciated their green, residential environment, neighbourliness and community spirit. These qualities must be amazing as the rules of living in a conservation are tough. For example, Hounslow’s conservation area around Gunnersbury Gardens Estate and Bedford Park regulates a range of alterations that include extensions, minor works, extra porches, exterior painting, new fencing, vehicle access and hardstanding – many changes that outside a conservation area would be allowed.

Conservation areas are not always leafy suburbs, with 85% of Westminster and 70% of Kensington and Chelsea protected within a conservation area. Meanwhile the early Georgian streets in the Elder Street conservation area, Spitalfields were recently saved from the developers’ wrecking ball. But what do you do if you have a more modest development proposal? The overriding question you need to ask yourself is whether the changes will ‘enhance’ or ‘preserve’ the area’s character. For example, an innovative new-build might enhance the area while an ugly extension wouldn’t preserve it. You have to “carefully assess what’s there, and how your new design measures up against the existing,” says Housebuilding & Renovating magazine’s design expert, Pete Tonks. But whether such considerations stretch to the world of aspic preservation, is for you to decide. u

DIFFICULT TO FIND Overall it’s difficult to find a property like this in London. There are only 632 for sale at the time of writing across the whole of the Capital – an indication of the property ‘drought’ many agents are talking about – there is much

A wealth of fascinating trends emerged. The postcode with the largest number of these properties is N10, better known as Willesden, while next on the list is NW4 (Hendon) with 23, SE19 (Crystal Palace) with 22, SE15 (Peckham) with 21, and SW2 (Brixton) also 21. You will notice something about these areas: they are all outside of central London. And, until relatively recently, they were not sought-after neighbourhoods, but are now.

But in London, unless you have a hefty joint income or family money behind you, properties are increasingly difficult to find – with or without Phil Spencer’s help. So, in a bid to help desperate dualbedroomed des-res seekers, here’s my research on where you should concentrate your hunt – and where it’s probably not worth bothering.

competition for properties like these. So where do you find them – or rather, not? They are particularly difficult to locate in West London (with the exception of Acton, Wimbledon, Tooting, Wandsworth and Streatham), while in East London, don’t bother other than in Bow, Leytonstone and Poplar. In North London they are rare except, as mentioned, in Hendon and Willesden. But it’s south of the river that you should venture if you want a good choice – South and South West London are where they’re at, reflecting this part of London’s lower house prices and greater number of Victorian apartments and new-builds. In particular you should make for Blackheath, Brockley, Kennington, Lewisham, Peckham, Crystal Palace, Anerley, East Dulwich and West Norwood, all of which feature flats of this kind in double figures. If you want a two-bedroom apartment with a garden for under £500,000 near to central London then there really only three choices Bethnall Green, which has a handful of ex-council examples, and Notting Hill and Shepherd’s Bush which offer, again, exclusively former local authority properties. u

The Right of First Refusal under the Landlord and Tenant Act 1987 may apply. To qualify: 1. Your building must contain at least two flats. 2. Commercial premises must not comprise more than 50% of the building. 3. More than 50% of the flats in the building must be held by ‘qualifying tenants’. YOU SEEM TO FULFIL 1 & 3 ABOVE Assuming that you fulfil all three requirements then where the freehold has been sold and the statutory requirements have not been met, this is an illegal disposal. It is a criminal offence to make a ‘relevant disposal’ without offering the Right of First Refusal to the qualifying tenants. You and your fellow leaseholders may have rights of enforcement against the new
