hristmas isn’t about presents. We have been told this many times, since we were old enough to know what Christmas was. And whilst it’s a lovely idea, Christmas would be pretty miserable without presents and we know it. With this in mind we have spent rather a long time compiling our Christmas Gift Guide. Bulging full of things we love and would adore to own [hint] we hope it is of use to you on your manic Christmas Eve shopping sweep around Knightsbridge. Giving and receiving gifts aside, what else is Christmas about? Oh yes, festivities. Such festivities often include fun things like dancing (‘fun’ if you’re good at it, that is). So who else better to interview than the best dancer on earth, Darcey Bussell? Darcey remembers how she got into ballet and tells us what she loves most about Strictly Come Dancing. In addition to this, she poignantly explains why she is now ambassador for the Borne initiative. If ‘donations to charity’ are on your Christmas list, make sure Borne is too. To me though, Christmas is mostly about one thing: family. Yes the Holy Family, but also my own, for Christmas without them would be truly dreadful. I am therefore delighted to include an extract from Andrew Birkin’s new book, about a very special member of his family – his sister, Jane – and her blossoming love for legendary singersongwriter, Serge Gainsbourg (because Christmas is also a bit about love – Richard Curtis knows what I mean). Before I buck up and re-purse my lips (which is the usual stance for us editors), I’d like to dedicate this issue to my family – without whom, I simply couldn’t be. ans Christian Anderson’s classic tale The Snow Queen gets the Walt Disney treatment with this new animated adaptation. Featuring an all-star cast including Kristen Bell, Idina Menzel and Jonathan Groff, Frozen tells the story of two princesses, Elsa (Menzel), who is heir to the throne, and her younger sister, Anna (Bell). Elsa has the power to create snow and ice at will, but when one day these powers get out of hand she runs away. Her sudden ab-
scondment triggers an eternal winter which freezes the kingdom of Arendelle. The evil Duke of Weselton (Tudyk) uses this to his advantage and turns the kingdom against Elsa, leaving her sister, Anna, to put things right. As Anna sets off on a dangerous adventure to recover her sister, with lots of friends in tow, the question is: will she succeed? This film initially experienced delays in production due to the difficulty of adapting the dark original fairy tale. They settled on presenting Elsa, the Snow Queen, as ‘misunderstood’ (opposed to ‘wicked’) which means it will satisfy all ages this winter. From 6th December, nationwide

Shunga are detailed depictions of erotic pleasure, usually in the form of albums of coloured engravings, created for amusement and were often used as sex manuals for newly married couples. Until the 19th century, Japan (which practiced the Shinto religion) was essentially cut off from the rest of Europe. Unlike Christianity, which shamed the human body, Shinto venerated sexual enjoyment. Taboo in westernising Japan for much of the 20th century, these exquisitely detailed prints and paintings inspired artists Picasso, Toulouse-Lautrec and Aubrey Beardsley. With the spread of woodblock printing, in the 17th century, Shunga became more freely available and a huge number were produced and circulated. For 300 years even renowned Japanese artists, including Hokusai, experimented with this erotic art form and it continues to inspire contemporary Japanese artists. Frequently tender and witty, Shunga celebrates erotic pleasure in all its forms in colourful prints and paintings. This catalogue accompanies the exhibition of Shunga art showing at the British Museum, until 5th January 2014. Shedding new light on this unique art form, the book would make a unique Christmas present for art lovers and will definitely spice up Yuletide! Parents should note that Shunga is not suitable for children under 16.

Catherine Hales discovers the joy of 'off-West End' with Victoria's St. James Theatre
nyone complaining about a dearth of theatres in London clearly hasn’t attempted to elbow their way through the West End recently. It’s not just the big musicals on seemingly endless runs or star-studded dramas either – boutique theatres located above pubs or occupying small studio spaces are hardly in short supply. Yet, considering this excess of venues, it is interesting to note that very few theatres occupy the middle ground, so important to a play’s development, that one could call 'off-West End'. Enter the St. James Theatre, brainchild of Creative Director Robert Mackintosh. The first theatre complex to be built in London for 30 years, it was designed by Foster Wilson Architects and it is home to 312-seat auditorium and a 100-seat studio theatre. It’s programme strikes a healthy balance between showcasing new talent and presenting more established names. As I approached the brand spanking new addition to London’s cultural scene, located on a relatively quiet street in Victoria, just a stone’s throw from Buckingham Palace, the choice of setting itself struck me as a shrewd

decision. Away from the tourist-saturated nightmare that is the area between Leicester Square and Piccadilly Circus the site holds a special allure for theatre-lovers put off by the mayhem of the West End. I had arrived at the St. James Theatre in the run up to the opening of Amanda Whittington’s drama The Thrill of Love (which received glowing reviews) and, as the theatre’s PR officer Julia Stidoloph showed me into the auditorium, the feeling of anticipation was palpable. As an absolute sucker for the theatre, and former aspiring 'thesp' myself, I could appreciate the thought that had gone into the design of the seating and the positioning of the stage. There isn’t a 'bad' seat in the house, as the graduated, amphitheatre-esque seating ensures every member of the audience has an unimpeded view – no peering out from behind pillars. The performance space is not your average raised
'proscenium arch' either but instead begins where the seats end and remains on the same level as the front row. Seeing the auditorium empty, but for the technicians putting the finishing touches to The Thrill of Love’s 1950s nightclub set, I could only imagine the intimacy and intensity this setup must foster. It was certainly true that, even when empty, the auditorium had a definite atmosphere, with its plush red seats and sultry lighting – an impressive feat considering ambience is usually the result of age and the patina of past productions. Guided by Julia, we made

a feature of St. James, and sat in the shadow of a staircase designed and sculpted by international award-winning artist and designer Mark Humphrey. Lady Lucy is such a fan that she actually wore a hat mimicking the design of the staircase to an event celebrating the opening of the theatre – as a result our chosen meeting point seems particularly apposite. Having gained experience in her role as Director of Development at the Regent’s Park Open Air Theatre and the Hampstead Theatre, Lady Lucy’s passion for this new venture shines through as she speaks. Her belief in its success has already been justified by a run of well-attended and critically acclaimed shows. Since my visit, I have returned to St. James' many times. First to see (as before) Cabaret Vox, and most recently to see their current show, In The Next Room. Hilarious and unexpectedly poignant, In The Next Room looks at how the first vibrator was used – this wonderfully progressive subject matter is indicative of

our way from the main auditorium to the studio, down a flight of stairs to the lower level of the complex. As I walked into the long, narrow room I found a contrasting side to the theatre and one which may well be its pièce de résistance. A small raised stage towards the corner of the room is home to a grand piano that is simply begging someone to sit down and start playing it. The studio’s vibe – with its kitted-out bar and intimate style of seating – is perfectly suited to the cabaret acts it’s becoming known for. It is in this part of the theatre that new talent is given the opportunity to shine. My estimation of the space’s potential was confirmed on a return visit to watch Cabaret Vox, a night emceed by Niamh McNally and featuring the vocal stylings of Femi Temowo and Alexander Stewart. After my tour I was given the chance to speak with Lady Lucy French, the Director of Development, who has been involved in the theatre since its inception. We met in the brasserie, which is very much

t seems too good to be true that a dinner named The Wonderland Dinner at the Hurlingham Club would actually be wonderful, but it was. Hosted by Rory Bremner, the dinner took place in aid of Borne, an initiative created by Chelsea and Westminster Health Charity and Chelsea and Westminster Hospital’s maternity team, to assist research into premature births. Guests included Darcey Bussell and Will Greenwood, and the dashing Mark Owen and Scouting for Girls gave special performances. Thinking Many of London’s free schools are daring to be different and prospective parents are all for it. Amanda Constance looks at what some have to offer... hat was a mere twinkle in Michael Gove’s eye a few years ago has given birth to an education revolution. Since the Education Secretary gave the first free schools the green light in September 2011, their number has grown to 174 nationwide with many more approved to open in the next academic year. Many of these are already attracting more pupils than they have room for. In a recent survey by the Department of Education, some reported as many as ten applications for every place. It’s a familiar story in London, where there is a critical lack of places at both primary and secondary stages, in both the independent and state sectors. Parents are queuing at the gates of the capital’s free schools, not simply because they don’t have other options. Free schools are just that, and the freedom for parents and educators to set their own curriculum has ushered in some innovative approaches that would have been unthinkable just a few years ago. Maria Evans is the vice-chair of governors at Gladstone Free School, a secondary free school in north-west London that will open its doors to students next September. Previously the director of education at the Royal Shakespeare Company, Evans has more than 25 years experience in art and

education and first looked into establishing a school at the behest of other local parents. ‘We’re setting up something enormously ambitious,’ Evans explains, adding that the teaching at GFS won’t deviate much from the national curriculum. ‘It’s not about changing the curriculum but about teaching it in a different and innovative way. We are looking at how we deliver teaching.’ GFS will be a small school, no more than 800 pupils, a luxury in inner London state education. It will have a mandatory extended day, with classes ending at 5:30pm except on Fridays. ‘Enrichment’ or extracurricular activities will be hugely encouraged and progressive teaching practices, such as moving around the room, experiential learning and lessons outside the classroom, will all form part of the core ethos. And before you imagine this will be an enclave for every Milo and Tallulah in northwest London, think again. GFS will be non-selective and teach mixed ability classes, with pupils drawn from the immediate catchment area. The team behind GFS took inspiration from Greenwich Free School, a secondary on the other side of London that now teaches years seven and eight and aims to have only 700 pupils when it is at capacity. It has a ‘high expectation, no excuses, no shortcuts ethos’, says its head, Lee Faith. The school runs an extended day

from 7:45am to 5:30pm and enrichment activities in the afternoon include Latin and debating. It is already seven times oversubscribed. The Judith Kerr Primary School, in Herne Hill, south London, offers something entirely different. It is the country’s first bilingual state school, with teaching in German and English. It began taking pupils, from the age of four, at the start of this autumn term. Another bilingual free school, The Marco Polo Academy, will be the first English-Chinese bilingual primary school in the UK when it opens in Barnet in September 2014. ‘The emergence of bilingual schools is a good example of how free schools are responding to the demands of local parents and driving innovation in schools,’ says Natalie Evans, the director of the New Schools Network, the charity set up to help people planning free schools.
And it isn’t just new schools that are taking up the free school baton. Established schools such as the muchadmired Burlington Danes Academy and gold-standard Marylebone Girls are extending their franchise with free schools. BDA will open a primary free school on its 10-acre site next September and Marylebone Boys will open to year seven boys at the same time. What marks out many of the free schools, however, is a return to tradition and academic rigour. When Fulham Boys, a new free school in south-west London held its first open day, 650 people attended. The secondary school is due to open in a temporary home in Fulham next autumn. Built on ‘Christian principles and values’, its website looks like that of a public school. Governors include Barrister Caroline Grieve, wife of Attorney General Dominic Grieve, and Elizabeth Phillips, headteacher at St Marylebone CofE School. This ‘old ways are the best ways’ approach has done well for the West London Free School. The headline-grabbing school is self-consciously traditional; Classics and Latin are compulsory, discipline is strict and competition is encouraged. Two years after opening, it remains hugely oversubscribed. They are controversial and not without their troubles but, whatever your political stripes, no one can deny that free schools are having their moment.

Beauty Edwina Langley talks lifesaving treatment and the best thing about Strictly Come Dancing to Darcey Bussell
W
hen I think of ballet, I think of polished wooden floors. I remember my blue leotard which looked suspiciously like a swimming costume. I recall my terrifying teacher, wearing pink character-sandals and thinking they looked awfully uncomfortable. But the ballet memory that stands out for me the most is undoubtedly how rubbish I was at it. Yes I tried my best, but grace and composure doesn’t come naturally to me. I was clumsy and oafish – a clodhopper. There was just no hope for me as a dancer. Which is why when Darcey Bussell, Britain’s best-known ballerina and Strictly Come Dancing judge told me ‘my mother sent me to a ballet class at the age of five because I had very knocked knees and [she hoped] this would help with my posture,’ I felt slightly as if I had cheated myself. Indeed when I read later that eradicating ‘clumsiness’ had also been behind Darcey’s initial uptake of the dance, I felt my lip curl. It could have been me. Darcey Bussell was born in Ashby, in 1969. Following her parents’ divorce, she moved to Australia with her mother who had recently remarried. Philip Bussell, an Australian dentist, became Darcey’s ‘new’ father when he, soon after, adopted her. When the family returned to England some years later, Darcey was encouraged to
join the Arts Educational School in London. ‘I wasn’t passionate about ballet when I started,’ she says, ‘I used to just do it because my friends did. It took me until about 12 before I really fell in love with it.’ At 13, she moved to the Royal Ballet Lower School, gained a place at the Royal Ballet Upper School at 16, and at 18, graduated to Sadler’s Wells Royal Ballet. The mind boggles at what vigorous

training she must have endured, not to mention the relentless pressure. One thinks of the 2010 film, Black Swan, and one’s stomach recoils, though Darcey brushes this off. ‘At a young age I did not notice the pressure. It was always about working hard and concentrating on what I wanted to achieve.’ Focus, I suppose, was the buzzword.
It was at Sadler’s Wells that she was spotted by choreographer Kenneth MacMillan, who snapped her up and offered her the lead role, Princess Rose, in his 1988 ballet, The Prince of the Padogas. A year later, she was offered Principal at the Royal Ballet – the youngest dancer ever to be awarded the honour. It seems lazy to say ‘and that, folks, was that’ but the thing is, it was. From there came such roles as Princess Aurora in Sleeping Beauty, Odette/Odile in Swan Lake, the Sugar Plum Fairy in The Nutcracker… you name it, she was probably in it. Performing internationally, as a guest of the New York City Ballet, the Kirov Ballet, the Paris Opera Ballet, Darcey’s appeal was global. In 1997 she married Australian businessman, Angus Forbes, and fell pregnant a few years later. What a fairy tale it must have seemed, so appropriate for someone who spent their life dancing in them. But suddenly the fairy tale paused, and in a dramatic turn of events, Darcey found herself fighting for her life. ‘Seven weeks before I was due to give birth I went to bed early as I felt unwell after a lunch event,’ she recalls. ‘As a dancer I have a high pain threshold, but I just didn’t feel right, so we decided to go to the hospital. Until this point I hadn’t had any problems with the pregnancy. I was initially sent home on bed rest, but the next evening I felt ill again.

My husband brought me to Chelsea and Westminster Hospital and it was there that Consultant Obstetrician, Professor Mark Johnson, saved both mine and Phoebe’s lives. I had pre-eclampsia and my organs were failing. Phoebe was delivered by emergency caesarean weighing just 4lbs. She was unable to breathe unaided and was transferred to the neonatal unit.’ Darcey was released from critical care two days later, but it took weeks for Phoebe to recover. ‘I was able to go home [from hospital] 10 days after but Phoebe had to stay. It was so strange to go home without our baby,’ she says. Phoebe is now a healthy 12-yearold, and has a sister, Zoe (nine), but unsurprisingly this near-tragedy greatly impacted the dancer. Darcey is now an ambassador for Borne, the collaboration between Chelsea and Westminster Health Charity and the maternity team at Chelsea and Westminster Hospital; an initiative designed to support research into the risks of premature birth. ‘In the UK alone, almost 80,000 babies annually are born prematurely,’ says Darcey, ‘which in turn is responsible for 70% of disabilities and deaths in newborns. The work of Borne is so incredibly important. It’s reassuring to know that, with Borne, the team at Chelsea and Westminster are close to some real breakthroughs that will improve the health outcomes of so many mothers and babies.’ Such a traumatic experience must have taken its toll on her body, but Darcey continued to dance – right up until 2006, when she retired as Principal of the Royal Ballet. She gave up ballet completely the following year. Her final performance was that of MacMillian’s Song of the Earth at the Royal Opera House, for which she received an 8-minute standing ovation. ‘It was difficult [retiring] in that I knew nothing else, but it was also not difficult as I had started young and been very fortunate in my career,’ she says, frankly. Is there one role that stands out as her favourite? ‘Not really. The repertoire was so large at The Royal Ballet and I enjoyed the diversity immensely. Swan Lake was the first classic I did as a Principal, so it always held a special place in my heart.’

For many, that would have been the green light to put one’s feet up and revel in retirement. But not Darcey. Since then she has undertaken all manner of other careers – model, author – and is now famously a judge on the much-loved BBC One show, Strictly Come Dancing. What a relief it must be to be on the other side of the stage for once, the one with license to critique. ‘There are lots of things I love, but mainly the journey they go through and seeing how much they get out of learning to dance.’
If anyone knows about a dancer’s journey, it’s Darcey. I wonder if she still lives it, maintaining the strict regime or does she plan to pile her plate high with turkey come the 25th December? ‘I will be in London with friends and family, enjoying all the treats of Christmas… but in moderation!’ Ah, moderation. No I would never have made a good dancer, which is just as well. For I can’t ever imagine coming even close to the same league as national treasure – ‘Dance-y’ Bussell. A couple of months ago, my hair was a mess. I had a wedding to go to and I couldn’t bear the thought of turning up at church and staring lovingly at the bride with her halo of flowers, whilst sporting a halo of ‘bird’s nest’ myself. Something had to be done. So I headed to HARI’s. In just over an hour, my hair was snipped, dried and styled. I had sunk no less than two cappuccinos and also enjoyed an expert back massage. REVIEW KNIGHTSBRIDGE GOLF SCHOOL ‘The difference between a good golf shot and a bad one is the same as the difference between a beautiful and a plain woman – a matter of millimetres.’ James Bond, Goldfinger (1964) tad misogynistic perhaps (Fleming wrote this in 1959) but anyone who has played the game will know what he was driving at. Sean Connery certainly took this to heart when preparing for the role in what was his third outing as 007, which saw him challenge Goldfinger (with Odd Job on the bag) to a game for the princely sum of one gold bar (£5,000 then – £563,108.70 today). Connery had extensive lessons at Knightsbridge Golf School and by his own admission, his lifetime love of golf started there. I model my swing (though not my private life) on Tiger Woods, so whilst I was interested to check out the facilities, which are just around the corner from my office, I arrived with the expectation of being offered a part-time job... The charming Steve Gould thought differently, and after 10 minutes of ultra-high-tech analysis we both agreed that I needed to go back to the drawing board. I must reluctantly admit that my new swing – which (albeit in its infancy) has transformed me from a low-mid handicap golfer to

a virtual novice – is: A THING OF BEAUTY. The Knightsbridge Golf system was first developed in 1930s and whilst the swing hasn’t changed, the school itself is truly stateof-the-art. Located in the basement of a swanky Lowndes Square residence, the school has six practice bays, four of which boast the ‘E6 True Golf’ simulator that allows you to play 89 of the world’s top courses, whilst giving swing analysis and statistics that would bore all but the most avid golfer into submission. The annual membership is £750 – which isn’t quite as cheap as Steve made out, but if it won’t make too much of a dent in the finances then I would highly recommend it. One criticism – as an after work activity I think they could install a 19th hole. Shoot low.

MY TIME BEGINS WITH JANE.
aaaaaaa-NER!’ was my earliest cry. Being a year younger, she was naturally regarded by me as my loyal cohort — a role she faithfully fulfilled until it dawned on her, all too soon, that she had a mind of her own. Nevertheless, for five halcyon years we existed in a bubble entirely of our own devising, on a farm of aching beauty in the depths of the English countryside. And so when, many years later, her marriage to John (Barry) broke up, I can’t pretend I was too upset, although it saddened me to see Jane so unhappy. The following spring I was back toiling for [Stanley] Kubrick – I had previously worked on his 2001: A Space Odyssey, but this time it was on his aborted attempt to film the life of Napoleon. My mission was to follow in the tyrant’s footsteps and photograph his every piss-stop through life, starting
in Paris. Since Jane was also in Paris with Kate [her daughter by Barry], making a low-budget French film to help offset the misery of her divorce, we decided to stay in the same small hotel in the shadow of Notre Dame. By day I would be off photographing Fontainbleau or wherever — sometimes taking Kate with me — while Jane filmed her mysterious opus, about which she waxed increasing frustration: ‘He’s horrible!’ ‘Who?’ ‘Serge Bourguignon!’ ‘Who?’ ‘Or Gainsborough or someone — the man in the film with me. He’s meant to be my lover but he’s so arrogant and snobbish and he absolutely despises me!’ This was my first introduction to Serge, and in truth not an unhappy one — I didn’t much relish the prospect of Jane swooning in the arms of some Gallic lover when she could be spending time with me — indeed the first such extended time together since childhood. But the more Jane remonstrated against this French fiend, the more I felt my situation threatened. ‘The lady doth protest too much, methinks.’ Days later, Jane asked me to join them for dinner and for my part it was love at first sight. Serge was so utterly different from anyone I’d ever met: shy and flamboyant by turns, with a boy-like lust for fun and a scabrous sense of humour. By mid-December, Kubrick’s Napoleon met its Waterloo when MGM decided to put his fabulous project on hold. Reluctantly I returned to England, saddened and jobless, but cheered to find Jane and Serge at home, in Chelsea, where Serge was about to get his first taste of a traditional family Christmas.
With a Christmas tree in place, and Silent Night wafting up from rosy-cheeked carollers warbling in the street outside, Jane cautiously produced a demo LP — one that she and Serge had recorded a month earlier but was not going to be released until the spring. She didn’t play all the tunes, but of the ones she did, Manon was my favourite, harsh yet full on romantic. Only later, when I’d ascended into the hermitage of my attic eyrie, did Jane come up to visit me alone, clutching the demo. There was another song on the album, one that she hadn’t dared play in front of our parents: Je t’aime… moi non plus. Shocked and seduced and thrilled by Jane’s orgasmic sighs to the dreamy melody, opulent organ and billowing strings, I was blown away. Everything about the soaring beauty of the song stunned my collective neurons, not least the title, which perfectly expressed Serge’s innate romantic cynicism. I’m not sure that I ever admitted it to Jane, let alone Serge, but that night I surreptitiously copied the entire album onto a cassette tape. I was planning to spend the next couple of months on Lundy — a remote island 30 miles off the coast of England, with no roads, no TV, no telephones, and nothing for company but thousands of seabirds, hundreds of sheep, a couple of lighthouse keepers, a big bag of dope — and Catherine, my French girlfriend. What finer flights of ecstasy could life hold than getting stoned and making love on a deserted isle to this dreamily seductive song?

ith Christmas fast approaching, one feels one should be on a diet preparing for it. So when I decided to pay Kurobuta a visit, it wasn’t because it was the most talked about Pop-Up restaurant on the King’s Road, nor because its founder is exNobu chef, Scott Hallsworth. It was because it described itself as ‘Japanese’, and in my mind ‘Japanese’ equals ‘healthy’. So the fact that the amuse-bouche of ‘Flamed Edamame Beans with Sake’ came dripping in lemon butter was of no consequence. Salt comes from the sea and butter contains calcium. And? It’s just as well I didn’t know at this point that ‘Kurobuta’ is a Japanese breed of pig. Before I launch into the other wonders I gorged on that night, I do have to say the restaurant had some ground to make up. For on arrival, the scrumptious Sophie (my dinner date) had shaken her head wearily and announced that ‘Black Cod Miso-Yaki’ was off the menu. They had ‘run out’, apparently. Imagine if you will, a child queuing for an ice cream. Two hours later, it reaches the front of the queue, only to be told that the last 99 Flake in existence was sold to the child in front of it, the one over there, slopping said ice cream onto its shoe. That’s what my miso crisis felt like to me. ‘Nooo!’ I wailed. ‘Yes,’ Sophie nodded. As I said, Kurobuta definitely had some making up to do. First up, was ‘Grains and Greens Salad with Honey-Soy-Miso-Dressing’. Delicious, healthful, sweet and salty, the only criticism I have is that eating quinoa with chopsticks is nigh on impossible. Spoons, Kurobuta, spoons! I then opted for skewered ‘Free Range Chicken Kushi-Yaki with Japanese BBQ Sauce’, which was sticky-heaven, whilst Sophie dived into the ‘BBQ Pork Belly in Steamed Buns with Spicy Peanut Soy’. She only managed one bun because they were so filling. I’m certain I would have gobbled both had I liked pork belly, but luckily I don’t because (as I said) I was on a diet. Next up, was ‘Spicy Tuna Maki Rolls’ which everyone reading this has probably tried, but not with Kurobuta’s ‘tempura crunchies’ they haven’t – an inspired textural addition. Alongside this we had ‘Sticky Miso Grilled Aubergine’, because we simply had to have miso-something, and it was so good we might as well have inhaled it off the plate. When it came to pudding Sophie suggested we share one. SHARE?! No, no, Sophie, no. We order one each and then ‘taste’ each other’s. That’s how it’s done. And
it’s just as well it’s done that way, because Sophie’s luxurious-sounding ‘Coffee Toffee Chocolate Treat’ wasn’t so much a ‘treat’ as a ‘trick’. It wasn’t a pudding at all, it was a nibble. And whilst it was an extremely good nibble, when divided by two, it became a morsel. My pud, ‘Carrot Cake with Shiso Chantilly, Umeshu Meringue, Shortbread and Yuzu Curd’, was slightly bigger. But whilst I was hoping for a stodgy triangle
to really sink my spoon (not chopstick, hurray!) into, instead what arrived was a modern ‘deconstructed’ number – a bit of sponge here, some cream over there, and crunchy bits in the corner. Yes when you’ve finally managed to slide a bit of each component onto your spoon and shoved it in, it tasted great. But all that ‘assembling’ is far to much like hard work when you’re so full you’re about to burst. Don’t make it harder for us piggies to scoff. I went to Kurobuta wanting a delicious, healthy dinner. And if I wasn’t so much of a pig, I would have got one. Which basically makes Kurobuta the perfect restaurant – for dieters, non-dieters, and all the piggies in-between. By Edwina Langley

FOOD&TRAVEL EDWINA LANGLEY: You have joined forces with Krug champagne to create the ‘Krug Kreperie’ – a champagne and crêpes experience in Covent Garden. How did that happen? PIERRE KOFFMANN: I think probably because I’m called ‘Koffman’ and they spelled ‘crêpe’ with a ‘k’, so it was the KrugKrep-Koffmann alliteration. EL: Are you a fan of Krug yourself? PK: Yes it’s one of the best champagnes. But I’m not mad about champagne in general. It’s mainly a girl’s drink. EL: Really?! PK: Girls love champagne, non? Don’t you like it? EL: Yes, I LOVE it, but I know lots of men who like it too. PK: Yes, but most of them are girls. EL: Men don’t like fizz. PK: That’s right. If it’s too fizzy, it can have a lot of acidity. But Krug is one of the best champagnes. You can take it like a wine – drink it with food. EL: What type of food – meat, fish? PK: Fish, not meat. Light food. Chicken. EL: How did you decide which crêpes to include? PK: We have three savoury and three sweet. We’ve got Crêpes Suzette and an apple crêpe. We had a meeting with Mr Krug to decide what is best and for the savoury, we went for something cheesy, salty, fishy. But it’s got to be light if you are going to eat them in Covent Garden. It can’t be a ‘meal’. EL: Will you serve them here at your restaurant in The Berkeley? PK: No, but in December crêpes will be part of the menu. In the run up to Christmas, we’re always very busy. EL: Do you ever get bored of making your signature dish, pigs trotters? PK: Are you bored of doing interviews? EL: No, of course not! PK: It’s the same non? It’s the only thing I know. EL: But you don’t get to talk to your pigs trotters. PK: Yes, well… I will be remembered only for them. When I die, I will have ‘Rest In Peace’ and then a pig’s trotter [mimes the outline]. It’s not boring. You don’t like to cook? EL: Yes I love to cook. But I won’t cook a dish repeatedly. PK: It’s not easy to do the same thing. To repeat it and do it well every time is not easy. But I enjoy it. My job is to make customers happy. EL: Is there a type of food you like to eat? PK: As long as it’s good, I like everything. There are only two types of food: ‘good’ and ‘bad’. When we were young, we were brought up on offal. EL: That’s when I read you developed your passion for food – with your maternal grandparents? PK: Yes, my grandparents and my mother. So yes, I like to cook everything. I like to feed customers and see them smile. EL: Do you come out into the restaurant? PK: No. But quite a lot of people come into
the kitchen. They want to take a picture with the chef; to put on their bedside, to look at before they go to sleep… EL: [laughs] You’ve worked with lots of different chefs, with Michel and Albert Roux at Le Gavroche... PK: You were not born then. EL: I wish I had been. PK: 1970. EL: What was that like? PK: It was very good, they were good years. But I didn’t originally come to England to work. EL: You came to see France vs England in the rugby at Twickenham! PK: Yes! In the seventies England had a bad reputation for food. So I came here to see the match, then I was then going to go on to America and Australia. That year the French beat England 35-3, so I was very happy. 43 years later, I’m still here. EL: Your restaurants have been situated mainly in Chelsea. Why? PK: That’s because I started in Royal Hospital Road [with La Tante Claire]. It’s a very nice part of London. Maybe if my first restaurant had been in Islington, I’d still be cooking there.
EL: I went to Clapham recently, to ‘Cactus Kitchens’ – home of BBC One’s ‘Saturday Kitchen’ studio. I remember you going on the show a few years ago and James Martin being very excited about it. PK: He’s a very nice guy. EL: Such a nice guy! PK: Are you in love with him? EL: Err, not exactly. You don’t do much telly stuff do you? PK: No, I leave it to James, he’s much better. I want to do Strictly Come Dancing. EL: Do you?! Maybe you should do ‘Strictly Come ‘Dining’…’ PK: Not a bad idea! EL: You’ve brought on a lot of chefs - Tom Aikens and Tom Kichen. Do you feel proud that you have managed to help the younger generation? PK: It’s nice to see those guys being successful. Some people say ‘it’s very nice, you taught them everything’ but I always say: ‘With a donkey, you don’t make a race horse.’ The guys came in and they wanted to be famous and good. So I just helped them. EL: Where do you like to go out? PK: Brasserie Chavot, Le Colombier.

EL: What’s your diet now? PK: My wife Clare is a very good cook. She’s better than me! EL: How often do you work in the kitchens here? PK: Monday to Friday. We start at 8am and finish around 11pm. It’s the only thing I know. It’s very nice – full of young people. EL: Is there ‘office’ banter? PK: Yes. All the 24-25-year-olds want to be famous on TV. EL: What do you think about that? PK: It’s not my thing. Some people are good at it. Like Gordon [Ramsay]. He does it because, well, he’s never in his restaurant, never goes to his restaurants. Once a year he will show his face and that’s it. But he’s good at choosing staff, Clare [Smyth] is very good. He’s good at something at least. EL: How do you recruit staff ? PK: We have different ways. Some people come to the door and say ‘I’m looking for a job.’ EL: Does that really still happen? People turn up with their belongings on a handkerchief tied to a stick? PK: [laughs] Yes. But some people just send me a letter. EL: Do you have a test for the new chefs – ‘make me an omelette!’? PK: No, we don’t do that. They come to spend a day with us. It depends which position they’ve asked for. You should come and spend time with us. EL: I would LOVE to! To eat the leftovers mainly. But you don’t have leftovers, do you? You are renowned for not wasting a thing… PK: I try not to because if you waste you’ve got to charge more to the customer. Sometimes people ask me to look at restaurants that aren’t doing well. There’ll be a chef who’s willing to buy a turbot for £18 and just use the fillet in rectangular pieces. That’s stupid. EL: What would be your birthday supper? PK: Before I die, let’s say before I die. Definitely a bouillabaisse. I’d start with a bouillabaisse, that’s my favourite, and a ‘croustade aux pommes’ to finish. It is a type of apple pie from the south west of France. EL: What would you have to drink? PK: A beautiful bottle of Burgundy. And with the croustade, a Bordeaux. EL: Will you take a few weeks off for Christmas? PK: No. We share the work. I take time off for Christmas and then work New Year. EL: Do you do turkey? PK: You’ve got to have turkey on the menu in December. EL: How do you properly cook one? PK: By not overcooking it! It’s maybe the last tradition in England. RECIPE FROM PIERRE KOFFMANN’S KRUG KREPERIE
CRÊPE BATTER Makes 15-18 large crêpes 350g flour, sifted 100g sugar 6 eggs 1kg milk 70g melted butter Zest of 1 orange Zest of 1 lemon Combine eggs and milk. In a large round bottomed bowl, mix together the flour and sugar. Make a well in the centre of the flour mix, and add 1/3 of the milk and egg mix. Slowly incorporate the dry ingredients; avoid making any lumps. Whisk in the remaining liquid until smooth. Add the cooled melted butter, both zests and whisk until combined. Place the mixture in the fridge, and rest for 12 hours. To cook, lightly oil the crêpe pan with a lightly oiled cloth. Pour in a ladle of batter and using a wooden rake, gently spread the batter to the sides of the crêpe pan to form a circle. When the top of the crêpe looks cooked and the edges begin to crisp slightly, carefully lift the crêpe using a flat wooden spatula. Cook for about a minute on the other side until done and lightly golden brown.
CRÊPE FLAVOURS CRÊPES SUZETTE Makes 18 portions 400g sugar Zest of 1 orange 80g lemon juice 800g orange juice
200g Grand Marnier 200g gold rum 450g diced butter A few orange segments Make a dry caramel using the sugar and de-glaze it with both juices and the orange zest. Boil this for 5 minutes and remove from the heat. Whisk in the Grand Marnier and rum. Blitz in the butter. Add the orange segments to the sauce just before plating.
SPICY APPLE CRUMBLE CRÊPES Crumble: Makes 15 portions 100g flour 100g soft butter 100g sugar 100g almond powder 10g ground ginger 10g five-spice 4g ground cinnamon 2g salt 15g confit ginger, finely chopped Apple caramel: Makes 8 portions 250g sugar 100g butter 5-6 diced apples For the crumble, mix all the crumble ingredients together and rub with your fingers to make a light, crumbly pastry. Spread out the crumble mix on a baking sheet and bake for 10-12 minutes at 170˚C. Once cooked, add the finely chopped confit ginger. For the apple caramel, make a dry caramel with the sugar. Add the butter and apples; cook until the apples are tender. Serve both over a crêpe.

Preheat the oven to 170 oC. For the pastry, cream the butter, sugar and vanilla essence in a bowl. Separately, mix both flours, xanthan gum and salt. Now combine the contents of both bowls and mix together to form dough. Knead for 1min. Wrap in cling fi lm. Refrigerate for 30mins. For the fi lling, combine ingredients, place in blender, and pulse until it becomes a rough consistency. Lay out a muffi n tray and line with a little vegan butter. Roll the pastry on a rice-floured surface until 3mm thick. Then, using a cutter, stamp out rounds and re-roll the trimmings to get 14. Use the cut-outs to line the base of the tins. Dollop 1 tbsp of mincemeat on each pastry cut out (don’t overfi ll) then with a star-shaped cutter, cut out 14 stars and place over the top. Put mince pies into the oven for 15mins. Teenagers are tricky customers, but the Swiss resort of Laax might just be the answer, says Georgie Lane-Godfrey
A
s I carefully pick my way down the sheer face of a monstrous mountain masquerading as a black run, a blur of neon whooshes past me. What appears to be a medieval jester on skis is in hot pursuit. Apparently it’s not vertigo-induced lunacy but just another morning on the slopes of Laax, the very coolest of the ski resorts in Graubünden, Switzerland. Having recently undergone a reinvention to become the freestyle capital of Europe, Laax is now packed with neonclad, powder-junkie, youthful energy. You probably won’t have heard of it. The region of Flims–Laax is still relatively unknown, despite its reputation as one of the most snow-sure destinations in the Alps. At just 1hour 40minutes from Zurich, it’s close enough to make childladen transfers bearable, yet slopes are surprisingly uncrowded. Plus, with an almost perfect split between the levels of difficulty of each piste, it’s a practical choice for families with varying levels of ability amongst them. When we visited in January, conditions were perfect and the slopes were all but deserted – a skier’s dream. But then, it’s not just the weather here that’s appealing; Laax boasts the largest half-pipe in Europe and enough snowparks to occupy avid snowboarders and skiers for days, so much so that the annual Burton European Open snowboarding championship takes place here. We travelled with Putney-based luxury holiday company Powder Byrne, who seem to have nailed the art of making family ski holidays enjoyable for all involved. Focussing on the idea of ‘bespoke experiences’, they’re very good at taking the stress out of skiing: personal travel consultants, private transfers (and flights, should you wish it) and a
complimentary ski guiding service for the duration of your stay too. This service is not just for the grown-ups; the Freezone Ski Guiding is specifically for teens who want to ski with friends but still need, ahem, adult supervision. These guides will take you down the best runs for the conditions, avoid those annoying bottlenecks and secure the best tables for lunch. They also happen to mainly be made up of rather handsome men in their early twenties, which is guaranteed to put a smile on your teenage daughter’s face… Meanwhile, PB’s Yeti Club can keep pesky younger siblings entertained. Divided up into different programmes depending on age group, the club organises skiing during the day and activities in the evenings – from painting and sing-alongs for tots to bowling and ice-skating for tweens – so that parents can ski in peace. Alongside these programmes run more advanced ski instruction such as the Freestyle Course, which teaches how to ride the half-pipe, parks and rails, and develops technique for the snow park and freeskiing. Perfect for daredevil teens, classes take place both out on the slopes and in the Freestyle Academy at Laax Base Station. Rather impressively, The Academy is Europe’s first indoor freestyle hall, and is filled with trampolines and squidgy foam pits to let pupils practise big air tricks in safety before hitting the dedicated Fun Park on Crap Sogn Gion. Crap, incidentally, means rock in Romansh, one of the four national languages of Switzerland, and the local ‘Crap Bar’ in Laax will solicit a snigger out of even the most moody of teens. Further adding to Laax’s cool credentials is the resident Porsche chair lift. A sleek black beauty and world first, it swivels to take you up the mountainside to Crap Masegn at a civilised 45 degree angle, allowing you to enjoy views of the Alps rather than the woman in far too tight salopettes in front of you. It also boasts solar-powered heating, making it one of the few ‘green’ ski lifts in the world, (alongside one powered by cow dung in Vermont, naturally). Built at the turn of the 19th century, the hotel still maintains much of the grandeur of the era as is brimming with character. It’s an eccentric kind of place – there’s a dedicated hotel museum – and although some of the décor might be a little dated, it’s all part of the Waldhaus charm. The real draw though is the spa. With six saunas, a floating suite, a huge gym, an indoor swimming pool and an enormous range of beauty treatments, it’s a real beast of a place – which is just as well since the heated outdoor massage pool’s views across the mountains really draw in the visitors. Lazing amongst the bubbles as the steam blurs the alpine scenery, it really is the most fantastic way to soothe sore muscles after a long day of skiing. But if your muscles aren’t sore and the 220km of skiable terrain isn’t enough for you, it’s only just over an hour’s drive to Lenzerheide, a lesser-known resort popular with those looking for something off the beaten British-tourist track. Lenzerheide feels like something out of the 80s, filled with battered T-bar lifts and Germans in dodgy multi-coloured onesies, yet if you look past this you’ll find a relatively undiscovered gem which is set to be Switzerland’s hot new ski destination. This is thanks to a new ski lift that is due to open in 2014 linking Lenzerheide to its slicker neighbour, Arosa. Filled with wide, cruisey runs and fantastic hotels – the stunning Tshuggen Grand Hotel with its Michelinstarred restaurant and world-class spa being a prime example – it’s no wonder that Arosa got the royal seal of approval (Prince William was spotted skiing there earlier this year). Of course, that’s all great to know, but you’ll most likely have a hard time dragging your teens away from Laax for the day. Or home for that matter. Good luck with that.

I
t’s Sunday 6th January 2013 and I’m standing outside 29 Harrington Road, SW7, the site of our brand new South Kensington office and my new command is due to open the following Monday. My first thought is that there’s no way on earth it’ll be ready in time and panic starts to set in. The hoarding is still up, wires are hanging everywhere, builders are jostling for position and the place is, in general, a building site. “Don’t worry William”, Bartek, our facilities manager says, “remember Pimlico?”. How could I forget Pimlico? A similar opening in 2007 and the first Marsh & Parsons office I was tasked with opening. Things went incredibly well then – we opened up exactly to schedule and the office went from strength to strength, despite the rather difficult trading conditions of 2008. Since then I have had the opportunity to set-up and run the Chelsea office. That’s one of the amazing qualities about working at Marsh & Parsons. If you can show yourself to be up for the challenge and can achieve great results for clients, then progression and opportunity is rife. We are a forward thinking company with a powerful brand that focuses on delivering the best price at the same time as delivering the highest level of customer service. Sunday 13th, the day before we are due to open the doors for business and I am standing on Harrington Road again. This time things are looking totally different and I am filled with confidence. Bartek is smiling and I know he’s thinking, “I told you so!” Apart from a few final touches, including finishing off our giant media
wall, we’re just about ready to open the doors. As before, we opened right on schedule and to a much more positive market. Things had been a little subdued since last year’s stamp duty hikes for properties north of £2m, but everything below this level was attracting a lot of interest. My diary was packed with valuations and the expectation was that spring would bring plenty of new business. And it did. Credit controls became a little more relaxed and obtaining finance was that little bit easier. We saw a huge increase in the number of buyers taking advantage of record low interest rates, many of which locked in for five-year terms. Cash buyers were still in abundance, mainly from overseas, looking to acquire a secure, tangible asset. The summer was active, but noticeably slower, as it always is, with most of our transactions taking place in the flat market, young professionals tend not to be away for the entire month of August! After the schools went back, the market predictably picked up. I say picked up, but really I mean new buyer registrations went through the roof as we reached an all time high in SW7 of 21 buyers for every one property on the books. The level of new properties coming to market was frustratingly low, and is still an ongoing feature of today’s market. I believe this will remain so, until interest rates pick up in the not too distant future. And so to now. The economy is buoyed with confidence as we head into the Christmas period. Properties for sale remain limited and demand is cautious, yet plentiful. his depends on what type of investment you are looking for – whether you want steady and secure growth or are prepared to take a risk in a less proven area in search of a quick gain. Traditionally, the prime areas of Chelsea, Knightsbridge, Belgravia, South Kensington and the like have been popular with investors moving money from foreign, more turbulent economies, as they are seen as steady areas of London that have seen slow but have had regular growth over the years. Alternatively, there are less prime areas of London that have not yet seen the sudden rush of buyers, who are struggling to find stock in more prime areas. Some investors are looking to these areas to buy up property in the hope that it will receive a sudden uplift in value.

Ben said, “I decided to start volunteering for Crisis because I find it shocking that such a wealthy and developed capital like London, has so many homeless people. he whole letting and management process is extremely time consuming and a reputable agent will ensure that this process is eased by finding good tenants and by doing thorough reference checks. There are constant changes in legislations which the agent will check are in place within the Tenancy Agreement. They ensure rent is paid on time and that upon renewal the terms and rent increases are negotiated. There is a stream of paperwork and there are many, many problems that can occur in a property during a course of a tenancy and the agent has a huge database of contractors who have provided them with copies of their Professional Indemnity Insurance and with whom they can call on 24 hours to deal with the extensive range of issues including plumbing and electrical issues.

I
n our experience, we find that wellpresented and looked after properties attract the best calibre of tenant. Being clear on who your tenants are likely to be – young professionals, families, etc. – and making the property appealing to them also helps. Décor, fixtures and fittings, furnishings and any included extras could make the difference in attracting the best tenant. Properties that have not been well maintained by the landlord will not be shown the same respect by the tenant, which can result in even greater wear and tear this isn’t always the case but it is certainly worth noting.

Currently there is an oversupply of rental stock across the middle lower markets in prime central London. Despite the lacklustre general economic conditions, rental yields in the area are improving alongside gains in house prices. As demand exceeds supply, landlords are faced with the challenge of providing enough good-quality rental properties to meet this market.

y personal rule of thumb is never invest in a property that you wouldn’t be prepared to live in. This only works so far – but makes you think about light, space and noise carefully. From a maintenance point of view, dealing with a managing agent rather than having a share of freehold in a conversion can be more straightforward, and often modern blocks are easier to maintain. Our sales department have recently sold properties in Montaigne Close on Regency Street – a modern development with parking, gym, lift and concierge, to UK based investors.
I
n Chelsea there is a wide variety of profiles when it comes to private renters. Wealthy students from overseas, corporate tenants that are being relocated to London for their job, young European professionals working in the City and high net worth individuals who live abroad but wish to rent a base in London. The ‘corporate’ tenants are no longer as heavily dominated by bankers – we are as likely to deal with someone working for a big bank as we are someone working for Google or Amazon.
