I

t’s January. Thank goodness. At the risk of sounding like an over-enthusiastic and particularly irksome sports nut, I simply cannot wait to get healthy. I have never done ‘dry January’ and don’t think I have ever detoxed either. But this year will be different. This year shall mean ‘health’ and ‘happiness’. And this will be the case, because I say so. On that very determined note, I am delighted to present this, our Health Issue, which we have put together just for you (and a little for ourselves, as some of the things here are really quite useful). Our Body Guide – called Top to Toe – explains how to get the best complexion, the best bod, and some rather fancy Profeet footwear to help you get the best legs too. Our food pages have ‘health’ written all over them – not least, our chef Q&A, where the Michelin-starred Phil Howard tells us where his restaurants’ veggies are sourced from (clue: Fulham Palace Gardens). Taking a break from health for a minute, I had one of the most exciting interviews of my life. Legendary photographer Terry O’Neill (whose exhibition at The Little Black Gallery starts this month) set my ears on fire with tales of Frank Sinatra and Liz Taylor and Nelson Mandela and… (for everyone else he spoke about, see interview). Back to health, fashionista Violet Naylor-Leyland shows us where to shop for sporty garb and Simon Moore describes the joys of healthy hands and manicures for men. YES! Health, health, health – and a touch of Hollywood – was this issue’s theme, and I hope you feel healthier just for reading it. I’m off now, for a carrot-lemongrass-spinach-strawberry-celery smoothie. Giselle tells the story of a young, innocent country girl who falls deeply in love only to find out the object of her affections is betrothed to another. Cue the slightly unbelievable ‘death by broken heart’. SAVING MR BANKS Directed By John Lee Hancock

E

mma Thompson, Tom Hanks, Mary Poppins – what’s not to like? How could Disney’s Saving Mr Banks not impress an audience? Well... Based on the story of Disney’s film Mary Poppins, Saving Mr Banks follows Poppins authoress, P. L. Travers (Thompson) as she ventures to Hollywood to battle out the terms of her book rights with Walt Disney (Hanks). Flashbacks from her Australian childhood occur throughout – a time spent with a fantastical father (Colin Farrell) who turns to alcohol to escape the pitfalls of reality. Now, this might initially sound quite intriguing. But if you, like most of us, have already seen Mary Poppins, in reality it’s not that intriguing. Why? Because we know what happens. Travers is determined not to let ‘silly cartoons’ or ‘songs’ anywhere near the script, but we know from the outset she fails.

We know when scriptwriters suggest Mrs Banks is a suffragette, they win, that Dick Van Dyke gets the role of Bert (in spite of Travers’ reservations), and that when she storms out of Hollywood, script in hand, that she eventually hands it back to Disney. What’s interesting to us, therefore, is what makes her change her mind. According to this Disney interpretation? She just magically does. Over the song, Let’s Go Fly A Kite, and a quick cuppa with Disney. How very convenient. There is no mention of what really happened; that Travers was so upset by the use of cartoon she had a showdown with Disney at the Poppins premier and withdrew all rights to her other books. No, no mention of that at all. And this film was made by Disney. Hmm. Interesting... Whilst the Australian flashbacks are nice to look at, and Thompson and Hanks are, yes, good, this film fails to excite. So, whilst the world awaits Oscar-glory for Saving Mr Banks, I just hope that I, too, am saved… from ever having to sit through it again. By Edwina Langley AT CINEMAS NATIONWIDE

his particular event actually qualifies as ‘Another Country Diary’ but we couldn’t resist. Few places embody old world romance more than Monte-Carlo. Although the jazz-age crowd are long gone, the scenery and decadent spirit endure, making the Historic Monte-Carlo Rally as thrilling as ever. Since the first race in 1911, the competition tests the roadworthiness of new cars and winning has often meant international success. Riverside Studios, 14 Jan A unique take on the gendered issues of the 21st century, the London Short Film Festival pulls no punches in its exploration of the plight of the modern man – caught halfway between society’s demands for reform and its demands for machismo – and of the increasingly solitary life of the British bachelor. wo new brilliantly written autobiographical books from our most treasured local writer London Evening Standard’s art critic, Brian Sewell – deal with the author’s lifelong passions for art, dogs and sex. Outsider II is the second gripping volume of Sewell’s autobiography and continues his extraordinary life story after leaving Christie’s in 1967. This scandalously delicious book gives an honest and candid look at a lifetime of art and amorous encounters. As a handsome, young man, Sewell posed naked for the voyeuristic and impotent Salvador Dali in Cadaques. The most fascinating chapters examine the author’s long affair with art connoisseur Anthony Blunt, Keeper of The Queen’s Pictures and the fourth man of the Cambridge Five spy ring, and his consequent fall from grace. Sewell brilliantly captures the atmosphere of the Bond Street art world, populated with a colourful cast of suave and roguish art dealers galore, against a backdrop of art of frequently doubtful provenance. Throughout his life Sewell has been devoted to dogs and they have adored him in return. In Sleeping with Dogs he shares treasured memories of the numerous fourlegged companions he has owned – many of which were Mayhew rescue dogs. aphne. Don’t you love the name? If I ever got another dachshund, I think I would have to call her Daphne. Meanwhile, at this time of year, I love my Daphne bholua ‘Jaqueline

Postill’. Her dense clusters of perfectly pink flowers are just about to unfurl and release such a delicious perfume that it lifts spirits and makes you believe that you are not stuck in a cold, wet wind tunnel for another four months, but in fact somewhere balmy and tropical and exotic, with a book under your arm and a hammock nearby. I promise – stick your nose in one and you will see I am right.

t’s not every day we find DJ of the moment, double MOBO award-winner, Naughty Boy, in town, so we naturally hurried down to Raffles to hear him play (and celebrate the club’s 46th birthday). Guests including Shingai Shoniwa from the Noisettes, raised the roof to such tunes as La La La, whilst eager drinkers encircled the bar to the tune of ‘me-me-me!’ What a sing-song it was.

SOME ARE BORN GREAT Iconic photographer Terry O’Neill delights Edwina Langley with tales of Sinatra, the Stones & a starstruck Liz Taylor I’ve met many great people in my life, but I must say [Nelson Mandela] was the greatest of them all,’ says photographer Terry O’Neill, staring me straight in the eye. ‘I was his ‘90th birthday present’, we spent eight days in a hotel room, and I [photographed] the whole world [that] came to see him – Bill Clinton, Oprah Winfrey, David Cameron. When he left, he gave me a little wave from the car and I nearly burst into tears. Because I realised I’d met one of the great human beings of all time.’ Nelson Mandela has received some serious accolades since his sad death last month, but in my opinion, O’Neill’s is one of the best. Not just because he has known and photographed almost every 20th century icon there is – Frank Sinatra, Audrey Hepburn, Paul Newman – but because he’s honest about what he sees. He’s a straight talker who doesn’t mince words, which I find refreshing. Mick Jagger is ‘a control freak’, whose singing he doesn’t get, O’Neill has ‘never’ been starstuck, and he ‘hates’ having his photograph taken – ‘as much as Robert Redford.’ It’s not that he’s brusque, quite the opposite, he’s just not a sycophant and I can’t imagine he suffers fools. ‘I judge people on what I see,’ he says. What better mantra could one imagine for a photographer? Terry O’Neill was born in 1938 in Romford. He had aspirations to be a jazz drummer but his mother steered him towards the church. ‘I got picked out to study with the priest and monsignors. I didn’t enjoy it – I was a kid, only 11. I got told I asked too many questions. So they said it would be better if I stopped.’ At 14 years old he started playing the drums in jazz clubs, backing up famous

guests, and took up photography around that time, ‘accidentally’. His first job was with British airline BOAC in 1959, where he was tasked with capturing travellers flowing in and out. Unbeknownst to him, one of those he snapped turned out to be the Home Secretary, Rab Butler, asleep in a waiting room. The picture appeared on the front cover of The Sunday Dispatch and, shortly after, he was hired by The Daily Sketch. ‘They foresaw what was going to happen in the Sixties. One of the things was photographing pop groups. On my first job, I was sent down to a studio, and there was a group called The Beatles recording Please Please Me. And that was the start of my career, really.’ When the photograph was published (albeit three months later) the paper sold out and O’Neill was sent on similar missions. ‘I loved the Blues and The Rolling Stones were the only English group playing it. They played all these Muddy Waters songs down in Richmond – that’s where I saw them. But they [The Daily Sketch] were horrified by my pictures; they thought they looked like five prehistoric monsters. So I had to find another group, Dave Clark Five, who’s picture we ran alongside theirs [with the headline] ‘Beauty and the Beast’. That was the start of pop pictures in newspapers.’

A photographer in the eye of a cultural storm, O’Neill must have felt like he’d hit the jackpot. But he is adamant that’s not how it was. ‘I used to go to the Ad Lib club every night with The Beatles. We used to talk about what job we’d get when it was all over. We all thought we’d wake up one day and get a proper job. Ringo wanted to own a chain of hairdressers – for his wife!’ But as history relates, the bubble didn’t burst, it only got bigger. At 24, O’Neill went to America on an assignment and was flummoxed – he was the man Hollywood wanted to meet. Why? Because he knew The Beatles. ‘It was then I realised what was going on in England – and outside of it. You couldn’t see the effect that music had on the world. It was like a mania.’ Work flooded in and in 1964, O’Neill left The Daily Sketch to go freelance. Gaining a reputation as ‘photographer to the stars’ it was his friendship with Raquel Welch that won him his life-changing assignment – unadulterated access to Frank Sinatra. ‘I went on this film to shoot Raquel Welch and I [talked about Sinatra] to Ava Gardner, who I knew and was there. She wrote a letter of introduction. She said, ‘Stand there, with this letter.’ Around the corner, there he came. I’d never seen anyone with bodyguards. Anyway, he turned out to

be a gentleman – so kind. He read [Ava’s] letter and said ‘Right, you’re with me.’ For the next three weeks, I could go anywhere with him. But he didn’t acknowledge me. I realised when I got back to England, what a gift he’d given me. He’d opened up exactly how to ‘be’ with a major star. But he only did that because he was still in love with Ava Gardner.’ Terry paused for effect as I, and this magazine’s arts contributor, Nicholas Campbell (who insisted he came along), gasped in unison. Terry continued. ‘He was married to Mia Farrow at the time, but it wasn’t working out. He always loved Ava. He’d send across [his] albums, and I used to sit with her and we’d listen. One time, the phone rings, and it’s him, from LA or wherever. She starts picking the album apart, track by track. In that one conversation, I learnt that he was truly in love with her. Because I could hear the hurt in his voice. All he wanted to hear was: ‘You’re a great, great singer Frank!’ It was two people who were in love and it just…’ He mimes snapping something in two. But was she in love with him? ‘Yeah, in a way, but he was more in love. When a bloke loves a girl, they don’t get over it.’ Spoken like a man who knows a thing or two about it. O’Neill himself has been married three times. First, at 21, to actress Vera Day (with whom he had two children), second, to actress Faye Dunaway in 1983 (with whom he adopted a son), and now, to former model agency head, Laraine Ashton. Ashton and O’Neill have been married for over 12 years, and it was she who supported him through the dreadful period, seven years ago, when he suffered from bowel cancer.

A picture of health today, he takes Nicholas and me through his most recent (and gigantic) book of work – a collection of photographs from his current exhibition at The Little Black Gallery. He flicks past a picture of Jean Shrimpton. ‘Best model ever,’ he says wistfully. ‘Didn’t you have a love affair with her?’ I ask, though I already know the answer. ‘Yes,’ O’Neill replies. ‘She was very picky.’ He continues to regale us with stories about his past subjects. When tasked with photographing actors, old and young, for the 75th anniversary of Paramount in 1987, O’Neill recalls finding Liz Taylor hiding in a corridor. ‘I said, ‘What are you doing out here? You’re the top star in Hollywood!’ – I used to talk to them like this, I wasn’t anybody – ‘Everyone adores you, what are you doin’?’ And she says, ‘I don’t know, I’ve never met Harrison Ford. I’ve never met Robert De Niro.’ So I said, ‘Come with me,’ and I walked back with her on my arm.’ He has no regrets about turning down a job with Marilyn Monroe, because he was dating her PR girl at the time – ‘I won’t tell you her name because I don’t want to embarrass her’ – and claims Ava Gardner was ‘definitely’ the best looking of all. Unsurprisingly, he’s very much still enamoured by that momentous era. To O’Neill, they don’t make ‘em like that anymore. ‘The day of the movie star is over,’ he announces, despairingly. ‘They make comic book films now, about Spiderman and Batman. It doesn’t mean anything.’ I’d read somewhere that Angelina Jolie is the only Hollywood star he’d consider photographing now. ‘Maybe,’ he replies. ‘I’m not really that bothered.’ Today, he lives in Battersea, but isn’t

tied to the area particularly. He used to have a studio in Sydney Close and also once lived in Knightsbridge. An avid football fan, he talks enthusiastically about a match the night before, and in fact, I get the impression the reason he agreed to an interview with us was because this magazine is distributed in Chelsea. ‘Good,’ he says. ‘Good football team.’ It therefore makes sense that the only job he’s done recently was photographing former Brazilian footballer, Pelé, for the 2014 World Cup. ‘I can’t find anybody now,’ he says, matter-of-factly. ‘Amy Winehouse was the last. She sang at Nelson Mandela’s concert and I needed her to sign a picture for him. She’d just come out of The London Clinic for the night to sing. She was in rehab there and she looked healthy. A really nice girl. It was a shame; she’s one of the few people I did want to photograph. There’s nobody I want to photograph now.’ I have tried my best to include as much about this extraordinary man, and his extraordinary career, as possible. But with so many stories to tell, it’s impossible not to feel I’ve fallen short. It’s just as well the blue-eyed man doesn’t deal in words. He deals in pictures. Great pictures. Ones we only need glimpse at to imagine the stories behind them. He has photographed all of the greats, and met the greatest human being of all time as well. I think that makes him, like them, pretty great too.

uring the winter months, skin is exposed to external drying factors that can lead to flakey skin, dehydration lines and dullness, as well as the damaging excesses of the holiday season. To restore brightness and evenness, start the new year following three steps religiously, twice a day. Cleanse, nourish and protect in the morning, and cleanse, nourish and treat in the evening. Salicylic acid cleansers are great for acne-prone, oily and acneic skins as they encourage skin cell turnaround and clean pores of any dirt, dead or flakey skin cells. Prepare as much of your meals yourself and aim for 15 of your 21 weekly meals to be lean and lovely.

Step 5 SLEEP YOUR WAY INTO YOUR SKINNIES Sleep helps weight loss by improving your hormone function and mood. The better you feel, the more likely you are to train effectively and eat intelligently too (a client who sleeps well for eight hours can lose 30% more fat than a sleep deprived client – the impact is profound).

Step 6 RIP THE PLASTER OFF QUICKLY, THEN BALANCE Know exactly what you want to achieve, have an intelligent plan to get there and start ONCE. Go directly to your goal by practising consistency over severity, before moving to a more balanced lifestyle approach once you’ve achieved your goals.

I

went to a podiatrist recently who told me there was no hope for my feet. They look like claws, my arches ‘had collapsed’ and I had irreversible bunions. It was really quite distressing. Since then I have walked the streets of London in fear of what this, my only form of daily exercise, was doing to my dear tootsies. I have lived in Nike running trainers for four years now, solely because I was told by a salesperson that they were good for me. It’s just impossible to know who to trust these days. It was therefore with trepidation that I approached the gleaming glass doors of Profeet in Fulham, one evening. I knew my feet were beyond repair and I didn’t particularly need reminding of this, but I did want to at least try to stop them from getting worse, hence my visit. Light, bright and modern, the interiors of Profeet scream energy. Beaty music pumps from speakers, telly screens project films of sporty people running and climbing glaciers with big grins on their faces, colourful trainers are displayed on walls like trophies, and treadmills stand determinedly in front of a bank of Apple Macs. It was all very technical - and it meant business. Healthy business. So the fact that when Footwear Manager, Richard Felton, found me, I was in the middle of emptying half

a sugar dispenser into a mug of complimentary steaming tea, I don’t think he was particularly impressed. Indeed, when minutes later, he inspected my rotten trainers to find them holed and held together at the heel by blu-tack, I was ready for him to ask me to leave. But he didn’t. In fact, he rather surprised me by saying they had been a ‘good’ choice. I told him I’d chosen them myself and didn’t mention the salesperson. Then followed an initial measuring and inspection of my crone’s feet, where poor Richard had to touch them without gloves. Much to my (next) surprise he said they were actually in good nick. My arches hadn’t collapsed and whilst, yes, I had bunions, he could easily stop them getting worse and therefore, what was I fussing about? I must say, dear reader, this was all rather exciting. I actually began to enjoy myself. Until…

The treadmill. I was asked to ‘hop’ onto a treadmill for a ‘professional gait analysis’. This was my least favourite part. Not because I had to walk on the dreadmill [sic] but because I was filmed by a high-tech camera, walking on the dreadmill. As I walked/jogged, footage of me thundering away was streamed onto an Apple Mac in front of me. This was so Richard could assess whether I walked with my toes out, in or ‘neutral’, whether I landed on my heels first, toes or correctly ‘mid-foot’, or whether I had knee valgus (knees that turn in), knee varus (knees that turn out) or ‘neutral’ knees. Richard honed in on my feet, assessing all these things, and then told me about them. I spent about two seconds staring at my feet whilst Richard told me about them, and the rest of the five minutes staring at my rotund derrière, running on the treadmill, not listening

to Richard at all. ‘What inappropriately tight jeans I’m wearing,’ I thought in horror, ‘and you can see the outline of my pants, what was I thinking?!’ (When you go to get your feet done, dear reader, I highly recommend a tracksuit.) Once that ordeal was over, I was instructed to walk over a 3D footscan a few times – so it could precisely assess what parts of my feet I use to land. I rely heavily on my big toe, apparently, and rarely use my ‘flexible’ other toes, hence the bunions. I was shown a printout of the scan, with coloured bits revealing where most pressure is applied. It was riveting. Next, it was trainers time. The search for the perfect footwear started with Richard asking how ‘bright’ was I willing to go? ‘ELECTRIC, Richard,’ I answered. He produced a series of vibrant-coloured trainers – pinks, purples, blues – and asked me to go for a walk in them (yes, on the dreadmill again, but also round the shop). I settled on a pair called ‘Brooks Adrenaline GTS 13’, which

sound a bit like a flavour of Lucozade, but are actually blinking comfortable and supportive. They feature Omega Flex Grooves, which allow for better bend and flexing, and were recently voted ‘Editor’s Choice’ in Runner’s World. Mine were bright purple and fluorescent green (in case you’re interested) and I’m wearing them now as I write this (in case you’re still interested). If you think that was it, you are wrong. Next came my favourite part – the insole fitting. A mould of my foot was taken using vacuum technology – basically, a squidgy machine, which I stood in to make an imprint of my foot. A composite insole is then placed on top, and moulded to the shape. Lastly, the insoles are ‘hand finished

with high density foam’ to ensure they were the perfect fit pour moi. And if you think that’s it, you are still wrong. For Richard then gave me a list of exercises to do, and also his email address, for any questions I might have after the session. Trainers can be taken back, he told me, for up to two weeks afterwards if I found I was not satisfied – even if I’d worn them outside (unheard of!). All this, of course, is highly unlikely because Profeet is excellent and the moment you find your perfect shoes they are yours and you feel quite possessive of them. No wonder it’s the choice for top sportsmen and women, not to mention the fact their ski boot fitting service has attracted a legion of A-list celebs. If you’ve not been to Profeet yet, you’re doing your feet a disservice. Put your best foot forward (groan) and get down there.

Abs: What would you say are the main trends to look out for? Dk: 2013 was all about mixing prints, so I predict 2014 will be about unusual colour combinations that haven’t been paired together before. Don’t be afraid to be more daring!

Absolutely: What will 2014 see in terms of design? Daniel Kostiuc: The return of bold patterns and colours (which started in 2013) as well as strong character in design. Slightly overstated luxury is also bound to re-emerge as well, after the less conspicuous aesthetics in fashion over the last few years.

Abs: How can we do that? Dk: Bright hues can make a wonderfully theatrical impact when used in the right composition. In an entrance hall, dramatic teal and black woven wall coverings are ideal as they draw in the eye upon entering a property. Integrating a secondary colour such as canary yellow or vermillion will create a showstopping look.

When paired with shiny brass light fittings, furniture or ironmongery, it’s even more dramatic. Abs: Let’s talk about furniture. How can we up the drama there? Dk: Rather than settling for plain silk lampshades, add colour, texture and vibrancy for a statement. Whether opting for a bold geometric print or a funky braid, any lampshade can be tailor-made to add personality to an interior scheme. Abs: And the lamp itself? Dk: We’re likely to see more precious stone lamps. Slices of amethyst and rock crystal clusters are beautiful, organic and make stunning lamp bases. DAPHNE’S Zebedee Helm snuffles for truffles on Draycott Avenue

H

aving a birthday in the opening weeks of truffle season is Mother Nature’s way of singling you out for a role in life as a consumer of her most prized possession, the trifola d’Alba. Such is their value that each exquisite nibble of wafer thin tartufo is to be savoured, turned over slowly and longingly like the last kiss with your about-to-be-executed lover. At Daphne’s (the extremely popular and coolly understated Italian restaurant, and fixture of Chelsea life for 50 years) they were scattering them about promiscuously like a child frolicking in the autumn leaves. My (grateful) maternal parent/fellow truffle pig and I did not have to make any decisions about what to eat; the truffle tasting menu, with goldfish bowl-sized glasses of well chosen wine for every course, is preordained. First up was a carpaccio of kingfish, which looked like a stained glass rose window. Gorgeously translucent slices of peach-coloured fish flesh supported deep purple and cadmium pansies, and butterfly wings of whitish buff truffles were fluttered over pert tails of langoustes. Heavenly. But what followed knocked Mama and I clean off our trotters. It was the simplest dish of the soirée (Italians have black belts in simplicity). Tortellonis stuffed with buffalo ricotta, artichoke hearts and whopping great slivers of truff, the size of Walkers crisps. Ma found this dish so to her liking that she couldn’t bear to finish it, the last mouthful

she pushed about her bowl wistfully, as long ago she did me in my pram round the pond in the park. Great hovercrafts of beef fillet then appeared, floating over a garlic spinach and truffled polenta sea, almost entirely obscured by shavings of our knobbly friend. The formaggio course involved a pie-sized slice of pecorino, sweet truffled honey and the crunchiest of flatbreads, washed down with half a pint of Vin Santo. Snorts of happy snuffling came from across the table. We smiled at the witty ‘chocolate truffle’ that was billed as ‘pud’. More fool us; the hard chocolate carapace, which melted dramatically beneath a stream of hot chocolate gravy, to reveal a ball of dulce de leche ice cream, was also extensively

decorated with gossamer peelings of the aromatic Tuber magnatum. Both our Thonet chairs were creaking ominously by the time il gran finale, a grapefruit zest and Zapaca rum cocktail, was brought forth. Horror of horrors, there were two drowned moths struggling for life in the bottom of the glass... But joy of joys, they turned out to be slices of truffle. Though to be quite truthful, by then we were truffe full. The Truffle Tasting Menu is £250 per person, until early 2014, subject to availability. wo Michelin-starred Phil Howard is Head Chef at The Square in Mayfair. He is also coproprietor of Kitchen W8 and The Ledbury in Notting Hill, and has opened a restaurant, Sonny’s Kitchen, in Barnes. Here, he talks to Absolutely about his career in the kitchen. ABSOLUTELY: I see you appeared on BBC One’s Saturday Kitchen recently. Did you practise the omelette challenge? PHIL HOWARD: God, no, I didn’t think about it. Normally, I just go ‘steady as she goes’, rather than throwing eggs around in 16 seconds. I like to make a proper omelette. ABS: Why did you get into cooking? PH: I studied microbiology at university and I started cooking to feed myself. I knew almost immediately that I’d found something that was destined to be my ‘reason for being’. ABS: Did you think your cooking was good? PH: I don’t think that came until later on, when I started working professionally in my first job with the Roux brothers.

ABS: First, you headed to Australia… PH: Yes, I travelled there for a bit and started out working in a restaurant in Sydney. I was a waiter, which was my first proper pressurised experience. ABS: You then worked with the Roux brothers in their ‘contract catering arm’. What was that? PH: They had a huge empire in those days and they held a catering division in all sorts of institutions – city banks, for example. I was part of the team that produced all the food for Kleinwort Benson. ABS: What was that like? PH: It was a slightly false environment, not the same as it is in a fully-fledged restaurant. But at the end of the day it was still cooking. There were various levels of food produced, such as in the basement, and then for the Directors’ dining room upstairs – they got top whack cooking. When I was promoted up there, that was when it all began for me.

manage to stay pretty level-headed and I make sure I have a pretty balanced life – I get out and take plenty of exercise.

ABS: Then you worked at Marco Pierre White’s Harveys. How did that happen? PH: I went and had dinner there and thought, ‘actually this is where I have to be.’ I conned my way into the kitchen and worked there for a while. An extraordinary experience. ABS: What do mean ‘conned’? PH: I hadn’t had much experience but the turnover of staff was high [laughs]. So there wasn’t a queue at the door. But Marco gave me a job, that’s all that matters. There, I really learned about what is achievable with limited resources, and also about phenomenal contemporary French cooking. ABS: Next up, Bibendum, with the great Simon Hopkinson. PH: Yes, that was a completely difference experience. It wasn’t about how shiny the saucepans were or the shape of the carrots. It was about provenance, seasonality, flavour and honesty. And that was probably the single most important stretch of cooking I did. ABS: How do you manage pressure in the kitchen? PH: It can be very stressful and demanding. But I’m not someone who gets unnecessarily anxious. I

ABS: Your restaurant The Square has two Michelin stars – are they easy to maintain in your opinion? PH: It comes down to consistency. And consistency is achieved through having a fantastic team and a balanced life. As much as I love what I do (I still run around in the kitchen, cooking my heart out) I make sure that I take plenty of holiday and get out in the afternoons. I’m not one of those people who just lives for their kitchen; I can’t be enthusiastic if I do nothing but cook. ABS: But you’ve got so many kitchens... PH: There is only one kitchen I cook in – other than home – and that’s at The Square. Obviously I have other interests, but they require different

Brett Graham at The Ledbury, for instance – I don’t have to tell him how to cook anymore (not that I ever did). With each business, once you’ve got the right people there, they stay consistent. ABS: I hear also the garden at Fulham Palace supplies your restaurants… PH: Yes. To have access to a 3.5-acre garden with produce, is nothing short of extraordinary. It is a new relationship and it’ll take years until we’ve really ironed out the wrinkles, but it’s a real joy. Today, half of the lunch menu is based entirely on the produce that comes from those gardens. Generally speaking, it’s my lovely wife who goes down and picks the veg every morning. She comes up before lunch, and most of what she gets will be on the lunch menu. It seems too good to be true. Fulham Palace have the skills, the environment, the space and the expertise, and what they needed

was an passionate partner and an outlet for their produce. That was one of the conditions of the Heritage Lottery funding. Whilst we don’t buy the vegetables, we do an awful lot of fundraising to support the project. ABS: What a lovely community story! PH: It’s extremely beneficial to both parties, so long may it last. ABS: On to telly. In 2012 you won the fish course for BBC’s Great British Menu, and last year, you judged the northwest heat. How did it feel being on the other side of the pass? PH: It was a whole lot easier than cooking that’s for sure! Having done it, you’re very aware of actually how difficult it is. But as far I am concerned, it’s a food competition. Whatever brief you might want to impose, the food must be delicious. ABS: Will you do it again? PH: I would love to go on there and cook again, but to be quite honest with you, you step into that arena and their ain’t no guarantee you’re going to be successful. I managed to come out with my reputation and pride in tact. I don’t intend to go in there and risk it again. ABS: You are marooned on a desert island with one ingredient and one cooking utensil. Name them. PH: Good god! I don’t know. The one ingredient I couldn’t possibly live without is an onion – it’s the basis and background of virtually all French cooking processes. And if I had to cook my onion in any way, it would be in a frying pan. ABS: Finally, what’s up next for 2014? PH: Keeping The Square relevant moving forward, making sure it stays full and in demand for the next decade. On the other end of the spectrum, I’m trying to maximise the success at Sonny’s Kitchen in Barnes. But I really want to try to keep my life simpler than I have for the last few years, so I can focus on those two things.

I

left the New York restaurant trade in 1998 to move to London and sell prime property. The industry in the capital doesn’t differ much to running restaurants stateside. It’s just about really great service – only hospitality limits client time to three courses! I’ve now worked in Prime Central London for over 14 years and have seen residential house prices soar across the Royal Boroughs since the downturn. I am delighted to say that all five of our Prime Central London offices have performed exceptionally well, due predominantly to huge demand from the world’s super rich seeking a refuge for their wealth in London’s bricks and mortar during times of political and economic insecurity. However, with employment rates in London returning to pre-crisis levels and a generally brighter global economic outlook, we saw rates of capital growth slowing at the latter end of last year. Demand from investors, both domestic and overseas, still outweighs the ongoing acute shortage of stock and will keep values rising this year. However, we both anticipate and welcome a more stable marketplace, where rates of growth should continue to cool with rises of a more modest 2-4%. Since the Chancellor hiked stamp duty up to 7% over the £2 million threshold, demand for residential property sub-£2 million has rocketed. We are just about to start marketing a house in a prime Knightsbridge garden square at just over £10 million, which will be a good barometer of the top end of the market in early 2014. I am disappointed that the reduction in stamp duty wasn’t included in the Autumn Statement. Stamp duty has proved to be complicit in the stagnation of the £2m plus market both in and outside of London and my industry counterparts will agree that this tax will continue to distort this end of the market, despite increasing confidence.

Osborne’s introduction of capital gains tax on residential property sales by non-UK residents will have a marginal effect on PCL. Other key global investment locations such as New York, Paris and Hong Kong have already imposed far stricter tax measures on international buyers and I’m sure that London’s global status will continue to attract high volumes of foreign money they are unlikely to be deterred by this levy. I do, however, welcome that fact that this will trigger the release of some good quality stock into the marketplace. There are several houses owned by non-domiciles in PCL, which may have well been left empty for long periods of time, appreciating in value, that come to market before the 2015 deadline. amptons International took home Gold for Best Large Agency for the second consecutive year at the Estate Agency of the Year Awards in association with the Sunday Times and The Times. The judges commented: “Not only has the team at Hamptons maintained their already high standards, but there was also clear evidence that they have actively sought to improve on them throughout 2013”. Election on the horizon

I

foresee the market continuing strongly from Q4 2013 through to the end of Q2 2014, with a healthy level of transactions over the coming period. The market currently is very strong but will begin to soften once the propaganda begins for May 7 2015 election, which could be as early as early summer 2014. There is the ‘threat’ of certain political parties lobbying the idea of a ‘mansion tax’ (which would be an easy ‘vote getter’), and uncertainty breeds caution, which stalls markets. This, and the eventual interest rate rise, will slow down a central market that has galloped away from the rest of the country over the past year and there is little sign that the gap will be bridged in the future.

s Red Adair said, “If you think it’s expensive to hire a professional to do the job, wait until you hire an amateur”. The two most important factors when it comes to achieving a long and happy tenancy are one, the quality of the tenant, and two, effective day to day management of the property. A really good letting and management agent should never forget who they are acting for (their landlord client) and they will offer advice and recommendations based on what they feel is in the landlord’s best interests, as opposed to their own. Using a well-established and reputable letting & management agent who is a licensed ARLA agent means you are more likely to avoid the hugely expensive and time consuming ‘disasters’ of letting a property, either to a bad tenant that doesn’t pay the rent and has to be lawfully removed from the property, or costly repairs and replacements due to the property not having been properly managed whilst it has been let.

3. How to attract the best tenants

A

well looked after property will attract good tenants who will in turn look after the property. If a tenant can see the property is clean, tidy and well kept, they feel assured that the landlord keeps the property well and maintains it to a certain standard and that they will enjoy their time in the property. The best tenants are those who care for their property as if it were their own. Landlords who maintain their property and ensure repairs

4. Rental yield vs capital growth?

I

n this area, and many others across London, investors buy for the capital growth. There are very few places, and few properties that net a 4% plus yield – but even for medium term investments of 3 years plus, the capital growth can be healthy and is likely to outperform many other more traditional investment vehicles such as trusts and bonds. In Pimlico and Westminster there are a high proportion of second home owners who no longer require their London pied-a-terre, or invest money in a buy-to-let, anticipating in a number of years they will inevitably have children needing a London base. We anticipate there will be increasing numbers of international buyers interested in the significant regeneration and development that is well underway in Victoria.

5. Best buy-to-let investments?

I

n Fulham, buy-to-let investors will either purchase in modern developments for ease or ex-local authority properties where the initial yield return is good. These generally show slower capital growth relative to older or period properties, which tend to hold their market value and offer longer term growth potential. Other good BTL investments include properties set on busy streets or main roads where the initial purchase price will be lower but will still appeal to young professionals and sharers who place more importance on a spacious interior than a quiet location. Generally speaking, we consider the rental yield to be higher on these properties than those in quieter locations.

2. Who is renting in the area?

T

here is a vast mix of renters in Chelsea. Short lets tend to be more popular with the transient corporate crowd, while regular lettings appeal to a wide range of different people with a variety of circumstances. It has become increasingly common for many to rent in the area before they decide on their next property purchase. Chelsea is also popular with overseas students who wish to live within close proximity to university campuses.
