ith June, we really do begin to believe that it’s summer. And optimistically, our thoughts turn to swimwear as we imagine ourselves lying on beaches and sipping pink wine. So in this issue, we are celebrating the bikini, the kaftan, the one-piece – everything swim fashionrelated. Elizabeth Hurley, the true queen of the bikini, is an ambassador for glamorous vacation style and she offered us her tips on finding the right fits, as well as revealing how she set up a bikini empire on top of all the other things she does. But distracted as we have been by beachwear, we’re celebrating another look in this issue with our glitzy disco shoot. The 70s revival is huge right now and we are channeling the dancefloor in our hazy retro-inspired metallic rhapsody. And on a separate fashion note, a more academic one, we are admiring shoes – not just the usual current collections, but the history of footwear as curated by the V&A in major new show Shoes – Pleasure and Pain.

But it’s not all just fashion this month. June brings Masterpiece back to Chelsea’s Royal Hospital and it’s set to be bigger than ever, with a mass of superlatives attached. Vast sums of money will be spent on a huge selection of some of the world’s greatest works of art and most beautiful objects, in the presence of some of the world’s most famous faces and glamorous people as the champagne flows and the grounds throb. We’re also eating our way around the area – not just at Masterpiece’s fabulous miniature branch of the Ivy – but we’ve sought out the best brunches in the area, and discussed women in the kitchen with Pont St chef Sophie Michell. Masterpiece London is back for its fifth year and is better than ever. Absolutely Chelsea previews the best of the best Wo r d s n a n c y a l s o p

ne week. Thirty-five thousand visitors. One hundred million pounds worth of art sold. Even amongst the most rarefied fine art cognoscenti, the staggering commercial success of last year’s Masterpiece London, Chelsea Hospital’s annual crossselling fair which bridges art, design and antiques, attests that this is an exalted affair. Masterpiece London has become, along with the Chelsea Flower Show, one of west London’s must-attend annual society fixtures, as anyone who has ever felt daft riding the long drive to its entrance in a golf buggy will verify, so it is hard to believe that the fair made its debut just five years ago. After all, there are scant other opportunities for neophytes and serious collectors alike to hobnob with international specialists – and indeed to size up potential purchases in an environment where the elite of the art world has skimmed off its cream and then presented it all under one roof for the delectation of the viewing public.

For the third year running, the champagne reception will include a silent auction and live entertainment, after which the most committed philanthropists among this refined party will sit down to dinner – provided they have the £10,000 to hand that a table (whose theme this year will be ‘neo-romantic’) will cost them. But before you baulk at the price, it’s all in aid of the NSPCC, a worthy recipient of the traditionally generous attendees' bestowals. Over the past five years, Masterpiece London’s philanthropic galas have raised some £2.6m for good causes. Art with a heart. u I

All this, and she’s a selfconfessed protective mother to her son Damian, 12. Elizabeth Hurley Beach is stocked at Harrods and sells best in the UK and the US, though the Middle Eastern market is growing. With two collections a year, plus a range for little girls, it’s a huge enterprise and collections just revealed for Cruise 15/16

The yachts of St Tropez will be awash with pieces from Hurley’s collection, from the skimpiest bikinis to the floatiest kaftans. EVE HERBERT: Your bikini range is ten years old now. Did you expect it to be such a long-term thing? ELIZABETH HURLEY: We started out with only a few styles but have gradually discovered what women want and have expanded it accordingly. I‘ve always been obsessed with vacation clothes and I think my passion behind the brand is what has kept it a long term venture. EH: Why the bikini in the first place? What makes a good one? EH: A great bikini should be made from the good quality lycra – this makes swimwear last longer than cheaper materials, they dry quickly and they don’t bag. Choosing a bikini style depends on the needs of each woman

I will always model THE KAFTANS FOR my range as far as cut, support and coverage goes. Swimwear is an area where it’s easy to get it wrong and it’s really important to try on lots of styles to see what really flatters you. EH: I read that you launched it as a career that fits with motherhood. Does it? Once I had my son, I decided that he would not be the one losing out and I’ve always put him first. Starting my own small business allowed me to be more flexible with my time and meant I could work around when Damian is at school. A few years ago I started acting again but luckily Damian also loves coming on set with me when I’m filming – he often runs lines with me and adores meeting all the cast. EH: How do you manage working and being a mother? Everything is a juggling act and, as every working mother knows, something always has to give. I stopped doing movies and TV for the first eight years of Damian’s life and I don’t regret it for a moment. EH: Is it true that you design the entire collection as well as seeing it through production, modelling it and promoting it? It sounds like a lot... EH: I launched the collection in 2005 and am still completely hands on in every aspect. As

well as designing I visit India twice a year to manage production. I think I’ll always model the odd kaftan for my range too although we use much younger girls for the bikinis now so yes, you could definitely say I keep busy. EH: What are your inspirations for the current collection? EH: The collection is inspired by my love for the exotic in colour and embroidery and St Tropez for the chic and sexy styles.

omeo and Juliet. Mr Darcy and Elizabeth Bennet. Rose and Jack. The tales of these iconic couples don’t come remotely close to this love affair. But what pairing could possibly merit an exhibition at the Victoria & Albert Museum more than some of history’s most famous partners? The answer: a woman’s relationship with her shoes. The V&A’s upcoming Shoes: Pleasure and Pain celebrates women’s unending obsession with these addictive accessories, drawing attention to the role footwear plays within society. From 13 June over 200 pairs of the world’s most ground-breaking designs will be unveiled alongside several privately collected, never-before-seen pieces. Think: ancient Egyptian gold leaf sandals, silk Chinese lotus shoes of the late 1800s, and 19th century silver Indian wedding padukas. Shoes: Pleasure and Pain brings together

remarkable shoes from across the globe to examine the many facets to footwear and explore its cultural significance. “Shoes are one of the most telling aspects of dress,” says exhibition curator Helen Persson. “Beautiful, sculptural objects, they are powerful indicators of gender, status, taste, and even sexual preference. Our choice in shoes can help project an image of who we want to be.” The V&A's installation champions the extremes of footwear, its ability to incite euphoria in the wearer, and the pain women will tolerate for the sake of aesthetics. Shoes, like the feet they decorate, can be objects of seduction or fetishism. Exhibition visitors can view the typically erotic styles of laced leather boots, sky-high heels, and traditional Japanese geta. Compare other symbols of power with their modern counterparts, such as the exceedingly impractical chopines favoured by 16th and 17th century royalty with the footwear of contemporary

Naked’ ankle boots demonstrate the possibilities of advanced manufacturing technologies. While this exhibition will undoubtedly attract the fashion crowd en masse, it is not simply for shoe obsessives; it is as much as collection of clothing items as it is wearable art. Incorporating rare men’s designs as well as women’s, visitors can marvel at men’s turquoise marbled leather Oxfords with metallic gold leather inserts and women’s Roger Vivier for Christian Dior bead-embellished coral pink silk pumps circa 1958, plus numerous items created by renowned shoe designers of the present day. Even newcomer Sophia Webster has been acknowledged as a key influencer, her SS13 ‘RiRi’ sandals also reserving a pedestal place next to those of Prada and Jimmy Choo. “I

hate ‘the F word.’” British milliner Jane Taylor recoils in her seat. No, she’s not a prude; the “F word” to which this wildly talented, yet endearingly modest hat maker is referring, is fascinator. “I think quite a lot of designers hate it; it just makes you think of a feather on a band, something that has got absolutely no design at all.” At only 33 years-old Taylor has already achieved so much, already establishing herself as the go-to hat designer for Ascot, and boasting a roster of Royal clientele – including the Duchess of Cambridge, Princess Eugenie, The Countess of Wessex, Zara Phillips and HRH Mary of Denmark. But can you blame them? Taylor’s bridal, ready-to-wear and bespoke pieces have been magnets for media attention since she started her label in 2008, where she’s even had an entire Harrods window display dedicated to her inimitable headpieces in 2012.

This success makes complete sense, considering Taylor grew up in Henley, the unofficial Home of the Informal Race Hat. Yet apparently the annual rowing regatta bore little influence on Taylor’s career trajectory: “I wasn’t really into hats before my degree, it wasn’t really something that I had thought about.” She states that she nearly undertook a sculpture degree at University of Manchester, ultimately opting for its embroidery course instead. But the question remains: Why millinery? “Because it’s a mixture of sculpture and textiles,” says Taylor, elaborating that she derives a lot of satisfaction from “making someone feel really confident using sculpture as an accessory.” Plus it’s just more fun: “Normally clothing has to be a little bit more practical, whereas with headwear it can be a little bit more mad.” When enquiring about her overall design aesthetic, Taylor hesitates before answering, “It’s really hard [to describe] your own work. But I have been told ‘classic elegance with a twist.’” Taylor

The humble blonde clarifies, “It’s not really the materials, it’s the mixture, like using paint and something that is really traditional; like a really classic shape and then having patent or porcupine claws to make it a little more unusual.” Although Taylor loves experimenting with juxtaposing concepts, fundamentally she believes in the power of the hat: that a well chosen, properly fitted chapeau can elevate an ensemble and transform an otherwise plain outfit. Or if you’re Kate Moss in LOVE’s Spring/Summer 2013 issue, a hat can serve as your entire outfit. What is the best headpiece she’s worn? “A cocktail hat that is covered in pearls, which I bought in Australia from Wagga Wagga. It is silk and straw mixed and really beautiful.” The self-proclaimed magpie makes no effort concealing her proclivity for sparkly, shiny trims: “I’m a bit of a bird of paradise when it comes to the things that I have collected over the years.” Taylor says her most-prized trinket is “some really beautiful hand embroidery, which I think is from around 1750. It’s all hand-embroidered leaves and flowers and little insects.” It is special details like these that make for a truly spectacular headpiece – one that would not be out of place at Ascot. On the esteemed horse racing event, Taylor feels that “Ascot really is all about the hat. [But] it should be about the outfit as well.” Ultimately, the secret to looking great on the day, Taylor says, is that “the client has got to feel confident. Their headpiece has to go with their personality and their dress sense.” Another major event Taylor is looking forward to in 2015 is relocating from her current Filmer Mews, Fulham studio to bigger and better boutique premises. “We have the designers who do the Dior stores. We are sourcing some really beautiful things, [going for an] Art Deco feel.” The ready-to-wear lines and justlaunched men’s collection will be located

at the front of the shop, leaving the back as a designated consultation area for Taylor’s private clients. The young hat maker has even incorporated a workshop space downstairs, where she plans to host day millinery courses in coming months. Taylor also mentions another feather she’ll be adding to her proverbial cap this summer: “clutch bags using really interesting leathers, tassels, and little bits of neon.” This is a hectic schedule to comprehend. Yet Taylor reassures she can handle it: “I am ambitious and I have a vision and I don’t stop until I have made that vision.” We believe you, Taylor, we believe you. u

iding a horse is, despite what they say, not like riding a bike. Not taking to the saddle for ten years does mean you forget some of the key skills. For example, actually getting on the horse. When I was thrown back into the saddle last month, I forgot how to mount the damn thing and tried to drag myself up, ungracefully and unsuccessfully, head first onto it. In preparation for Ham Polo Club and Chesterton’s Polo in the Park event, I am learning how to play the game under the watchful eye of the UK’s leading polo player Malcolm Borwick, who can also count himself a Royal Salute World Polo Ambassador. His unyielding approach to teaching pays off, as he takes me from amateur – “I’ll take Romy, she’s never ridden before” (I had) – to Best Player of the day (with the award to prove it). The day begins with a brief history of the game, covering everything from chukkas to champagne, before we take to the field and brand our mallets. We learn how to hit the ball in all directions with the mini mallet before jumping on a wooden horse with the full-sized stick. It isn’t long until we are marched over to the layperson’s field and hopped onto the horses. Mine, a cool animal called Castore, is docile and responsive. By the end of the day, I am trotting around, whacking balls into the goal with ease. Learning to play polo isn’t something the club offers throughout the year; it’s an annual treat that keen polo watchers, riders or just curious beginners can take to before the club's big event. What fun. ◆

My skin is usually at its best during the months without an 'r', and having a light tan tends to disguise dark circles, creating perfect conditions for a soft rockchick look. Most women tend to overthink a smokey eye - but it's the easiest thing in the world once you care a little less. Remember they are meant to be a bit undone. The basic idea is to get as much colour as possible into the roots of your lashes. Using a soft yet longwearing pencil like this Chantecaille gel liner, smudge the colour into the base of your lashline using your finger, then repeat. You can then build colour using

a cream shadow with a little shimmer like these Charlotte Tilbury pots. Depending on how dramatic a look you're going for, I might go back in with a liquid liner to build the intensity at the lashes and shape the eye. If you prefer powder shadows then this Hourglass palette will be your best friend - use the darker shade at the base of the lashes, then build up into the shimmering gold on the eyelid. A good volumising mascara is key, and really spend time wiggling the brush right into the roots of your lashes before combing up and out. Finish by patting a soft gold luminiser such as this beautiful Burberry one into your cheekbones. ◆

here’s no doubt a bit of sunshine and a glowing tan makes us look and feel better, but there are numerous consequences from prolonged periods in the sun, so we always recommend a spray tan. An immediate sign is sunburn, simply from too much sun exposure without adequate protection. Burning may only seem like a short-term issue as your body naturally sheds the damaged skin but deeper down you will have caused lasting damage. On a long-term basis, sun damage is also one of the primary causes of premature ageing. This sort of damage goes unnoticed at first, and then manifests itself years down the line. That’s wrinkles, hyper pigmentation, and dehydrated and leathery looking skin. Sun damage is one of the most common ageing complaints I see, most often affecting

the face, calves or décolleté. Depending on the type and extent of sun damage, there are a number of treatments available to remedy premature ageing caused by sun exposure but taking simple precaution nary steps every day of the year, even during the winter, by always wearing a minimum of SPF 30 on exposed areas (face, neck hands) will also help prevent extensive damage. The golden rule after any sun damage treatment, particularly laser, is to avoid any sun exposure for several weeks as skin will be sensitive and prone to further damage. These treatments shouldn’t be seen as a continual solution to sun-damaged skin – care needs to given all year round, M i n o r da m ag e

Pasta with broad beans, tomatoes and feta here is one particular grape variety that works so well T with the fresh green flavour of broad beans, the tang of tomatoes and the chalky texture of feta, how can I recommend anything else? It’s Sauvignon Blanc. No matter where it’s grown it holds its identity well, making it a safe bet if you want zingy, freshly-cut herb flavours. Chile is still a very underrated country for this grape, so try this one, which is summer in a bottle. Carmen Wave Series Sauvignon Blanc 2014, £9.99; Majestic.co.uk  Grilled mackerel with new potatoes f this isn’t the kind of dish to eat out in the garden (now I that’s it’s finally warm enough again) then I don’t know what is! Mackerel is so tasty by itself it doesn’t need to be dressed up too much, but as an oily fish, it’s useful to have superfresh wine to cut through that richness. A wine which is bursting with cranberry freshness would be perfect, like the MIP Rosé 2014, £11.95; leaandsandeman.co.uk  Strawberries he summery flavour of strawberries can be enhanced T with many wines and a pink Champagne would be a delicious but decadent choice. If you don’t want to spend too much, there’s another hugely moreish Italian wine called Moscato d’Asti that’s a winner with strawberries and is usually more affordable too. RED GURNARD SALAD With samphire & Jersey Royals

ritish gurnard is a sustainable and more affordable alternative to overfished species such as cod or monkfish. Recommended by the Marine Conservation Society in its Good Fish Guide (goodfishguide.co.uk), gurnard is making waves on the seafood scene and, according to Tim Hughes, also makes for superior fish fingers. Here, Hughes shows us how to cook up a fresh salad using red gurnard, Jersey Royals and samphire, which is at it's best in July and August. B

Serves 4 I n g r e d i e nt s • 54 x 100g fillets of gurnard, pin-boned • 500g Jersey Royals, skins scrubbed, cooked • 100g samphire, woody stalks removed • 2 tbsp extra virgin olive oil • Salt and ground white pepper • A large handful each of land cress and baby ruby chard leaves (alternatively, use a bag of mixed baby leaves) • ½ bunch chives, chopped

Fo r th e d r e s s i n g • 1 tbsp tarragon vinegar • 2 tbsp extra virgin olive oil • 2 tbsp extra virgin cold pressed rapeseed oil • 2 tsp Dijon mustard • Pinch of caster sugar • 1 clove of garlic, peeled (optional) • Salt and freshly ground black pepper M e th o d 01 For the dressing, place all the ingredients into a jar and shake until emulsified. 02 Next, heat olive oil in a non-stick frying pan. 03 Season and cook the fillets, skin side down first, for 2 to 3 minutes on each side. 04 Remove from the pan and leave to cool. 05 Meanwhile bring a saucepan of unsalted water to the boil and blanch the samphire for 1 minute. 06 Strain in a colander. 07 Slice the cooked, warm Jersey Royals into rough 1cm slices and mix in a bowl with the samphire, salad leaves and half of the dressing. Season. 08 Arrange the salad on plates. Break up each fish fillet into 4 or 5 pieces and place on top. 09 Drizzle extra dressing on top and chopped chives. u

ROASTED BRILL On the bone with wild garlic mash and St George’s mushrooms

mong the family of flatfish, brill comes close to turbot for flavour and texture. Loved by our chefs for their firm texture and creamy, woody flavour, they often grow in abundant (fairy) rings in pasture, verges and woodland edges. Warning: as with all wild mushrooms, please be extremely careful as St George’s are easily confused with poisonous varieties. A

Serves 4 I n g r e d i e nt s • 1 large brill, cut into 4 (on the bone) • 150g St George’s mushrooms, or other seasonal wild mushroom • 1 small shallot, finely chopped • Sunflower oil for frying • 60g unsalted butter • Juice of ½ lemon • ½ small bunch chives, chopped • Salt and freshly ground black pepper For the wild garlic mash • A good handful of wild garlic, chopped • 30g unsalted butter • 100ml milk • 50ml double cream • 500g King Edward potatoes • Salt and ground white pepper M e th o d 01 To make the mash, boil the potatoes in a saucepan of salted water for 20 minutes or until soft, and drain well. 02 Mash in the pan until smooth or through a ricer (do not use a blender!). 03 Return to the heat, add milk and stir. Fold in butter then cream. 04 Finish with wild garlic, stir well, and season. 05 Keep warm. 06 Heat oil in a large non-stick frying pan. 07 Season the brill and cook for 5 minutes. 08 Turn over for a further 5 minutes. Remove and keep warm. 09 Wipe the pan with kitchen roll, heat oil, add the shallot and cook for 2 minutes without colour. Add St George’s mushrooms, turn up the heat and cook for 4 to 5 minutes until soft. 10 Add butter, lemon juice and chopped chives. Season. 11 To serve, spoon wild garlic mash onto each plate. 12 Place the brill on top and scatter with St George’s mushrooms. u

STEAMED WHITE ASPARAGUS With creamed morels

classic spring dish at J Sheekey, with the first morels and white asparagus arriving at the restaurant from France in April. The freshness of both is paramount here so search out the finest supplier you can find. A

Serves 4 I n g r e d i e nt s • 20 medium sized white asparagus • 100g fresh morels, halved • 2 shallots, peeled and finely chopped • 30g unsalted butter • 50ml white wine • 250ml double cream • 2 tbsp freshly grated Parmesan • ½ tbsp caster sugar • Juice of ½ lemon • ½ small bunch tarragon, chopped • Salt and freshly ground black pepper M e th o d 01 Morels can be a bit gritty due to their honeycombed texture, so wash them a couple of times in cold water, drain and pat dry on kitchen paper. 02 In a heavy-bottomed saucepan, melt the butter and gently cook the shallots and morels for about 5 minutes, until soft. 03 Add the white wine and reduce by half. Add double cream, season and bring to a boil. 04 Simmer on a low heat until the sauce has reduced by half and

thickened. Add Parmesan and tarragon and place to one side. 05 Meanwhile cut about 3cm off the base of the asparagus (if woody cut a little more). 06 With a peeler, carefully peel, starting from 3cm down from the tip. 07 Bring a pan of well salted water to the boil with half a tablespoon of sugar and the juice of half a lemon. Simmer the asparagus for 10 to 15 minutes until the spears are tender to the point of a knife. 08 Carefully drain in a colander and arrange on plates. 09 Reheat the sauce and spoon over the tips of the asparagus. u Ti p Adding a little sugar and lemon juice to water when cooking white asparagus gives it a slight sweet yet savoury flavour.

APRON STRINGS Britain’s youngest female Executive Chef, Sophie Michell, on tackling sexism and enraging Claudia Schiffer Wo r d s E d w i n a L a n g l e y

‘I

think every industry is sexist to a fair degree, so I don’t know if it’s unique to cheffing,’ says Sophie Michell, Executive Chef of Pont St. ‘It disgusts me, actually.’ We are sitting in restaurant Pont St, under Belgraves hotel, and Sophie is tackling the ‘s’ word. ‘Not more than two years ago I said to an agent of mine: ‘I’m more than happy to talk about sexism issues in kitchens’… and she said: ‘Don’t touch that with a bargepole, you’ll be pigeon-holed.’ Well, fuck it, really.’ Sophie laughs. ‘I really like Tom Kerridge and he’s a fantastic chef… but he made those awful comments about women – ‘Oh, we love having female chefs, it stops us talking about football’ – and I thought: ‘Is that all we’re worth? Is that what it boils down to?’’ I’d read about Sophie’s past experiences of sexism – chefs ‘jokingly’ taking off her apron – and it’s clear they’ve had an impact. ‘I’d get it when chefs would come in for a trial… They’d go up to my Head Chef or even my Chef de Partie, and go: ‘Alright Chef, how are you?’. They’d look at me and call me ‘darling’ or ‘dear’, and I’d go ballistic at them: ‘Get out of my kitchen, you’re not coming in.’’

If she sounds tough it’s because she is – she’s had to be. ‘It’s very hard. [Women] still get paid so much less, it’s incredibly irritating,’ she sighs. ‘We’ve obviously all accepted it for years… but there’s nothing bad in talking about it a bit more – is there?’ Sophie Michell was born in 1981 and grew up with her brother in Somerset; her mother raised the children singlehandedly. ‘She’s probably my inspiration,’ Sophie says. ‘She’d be working all the time… it [was] very inspiring to see.’ Sophie attended the ‘beautiful’ Wells Cathedral School, but left education at 15. ‘It was a combination of stress, really. My mother and father split up when I was born... I didn’t actually meet my father till I was 13. Then they got back together, and split up again. So, obviously, for a 13-yearold, that’s really testing. ‘Then I got glandular fever, and that turned into ME, and chronic fatigue syndrome. I had loads of time off school. And to be honest with you, I was pretty rebellious. I really wasn’t that interested in anything anyone had to say to me, especially after the two main adults in my life were being so stupid… I didn’t have the finances to go to Millfield, where I wanted to go – I had a place [but] my father didn’t help out with it. So I said to

Mum: “I’m not interested in going back to school. That’s it for it me now, done!”.’ A plucky move for a teenager to make – has she ever regretted it? ‘My father’s family were dead against it. I remember my grandfather saying: ‘You are not going to become anything now, that’s it, you’ve got no hope now’... [But] that’s what drove me to work so hard. [In] any trying situation, there are always positives that come out of it.’ And work hard she did. She got a job in a gastropub – a ‘baptism of fire’ – and threw herself into cooking: ‘I found it very therapeutic.’ At 17, she left England to go to Dublin where she worked in various restaurants, before returning to London to enroll in Butler’s Wharf Chef School. There she was nominated for ‘Young Chef of the Year’, and went on to work at The Greenhouse, Le Gavroche and The Lanesborough – ‘proper tough hardcore cheffing… 100 hours a week.’

Soon after, she was introduced to Claudia Schiffer, and took on the role as her private chef. ‘We got on very well, she was lovely. It was lovely to be part of her family for a bit.’ But when Sophie left, their relationship turned sour. An endorsement from Claudia appeared on Sophie’s inaugural cookbook, Irresistible, and the supermodel hit the roof. ‘Despite the fact my advance was £10,000, [Claudia] decided to essentially go after £120,000... I’m not going to lie, it had a catastrophic effect on my career – I went bankrupt. I think it’s very sad that

someone in such a position of strength and power felt the need to do that to a 21-year-old chef.’ Sophie looks crestfallen. ‘In retrospect, I would have handled it differently. Not only did she want £120,000, she wanted all the books pulped as well. It was crazy.’ Nevertheless, she came back fighting. Sophie found work on Channel 4’s Fit Farm and later, Cook Yourself Thin with Gizzi Erskine. But, as she bluntly puts it, ‘you can say you’re a chef for so long, but

if you don’t have your own restaurant, you’re kind of bullshitting people.’ At a networking event at Belgraves in 2013, she joked about running their kitchen; a couple of weeks later, she was offered the job. ‘It’s perfect because I’ve been living round here, on and off, for ten years.’ It’s been a long hard road to success, but Sophie has stayed the course. Her plans for the future include catering for The Royal Polo this summer, and even catering for her own wedding (she is marrying Irish fiancé, Eoin, next July). ‘It’s his grandmother’s,’ she says, looking down at her three-stone diamond engagement ring. ‘[She] was American and came over to Dublin by herself… really, quite a character.’ How fitting – the same could be said of Sophie. ◆ Follow Sophie on Instagram @sophiemichell 20 Chesham Place, SW1X, 020 3189 4850; pontst.com

hoever says the crepes in Paris are the best in the world clearly hasn’t tried St Clements’. The Parsons Green cafe’s version, in their fabulously thin, crispy buckwheat form, are some of the best we’ve ever had. Accompanying these delicate morsels of Comté cheese-laced deliciousness are well-seasoned Portobello mushrooms and a rich-but-not-heavy filling of creamy scrambled eggs. Cooked to that ever-elusive state of self-saucing, they are simply dreamy. For those wanting an equally filling but not fattening breakfast, St Clements’ fritters are the solution, especially with their herby leek, minty pea flavour, crunchy outside and creamy crumbled feta cheese interior. Steaming bowls of honey-drizzled porridge occupy several reclaimed wood table tops beside us. Food envy succumbed to, moments later the Goldilocks-approved dish is entertaining our palates with a textural dance between grated Granny Smith apple, dried coconut shavings and oats cooked just right. Any space left for treats is best reserved for the array of freshly baked cakes, slices and viennoiserie on the counter’s chopping boards. A torturous decision for the weekend, we took one for the team. his may be part of the Intercontinental but most brunchers here are not hotel guests – though neither are they locals who have just rolled out of bed. This is somewhere that people travel to for a weekend buffet that is a real feast, one with unlimited Prosecco and Bellinis. It’s a slightly overdressed crowd that hovers around the serving areas, to which it is entirely acceptable to keep returning. We start at the cold market table, where I fill my plate with an eccentric but nevertheless enjoyable mix of salmon and tuna sashimi, watermelon and feta salad, Caesar salad, smoked fish and various cheeses – there is also a selection of salads, cured meats, lots of couscous, tiger prawns and a variety of dips. For those veering more towards the breakfast than the lunch, there is a hot counter where eggs are cooked to order and pancakes and waffles come with myriad toppings and sprinkles – this is where the children congregate, aiming to score bowlfuls of chocolate shavings and mini marshmallows – but this isn’t all, because there are main courses to come. The menu lists three options and despite having it explained to us that we don’t need to choose, we’re still not quite expecting all of them to arrive as sharing plates. There’s a very good salmon, Jerusalem artichoke and salmon plate, a steak, an asparagus and kale one and a dahl, cauliflower and coconut rice dish, all of them high class. beaten, but inside it’s slick, all oiled wood and 1950s tubular furniture, while the roof doubles up in summer as a terrace. We are here on a less than beautiful day, however, so it’s inside for us, where the Peyton and Byrne restaurant is separated from the less formal café down the middle. There are separate breakfast and lunch menus – breakfast fairly extensive, with a long pancake list and a lot of things on toast, while lunch is compact and unassuming. We try a carrot and beetroot salad with goats cheese and hazelnuts, which is fresh and tasty; and a monkfish and shrimp burger. And since it’s a Sunday there’s a selection of roasts – chicken or beef on our visit – and my roast chicken is a huge plate piled high with a vast Yorkshire pudding. ou probably shouldn’t judge a brunch by its queue, but a small group of people waiting to be seated must be the sign of somewhere good. As a Californian-inspired café-cumrestaurant this eatery is all about beachY

chic. With whitewashed brick walls and sanded furniture, it’s a relaxing little getaway. After a brilliantly sweet and smooth matcha latte, I enjoy something salty: crispy friend chorizo, scrambled eggs and avocado on sourdough. Caramelised and delicious, the spicy sausage works well alongside the slightly underdone and gooey eggs. Meanwhile my brunching companion goes for the veggie English breakfast with meatless sausages, eggs, roasted cherry tomatoes, buttery mushrooms and homemade baked beans. Made using cannellini and kidney beans instead of Heinz, these are a great healthy alternative to the sugar-laden tin. Then a massive slice of lemon, olive oil and almond cake. And unsurprisingly, his dishes are exactly as his nickname suggests: Fab. For brunch all of the classics are on the cards: Eggs Royale, Florentine and Benedict – each featuring organic Italian eggs and their signature bright yellow yolks; poached eggs and toast with optional smoked salmon, bacon, and olive oil-drizzled avocado; and a generous portion of yoghurt with granola and homemade raspberry jam. Utterly divine. But perhaps the biggest hero is the French toast. achel Willson is essentially two sisters in business with a property building background. Since a very young age Rachel and Carly were on building sites in Portugalâ&#x20AC;&#x2122;s Quinta da Lago where they grew up. It was here that their design and building instincts were nurtured. It was a natural path for these two to go into business together and it progressed very naturally from one project to the next. In Portugal a large part of their work was overseeing new builds for clients who lived abroad which could take up to three years. ith summer holidays, sunshine and beaches just W around the corner, combining language lessons with water sports and cultural trips is an excellent way to boost your child’s skills, over the long break. At a recent Chatham House event, the place of English as a global language was discussed. Key points that resonated were that yes, English drives influence, but to act locally languages are essential. Europeans with languages are taking the jobs of Brits, who increasingly find that they can’t compete with their continental peers; and as competition for places heightens, leading MBA graduate schemes are viewing languages as a requirement. The learning and speaking of languages helps to make us recognise that the world is a multi-faceted place, with cultural and linguistic subtleties driving both family and business life. Aside from all of these formalities, languages make life richer, more vibrant; introducing them to your child early on will ensure that they can reap the benefits later on. u

few months ago, John Cridland, the Confederation of British Industry’s (CBI) Director General, criticised the quality of science teaching in our primary schools: “Science education in primary schools is being squeezed out, with over half of teachers believing it has become less of a priority with too many schools struggling to teach the recommended two hours every week.” His remarks followed research carried out by Brunel University and the CBI, which also found a third of teachers lack confidence when teaching the subject. “How can we expect to inspire future generations of scientists and engineers if we don’t deliver high-quality and inspiring science lessons at primary school age?” asks Cridland. A new education company, Richer Education, has set up a Science Saturday School to tackle the problem. Conducted in partnership with Imperial College, London, the classes “aim to inspire and motivate children aged 5-11”, says cofounder Rafael Hernandez. “We want to get them while they are young,” he explains. “Science education in secondary schools is not engaging students, so we want to get students to really love it at primary so that they go on to study it successfully.” Hernandez, 42, a maths teacher originally from Venezuela, teamed up with Sian Chalkly, a science specialist and fellow teacher at a Woolwich secondary school, with the idea of providing inspiring, hands-on science lessons for children. “The emphasis in the classes is on practicals,” says Hernandez. “We want children to explore science with their own hands; they must touch and see at the same time as understanding the science behind it.” It is this practical element of science education that Hernandez says has fallen victim to the relentless target-driven culture of schools. State primaries generally have one teacher for everything and simply don’t have the time to cover the whole curriculum

as it is. A 2013 Ofsted investigation found that science lessons were not good enough in more than a quarter of schools and only one-in-20 teachers in primary schools holds a science degree. Secondary schools have the facilities and the specialist teachers but ‘teaching to the test’ rarely allows for the time for practical experiments or a deeper understanding of the topics. “It’s all about targets,” says Hernandez. “When there is a topic that might require greater in-depth explanation teachers just skip the subject altogether. “Things aren’t necessarily much better in the private sector. Prep schools often have the specialist teachers but rarely allow the time for practicals. For two hours every Saturday morning the children have access to Imperial College’s labs and facilities, where PhDladen scientists such as Sian Chalkly teach sessions linked to the Key Stage 2 curriculum, centred on a theme or topic that cover all three sciences and each session is based around a practical experiment. Future plans include further partnerships with universities across London. Taking you through the foodie neighbourhood of Testaccio, this guided tour lets you escape the crowds and experience the city like a local – on foot. Retail therapy and decadent balls ienna can now add shopping destination to its already impressive offering of baroque and gothic architecture, outrageous charity balls and famous hotels, making it the ideal city break this summer. V

S E E . Vienna is a historically and culturally rich city and, with the exception of the Belvedere Gallery (permanent home to the works of Gustav Klimt) and the Central Cemetery (even more permanent home to Beethoven, Brahms and Schubert), most of this history can be found in the First District. Enlist a tour guide to take you on a walking tour and you will notice the wide streets, completely devoid of litter and the air, free from smog, courtesy of a healthy breeze blowing off the Danube. They will undoubtedly lead you past the impressive, crescent-shaped Hofburg Imperial Palace, former home of the Habsburgs and stop off at the famous St. Stephen’s Cathedral, an epic Gothic edifice with a stunning tiled roof that bears the double-headed eagle that is symbolic of the empire ruled from Vienna. If walking seems like too much effort, hail a fiaker (the Viennese horse and carts that throng the First District) for a leisurely excursion around the city centre. If shopping is the main priority, the newly built Golden Quarter, located off Am Hof Square is a must-visit. Signa Group’s latest project manages to pay tribute to the UNESCO World Heritage Site it inhabits with tasteful and uniform signage and top-end brands, from Valentino to Vivienne Westwood, not to mention remarkable luxury apartments and office spaces with breathtaking views.

S TAY. The Park Hyatt Vienna is hard to beat in the hotel stakes. Located in the picturesque Am Hof Square, the Park Hyatt opened in June 2014 and has quickly established itself as one of the city’s places to be seen. What with 143 luxurious rooms (including 35 suites), the fully kitted out Arany Spa housing the largest indoor swimming pool in Vienna and The Bank, the hotel’s exceptional restaurant, even walking out of the front door is a wrench. The decor is in tune with the historic roots of the building, formerly a bank, with seams of mother of pearl running through it and luxurious natural materials such as onyx from Iran and marble from Italy dominating the rooms and common areas. Those looking to enjoy a drink of an evening can keep it traditional in the hotel’s Lounge where cigar smoking and whisky drinking is par for the course or head down to Pearl, the more contemporary bar that spills out onto the street. Vienna is known for the lavish balls that make up its social season and although the Life Ball does not fit into the traditional category (you won’t need to learn to waltz to have a good time) it has become a fixture in the city since the first event was organised by Gary Kessler with the help of some famous friends in 1993. It is now the largest charity ball in Europe and raises hundreds of thousands

The theme for 2015 was ‘Gold’ and in standard flamboyant fashion, the red carpet was awash with gold-bedecked revellers, some wearing little more than body paint and others kitted out in golden bondage gear and chains. The Opening Ceremony featured fire and tributes being brought up to the stage, which were received by dancers dressed as Klimt paintings. Bizarre and wonderful celebrity appearances included Charlize Theron, Sean Penn and Dita von Teese with musical performances from Mary J Blige, Sophie Ellis Bextor and, of course, Conchita Wurst. The fantastic Rijksmuseum reopened in 2013 after a 10-year closure and the new arrangement is truly magnificent, adding a stylish modern below-ground level atrium and liberating lots of previously paintedover frescoes. Curators have rearranged works according to century, instead of separating paintings from ceramics and so on. The audioguides offer a good selection of tours including a highlights one that takes in all the predictable essentials (Rembrand’s Nightwatch, Vermeer’s Milkmaid) as well as the wonderful dolls house room, unmissable for anyone who has read The Miniaturist. There’s also a lovely 20th century gallery right at the top of the building, as well as a brilliant souvenir shop.

S TAY. Amsterdam hasn’t traditionally been known for its lavishness; more for its informality, tolerance and laid-back charm. So with last year’s opening of a new Waldorf Astoria hotel on the Herengracht, the potential for luxury has stepped up a notch, and the city’s most luxe rooms (and its most expensive) can now be found in a fabulous canalside location within easy walking distance of the Rembrandplein, the Hermitage and everywhere really. There are lots of striking things about the hotel, which is made up of six 17th century townhouses knocked together to create a sprawling, 93-room residence that boasts not only the city’s biggest private garden but also an insanely luxurious Guerlain spa, an exclusive two-Michelin star restaurant and a separate all-day brasserie (named Goldfinch, nodding to both Donna Tartt’s Pulitzer Prize-winning novel’s Amsterdam setting and the hotel’s arty connections) and a fabulous underground cocktail bar (the building is a former bank and this is the vault; you can still see the old safe boxes, some of them mysteriously locked). WHAT IS IT?

he Vineyard Spa is, unsurprisingly, a haven for Epicureans. The hotel and spa is owned by the Michael family, who also preside over the Peter Michael winery in Knights Valley in California. The hotel is inspired by the Judgement of Paris, a famous wine tasting in 1976 that saw Californian wine surpass classic French wines in a blind tasting held by British wine merchant, Steven Spurrier. The hotel displays a large-scale painting of the notorious tasting, also by the same title, which united some of the wine world’s most influential wine writers and journalists. The hotel prides itself on its impressive private art collection, as well as its 3,000 bins, with around 100 of them available to taste by the glass.

he “5 Bubbles” spa is nice, but it’s definitely not the hotel’s focal point. The swimming pool isn’t great for swimming in, as it’s round and quite small, but the palm tree-framed atrium in which it is set is glorious on a sunny day. The treatment rooms, although airy and light, are equally unexceptional, which is by no means a comment on the service you’ll receive: The therapists are welcoming and thorough, with customer service clearly at the forefront of their training. We went all-out, first indulging in a pedicure, which incorporated paraffin wax treatment and high quality Mavala nail polishes. Then came the massage; let's ignore the irritating, predictable muzak, because the masseuse was competent and responded to each and every knot in my back. This, combined with the delicious Darphin oils used was so good and relaxed me so much that I had to take a nap afterwards.

ne of the best things about the hotel is the restaurant. Go all out and opt for the wine tasting menu; each delectable course comes with a sip of Californian wine and a sip of French wine so you can partake in your very own version of the Judgement of Paris. Head chef Daniel Galmiche believes, “Eating out is one of the greatest pleasures of life. I have made it my mission to communicate this.” There’s no doubt that he’s succeeded in his quest, even for my vegetarian companion, who was resigned to the belief that French chefs just don’t do vegetarian food. Not the case, as the seven-course menu was altered to suit her tastes. Meat or no meat, we were both very impressed.

The maisonette, in Holland Park, London, has undergone such a successful and stylish transformation that it was featured in magazines and on TV shows, including Grand Designs. “While every property we deal with in Prime Central London has qualities that set it apart to a greater or lesser degree, this really is an exceptional space,” says Keith. Even though it’s priced at £7.5 million, the property isn’t at the top of the market in Notting Hill and Holland Park - a market that Keith says has quietened down a little locally. “Activity is thinner than over the corresponding period last year but this is to be expected during an election year,” he says. “Transactions continue and values are holding up. A notable Marsh & Parsons sale over the last month has included some record breaking prices, not least a Notting Hill house at £24 million that’s set a new precedent!” u

We were delighted when she asked us to sponsor an exhibition she is curating in June at the Royal Geographical Society - The Tuareg or Kel Tamasheq, and a history of the Sahara. Often referred to as the “Blue Men of the Desert”, the Tuareg have lived in extreme conditions deep in the Sahara for over a thousand years. This exhibition, the first ever of its kind on the Tuareg in the UK, will give people here the opportunity to learn about their history and culture at a time of great challenge for the desert nomads. How they adapt to the radically changing circumstances of life in the 21st century will affect the future of the Sahara itself, the Tuareg being at the centre of the troubles the area is currently experiencing.
