he winding back of the clocks always feels like a ritualistic exercise in battening down the hatches and settling in for winter proper. As far as I’m concerned though, this does not spell any kind of privation but rather heralds a time of snuggling up in cosy corners and represents the anticipatory thrill of the festive season. This time of year typically brings to the forefront of our imaginations an enchanted world of fairies and elves, but for Su Blackwell these magical, mystical figures feature perennially in her consciousness. Her artworks are mesmerising sculptures made from pages cut out of her favourite fairytale and folklore books, through which she makes the stories of the likes of Cinderella et al come to three-dimensional life. This month she is showcasing some of her work at Anthropologie’s exhibition space. Read more and enter her wonderful world on page 52. Meanwhile, far from the numinous world of magic and folk stories, Tamsin Greig – one of our favourite Royal Court regulars – is a woman whose theatrical and televisual currency veers towards be that of the plain-talking family-based comedy. She talks to Pendle Harte about motherhood, marriage on and off screen and kissing Matt Le Blanc. Turn to page 45 to read on. This month we were lucky enough to take a sneak peak into the world of old Hollywood glamour via Bob Willoughby, the photographer widely acknowledged to have pioneered the more natural, less posed motion picture still in the 1950s. A collection of his images go on show at Proud Chelsea this month – turn to page 19 to get a superglam eyeful. But for those not yet warming up to the idea of the festive season, follow Katy Jarratt’s lead. She escaped London for the last of the winter sun in California (page 92), while Henry Barlow did some globetrotting of his own in beautiful Barcelona (page 95). I do hope you enjoy this issue.

Helena Bonham Carter, Ralph Fiennes, Robbie Coltrane… it may sound like the all-star line-up for a follow-up of the Harry Potter movies, but these old thespian chums have now been reunited in the real Dickensian mccoy. All of which makes a certain sense, given that this latest Great Expectations adaptation is directed by Mike Newell, who was responsible for the Goblet of Fire installment of the Potter franchise. Bonham Carter – famously something of a romantic goth – takes up the role of decaying spinster Miss Havisham, while Holliday Grainger plays her protégé Estella, Jeremy Irvine takes on protagonist Pip and Ralph Fiennes is cast as Magwitch. The screenplay, meanwhile, is penned by David Nicholls.

DEAD MAN’S SHOES Rebus – Ian Rankin’s most popular crime-fighting creation – is back, after a 25-year hiatus. Standing In Another Man’s Shoes sees him come out of his five year retirement only to come up against his old adversary Ger Cafferty, while acquiring a couple more in the form of Rankin’s latest character, Malcolm Fox of Edinburgh’s internal affairs unit and ex-colleague Siobhan Clarke. Set against all of which, the indefatigable crime fighter is hot on the trail of a series of seemingly unconnected disappearances – even if he does find himself out on a limb amongst his fellow officers. T
’was a time when stars of the silver screen were only ever glimpsed in heavily edited, fully made up, polished perfection – until, that is, pioneering Hollywood snapper Bob Willoughy appeared on the scene, intent on deconstructing the image and the poise. Not, one should note, in an attempt to render any of the starlets he snapped – from Audrey Hepburn to Liz Taylor and Marilyn – any less glamourous, but rather to capture a formerly lacking insight into their real selves. The first ‘outside’ photographer to be hired by the studios to document the filming of movies throughout the 1950s until the 1970s, he is widely credited with having invented the photojournalistic motion picture still. It was his image of Judy Garland on the set of – somewhat aptly - A Star is Born that constituted his big break, after it was picked up and used as the cover shot of Life magazine. ell, Christmas is almost upon us. I think it should be like the rugby world cup and only come around every four years! I predict a cautious season this year, with keeping it simple large on the agenda. A good idea for infusing the Christmas spirit among Scrooges is to start playing carols from King’s College early; it’s guaranteed to imbue the most cynical with good cheer. I recommend shopping early to avoid lastminute stress. Make a list and stick to it, then when that’s out of the way, you can relax and start enjoying the hot port season, the best being from Lea and Sandeman. A spoonful of brown sugar, a twist of lemon with cloves and fill up with hot water... pure heaven. For the man in your life, a Paul Costelloe white shirt or an Italian silk tie, all available at John Lewis department stores, is a safe bet. As for the tree, home-made decorations are really easy to make, and our children love finding little things they made when they were small and fixing them for yet another year. Just one or two colours for the tree is always chic. Of course if you want to go all arts and crafts with every color under the sun, really go for it! Try and go to church, any church. It will give you a good feeling, and the time to reflect on the year just passed and the one to come. Swap the TV for board games, it will bring everyone together... or cause a major fall-out, in which case, head back to the hot port! I hope it’s a good one, with plenty of cheer and good wishes for a new year!

Helen Clinch and Myra Nigris, founders of Belgravia-based womenswear label Hemyca, talk real women and impressing Anna Wintour with Nancy Alsop
he last year has been one of regal encounters for Helen Clinch and Myra Nigris, founders of womenswear label Hemyca. First the duo was invited to take part in a line up and exhibition presented to The Queen and Prince Philip for the portion of the Jubilee devoted to celebrating British fashion throughout the ages, alongside fellow designers including Preen, Jonathan Saunders and John Rocha. ‘Everyone was nervous, no matter how many
times they’d done it,’ says Clinch. ‘You have protocol and you are sent loads of emails about what you can say and what you can’t. So we were so preoccupied with wondering whether we were going to call Prince Philip the wrong thing…’ The pieces on show were myriad and inclusive, ranging from the vintage – in the proper sense – to Biba to PPQ and Hemyca. Which, for a label only launched officially in 2005, must have felt like being catapulted direct on to the main stage and into the establishment. ‘It was amazing,’ the pair choruses, evidently still full of awe. But for the women behind Hemyca,
this imperial appointment was preceded by another – perhaps even more brilliant and daunting – brush with (this time fashion) royalty. As the pair applied the finishing touches to their show for February’s London Fashion Week, none other than Anna Wintour, the much-revered – and even more feared – grande dame of American Vogue and maker and breaker of fashion dreams, not only turned up to see the show but demanded an audience with Clinch and Nigris. ‘It was the best day ever!’ exclaims Clinch. Terrifying too no doubt? ‘Initially you don’t breathe but then you get on with it. It was so funny when

she came backstage because you could hear a pin drop. I never heard a backstage so quiet – ever. Everyone was so star struck.’ After all, as Nigris says: ‘Of course you always invite her but you never expect her to come. In fact, she’s the last person you expect to walk through the door but she did and she wanted to preview our AW collection. I wanted to touch her and say: ‘Are you real?’ She gave us a good ten minutes which, on her time, is really quite a lot. She did five shows that season – Erdem, Tom Ford, a couple of others and ours.’ At the most recent London Fashion Week in September – for which Hemyca was invited by
the British Council to show at Somerset House – the arbiter d’elegance sent an assistant in her stead, which continued interest is little short of invaluable for a nascent label. The duo’s studio – in a basement on Elizabeth Street – is, meanwhile, a world away from the perceived glamour of Condé Nast towers. Packed merrily into a postage stamp of a room is a team of cutters, a publicist and the two designers, while the next season’s collection hangs enticingly in the corner, speaking quietly of timeless beauty and structural elegance. It’s a neat metaphor for the mission statement of the brand, which
has always opted for the slowly and surely approach but harbours grand ambitions far beyond the basement. Thus far, a roll call of eclectic celebrities have worn Hemyca pieces, from Kelly Holmes and Paula Radcliffe to Sophie Ellis Bextor, Livia Firth and Cheryl Cole (‘not just pretty faces, but strong women with things to say’) and the dream is to one day be showcased on the red carpet, by the likes of Cate Blanchett and Tilda Swinton, two names plucked out of the air, but, you sense, chosen again both for their fierce brightness and the fact that they decline to be simply pretty – but ultimately wilting – violets. 27

That the pair has such a confident approach makes a certain sense when you realise that they have invested their time heavily in garnering experience across the board; after graduating, Nigris racked up years worth of work for Ben de Lisi and Roland Mouret, while Clinch grafted her way to the upper design echelons at Zara and Autograph at Marks and Spencer, the combination of which experience has augmented both their natural aesthetic abilities and their keen business
of Fashion. Helen came direct into my class in the second year, as she had some experience already, so that was fate already – otherwise we wouldn’t have met,’ explains Nigris. ‘It was very, very weird, but we were coming up all the time with the same ideas. It was so frustrating throughout university because you’re trying to be so unique, and you’re working so hard to get your ideas going. But even our concept for our dissertation was exactly the same, so I had to change mine. Our collection on the final catwalk just looked like one. Our tutor did not know what more to do to separate us – we worked in separate buildings. We knew each other, but we didn’t hang out together – it was just complete coincidence. We went against it, so both of us pushed harder and harder and harder to be different, but it never happened.’ It wasn’t until after they left LCF that they decided to use their similarities as a force for good rather than against one another. Where though, I wonder aloud, do they think that these similarities come from? ‘I don’t know,’ says Nigris. ‘But maybe it has something to do with our backgrounds. Both of us grew up around fashion. Helen’s uncle worked on Savile Row. My family had an atelier in Italy. My auntie is 85, and she still sews, it’s quite extraordinary. Everything was done by hand.’ And it is this attention to detail that is one of the myriad strengths of Hemyca; after all,
‘I always say we’re like the sun and the moon. I always wear black, I am the moody one’ acumen. As Nigris says, they are currently inundated with requests for menswear, and while they will do bespoke pieces, they won’t be tempted to run before they can walk. ‘You need to do one thing at a time and cement the idea in people’s minds first that Hemyca does beautiful structured pieces and dresses. When the womenswear is flying, then you introduce the rest. It can so easily be watered down.’ Together though, you sense, this super duo will stand strong. After all, while they are very different personally (‘I always say we’re like the sun and the moon. I always wear black, I am the moody one’ says Nigris), when they first encountered one another, their similarity in style was actually something of a problem. ‘We were both studying at the London College
because they are meticulous, they will fit any woman, at any size. ‘Helen and I started the company because we wanted something that fitted really well. We’re curvy – we have women’s bodies, that androgynous look doesn’t work. We had a customer recently who was size 22. She has since lost weight and is a size 16, but we kept her pattern and it’s all about relationships.’ Indeed. And as Clinch says, they are constantly on the look out for models that are more representative of real women. Plus, they tell me, they’ll even set up payment plans for bespoke pieces, which democratised approach has got to be the future of fashion. And after all, who are we to question Anna Wintour’s eye?

When you smile or frown the muscles in your face contract, causing lines and wrinkles. Over time, these lines become
permanent. Botox works by relaxing the muscle, but too much can stop all movement, which gives a frozen look. We prefer to subtly enhance your features, so rather than give you a stiff, unnatural look, we take a measured approach. We start by injecting very small amounts into precise points in the muscle, thus softening wrinkles but keeping some muscle movement. We’ll see you two weeks later to make sure you’re happy with the results and, if needed, we’ll fine-tune by giving you a top-up treatment. Who should carry out Botox? Botox is a prescribed medicine, so you’ll meet one of our aesthetic doctors for a full skin consultation. If you decide together that it’s the right treatment for you, they’ll prescribe it. Class act Tamsin Greig is one of the industry’s busiest actors. Pendle Harte meets her to talk comedy, celebrity and Matt Le Blanc

T
he first thing I notice about Tamsin Greig is her voice. She has a lovely way of enunciating everything perfectly, giving every syllable its due clarity with not a whiff of sloppiness. It’s a proper actor’s voice, lyrical and enthusiastic, and it has the added complexity of making her sound slightly – and a bit disarmingly – as though she could be laughing at you, though quickly I decide that she’s not. She also looks amazing, all cropped hair, memorable pointy and expressive face and supremely toned and tanned limbs. All of which goes some way to explaining why, over the past few years, she has become an increasingly familiar face on television (Black Books, Green Wing, Episodes) as well as on stage (Much Ado about Nothing, The Little Dog Laughed, Gethsemane) and, of course, on The Archers (the voice again). We are at the Royal Court, where Greig is in rehearsal for Jumpy, last year’s huge success, which later transferred to the West End. It’s a play about motherhood and
ageing, themes that resound in Greig’s own life (she has three children, aged seven, 12 and 13, so not quite old enough to resemble her on-stage progeny, but not a million miles off either). ‘It’s a fantastic play,’ she enthuses. ‘There’s a lot of stuff brewing in it, about women of a particular age handing the baton on.’ Roles about parenting are interesting for Greig, who freely admits to feeling as out of her depth with the task as anyone, on occasion: ‘For every generation, it’s so different from our own upbringing, so it’s not new, but it’s a dilemma. How can you be a parent when you’re still acting like a teenager and inside you still feel like an idiot child?’ Greig insists there’s no difference between being funny and being a serious actor, though she’s unusual in being able to do both, together and separately. ‘I don’t think you can take the two apart. Life’s really funny. You can tell a tale that’s really straightforward but if you really look at it, it’s insane. It’s laughable, what happens to us. Isn’t it?’ Is it?
She launches into a story about her Oyster Card not working and a man from London Transport telling her off in a cross, shouty way for having too much clutter in her purse. ‘And I could have got really angry but I turned into a gibbering child, and I think he was funny and my reaction was funny, and I think it’s the clash of our responses to things that makes life so interesting.’ Seeing the humour in any given situation must be what makes Greig’s comedy work; there is, after all, something about her face and her bemused, quizzical expression that’s highly comic, though she claims never to have set out to make people laugh. ‘My dad had a very childish sense of humour. He was an older dad, so I didn’t really know how to talk to him and he certainly didn’t know how to talk to me, so I just learned to muck about with him in a foolish way, because it was the only overlap really, the only way to be with him.’ Greig always wanted to be an actor; or rather she always knew that there was

INTERIORS ‘nothing else I could do, so I was always going to try, and that’s what I’m still doing,’ she says, modestly (this from a woman with a Laurence Olivier Best Actress Award). Was there a pivotal moment when her career really took off ? ‘I wonder if it’s yet to come. I hope I’ll notice it,’ she jokes, claiming that her career (‘anyway, what are careers?’) started on a very slow burn after she graduated from Birmingham University in drama, ‘a bit like the opening sequence of Lawrence of Arabia’. And now there’s the issue of celebrity, which she doesn’t like at all, and finds to be more of a burden than anything else. ‘It’s a bit like being on safari,’ she says, mystifyingly. ‘You’re in the car, but the jeep is open, you’re surrounded by life in all its vibrancy, but you have to make sure you have a good tour guide because it can become unbalanced and you can end up in tricky situations.’ Greig became a public figure for the Tearfund charity, because, however she feels about celebrity, ‘it’s there, so how can it be used in a creative way? I thought, if people are more likely to read a story about Tearfund because of my mug, then let’s use it.’ Also on the subject of celebrity, there’s Matt Le Blanc, Greig’s co-star in recent TV series Episodes. More than any other question, she is asked what it’s like to kiss him. Why does she think that is? The baffled face again. ‘I ask myself
voices. In the show Greig and Stephen Mangan are very funny together and you get the sense that they must actually be friends too. ‘Yes, I don’t think it would be possible to create that sort of truth on screen if you didn’t enjoy one another,’ she says. She’s enormously and endearingly effusive about him. ‘He’s got a great face that you can just fall into; there are moments when you just look into his eyes and the whole universe is there. It’s beautiful what he does with his face. Heartbreaking! Also, he’s a Tottenham supporter and so’s my husband, so my two husbands go off to matches together.’ Greig and Mangan worked together on Green Wing of course, and it was the lengthy – and these days unheard of – three month rehearsal periods before each series that allowed them, and the other actors, to develop their working relationships and really, they’re still using that history. Will there be another series of Episodes, I ask? To which the answer is, apparently, that nobody knows. The show is currently screening in the US and as anyone who watched it will know, the world of TV will make its own decisions in time. The plight of the female actor over the age of, say, 40, and how the work dries up overnight is much bemoaned – but this gripe simply does not apply to Greig. She’s highly in demand and scheduling her work is difficult (listeners to The Archers will note that her character Debbie Aldridge spends

But isn’t it brilliant that there’s such a legacy, that he’s so brilliant and yet so real?’ Episodes is very entertaining, I say. ‘Good!’ exclaims Greig, and again, she’s so enthusiastic that for a moment I wonder whether she’s laughing at me, or whether perhaps that she can’t bear the show. But no, it’s that effusiveness, coupled with the slow enunciation that leaves you not quite sure. ‘I think it’s a lovely show!’ She liked it as soon as she saw the script, by David Crane (Friends) and Jeffrey Klarick (Mad About You), praising especially the American writers for writing convincingly for British
much of her time in Hungary, while she is also a massive hit as the put-upon matriarch in Friday Night Dinner). What are her plans post Jumpy? ‘That’s the fantastic thing about this job, you never know. It’s like not knowing what your Christmas presents are… and then an orange turns up. You live with great hope.’ With a strong work ethic inherited from her parents (‘I was brought up to make sure there’s money coming in and not live on the never never. My parents were horrified when I got a mortgage’) and despite a claim that she gets very nervous on stage, Greig’s career continues to be on the up. Expect to see much, much more of her. 47

hen Goldsmiths graduate Mary Quant opened Bazaar in 1955, it spelt the start of her reign as queen of the King’s Road – and of the wider fashion scene. At the time, those dictating from the sartorial top, as she never shied from pointing out, were emphatically not designing for the young. Her response? Quant, with her business partner and husband Alexander Plunket Greene, duly cast her eye toward the Chelsea beatniks, and it was with these young trailblazers in mind that she invented – thus causing a western world sensation – the miniskirt, that icon of the decade. Block colours, witty irreverence and eminently wearable pieces came to dominate the scene, as popularised fi rst by Quant, whose soaring success lead her to open another store in Knightsbridge by the early 1960s. As the world went mad for the Swinging Sixties style as set by this fashion maven, she was busy, as it transpires, recording her experiences. Quant by Quant is an account of her early life in Blackheath, being evacuated and discovering dressmaking while at school. It has now been reissued by V&A Publishing, priced at £8.99

paper Paper sculptor Su Blackwell tells Nancy Alsop how a childhood spent making dens and naming trees sparked an enduring fascination with fairy tale worlds
Were you always fascinated by these magical tales as a child? As a child, I lost myself in the stories of Alice’s Adventures in Wonderland, Frances Hodgson Burnett’s The Secret Garden and CS Lewis’ Tales from Narnia. As an adult I began re-reading fairytales by Hans Christian Andersen, and was introduced to some rather brutal stories by the Brothers Grimm, which had either been lost on me, or not available to me as a child. What is your favourite fairy tale and why? Recently, I was commissioned to create a piece based on the Italian writer Italo Calvino’s The Baron in the Trees. It is a satirical social commentary on hierarchy, sex and the pleasure of books that appeals to both children and adults alike. I loved this story. It contains all of the ingredients of a fairy tale.
You’re about to exhibit at Anthropologie to coincide with the publication of The Fairy Tale Princess: Seven Classic Stories from The Enchanted Forest. Tell us about the show... I was approached by an editor at Thames and Hudson who had seen my work online. They wanted to work with a paper artist, and thought my style of work would be suitable for illustrating a compilation of traditional fairy tales. Seven fairy tales were shortlisted and I’ve spent almost two years creating over 40 paper sculptures for each of them. Each piece was set up in a studio, lit and photographed. I will be exhibiting 27 of the 40 works for the display at Anthropologie.
Your work is bound up with folklore and fairy tales. What is it about those realms that particularly appeals? It is the magical, and sometimes nonsensical, surreal aspects that appeals and all the talking creatures, tasks and spells, path-ways and magic. Also it’s the repetitive element and the fact that they contain basic psychological connotations and symbols. Fairy tales are bound up with the extremes of emotions, of our hopes and fears. They evoke basic systems of belief, spirituality, magic and romance as well as danger, heroism and violence. All of these elements appeal hugely.
Why do you think fairy tales tend to stay with us – more so than most other genres of storytelling – long past childhood? Fairy tales reawaken the rawest sensibilites, dark undercurrents and sexual appeal. What was your own childhood like? My father was strict, and I often thought about escaping. I spent my childhood playing in the woods at the back of our house. I drew maps, made dens, and gave trees names. I imagined the trees were my friends and guardians. I was always making up stories and telling tales. Have you always had a strong imagination? Yes, I used to get into trouble at school for day-dreaming. The teachers made me sit away from the window, because I would look out and my mind would drift off. The only subject I excelled in was English, because I loved stories.

When did you first create artworks out of books and what lead you to do so? I started this technique after graduating from the RCA in 2003. It began after a trip to Thailand, where I bought a beautiful secondhand book with Thai inscriptions in the margins on the Kao San Road.
Where do you find your books typically? In second-hand bookshops and antique markets. Wherever I am, I find the local second-hand bookshop.
What was your first creation like? My first book-sculpture was The Quiet American. I cut moths from the book with a craft-knife. The piece was inspired by a Chinese legend about two lovers whose souls re-emerge from burnt ashes in the shape of two moths.
Which other artists do you find inspirational and why? Annette Messager, Kiki Smith and Paula Rego. They are artists using the fairy tale motif and re-interpreting it.
What is it about paper as a medium that appeals to you? Its strength and fragility. It is a humble material to work with, and malleable in the hand. It’s endlessly fascinating. Can you tell me a bit about the process of making the works? I start with a sketch, begin cutting with a scalpel and use glue and card to strengthen the model. The lights are the last thing to put in. The work evolves as I am making. How long does a typical book sculpture take you? Up to three months.
What is your most treasured possession? My daughter.
Take me through a typical day in the studio... If there is such a thing… not really, but a typical day would be getting into the studio at 7am, replying to emails from the day before. Then I start on practical work around 9am, either commercial work or my own projects. I have an assistant to help me three days-a-week. Other days I like to be in the studio alone. In the evening, I generally do some admin, tidy up and leave the studio around 7pm. We drink lots of tea throughout the day. I am lucky, I live close to my studio, just a few minutes’ walk away.
What new projects do you have in the pipeline? I have recently been commissioned by Sotheby’s to create work for an exhibition in 2013 at Chatsworth House, Derbyshire, inspired by the Duke of Devonshire’s collection of manuscripts.
Do you ever experience a conflict when you have to cut up a book to create your art? Yes, and when I do, I put the book to one side, and I don’t use it.

Did you always want to be a chef? Growing up I watched my mum cook every day; freshly baked bread, vegetables from the garden and eggs from our hens. It was simple home cooking but it sparked an interest. It wasn’t until I left Ireland at 17 that I thought about cooking as a profession.
moments, I’m not too sure I could choose just one. Becoming a head chef at 21 was quite amazing, and getting a Michelin star is something that all chefs aspire to. Being invited to cook for The Queen is something that I will never forget.
Culinary heroes? There are quite a few, a mix of chefs and restaurateurs. Some I respect for being groundbreaking, some for being familiar and some for longevity, such as the Roux brothers and Pierre Koffmann.
What projects do you have going on at the moment? We’re really pleased with the success of Bentley’s Sea Grill at Harrods, and the rest of my time is taken up with Bentley’s Oyster Bar and Grill and of course Corrigan’s Mayfair.

Top three ingredients you like to cook with? Good quality butter, as it adds a rich taste to any dish, especially sauces. I love samphire, and not just with fish; it’s great with salt marsh lamb too. Also, Maldon sea salt – good quality salt is often over-looked. What do you like to knock up for a quick supper? Baked beans on toasted soda bread. It hits the spot every time. Best culinary advice you’ve been given? A set of sharp knives will take you far, and not just in your career. Being a chef is one of the few professions that can take you around the world. Guilty food pleasure? A Kit Kat with a mug of Barry’s tea is heaven. Where do you eat out in London? I like to head down to St John for some devilled

I like going to Southern Ireland, it’s where I feel most relaxed. The beach in Wexford is completely unspoiled and one of the few places that I can switch off. Seafood from around that area is unbeatable. Future plans? 10ml olive oil A little flour 4 rabbit legs 1 large onion, roughly chopped 1 clove garlic A small bunch thyme Half bunch tarragon 1 litre chicken stock 100ml double cream 1 leek, roughly choppped A small handful of morels (optional) 300g plain flour A pinch salt 150g butter 2 egg yolks 1 egg, beaten (for glazing)
Instructions:
Put the flour and salt into a bowl and rub in the butter until you have fine crumbs. Add the egg yolks and a turn of black pepper and mix to a smooth dough. Roll into a ball, cover and chill in the fridge for 15 minutes. Heat the olive oil in a large saucepan. Flour the rabbit legs, season well and colour lightly on all sides. Remove the legs from the pan. In the same pan sweat the onion without colouring for five minutes. Add the garlic
and thyme, then the browned rabbit legs. Cover with stock, bring to the boil and simmer gently for no more than 40 minutes. Remove the rabbit legs and set aside to cool. Pass the liquid through a fine sieve into a clean pan and bubble up to reduce by half. Add the cream and simmer for 15 minutes until you have a smooth sauce. Check seasoning. Blanch the leeks for a minute in boiling salted water and drain. Take the meat from the rabbit legs and mix with the morels, if using, the leek and tarragon. Put this mixture into an ovenproof dish. Pour the sauce over and allow to cool, then chill in the fridge for an hour or so just to firm everything up ready to take the pastry. Dampen the edge of the dish with water. Put an egg cup, upturned in the middle of the dish. Roll out the pastry and drape over the dish. Crimp the edge, brush with beaten egg and leave to rest in the fridge for an hour to firm up the pastry and prevent it shrinking when you bake it. Preheat the oven to 180C/gas mark 4. Bake the pie for 40 minutes, or until the pastry is golden brown. 63

THE PEAR TREE
T
hree years ago The Pear Tree, just off the Lillie Road, was what the pub going pro would refer to as a ‘scratcher’ (for which think fruit machines, beer-stained carpets and a handful of faithful perma-present regulars who’ve propped up the bar for the past 40-odd years). But when Daz and Lulu Gwynne – owners of Betty Blythe tea room in Brook Green, a byword for vintage quaint, and now the Antique Chair pub in Fulham – saw past the squalor, they recognised in one of the area’s oldest buildings the potential to restore its original 1840s features to their cosy, traditional best. And cosy it irrefutably is. We beat our path through the driving rain to be welcomed into what feels like the snuggest of sitting rooms, all vintage-style wallpaper, candle light, roaring fire and warm reception. It’s the kind of place that almost begs those coming in from cold to order a heat-giving whisky and snuggle up by the fire for the night. Thank god then for Mark, our barman and waiter – the epitome of charm – who quickly dissuaded us from such a course of action by swiftly bringing over a very fine bottle of Malbec, hearty rustic bread with oil (greedily devoured) and a carafe of water
in the kind of decanter that would make our grandmothers proud. Immediately, the sense that we might never want to leave crept stealthily – but definitely – over us. And so, in the name of tarrying a while, we surveyed hungrily both the blackboard of specials and the regular menu, alighting first at starters of bruschetta with pear and stilton (the sweetness of the fruit cut through the strength of the cheese perfectly and deliciously) and whacking great crevettes with garlic toast which elicited many a satisfied murmur of approval from my companion. Next we opted for Herefordshire steak with hand-cut chips which was pronounced a triumph, having been cooked to faultless medium-rare excellence, while salmon fishcakes provided just the sort of comfort food the rainy evening required. After all that we were too soporifically full to attempt the puddings. But the likes of the Martini trifle alone will have us coming back – it is, after all, our new favourite place as we contentedly agreed upon rolling all the way home.

S
ince 1987, this Fulham Road stalwart has been trailblazing the foodie highway of SW3. Rising tall above the fashion houses and design stores, the striking 1911 masterpiece in which Bibendum is housed fits in seamlessly with its glittering surroundings. A project of Sir Terence Conran and Lord Hamlyn, the building, with its bright blue stainedglass windows, has now achieved iconic status – and, the restaurant, on the eve of its 25th birthday, is not far behind. Head chef Michael Harris has created an inspired menu of ‘French food with a strong British influence’. It’s seasonal yet sophisticated with a solid streak of adventure. Plump for the à la carte option – a selection which would make even the most decisive wobble. Oysters, though, are an essential choice, and they certainly set the bar high, slipping down the throat with remarkable ease. Or, try the terrine of foie gras with Armagnac jelly – an equally smooth, well-portioned delight. For my companion and I, the seafood stole the show, particularly the roast cod with cauliflower purée and cèpes. This succulent and exquisite dish was simple yet effective, the exemplar of French cuisine. For those of a more carnivorous bent, the lamb cutlets persillé with creamed tomato and mint were a delicious combination, as was the classic fillet steak au poivre. It is essential to leave room for dessert, where the zabaglione parfait with roast fig secures the top prize. With the food and decor ticking all the boxes, everything else seems almost superfluous. However, the place continues to delight: the service is immaculate, the varied wine list is impressively vast and the red armchairs are perfect for relaxing into once you are just too full to move. YOU WILL NEED: 1 oasis foam ring (approximately 12 inch) Blue Spruce or similar evergreen foliage Baubles, fir cones, dried fruit (apple) Scissors, binding wire. Candles and oasis candle holder/strong ribbon METHOD: 1. In a sink or bucket filled with clean cold water, float your oasis ring until it soaks up the water and sinks. Turn gently to ensure even absorption on all sides. 2. Prepare your foliage, cutting it into pieces (4-5 inch lengths) and remove any needles to ensure a clean lower stem. 3. Push each stem approximately 3/4 inches into the oasis, to cover the ring. 4. Prepare your baubles, cones, dried apple rings with a binding wire and place between and above the foliage on the top and sides of the ring. 5. For an Advent ring, place four candles into oasis candle holders and firmly push into the oasis ring. For a door wreath, empty any excess water from the ring before tying a ribbon around the top of the wreath and attach onto your door. NUTCRACKER COCKTAIL The head barman at The Goring has designed a delicious Nutcracker cocktail to get you and your guests into the Christmas spirit. Take 25ml of Frangelico and muddle with some grated hazelnut in a cocktail shaker. Then add: 15ml of Kahlua 10ml of Creme de Cacao 25ml of your favourite cognac 75ml of double cream Shake this with ice and pour into a martini glass Garnish with grated hazelnuts
nless you know what you are doing, themed parties are notoriously difficult to pull off. Many themes can seem to offer endless depth and creative possibilities only to falter upon implementation on the day. All too often we attend parties where the theme extends only as far as the guest’s fancy dress. A well-executed theme gives you a structure to guide your planning of a menu, the decoration, the drinks and the impressions you want to leave your guests with when they depart. It is those lasting memories that make your party stand out from the many we all go to over the festive season. Developing a party around a theme does not necessarily make it more expensive; it just requires a little more thought. To get you going, here are some ideas on how to bring two different themes, one for Christmas and another for a New Year celebration, to life. A NEW YEAR’S EVE PARTY New Year’s Eve should be a fitting end to the festive period and, cutting through the heaviness of December, should look forward with enthusiasm to the year ahead. To do this, a New Year party must have direction and tempo; the midnight moment alone isn’t really enough to keep a party going. At New Year, many of us start to look forward to skiing. So why not bring an Alpine ski resort to London for one special night? Imagine your guests in a mountainous winter wonderland, crunching across powder snow for fun après-ski drinks, wandering through St Moritz on their way to dinner in your home, transformed into the inside of a chalet. When they arrive, serve your guests a cocktail you have designed yourself and offer them mini versions of fondue, pierrades and raclette, which, while heavy main meals, can make lovely canapés. Light your dining room with hundreds of twinkling tea lights accompanied by some wonderful scented candles from Rachel Vosper. Cover your table with a smorgasbord of winter treats. HOW TO BE THE SUPERLATIVE HOST PLAN: Good parties take careful preparation and few of us ever have enough time to plan. Do think about engaging a party planner for bigger gatherings. DECORATIONS: Most of us look for the biggest tree that we can reasonably fit in our homes but as an alternative consider smaller living potted trees (yes, not just one) which add a wonderful touch to your decorations and work perfectly as ‘advent’ trees, bristling with 24 tiny numbered presents. Think about using berried holly sprigs to decorate your home – traditional but also very beautiful in their simplicity. Look out for the Christmas wreaths made by Neill Strain in Belgravia. OFFERINGS: After a while, offerings of Christmas cake start to pall, so how about edible Christmas decorations? This year Prestat, the Queen’s chocolatier has launched wonderful chocolate Christmas bauble decorations – give one from your tree to every guest as they leave. Alternatively, how about a small bespoke scented candle for Rachel Vosper? DRINKS: It’s time to get inventive with the drinks. Endless rounds of champagne and (shudder) mulled wine are the Christmas party staples, but for those of you who want to break out of the rut and wow
your guests, you are spoilt for choice. Bang the drum for whiskey toddys and mulled ciders with Armagnac/Calvados, or spice up your fizz and delight your guests with Sloe Royales (champagne topped with sloe gin). ENTERTAINMENT: Why not look to the professionals for help? For very reasonable prices, you can hire string duos, harpists, and singers from The Royal Academy of Music or choral scholars from Collegium Royale. Why not invite the musicians to mingle amongst your guests, only to break into spontaneous and dazzling song before leading your party in a rousing three-verse carol finale. While on the subject of carols, you can never go wrong with a group of choristers from a local school or even one of London’s cathedrals, beaming, angelic and heartrendingly Christmassy in cassocks and surpluses. As long as they are provided with a never-ending supply of mince pies, you will have struck Christmas gold. STAFF: A good party should flow, drinks should be refilled and replaced seamlessly, and the accompanying food, whether standing or sit-down, should be as mouth watering to look at, as it is to taste. We all know this, but this makes being a host quite hectic without staff to help. The hotel
The Montpellier Chapter is Regency Cheltenham’s funkiest new hotel. Set in the fashionable Montpellier quarter, famed for its chic independent boutiques and restaurants, the Chapter’s classical exterior gives little hint of the revolutionary design within. Wave farewell to outdated reception desks: paperless check-in is conducted on a 1.2-tonne sphere of solid English oak. Reception rooms, including a library and mirror-backed bar, are decorated in muted tones with low-slung, streamlined furniture by British designer Matthew Hilton and specially commissioned contemporary art works. Behind the Grade II-listed villa, an ultra-modern crescent-shaped wing overlooks a secluded glass veiled inner courtyard inspired by the original conservatory. Illuminated by a striking new glass chandelier, the conservatory is the perfect place to enjoy a post-shopping cocktail.

Sixty bedrooms – plus a swish penthouse – are divided into four categories. Sixteen rooms in the new wing feature oak flooring, walls of Bath stone and bathrooms incorporated into the bedrooms. Beautifully designed, it comprises four timber-clad cocoonlike circular treatment rooms, a compact steam room and chill-out area. REN products, made in Devon from natural ingredients, feature in the simple but effective treatment menu. If you’re pressed for time, try the Express Signature Facial (£30 for 30 minutes). Combining gentle massage with REN’s bespoke unguents, it guarantees a soothing quick fi x for tired skin. For work out fans, there’s a small fitness room and access to the pool at nearby Cheltenham Ladies College.
The restaurant
Consultant chef Simon Hopkinson of Bibendum has collaborated with head chef Tom Rains to create a modern menu chiming with the hotel’s Rule Britannia philosophy. Changing with the seasons, the menu features British favourites and classic dishes created around the best ingredients to be enjoyed beneath a handsome barrel-vaulted ceiling. This is one of the original wine country destinations. Founded by French-born restaurateur Claude Rouas, the Auberge Du Soleil began life as the Napa Valley’s first finedining establishment in 1981. It soon turned into a spa and hotel in 1985 and eventually a whole philosophy on life, summed up by the founders in three words: ‘pleasure is healing.’ In my case, drinking wine in front of a beautiful view is tantamount to such healing (and if not, is certainly a pleasure) – after all, The Auberge is credited with having the best view in the entire county. Terraced on a hillside, the accommodation is comprised of rooms and exclusive private houses, all named after their particular view. It’s hard not to coo over the decor (think Mediterranean-inspired with super cool contemporary art, French windows and
beautiful private terraces). Presiding over the culinary shape of things meanwhile is executive chef Robert Curry who does an unparalleled job running the Michelin-starred restaurant, as well as at the bistro and bar situated on the wraparound deck – the perfect place for a quick bite. In addition, there is a serious wine programme, featuring over 1,500 bins, that would have even the keenest connoisseur all of a quiver. Continuing the healing theme, the 7,000 sqft spa is an essential and exclusive part of the guest’s experience. You may, as Otis Redding did, find yourself sitting on the dock of the bay, but if you are staying at The Inn Above Tide in San Francisco, you’re likely to be holding a glass of Cabernet Sauvignon in one hand and receiving an in-room hand massage to the other. All of which is not so desolate as the reflective crooner would have you believe... This quirky San Francisco hotel with breathtaking views of the city’s skyline, Alcatraz and Angel Island hangs over the bay so you literally see the water lapping beyond your window as you wake up and retire for the night. Situated just around the corner from the world-famous Rodeo Drive, the four-star Beverly Wilshire exudes both old and new Hollywood glamour; dating back to 1928, it has seen its fair share of stage and screen stars come and go. he ultra-stylish boutique hotel Alma is regularly voted one of Barcelona’s finest places to stay, though judging purely by its aesthetic, you’d be forgiven for thinking you’d found yourself in 1930s New York. The modernist lines of the building, chic rooms and flawlessly slick service combine to bring to mind a rare combination of Manhattan efficiency and Parisian style. Walk out of the hotel, itself a dead ringer for an Upper East Side mansion with a quirkier twist, and you’re on the Carrer Gran de Gàrcia, a sort of hyper-charged cross between the Champs Elysées and Regent Street, where all the hippest shops and coolest brands flaunt their wares. Yet you’re only a 20-minute walk from La Rambla, the city’s most famous street, where Catalan style and tourist entrapment go hand-intanned-hand. Welcome to Barcelona, a city that you’d be hard pressed to reduce to stereotypes – however hard the glossies may have tried.
Situated in the heart of Catalonia, Barcelona famously declines to define itself as ‘Spanish’. From its cuisine to its traditions, everything about it is proudly set apart, allowing the usual clichés no room to breathe. The fact that it has long been considered Spain’s most cosmopolitan city is hardly a puzzler; first there’s the incrediblecome-loopy architecture, presided over by the prince of street surrealism Antoni Gaudi, whose famous (and still unfinished) Sagrada Familia church has one of the most breathtaking interiors that you’re ever likely to clap eyes on. There are public parks such as the vertiginous Guell, where the city’s muchmourned chief architect’s hand dominates, making visitors feel like they’ve had too many sangrias just by wandering round its curved, pirouetting walls. And then there are dizzying myriad of places to eat and drink, when it comes to which selecting favourites is an almost painful exercise in editing the really good from the downright brilliant. And eat and drink you will, in abundance. This is not a place to come if you’re trying
to diet; you simply won’t be allowed. Don’t miss the wine bars, which are either achingly cool places serving exquisite drinks (Monvínic – monvinic.com – in particular is often lauded as the best wine bar not only in Barcelona but in the world, a place for both serious professionals and amateur oenophiles), or more traditional holes in the wall that will sell you a glass of lightly sparkling cava for little more than the cost of a bottle of water (try La Xampanyeria on Carrer de la Reina Cristina 7, 08003, but get there early to avoid the perennially long queues). And then there’s the tapas. Itself far from a Catalan speciality, the various restaurants and bars in the city have long caught onto the idea that people like to eat small but delectable portions of such delicious items as chorizo, calamari, the much-prized spicy potato dish patatas bravas and more adventurous options as well. Make sure that you head to what’s by common consent the city’s best tapas bar, Cal Pep (Plaça de les Olles, 80800; calpep. com) and brave the long tailbacks before you

eat perfect tortilla, spicy padron peppers and much, much more. After you’ve spent the days wandering round, you’ll be all too grateful to head back to the Alma, a place where the warmth of the hospitality is matched by its slickness. After you’ve been greeted with a glass of cava on check in, you’ll find yourself becoming your own room key, as your fingerprint is taken and stored on the system; a far more convenient option than having to remember an easily mislaid piece of plastic too many sips of Rioja later. The dining room is seductively coated in black wood, but if you’re feasting on the excellent modern Spanish cuisine in the restaurant in the evenings (the spaghetti with egg and Catalan black sausage is something to try before you die), it’s unlikely that it won’t be warm enough for you to dine al fresco, unless you visit in the depths of winter – and even then, Barcelona is still only slightly bracing, although the locals will shiver and draw their coats around them at weather we northern types deem fit for polo shirts, shorts and espadrilles.
All of which, of course, makes the city’s beach all the easier to enjoy – and in turn renders Barcelona an ideal and unusual compromise between the cultural and the soporifically relaxing. Every weekend finds locals flocking to the bars and restaurants that dot the waterfront for a mixture of people-watching, peacocking and, when we visited at least, some rather daring aeronautical displays. If you prefer to base yourself close to the shoreline, do make a beeline to the Hotel Arts, one of the city’s grande dame residences. Owned by the RitzCarlton group, it offers the sort of peerless luxury you would expect from somewhere that appeals in equal part to discerning international travellers (celebrities call it home) and Spaniards eager to see what the city’s tallest building can offer. Which is quite a lot, as it happens. Visitors to the Hotel Arts are recommended to steer themselves in the direction of the Arola restaurant. Presided over by culinary supremo Sergi Arola, a disciple of local hero Ferran Adria, the tapas-style menu offers
sophisticated twists on such favourite dishes as Iberian cured ham, patatas bravas and scrambled eggs, all of which reappear in devilishly clever forms. The only thing that everything that you eat – or drink from the comprehensive wine list – has in common is that it’s going to be of the highest standard, a badge of honour for the charming and knowledgeable staff to maintain. It’s hard to eulogise Barcelona too much. With a well-deserved reputation for effortlessly melding the old and the new, coming here is like going to the best party that you’ve ever attended, where the gracious and charming host wants to concentrate purely on making your night the best one, but where everyone wants to beguile and impress. Finally, when the fun’s over and you’re heading home, perhaps slightly teary and weary from all the excitement, there’s only going to be one thought uppermost in your mind: how do I come back for more? almabarcelona.com hotelartsbarcelona.com 97

Wokingham is a place you have probably given little thought to. But parents take note: if the latest lifestyle survey is to be believed the Berkshire market town is the best place in England to bring up children. An annual league table has dubbed this town of 32,000 souls as the most family-
friendly location in the land, with Woodley, its near neighbour, in second place. Presumably though, the researchers did not consider factors like the opportunity for world class culture on the doorstep or – and apologies to the fun police – the chance for some harmless teenage kicks once scrumping for apples no longer appeals. Yet when families leave the capital they invariably do so ‘for the sake of the children’. I can’t help but question whether a country childhood really is all it’s cracked up to be, even if spent in a rambling Georgian rectory. Sure, the air is fresher – but even country children need to be supervised outdoors nowadays, if they can be prized from their PlayStations, that is. And, shock horror, they have sex and drugs in the country as well. City children have the best of both worlds: the expanses of Hurlingham Park and the museums for culture. They also spend more time walking while country children are endlessly in need of chauffeuring until they are old enough to hurtle around single track roads in their own cars. Urban kids tend to be more independent too. Hopping on the tube gives them street smarts and a freedom I doubt many would trade for days spent wrangling bad tempered Shetland ponies.

Buyer confidence remains vital, but the overriding reason the market has not slowed is due to accurate local pricing; this is largely because local agents know their patch. If one was to search lonres.com for freehold houses that have come to market since April 2012 the results would speak for themselves: 67 per cent of those withdrawn have been listed with agents not based in Pimlico. The importance of local knowledge is highlighted further when you consider that non local agents achieve a 42 per cent success rate in sales, compared with the 89 per cent by local agents. In terms of values, the local agents continue to lead the way. If one uses the £1000 sqft marker as a benchmark, then 87 per cent of deals at or above this level have been achieved by local agents.
THE WHITE STUFF ED MEAD, DOUGLAS & GORDON For the first time in four years, London agents are talking about cutting jobs. The last time that happened was post Lehman. The impact doesn’t look as immediate, and the irritating thing is that it’s partly avoidable. Waffling on about SDLT changes in the Budget is sort of missing the point; at least when the White Paper is published the boffins can go to work on behalf of those who can afford it. The real damage is being done by Vince Cable, probably the most intelligent, dangerous member of the cabinet, banging on about mansion taxes and Ed Miliband misquoting how he intends to tax millionaires. This takes the form of a lack of confidence which shows how little trust there is in our politicians. Buyers simply don’t believe that whoever is in power won’t move the goal posts. With average prices in Chelsea at £1m, a reduction of the level at which an annual levy is paid would be horrendous, and though the actual words ‘mansion tax’ are tainted politically, there’s now talk of re-banding Council Tax and hiking the take that way. An already apathetic buying public is not enthused; with chains and financing causing sale agreed to exchange times to exceed 10 weeks, a central London market that disappears up its backside helps no one, including mealy-mouthed types who revel in class warfare. 109

started working in London’s residential property industry more than 30 years ago. I was born in the Kent countryside and educated at a convent school. Whilst I was growing up my parents were always moving house, so I was used to meeting estate agents, hunting for houses, moving home and having no roots. My entry into the profession started after graduating from Lancaster University in French, Russian and marketing – a fortuitous basis for working in the central London property market, as it would turn out. My parents wanted to move to London so they gave me the job of finding them a dilapidated house to renovate. I got to know many of the Chelsea and Kensington estate agents, and eventually found them a lovely house in Drayton Gardens. A couple of the estate agents I was friendly with suggested I might enjoy the challenge that comes with the job, so I started working for a small agency based in St James before being persuaded to work with Gary Hersham at Beauchamp Estates. At that juncture, my father gave me some invaluable advice to ‘never to willingly leave the Royal Borough or Mayfair’, so I first settled in to Chelsea and I now live in South Kensington and am a confirmed urbanite. Beauchamp Estates is run very much as a family business and I love the fact that we are all hands-on and provide a personal service. To be a successful estate agent you need a combination of social skills, ability to negotiate and an understanding of how buyers and sellers think and react. You also need patience, charm and tenacity in equal measure. Each day offers a new challenge and I can honestly say that there is never a dull moment. Over the last three decades the London property market and the business of estate agency has changed dramatically. The prime London market has always had international buyers, however the number of countries from which purchasers hail has grown beyond all recognition. We now have clients from over 100 countries around the world, and act for and with royalty, billionaires, politicians, ambassadors, celebrities and successful high networth individuals, a number of whom choose to deal exclusively with Beauchamp Estates, showing steadfast loyalty. If someone had told me 30 years ago that London houses could one day fetch in excess of £100 million I would have been astonished, yet it’s now a reality. Quite simply, the global demand and continuing lack of supply for the best residential properties keeps an upward pressure on prices, combined with a huge jump over the last 10 years in the quality, size and features of the luxury property available for sale. Underground leisure complexes, private pools, gyms and beauty salons are now demanded from a large number of exacting purchasers, with the result that London’s best homes now offer all the facilities of a leading 5-star hotel. The email and internet age has also transformed the property market, by making the delivery of information from vendor to purchaser much faster, however the personal touch has become even more important. With the huge array of electronic information now available, people more than ever want someone to help guide and advise them through the property buying or selling process, which is why the role of the estate agent remains at the heart of the London property market. Having owned a family house in Tuscany for more than 40 years, the opening of a branch in Florence has seen the culmination of two of my greatest passion: Italy and property!
