hat’s She! The Only She! Make an honest woman of her – quick!’ was how Rudyard Kipling and his wife, Carrie, felt the first time they saw Bateman’s. Which, of course, is how we all wish to feel when we see a wonderful interior for the first time, whether it’s our own home, someone else’s (after allowing for the envy to subside) or a grand public residence. The idea of home is always emotive. Traditionally one is expected to sigh with relief upon crossing the threshold of the familial abode after having finished a day’s work, or indeed a journey, to delight in one’s surroundings as if welcomed by an old friend. This, of course, is a more likely response for some than others, depending on the aesthetic of the pad. In this issue, we celebrate some of the most exciting and inspirational designers working today. Rose Uniacke trained as a gilder and restorer, and has lately joined the ranks of the serious antique dealers and designers who cluster on Pimlico Road. She tells us why it’s all about balance (as opposed to symmetry) and the importance of creating rooms with a heart on page 71. One of the grand dames of interior design – and still dizzyingly busy – is, of course, Nina Campbell, whose shop on Walton Street is beloved by so many. I quizzed her about her beginnings in the world of interiors, firstly via her mother’s obsession with both fabric shops and moving house and later through working at Colefax and Fowler before setting up her own business. Turn to page 42 to find out why she thinks the notion of bad taste is all about snobbery, and to get her views on modern art. Ex-Tate curator and BBC culture supremo Will Gompertz is a man who is all too familiar with the world of contemporary art. He’s just completed his first book – a sort of 21st-century answer to Gombrich – and Henry Barlow went to meet him to talk politics, populism and posterity. Our man in Milan casts his mind homeward
T
he smell of autumn has returned and the frenetic rounds of fabric shows around Europe are well under way. My inspiration finds a welcome boost in Milan and all things Italian. What is it about Italy that stirs the creative imagination? The lifestyle, family and food, plenty of noise of the best kind, and that nonchalance of style the Italians pull off so well… a quick walk down Via della Spiga, Milan’s main shopping street, provides more ideas than a month spent elsewhere. Milan is as associated with interior design as it is with fashion, but really it’s all linked. In tune with the more austere look of the catwalks – masculine, military and structured – the season’s interiors are calm and subtle with shades of soft white, greys and neutrals. With those basics as a canvas, you can add your own palette; the most important feature is your own hand-print. For me, there’s nothing as welcoming as a jug of fresh flowers to greet you on your return home; it lifts the spirits. The Costelloe family recently acquired a new fridge, and the cream Smeg sparked off a longing to update our old battered kitchen. It’s enough to start off from one piece and work around it; the Smeg will probably start a revolution! The current vogue for wooden floors allows the use of rugs to add colour and texture to any plain room. We stripped all the floorboards in our house and with the regular heavy-duty footfall that a big family incurs, we can change our look every six months or so in either rugs or painted floorboards. STYLE Is such a thing as a typical Bracher Emden customer? Yes – a strong, independent woman who is daring.
Congratulations on having been the only British designer to feature on two catwalks at London Fashion Week. That must have been pretty special? I was over the moon to show my designs on such a prestigious platform. I am based in Thailand as we have our own factory there and LFW is such a special time for me. It is so inspiring seeing everybody come together for the love of fashion.
Your collection went on sale at Harrods last month. What did that mean to you? Everything! What better place to exhibit our designs than in the world’s most famous department store? You have collaborated with Swarovski and Jean-Pierre Braganza. What do you enjoy about working with other designers? I love it when a designer’s vision is immediately apparent through their work. We take great care and consideration in selecting designers to unite with – they tend to have a very strong brand image, and I endeavour to keep these visions distinct whilst designing collaboratively. Like all designers, we are dedicated to representing Bracher Emden in a particular manner, and would never compromise there – that’s the beauty of collaboration, a perfect synchronisation!
What was it like? I collaborated with the wonderful Bora Aksu for the second time. His collection is always inspired by a story – last season for instance he drew influence from Henry Darger’s The Vivian Girls. Any other projects in the pipeline? SS13 also welcomes a new collaboration – our debut collection with J.JS Lee. Her label is defined by chic tailored pieces with an androgynous edge. My handiwork often includes a masculine element, but is undoubtedly, unmistakably effeminate luxury. Tell us about your AW12 collection? Some classic styles remain, but also I adopted a new technique; geometric patterns have been laser-etched on to classic Bracher Emden styles. This cutting edge approach moulds perfectly with the remainder of the collection, and unites with existing skills such as layering and appliqué. Our bestseller has been the large Geo Clutch which epitomises our futuristic yet intrinsically feminine style. You’ve been in business for 10 years. How do you plan to celebrate? We’ve had a super busy year so far. We will be launching a classic collection to cement Bracher Emden as a well-established brand. Of course, we will continue with a seasonal mainline collection but some of our signature styles will be available year round.
You’ve come a long way from your nascent days in Covent Garden… When I started, it wasn’t to show the world who I was, it was to enjoy life and do what made me happy – and this hasn’t changed. We have stayed true to our original remit – we do not agree with mass-produced, dull accessories. If a person is to indulge in a luxury item, it should be a real one-off. I feel we have fulfilled these ideas by always using the best quality materials and truly putting love into every single item. Did you always want to design accessories? I wanted to be in the thick of all things fashion and decided the fastest way to get there was by designing accessories. My fashion jobs have included customising trainers for Nike to designing window displays for Moschino.
You have a devout celebrity following – is there anyone you particularly love seeing with one of your creations? Beyoncé was once questioned on her favourite accessory, and responded: ‘My Bracher Emden bag. It goes with everything. I have a safety pin on the strap. It’s been through so many flights, but I don’t want to fix it. I kinda like it like that’. Whose style do you rate? We are huge fans of stylist and blogger Sandra Hagelstam of 5 inch and up. f, like many people, you believe that Botox can only achieve results by freezing your natural facial expressions, it’s time to think again. What’s Botox used for? Botox is used to treat frown lines, crow’s feet, ‘bunny’ lines on the nose, smile lines and to tighten the skin around the neck and jowls. Does Botox still have a stigma? People used to think that if you’d had Botox it gave you status. Now it’s an everyday treatment. The stigma surrounding it is far less than it used to be, and with a conservative approach no one need ever know you’ve had it done. How can I look fresh, not frozen? When you smile or frown the muscles in your face contract, causing lines and wrinkles. Over time, these lines become
permanent. Botox works by relaxing the muscle, but too much can stop all movement, which gives a frozen look. We prefer to subtly enhance your features, so rather than give you a stiff, unnatural look, we take a measured approach. We start by injecting very small amounts into precise points in the muscle, thus softening wrinkles but keeping some muscle movement. We’ll see you two weeks later to make sure you’re happy with the results and, if needed, we’ll fine-tune by giving you a top-up treatment. Who should carry out Botox? Botox is a prescribed medicine, so you’ll meet one of our aesthetic doctors for a full skin consultation. If you decide together that it’s the right treatment for you, they’ll prescribe it. Botox injections should only be given by a qualified doctor with relevant training – at our clinic the procedure is always carried out by an aesthetic doctor. In deepest rural France sits La Vieille Ecole – or the Old School House – in the village of Argenton Chateau. The house holds such special significance for painter Alex Russell Flint that he was moved to buy the property in 2010 after having fallen in love with it while studying fine art in Maine et Loire many years earlier. For his latest exhibition, Russell Flint takes inspiration from the once semi-derelict 1850s ex-school, nestled in a steep rock face in the village, and as such has painted 25 young women posing against different backgrounds in the property. It’s 50 years since the first James Bond film was released and never has the super spy waned either in the style stakes, or indeed in popularity. Skyfall, the 23rd movie (and the third for Daniel Craig), will doubtless maintain the agent’s standards; directed by Sam Mendes, the film opens post a disastrous operation in Istanbul after which Bond is missing and presumed dead. Back in London, M is under investigation after the details of M16 agents have been leaked on the internet, at which point Bond makes a timely and surprise reappearance. Javier Bardem plays bad guy Raoul Silva. As ever, expect nail-biting, edge-of-seat drama. Skyfall premieres on 23 October.

David Bailey’s new book sees him swap the sartorial for the subcontinent, as his camera fi xes its gaze upon the Indian capital. Bailey’s Delhi Dilemma examines how the new (shopping malls, housing estates and huge internet companies) is attempting to eradicate the well-loved India of old, its prevailing thesis being that the long carved-out Indian identity will endure. Says the snapper: ‘I always start shooting as soon as I get off the plane, once you become acclimatised to a place you stop seeing the differences. These pictures are all about people or the products of people. India must be one of the most photographed places on earth because it naturally lends itself to imagery through the colour and the landscape.’ Bailey’s Delhi Dilemma is published by Steidl this autumn and will be available in all good bookshops and via steidlville.com

A question of taste Nancy Alsop meets the refreshingly nonprescriptive Nina Campbell, a designer who is horrified at the idea of showroom-style living

ou’d never suppose that Nina Campbell was a woman in the throes of the notoriously frantic preparations demanded by a stand at Decorex (which is ‘like going back to school, all the old faces’), such is her poise and unflappable demeanour. Casually she rattles off her to-do list – new collections, festive season preparation ‘all those people who want to be in their houses by Christmas’, new rooms at The Draycott hotel and projects in America and China – as if it were little more strenuous than an amble in the park. She does, though, concede that the forwardfocused nature of the design business is, at times, alarming. ‘Today we were talking about inspirations for January 2014,’ she says. ‘Some of my staff were saying: ‘God, I’ll be forty by then.’ I said: ‘Well, aren’t you lucky? Please, I’ll be dead by then!’ This exchange is typical of Campbell, who, despite the success and accomplishment that has characterised her career in interior design – plus the triumph of her muchloved and lauded shop on Walton Street – happily remains open and downto-earth. Ask her about her family life, and she will endearingly get out pictures of her grandchildren (‘we took my grandson Charlie to the zoo to see the penguins the other day, he was practically suctioned to the glass. He couldn’t talk about anything else that night, especially one naughty penguin’). Enquire as to what makes her proudest, and it’s the idea that via her talent for making comfortable and beautiful environments, she is able to help others. ‘I had dinner with a client last night who has had a horrible year, and she said: ‘You can’t imagine with all the horror going on, having the house has been amazing.’ It was just lovely when she said that. So you have changed someone’s life and that is what matters to me. It’s so nice when you have that rather than someone whinging…’ she says, patently gratified. Campbell’s guiding mantra to be open minded is, you sense, paramount both to the continuing evolution of her work and to her self-image (‘sometimes I see people I went to school with and they seem so OLD! I’m sure I look a hundred, but being busy and
working with brilliant young people keeps you young in mind’). One such co-conspirator and collaborator is Christopher Wilcox of Natural Curiosities, with whom she is working with on a joint project for Decorex. ‘I went on to their stand in New York about five years ago, and I thought: ‘I’d love to have this in the shop, but it just isn’t going to work’’, she explains. ‘Everything was sort of too big and I am very aware that the shop is too small. But then I went on another time, and one of them was there. I told him who I was and he said: ‘Oh my god, I love your things’, and I said: ‘Well actually I love your things’. He said: ‘Did you realise that you can have this collection at any size you like, and that we have this huge archive that we print specially’. So I began to realise it wasn’t just a print shop actually, it’s an art house.’ Since that meeting, they have collaborated on the Capital Hotel and the Chelsea Galleries (‘the designers then love it because they are suddenly being offered an alternative to all those old photographs you see in every 43

restaurant everywhere. I got to the point where I thought: ‘If I see Frank Sinatra walking along that boardwalk once more I’m going to scream.’’) What advice, I ask, would she give anyone buying art for the first time? ‘If I’m doing a really big house, I’d rather they choose their main pictures themselves. I don’t mind suggesting or editing, let’s say. I’ve just worked for some Russians who have very contemporary art and that’s been quite a learning curve – they’ve got Giacometti sculptures, which are lovely – but they have other things that initially I might not like, but I was brought up by a father who said: ‘Don’t just say no to things, keep your mind open.’ And he was right.’ There was, though, one particular piece that even her
consciously open mind struggled with. ‘There was something that came that I really did think: ‘Oh my god, what is this?’ And the owner’s wife felt the same way I think. It sounds derogatory, but they have a kitchen that opens off the dining room so you see everything in it, and she put it standing by the sink. It’s quite a funny piece, and actually in the end I said: ‘You know, that is absolutely genius.’ You’re standing doing the washing up and you’re cheered up by this strange piece of sculpture, which is very brightly coloured. He had said to me: ‘You’ve made this flat perfect, so I’ve now got to make it imperfect. You have to help me.’ I really like that.’ This instinct to endow homes with her very own breed of ‘perfection’ was, perhaps
instilled from a very young age, when her mother – an Austrian refugee and ever itinerant – insisted on moving house all the time. ‘That definitely informed my childhood, because I was always going, instead of to the toy shop, to Cole’s wallpaper shop. I wasn’t deprived in any way, I remember thinking it was rather fun, and I had quite esoteric taste actually. I remember one bedroom with this grey Toile de Jouy wallpaper with people playing tennis in slightly Edwardian outfits. And then I had yellow curtains. I thought yellow and grey was very smart, but I never really strayed far from my mother.’ Did she have good taste? ‘She did actually. But after the war you couldn’t get anything. So my mother had bought some saffron yellow fabric from God

knows where, and those was our curtains – you took everything with you because you could never get it again. But what you did have was people to help you because there were no jobs. So we had these had this lovely Croatian couple who lived at home and they brushed the stairs from top to bottom every day. They were lovely people – two men. But my mother wasn’t English, so she had no inhibitions about that and was delighted to have them.’ One stipulation her mother had was that the houses must be within a certain geographical radius. ‘My mother made the most extraordinary comment once. She said: ‘I am already a refugee from Vienna. I don’t need to be a refugee from Belgravia.’ She wasn’t actually a very funny woman, but she said funny things sometimes by mistake. I branched out you see, I went to the other side of Sloane Square which she thought was like a foreign country. She was quite bizarre really.’ And so, armed with her intimate knowledge of fabric shops, off Campbell went to work for the General Trading Company. ‘I did the wedding list there which was very fun because aged 19 I became incredibly bossy to all these brides. ‘You can’t put that plate with that glass!’ And that, I think, gave me the beginnings of the shop, because I sort of loved the objects around me.’ After that, she went off to work for Colefax and Fowler, which was ‘amazing, I really was very lucky. The first bit, I didn’t really understand at all. John Fowler would ask me to do things that I just didn’t understand. But I worked with one woman there called Imogen Taylor who explained to me what he meant when he’d suddenly say things like: ‘I want you to rusticate this wall’. I had no idea what rusticate meant.’ Did it feel bold, I wonder, to then after
three years, launch her own business? ‘Strangely it didn’t. I went off on my own because I suddenly thought: ‘I think I better quit while I’m ahead, before they sack me.’ I thought: ‘Well, if I have my own business, no one can get rid of me.’ A little later, I was anxious to have a shop, and I was doing the work for Annabel’s at that stage, so I said to Mark Birley: ‘Why don’t we have a shop together?’ So we opened a shop called Nina Campbell and Mark Birley which went on for about eight years before we parted ways.’ Since then, her wallpaper has been distributed by Osbourne and Little, she’s decorated projects all over the world and produced her own collections of objects for the shop. Has she, over the years, come to have a clear definition of her style? She deliberates. ‘It’s not really contemporary but I like to think it’s open-minded. As you get older, you get
the courage to say: ‘You know, I don’t actually know what you mean’, whereas when you were younger, you would nod along and pretend you understood. It’s got to be comfortable and easy living – not a showroom. When you go to those sorts of places, you don’t feel wanted; you feel that you’re crushing the cushions or something, or you’re terrified that you moved a book. Oh, and I hate when there’s only one book. I want books.’ It is this that so neatly epitomises Nina Campbell, surely one of the most unpretentious designers in London, as evidenced via her attitude to the very notion of ‘bad’ taste. ‘People can get very snooty about people having bad taste, and you think, well, it’s just different. And actually maybe the appalling thing in the corner is quite fun and funny. Maybe we should just get over it.’ 45

t makes a certain sense that the woman responsible for reconciling the iconic look of Indiana Jones (that fedora, those so often torn and grizzled khakis) should be the very same charged with curating what is set to be the V&A’s autumn smash-hit exhibition, Hollywood Costume. Deborah Nadoolman Landis presents her edit of the best-loved outfits in cinema, from Dorothy’s dress in The Wizard of Oz to Audrey Hepburn’s definitive LBD in Breakfast at Tiffany’s to Keira Knightley’s green gown as worn in Atonement. But, says the curator and designer, it wasn’t the clothes that she took as her cue to include the pieces in the first instance; rather it was the characters that most resonated with a cross section of generations and audiences. So amidst the achingly beautiful, also expect Jack Sparrow’s garb as swaggered about in on the set of Pirates of the Caribbean, as well as cowboy stylings of Heath Ledger and Jake Gyllenhaal in Brokeback Mountain. In the words of Sir Christopher Frayling, also a guest curator: ‘The design of costumes for films is a distinctive form of design which is often taken for granted or misunderstood. This V&A exhibition presents the ideal opportunity to set the record straight – and will do so in the most spectacular way.’

t seems fitting that it’s Penguin Books’ Strand office where I meet Will Gompertz, BBC arts supremo and author of the book What Are You Looking At?, which bears the subtitle ‘150 Years of Modern Art in a Nutshell’. The clear, clean lines of the art deco building seem an apt stomping ground for the charming and energetic Gompertz, who arrives fresh from a meeting with his audiobook producer in BBC-approved uniform of Paul Smith jacket, Bill Nighy-esque dark-rimmed glasses and jeans. An instantly engaging presence, he’s instantly eager to discuss the purpose of his book. ‘Most people don’t know what modern art is, to be honest. They know it’s a painting or a sculpture, but don’t know what it’s trying to say, what the ideas behind it are, or what the purpose is. So that’s the point – it’s an attempt to confront people’s preconceptions, or lack of them, and it puts the burden of proof on the reader.’ Thankfully, the book is no dry, didactic tome, but a witty and informative read that mixes historical recreation, informed criticism (Gompertz’s previous role was as a curator at the Tate) and anecdotage. The idea for it came firstly from an article that he was asked to write for The Guardian, and then, of all things, a stand-up comedy course that he undertook to discuss art in an accessible, funny way. There’s a clear personal bias throughout; as Gompertz says, disarmingly, ‘I’ve only selected works of art that I like, and are worthy
of consideration, as I didn’t see the point in including rubbish. I might not like everyone and everything I write about personally, such as Gauguin as a man and Futurism, but they’re hugely important.’ The book has an impressive scope, covering
these nuggets include some of the eccentric characters who have populated the art world, and sometimes Gompertz dramatises their conversations and interactions, an engaging device that he describes cheerily as ‘licenced flights of fancy, which are designed to put the reader in a time and place.’ One of the most enjoyable aspects of the book is that it helps to resensitise the reader (and later viewer) to art, moving on from the ‘Oh, that looks nice’ school and reminding people how trendsetting – even dangerous – art was once regarded that now wanly adorns postcards and teatrays. Whether this is something that will be repeated with the Hirsts and Emins of today is a moot point. As Gompertz says: ‘It’s a fool’s game to try and call on future posterity. Do I think Jeff Koons will be revered in the same way the Impressionists are? I have no idea. The last quarter of a century is impossible to describe in terms of artistic movements – the closest thing I’d describe it as is ‘Entrepreneurialism’ or ‘Commodificationism’. One figure, notably, that he exempts from this description is the ever-controversial Ai Weiwei – ‘an outstanding social artist, an extremely important figure beyond the confines of art, and probably the most remarkable figure working today.’ The book’s potted history of the last century and a half includes movements that most people have heard of, such as Surrealism,

A uniting thread that Gompertz notes, despairingly, is that the history of western art is primarily one dictated by white men. ‘Someone really ought to write this book and just concentrate on women. There are a few who crop up – Emin; Berthe Morisot; Dora Carrington – who are good artists, but if you’re doing this sort of book, people want to know about Manet, Monet and Pissarro, so there just isn’t enough space to cover the major figures and everyone else too. Which leaves you with a sense that we live in a world that doesn’t have female voices in it, which is an enormous shame.’ For Gompertz, it seems clear that the age of Entrepreneuralism is coming to an end. ‘The night that Damien Hirst had his massive sale at Sotheby’s in 2008 was the same night that it became clear that Lehman Brothers was going bust, and so it spelt the fin de siècle, in a sense. What’s going to come next is uncertain, but I don’t know that the establishment of the galleries is going to be part of it. Look at street art and Banksy. People are doing significant, risk-taking things, and you could never put those in a museum. In fact, some of Banksy’s most interesting experiments have been subverting the whole process of exhibition, when he’s doctored exhibits in galleries.’ Understanding the vagaries of the arts world in general is, of course, Gompertz’s day job, and it’s one that he relishes. ‘The most crucial thing at the BBC is that you have to be 100 per cent factually accurate at all times, and that you have to differentiate fact from opinion. This has filtered through to the book, as I lay away at night worrying that I’d got something wrong! But I love working at the BBC, it’s a terrific place. It’s populated by the same sort of people as the Tate – clever, focused, non-egotistical types who understand that the organisation is bigger than they are – but the big difference is that I don’t have to spend my life in meetings.’ Chatting to Gompertz is both hugely enjoyable and illuminating, rather like having the coolest teacher you can imagine. He’s egalitarian in his views, simultaneously describing the traditional white middle-class masculine stranglehold on British popular 53

culture as ‘outrageous and an utter disgrace’ and heartily concurring with Nicholas Hytner’s remark a few years back that there was a dismal lack of right-wing voices in the arts, with the consensus instead being a liberal-left one. ‘It annoys me how some attitudes towards funding are creating an idea that the arts are ‘difficult’ and ‘exclusive’. They’re not. People who don’t enjoy the arts are missing out on a gloriously rich part of human existence.’ When time’s up, we have a quick chat about theatre and literature – Gompertz raves about Sheridan Smith and Adrian Scarborough in the current production of Hedda Gabler – and discuss his forthcoming commitments, which include a documentary about the past 50 years of James Bond. As we leave Penguin, Gompertz asks me, unexpectedly: ‘Why do

Patrick Panioty of London Heritage Design and Build reveals the tricks of his trade Everyone knows how hard it is to find builders. Where do people tend to go wrong? It’s such a personal thing. The relationship you have with your builder is – by the end of the project – one of the closest you have, and you have to find someone you can trust. People go wrong when they start employing too many professionals, or believing unrealistic promises about how quickly things can be done, and to what budget. The most important thing is mutual trust. Having people you don’t know in your house can be the worst thing imaginable, and we understand that. We are based in central London and we know the area and its houses. How are you different? We fit between the architects and the builders. In fact, I really believe that everyone who does up a house needs us. People often start by going to an architect or hiring a project manager before looking for a builder, but most projects are too small to justify that kind of expertise. Plus, involving a project manager adds to the cost and, as an often unnecessary extra link in the chain, can cause confusion. We have a different
approach. We offer a complete turnkey service, so we are in control of everything. At London Heritage, the entire team is employed by us and every project we undertake is finished on time and to budget, thanks to the thorough planning we put in beforehand, and to our extensive experience. For our most recent project, we had ordered the kitchen, bought the paint and chosen the flooring well in advance of the project’s start date, and from there we worked to tight schedules. What sort of projects are we talking about? We do everything. We offer a complete interior design and build package, with projects ranging from basic maintenance work (we are nearby and can be with you very quickly), a new kitchen or bathroom to a complete house refurbishment. Recently we completed a challenging project in West Eaton Place, aiming to improve and add value to a fourthfloor apartment. We took down all of the existing walls and started with a blank canvas. It was very obvious that the living, cooking and dining areas had to share the same space, so
our theme for this ‘London look’ was retro chic. A high-specification kitchen, with lots of attention to detail, plus integrated audio/visual and internet services in every room made this a super luxurious project, with remotely controlled LED lighting used throughout, along with an unusual air cooling and heating system. What skills do your team have? We can do everything. Our team includes an in-house designer to help produce ideas and drawings, we have a surveyor, we have just taken on another young designer to help with more cutting edge projects and we have all the tradespeople. We’re fully insured and never use sub-contractors, so everyone is accountable and accredited. What’s your background? I started as an electrician and moved into electrical design, particularly lighting design. In the 1980s I was involved in commercial interiors when I began to realise that relying on other people slowed things down. You

What’s the most unusual request you’ve ever had? I was once asked to fit a tiger flap in Mayfair. It was a North African client in Half Moon Street and he asked for a big cat flap, so I fitted a dog flap, but it was still too small. When the client slightly sheepishly showed me a picture of his pet, it was clear that it wasn’t just a cat. This was a pet tiger. It used to roam around the roof terrace. A fine balance Rose Uniacke’s interiors speak of elegance and refinement. Just don’t ask her to talk about her work too much, says Nancy Alsop

sk Rose Uniacke to talk about her work, and she suddenly comes over the very personification of diffidence. What makes her Pimlico Road shop special? ‘That’s hard to say without elevating myself.’ What’s been her best ever antique find? ‘I can’t say, it’s not easy to have favourites. It’s like having a favourite colour’. What is her advice for first-time antique buyers? ‘Oh my God, I don’t know how to answer that. I always just buy things that I love’. Antique dealer and interior designer Uniacke is, it quickly becomes apparent, that rare thing: a designer almost averse to the idea of talking about her own work. She will, however, lavish praise upon her mother, Hilary Batstone, whose interiors shop she started out in, and who Uniacke credits with attuning her eye. ‘I didn’t study at art school or anything like that,’ she explains. ‘But I used to rearrange my own room as a girl all the time. I don’t know why
but I suppose that my mother always had amazing houses, and that she fostered in me a natural inclination to make the space around one feel right.’ Three years ago now, Uniacke moved out of her mother’s shop and decamped to her own shop and studio – which is about to be expanded into the next door space – just at the end of the road. (‘I can’t imagine being anywhere else other than around Pimlico Road, it’s such a lovely, old-fashioned community here.’) While Uniacke struggles, almost bizarrely, to describe her aesthetic sensibilities, the words I gently put in her mouth are that it speaks of a spare beauty, to which she tentatively agrees. ‘I hope so. I think the way I work, especially in the context of historic houses, is to use old furniture, which roots the building but to mix it with the contemporary. What I love about antiques is the recycled aspect, which is so great. I do also make bespoke
furniture, but that is usually borne out of not being able to find what I’m looking for. The range of sofas were developed because I couldn’t find anything classically leaning but contemporary and comfortable. And where I can, I will use recycled wood in the bespoke items.’ Uniacke’s expertise are myriad and broad-reaching; she trained as a furniture restorer, gilder and a specialist in paint and lacquer, she decorates houses ranging from the historic to the contemporary, she sources and sells important 20th-century pieces alongside English and European furniture from the 17th- to the 19th-centuries (‘though I am not prescribing those periods. If something that doesn’t fall into those periods is interesting, it won’t stop me buying it’), and her latest commission is the flagship offices, set in a Georgian building in Marylebone, for Jo Malone. ‘It’s exciting as it’s my first commercial project,’ she says, though she is typically reticent to say much

about it. ‘Estee Lauder bought Jo Malone and is now revamping the brand. It’s been an interesting challenge because everything has to be branded. I can’t give away too much, but it finishes mid-December.’ Does she get nervous prior to the opening of her work? ‘I don’t know. I’ve never done it before.’ While Uniacke is reserved when it comes to categorising her work, or defining it too much, there is one rule that she’s tends to abide by: everything in a room must have a purpose. ‘I sometimes think that my style is quite minimal. It has a classical root in a sense, but it is quite contemporary in fact. Generally I don’t use furniture for the sake of it – it must have a function,’ she explains before adding: ‘Actually perhaps that’s not quite true. But I always want to create a room with a heart that makes you want to come in to it. It
should have a balance – though I’m not talking about symmetry. It’s about feeling comfortable without necessarily knowing why. Classically the fireplace was always the heart of a room as, for obvious reasons, everyone would gather round it. Now you have to think of other ways of providing that heart.’
interiors. I do use colour, it all totally depends. I generally wouldn’t use primary colours anywhere but a nursery, but then what if someone in the future wants to use red velevet of the most primary variety?’ About her own home, which is not far from the shop and has been nicknamed Hogwarts by locals on account of the fact that her husband is David Heyman, producer of the Harry Potter movies and that it has gothic leanings, she is effusive. ‘It was built by an artist in 1860, and it’s a lateral house, which is interesting, because at the time, everyone else was building up. It’s constructed around a great octagonal north-facing studio, it’s such an interesting footprint. We worked on it for two years before we moved in, and even now, I cannot resist changing things around a lot.’ As she says, it’s in the blood.
‘Classically, the fireplace was the heart of the room. Now you have to find other ways of finding that heart’ Does she, I wonder, have any particular design bugbears? ‘Yes, but I don’t know if I am going to say what they are,’ she laughs. ‘It’s probably better to celebrate the things I do like. It’s like saying I can’t stand patterned trousers – though actually I really can’t stand them! I suppose I don’t like too much drama, but I have done dramatic

Did you always want to be a chef? No, I originally wanted to be a concierge in hotels and learn lots of different languages. That’s why I went to Germany at such a young age – 17 – but then work was only available in kitchens and with food, there is only one language. Culinary heroes? My heroes in London start with the Roux brothers and now Roux junior. In so far as television chefs, I loved Keith Floyd for his bigger-than-life personality. Meal that changed your life? I can safely say that one of the finest (and simplest) meals I ever had was in a shack restaurant on the beach in Portugal – it was fish at its best cooked on an open fire with baked potatoes under the coal. Mamma Mia!
What’s the best thing about Italian food? The best bit about Italian food is that it’s for everyone, but don’t think it’s only about pasta and pizza. The new generation is showering us with tasting menus now, like one of my favourites, Cicchetti in Piccadilly, run by the San Carlo family who’ve taken the Italian tasting menu to another level. What has been the proudest moment of your career so far? I’ve had lots of proud moments in my long career, but it would have to be winning awards for my restaurants, such as ‘best Italian in London’. The list goes on, and let me tell you, it’s not over yet. Tell us about your world record-breaking pancake flipping. What inspired it? My world record was inspired by my little
Rocco. First making him pancakes on Shrove Tuesday and then cooking them on This Morning and Blue Peter. No one has beaten me yet! What projects do you have going on at the moment? Since the sale of my restaurants, life has been very busy with all my new projects and TV work, including the building of Zilli Media, my new company that looks after restaurants and gives advice on food in general. But I can’t reveal it all yet. Top three ingredients you like to cook with? Well, let’s start with a great olive oil, as I always love to finish my cooking with it. Then fish – pretty much any type as long as it’s fresh – I love it! Also, I can’t say I’m Italian if I don’t go for pasta; I could eat it three times a day.

and lately I released a vegetarian book called Fresh & Green that really champions healthy food made tasty – and easy. There’s also my Fish Cook book where you can find some of the most diverse recipes with fish. Guilty food pleasure? I do have lots of guilty food pleasures from chocolate to nuts to burgers, but my absolute pleasure has to be affogato al caffe! (white chocolate ice cream drowned in espresso coffee!). When not working, where do you eat out in London? If I am going for Italian then I love to taste different little dishes so again, Cicchetti in Piccadilly for me. Or, if I feel a little bit richer then it has to be Zuma in Knightsbridge. What are your favourite plates on the menu at Sub-Zero & Wolf’s new supper club? Well, it depends on the season. At this time of year it will be truffle, game and of course, my absolute favourite: lobster ravioli. What do you knock up for a quick supper? In my fridge and cupboards, you will always find ingredients for a quick meal, such as garlic, onions, basil, tomatoes, parmesan and chilli. So, a quick sauce to make for me has to be arrabbiata with plenty of chilli. Best culinary advice you’ve been given? The best ever advice I ever got has to be that it’s important to keep your feet in your kitchen even if you’re famous. You’re an advocate of healthy eating. Tell us more... Healthy eating has always been my passion
How do you like to relax? Making food with my kids, Rocco, 6, and Twiggy, 4. I love their faces when I make things from scratch, like turning flour and egg into fresh spaghetti. They think it’s genius and so do I! Future plans? The future is very bright for me, as my wife, Nikki, is going back into acting and I have so many different kitchens to work from now, including my cookery school at Stamford Bridge. It doesn’t get much better than that. Go Chelsea! Baked cod with black olive crust and lentils Preparation time: 15 minutes Cooking time: 40 minutes
Ingredients:
100 ml extra virgin olive oil 1 carrot, diced 1 celery stalk, diced 1 onion, diced 500 g Puy lentils 2 bay leaves 1.5 litres vegetable stock 1 tablespoon breadcrumbs 1 teaspoon fresh rosemary 1 teaspoon fresh thyme 100 g black olives 4 cod fillets (about 180 g each)
Instructions:
1. Heat half the oil in a large pan and add the diced vegetables. Cook until soft, about 3-4 minutes, stirring to ensure they don’t stick. Add the lentils and bay leaves, stir a couple of times, then add the stock and cook gently until it has been absorbed by the lentils, about 30 minutes. Keep warm. 2. Preheat the oven to 180˚C/fan oven 160˚C/Gas Mark 4. In a food processor blend the remaining oil, the breadcrumbs, herbs and black olives until you have a smooth mix. 3. Place the cod in a roasting tray and divide the olive mixture between the fillets, pressing it down with your fingers over the top and making sure you have an even distribution of the mix. Bake in the oven for 7-8 minutes. Serve the fish on top of the lentils. 77

MARCUS WAREING AT THE BERKELEY
A
lthough Marcus Wareing has only been cooking at the Berkeley Hotel for four years, his two-Michelin starred restaurant already feels like such an established part of the fine dining scene that a visit here feels less like an opportunity for a meal than a pilgrimage to culinary greatness. Not that the unpretentious Wareing would welcome such a comparison, of course. For him, the flim-flam of expected fripperies gets in the way of his desire to serve top-quality ingredients, cooked with imagination and precision, in the inimitably stylish surroundings of a David Collins-designed room bedecked with rich colours and a hugely welcoming atmosphere. There are a couple of tasting menus and the chef’s menu, but it was lunchtime so we stuck to the a la carte option. This was a good idea in theory, but in practice the quality of the food was matched by its quantity; there’s little danger that you’ll be leaving hungry. However, given that every morsel is of the absolute finest quality, it seems churlish to moan. From the
amuse-bouches of tomato gazpacho and lamb fillet to the final morsel of Wareing’s sublime signature custard tart (as requested by the Queen at her 80th birthday banquet), it’s all brilliant. To name all the best things that we had would be a laundry list of gastronomic accomplishment, but highlights included a starter of quail with girolle mushrooms in a delicate consommé, a very fine main course of pigeon, and a cheese trolley that should be the envy of any other restaurant in London. All this was accompanied by a selection of wines that were frequently unusual (Spain featured prominently, rather than the more conventional France or California) and entirely brilliant. Calling Marcus Wareing the most down-to-earth fine dining experience in London might sound like ambiguous praise, but that’s exactly what it offers. If you want pretension and expense, head up the road, but if you’re after a brilliant meal, you won’t be disappointed. Just make sure you don’t have any breakfast beforehand.
DINNER BY HESTON BLUMENTHAL
W
ith three Michelin stars firmly under his belt for the Fat Duck in Bray, one already knows that anything conjured up by Heston Blumenthal is going to be not simply good, but bordering on the magical. And at Dinner, his restaurant based in the opulent surrounds of the Mandarin Oriental, this gastronomic wizard doesn’t disappoint. The concept is all about Britain’s culinary past and provides a foodie education that would make any cookery teacher weep. Headed up by Heston’s protégé, Ashley Palmer-Watts, there’s a tantalising menu featuring dishes dating as far back as the 14th-century. A perfect example is Rice and Flesh (c. 1390) – a vibrant yellow risotto with saffron, calf tail and red wine accompanied by a punchy mascarpone. The already legendary Meat Fruit (c. 1500) is equally sublime, the chicken liver parfait shining bright in its mandarin orange jelly casing. The main course features a plethora of options; the Black Foot pork chop with hispi cabbage, lardo, ham hock and Robert sauce was cooked to perfection, accompanied by an inspired touch of pork crackling popcorn. The spiced pigeon was also absurdly pretty, complemented by deliciously tender artichokes. The wine list is, meanwhile, immaculately chosen; the mouth-puckering Vincent Girardin Vielles Vignes Puligny-Montrachet 2008 being a highlight. Dessert took top prize. After the unmissable Tipsy Cake (c. 1810) – a buttery baked brioche soaked in Sauternes with chunks of spit-roast pineapple – we were wowed by liquid nitrogen vanilla ice cream, made right in front of us, whipped into a cone and finally finished off with a topping of our choice. The foodie quarter The Chelsea Quarter Cafe and Riverside Quarter Kitchen are a lesson in stylish understatement, winning food and fabulous service
T
he Brompton Quarter Café has, ever since it opened, been our standard pit stop as a prelude to whizzing around both the V&A and, of course, neighbouring Harrods. Perhaps it’s the unfailingly friendly service, or maybe the celestially decorated, white-washed space which always lifts our spirits, or maybe it’s the superbly executed breakfasts and small plates (smokier and more delicious moutabel you will not find this side of Lebanon); whichever of these winning ingredients it is, we have not found a casual breakfast or lunch spot to rival it yet. It stands to reason then that we were thrilled when the burgeoning group opened two further cafes, first with the Chelsea Quarter Café on the King’s Road in October 2011, and most recently with the River Quarter Kitchen in Battersea. But as its ever-delightful founder and owners Valeria and Doron Zilkha are keen to make clear: ‘We focus on keeping each site individual, and most important, reflecting the area’s identity. We don’t just want to copy and paste a concept, as we see it happening more and more in high streets.’
While the thematic continuity is of simplicity, refinement, clean lines and excellent food, each has its own distinct character. Chelsea’s newest addition has become a mecca for A-listers and devotees of the already legendary English breakfast bun (eggs, sausages and mushroom served in an irresistible toasted bun), while over in Battersea, it’s all about river views, familyfriendly fun and contemporary European cuisine in a carefully crafted menu that includes pizza and pasta, with head chef Massimo Tagliaferri’s speciality being braised lamb shoulder with spring onion, courgette
and brodettato sauce. As the Zilkhas say: ‘We love all our locations, as London holds beauty everywhere, but being by the river is very special. The south of Cornwall is known for its prevalence of unspoiled coves, quaint fishing boats, sandy shores and calm, lapping emerald waters. Romantics like us go weak at the knees at the very thought of travelling by train, so it is with unbridled enthusiasm that we embrace Eurostar’s direct service from London to Avignon. In just over six hours you can be winding your way past vineyards, poppy fields and olive groves to the hilltop village of Crillon le Brave where, amongst the cluster of medieval yellow-ochre buildings, you will find an achingly beautiful five-star hotel named after the town in which is sits. The Slovenian and Croatian truffle scene is often overlooked in favour of that found in Italy and France – but unjustly so. The peninsula of Istria, which sits just across the water from Venice, boasts three sorts of black truffles, as well as the coveted white variety – the most valuable in the world. The epicentre of the buried Istrian treasure’s terrain is the hilltop town of Buzet, but there are worthwhile visits to the nearby truffle-rich Motovun forest, too (your final destination depends entirely on which guide you follow, for hunters each own different plots of land and guard them passionately). The Kempsinki Portoroz, which is situated on the Slovene stretch of Istria, is the place to turn for the complete experience. The luxurious hotel should be your first port of call when it comes to booking visits to local truffle sites, tours with professional hunters
and lessons in how to pick and what to look for. tanding on the steps of Casta Diva and gazing upon the resplendent Lake Como lapping languorously at its lovely shores, it hardly takes a Byronic imagination to conjure images of the palazzo’s first resident casting her glance at upon the same scene, some two hundred years previously. Then known as the Villa Roccabruna, its operatic soprano owner Giuditta Pasta, would have graced the same sweeping staircase and, squinting into the distance, she may just have caught a glimpse of her opposite neighbour, Vincenzo Bellini, as his rowing boat bobbed into moonlit view en route to enjoy an evening of her hospitality. The sole difference between Pasta’s experience and mine? That nobody will be rowing their way back home at the end of the night, inspired by my muse-like presence, to pen Opera Norma (unless, of course, those local charmers’ flirtations are to be believed); after all, the soprano was the inspiration for the opera in which she would later sing first soprano at La Scala in Milan. I, meanwhile, have trouble crooning along in tune to songs of infinite repetition on the radio. But only there are we at variance. For should La Pasta drop in on her former abode these days, she would find the awe-inspiring view little changed. As for the luxurious modifications? I can little imagine that she would find them disagreeable. The spectacular position constitutes, of course, the immediate draw of Catsa Diva, which is just a ten-minute drive from the pretty town of Como. But the 13,000sqm ‘resort’ (do not be put off by the word; this is about as far from the traditional, all-inclusive affair as you can get) has much to offer the design – and the relaxation – conscious. First there’s the floating swimming pool, which no doubt
during the summer months would have been a most welcome addition to the singer’s world, this portion of the lake being off-limits to swimmers. But when the weather is less conducive to sun lounging (Como is no stranger to rain), the route back to the hotel takes you – via the 19thcentury boat dock – past the spa, which has four treatment rooms, all designed to be shared and each dedicated to one of the four elements. Neither would our soprano, I conjecture, turn her nose up at the Bellini terrace, nor the L’Orangerie restaurant which serves up the very finest examples of traditional local food and overlooks the water, spilling out onto a laketeetering terrace in the warmer months. Casta Diva is a place of infinite romance – as Bellini himself would have no doubt attested – and for those so inclined, little is dreamier than settling in for a late night prosecco on the lake-facing balcony that almost every room is in possession of. Traditionalists may prefer the elegance of the rooms in the old palazzo, but the resort’s architects have been prudent enough to keep the new additions – large, contemporary rooms set into the rocks on the vertiginous incline from the road down to the lake – entirely in sympathy with the landscape. Meanwhile for those coming with a brood in tow, there is the option to rent your own self-contained house, but with all the joys of room service at your disposal. All of which myriad options explains just why Casta Diva, the first major five star hotel to open on Lake Como for a century, is keeping the old grand dames on their toes; as evidenced by the glut of dark shades and glamorous bodies on display on our visit, the elegant international set now has an option other than La Villa D’Este. If you are moved to set foot outside the soporificsurrounds of the hotel have a wander round the pretty streets of Como, which abounds with charming wine bars and informal
pizzerias, while those with a head for heights should bag a place on the funicular railway, the views from the top of which are unparalleled. But a trip to Lake Como would not be complete without an exploratory boat ride, which can take the form of a private yacht hire, or simply catching the local transport. We settle on Bellagio, as lauded by every guidebook as the jewel in the lake’s crown. Sure enough, we are met by scenes of almost absurd beauty; pretty higgledy piggledy steps wind their way up to only very slightly wider thoroughfares thronged with tourists during the summer, though it’s worth noting that as a village it is, to a certain extent, a victim of its own pulchritude; the chocolate box perfection has ensured its popularity with the fanny-packed brigade who coo over the tourist memorabilia that stares from almost every shop window. If you do decide to stay, the Villa Serbelloni is the grand hotel, its neo-classical yellow façade greeting visitors immediately as they step off the boat (previous guests have included Churchill, JFK and Clark Gable). A more impressive and ornate breakfast room you will not see, plus there’s the Michelin-starred Mistral restaurant to sample, with its experimental cooking which features the likes of peacock on the menu, no less. It is, perhaps, one for those who favour the old-fashioned, its interior being a paean to the 1970s. The views, meanwhile, are achingly beautiful, whatever your preferred aesthetic. Ed Mead FRICS, director, Douglas & Gordon hen I tell people I’ve been doing this since the late 1970s, they tend to say they weren’t born then, and that – like anything else in life – if you keep doing something long enough you get good at it. I’m very lucky in that I enjoy almost all my days at work, with my biggest issue being that the older I get, the more difficult it is to bite my lip. I’m fortunate because my business partners give me carte blanche to say what I think is going on, rather than simply telling everyone things are wonderful. Whilst that may not win friends within the industry, it seems that there are those who appreciate the honesty. Over the years, it has led to various opportunities in print, including weekly columns in The Telegraph and Sunday Times, and has raised my profile to the extent that I now sit on the Board of The Property Ombudsman and have been elected a Fellow of the RICS via something called ‘the eminent route’. Having started as many did by failing at something else – a mechanical engineering degree at Bristol in my case – I completed stints at some of London’s best-known agencies at a time when no one appreciated the value of training. The attitude of the bigger firms was that they thought people would work for them for peanuts because of their name. Well it didn’t work then and, controversially perhaps, I’m not sure it works now. Anyway, many boutique outfits love employing those trained elsewhere
and my more entertaining times were had with such agencies over the years. It would be fair to say though that, somehow, selling wasn’t my thing and after banging heads a couple of times with Ivor Dickinson, now our MD, almost 20 years ago he persuaded me to lead the Chelsea office of D&G and we haven’t looked back since. Motivating a crack team and applying decades of knowledge in an area that really needs it like Chelsea have proved a fulfilling combination for me. The fact that opinions expressed are of seeming interest to those who commentate is a bonus. Guidance in this area of PR from real experts proved vital and I’ve never shirked from having a good scrap in print, on TV or in front of a live audience about why estate agents are a necessary part of life. I’ve devoted almost as much time to lamenting the fact that successive Governments have shied away from regulating them too, and I’m still staggered that people in this country prefer a cheap agent to a good one. If I was to regret two things that have changed over the years, one would be that most view their house as an asset and not as a home, and secondly that the internet has turned estate agents into key holders who’ve lost the knack to sell buyers what they need, not what they think they want.
