I

’m writing this just before my birthday, which has, for me, always marked the beginning of spring. My mum calls me her Easter baby. Here's an embarrassing fact, my birthday cake, even at the ripe old age I’m at, is still a homemade lemon drizzle (mum makes the best) with a flake and mini egg constructed nest on top. This year, as I spoke to my mum on the phone while I simultaneously dusted my flat in London, I told her that obviously I’d like the same again. “But sweetheart, aren’t you a bit old for that now?” My mother said. A little confused and hurt I asked her “Am I?” You see, it may be that I’m older, but that cake is as important to me as everything else that signifies the coming of spring. As April starts to tease us with the warmth of summer, everything we do heads al fresco, come rain or shine. So, to prepare for the bikini season we test a treatment to firm and lift our bottoms courtesy of Nuriss skincare, page 34. AM: What makes your work different from that written by adult authors? HC: If people know my age they might read my writing differently from how they might have read it if I’d been ten years older; and my approach to teenage protagonists might be slightly different, in that I don’t feel any compulsion to base Rose’s story around romance or self-discovery just because she’s a teenager, as some writers might. I don’t think of myself as a ‘fifteen-year-old writer’. I write a lot, and I’m fifteen; to me these are two completely separate facts.

ABSOLUTELY: When did you first know that you wanted to write? HC: I can’t remember any kind of starting point. I always loved stories, and so writing them seemed like a natural dreamto have. All children love making up imaginary worlds when they’re little; I just never grew out of it. AM: What was your inspiration for this book? HC: I knew the relationship that would fuel the book Ω adopted father and daughter, bound by secrets and experience and love instead of blood, and both believing absolutely (and wrongly) that they will never lie to each other. I knew that I wanted to keep part of the London I loved whilst

also being able to write about magic, danger and darkness. And from knowing those two things the rest of the book unfolded. That makes it sound much more straightforward than it was Ω there were lots of dead ends, false starts and rewrites Ω but those were the two things I knew from the start. AM: Do you ever feel like your age hinders your ability to write? HC: No and in a sense, it really shouldn’t: just because I am younger than most authors doesn’t mean that I have an excuse not to hold myself to the standards expected of everyone else. I’ve never felt my age stops me from being able to write characters who aren’t teenagers (most of the characters in the book are much

love making up imaginary WORLDS; I JUST NEVER grew out of it. AM: What advice would you give to other young writers? HC: Don’t think about how unlikely all of it is. Allow yourself to consider the magnitude of the odds against you for, say, ten seconds every two years. The only possible consequence of your thinking about the implausibility of writing a book is for you to become disheartened and give up. Similarly, think about it in stages. Don’t start with nothing and think ‘I want to write a book’, because that will, again, remind you of how unlikely it is: aim to think of a decent premise, then a cast of characters, and then the rudiments of a plot. AM: What's next? HC: Lessons. Revision. Exams. Reading, to keep me sane; writing, to keep me saner. Books two and three, of course Ω the first draft of book two is already written and delivered. I’m really looking forward to it all! u

TROUXLY SCRUMPTIOUS World-famous Michelin-starred chef Michel Roux Jr. on Le Gavroche, being a ‘celebrity chef’ and crashing into Gordon Ramsay Wo r d s E d w i n a L a n g l e y

EDWINA LANGLEY: Did you cook a lot growing up as a child? MICHEL ROUX: No, because Mum was a very good cook and she didn’t want to let me loose in the kitchen! It all started when I did my apprenticeship at 16. EL: Was it very tough, your apprenticeship in France? MR: Yes, but very good. I look back on [those] years with great fondness. An apprenticeship is not just learning a trade or a craft. It’s learning life skills.

EL: I read about that and said to myself, ‘I cannot be late today..!’ MR: [laughs] There’s a dictum which says: If you’re on time, you’re already late…

EL: When your father and uncle opened Le Gavroche in Chelsea, you must have been roughly six or seven. Do you remember the opening – with guests like Charlie Chaplin and Ava Gardner? MR: No, I don’t really. But I could read the excitement on my father’s and mother’s faces. They were both working extremely hard – Dad was working six days a week and we very rarely saw him. Coming from an idyllic country childhood – where we had a garden and animals, with Mum and Dad [always] around, all perfect harmony – to London and not seeing Dad…

EL: Why did you train in France? MR: My father [Albert Roux] and uncle [Michel Roux Snr] thought it would be best for me. Let’s not forget it was back in the 1970s, when food in this country was not what it is now.

EL: Heartbreaking! MR: You know, as a young child, it was. Not really understanding. And then visiting the restaurant – I’ll never forget the smell, the smell of [that] kitchen. Going down into the basement, it was quite scary…

EL: When you came back, why didn’t you go straight into the family business? MR: Growing up in a family business environment is wonderful but I think it’s very important to learn your trade outside [of it].

EL: I can imagine. MR: As Le Gavroche was an immediate success, it was always busy. And as a child visiting it was almost as scary as going into church [reminisces for a second]. But yeah, so that was in Chelsea.

EL: Is there one skill in particular that’s stuck with you? MR: Being on time.

EL: So you did accountancy instead! MR: All I did was a four-month internship in a chartered accountancy firm to learn the basics – how to read a profit and loss account, and balance sheet – to make sure I understood exactly how to run a financially successful business.

ARTS & CULTURE/ INTERVIEW EL: Why did they pick Chelsea? MR: I think [they] spent quite a while looking for a place. [It was] an ideal location, and there was a kitchen ready.

EL: Not really. At least fats make things taste of something. MR: Butter, cream and duck fat. There you are. How very French! [MR and EL laugh very hard]. Can you imagine a diet of cream and duck fat?

EL: Le Gavroche moved here, to Mayfair, in 1981, and you took over from your father in 1993. What a heavy mantle! MR: It was! [A] huge responsibility – it had already become an institution.

EL: I can! But looking at you, it’s just too unfair if someone as slim as you could live off it. MR: I do eat very well and I eat a lot – a heck of a lot – but I am up on my feet most of the day. And I do exercise. I [also] eat a balanced diet – no fast food. The biggest issue with obesity has always been sugar, it’s never been fats.

EL: Did you have any idea how successful you would become with it? MR: No, I never take anything for granted. I think successful people always think they can do better. I’ve always got a little selfdoubt. But we are still a success [because] we haven’t changed our philosophy. And that is: being French, based on the classics. EL: It really baffles me how you continue to come up with new dishes. Don’t you ever think: ‘I just don’t know what else I can do with this chicken’? MR: No! I don’t think so. There are days... [But] with experience, inspiration is easier because you’ve got so much of a memory bank to draw on. But I always think of the classics. EL: Now, I know you do lots of marathons, but how do you stay so slim? MR: Long distance running is a hobby of mine. And I do [also] run marathons. EL: What do you think about when you’re running a marathon? MR: Food. EL: [Spits out coffee] That is too funny! What food do you think about? Or is it more: ‘At the end of I this, I am going to eat…’ MR: No, all the way through! I very rarely listen to music. I just like to run; it’s a great moment of peace and tranquility. I can just relax. EL: ‘Relax by running’. Hmm. Do you get recognized on your runs? MR: Sometimes. EL: You run round Battersea Park. I know Marcus Wareing and Gordon Ramsay also

EL: What have you got coming up in 2015? MR: I’m working on a new [book]. And television-wise, there are a couple of things in the pipeline.

I am not a

‘CELEBRITY CHEF’. I am a ‘CHEF’ run round Battersea Park. Do you ever run together? MR: No, we don’t. EL: Or bump into them? MR: I have literally bumped into Gordon... EL: Ha! MR: And that’s not a good thing cos he’s a big bloke! Literally, he came round one corner and I came round the other at full pelt. And we literally went SLAP! EL: That’s quite symbolic, that! MR: It was not good! I came off second best because he’s a monster of a bloke. I know Gordon very well, he’s a lovely guy. We gave each other a sweaty hug afterwards! EL: So you’re very healthy in terms of exercise. But in terms of eating, what do you enjoy? What would be your last dinner, for instance? MR: Roast lobster with loads and loads of garlic butter – of course – and served with big fat chips. EL: And what would you drink? MR: Cor! EL: Is THAT the ‘hard’ question? MR: It’s difficult! But probably a good white Burgundy or a bottle of Krug. EL: The three top ingredients that you couldn’t live without are…? MR: Good quality butter. [Thinks long and hard.] Cor… I’m just thinking of fats! I’m thinking: duck fat. I’m thinking: cream. It’s terrible, isn’t it?!

EL: Do you like working in television? MR: I do. But television work is not my goal. EL: It must be frustrating, then, to be labelled as a ‘TV celebrity chef’. MR: Yes, I don’t particularly like it. And my recent spat with the BBC only reinforces the fact that I am not a ‘celebrity chef’. I am a ‘chef’. Television is a by-product of what I do on a daily basis. EL: Standing up for your relationship with Albert Barlett Rooster Potatoes was really most admirable. MR: Because I took the stance of ‘I’m a chef first and foremost’, I could walk away. If being a celebrity was really my goal, I would have dropped my relationship with them, which I was not prepared to do. EL: I also love that – in view of the recent furore over women not being able to hack it in the kitchen (apparently) – that you have so many women in yours. MR: Whenever that subject comes up, people should just come here. I’ve got Rachel [Humphrey] who has been with me – [laughs] – a very long time. She started as an apprentice and now she’s head chef. Monica [Galetti] has been with me since the age of 24. And then there’s Renne [Miler], who’s another sous chef. So three female chefs in charge of a two Michelin-star restaurant, of repute, that’s been around for 47 years. Anybody who says women are not good enough to be in the kitchen are completely wrong. ’m not beating around the bush - I have become addicted to I Keeping up with the Kardashians. Like a large minority of people, I’m now obsessed with Kim and Chloe’s awesome bottoms, which give the illusion of particularly teeny waists. Although irritatingly, and in Kim’s case especially, these girls do have tiny waists. Gah! Unfortunately my Latino-physique is a far-off dream. Yet, while some lunatics pop off to their local surgeon for implants to create the perfect waist-to-bum-ratio, I sit here wondering (when there’s a cheaper, more stylish, less mentally deranged and what’s more REVERSABLE solution) why?! They’d evidently never heard of waisttraining: shrinking your waist by regularly donning a corseted garment, which you gradually tighten. Bizarrely, despite having co-designed a corset range, it never occurred to me that anyone other than Burlesque artists would do this. So, I decided to try it – well my version, which didn’t include going to the gym in one (like Kim). Wearing a corset for three consecutive evenings, it appeared I had lost three-quarters of an inch around my waist, not only this but it actually looked smaller. I can’t vouch for this method’s lasting effects or whether success was due to being unable to eat as much dinner, but it worked. ike a garden baked into a tart. This beautiful tart works with all kinds of herbs, but try to avoid strong flavours such as coriander or rosemary. as they tend to overpower.

INGREDIENTS For the pastry: • 120g butter, at room temperature • 60g cornflour • 1 egg yolk • 2 tbsp water • ½ tsp fine sea salt • 1 tsp caster sugar • 130g plain flour For the filling: • 25g butter • 1 onion, thinly sliced • 4 spring onions, finely chopped • 3 garlic cloves, finely sliced • 3 eggs • 100ml crème fraîche, plus extra to serve (optional) • 120ml double cream • ¼ tsp salt • ¼ tsp freshly ground black pepper • ¼ tsp coriander seeds, lightly toasted and ground to a powder • 120g mature cheddar, grated • 2 sprigs of parsley, leaves only, roughly chopped • 4 sprigs each of tarragon, thyme, oregano, marjoram, and chervil, leaves only, roughly chopped • 2 tbsp snipped chives

METHOD 01 First, make the pastry. In the bowl of a stand mixer, beat the butter until smooth. Stop the machine, scrape it down, and add the cornflour, egg yolk, water, salt and sugar. Mix again on low speed. Stop, scrape and add the flour. Mix slowly until you have a soft dough. Flatten out into a thick disc and wrap in cling film. Chill for 2 hours. 02 Roll out one half of the pastry on a lightly floured surface to 3mm thick disc, put in tart tray, bake blind, then allow to cool completely. Reduce the oven to 180°C/gas mark 4. 03 To make the filling, melt butter in a frying pan, cook the onion, spring onions and garlic over a medium heat until very soft. 04 Whisk together the eggs, crème fraîche, double cream, salt, pepper and ground coriander. Add the onion mixture and mix well. Stir in all herbs and grated cheese. Pour the herb custard into the tart case and bake for 10 minutes. Reduce the temperature to 170°C/gas mark 3 and bake for 20-25 minutes. Try to keep the tart light in colour, so the colours of all the herbs shine through. Serve while still warm, perhaps with an extra dollop of crème fraîche. u

It's our food special, so we headed uptown for a feast at Soho stalwart, Bob Bob Ricard

Earlier that day, my dining companion and I had stalked the restaurant's droolinducing Instagram and had already decided that for main we were going to order the beef Wellington to share. The thick golden flaky pastry encased perfectly tender 28-day aged beef, which we drowned in the accompanying thick truffle gravy. Following what were some rather unexceptional starters, we had begun to fear that Bob Bob might be all about the glamour, rather than the food. But after inhaling the main, we realised they do know their meat. It’s massive, potentially big enough to feed four, but they serve it for two so just take your time. Make sure that you order a glass of the 2007 Château Patache d'Aux to wash down that buttery Wellington. Despite being on the verge of exploding, we ordered the show-stopping BBR Signature Chocolate Glory to share. A spherical gold bomb of thin chocolate arrived with a silver jug of hot cocoa sauce. When poured over, the chocolate case melted and cracked to reveal the mousse, brownie, meringue, and passionfruit and orange jelly hidden within. It’s striking and with so many different elements to it, could easily have fallen on the wrong side of experimental. But the flavour combination of brownie and meringue with passionfruit and orange actually worked well. Be sure to head underground for a disestif in the downstairs bar. Order an espresso martini to fuel a night out in Soho afterwards, if you're not too full that is. With the oyster blunder forgotten about as soon as a mouthful of that Welly, touched our lips, all I can say is bravo Bob Bob and see you again soon. u

f you want to impress go to Bob Bob Ricard. This is the sort of place that makes you want to celebrate just being there. The elaborate Art Deco design sets the scene for something special and the Russian-cum-British menu is on the right side of extravagant. Be sure to make use of the ‘press for champagne’ button, which will ensure you're sipping on ice cold Ayala Brut in a matter of moments. We started our meal as the restaurant would have hoped: a flute of champagne in hand and a tray of baked oyster

brexhnev in front. The oysters were baked in heaps of parmesan and black truffle, which made it one of the most indulgent starters we've ever eaten. One thing's for sure, sometimes less is more. The powerful flavours of the parmesan and truffle totally overpowered the oysters. It was tasty, but after eating a couple we wish we had gone au naturel. Better were the truffled Siberian pelmeni. These traditional Russian dumplings are made using an ultra-thin dough to hold in the meat filling. Relying solely on the quality of the pork and beef for it’s great taste, they come served in a simple salty broth.

ON FOOD STREET Chef Ken Hom revisits Macau to sample the world's original fusion cuisine Wo r d s K E N H O M

O

ne of the wonderful things about my life as a chef is that I never stop learning and finding cooking inspiration from my travels and the people I meet. So on a recent visit to Hong Kong I jumped at the chance to re-visit Macau, a unique East-meets-West corner of Asia, and uncover the vibrant destination I first discovered 25 years ago. The Portuguese arrived here in the 16th century and although Macau became a Special Administrative Region of China in 1999, their influence can still be clearly seen. I expected things to have changed since my last visit, but didn’t realise quite how dramatically the culinary scene would have evolved. Macau is much more than its ‘Las Vegas of the East’ reputation suggests and for a place measuring just 11 square miles, it packs a real cultural punch. After the 50-minute fast ferry ride from Hong Kong, my reintroduction to Macau started with a stroll around the historic centre, a UNESCO World Heritage Site. Around every corner of this atmospheric part of Macau there are beautiful Chinese and Portuguese buildings of every kind linked by a maze of narrow streets and squares. The marriage of Portuguese and Chinese cultures also inspired my first

culinary experience in Macau, with a visit to see my friend and chef, David Wong, who is an expert in the local Macanese cuisine. While he cooked up some delicious Gambas a Macau, he explained how Macanese cuisine came into being. It was down to the Portuguese, who brought with them flavours and cooking styles from their home and far flung voyages,

blending Portuguese and Chinese flavours with seasoning and ingredients collected from South America, Africa, India and Malaysia. It is amazing to think that Macanese cuisine was one of the world’s first fusion foods, established centuries before fusion became the ubiquitous concept it is today.

TRAVEL / GASTRO TOURS Together we headed to one of David’s favourite Macanese restaurants, Restaurante Litoral, where I fell in love with the Casquinha a Litoral, a baked crab meat dish served in a rich sauce followed by the classic Galinha Africana and African Chicken, roasted in paprika and basted in coconut, garlic and chilli peppers. The Pato de Cabidela, slowly braised duck infused with local herbs, wasn’t the prettiest of dishes, but tasted out of this world. The pièce de résistance was the Tacho, a rich winter stew with smoked meats. With a head full of new recipe ideas, I retreated to the Mandarin Oriental Macau. The hotel benefits from a gorgeous waterfront location which is best enjoyed in the evening when the skyline lights up and throws its reflection onto the surrounding lake. Rica, where I caught up with my friend and brilliant chef, Dominique Bugnand. The restaurant impressed me with its signature dish of braised whole green garoupa with kimchi. The following day I headed for Taipa, the island sandwiched between Macau and Coloane, where I a whole street is dedicated to food. Rua do Cunha or the more colloquially named ‘Food Street’ and its surrounding roads in Old Taipa Village, offer a kaleidoscope of eateries serving Chinese, Portuguese and Macanese food, most of it from small local cafes, stores and stalls. Certain dishes have become synonymous with Macau and none more so than the humble Pork Chop Bun – mine was sweet and tender and the bun had a moreish crispy edge and was soft inside. That evening I returned to Taipa to dine at the famous Antonio’s. Opened in 2008, Chef António Coelho has brought his passion and gusto for Portuguese food and culture to the heart of Macau. To start I tried the Chouriço Caseiro

Assado na Canoa or roasted homemade Portuguese sausage and Bacalhau com Natas, shredded dried codfish baked in the oven with a creamy cheese sauce. My final day in Macau took me to Coloane, where Lord Stow’s bakery provides the sweetest of treats. Founded by Englishman Andrew Stow in the 1980s, the bakery is now run by his sister Eileen and is famous for one product – the sweet Portuguese egg tarts known as pasteis de nata. Following a visit to Portugal, Andrew developed his own version of these delicious, flaky pastries and thanks to his vision the bakery now sells an astounding 10,000 a day. A short walk through Coloane Village brought me to the

pretty Chapel of St. Francis Xavier, which was built in 1928 in the style of many of Macau’s baroque churches. My evening ended with a cocktail on the terrace of the hotel, Pousada De Sao Tiago. It was fitting that this delightful property overlooking the bay was once a fortress built by the Portuguese to defend Macau against pirates and other European nations. In many ways it represents what Macau has become – a place that protects its heritage but embraces modern luxuries. Over the past three days I had barely scratched the surface of what Macau offers foodies but it has certainly given me a reason not to wait 25 years before I board that ferry again. 

O

ne of the most famous terraces in the world, The Royal Crescent is an archetypal example of Georgian architecture. The sweeping row of terraced houses is Grade I listed and debuts the same Georgian stone façade and Ionic columns from when it was first built in the late 1700s. Designed by architect John Wood the Younger, the Royal Crescent has become a key historical site for Bath’s steady flow of tourists which, after an 18 year battle, are no longer allowed to visit the crescent in tour buses. Each house has a rich historical tapestry that has been sown by many a famous face. Writer Christopher Anstey resided in number 5, while jurist and explorer Thomas Falconer lived in number 18, and Major Bernard Cayzer bought number 1 in 1970 and gave it to the Bath Preservation Trust as a gift to the people of Bath. The hotel occupies number 15 and 16 on the crescent and is all long sash windows, panelled walls and original features. This set the scene, helped by the blustery wind, typecast staff and black cat, for a weekend that could’ve come right out of a Jane Austen novel.

any of the bedrooms and suites at the hotel have been named after notable historical figures who’ve stayed or resided in the different houses at some point in the past. These include the Sir Brinsley Sheridan Suite, the Elizabeth Linley room and the Ralph Allen Suite. The latter, where we stayed, is elegantly kitted out with a large, cloud-like bed, a walk-in wardrobe, and even a secret hideaway study, which on our stay became the popular ‘red wine room’. There is no minibar, which took us by surprise, but the in-house sommelier is as efficient as can be and makes things special by popping the cork for you in your room.

ander out of the main house into the enclosed acre of gardens, where there is a striking pillared Pavilion, manicured lawns and preened flowerbeds. There’s also a back-building that houses both the restaurant and the spa. The spa, which is a destination in its own right, is simple and pared back. There are plenty of treatment rooms, but it’s the indoor swimming pool (inspired by the famous baths in town) that really draws the crowd. Treatment-wise, the spa has all the classics, but we suggest opting for the Royal Crescent’s Signature Treatment. The 90-minute ESPA treatment includes a back massage, scalp massage and facial. Heaven.

Twin-team Joseph Joseph transformed the kitchen design into something bright and modern. But how far have they come since? I n t e r v i e w r o m y va n d e n b r o e k e

ROMY VAN DEN BROEKE: Did you always know you wanted to be designers? JOSEPH & JOSEPH: Design and manufacturing runs in our blood, so I think we would have always ended up doing something creative. Our grandfather owned a glass factory that our father then took over and our mother is an architect. All of our siblings have careers in design, so it’s definitely a family trait. RvdB:What’s the philosophy behind the Joseph Joseph brand? J&J: Our design ethos is: intelligent function, innovative design and beautiful form. RvdB: Describe the design style in three words: J&J: Functional, innovative, distinctive RvdB: How has it been working with your sibling? J&J: It’s great; much better than some people might think! We are both able to play to our strengths and I think this is why it works so well. RvdB: Is there a personal reason why you chose to design for the kitchen? J&J: The first commission we got was when our father asked us to re-design a range of glass chopping boards that his factory was producing, so kitchenware was a bit of a happy accident. After the success from that venture the range and company grew. We like to solve problems through design. At the moment the kitchen seems to be the area where this type of innovation works best, but who knows what the future holds. RvdB:What is it that allowed you to turn a relatively mundane, everyday object, like the chopping board, into such an iconic product?

THE PROBLEM IS WHEN people buy fakes and the QUALITY IS BAD we then start getting CUSTOMERS THINKING it is our PRODUCT J&J: We never set out to make something ‘iconic’ because design doesn’t work that way, if you were trying to do that it would never work. The products that have turned out to be the most successful for us are the ones that marry function with a really distinctive aesthetic and colour. With the Index set, the use of colour instantly

communicates the function to anybody who is using it, and that is the key to its success. RvdB: What’s your favourite signature Joseph Joseph design? J&J: It’s difficult to choose just one, but probably the Chop2Pot as that is really the product that started it all for us. More recently though, I would have to say Totem, as it’s such a fantastically functional product. RvdB: Tell me about your newest launch, Totem? J&J: Totem is the first product in our Intelligent Waste range. It is a waste separation unit that allows you to store all of your kitchen waste and recycling in one sleek design. With so many people required to pre-sort their waste at home, it often results in the use of additional bins or bags and boxes to keep all of these elements separate, which can look messy. With

HOMES & INTERIORS / INTERVIEW RvdB: You’ve dealt with plenty of counterfit problems, how have you had to deal with that? J&J: We now have an in-house IP lawyer that deals with these issues. The problem is when people buy fakes and the quality is bad we then start getting customers thinking it is our product. So if you are not on top of it, this can be quite dangerous as far as the brand image is concerned. RvdB: What Joseph Joseph products can you and your family not live without? J&J: The Nest 9 is used daily! It contains everything that you need to prepare food and it stacks away so compactly when not in use. RvdB: What is it about the London design scene that you love? J&J: It’s the sheer variety of young talent that comes through every year, it’s genuinely inspirational. RvdB: Where in London do you go for inspiration? J&J: Always head east. It’s a cliché, but that is definitely where the design scene is growing at the moment. The Design

Totem you are offered flexibility in how you use all of its compartments and enough capacity for all of your household waste, but without the need to compromise on kitchen space.

Museum is great for showcasing exisiting and upcoming talent, and obviously the London Design Festival is a fantastic creative scene.

RvdB:Which fellow designer’s work do you admire? J&J: James Dyson is definitely the one that stands out. He has turned innovation into a very successful business but without compromising on design and quality.

RvdB: What is the thing you are most excited about in 2015? J&J: We are looking forward to our Spring Summer 15 launch and to see how Totem continues to do this year.

RvdB: From where do you draw inspiration? Is there a process that leads you to building a new design or collection? J&J: Usually we look around and try to spot problems that need solving. Many of our best ideas have started with the thought “Wouldn’t it be better if…?” Otherwise, we look to larger trends that are happening in the world of kitchenware and start innovating in those areas.

Advice for students and parents on picking the best kind of holiday tuition before exam season starts

s we head towards the final leg before the countdown to A GCSEs, AS-levels and A2s begin, it is vital that students have a clear revision schedule mapped out. Ideally this should begin now, avoiding the mad, last minute cramming spree. Using constructive criticism received from their mock exams, specific areas of weakness can be identified. If extra tuition is needed this can then be arranged in advance. Doing so helps to ensure that the student has the tutor of their choice, which will likely result in more effective study. Quality over quantity is definitely a cliché that rings true in this instance. There is no point in spending hours poring over books if the student’s main achievement at the end of a day is staring out of the window for several hours or arranging their summer holidays to the minutest detail. So what revision approach should students adopt when? It is far better to combine structured and rigorous study sessions with outdoors study, where possible, and sports to keep both the brain fresh and morale up. And, it goes without saying, a healthy, balanced diet and plenty of sleep are key to an alert mind and prolific memory. Though simple, these tactics are the best methods for students to learn their class material, as efficiently (and as painlessly) as possible.u

ometimes great change happens quietly. Such a moment happened a year ago in a corner of south-west London when King’s College School hosted True Grit, a conference on developing emotional resilience in schools. A conference to openly address issues surrounding teenage mental health with representatives from the country’s most elite schools was a first. Within a week of advertising the event tickets were sold out, with nearly 200 leading school head teachers and pastoral heads attending. Highlights included a speech from child psychologist Prof Tanya Byron, Prof Russell Foster’s talk on adolescent sleep and neuroscientist Sarah-Jayne Blakemore shedding some light on the complexities of the teenage brain. The day was a resounding success. As Robert Milne now says: “The wave of public interest and support that surged the True Grit conference along has continued into other schools, professional

development events and the media.” Closer to home, Godolphin & Latymer recently ran a week of ‘resilience training’ for its high-flying girls entitled Challenge Your Limits. And in south-east London, Colfe’s School’s ‘Developing resilient minds’ programme shows that concern for teenage well-being is still uppermost in teachers’ minds. So much so that Dr Nihara Krause, an adolescent psychologist and key speaker at True Grit, has been asked to headline the Headmaster’s Conference deputy heads’ conference in Glasgow. King’s hasn’t stood still either, a few weeks ago it ran a sister conference entitled ‘Caring to Achieve’ and mental health campaigner Ruby Wax making the keynote speech. Why has personal resilience struck such a chord? King’s headmaster Andrew Halls says: “It is partly because we were openly discussing matters that some schools have been very reluctant to address. With an apparent perversity, some adults and children seem to ‘have everything’ – except happiness.” u

hiswick remains an exceptional place to live and is predominately family focused, with its village feel and busy High Street. The area goes from strength to strength and attracts a wide profile of buyers; some that are looking to trade up within the local area and some that are moving into the area from both Central London and abroad. To quote a recent Notting Hill buyer, “It seems to have a very similar vibe to central London, but greener and less urban.” The market is busier than most people expected and we have experienced a great start to the year. Concerns still exist regarding Mansion Tax but the stamp duty reform at the end of 2014 combined with continued low mortgage rate have resulted in a significant increase in demand for flats and Glebe Estate cottages. There has been a slight pause in pricing for many of the larger family homes and we are expecting this to continue in 2015, particularly £2m and above. Nevertheless, our experience is that correctly priced properties above £2m are selling, but vendors have to be realistic in terms of price. As the election draws closer and I am asked almost daily, so I thought I would take the opportunity to explain a little more about the proposed Mansion Tax. Firstly what is Mansion Tax? This is a proposed new tax, which would be levied on higher-value properties. Both the Liberal Democrat and Labour parties are currently working up alternative plans for the tax. The Conservatives have confirmed they do not

support these plans. Therefore it is only likely to take place if either Labour wins an outright majority, or if they or the Liberal Democrats form part of a coalition. Under Labour’s plans, anyone owning a property valued at more than £2 million would be required to pay the Mansion Tax following its introduction. They have discussed a mechanism to allow those on “modest incomes” to defer paying the tax until they sell their property. Those described as “overseas owners of second homes in the UK” would pay an enhanced rate. The only indication we have on cost so far is from the Labour Party who confirm that properties valued between £2m and £3m will be charged at a rate of £3,000 annually. There are no firm details on the level of tax for properties valued at more than £3m – or how the rate of tax might change in the future. We will have wait and see how this plays out and I believe that May/ June will be an interesting time. Right now our perception is that there is a good supply of stock for the first time in some years, and where property is sensibly priced buyers are pouncing. The key to the market at the moment is pricing. If properties are priced ahead of the market, vendors risk a lower viewing rate and the property may be on the market for some time. Overall now is a great time to buy, with fabulous mortgage rates and an increased level of stock, so I would highly advise buyers to take advantage of current market conditions. chiswick@knightfrank.com 020 3757 6230; knight frank.com

Is a 10 year fixed rate a good idea?

hile a few lenders have started offering 10 year fixed mortgages, the truth is that these mortgages don’t have a high level of demand. A few of our customers have considered locking in for 10 years, but the majority feel that it’s a very long period of time and instead opt for 5 year fixes, which tend to offer better interest rates anyway. Most customers in the London market want flexibility so a 2 or 5 year fix is often far more suited to their lifestyle. In addition, London homeowners are often quite aspirational, trading up to meet family demands every few years. London’s ‘seedy underbelly’? Dean Street, Soho

Y

ou might wonder why an apartment within an Art Deco block in Soho might fetch £2.75 million when it’s in an area which was recently called the ‘seedy underbelly’ of London. And that was by one of its fans. Why is it so popular with online house hunters? The property has been viewed nearly 30,000 times over the past month on Zoopla, making it the most frequently viewed even though it’s one of hundreds of apartments for sale over £2.5 million in central London. So what’s going on? Rob Hill, MD of Greater London Properties, says it’s probably because the vendor, the CEO of a huge multinational corporation, recently dropped his asking price by £250,000 and this will have put the property on people’s ‘reduced price properties’ alerts. But the apartment, which features high ceilings and a large roof garden, is also typical of the new kind of upmarket apartment now available on

Dean Street and this reflects the changes that Soho’s property market is undergoing. Not so long ago multi-millionaire CEOs were unlikely to have considered it an appropriate place to have a London crash pad and instead would have settled for neighbouring Mayfair, Knightsbridge or Kensington. But attitudes are changing. Only a few years ago, Soho was best known for its sex shops and hedonist nightclubs which have dominated the area since the 1950s. But under pressure from Westminster Council to licence or close, many of these establishments have chosen the latter and are making way for more conventional retail outlets. The area is gentrifying too radically for some.

Stephen Fry recently headed up a Save Soho campaign supported by Benedict Cumberbatch, Pete Townsend and Eddy Izzard to have Soho’s square mile of mostly low-rise Georgian and Victorian houses declared a ‘heritage zone’. And this apartment is in the thick of it. Famous residents and visitors to Dean Street include Mozart, who gave a recital at No.22, while Admiral Nelson spent the night in a house on the street before the Battle of Trafalgar plus an impoverished Karl Marx lived at both No.28 and No.56. The street also has strong connections to the music industry, the chief of which is Dean Street Studios (at No.59). A litany of artists have recorded songs there from David Bowie to Duran Duran. But for how long will it continue to be a working area as well as a residential one? Now that the sex industry has been largely rooted out it’s becoming better known as a prime property market, helped by the expected marble-cladding of Dean Street’s northern end; Tottenham Court Station is to be torn down to accommodate Crossrail and reborn as a combined tube and rail station plus new offices, a theatre and housing.

he first thing I noticed about Simon Brown, Managing Director of The ESTAS Group was how passionate he is about customer service. “Most of us nowadays are used to having average or bad customer experiences, we all have them every day. The frustrating thing is that when we do have a bad experience and want to complain, it’s normally such a long-winded process we give up because we’re too busy. That means most companies never actually know they are giving sub-standard service.” Brown is equally frustrated at the raw deal estate and letting agents get from the general public and media. “My wife Sarah used to work for a local agent and it wasn't until then I realised how hard a job it was. There are so many different factors to every deal and there are many things that can happen that you’re not in control of that can break a chain down.” Brown felt so strongly about Sarah’s experience that they both decided to launch a national award scheme which highlights agents giving excellent customer service. “We decided straight away the best way to ‘judge’ agents was to ask clients to rate the service they received. We wanted to help change the general perception of agents and at the same time give firms the platform to promote their commitment to providing
