Letter August 2013
A
ugust is probably my favourite month, though I’m ever so slightly biased as it’s the month of my birthday. As a child I was lucky enough to spend more or less every birthday on holiday; from Cornwall to Rome, to the South of France and once, rather less glamorously, in a New York hotel sans suitcase after our plane was delayed by 24 hours. However, this time of year is not my favourite for purely narcissistic (or somewhat puerile) reasons. More, it’s for what August represents: holidays, sunshine and fun. Even if you’re not heading abroad this month (I feel your pain), that’s no excuse to let the exuberant spirit of summer wane. There’s tips on entertaining the kids and where to go for a spot of outdoor swimming in our pages this month, as well as a cycling special, with advice on local routes and ideas from There Cycling founder Jim Kent. We also chat to Caz Nicklin, who launched her sleek cycling accessories website Cyclechic.co.uk five years ago from her Chiswick flat and hasn’t looked back. Turn to page 15 for her success story and how she gets about west London on two wheels with a 4-year-old in tow. Elsewhere in the magazine, Pendle Harte meets vintage clothing queen Virginia Bates at her west London shop, and maverick young chef Florence Knight talks to Chris Baldacci about how her time at Leiths helped to take her to the top. Kurt Schwitters (1887-1948) was a German artist at the forefront of Dada, Constructivism and Surrealism, paving the way for what we now know as installation art. Nazi rule forced him to flee to Norway, then England, where he was briefly imprisoned on the Isle of Man. Many of his seminal works were destroyed over the course of the war, including Merzbau, his striking live-in abstract art installation. His paintings have survived, and enjoy pride of place in the Tate Gallery.

Arts & Culture How did the idea for Cyclechic come about? I had just started cycling in London (in 2006) as a way to get to work, and instantly loved it, but I was frustrated with the outdated image of cycling at the time. Cycling was often portrayed as a masculine, sporty pursuit which was a real turn-off for fashionconscious twenty somethings like myself. I felt strongly that this needed to change and set out to promote cycling as a stylish, desirable lifestyle choice to encourage more women to take to two wheels. I realised that one of the major barriers putting women off cycling was the lack of stylish accessories and I was reluctant to strap an ugly cycling helmet to my head, so I embarked on a mission to find a flattering helmet. When I finally found a brand doing cool helmets (US brand Bern), I bought a box of 12 wholesale and started promoting them online and selling them from my flat in Chiswick. Before long my weekends were chock-full with women coming over to buy helmets and that’s how Cyclechic was born. We now sell a wide range of helmets, panniers, baskets, rainwear and high viz gear, lights and bells; all aimed to be safe, practical and stylish. Do you think that London is a bicycle friendly city? I have been cycling in London for seven years and the facilities have improved greatly. Some areas are better than others, but on the whole the improvement to cycle lanes and cycle parking is pretty impressive. It’s a cultural change, though, just as much as
enjoy their vintage charm.

it is about changes to the infrastructure; changing attitudes so that people start to view cycling as a normal way to get about, as they do in Holland or Denmark. Th is will of course take time, but I think we are heading in the right direction. What do you like about living in Chiswick? I like the combination of the bustling high street and open green spaces. My daughter and I often cycle to the high street and go to a café and then stop off at the park on the way home. I also like going for a walk or cycle down by the river and popping in a pub along the way. When I fi rst set up Cyclechic from home, I would get a lot of local customers and I think the market of female cyclists in west London is growing. I see more Pashleys and bikes with nice baskets go by than ever before.
What are some of your favourite bicycle and accessory brands? We sell a range of products from a young London brand called Bobbin Bicycles. They do a great gold helmet that is super popular, a classic straw pannier that continues to be one of our top-sellers, and a waxed cotton cape that has been championed by DJ Lauren Laverne. Bike-wise I adore vintage bikes and have an old Raleigh Caprice with a childseat on the back for my 4-year-old daughter. I also have a more lightweight city bike from Tokyobikes which is very cool and much speedier for when I am out on my own. Do you think that cycling has come back in fashion particularly with women? Yes definitely. I am a big fan of traditional bikes like Pashleys and I think so many women have realised how graceful and feminine they are and
There have been a lot of bike accidents in London in recent years. Do you think that people are well informed when it comes to safe cycling? Do cyclists get a bad rep in the press? There are some cyclists that take too many risks on the road and give the rest of us a bad rep. But there are many cyclists who are well informed and cycle very safely and considerately. One piece of advice I would give to anyone about to start cycling in London would be to get some cycle training. Many boroughs in west London subsidise cycle training. I have had two lessons now; one through Hammersmith and Fulham, when I lived in Shepherd’s Bush which was free, and one through Ealing which cost £5. Both have been invaluable and have made me a far more confident cyclist. What would you recommend for a good, family-friendly cycle route in west London? Chiswick House is a great place to cycle with all the family. They have specific cycle routes and you are completely off road so it’s safe if you have little ones who are just learning to ride. Cycling along the river is also lovely. I quite often go down Church Street and then cycle along Chiswick Mall, that road has the most beautiful houses along it, and then you get to the more open area and have a great view of the river and the houseboats. It can be stunning in the evening when the sun is setting. Just remember your bike lights for the journey home. cyclechic.co.uk 15

nd so begins The Mayor of London, Boris Johnson’s, Vision for Cycling in London manifesto, published earlier this year. The self-confessed cycling devotee, who launched the popular ‘Boris Bike’ scheme in July 2010, unveils grand plans for making cycling in the capital a more accessible and integral part of daily life. One of these plans is a new flagship route – a 15 mile ‘Crossrail for bikes’ through the heart of London, the City, Canary Wharf and Barking. By 2015, he promises to be spending a whopping £145m a year on cycling – putting us on a par with Europe’s poster child bicycle-friendly cities like Amsterdam and Berlin. Though non-cyclists may bemoan the odd maverick biker who doesn’t abide by the rules of the road, the hipster east Londoner on his penny farthing (or something similarly ridiculous) and the occasional sanctimonious cyclist cliché, there’s no doubt that the two-wheeled lifestyle is more popular than ever. After all, who wasn’t inspired by our unexpected cycling prowess at last year’s Olympics? The likes of Victoria Pendleton, Sarah Storey, Chris Hoy and, of course, Bradley ‘Wiggo’ Wiggins have all helped to push cycling well and truly into the mainstream and have inspired many a Londoner to reconsider their daily commute. Jim Kent, owner of bicycle and accessories store There Cycling, has just opened a new branch on Goldhawk Road (the original shop is in Ealing). He admits that, in London, you can ‘probably get from anywhere to anywhere if you just do a bit of research and take the roads that you normally wouldn’t drive down.’ He highly recommends the route planner website cyclestreets.net, which calculates any route you enter and splits it into three categories: fastest, balanced and quietest. Every inch of your journey is listed in great detail, even calculating calories burned and taking speed into account – plus it lets you know of residential or inaccessible areas. How handy. There are plenty of scenic cycling routes of varying difficulty in west London, through numerous parks and green spaces; routes that take in plenty of architecture and places of interest. For fans of Chiswick, Jim recommends the Chiswick Mall, with beautiful views of the river and plenty of pubs to stop off for a well-earned break, and there are several fairly easy routes between Hammersmith (or on the opposite side starting from Kew Bridge) along the river to either Chiswick House and Gardens or Dukes Meadow. Further west, Jim suggests a route from Ealing Green towards Hanwell, past the Hanwell flight of six locks into Brentford all the way to the beautiful Syon Park. ‘It’s a great way to make discoveries, on a bicycle,’ Jim says, ‘you’re much more aware of what’s going on around you and will go down places that you wouldn’t normally – you feel like you really know your city.’ there-cycling.co.uk; The Mayor’s Vision for Cycling: An Olympic Legacy for All Londoners published by Greater London Authority March 2013 17

E
verybody knows that the world of ‘vintage’ has changed. But for Virginia Bates, polyester tops from C&A in the 1980s are of no interest at all. Her clothes are antique, dating back to Victorian times and certainly no later than the 1940s. From her small shop in west London, the former actress has become an international authority on the history of fashion. The shop is a magical time warp, described by Suzy Menkes as ‘a fashion history lesson brought to life’ and by Daphne Guinness as ‘a place of refuge for artistic souls’, loved by fashion mavens including John Galliano, Stephen Jones, Daphne Guinness, Naomi Campbell, to name the fans who contributed to a new book that catalogues her vast collection of clothes. But Virgina didn’t start with clothes, she tells me as we tour her fairyland-like 22

shop, her sharp blonde hair in a perfect fringed bob. The shop started as a pop-up 41 years ago, she explains. Bates took on a two-week rental of the Portland Road shop to cover for the leaseholder who had had a baby and didn’t want to return to her shop quite yet. She was a jobbing actress at the time, married to fellow actor Ralph Bates. ‘The rent was £20 per week and I thought, I can probably do that, so I took it for two weeks.’ At the time Virginia, who currently lives in Chiswick, was based in a flat in Lansdowne Crescent with a collection of things that she’d picked up from junk shops all over the country, so she filled the shop with that. ‘As an actress, travelling around, I had spent every minute going round junk shops and in those days you found things. The market was full of real fab goodies and in Scotland you’d find wonderful vases and art nouveau and bits of Rennie Mackintosh – proper pieces, which I didn’t recognise,
I just had an eye and thought they were decorative items.’ She also developed a thing for bits of old plumbing – loos, basins, bathtubs and taps, which she’d salvage from houses that were throwing them out. ‘I’d go round on my bike looking for places that were being demolished and go back with a lorry,’ she says. Then she’d clean and sell the pieces. Junk was easy in those days – Bates would find bits of brown furniture on skips, strip and paint it and sell it. ‘It was a much more laid back time. It’s all very official now – I’d never want to start again. In the old days, the shop was busy and buzzy, I never closed the doors. People would come in and have coffee and coffee would turn into lunch and lunch would go into supper. We were all friends.’ Virginia swapped furniture for clothes in the early 1990s after her husband (actor Ralph Bates) died. ‘I had to really get a grip and find two lots of school fees,’ so when

Arts & Culture I go to the auction houses but everything costs a fortune and is normally ripped. Fortunately, being a hoarder, I have a bit of a stash.’ That’s why she did the book, to keep a record of it all. Pieces don’t sell like they used to either, now that these beautiful, fragile sequined dresses cost around £1,800. Some of them are too delicate to wear, but many of Virginia’s clients are designers who buy pieces for ideas, and others are collectors who buy beautiful sequinned dresses to hang decoratively on their walls. ‘In the old days I’d wear a piece until all the sequins had disappeared and then I’d go and get another one. These days I spend 10 or 15 minutes putting things away properly after I’ve worn them because I know what they’re worth.’
‘In the old days I’d wear a piece until all the sequins had disappeared and then I’d go and get another one’ a model came in (Helena Christensen, apparently) and loved the 40s frocks and Victorian petticoats she had in the shop, followed by more models and then a designer, she thought: ‘I’ll do clothes. Instead of washing baths, I’ll wash clothes.’ And today’s stock consists of stuff she’s had for ages, because you can’t come by things any more. ‘There isn’t anything any more. There’s nothing in the markets.
Virginia’s stock is all about glamour. ‘Everybody wants glamour. However old or young, even ladies in their 80s come in and still want to be glamorous and sexy.’ There’s beading, sequins, lace, lame, chiffon, crepe, and tassels, all tactile pieces. ‘I love the 20s pieces, and the 30s, but not the 50s really. I remember leaving school and wearing 50s clothes and the agony of the belts and the waspies and the suspenders, never again.’ And as for the 1970s – ‘Well, I’ve been there, done that and thrown it away. I didn’t like the look at the time,
which was why I started wearing antique clothes. In the end, I’ll only buy what I would like to wear. I’ll stick to my own taste.’ Dressed to Kill – Jazz Age Fashion is an elaborate record of Bates’ fashion archive. Lovingly photographed pieces are divided into chapters that reveal much about the total sartorial shift that happened in the second half of the 20th century. We no longer categorise things in remotely the same way, or wear particularly occasionspecific clothes. There’s a chapter on opera capes, for instance, and one on theatre coats. There are bridge coats, evening jackets and cocktail wear, flapper dresses and housecoats. The book is a lovingly photographed record of Bates’ work over the past 40 years, collecting what started simply as old clothes that she liked wearing and became an archive of costume history. Read it and be inspired. Amanda Constance gives her top 10 tips on finding the right school
W
ith the summer holidays in full swing, many parents will be heaving a sigh of relief, but for some the looming new school year will trigger a host of anxieties about the next stage in their child’s education. Whether your child is still in utero (yes, really, see below) or just switching schools for A-levels, here are our top ten tips on finding the right school. 1. Plan ahead. According to Lisa Freedman, managing director of independent educational consultancy At The School Gates, this is all that matters. ATSG advises families relocating from abroad or within Britain and lack of planning ‘is the biggest mistake they make’, she says. She also has scarily organised clients who start thinking about how to get Arthur into Eton before he’s a twinkle in his father’s eye. ‘People who succeed are those who plan from birth,’ says Freedman, who confesses ‘I do have clients with unborn children.’ This is highly sensible, she says, as getting your child into the right school early helps as ‘one school does tend to lead to another’. 2. Be very aware of deadlines. When registering your child every school is different, so don’t get caught out. A lot of schools, for example, will only take those children who are registered in their first year of birth. Some schools accept unborn
children, some don’t, some close their lists several years before the date of entry. Phone and find out. 3. Read the admissions criteria. It would be a shame not to get in because you haven’t read the small print. 4. Don’t worry! There is great anxiety surrounding schooling, particularly with parents starting their 3-4 year olds on the independent education escalator in hyper-competitive London. ‘Don’t feel it is the end of the world if your child doesn’t get in to the school of his choice at this age,’ says Freedman. Most London prep schools, she says, are ‘really very good’. 5. If you want to be sure of a place at a London prep school, go for an academically non-selective one such as Norland Place, Wetherby, or Pembridge Hall. With schools like this it is simply a case of first come, first served. ‘Some of the best preps are still non-selective’, says Freedman, ‘so it really is a case of getting your child’s name down first.’ 6. If you’ve got a boy in Years 5 or 6, consider boarding. There is a shortage of supply for secondary transfer in London, especially for boys due to the fact that historically they were sent away to boarding schools. The number of places for boys in the capital’s schools has recently decreased, as more previously boys-only schools, such as Latymer
Upper, are now co-ed. 7. If you are moving your child from a state primary to an independent secondary school, start coaching in Year 5. ‘Your child will then stand an excellent chance to get through the 11-plus,’ says Freedman. 8. Go for grammar, but have a private back up. London has some superb grammar schools such as the much coveted Henrietta Barnett in north London but beware, most grammars are highly selective and start the vetting process early so be prepared by Year 5. And you need a Plan B. Henrietta Barnett has 10 children competing for every one place, most London private schools have just four children for every one place. 9. No decision is finite. There are many official transition points, says Freedman, such as at 3-4 years, seven, 11, 13 and 16. ‘But if a child is really unhappy,’ she says, ‘there is almost always another option.’ Indeed, it can be easier to move your child mid-term. 10. If your child is at a state primary and you want them to get into a good state secondary in London, Freedman’s advice is straightforward. ‘Move to within one kilometre of the school, go to church and coach!’ At The School Gates, 020 8341 6463; attheschoolgates.co.uk; Pic©Cranmore School

Juices delivered to your door may be the easiest way to detox but do they actually work? Georgie Lane-Godfrey puts Radiance Cleanse to the test Illustrations by ANNA MILLER
I
t feels like the crack of dawn when I wake up to the sound of my doorbell at 7.30am on a Tuesday morning – I’d totally forgotten that I’d signed up to this detox malarkey. Dragging myself downstairs to the front door, I open it scowling. ‘Is this some kind of sick joke?’ I demand to the poor delivery man on my doorstep. Nervous, he gives a non-committal shrug and points to the box at my feet. I make out a Radiance Cleanse logo printed on the cardboard. Ah yes. The detox. Karma deals its vengeful blow when I attempt to pick the box up and almost break my back – it is seriously heavy. I end up shunting my juice-laden package along the floor to the kitchen (who knew you get a work out as well as a detox?) and there’s a slight hiccup getting it down the stairs, but by happy coincidence the juices need to be well shaken before drinking. Inside is a black canvas cooling bag bearing the Radiance Cleanse logo, fi lled with a rainbow
array of fi fteen bottles of juice. I’ve opted for the Beauty Boost Cleanse, a threeday detox designed with the help of dermatologists to nourish your skin from within and leave you looking as bright as a button. Unpacking the bottles, I scan the ingredients. There’s cashew nut milk to help the skin’s elasticity, broccoli and spinach, which provide the antioxidant coenzyme Q10, and coconut butter, supplying repairing and hydrating essential fatty acids – a veritable feast for my skin, if you will. However, I also notice that there’s three of each bottle, meaning each day follows the same pattern. The enclosed guide also states they have to be taken at the same time of day as well. Th is, I fear, is going to get repetitive. My fi rst juice is a thick, green concoction called ‘Super Green’ which I eye suspiciously – it looks a lot like sludge. I snap open the lid and sniff it gingerly before taking a sip. The taste of celery hits me and my heart sinks. The vegetable and I do not get on. Luckily I do like apple, broccoli, lemons, kale and parsley which accompanies it, so the juice is bearable, if not completely to my taste. Still, I thought, if I’m going to do this, I want to do it properly, so I hold my nose and chug it back,

putting into practise forgotten skills from my university days. Fighting back a gag, I regard my empty bottle with a victorious look. My fi rst bottle was conquered. By the time 11am came round it was time for my next juice, but I still felt full from my morning sludge. Th is bottle was bright purple in colour due to its primary ingredient – beetroot – and was sweet and earthy in taste. As much as I enjoyed it, I couldn’t fi nish it and gave it to one of the other girls in the office who were gathering around my desk, curiously inspecting the bottles. The cashew milk for lunch also proved too much, as delicious as it was with maple syrup, coconut butter and Himalayan pink salt. By the time the afternoon’s bright orange-coloured juice had arrived I was hungry again, and fi nished the red pepper, apple and carrot concoction
hell, pure liquid hell, and I had to fight the urge to save my sanity by indulging in the office’s saccharine snacks. ‘No pain, no gain,’ advised a colleague, ‘Just think how beautiful you’ll be after three days of beauty boosting!’ I comforted myself with thoughts of stapling her hand to a desk as I sipped my juices contemptuously. At that point in time, the prospect of remaining a toxinridden hag was unbelievably appealing. By day three, my appetite was gone, not just for the juices but any other food

despite the presence of the dreaded celery. However, by evening I was already dreading my fi nal ‘Vital Green’ juice. My stomach was swollen with the vast quantity of juice I’d consumed over the course of the day, so much so that every time I poked the protruding bulge, I could hear a swill of liquid inside. That evening was a pretty miserable affair. I already missed chewing and I desperately dreamed of sugary carbs. Day two was torture. There’s no two ways about it. Despite the supportive emails from Radiance Cleanse, my willpower was failing. Each gulp was
too. What’s more, there was defi nitely a spring in my step – my jeans felt looser, my skin looked brighter and my eyes sparkled (alright, perhaps they didn’t quite sparkle, but they defi nitely looked a lot better than the dull, tired peepers I had before). STOP THE PRESSES Chris Baldacci looks at the life of influential textile artist, Willam Morris
T
he Arts and Crafts movement of the mid-to-late 19th century took its origin and principles from the social cometary of John Ruskin, who thought the social and moral character of a nation was measured against the quality of its design and architecture. This shift of cultural focus is mostly remembered because of the work of one man, William Morris; arguably the most influential designer of the 19th century. Morris was also somewhat
prolific and produced a range of furniture, stained-glass windows, tiles and tapestries, with his wallpapers and soft furnishing patterns being the most recognisable of his oeuvre. The movement’s actions were aimed at providing a counterpoint to the styles produced by the machines of the industrial revolution. They used the approach of traditional craftsmanship to produce designs that were simple and without excessive decoration, which were heavily influenced by
romantic, folk or medieval style. Morris thought that these methods led to a better quality of decoration as it allowed the talent and craftsmanship of the individual to shine through. When at Oxford university, Morris was fortuitously roomed with two other artists, Edward BurneJones and Dante Rossetti – who were also destined to become influential – and the trio developed such a close bond that they formed a group called The Brotherhood, a splinter group of the Pre-Raphaelite

Arts & Culture All of these different periods in the life of William Morris lead to a catalogue of works and, as news of his talents spread, the commissions came rushing in. Even when he was at the height of his popularity, Morris found time to write and created the Kelmscott Press. Founded in 1881, this private press crafted books using methods and technologies from the 15th century. By going back to the origins of printing and becoming an author, Morris self-published many volumes of poetry, books

Burne-Jones once described how Morris flitted, hummingbird-like, between many disciplines: ‘When I first knew Morris nothing would content him but being a monk, and getting to Rome, and then he must be an architect, and apprenticed himself to (George Edmund) Street, and worked for two years, but when I came to London and began to paint he threw it all up, and must paint too, and then he must give it up and make poems, and then he must give it up
and make window hangings and pretty things.’ His interests did not only extend to artistic endeavors, but also political causes. Morris was one of the founding members of the first socialist party in the United Kingdom, formed in 1881 by Henry Hyndman, a contrary figure who helped popularise the theories on social politics proposed by Karl Marx only a few years earlier. Although never endorsed by the inventor of Communism himself, his daughter, Eleanor Marx, was a member.
by contemporaries and an acclaimed reprint of the works of Chaucer. He also helped establish the modern fantasy genre and directly influenced writers like J. R. R. Tolkien with works such as The Well at World’s End and The Story of the Glittering Plain. In his later years, Morris contracted a disease of the kidneys and, despite his ill health, he continued to write on socialism and conduct public lectures. The legacy that he left behind was one of an innovative designer, a polymath of the creative arts, a campaigner for social equality and one of the most influential personalities of the Victorian age. et back slightly from the shops and bars of Turnham Green Terrace, my partner and I almost miss newly opened Buenos Aires, the latest in a growing brand of Argentinian restaurants that are capturing the tastes and attentions of many through London and beyond. Once inside, it doesn’t take long to discover why. Our table upstairs lets us see the full meticulously designed ranch-like decor; lights hanging from tasteful wooden beams, saddles sat on railings and an unpretentious but quiet
confidence in the design. This is reflective of Buenos Aires as a whole. It’s certainly true of Joan, the manager, and Ruy, our waiter for the evening, both relaxed and efficient, ensuring it’s a pleasure to spend your evening here. Our starters are preceded by cocktails: a chocolate martini that requests you just have that one more sip, and a refreshing strawberry mojito. We’re also given bread and chimichurri – a typically Argentinian mix of oil, herbs and spices. My partner’s chorizo al vino starter is soft and well marinated, bursting with flavour, and my Provoletas de Argentina – another traditional dish – is rich and strong, with cheese that demands your full attention. This being an Argentinian restaurant, the prospect of steak is too much for my partner and I to resist, and
we’re well rewarded. Both are cooked exactly to order – her well done sirloin is dark and delectable, and I glide through my medium-rare fillet, both cuts are imported from Argentina and cut to order. There’s no compromise here – steak is taken seriously, and that’s not something one can miss. It’s outstanding, and the chips are as thick and fluffy as all chips should be. My glass of recommended Malbec-Shiraz has body and warmth and is the perfect complement. We (somehow) find space for a chocolate fondant cake, which my partner wishes would never end, and dulce de leche pancakes, with a divine caramel flavour. Buenos Aires is chilled, strong in character and captivating. An evening here is one to savour – and the food will be savoured for a long time after. 63

lorence Knight, the young and vibrant head chef of Soho’s trendy Polpetto restaurant, approaches food in a different – if not entirely new – way that is both intriguing and downright delicious. Taking basic kitchen staples like ketchup and combining them with (sometimes surprising) complimentary ingredients, Florence makes the most humble of food shine. Her debut cookbook, ONE: A Cook and Her Cupboard, is a collection of recipes that take ten ingredients found in any average kitchen cupboard and weaves them into something spectacular. As a student, Florence didn’t always aim for a career in the culinary arts and, like many, she wasn’t entirely sure what she wanted to do. She explains, ‘I was always cooking, I studied home economics and did a diploma in food at City and Guilds when I was in my teens. So, it was obvious it was a really big part [of my life] and I then started looking at cooking schools, but I still wasn’t 100% sure, so I went into fashion, did a foundation and things changed. My home life changed and I realised this was the time to make the right choices, so I kind of went for food. It was perfect because I totally fell in love with it and it was something that I could really throw myself into and enjoy.’ After school, Florence went on to train at the prestigious Leiths School of Food and Wine, which she describes as a huge ‘stepping stone’. ‘Leiths had amazing contacts,’ she enthuses, ‘it really disciplines you and I met some great people along the way. I was constantly working whilst at Leiths. They do demonstrations in the evening and I was one of the people that washed up the plates afterwards.’ You can tell how much the Leiths experience shaped her as a chef, as enthusiasm bubbles out of her when she starts talking about her time there. ‘It was a good, fun year,’ she says, ‘it was intense, with quite a lot of exams, but once I started working in kitchens it was clear that this was the route I wanted to take.’ Leiths led to a job at Polpetto, when people really started to take her work seriously. Admitting she had been in
a head chef position prior to Polpetto, she notes that it was, however, the place where she really got noticed and quickly established herself as a true culinary talent, at the ripe old age of 26. As the focus of ONE is on ten basic ingredients, I ask her reasons for her particular choices: ‘they are basic essentials in anyone’s store cupboard,’ she explains, ‘I’m not going round saying that people stock puy lentils and dried mushrooms, I’m highlighting the real things that we all have.’ There is a clear notion that these top ten are compiled of the kitchen cupboard’s often neglected ingredients; ‘I feel they are very much forgotten,’ she agrees, ‘they’ve become these things that we just have – you know – like a pinch of salt at the end of a dish or olive oil drizzled over the top; they are not necessarily the starting point.’ The back to basics attitude of cooking is certainly not new, but Florence has come at it from an entirely new perspective. Her combinations are often quite ‘out there’: one recipe we discuss, for example, is pork collar in milk and ketchup, which, admittedly, sounds bizarre, but just listening to Florence’s description of it and my mouth begins to water. Eggy bread & cherries Makes four small plates 500g cherries, perfectly ripe 100ml apple juice 2 tsp runny honey 4 medium eggs 2 tbsp milk 4 thick slices of slightly stale bread 1 tbsp butter Icing sugar, to dust The word ‘unctuous’ springs to mind when I think of eggy bread. I also get very nostalgic as I started eating savoury eggy bread for breakfast as a child. But why not make this as a dessert or brunch? The French may have invented it but the Americans have a much more flexible approach to eggy bread. They eat it with everything from bacon and sausages to syrup and fruit – equally enjoyable whichever way it comes. Rinse the cherries under cold water and remove any stalks. Using a cherry pipper or a small paring knife, remove the stones and halve the cherries. Plonk the cherries in a wide pan and pour over the apple juice. Trickle over the honey. Cook on a medium heat for ten minutes until the cherries start to soften, burst and collapse a little into the syrupy purple sauce.
Mussels, cannellini beans & wild garlic Makes four small plates
500g mussels 1 garlic clove 1 red chilli 2 tbsp extra virgin olive oil, plus extra 75ml white wine 2 tsp Moscatel vinegar ½ x 400g tin of cannellini beans 1 handful of wild garlic Wild garlic covers the woodland near where I grew up. It pops up from late winter to spring and has a beautiful white flower. Like regular garlic, it has a pungent smell that scents your hands, but unlike regular garlic, it has a milder taste, and you eat the leaves rather than the bulb. My mum supplies Polpetto with bundles of the stuff. Scrub any barnacles or bits of seaweed off the mussels under cold running water. Taking a mussel in your palm, grasp its beard and yank it towards the hinge of the shell. The beard should come off easily and be discarded, along with any open shells. Place the mussels in a bowl with a centimetre of cold water and cover with a damp cloth.
Store in the fridge until ready to use. Heat a large wide pan (one with a lid) over a medium flame. As it heats up, peel and slice the garlic and de-seed and dice the chilli. Pour the olive oil, garlic and chilli into the pan and cook for one minute to infuse the oil a little. Turn the heat up and add the mussels, wine and vinegar. Place the lid on the pan and cook for two minutes, shaking the pan from time to time as the mussels pop open. Drain and rinse the cannellini beans. Add the beans to the mussels, stir through and let it all simmer and bubble away for a few minutes until the beans are hot through. Then fold through the wild garlic, popping the lid back on for a minute or so until the garlic leaves have wilted a little and the last of the mussels has popped open. Discard any mussels that haven’t opened after this time. Season, then eat from shallow bowls with a dribble of extra virgin olive oil and bread for dipping..
While the cherries are cooking, beat the eggs together with the milk in a shallow bowl large enough to lay the bread flat in. Squish the bread slices into the egg mixture, turning to coat both sides. Leave them in the mixture for at least ten minutes, turning them a couple of times, until almost all the liquid has been soaked up. Once the cherries are cooked, remove them from the heat and set aside while you fry the eggy bread. Heat the butter in a heavybottomed frying pan over a medium to high heat. Once the butter foams and bubbles, add the soggy bread to the pan so that the slices fit in comfortably without overlapping, frying them in batches if they won’t all fit at once. Pour any excess egg mixture over the bread in the pan while it is cooking. Turn the slices after two minutes, once they are golden and crisp underneath. Cook the other side for a further two minutes. Eat immediately with the cherries spooned over and a dusting of icing sugar. 67

Situated in the heart of Devon, Aller Farm’s main export is milk and, as a result, the surrounding fields are full of cows whose gentle lowing alongside the song of birds becomes part of the background noise – a distinct improvement on city traffic. The entire place has an incredibly welcoming feel, enhanced by the warmness of our host, Emma, who takes us on a tour and shows us the larder full of milk straight from the cow and fresh eggs. The tents are a set away from the farmhouse in two small clusters, but are private enough that they feel peaceful.

The most striking thing about Aller Farm is that, although it is easy to see how wonderful it is for families, there is also a definite appeal for young couples and groups of friends wanting to get back to nature. The absence of technology, the excitement of successfully lighting the stove, the romance of the paraffin lanterns, all accompanied by a glass of wine makes this the perfect escape for a city-weary clutch of friends just as much as families. Refreshing and adventurous with the massive advantage of being entirely comfortable, ‘glamping’ truly is the answer.
THE TENT
Th is is camping unlike any you have experienced before. If the thought of erecting a tent, not showering for four days and sleeping on the cold ground makes you shudder, but you are still in love with the romantic idea of a rural getaway, then ‘glamping’ might just be for you. The tents laid on at Feather Down Farms (although ‘tent’ doesn’t do them justice) are cabin-like in appearance and each contains a master bedroom, a bunk bed room and a cupboard bed (all of which can be pre-made if you so wish) as well as a working toilet, wood-burning stove (which warms the entire tent), a sink with running water and dining table. The decor is on the right side of twee and the rustic metal mugs and hearts carved out of the shutters are the perfect fi nishing flourishes.
THE LOWDOWN
Activities abound and include the opportunity to assist in the milking, feeding one of the young calves – the current calf is called Doris – by hand and retrieving eggs from the coup. The surrounding countryside is festooned with footpaths so there are countless walking opportunities. Closer to the tents is a small stream in which young children can build dams and adults can chill wine. A brick oven provides the perfect place for cooking pizzas and sitting around telling ghost stories before walking back to your cosy cupboard bed.

e arrived at Rangali Island, the home of the spectacular Conrad Maldives resort, in style – aboard a petite seaplane piloted by a relaxed, barefoot captain. It was an exciting yet slightly more rustic journey after the supreme comfort of a Business Class flight with Turkish Airlines, who recently launched their Maldives flight path via Istanbul. I immediately recognised the scenery below as if taken directly from the pages of a brochure; the semi-submerged islands and reefs dotted sparsely across the vast Indian Ocean. On a hot yet overcast day, the hazy sky and endless water seemed to join up as one, which we slowly and dreamily cruised through. I was swiftly brought back to earth (mentally, thankfully, and not literally) when we entered a heavy cloud and the tiny plane rattled enthusiastically. Luckily the pilot remained, like the ocean, absolutely calm. All agitated nerves were swiftly appeased with a warm welcome and
a cold flannel when we arrived at the gorgeous resort – two separate islands connected by a wooden bridge. The precarious nature of the Maldives (it’s the planet’s lowest country at just 1.5 metres above sea level) has been well documented and
sits in contention with its unspoiled, honeymoon paradise cliché. A fabulous champagne and lobster buffet romantically set on the beach is a highlight, but the intimate nine-course Japanese feast prepared in front of your very eyes at the Koko Grill restaurant is simply not to be missed. By far the most spectacular activity on offer, however, is the opportunity to swim with whale sharks, the world’s largest fish (don’t worry, they’re vegetarians) through the Maldives Whale Shark Research Project (MWSRP). The Conrad has sponsored the MWSRP for over five years and the excursion is a way of assisting their research into these vulnerable gentle giants. It’s a true once-in-a-lifetime opportunity. If you don’t fancy getting your toes wet (then you may very well be in the wrong place), the ethereal manta rays that are attracted to the lit-up bridge at night are a must-see. These enormous, ghostly creatures swim graceful figures of eight and are a joy to behold. We spent four incredible days in the Maldives – a country that, before I went, had resigned to being the sole prerogative of newlyweds. WILD AT HEART
Lions and elephants and giraffes, oh my!
Michael Kallenbach explores the wild wilderness of the Tanzanian Serengeti on horeseback
I
t was our first morning riding to the Explore camp and we had been up since the crack of dawn. Here we were, now in the middle of the Serengeti plains, not far from the banks of the Grumeti River, and we had already begun to ache. By lunchtime, we needed a break; our joints, not used to the fast cantering alongside the giraffe, elephants and topi, were sore – yet the horses were fit and ready to go on all day. We dismounted and then suddenly our grooms were there to lead the horses to
water and feed. For our part, we plonked ourselves in luxurious khaki chairs allowing the spring sunshine to fall on our faces. There were four riders in our group – Sophy, Eve, Lucinda and myself. I had been on several riding holidays in Africa before so while I thought I knew what to expect, I never imagined such luxury and comfort would come my way. Lucinda, the weakest rider in our group, quickly decided that she wasn’t up to the fast pace of the horses. Instead, she opted to go by lorry and sat in the comfort of a Jeep as she
viewed the game, while one of the back-up guides had little difficulty in leading her horse alongside his. The mobile tents at Explore had been set up prior to our arrival, where an array of dainty tea cakes were waiting for us – similar to those exquisite creations served at Fortnum and Mason – and drinks of cranberry juice mixed with ginger ale. We were given a typically South African warm greeting by Julius Schuld, the manager of the camp and Ian Boucher, chef extraordinaire. Originally from Cape Town, Ian is the first to admit that he is ‘dead scared’ of lions and hopes they never come near his tent at night. But despite this phobia, at mealtimes he is fearless, proudly announcing what he has prepared for

dinner, and always using locally grown ingredients. For instance, he explains, ‘You will get carrot soup, but not with caviar.’ It was hard to imagine anyone in our group expecting caviar, yet the spacious tents themselves were luxurious in every possible way – from fluffy towels and dressing gowns, to hot running water and a flushing toilet.

Our mobile camp even has its own electricity. There’s also a whistle next to our bed if we suddenly imagine a lion has come to snuggle up next to us in the night, but as Julius assures us soon after arrival that ‘no one has ever had use of it.’ In any event, a guard stands watch over my tent every night from dawn to dusk, so there’s really nothing to fear. Of course, we were all there for the riding, not to snuggle up with lions. The horse I was allocated was called Katavi, so named after the country’s third largest national park located along the rift escarpment in the west of Tanzania. A proud 17 hand ex-eventer that was bought from a dealer in Johannesburg, Katavi had come via a spell in Zimbabwe to join his other Swahili-named stable mates.

Food & Travel As we cantered through the short brown grass, darting in between the fallen acacia trees, Katavi and I quickly bonded. This was his first safari, I was later to learn from one of our expert guides, the South African born, Alison Mundy. Having previously worked in Botswana and Zimbabwe, there is nothing about horses she doesn’t know. Ali is in charge of the stables and they are among the most immaculate and pristine I have ever seen. What’s more, the horses are execllently cared for, having their temperatures taken twice a day and several grooms on hand who are able to double up as a farrier if and when the need should arise. In our search for game we would often canter alongside giraffe, zebra, ostrich, eland and topi, a type of antelope similar to the hartebeest. We never came across lion or leopard, but thankfully this wasn’t my first – and I hope not last – African horseback safari. After two nights at the Explore camp, we rode onto Serengeti House for the final stretch of our horse safari, an exclusive-use retreat. Here I was forced to say a fond farewell to Katavi who had carried me so safely on my adventures.
There were a few consolations, however – we arrived at Serengeti House just before lunch and were able to witness about 20 elephants drinking at the tiny pond about 15 feet from where we were sitting. Later that afternoon, as I packed my bags getting ready to fly back home, I was told by Gregory, one of the staff members, not to venture near my bungalow alone as an elephant was lurking outside. Armed for
all eventualities, he accompanied me to safety so that I could retrieve my possessions. Two days later, he sent me an email. ‘The elephants have never shown up again, but we did have an old buffalo – it charged one of the staff doing some maintenance work. But otherwise everything is fine and nobody was hurt.’ I smiled as I read this, but that night I dreamed that Katavi and I had cantered away from the elephants, out of trouble, back into safety and, of course, luxury.

I
can honestly say that I had never considered being an estate agent until three years ago when the combination of the end of a relationship with an idiot of a man and the inspiration of a wonderful friend steered me towards the amusing, interesting, sometimes frustrating world of Lettings and, more importantly, to the extraordinary and never dull world of Finlay Brewer. My career started in the shadow of Hammersmith Broadway at Polygram Records where I worked as PA to the Sales Director. I couldn’t quite believe that they were paying me to essentially go to free gigs, celebrity laden launch parties and be given free music. However, the lure of adventure was strong and I left Polygram to head to Antarctica to work as a Purser aboard the Marco Polo, handling all on board publishing – no mean feat considering I had never heard of Adobe Photoshop until after my first interview. It was an extraordinary time and life amongst the ice and the penguins. On the other hand, it was an equally surreal life on board with parties in the engine room, black market strawberries and very competitive karaoke in the crew bar. On my return to the UK it was off to Wapping and the world of tabloid newspapers where I worked for the Deputy Editor of the News of the World. Obviously there is a lot I could tell you about my time there, but my lawyer says I shouldn’t – ha ha! Next it was the Periodical Publishers Association (PPA) where I worked as Marketing Communications Manager alongside consumer magazine companies including Conde Nast and IPC Media on one side, and media
buying agencies like ZenithOptimedia and Initative Media on the other. And so to Finlay Brewer. Whilst my road to their door has been somewhat winding, the marketing, PR and communications skills I have gained along the way have been invaluable to helping me establish myself as a member of Finlay Brewer and have the confidence to lead the team as well as enabling me to build relationships with landlords, tenants, relocation agents and the key players in property media. I genuinely had no idea about the variety of challenges that come with being an estate agent or the pleasure of working for an independent agency with such an established and respected reputation. It has, without doubt, been a steep learning curve, but with a MARLA after my name and a confident understanding of both the market and the people involved in that market, I feel genuinely excited about moving Lettings forward. Yet still, we have only witnessed sporadic signs of a summer. How frustrating, when walking to the office not knowing if we are going to experience high winds, rain, or a lucky day of sunshine. All said and done, we are enjoying the Wimbledon tennis championship and looking forward to Kew the Music, the music festival held in the grounds of Kew Gardens taking place in early July. It’s a “sales” environment so every instruction excites us - cliché but true; without the property you can’t let anything. Of course the big deals get the juices flowing and both
our Chiswick and Richmond office have enjoyed a remarkably successful June with several tenancies being arranged where rents have exceeded £15,000 a month. But it`s the quirky properties that I find the most interesting; the ones with special features, the views, especially those of the river. 4. What do you predict for the local lettings market for 2013/14? I’m not a great one for crystal ball gazing, however there is no doubt the private rented sector is going from strength to strength. Investors are back and yields are slowly becoming more attractive driven mainly by a heightening of achievable rent levels – up some 11% over the past year. Corporate activity is certainly increasing with the expectation there will be a significant rise in the number of overseas relocatees over the next year. n the face of a challenging property market, more and more of us are becoming either landlords or tenants and choosing to rent our homes, but both parties need to be clear on their responsibilities according to the Association of Residential Letting Agents (ARLA). Interior upkeep, garden maintenance and insurance are just a few areas where tenants and landlords alike are often unclear where liability rests. Without a good understanding of the responsibilities associated with a tenancy ARLA warns there is the potential for costly disputes further down the line. Tenants will often be happy to push through with a rental contract so they can move into their new property as soon as possible. Ensuring you understand what is expected of you during the rental period is essential, as this may have a bearing on the return of your deposit at the end of the tenancy. From the landlord’s point of view, any clauses and agreements covering non-essential property maintenance and improvements should be agreed in writing beforehand to avoid any disagreements once signed. With this in mind, ARLA is reminding tenants to carefully check their contract before moving in, to ensure their stay in a property goes smoothly. Susan Fitz-Gibbon, President of ARLA, said: “People sometimes forget that renting comes with associated responsibilities and liabilities, as well as looking after your rental property. Always check with the landlord before making any changes or alterations beyond those expressly permitted in the contract. “Understanding the terms of contract is also important, going through it with a legal expert will ensure obligations by both parties are understood and fulfilled; this process can allow a tenant to enjoy their home without worrying about any disputes when they move in, or about the procedures around, for instance, being away from the property over a certain period of time.”
