ane Austen once said, ‘There is nothing like staying at home for real comfort.’ As the nights grow darker and the cold sets in, I’m inclined to agree with her. What is more rewarding, after all, than to return to the warmth and sanctity of your home after a long, hard day away from it? It’s important, therefore, to ensure our living spaces are exactly that – warm and sacred. For this reason, we felt it was appropriate to dedicate this autumnal month, in particular, to interiors. Interior designer extraordinaire Sue McGregor shares her top ten design rules on p.56, showing that every DIY project is possible – with the right tools and attitude. Speaking of right attitudes, interior stylist and writer Sara Emslie reveals how to make the most of small spaces on p.48, using her delightful Richmond home as an appropriate example. All interiors need artistic inspiration, and where better to look than a designer who is both artist and architect in one? I caught up with Nigel Coates on p.16, ahead of his involvement with Decorex at Syon Park. He is one of eight designers who has been selected to work on the entrance foyer, which pays homage to Chiswick’s bestknown artist, William Hogarth, and his famous work, A Rake’s Progress. I talked to Nigel about what makes ‘good’ design and why he celebrates his maverick ‘outsider’ status in the industry. In other design news, Sir John Soane’s beautiful country retreat, Pitzhanger Manor in Ealing, will close its doors at the end of the year to undergo major refurbishment. Matthew Bolton discovers the rather sad story behind the architect’s ‘dream home’, but reveals how the restoration will inject new life into it. That’s all from me for now. THE MOULD Prolific designer and architect Nigel Coates has been chosen to take part in the entrance of this year’s Decorex, inspired by William Hogarth’s masterpiece, A Rake’s Progress Wo r d s G e m m a B i l l i n g t o n

W

hen we think of contemporary artists such as Damien Hirst and Tracey Emin, it’s difficult to separate their work from their reputation. Art has always spawned maverick thinkers and, whilst their ideas may be unfamiliar and boundary pushing, their stamp on the art scene – and society at large – is undeniable. ‘Revolutionary pioneers’, they are often considered. Influential painter and printmaker William Hogarth is such a figure. A social critic and satirist, his caustic, political cartoons and narrative style (coined ‘Hogarthian’) were unique to his time and are still prevalent today. Coinciding with the 250th anniversary of his death, international luxury interiors expo Decorex has dedicated its entrance display, at Syon Park, to reinterpretations of the artist’s most famous sequential work – A Rake’s Progress. Eight eminent designers have been selected to take part, one of which is Nigel Coates who, like Hogarth, has his own brand of style. Known for blurring the lines of art, architecture and

interior design, Coates is no stranger to controversy. In 1983 he founded NATO (Narrative Architecture Today), an architectural group and magazine, featuring the work of Diploma Unit 10 students, whom he led. Through it, he encouraged pupils to reject generic plans and section drawings, and paint instead structures from obscure angles. He taught his pupils to develop narratives; to merge art with architecture. Critically acclaimed, but also vilified, the magazine’s publication saw Coates dubbed enfant terrible and set him apart as a divisive, though brilliant, figure. His subsequent designs have included the Body Zone at the infamous Millennium Dome and a new wing at the Geffrye Museum; he has collaborated with a number of interior greats – Alessi, Fornasetti and Ceramica Bardelli, and from 1995-2001, was Head of the Department of Architecture at the Royal College of Art. Ever-experimental, ‘narration’ continues to dominate his work. What better candidate, therefore, to interpret one of the most significant sequential artworks in history? I caught up with Nigel ahead of Decorex to discuss architectural highs (and lows), and to discover how Hogarth has influenced his work…

GEMMA BILLINGTON: You’re involved in the entrance at this year’s Decorex. What were the guidelines of the project, and can you give us an inkling as to what we might expect? NIGEL COATES: Each of the designers were asked to choose one of the eight scenes in the series, and interpret it in three dimensions. With mine, I tried to imagine how best I could use my own work to tell a story. GB: Can you tell us about the panel of ARP you’re working on – The Levee? NC: As the second in the series, The Levee represents the dawn of the Rake’s connoisseurship, thanks to his newly acquired inheritance. In this brief phase of his wealth, he attracts every top quality merchant and maker. They are all fishing for a share of the catch. This scene translates well into the kind of pieces I have – both production [pieces] and limited editions. GB: Were you familiar with the work of Hogarth and his ‘sequential art’ before this, and in particular with A Rake’s Progress? NC: Absolutely. As one of the treasures of the Sir John Soane Museum, it

You cannot help but be captivated by the pictures themselves and the ingenious way in which they are hung - on a series of giant wall panels that fold back against each other. GB: You’ve said that ‘storytelling is central to your design practice’. In what way? Can you explain what ‘narrative architecture’ is? NC: Narrative is the element of architecture that makes it connect with human experiences, and unfolds within the dimension of time, as well as space. It exists in the spirit of storytelling but does not itself tell the story. As an orchestration of dumb elements, it generates meaning through references to archetypical places and situations. In other words, anywhere that is loaded with meaning rather than a plain orchestration of style.

GB: You’re known for your avant-garde designs and were labelled ‘enfant terrible’ after the publication of NATO in the ‘80s. Do you still see yourself as an outsider in the industry? NC: Of course, but I’ve always celebrated that, by being honest [with my] ideas. I’m aware that I don’t fit neatly into

GB: What’s the most challenging commission you’ve ever undertaken? NC: Probably the Body Zone in the Millennium Dome, or the O2 as it’s now called. As a state-supported project we all knew it was a poisoned chalice from the beginning. We took it over from another company that designed car launches – they’d been told to avoid any hint of gender or race. I thought let’s make it two figures, and cover them in a skin of coloured lenticular tiles. As designers, we were put under incredible pressure to rise to the occasion, yet incorporate all the divergent ideas of a committee of ‘cultural experts’. We were referred to as ‘contractors’ rather than ‘architects’, ‘designers’ or ‘artists’. It was a very complex structure and was built directly from the 3D computer files, with each coordinate positioned digitally in the space. Lots of people knocked the Dome and it’s contents, but found it harder to bash the Body Zone. It was the first thing

GB: You’ve said that you have an ‘artistic approach’ to design – how so? To what extent do you think that architects are inspired by art? NC: I can only speak for myself. I’ve always been fascinated with the artistic spirit and have tried to discover my own, as well as being an architect. By ‘artistic’, I mean incorporating irony and reflection in[to] a work, and mixing this in a concentrated way into the object. I like things that are pure and simple, yet reflect the complexities of our culture. GB: What influenced you to work in architecture and interiors? NC: As a child I always loved spaces. My parents would take me to cathedrals

A RAKE’S PROGRESS illiam Hogarth (1697 - 1764) completed A Rake’s Progress in 1733, his second and most famous sequential, satirical artwork. A series of eight vignettes (dubbed an ‘ancestor to the storyboard’ by filmmaker Alan Parker), it tells the story of Tom Rakewell’s descent into debauchery after inheriting money from his miserly merchant father. Our eponymous ‘rake’ succumbs to corruption, embroiling himself in gambling and prostitution, before he is imprisoned in Fleet Prison and, finally, incarcerated in Bedlam asylum. THE HEIR The first panel in the sequence, which introduces our ‘rake’, is being interpreted by architectural historian, Edward Bulmer. ‘I am so pleased to be collaborating with Soane Britain on A Rake’s Progress,’ says Bulmer. ‘We are a great match, sharing a belief in the values of craftsmanship and heritage. We also believe in moving those values forward into contemporary design.’

GB: How do you want people to feel when they step into one of your buildings? NC: Strangely at home, and yet compelled by the desire to explore. GB: Who would you say are some of today’s most exciting design talents? NC: In architecture I’d be inclined to look in Japan, to people like Atelier Bow-Wow and their younger followers. In design, I admire a few people in Milan, a few in London and a couple in Barcelona. The more people that enter the field of design, the harder it is to stand out. I’m not one to be partisan. GB: What makes a ‘good’ building or interior design scheme? Are there ever any rules? NC: Balance, composition, and spirit at the centre. Never adhere to a style so much as to a complex network, in which every element plays its part.

THE ORGY The third panel in the series shows Tom Rakewell enjoying the attention of prostitutes in the Rose Tavern. The vignette will be interpreted by luxury fabric producers Fromental and interior design studio Russell Sage: ‘I’m delighted to be working alongside my good friend Tim Butcher at Fromental,’ Sage comments. ‘It’s certainly an exciting project and we are having a lot of fun dreaming up ideas for it.’

THE MARRIAGE Our hero’s ludicrous marriage depicted in panel five will be interpreted by luxury wallpaper producers de Gournay. Director Hannah Cecil Gurney says: ‘de Gournay are thrilled to be collaborating with Kit Kemp of Firmdale Hotels for our interpretation of The Marriage by Hogarth. Kit has an exceptional ability to juxtapose bold colours and interesting textures to bring a space to life.’

GB: Who is your favourite designer? NC: Without doubt, Carlo Mollino. GB: What are some of the best buildings you’ve ever visited? NC: Hagia Sofia in Istanbul, the Pantheon in Rome, Sydney Opera House, Berlin Philharmonic, Bilbao Guggenheim to name but a few. GB: … and the worst? NC: Those ghastly ‘luxury living’ apartment blocks along the southern shores of the Thames. THE MADHOUSE The final scene will be interpreted by textile designers Timorous Beasties and architectural reclaimers Retrouvius. Timorous Beasties says, ‘We’re working with Hogarth’s engravings rather than the paintings: we’ve re-examined the scenes of Bedlam, and our designs will be inspired by the graphic nature of the etching process... We’re playing with abstracts, and how we can use design, specifically, to explore that.’

he Autumn Winter Couture catwalks were uncharacteristically restrained. Save for a couple of statement (yet still subtle) eyes, skin was kept bare, and lips were nude. It’s a look that’s surprisingly hard to translate successfully to the real world. Here are my tips and products to help you achieve an unshowy glow. 1 Prep your skin as usual, then use this Green & Spring Miracle Nuturing Balm on any dry patches. I also use it to condition my eyebrows and lips. Apply foundation with Estée Lauder’s clever brush - it fits perfectly under your cheekbones and gives a flawless finish. 2 This Charlotte Tilbury Bronze and Glow palette is my go-to product for a successful nude look. Use the bronzer in the hairline at the top of your forehead and temples, then sweep it just under

your cheekbones (suck in your cheeks to show where you’re going), and under the jawline. Use the Glow on top of your cheekbones, brow bone, and a touch down the centre of your face. 3 To subtly define your eyes, this Chantecaille palette gives a perfect sheen. How did you first get into hairdressing? Originally I wanted to be an artist but I was bullied at school and decided to leave at the tender age of 15. My father was a barber, so he suggested I try hairdressing. Within three months I was cutting hair on the shop floor. It was something that just came naturally to me – I’ve never found hairdressing difficult (just the clients sometimes!) Can you tell us about your charity, My New Hair? Why is it close to your heart? My sister-in-law was diagnosed with cancer seven years ago, so I bought a wig for her, but when I put in on her it looked very much like a wig. So I told her that I wanted to customise it, which I did, and when she looked in the mirror once it was finished, she cried tears of joy. That’s when the penny dropped for me and I realised that this was something I really had to pursue.

How can people get involved with My New Hair? I run a course every month at L’Oréal for 15 professional hairdressers to be trained in the art of wig cutting. On completion of that course they become a member of My New Hair, and we can officially recommend them to anyone who comes to us for help and guidance. What has been your biggest achievement to date in your career? Receiving an MBE from Her Majesty the Queen was a huge honour, and something I’ll never forget.

What do you think is a hairstyle that will never go out of fashion? I think the bob has stood the test of time over many decades, but it always comes back with a refreshing twist to keep it looking modern and interesting. If you could style any celebrity who would it be? I have always wished that I could restyle Madonna’s hair because she’s always reinventing herself, and it would be great to be a part of that! u

uilt towards the end of the 19th century, my home is a classic British Victorian terraced ‘twoup, two-down’, designed to house workers (and their families – in the case of this house, a family with 11 children) in local industry and those who served the larger, more gentrified upper-class residences of nearby Richmond Hill. The rows of terraces here and on the adjoining roads made up a community, with corner shops and a couple of public houses. Still as thriving today as it was then – the pubs are there, but the corner shops have since been made into residential premises – this strong

RATHER THAN AGAINST it presence of community has immense pulling power for those seeking a sense of a neighbourhood rather than just property ownership. And, as areas like this are sadly becoming fewer and further between, it has been designated a conservation area/historic district, in an attempt to preserve as much of its original architecture as possible. The vernacular of the area is, as one would expect, simple and utilitarian. The exterior of the house has a lovely, unfussy, flat-fronted, natural brick façade with original sash windows. Internally, it is equally pleasing, with a straightforward layout consisting of a symmetrical configuration of rooms dissected by a central staircase, with two rooms downstairs – living room and dining room – and what would have been two bedrooms of exactly the same size upstairs. Fortunately, modern renovations have allowed for a portion of the back bedroom to be sectioned off and

The windows, which are in perfect proportion to the rooms – each aperture is large enough to let in a lovely amount of light, but small enough to offer an element of privacy – have all been fitted throughout with wooden shutters in a classic, understated Shaker style that marries form and function so effortlessly. There is also a hugely practical element too, as they neatly fold back, allowing the maximum amount of light to enter the small rooms. The backdrop of the interior is wholesome, with clean whitewashed walls and natural materials. The floorboards have been stripped, sanded and left bare so that the beauty of the wood can be enjoyed, while the upstairs ones were painted white for a subtle variation in

a small upstairs bathroom to be created – somewhat essential for today’s living. Equally, an extension/addition at the back now houses a kitchen that leads out onto a pretty patio garden. Each room is tiny, with the main ones measuring barely more than 3.5 x 3.5 metres/111⁄2 x 111⁄2 feet, but they feel nicely proportioned, with the architectural structure of the chimney breasts creating useful alcoves on either side. The original cast-iron fireplaces are still in situ and provide each room with an elegant focal point, as well as a natural dictate as far as furniture positioning goes. If conservation regulations had allowed, removing the original, central staircase could have created an open living/dining area, and more of a sense of space, but the repositioning of the stairs to the side of the house would have swallowed up a significant proportion of the smaller bedroom, leaving it with very little practical purpose at all. Another option might have been to remove the chimney breasts throughout, but that would have been a structural and costly exercise and, while gaining a little extra floor space, the rooms would have lost the alcoves, which are ideal for shelving, not to mention the valuable aesthetic potential of the fireplaces. Despite its original humble status, the house delivers enormously on architectural detail, and as I am a firm believer of working with what you have rather than against it, it seemed only right

Despite its pared-back, elemental style, this is an exceptionally comfortable home, with luxurious details such as natural linens and warm wools in neutral shades interspersed with some fresh pastels and a vast array of lovely bits and pieces. It is an aesthetic where plain and simple neatly converge with nicely decorative, and, as the home of a stylist (still slightly biased!) who is well versed at editing and with a keen eye for detail, it goes without saying that it is very much a curated space. An attic – as yet unchartered potential renovation territory – provides plenty of out-of-sight storage for an archive of props and other things collected along the way, allowing

pace. The wooden fire surrounds, also identical throughout, are modest in style but well carpentered and comfortably proportioned, and cupboards and a bumpy wall at the top of the stairs have been clad in practical and pleasingly regular tongue-and-groove panelling. All the walls and woodwork have been painted a unifying shade of white, and the inset shelves in all the rooms, bar the main bedroom, match with their clean lines and straightforward design, which is in keeping with the overall simple aesthetic. It is a short but prescriptive list of ingredients that has come together to create a design template that cleverly and subliminally connects the individual rooms, giving the illusion of greater space, while still affording them their own identity through the furnishings naturally dictated by their individual functions.

the small living spaces to be afforded the luxury of less. Objects of all sorts are used to great effect to create displays of things that are both beautiful as well as useful. n the north-east corner of Walpole park, where Bond street meets the high street, is one of west London’s great treasures. Pitzhanger Manor and Gallery, one man’s passion project, stands a testament to beautiful design. The Grade I listed house is best known as the country retreat built by and for the architect Sir John Soane. Today it remains as a continuation of his vision. Here modern and contemporary works compliment the charm of the regency house. Impressive as it already is, Pitzhanger is on the verge of a major transformation that will see it become a ‘world class’ attraction. Grants from the Heritage Lottery Fund and Arts Council England will help to renovate the site with both restorations of Soane’s original work and modern additions.

Sir John Soane (1753-1837), the son of a bricklayer, became one of Britain’s leading architects. His work included the Bank of England (although little of his contribution remains) and the Dulwich Picture Gallery. In 1800 Soane bought Pitzhanger as the site for his country retreat. It had been one of the first buildings he had worked on as an assistant to the architect George Dance the Younger, which may explain why most of the house was to be demolished but the section built by Dance survives to this day. The manor house was rebuilt incorporating many Soanian features such as vaulted ceilings and his use of inset mirrors. Other more unusual elements were added: mock Roman ruins adorn the grounds and a ‘Monk’s dining room’, which Soane claimed to have been used by monks that lived there previously, but which turned out to

be complete fabrication. The house was designed to keep his collection of art and antiquities in, making it well-suited to displaying works today. The period of time that Soane inhabited Pitzhanger was short lived due to the troubles in the architect’s personal life. The architectural dynasty he’d hoped to found came to nothing and his sons, John and George, showed little interest in following in their father’s footsteps. As his wife, Eliza, began to suffer ill health and his dynastic dreams lay in tatters, Sir John sold Pitzhanger in 1810. He did, however, continue to draw new plans and dream up further redesigns for the house long after it was sold, suggesting that his ‘dream home’ was never far from his mind. Now owned and run by Ealing Council with the Pitzhanger Manor Trust, the house and gallery are due to close in January 2015 for major renovations. The Heritage Lottery Fund has awarded £4.42m grant which, combined with the £4.14m of council funding, sets the project in good stead to complete its planned £10.52m rebuilding by 2018. Architects Jestico + Whiles lead the design team with restoration specialists Julian Harrap Architects and landscape practice J&L Gibbons. Restorations will include the ‘glasshouse’ at the back of the property, a structure Soane had hoped to have built over two storeys, but lacked the capability at the time. The staircase running through the middle of the house will be restored to reprise his vision of a

the closure

‘descent into hell’. While currently only one piece of amber glass remains in the house, above the door, the glass work will be replaced and renewed. Original rooms currently taken up by offices will also be opened to the public. Modern additions to the building will also be made during the closure. The sections designed by George Dance will be removed and rebuilt, opening the view across the park and creating an event space leading to a cafe/restaurant in the adjacent walled garden. The house will also become fully accessible to all users. The 1939 art gallery will also undergo remodelling helped by an additional £500,000 funding from Arts Council England. Replacing the roof will enable the gallery to reach grade ‘A’ standard, allowing

it to show the finest works from national galleries and museums. The refurbished gallery will also incorporate a visitor’s reception and shop while the current studio/gallery space for local residents will move permanently into the house. Once the project is completed, Pitzhanger will be incorporated back into Walpole Park, its former grounds, where Soane used to fish with J.M.W. Turner. This will be the culmination of years of work which Chair of the Pitzhanger Manor Trust, Sir Sherard Cowper-Coles, hopes will leave the Trust ‘delivering not only a local but a world class attraction that will take its rightful place in England’s cultural heritage.’ u pitzhanger.org.uk

o you found out: that’s the first step. A couple of faint lines on a plastic indicator, a midnight dash to the 24-hour Tesco to buy more tests (just to be sure) – and suddenly everything has changed. If it’s your second, third, fourth child, you know what you’re in for; if it’s your first, the questions start right about… now. The first thing to do is speak to your GP, who can confirm the happy news with a blood test and give you initial advice – stopping smoking is a given, but who ever paused to consider that everyday, over-thecounter medicines are now off the cards? The humble paracetamol isn’t totally forbidden, but generally the advice is to stay pure as far as you can. And if you’re one of the unfortunate majority who will suffer from morning sickness, pretty soon you might be having headaches that would try the patience of a saint. If so, a quick call to your community midwife can help reassure you – as can putting your feet up and forgetting about your responsibilities for a while. Of course, by the time your twelve-week scan

arrives (and yes, the interim may feel like the longest few weeks of your life), most women find the nausea of the first trimester has started to fade away. The baby in your belly is now around 5cm in length – but already has a brain, face, arms, legs… enough stuff, basically, to make him or her actually look like a real baby when seen on-screen. A milestone, to be sure. The key now is to relax when necessary, look after yourself and keep taking the pregnancy vitamin supplements recommended by the medicos. Your tummy is just starting to fill out and your curves may be, well, curvier – so embrace it, enjoy it and by all means splurge a little on some maternity clothes. (A maternity bra might soon be your new best friend.) And start doing your research into what you’ll need when baby finally arrives. We’ll be covering some of this in more depth in the coming months, but it’s worth noting that choosing buggies, high chairs and car seats can require more research than buying a new car. Still, with your feet up and your partner doing the chores for once, you should have a bit of extra browsing time… ◆

Pupil Premium With private schools becoming increasingly unaffordable for the British middle classes, should they charge foreign students more?

P

rivate schools should charge foreign pupils higher fees than children from Britain, an education entrepreneur has claimed. Alexander Nikitich, who set up the Oxfordbased Carfax Tutorial Establishment, says private schools should follow the model used by universities and ask overseas parents to pay more for their offspring to attend Britain’s top fee-paying schools to prevent British families being priced out of the market. The idea of a graded pay system has long been mooted in independent school circles but Nikitich’s comments follow a study published earlier last July that claimed a four-fold increase in school fees in the last 20 years has outstripped wages to such an extent that private schools are ‘increasingly unaffordable’ for the middleclasses and becoming the preserve of super-rich foreigners. Nikitich, who is originally from Russia, says: ‘It seems wrong that billionaires from Russia and the Far East are paying the same as British dentists, doctors and solicitors who are seeing their income plummet in real terms.’ A number of independent schools ask wealthy foreign parents for donations and offer means-tested bursaries to British children but this does not go far enough says Nikitich who called for an ‘open and transparent approach’. ‘Private schools overseas are entirely open about charging more to foreign students. It seems foolish for it to be a problem in England.’ But William Stadlen, managing director of super-tutors Holland Park Education, disagrees. ‘I don’t think it’s a good idea necessarily. I think there should be means-

tested support based on income levels and not based on nationality.’ The popularity of Britain’s private schools overseas is clear from the rising number of foreigners with the number of pupils arriving from Russia up by more than a quarter last year, while there was a 16% increase in students from Nigeria and 5% rise in Chinese admissions. In some schools, the number of international students has crept above the 25% mark – many boarding schools wouldn’t have survived the economic downturn without foreign students. But Janette Wallis, senior editor of The Good Schools Guide, said schools were ‘increasingly aware that if they do not want to end up with their schools stripped of British children they need to rein in fee increases’. The report into the rising

costs of school fees – commissioned by the stockbroker Killik & Co – found that the type of family that could afford private schools fees ‘has changed dramatically since 1990’. ‘It is less likely to be the archetypal middle-class professional and more likely to be high net worth individuals, increasingly international. Many established independent schools like Eton and Harrow educate the children of some of China’s wealthiest multimillionaires.’ Figures in the Killik study, carried out by the Centre for Economics and Business Research, suggest that an infant enrolled at a private day school this academic year will ultimately cost their parents £271,000 in fees and added extras by the time they take their A-levels in 13 years’ time. A boarding education will stand at £435,000, it was claimed, and approach close to £1m for two children. Researchers said more and more parents are being forced to take a mix ‘n’ match approach to education. Families taking the ‘state till eight’ route – with pupils enrolled in state primary schools for the first three or four years – will save £94,000. The ‘state till 11’ option would save almost £175,000 per child. Barnaby Lenon, chairman of the Independent Schools Council, has defended private school fees. ‘Independent schools recognise the pressures that parents are under and work hard to keep fees as low as possible… Independent schools remain affordable to a wide range of families via our strong bursary programmes. Last year, ISC schools provided over £320 million in means-tested bursaries and the total value of bursaries at ISC schools has risen by 27% since 2010, well above the rate of any fee rises.’ u

PEYTON the TOWN GREEN Acton-based restaurateur and Great British Menu judge Oliver Peyton on his recipe for success and why he’ll never be tempted to go into the kitchen Wo r d s J u l i a B r a n d o n

est known for his uncompromising role as a hard-to-please judge on BBC2’s Great British Menu, as well as being a successful restaurateur with a string of hip establishments to his name, Oliver Peyton OBE is above all else a lover of fine fare. Forming one half of Peyton and Byrne, a public catering outfit that runs refined eateries in the majority of London and Brighton’s great art galleries, museums and parks, the Irish-born critic has carved out a niche for himself in the competitive culinary world. ‘What drives us is good food,’ he says, speaking of his unwavering ambition to keep improving on the Peyton & Byrne empire. ‘We go and see our farmers, we talk to them all the time, and we buy good natural produce that is produced in Britain. We drive that factor. And we serve great biodynamic wine!’ The ethos behind the brand is to provide good quality, seasonal British food housed in eco-friendly, architecturally innovative buildings. Finding himself disillusioned by the over-inflated restaurant world – ‘I simply lost interest’ — Peyton seized

the opportunity to change tourists’ perceptions about the calibre of British cuisine. The opening of Inn The Park in 2004, built in the beautiful landscaped grounds of St. James’ Park in the centre of London set a benchmark for what was to follow — ‘when we opened you couldn’t even buy a beer in the Royal Park, but we changed that!’. Now boasting a string of high profile venues, including The National Gallery, The Royal Academy and more recently The Orangery at Kew, the locomotive expansion plans show little sign of abating. But Peyton is no stranger to sticking his entrepreneurial neck on

the line. Starting out in the Eighties as an accomplished club owner partying with a youthful Fatboy Slim, he ran The Can in Brighton and RAW in London. Not content with early success he quickly moved on to masterminding the UK distribution of Absolut vodka and Japanese beer Sapporo, before welcoming in the Nineties with the opening of his first and most high profile restaurant, Atlantic Bar & Grill. Today Peyton’s sights are set a little more firmly on the long game, with a focus on style and consistency achieved by 'creating that little bit of magic' that ensures customers keep on returning. Sitting across the table from me over a Wednesday brunch at Inn The Park he speaks passionately on his achievements with the stunning venue, gesticulating wildly at the high-arching windows and exposed timber beams, and laughing off attempts by his management to scale down his ideas. ‘They keep saying to me ‘we have to do less’ and I keep going ‘yeah, yeah, yeah’ and then we never end up doing less,’ he says smiling. Quite at odds with his sterner onscreen personality, Peyton is affable, fun and lighthearted in person. He humbly accepts his Wikipedia credit for having singlehandedly kick-started the UK’s

meteoric cocktail culture — ‘when I was younger I’d have probably gone “oh no, no, it’s not true” but as I’ve got older I think I probably did do that if you want me to be honest’ — and his palpable enthusiasm to continually challenge himself is what gives his current ventures their flair and vibrancy. ‘I’ve only ever tried to do things in my life that people haven’t already done,’ he says thoughtfully. ‘I’ve never consciously copied anybody and I’d like to see my life out thinking that I continue to do that.’ Housed within a magnificent Eighteenth-Century Grade I listed plant house designed by Sir William Chambers, The Orangery at Kew joined the Peyton & Byrne portfolio in 2010. Turning the establishment around from a quick chill operation to a sumptuous, gastronomic outlet serving Rhug Estate lamb in spring and the fresh catch of the day from Celtic Fish and Game, it is now befitting of its stunning surroundings and exotic gardens. ‘We took over on the Sunday and started on the bank holiday Monday – it was mental! To go from having no cooking to only cooking, it was very hard. But if you look at Kew now we’re doing a great job there,’ he says assuredly.

‘We don’t make our sandwiches until the bread arrives fresh from the bakery every day, and we’ll go from serving 3,000 sandwiches on a busy day in summer down to just 10 at winter.’ Positioned smack in the middle of high-end dining and street food, Peyton has a distinct vision for each of his restaurants, including the six quintessentially British bakeries scattered throughout London that also form part of the collection — pretty pastel-coloured shops stacked with a variety of breads, biscuits, tarts and trays of hot quiches. himself, the key to his success is being smart enough to know his own limits. ‘I couldn’t be a chef,’ he states matterof-factly. ‘Being a chef is one of the most difficult jobs I know.’ But knowing what makes a good chef, a good menu, and a good dining experience is something Peyton has down pat. Not to mention, a good TV judge. ‘We all have completely different opinions, and we come from completely different worlds,’ he says, speaking affectionately of his fellow Great British Menu co-stars. ‘When we judge it we try and make sure that we’re fair to everyone – I really mean that, if the dish isn’t good on the day we’ll say, we want to be honest about it. A lot of the time we know those chefs well, so it’s quite difficult, and we really do have arguments – full on proper arguments – about who should win. It gets really heated. But I think they know that when they come up against us that they have to do a good job.’ u

INGREDIENTS 4 x 160g portion of hake, skin on • Cauliflower purée 500g cauliflower (finely sliced no stems) • 1 shallot Whole milk to cover • 50g of butter • Salt METHOD 01 Sweat the shallots and cauliflower, add milk just enough to cook through. 02 Season and blend adding butter until very silky and smooth. 03 Pass through fine sieve. ◆

Salted Mango 01 Cut mango into 2cm wide and 1cm high squares, salt them and vacuum tight.

Sugared Pine Nuts 01 Cook the pine nuts in stock syrup (1 to 1 sugar/ water) for 30 mins. 02 Drain and fry at 160 until golden. 03 Season with salt and store in a dry place.

Curry Oil 25g Turmeric • 5g Chilli powder • 20g Ground coriander • 15g Ground cumin • 15g Ground ginger 52g White pepper • 500ml rapeseed oil 01 Toast all the spices, add the oil and bring to 70 degrees. 02 Keep and use as necessary.

Cooking the Hake 01 Using a non-stick pan, add a little rape seed oil and heat. 02 Season the fish with Maldon salt and place skin side-down onto the hot pan. 03 Once a light golden colour has been achieved, finish the cooking in the oven for 5 mins. 04 Remove from the oven and add a little unsalted butter to the pan and coat the fish until just cooked.

last time I was so bowled over by tapas this side of Barcelona. The food is exceptionally good. My boyfriend and I shared and devoured beautifully presented plates with greed and gusto, awaiting the next round of dishes with child-like enthusiasm. Worth special mention are the Grilled Scallops (my boyfriend commented that they were so dreamily melt-in-the-mouth that he felt bad biting into them), the Pulpo al Toro – octopus served on a tasty bed of chunky guacamole – and the excellent Queso de Cabra (two moreish tostas of grilled goats' cheese over apple compote). Even something as simple as spinach croquettes (one of the day’s specials) was delivered with outstanding finesse. The soft on the inside, crispy on the outside balls were served over a rich, sweet pepper syrup that I hungrily soaked up with bread – and fingers! The Spanish know how to have a good time, and in Toro Gordo you've got the best of everything. It's perfect for date night, cocktails with the girls or an allnighter with friends. Hurry up and book a table at London's coolest tapas bar before everyone else discovers it too. u

ritain has never held Spanish food in quite the same esteem as French or Italian cuisine. Perhaps one could blame our penchant for tourist-sized seafood paella and cheap sangria. Personally, however, I love it. During a three month sabbatical in Spain, I fell in love with noisy tapas bars and the delights of this diverse country; fresh, rubbery octopus in La Coruña, the artfully constructed pintxos of San Sebastian and late night fruity ice cream in the hot streets of Seville. So it was with high expectations that I visited Toro Gordo, the new venture from Spanishborn restaurateur Miguel Caffarena. Formerly of Soho’s painfully trendy Mexican eatery La Bodega Negra, Toro Gordo (‘fat bull’ in Spanish) opened

mid-summer on Hammersmith’s King Street. Ostensibly a traditional tapas bar, Toro Gordo is a sleek, modern bar-cumrestaurant that’s both authentic and unique. Grown up and ever so-slightly edgy, it's open daily and – in true Spanish style – late into the evening. The stylish interior has a subtle Asian influence (the bathroom walls are lined in manga comic strips) and the ingenious fusion cocktail menu. It may seem an unusual decision but it works well. When we visit, Miguel is on hand to greet us and show us to our table, leaving us in the very capable hands of Scottish waiter Mark, who kept us watered and well-fed all evening. The dinner menu is concise and split into simple sections like Tostas (small open sandwiches), Pinchitos (Andalusian skewered dishes), Vegetarian and Seafood. As someone who has travelled extensively in Spain, I can’t remember the

ituated down a discreetly signposted road, Congham Hall stands proudly at the end of a gravely drive, amidst immaculate 30 acres of garden. Little is known about this pretty Georgian building’s past, apart from the fact it was originally owned by a wealthy merchant from nearby King’s Lynn. It remained a family home until it was sold in 1982 and transformed into a hotel. In 2012, hotelier Nicholas Dickinson bought the property and early last year, commissioned a major refurbishment. Today, it boasts an inviting, homely environment (dogs are welcome) with a ‘traditional country home’ meets ‘contemporary luxury’ style. The hotel has 26 rooms in total, all of which are spacious and beautifully decorated, and the new Garden Rooms, situated near the spa, come with their own patios. ◆

he pristine gardens of Congham Hall are a real highlight. Offering an array of nostalgic pursuits – like lawn croquet, boules, miniature golf and trampolining for kids – there’s also a fragrant herb garden in which to take a stroll. Congham Hall’s main appeal, however, is that it’s situated in abundant countryside. A romantic, tranquil place, the panic of a silent smartphone (which comes with lack of decent reception) is swiftly appeased by sounds of neighbouring cows, the coo of wood pigeons and the buzzing of bees. It’s also worth remembering that the hotel is situated less than an hour’s drive from Cromer, and the seal boat trips along Blakeney Quay. ◆

large chunk of the 2013 refurbishment focused on the already existing spa; a separate annex situated just behind the hotel. Newly launched as the ‘Secret Garden Spa’, it’s small but well kitted out, with a 12-metre pool, sauna, steam room, four treatment rooms and even an outdoor hot tub. I enjoyed a superb hot stone massage and tested out the rest of the facilities, before retiring to the tub to soak up (pun intended) the serene surroundings.

T

here’s a pleasant outdoor terrace to take advantage of if the weather is on your side. Breakfast and dinner is served in the large dining room and the fare is seasonally British, with a focus on local produce, somewhat abundant in Norfolk. Chefs have access to pork from the nearby rare-breed farm, Fruit Pig Company, as well as venison from Hokam, and famous crabs from Cromer. After a sumptuous dinner, I ambled to the hotel’s charming library, to relax and leaf through the shelves. ◆

If you thought Center Parcs couldn't offer a luxurious experience, think again. Absolutely visits the all new Woburn site Wo r d s P e n d l e H a r t e

I

wasn’t expecting to like Center Parcs. Partly because of the silly spelling but mostly because it seemed like an overly manufactured experience, a sanitized forest with an assortment of unnecessary activities and no style. But on closer inspection, the new £250 million site at Woburn, less than an hour’s train ride from King’s Cross, revealed a significant appeal. What’s not to like about a small break for the family, involving minimal travelling and maximum comfort, packed with activities to exhaust even the most active children and enough thought in the details to appease the grumpiest parent? Who cares if something’s manufactured if it’s done this well? This new park spans a large expanse of what used to be simply forest, and though the extensive building work may have resulted in the felling of a fair amount of trees, they have planted a significant

number of new ones and next time we come (because yes, there will be a next time) the forest will be thicker and the newness and slightly unreal quality will be gone. ‘I feel like a character in Westworld’ announced my partner soon after we arrived. Because admittedly there’s something hyper-real about the whole thing. You slightly wonder whether you’re not in truth simply on your sofa, wearing a headset and enjoying an elaborate virtual experience. But you’re not, so get over it. We drove to Woburn in just over an hour from west

London (though arriving by train would have been even easier with a special shuttle from the station and a Center Parcs fast track service at King’s Cross) and arrived in our lodge in good time for a swim and a game of tennis before dinner. This isn’t the place for a lazy holiday. You’re encouraged to fill your time with activities, all of which need to be booked and scheduled, which may sound like a bore but is facilitated through a supremely clever and easy app for your phone. So over the course of three days, we engage in the following: climbing,

TRAVEL / FAMILY This is what Center Parcs is famous for and where any untimetabled time should be spent. Warm water, lots of great slides and real tropical plants make this a fantastic fake beach, spacious and comfortable. I was the only one who cared that the sun was absent. And for parents, there’s a super luxe spa (no children allowed) to provide a retreat from the endless families. Aqua Sana is the only part of Center Parcs to welcome non-residents, and the facility attracts visitors in its own right. In the end it’s the attention to detail that wins. Even though the place was

And we enjoyed everything. The relentless scheduling didn't feel rushed – though you do need to keep one eye on the clock so as not to miss your next appointment. One note: treetop trekking is only for the brave. Our five-year-old daughter became overcome with fear and needed to be rescued from the beginner’s course by the lovely, fearless and patient team and their special rescue ropes, while her father’s new-found vertigo and my reluctance exposed the pure bravery of our eight-year-old. Once you get over yourself, it’s fun. The lengthy zip-wire finale that takes you straight over the lake at speed is worth all the build-up angst. And then of course there’s the pool. Though calling it a pool is like calling the Atlantic a puddle. They call it a sub-tropical swimming paradise and they’re not wrong.

Even when we tried to book a restaurant through the app (yes, all meals must be booked this way too) and found it booked up, a casual visit to the actual eaterie scored us a cancellation. Accommodation is comfortable and wellequipped: great showers, comfortable beds, the kitchen not lacking anything. Our lodge had fantastic forest views and a secluded dining area overlooking an expanse of trees. You can see why most people who visit return, because there’s something magical about the ease of it all. Nothing is left to chance and even bad weather can hardly touch you. GONE HUNTING Truffles are serious business in Tuscany, and one boutique hotel offers guests the chance to take part in a secretive search for the elusive tartufo Wo r d s A m a n d a C o n s ta n c e

asta Luna, basta! The man jumped forwarded and grabbed something from the dog’s mouth. The size of a large golf ball, it was black, scored with deep lines, and covered with mud. Even from afar you could smell its earthy, strong aroma. This was a prized truffle and Luna, our trusty Tuscan truffle hound had just dug it out of the hillside. We were on private land – a truffle reserve – a hilly, unprepossessing patch south-west of Florence. We had driven there with Mauro, a Tuscan truffle hunter, and his dog Luna in his van. It had all been quite cloak-and-dagger. A secret meeting at an anonymous road junction between our chauffeur-driven Mercedes and Mauro’s battered van was followed by a rendezvous in a layby, where we climbed into Mauro’s van and headed off-road to the reserve which lay behind chained gates. Truffle hunting is taken very seriously in Tuscany. A truffle is a tuber, the fruiting body of a subterranean fungus. Highly prized

around the world for its aromatic qualities in cooking, the rarest and best known is the ‘tartufo bianco’ the white truffle, worth more than gold gramme for gramme. The best time to find white truffles is autumn; in late May we were hunting for summer truffles the ‘tartufo scorzone’. More abundant and therefore less expensive than its white cousin, the summer truffle is no less prized for its intense perfume and flavour. Once inside the reserve, Mauro set Luna to work. He encouraged her constantly and fed her titbits of truffle from his pocket to whet her appetite. At first sight, she didn’t inspire much hope. More mangy poodle than Hound of the Baskervilles, Luna seemed happy to meander about cocking her leg, much like a dog in a local park. But Mauro, who has hunted truffles since he was a small boy and admits to being ‘tartufo’ obsessed, explained this was all part of the warm up. We followed Luna, scrambled up and down hills, and then, as we stood chatting, it suddenly happened, Luna scrabbled frantically at the ground and a black ball seemed to roll out of

nowhere – the elusive, fantastic truffle. After that she was on a roll and couldn’t stop finding them. After an hour or so of exciting hunting, we returned to the van, Luna smothered with appreciation by us doubting Thomases. Mauro then took us, pockets bulging with our booty, to an osteria in a nearby town where his friend the chef patron is famed for his cooking with truffles. Completely off the tourist trail, the restaurant was packed with locals; we sat drinking Chianti from jugs and sampled our treasure. First we ate them as fat shavings over buttery fresh ravioli

packed with sweet ricotta and thinly sliced pear and then a typically Tuscan secondi piatti of fried eggs served with truffle shavings and lashings of black pepper. The extraordinary thing about tartufo is that you eat them with your nose –a little like fresh coffee, the smell is what excites more than the taste. It was a truly unique and very Tuscan experience and one offered to guests by the clever people at Borgo Santo Pietro, the boutique hotel we were staying at near the ancient hill top town of Chiusdino, south west of Siena. Enterprising Danish couple Claus and Jeanette Thottrup found the run-down 13th century farmhouse and land in 2001 and with hard work and obsessive perfectionism, they have turned it into a 16-room boutique destination. stately home, part rambling homestead, Borgo was never going to be big (though there is planning permission for eight more rooms) but it is quite perfect, from the moment you sweep through the wrought iron gates down a curving gravel drive lined with Cypress trees, you know you are somewhere special. The main house used to be a healing retreat for pilgrims and the Thottrups have worked hard to make this a dreamy haven from reality. is Borgo’s calling card and for the Thottrups this means an amazing attention to detail. Every aspect of the house and gardens has been restored attentively, beautifully and respectfully. The rooms are all furnished with pieces that Jeanette has handpicked from flea markets and antique shops across France and Italy. Hi-spec mod cons are artfully hidden behind paintings and each bathroom is stocked with lotions and potions from the hotel’s own spa. The overgrown gardens and desolate fields have also been lovingly restored. The Thottrups have planted more than 250,000 plants, built a lake and created an organic kitchen garden. Truffle hunting is just one of the activities on offer at Borgo as part of its Concierge Collection; you can have an art lesson, go quad biking, ride a horse or fly in a hot air balloon or plane. There are also authentic cookery lessons spanning learning how to make pizza or fresh pasta. Food is hugely important here. There is a great emphasis on seasonality and local produce, much of the fruit and vegetables come from the hotel’s own gardens. There are two restaurants, the Valle Serena, the hotel’s fine-dining restaurant and the Treehouse Bar, a more informal brasserie, all presided over by new executive chef Francesco Gasbarro. This autumn the hotel is opening its own restaurant in Florence, a step only the most supremely confident kitchen would take. We ate dinner at the Valle Serena one evening, looking out over the valley after which it is named. The cooking is very formal and technical; the standout meal was a beef tartar made from the celebrated local Chianina cattle. An attendant sommelier wine matched each of our dishes with an emphasis on local vintages of which there are many. For more hearty, informal fare, there is the relaxed Treehouse Bar, which serves great cocktails, fantastic fresh grills, salad and antipasti. And if the night air starts to nip, the waiters light you a personal wood burner by your table. A great slab of pork from the local Cinta Senese pig kept my

other half busy, a langoustine spaghetti and a mozzarella salad all made with the sweetest of local tomatoes delighted me. Like everything at Borgo, the food is the very best it can be.
