aster can mean different things to different people; some view it as the most important date in their religious calendar, others as an opportunity to eat as many Creme Eggs in one sitting as is humanly possible. Whatever you believe, many of the rituals and traditions that surround this time of year seem to revolve around food: hot cross buns, eggs (both chocolate and chicken) and Simnel cake all play a part in the festivities. It is, then, perhaps appropriate that this April marks our annual food issue, with restaurant openings, recipes and interviews with brilliant chefs providing abundant food for thought. Sorry. Had to do it. This month I had the enviable task of interviewing up-and-coming young chef Lee Westcott, whose brilliant menu at the East End’s Typing Room has critics drooling. Find out why Lee gave up the running of two restaurants in Hong Kong for this particular opportunity on page 12.

For those who seek an Easter treat that verges on the eggstravagant, our Easter chocolate guide has suggestions ranging from Pierre Marcolini’s two-foot tall Russian Doll confections to Fortnum & Mason's hand-decorated floral white chocolate eggs, all on page 39. Skye Gyngell is the subject of our second chef interview on page 40, offering a more 'seasoned' perspective on working in the restaurant industry, as she embarks on her first solo venture at Somerset House, the aptly named ‘Spring’. But if off the beaten track is where your interests lie, our wild Nevada travel story will have you packing as you read page 54. Cue the untamed mustangs and breath-taking desert landscapes. Thank you very much for reading, have a lovely Easter, and make sure the only April fools you are served are of the raspberry variety. Enjoy! u

East meets
WESTCOTT We catch up with Lee Westcott, Head Chef at Typing Room, to talk about seasonal cooking, East London hipsters and why the customer isn’t always right W o r d s c at h e r i n e h a l e s
CATHERINE HALES: When did you first start cooking? LEE WESTCOTT: When I was 16. Well, I didn’t really start cooking – I was washing up in a country pub near my home town. Saw the chefs cooking and thought it looked pretty cool and wanted to get involved. CH: Where are from originally? LW: Hertfordshire, Stevenage and my family wasn’t foodie at all. My mum’s a good cook but I didn’t grow up on a vineyard, my dad wasn’t a butcher or anything like that. I fell into it and realised I enjoyed it. CH: Does the restaurant you have here, Typing Room, have some involvement with Jason Atherton? LW: So, I worked for Tom Aiken for four years as his head chef and then I left, which was a pretty big deal and then Jason contacted me and I went to Hong Kong to run one restaurant and work in another for him. Then I realised Hong Kong wasn’t really for me – it either is or it isn’t, it’s kind of a party place. I wanted to come back so I said, ‘Jason, I want to come back if there’s anything about?’ He said, ‘Do you want this restaurant?’

C&A_APRIL15_LEE WESTCOTT.indd 12
WE DON’T want you to be CONFUSED BY WHAT you’re eating but ITS DONE IN AN ELEGANT and technical WAY I said yes and that was pretty much his involvement. CH: He just set you up with it? LW: Yeah, it’s not his food, not his design – he hasn’t had any input, really. He’s just there for me if I need it. He’s been very kind to give me free reign. CH: What drew you to this place? LW: When Nuno Mendes was here, I worked here for a couple of weeks and I kind of fell in love with the room and the kitchen downstairs – and his food. So when I got offered this, I realised I’d got big shoes to fill and I was incredibly nervous but I remembered the place from those years ago and I had to. Plus, the fact that we were
allowed to redesign the restaurant… We changed this room [gestures to dining room]. CH: What’s the name derived from? LW: It used to be an old typing room from when the building was a real town hall. Little old ladies, sitting there, typing away. CH: How would you describe the menu here? What’s the style? LW: The style would be... it’s all seasonal, although we don’t do a full menu change every season, that would be stupid. We do it dish by dish, as and when ingredients go in and out of season. It’s mainly British seasons but it’s based around European seasons as well. It’s casual fine dining, we try to be less formal in the restaurant and it’s the same with the food. We don’t want you to be confused by what you’re eating but it’s done in an elegant and technical way. CH: Did you enjoy Hong Kong at all? LW: I did, I did like Hong Kong – there’s just something about London that I love and I really missed it. CH: Do you like the area (Bethnal Green)? LW: Before I came here I hadn’t really done much in east but I don’t think I’d live anywhere else now. Full of hipsters, which

ARTS & CULTURE / IN THE KITCHEN SEE, I hate that “SIGNATURE DISH” thing – but WE DO HAVE ONE
Typing Room restaurant in Town Hall Hotel,
is a bit wanky sometimes but overall you’ve got everything you want. There’s a lot of competition around here as well but in a good way, in a creative, supportive way. CH: Do you have a cooking hero? LW: When I was younger it was definitely Gordon Ramsay and Jamie Oliver, same as everybody elses, but since I worked with him, Tom [Aiken]. Jason’s a big inspiration. René Redzepi, now. You just sort of look up to every older chef who’s been through the mill because you know what they’ve been through. Opening restaurants is stressful. CH: Do you have a signature dish? LW: See, I hate that “signature dish” thing – but we do have one, through default. It’s our cauliflower dish [Yeasted Cauliflower, raisins, capers and mint] and it’s the one dish that hasn’t gone off the menu since day one and it’s still the one dish that gets spoken about the most. So I guess if we have to have one, it’s that. CH: Do you have any hobbies outside cooking? LW: That’s an interesting question – when people ask it you realise how boring your life is [laughs]. CH: Oh, no! LW: No, no its fine, I do – I love music, I love going to the gym. That does sounds boring, doesn’t it? Nothing out of the ordinary; I love eating out and socialising and drinking.
CH: You’re pretty young still… LW: Yeah, I’m 28. CH: Do you have an ultimate ambition? LW: I suppose to be a businessman, not a chef, is the ultimate ambition. For the last 12 years I’ve worked 80 hour weeks, sometimes more, but that’s the average. I want to get to a point where I’m not doing that anymore but still doing what I love, which is giving customers something that they love and appreciate. I’d like to own a fine dining restaurant, a bistro that makes lots of money and a pub, a nice country pub that you could go to on a Sunday. I’d like to own a bar, too, a really cool bar. Have a little empire – not a massive one, just a small empire. CH: Do you get many benefits from the restaurant being in a hotel? LW: Yeah, you do. And you get a lot of
Pigeon smoked in pine, salt baked celeriac, lovage and hazelnut
diversity. This hotel’s quite diverse itself. We get youngsters, we get hipsters, we get the older crowd, we get people from New York who fly over and only ever stay here and are wowed by the food. CH: Any disasters in the kitchen? Have you ever had anything go spectacularly wrong? LW: We’ve set fire to the stove, one of my chefs caused a fire with a blowtorch. The gas didn’t work for a week so we had to cook in various interesting ways – a lot of improvising. You still get by. CH: Any feedback that’s stayed with you? LW: It’s always the worst feedback that sticks with you. We get brilliant feedback, which is great – I’ve been compared to René, which is ridiculous. I actually felt quite insulted in a way because they don’t know what they’re talking about [laughs]. But it’s the bad that sticks with you. We had a table of two sat over there, said they didn’t enjoy one thing on the menu, that it was the worst experience they’d ever had in their lives. He said his wine was corked – we then realised that his wine had never had a cork, it was a screw top. So he was just being an arsehole. CH: Some people just enjoy complaining. LW: I know. I asked him to leave and the whole room clapped. As soon as they left everyone else said, look we’ve eaten the same food as them and it was fucking amazing. You just cannot please everybody. CH: Some people use eating out as an excuse to behave their absolute worst. LW: Yeah, because apparently the customer is always right. Which is a load of bollocks. u Town Hall Hotel, Patriot Square, E2 typingroom.com

WAIST NOT WANT NOT Wo r d s v i o l e t n e y l o r - l e y l a n d
’m not beating around the bush - I have become addicted to I Keeping up with the Kardashians. Like a large minority of people, I’m now obsessed with Kim and Chloe’s awesome bottoms, which give the illusion of particularly teeny waists. Although irritatingly, and in Kim’s case especially, these girls do have tiny waists. Gah! Unfortunately my Latino-physique is a far-off dream. Yet, while some lunatics pop off to their local surgeon for implants to create the perfect waist-to-bum-ratio, I sit here wondering (when there’s a cheaper, more stylish, less mentally deranged and what’s more REVERSABLE solution) why?! They’d evidently never heard of waisttraining: shrinking your waist by regularly donning a corseted garment, which you gradually tighten. Bizarrely, despite having co-designed a corset range, it never occurred to me that anyone other than Burlesque artists would do this. So, I decided to try it – well my version, which didn’t include going to the gym in one (like Kim). Wearing a corset for three consecutive evenings, it appeared I had lost three-quarters of an inch around my waist, not only this but it actually looked smaller. I can’t vouch for this method’s lasting effects or whether success was due to being unable to eat as much dinner, but it worked. So here are my three favourite corsets – the Violet’s Box Nude Victorian overbust £295, the M&S Collection Firm Control Waist Sculpt Panelled Waspie £25, and the Chantal Thomass Secret d’ Alcove Basque , £395 from Petis Bisous. u ● V I O L E T ’ S B OX by Violet Naylor-Leyland

T H E T R E AT M E N T Intravenous vitamin infusions have been popular amongst the busy and beautiful for several years now. And it makes sense, really: administered by a trained aesthetic nurse (mine used to work in A&E), vitamins, minerals and other vivifying goodies bypass the digestive system and get straight into your bloodstream, giving you a concentrated hit of all the essential nutrients you’re lacking. EF MEDISPA in Kensington offers a range of targeted treatments designed to relieve a number of ailments, including the common cold, stress and chronic fatigue as well as promoting weight loss and reducing the effects of ageing. ◆
T H E R E S U LT The fact that you can have a massage and a mani-pedi mid-infusion means that EF MEDISPA really has combined comfort, medical knowledge and deep relaxation into one. Packed into just 30 minutes, this is undoubtedly the must-have treatment for the time-poor but health-conscious. Yes, it’s a quick fix but one of which you’ll continue to feel the reward days later. Your entire system is given a boost and the cold I had felt coming on never came. All praise the drip. ◆
THE DEAL Drip & Chill infusions cost £250. ◆

SPRING Into Action
Michelin star chef Skye Gyngell brings Spring to Somerset House with her first solo venture Interview Gemma Billington
GEMMA BILLINGTON: Your first solo restaurant, Spring, is set to open in October in Somerset House. Can you explain, in a nutshell, what Spring is all about? SKYE GYNGELL: Spring brings warmth and elegance within a beautiful dining space. We want the restaurant to be inclusive not exclusive, a place families can come for an early supper and where people can also come after the theatre. The food at Spring is celebrated for its conviviality and the joyfulness of sharing seasonal produce. Our cooking is heartfelt, wholesome, produce driven and cooked by a team of people who are passionate about what they do and who feel truly privileged to work with beautiful ingredients. GB: What’s the meaning behind the name? SG: Spring is of course a nod to the seasons and reflects my cooking but, more than that, I chose it because it feels optimistic, hopeful, like a new beginning. GB: Yours is the first restaurant in Somerset House to be located in the New Wing. Can you tell us about Spring’s look and interior design? SG: I fell in love with the site because of its gorgeous natural light. I had a bit of a moment when we first visited what was then a very dreary space as this stunning shard
ABSOLUTELY MAGAZINES
C&A_April15_SkyeGyngell.indd 40
of light was streaming through one of the arches and I instantly knew that we could transform this site into something truly beautiful. I’ve been fortunate enough to have a team of fantastic professionals working with me on this project – Stuart Forbes Architecture, the incredibly talented Jinny Blom who has designed our very own indoor atrium, and artists such as Emma Peascod and Valeria Nascimento. My sister Briony has led on the interiors and has shared my vision for a light, airy space which exudes warmth through is textured furnishings and feminine flourishes. GB: Spring’s menu is based on seasonal produce. As we’re now well into the winter months, what sort of ingredients have you been using and what can we expect on the menu? SG: For me, cooking seasonally simply makes sense. It is very comforting knowing that ingredients work so harmoniously together from their own season. When Spring launches in October, we will have gorgeous autumnal produce like Porcini mushrooms, lovely squash and courgettes and fresh seafood of langoustine and scallops. GB: Where have you been sourcing the ingredients? Do you use a lot of Londonbased suppliers?

FOOD & DRINK / INTERVIEW I MAINTAIN that I will never COOK WITH A MICHELIN
star in mind
SG: I always aim to source locally and we are very fortunate to have such high quality produce from all over the UK at our disposal. Organic beef and rare breed pork from Wales and biodynamic fruit and vegetables from Herefordshire. Our coffee is from Allpress Roastery in east London and tisanes (herbal teas) from Postcard Teas. GB: Would you say that there are similarities between Spring and Petersham Nurseries? The rustic setting of the Nurseries obviously reflected the kind of food you served – but have you brought the same kind of ethos to Spring, even though it’s in a more formal environment? SG: The style of my cooking has not changed, I will just be substituting the shabby chic for clean lines. Spring is very elegant and heartfelt and this absolutely compliments my cooking. GB: You were awarded a Michelin star at Petersham Nurseries but I’ve read that, because of the ensuing pressure, in the end it was almost something of a curse. Do you stand by this? SG: It was a long time ago, and Spring is going to be a very different restaurant to Petersham. I was cooking on a temporary stove in a tiny kitchen, and the star came so unexpectedly. I maintain that I will never cook with a Michelin star in mind; I cook the way I do because of sheer love and passion, not for applause and accolades. GB: How and why did you first get into cooking? SG: I had a job washing up in a restaurant in Sydney during my first year at university, and although it wasn’t very glamorous, I
instantly fell in love with the atmosphere in the kitchen and the rush of service. I started to get involved in basic tasks, like making stock and pastry, and this fed my eagerness to learn more and my passion for food continued to grow. I feel the most calm and relaxed when I’m in the kitchen. Cooking is my therapy. GB: You grew up in Australia. How did the food and lifestyle over there inspire you? SG: Having lived in London now for over 30 years, I have come to appreciate that what Australian cooking really exudes is confidence. The confidence to have several cuisines on a single menu, be it Asian, Middle Eastern or European. It is this melting pot of flavours which makes Australian cuisine so unique. My cooking has always been simple and ingredient led, and this perhaps stems from the traditional Australian BBQ. Warm summer evenings with friends and family, seasonal salads and grilled meats. It is very simple and relaxed and the food is enjoyed for its conviviality. GB: You currently live in Shepherd’s Bush. Where do you like to go out to eat in the area? SG: I mostly enjoy simple cooking at home with my two daughters, but on the occasions
43 C&A_April15_SkyeGyngell.indd 43
where I do get time to enjoy a meal out, I go to the River Café for special occasions or The Brackenbury. They are entirely different, but I feel at home in both. GB: Who are some of your all-time favourite chefs and whose cookbook do you turn to repeatedly? SG: I have been inspired and regularly turn to three very strong women: Maggie Beer, Alice Waters and Ruth Rogers. These women share my immense passion for produce led cooking which is from the heart, the kind of food you want to scrape your bread through. GB: What are the three ingredients you couldn’t live without? SG: I’m not sure that I could narrow it down to just three! I think it is the quality of the ingredients themselves that speak volumes when cooking, although proper seasoning is crucial, particularly good quality salt and extra virgin olive oil. GB: What is your ultimate comfort food? SG: Vegemite on crusty sourdough toast, with lots of butter! Such a treat. u Spring opens on 14 October; somersethouse.org.uk

FOOD & DRINK / REVIEW
Na Zdorovie!
It's our food special, so we headed uptown for a feast at Soho stalwart, Bob Bob Ricard
Earlier that day, my dining companion and I had stalked the restaurant's droolinducing Instagram and had already decided that for main we were going to order the beef Wellington to share. The thick golden flaky pastry encased perfectly tender 28-day aged beef, which we drowned in the accompanying thick truffle gravy. Following what were some rather unexceptional starters, we had begun to fear that Bob Bob might be all about the glamour, rather than the food. But after inhaling the main, we realised they do know their meat. It’s massive, potentially big enough to feed four, but they serve it for two so just take your time. Make sure that you order a glass of the 2007 Château Patache d'Aux to wash down that buttery Wellington. Despite being on the verge of exploding, we ordered the show-stopping BBR Signature Chocolate Glory to share. A spherical gold bomb of thin chocolate arrived with a silver jug of hot cocoa sauce. When poured over, the chocolate case melted and cracked to reveal the mousse, brownie, meringue, and passionfruit and orange jelly hidden within. It’s striking and with so many different elements to it, could easily have fallen on the wrong side of experimental. But the flavour combination of brownie and meringue with passionfruit and orange actually worked well. Be sure to head underground for a disestif in the downstairs bar. Order an espresso martini to fuel a night out in Soho afterwards, if you're not too full that is. With the oyster blunder forgotten about as soon as a mouthful of that Welly, touched our lips, all I can say is bravo Bob Bob and see you again soon. u
Wo r d s E l i z a b e t h H u t t o n
I
f you want to impress go to Bob Bob Ricard. This is the sort of place that makes you want to celebrate just being there. The elaborate Art Deco design sets the scene for something special and the Russian-cum-British menu is on the right side of extravagant. Be sure to make use of the ‘press for champagne’ button, which will ensure you're sipping on ice cold Ayala Brut in a matter of moments. We started our meal as the restaurant would have hoped: a flute of champagne in hand and a tray of baked oyster
brexhnev in front. The oysters were baked in heaps of parmesan and black truffle, which made it one of the most indulgent starters we've ever eaten. One thing's for sure, sometimes less is more. The powerful flavours of the parmesan and truffle totally overpowered the oysters. It was tasty, but after eating a couple we wish we had gone au naturel. Better were the truffled Siberian pelmeni. These traditional Russian dumplings are made using an ultra-thin dough to hold in the meat filling. Relying solely on the quality of the pork and beef for it’s great taste, they come served in a simple salty broth.

CUDDLEDRY ORGANIC COTTON BATH TOWEL Wo r d s H E L E N B A R O N
f necessity is the mother of invention, someone at Cuddledry must have experienced one too many chaotic baby bathtimes. Their response was to design a bath towel with little ones (and their parents) firmly in mind: the result is the Cuddledry, a snuggly apron-style towel made of super-soft, absorbent organic cotton and naturally antibacterial bamboo fibre. Simply loop the Cuddledry around your neck and you can use it to lift baby from the bath with both hands – ensuring he or she stays warm and cosy while you stay miraculously dry. (It’s hooded too, so draws excess water away from baby’s face.) Simple but brilliant Ω like all the best inventions Ω and a surefire way to remove some of the stress from your routine. ◆ £29.99; cuddledry.com

he mustangs are on the move. Thundering across the Nevadan plains – hooves pounding, flared nostrils snorting, a whirling dust cloud in their wake – these wild horses are running for their lives. Like bestial Bonnie and Clydes, they’re on the run from the government, who in 2008 announced that 30,000 of these horses were to be slaughtered or sold in a bid to control numbers, destined for cruelly crowded corrals at best or the European meatmarket at worst. As a result, one of the most iconic symbols of the Wild West is slowly disappearing, and with it a piece of authentic American history. But there is one place where these horses have found refuge. Created by billionaire animal rights campaigner Madeleine Pickens, Mustang Monument is a luxurious not-for-profit eco-resort situated in the high desert of Nevada. Here you’ll find 1000 of these wild horses, rescued and roaming free on 600,000 acres of rolling desert plains. Believing that the answer to their plight is tourism, Pickens is spreading their story through the visitors who come to stay here and experience the mustangs’ own unique brand of magic.

THIS PLACE is far more THAN JUST YOUR average dude RANCH Yet the resort has faced opposition, with local cattle ranchers contesting the benefits of Picken’s altruism. Seen as an agricultural pest, they argue that the horses threaten their livelihoods and without a natural predator, numbers will become unsustainable. Sabotage
attempts have been made, from wire fences cut to allow unsolicited trespassing on neighbouring lands, to stallions being planted in castrated herds to breech breeding regulations. Local men who work here have even been disowned by their families, such is the intensity of emotion that the ranch provokes. Despite this, Mustang Monument has proved a huge success, and it’s easy to see why. This place is far more than just your average dude ranch – accommodation here takes the form of either luxurious, handpainted teepees or decadently designed cottages. Illustrating the true meaning of glamping, teepees come kitted out in Navajo rugs, huge beds and bundles of cosy faux-fur throws. Pick the teepee painted with running horses and you’ll get to watch the mustangs in flight once again as the sun goes down and the crickets begin to sing. Meanwhile, for those who prefer their creature comforts, the sumptuous safari cottages are decked out in Ralph Lauren interiors and beautiful bathrooms with a tub big enough for two. Days are spent in the saddle, out on horse safaris in search of the herd or hacking over Spruce Mountain to picnic up on the hilltops overlooking the Goshute

TRAVEL / WANDERLUST IT’S eerily quiet as YOU RIDE, WITH nothing BUT THE UNTAMED wilderness AROUND YOU Valley. These rides along take you along the dirt tracks of the desert scrubland, past deserted pioneer villages and into the shadows of the pinyon pines as the smell of wild sage floats on the breeze. It’s eerily quiet as you ride, with nothing but the untamed wilderness around you. Atop the mountain, views across the valley stretch as far as the eye can see into the piercing blue horizon – there’s not another living soul in sight. Apart from the Mustang Monument team of course, who cruise up in 4x4s to spread out the blankets, plump up the pillows and prepare an alfresco feast for lunch. Here, luxury is never far away. But you don’t have to be an equestrian enthusiast to enjoy all that Mustang Monument has to offer. Resident cowboy Clay Nannini is on hand to teach you how to lasso and take you out on the old, open wagon before breakfast to feed the herd. Rattling down the track behind the two giant draft horses, Pat and Duke, these trips make you feel like you’re starring in an episode of Little House on the Prairie. It’s worth the early start though – lured in by the food, the mustangs come tantalizingly close, allowing you to get as near as humanely possible to these wild animals. It’s easy to waste hours watching them. But for those looking for some more high-octane activities, there’s also rock-
climbing, shooting and off-road buggy rides on offer. You can fire anything from small pistols to large assault rifles on the ranch’s range, where the targets take the shape of various villains – zombies and bandits who each squirt fake blood when you make a hit. Ex-SEAL Monty Heath runs the adrenaline-fuelled rides in the Maverick, an off-road buggy complete with roll cage. Even with seatbelts and crash helmets, it’s still a hair-raising ride as you whizz around the dirt tracks at 70mph, dust flying in your trail as you narrowly avoid rolling. After a long day out on the plains, things taker a slower pace back on the ranch where guests return to a homecooked meal served communal style in one of the dedicated dining teepees. Food is wholesome and hearty – think pumpkin
soups, roast chicken, corn on the cob and cherry crumble to finish. After dinner, roll on over to the saloon bar, take a seat on one of the saddle-turned-stools and enjoy the country tunes crooning over the stereo as the bourbon flows. As the night rolls on and your teepee beckons, take a moment to reflect in one of the wooden armchairs under the twinkling night sky. Out of the silence of the cool desert air comes a distant rumbling rolls as the hooves once again begin to pound across the plain. It’ll be while yet before the mustangs stop running. u Steppes Travel (steppestravel.co.uk / 0843 778 9926) offers a seven day itinerary with four nights at Mustang Monument in Nevada (mustangmonument.com) and three nights at the Sundance Resort in Utah from £2,725 per person based on two people sharing, including economy flights to Salt Lake City, car hire, full board accommodation and all activities at Mustang Monument, and room only accommodation at Sundance.

TRAVEL / UK GETAWAY WHAT IS IT?
O
ne of the most famous terraces in the world, The Royal Crescent is an archetypal example of Georgian architecture. The sweeping row of terraced houses is Grade I listed and debuts the same Georgian stone façade and Ionic columns from when it was first built in the late 1700s. Designed by architect John Wood the Younger, the Royal Crescent has become a key historical site for Bath’s steady flow of tourists which, after an 18 year battle, are no longer allowed to visit the crescent in tour buses. Each house has a rich historical tapestry that has been sown by many a famous face. Writer Christopher Anstey resided in number 5, while jurist and explorer Thomas Falconer lived in number 18, and Major Bernard Cayzer bought number 1 in 1970 and gave it to the Bath Preservation Trust as a gift to the people of Bath. The hotel occupies number 15 and 16 on the crescent and is all long sash windows, panelled walls and original features. This set the scene, helped by the blustery wind, typecast staff and black cat, for a weekend that could’ve come right out of a Jane Austen novel.

any of the bedrooms and suites at the hotel have been named after notable historical figures who’ve stayed or resided in the different houses at some point in the past. These include the Sir Brinsley Sheridan Suite, the Elizabeth Linley room and the Ralph Allen Suite. The latter, where we stayed, is elegantly kitted out with a large, cloud-like bed, a walk-in wardrobe, and even a secret hideaway study, which on our stay became the popular ‘red wine room’. There is no minibar, which took us by surprise, but the in-house sommelier is as efficient as can be and makes things special by popping the cork for you in your room.

ander out of the main house into the enclosed acre of gardens, where there is a striking pillared Pavilion, manicured lawns and preened flowerbeds. There’s also a back-building that houses both the restaurant and the spa. The spa, which is a destination in its own right, is simple and pared back. There are plenty of treatment rooms, but it’s the indoor swimming pool (inspired by the famous baths in town) that really draws the crowd. Treatment-wise, the spa has all the classics, but we suggest opting for the Royal Crescent’s Signature Treatment. The 90-minute ESPA treatment includes a back massage, scalp massage and facial. Heaven.

t’s the little things which turn a house into a home: a vase full of flowers on the table, a soft lambswool throw on the sofa, a scented candle burning in the background. The type of things which are somewhat of a speciality for interiors brand, Att Pynta. Set up by two Brockley-based Swedes, Att Pynta specialises in Scandinavian-inspired interior accessories from a collection of independent designers. As a result their wares are cool, considered and totally unique – just like their name. ‘It means to decorate in Swedish,’ explains co-founder Amanda Nelson. ‘But not in the sense of painting the walls – it’s more like furnishing it with accessories to make it homely. It’s nice because Swedes immediately recognise it, but there’s no equivalent in English.’ This Nordic identity was key – both Amanda and her fellow founder Kai Price hail from Gothenburg, Sweden. Having met whilst working in fashion in London, the pair bonded over their Swedish roots and love of interiors, sharing copies of Elle
Decoration and the links to their favourite interiors blogs. Inspired by their shared heritage, the original idea for Att Pynta came to them during a lunch-break. ‘We both love Pinterest and saw so many ideas on there, but we couldn’t seem to find anywhere to buy those Scandi-inspired products,’ says Kai. ‘Or at least not in the UK,’ continues Amanda. ‘But you can find them in any shop in Sweden, so we saw a gap in the market.’ After this the pair sourced a carefully curated range of products from independent artisans and suppliers with a Nordic background. ‘All of our ceramics are actually made by my aunt out in Sweden,’ reveals Kai. ‘It’s brilliant because we can basically design and sell our own unique products thanks to her.’ Each one of these products provides a unique take on typical Scandinavian design. ‘The Scandi look is very clean, with lots of clean lines,’ explains Amanda. ‘It’s never fussy. It always uses muted tones, and often a lot of white. Layout is also very important, for example how each room would work best in the space available.

NOT EVERYONE
wants to buy things from IKEA
It’s very functional and considered, and it always has to be comfortable. The chairs, for example, are always ergonomic.’ This idea of functionality is a great way to introduce the look into your own home, with the key being to take things back to basics. ‘The first thing you need to do is to have white walls and white-wash your floorboards if you have them,’ advises Kai. ‘Then you need to declutter. Scandinavians never have clutter – they only display a few really beautiful items. So take away what doesn’t need to be there and just have your loveliest possessions out: your best books, a few cushions, a lambskin rug. Just strip everything away and then only put your favourite things back.’ But for those only looking to add a few Scandi touches rather than a complete Brass Tealight Boxes and Glass Bottles fit perfectly on the mantlepiece
This Copper Cone Lampshade provides the finishing touch
make over, Att Pynta is here to help, offering accessories that are both chic and affordable. ‘Most of what we have could go in any style of house, and as they’re accessories they can work in different settings,’ says Amanda. ‘For example, we both love the Scandinavian look but with an English eccentric twist,’ says Kai. ‘It’s a bit more shabby chic, with lots of books on the bookshelf and a few mismatched cushions. I think it gives it a bit more personality.’ Alongside their website, Att Pynta also makes an appearance at East London’s Broadway Market, selling their wares
every Saturday. ‘There’s a few stalls which I really like,’ says Kai. ‘Ro Co does amazing terrariums and pots, and they’re next to us which is cool because they have a similar look. Opposite us there’s also a really beautiful little tea shop called Tiosk which looks like a typical Scandinavian
69 C&A_MARCH15_InteriorsFeature.indd 69
café.’ ‘And Reo Jewels does amazing jewellery,’ adds Amanda. ‘It’s made by casting the body parts of different animals such as a rat’s spine or a dove’s heart. It’s like taxidermy jewellery.’ These traders at Broadway Market perfectly embody what Att Pynta aims to achieve – to champion smaller designers. The brand’s new cushion range, for example, is made by a Finnish designer who supplies Att Pynta exclusively. ‘It’s nice because it means not only do we know the provenance of all of our products, but they are totally unique to us,’ says Kai. ‘Because not everyone wants to buy everything from Ikea, and see it in every other house.’ ‘Getting those smaller accessories that aren’t super generic add individuality,’ agrees Amanda. ‘It’s those touches which make a place feel like home.’ attpynta.com

peaking as an estate agent who has worked in the business for over ten years, a noticeable change in tenants’ mentality regarding the management of their property has become apparent. Tenants expect a professional and quick response to any issues that arise during their tenancy and are more regularly asking if a property is managed by the agent when deciding on which property to rent. Property management by the agent is a service that should be chosen by nearly all landlords as the level or commitment is under
estimated. The average two bedroom apartment usually takes 30 working days to manage over the standard year tenancy, this is a considerable amount of time for any landlord that has a full time job or family. The main benefits of choosing property management range from having regular inspections (in Knight Frank’s instance, three times a year), a 24 hour service with local trusted contractors on call for all maintenance issues. And finally, one of the most important benefits is the assistance at the end of the tenancy in regards to the release of the deposit.

proximity to the City, the variety of period properties and local amenities continues to attract a mixture of young city workers and families. Those looking to rent a one or two bedroom flat can expect to pay between £380 per week and £650 per week, while a three to four bedroom property typically costs between £700 per week and £1,500 per week. The former North London Royal Mail Centre building on Upper Street will soon relaunch as “Islington Square”. The scheme will revitalise the area, offering a combination of flats and retail space and will no doubt further cement N1’s sought after reputation.

Is a 10 year fixed rate a good idea?
W
hile a few lenders have started offering 10 year fixed mortgages, the truth is that these mortgages don’t have a high level of demand. A few of our customers have considered locking in for 10 years, but the majority feel that it’s a very long period of time and instead opt for five year fixes, which tend to offer better interest rates anyway. Most customers in the London market want flexibility so a two or five year fix is often far more suited to their lifestyle. In addition, London homeowners are often quite aspirational, trading up to meet family demands every few years. Most often, those that will consider a 10 year fix are buyers purchasing their last home, they tend to be on a fixed income and usually don’t receive a bonus from work, so for these reasons they might feel that a 10 year fix offers them the stability they need.

high quality service so what better way to do that than using customer feedback. We had no idea how the industry would react but we had a hunch it would be a success. One of the first people we ran the idea past was Phil Spencer. He was totally supportive and has presented The ESTAS every year since.” Now in their 13th year, The ESTAS Group have developed into more than a very prestigious awards event. They are a management information service, marketing tool and live client feedback hub for agents, mortgage brokers, conveyancers and suppliers to the industry. Phil Spencer
he first thing I noticed about Simon Brown, Managing Director of The ESTAS Group was how passionate he is about customer service. “Most of us nowadays are used to having average or bad customer experiences, we all have them every day. The frustrating thing is that when we do have a bad experience and want to complain, it’s normally such a long-winded process we give up because we’re too busy. That means most companies never actually know they are giving sub-standard service.” Brown is equally frustrated at the raw deal estate and letting agents get from the general public and media. “My wife Sarah used to work for a local agent and it wasn't until then I realised how hard a job it was. There are so many different factors to every deal and there are many things that can happen that you’re not in control of that can break a chain down.” Brown felt so strongly about Sarah’s experience that they both decided to launch a national award scheme which highlights agents giving excellent customer service. “We decided straight away the best way to ‘judge’ agents was to ask clients to rate the service they received. We wanted to help change the general perception of agents and at the same time give firms the platform to promote their commitment to providing
Access to The ESTAS platform immediately gives each business a marketing pack with which to advertise, using posters, embed logos, press releases and tweet feedback to their followers through direct links. Monthly service performance reports with live graphs measuring feedback in different service areas against regional competitors and national average and a winner’s marketing pack are all part of the ESTAS experience, helping firms to manage and grow their businesses. “Our clients use the ESTAS process both internally and externally to increase customer service levels, to manage and motivate teams and to brand their business as one that is happy to be measured by their customers.” Finally Brown adds “This year is going to be more competitive than ever and never more so than in London which is why we have linked up with the Absolutely Magazine Group. We want to spread the word to London agents what the benefits of taking part are and give them a marketing edge in 2015”.

hen Hurford Salvi Carr made the decision to open their fifth office at 227 City Road at the end of 2014, I was eager for the opportunity to work in such an exciting part of London. Sandwiched between Regent’s Canal, and City Road, this area is often referred to as the City Road Basin and is considered to be central London’s new residential district, conveniently located between Old Street, Shoreditch and The Angel, Islington. Nevertheless, City Road has seen a significant transformation since the mid-1990s, as dilapidated warehouses and factories were converted into spacious and desirable loft apartments. More recently we have seen the creation of a skyscraper corridor along City Road itself – with some of the country’s leading house-builders shining a light on the area, as well as the opening of new hotels and restaurants. It is certainly true that this area will continue to see positive change over the next few years, which makes it a very exciting time to be working here. This was my first experience of launching a new office and I am enjoying building up the team here and really making an impact on this ever-changing part of the capital. I have not always pursued a career in estate agency. Having dreamt as a child of becoming a professional footballer, I set my heart on a career that would keep me close to the game – sports journalism. I started my journalism career at a local news publication, before moving on to a larger news agency as
a south east England football reporter. It was definitely the dream job for a football enthusiast; I had the opportunity to cover Premier League and Championship matches, as well as having the opportunity to interview some of the most inspirational names in the football world; including Arsene Wenger and Sir Alex Ferguson. I decided to make the move into the property industry because I have a passion for people. I enjoyed discussing people’s property requirements, why they were moving and what their dream property looked like. It is an exciting challenge to go out and find that property – and there is still no greater buzz than handing over a set of keys to a satisfied buyer moving into their first home. I am so glad I made the career change. I feel I have been able to transfer a huge amount of my skills and I have been lucky to deal with an amazing and eclectic mix of properties. As a homeowner, and married father of two, who is currently looking to make the next step up on the property ladder, I appreciate the importance of having an honest and hard-working agent looking after your property search. My advice for people looking to purchase or sell in the City Road area would be to hold out for what you have set your heart on. Whether it be a characterrich loft apartment or something high enough in a tower to give you spectacular view over London, hold out because your agent will find it for you.

London’s
MOST POPULAR London’s ‘seedy underbelly’? Dean Street, Soho
Y
ou might wonder why an apartment within an Art Deco block in Soho might fetch £2.75 million when it’s in an area which was recently called the ‘seedy underbelly’ of London. And that was by one of its fans. Why is it so popular with online house hunters? The property has been viewed nearly 30,000 times over the past month on Zoopla, making it the most frequently viewed even though it’s one of hundreds of apartments for sale over £2.5 million in central London. So what’s going on? Rob Hill, MD of Greater London Properties, says it’s probably because the vendor, the CEO of a huge multinational corporation, recently dropped his asking price by £250,000 and this will have put the property on people’s ‘reduced price properties’ alerts. But the apartment, which features high ceilings and a large roof garden, is also typical of the new kind of upmarket apartment now available on Dean Street and this reflects the changes that Soho’s property market is undergoing. Not so long ago multi-millionaire CEOs were unlikely to have considered it an appropriate place to have a London crash pad and instead would have settled for

neighbouring Mayfair, Knightsbridge or Kensington. But attitudes are changing. Only a few years ago, Soho was best known for its sex shops and hedonist nightclubs which have dominated the area since the 1950s. But under pressure from Westminster Council to licence or close, many of these establishments have chosen the latter and are making way for more conventional retail outlets. The area is gentrifying too radically for some. Stephen Fry recently headed up a Save Soho campaign supported by Benedict Cumberbatch, Pete Townsend and Eddy Izzard to have Soho’s square mile of mostly low-rise Georgian and Victorian houses declared a ‘heritage zone’. And this apartment is in the thick of it. Famous residents and visitors to Dean Street include Mozart, who gave a recital at No.22, while Admiral Nelson
spent the night in a house on the street before the Battle of Trafalgar plus an impoverished Karl Marx lived at both No.28 and No.56. The street also has strong connections to the music industry, the chief of which is Dean Street Studios (at No.59). A litany of artists have recorded songs there from David Bowie to Duran Duran. But for how long will it continue to be a working area as well as a residential one? Now that the sex industry has been largely rooted out it’s becoming better known as a prime property market, helped by the expected marble-cladding of Dean Street’s northern end; Tottenham Court Station is to be torn down to accommodate Crossrail and reborn as a combined tube and rail station plus new offices, a theatre and housing.

uring the conveyancing process your solicitor would have found out what procedures need to be followed to inform the freeholder of the change of ownership. Usually, this information will be contained in the lease. However, sometimes leases can be a little vague so your solicitor would have contacted the seller’s solicitors and asked them to find out from the freeholders what their post completion notice requirements are. The lease commonly states that the buyer’s solicitor has to contact the freeholders or their representatives within a month of completion with details of the new owner and send them what is known as a Notice of Transfer together with a small fee to enable the freeholders or their representatives to deal with the registration of the new owners. If you only completed your purchase a few weeks ago, it is possible that your solicitors may not yet have served the notice and I expect the matter is in hand. Alternatively, the notice may have been served promptly on completion but the freeholders haven’t had the chance to update their records. In any event, it is advisable to contact your solicitors just to make sure that the notices have been served. If they haven’t, ask them to do so to ensure all future ground rent and service charge demands are addressed to you as the new owner.

Located adjacent to the Wenlock Basin, an extension of the Regent’s Canal, City Wharf will offer residents the tranquility of a waterside setting at the nexus between the trendy boutiques, theatres, pop-up bars and café culture of Islington and the continually evolving social scene of Hoxton and Old Street. his ironic that a type of property built exclusively to house the servants of London’s super wealthy during the 18th and 19th centuries has ended up being the latest and most fashionable type of property that London’s well-heeled want to live in. Mews homes, which were designed to keep the horses and servants who looked after them away from the front of London’s

Victorian mansions, were until recently seen as a second-best choice for today’s wealthy house hunters. But that is no longer so. Yes, they are usually cheaper than the huge houses they back onto but nevertheless they are doing their best to catch up. While a large white stucco Regency mansion in Kensington might fetch £40 million at the moment, the mews houses at its back can achieve up to £15 million. Built in their thousands all over London, mews houses are most commonly found in Mayfair, Marylebone, Knightsbridge, Kensington, Bayswater, Notting Hill and Fitzrovia. They are named after the annual ‘mewing’ or moulting that Falcons go through each year because the buildings in which these birds lived (during the 13th and
14th centuries) later became stables. And the name stuck. “Mews homes are also found in lesser numbers in Battersea and Fulham but not so much in the latter as this area developed at a time when the incomes of even the wealthy could no longer pay for private coaches and coachmen,” James Robinson of estate agent Lurot Brand. But wherever they are found, mews homes have been enjoying a renaissance over the past five or six years. “Above all, buyers like them because they are in quiet, private roads that are often dead ends,” says James Robinson. “Mews residents also usually enjoy a really amazing sense of community. Also, many come with their own garages which, in central London can be a rare and valuable feature.” Such privacy makes them extremely popular with celebrities. There’s a list of over a 100 who have owned or currently live in mews homes including WW2 pilot Douglas Bader, F1 driver James Hunt, Sharon Osbourne, Paula Yates, Sean Bean, Daniel Craig and perhaps the most famous mews house of all, the property where the Profumo affair played out (in Wimpole Mews, Marylebone). But search in London for a mews and you’ll soon discover that ‘mews style’ new homes are almost as numerous as their period counterparts. In recent years developers have realised ‘mews’ and its connotations of bijou luxury can be applied to almost any small new-built townhouse in London – although some do lay them out as recognisable mews streets, but without any links to falconry or servants.
