Editor's Letter Santa baby...

S

o the months have snuck by and at some point the hazy heat of summer gave way to a brilliant, flaming autumn. Here at Absolutely, the prevailing mood in the office has slowly swung from one of bewilderment (‘I can’t believe it’s December already!’) to something much more exciting. The Christmas tree has gone up, the black coffees have been traded for eggnog lattes and the menu for the office Christmas lunch has been distributed. This, of course, means one thing: it’s party time! In this issue we celebrate 2013 in the way all good things should be celebrated, with lots of food (Ravinder Bhogal gives us her best recipes for entertaining guests), lots of booze (Tristan Stephenson’s cocktails will make you the envy of all your friends) and lots of laughs (care of Dulwich comedian Jo Brand). And of course it wouldn’t be a December issue without a nod to Santa. Mariah might not care

about the presents underneath the Christmas tree, but if you’re anything like us, I’m willing to bet that you aren’t quite so altruistic. With this in mind we’ve put together a bumper guide to the best gifts in town. Rather than the usual ‘for him’ and ‘for her’ categories (if gender were any real indicator of taste, present shopping would be much easier) our guide is divided into various interests. There’s one page for that uncle who loves his country pursuits and another for that nomadic sister who’s been on her gap year since 2007. Ingenious, eh?

Hansel and Gretel 2 - 21 December Bussey Building Opera in Space present Hansel and Gretel, the traditional German tale famously set down by The Brother’s Grimm. Like many of Grimm’s fairy tales, the seemingly sweet story of a brother and sister lost in the woods and a delicious gingerbread house quickly descends into a much darker world of cannibalistic witches with evil intentions and acts of desperation. T

here are some fictional characters that will be forever beloved. They might be the ones that saw you through childhood, who occupied your imagination from the pages of books or whose cartoon cheeriness had you singing along to songs you remember even now, years later. They might be the ones who broke your teenaged heart, who taught you a thing or two about love. They might be ones that you admire, envy, love to hate, certainly they are all characters you will never forget. Every actor dreams of landing just one of these remember-them-forever roles. David Jason has landed quite a few. The 73-year-old, who has spent nearly 50 years in the entertainment business has played the kind of characters with whom we are desperate to spend time. From Granville to Jack Frost and, of course, Derek Trotter he has become one of the most successful, enduring and adored actors in television history. His roles in Only Fools and Horses, Open All Hours and A Touch of Frost have cemented David’s place in history, and thrillingly for his legions of fans, the London-born star’s personal history is now being told for the first time in his own words via his newly released autobiography, My Life.

DAVID AND HIS BIG BROTHER

“I didn’t want it – I didn’t want to talk about myself,” he shrugs. “But I’ve had two unofficial ones done over the years; terrible books that people wanted to cash in on. And I thought ‘this is a rip off!’ It’s not fair. So I wanted the story told in my own language.” David was assisted in recalling his lengthy career by the swathes of keepsakes and memorabilia he’s preserved from various roles, such as his first ever TV part in Crossroads in 1964. “I was so pleased with what I was doing,” he smiles, “I wanted to keep a memory of it. Every job that I did, every show I was on I have a programme, reviews which I kept, photographs as well.” He calls the process “a curate’s egg”, some parts more enjoyable than others, and admits there was a bittersweet element to recalling the happy moments of his life. “When you look back on some of the good times and the fun times you had, you realise it has gone. For example, every single episode of Fools and Horses, Open All Hours, Frost, everything that I’ve done… you couldn’t wait to get up in the morning to go to work because you knew you were going to work to make yourself laugh. And because of that, when you remember those good times, you realise that it’s in the past and you can’t grab hold of them, it’s gone. That was the most difficult thing. “But the book tells the story, which is what everybody wanted. Nothing is too serious. There are one or two moments, obviously, like when Myfanwy [his partner of 18 years who died in 1995] was diagnosed with cancer, I had to go through all that side, but then everyone’s life has ups and downs. Nobody wants that to happen, nobody wants their nearest and dearest or a good friend to die, but it happens. But otherwise – at least I’ve told it and nobody else has!” Although he had already enjoyed success as the naïve Granville, Ronnie Barker’s shop assistant in Open All Hours, in 1981 he landed the role that changed his life. David’s portrayal of the underhand market salesman and lovable rogue Derek Trotter in Only Fools and Horses is undisputedly one of the greatest sitcom performances ever. The show provided so many classic moments that are ingrained in the national psyche. David explains the secret formula: “Well, the first thing is it is funny. The second thing is that it is British, and British humour is something everyone can relate to and they also relate to the struggles of the working

man – or the not working man! Someone who would do anything to succeed, to earn a crust, to keep the wolf from the door. All the characters were very funny, silly. But basically it was all about people you recognised.” Fans will be delighted to hear of his new oneoff Christmas episode of Open All Hours, with David playing Ronnie’s part. ‘I am taking over the shop. Now, I’m really an Arkwright and I’m looking forward to that,” he smiles. And it’s testament to his longevity as a successful actor, of which he’s only too appreciative. “I never thought until I started to do this book how many successful shows I have been in, right from the theatre into television. There were so many actors I worked with when we were all struggling to make a living, all in love with the business, but so many fell by the wayside. And yet, I am still here!”

or the first eleven months of the year I’d consider myself to be fairly responsible. Despite dressing age-inappropriately I pay my bills on time, I donate old clothes to the refugee centre at the bottom of Barry Road, and I take in my neighbours’ endless packages when they’re at work. Come December though – with the onset of party season – I down tools (well, trusty laptop) and transform into someone who could give Miley Cyrus a run for her money: I become Dulwich Party Girl. For most of my 20s I lived in Clapham Junction – a land where young professionals mingle with Australians, rugby players and end up wasted in Infernos. Party season wasn’t just for Christmas, it was for every day, and my flatmates and I used to regularly host bashes that ensured we weren’t going to get the deposit on our rented flats back: floors were ruined, red wine ended up on the ceiling, and on one memorable occasion a boy took acid and hung – naked – from a kitchen cupboard squeaking ‘I am a bat!’ But since entering my 30s and retiring to East Dulwich, parties have taken on a more somber tone: instead of bowls of crisps the food is homemade (the meat from William Rose, everything else from Franklins). We only drink white wine so as not to accidentally ruin the cream carpets, and the party ends well before midnight as the babysitters’ rates double after then. I love my friends and these parties, but I can’t help wondering when this change happened – when did we decide to stop mixing our drinks because we want to be able to go walking in Syndenham Woods the following day? And that’s why I love December - because we’re forced to party like we used to and all responsibility goes out the window. It’s a bit like falling in lust – when you can’t concentrate because the hot boy you fancy just sent you a text – only it’s kind of better than that. Because for the whole of December it’s practically the law to wear tight, glittery dresses and more make-up than a Strictly Come Dancing contestant. It’s mandatory that we drink too much and flirt wildly … and above all else it’s not party season if we don’t sob at least one saccharine Christmas advert on TV. Because that’s what Christmas is all about right? So let’s eat, drink – and party like we used to. Happy Christmas, neighbours!

A NEW BRAND of MAGIC Georgie Lane-Godfrey talks to Dulwich’s Jo Brand about pantos, psychos and the challenge of the Genie

O

n the press release for the New Wimbledon Theatre’s production of Aladdin this month is a quote from Jo Brand. It reads: ‘I’m very much looking forward to doing my first panto, although I would have preferred Cinderella because I realise that I am a role model for many glamorous young women.’ This, of course, is typical of Brand. She’s been making jokes with her trademark deadpan delivery since the 80s, building a career out of selfdepreciating humour in the process. Maybe she’s had to – her eccentric, non-conformist appearance has made Brand an easy target for hurtful comments ever since she started. As a result, self-depreciation has become not a shield but a weapon; a way of both deflecting comments and discombobulating her hecklers. ‘The thing is,’ she explains

to me matter-of-factly, ‘what I always thought about being selfdepreciating is that I can actually put myself down in a much more entertaining way than you can, so let’s get that out of the way and move on, you know?’ Brand has always been one of those comics who has divided opinion, her marmite feminist comedy proving to be either hilariously funny to some or highly irritating to others. Unfortunately for her, it’s the latter category who are more vociferous, as she discovered in her very first show when one heckler told her to ‘f*** off, you fat cow’. Brand was apparently undeterred, owing she believes to her previous job as a psychiatric nurse. ‘It was an incredibly stressful job and occasionally violent,’ she explains, referring to the time she was threatened with a machete. ‘So from that point of view stand-up comedy

was a piece of cake. It’s very rare during a show that you actually get physically threatened by somebody, whereas as a nurse that was a part of my job which I simply accepted.’ Brand however soon learned how to deal with these taunts. ‘I have a continuum of heckle put-downs starting from quite nice and going all the way up to nuclear personalitydestroying,’ she tells me gleefully when I ask her about how she deals with it. She seemed so cheerful when telling me about them that you get the impression Brand actually relishes the chance to beat hecklers at their own game, a defiant ‘do-your-worst’ attitude towards those who dare take her on. ‘I don’t actually mind heckling that much,’ she admits. ‘I think that if a certain type of heckling gets going which is inclusive, it can really suit the show and make the evening much for fun. The only sort of heckling which I don’t like is psychopathic death threats and telling me that I’m a filthy whore. It’s far more to do with content than the act itself.’ In fact, Brand is now doing something which actively encourages heckling: pantomime. This month she’s starring alongside former TV presenter Matthew Kelly and Britain’s Got Talent winners Flawless in Aladdin, where she will be playing the Genie. Panto might seem an obvious choice for a comic, but when it comes to Brand’s feminist principles, it seems an odd one. Surely this is one those art forms which propagates the gender stereotypes she’s trying to dispel? She pauses a moment. ‘Well, I wouldn’t get involved in Punch and Judy for that reason. Pantomime has a history of gender stereotypes sure, but if you look at the Hackney Empire Panto, that’s a challenge to gender stereotypes and I don’t see why, given that I’m going to have fairly free reign in this panto and that the Genie is a male character, I can’t challenge it in some way.’ Of course Brand is no stranger to challenging these gender stereotypes; when she first went into stand-up, there were only about six female comedians on the circuit. The odds would have been completely in her favour

had in not been for the sexism she encountered. It’s a problem which has improved, she says, but which is still very much present – so much so that when I ask which other female comics she admires, she simply replies: ‘To be honest with you, I admire any woman who gets up and has a crack at stand-up because, having been through the process myself, I know that it can be very, very difficult at times.’ I mention Bridget Christie, another feminist comedian who won this year’s Perrier Award. ‘I think what Bridget tries to do is to include men rather than push them away, and to get men to be supportive towards women,’ she says insightfully. ‘Men who are misogynists aren’t going to change until other men tell them not to be like that, rather than women telling them.’ Having been continually portrayed as a foul-mouthed aggressive feminist in the rightwing media, Brand has had a hard time with the press. Despite this, when I speak to her I find her gentle and very amiable. She also is really rather kind – when I ask her for stand-up tips, she seems genuinely interested and ready to offer support. Incidentally I’m not planning on doing stand-up any time soon, but for those who are she did impart the following wisdom: ‘I suppose the secret to being a successful stand-up

is number one: have a sense of humour, number two: be able to talk about things to which other people can identify and number three: try and make people laugh but,’ she finishes with a laugh, ‘if you don’t, just go home. It’s very straightforward really.’

Fairy Tale Food Once upon a time Ravinder Bhogal’s culinary creations were locked away in her South East London kitchen. One day, Gordon Ramsey came along and released them… Words: ALEXANDRA JONES

My journey began when I was very small, when I was five. I grew up in an Austenesque household where my mother, with her daughters, was very much like “if you want to snag a husband, you have to learn to cook, you have to learn to sew.” It was a traditional, slightly Victorian upbringing.’ Right from the start there’s an element of fairy tale to Ravinder Bhogal’s backstory. Hers is not that of the steely chef-school

CRISPY WHITEBAIT WITH A QUICK TARTARE SAUCE ERVES 2 TO SHARE (increase volume for a party, they make great canapés!) • groundnut oil for deepfrying • 1 tsp cumin seeds • 1 tsp sea salt • 125g/4oz plain flour • 1⁄2 tsp cayenne pepper • 500g/1lb 2oz whitebait, rinsed and patted dry • lime wedges, to serve • bread and butter, to serve

graduate, drilled for years under a French maestro and spat-out spouting 12-step recipes that are delicious but devilishly complicated. No, Ravinder’s is a story with a bit of culinary kismet. The now South East Londoner grew-up in Nairobi and Kenya, where her mother was tasked with feeding a large family ‘who always had visitors and floating guests.’ Pulling her children into the kitchen to help with the preparation, Ravinder’s mother (‘head commando of this vast meal that had to happen twice a day’) ran mealtimes like a military operation, feeding anywhere between 15 and 25 people. ‘I also had a darling grandfather who, even when I made the most terrible concoctions would be like “this is the most delicious thing I’ve ever eaten!” That made me feel like food was some kind of currency for love, that if you cook for them, people will fall in love with you.’ Ravinder’s food still bears the marks of a charmed start (still the recipes that answer everyday dilemmas, still the unbridled passion for searching out new concoctions) but her professional cooking career didn’t begin until much later. And like most fairy tales, it took a little sprinkling of magic from a fairy godmother, this time in the form of crinkle-face celeb chef, Gordon Ramsay. Working in journalism at the time (and branded the ‘walking diet

disaster’ in her office) Ravinder was persuaded to enter a cooking competition. ‘About four and a half years ago a friend of mine called and said “look, I’ve just seen this amazing advert for a new Gordon Ramsay show, he’s looking for the new Fanny Craddock and I just have this real feeling that if you enter, you’re going to win.”’ And out of more than 8,000 entrants, she did. ‘I went back to my job as a features journalist after having won, but the second it aired the calls started coming from agents...three months later I had a book deal with HarperCollins for a book which I’d been writing – just for myself really for about a year and a half.’ Her book - Cook in Boots - won the Gourmand World Cookbook Awards for the UK’s Best First Cookbook and was awarded the first runnersup prize of the World’s Best First Cookbook at the Paris Cookbook Fair in February 2010. From there she went on to host a number of shows about food and has most recently returned from India where she filmed her own 22-part cookery show for lifestyle channel TLC. ‘It was just crazy, chaotic, mesmerising, maddening, fun, exciting, it was a real experience.’ Now back in the UK, she’s preparing for the party season and has given Absolutely a peak at her favourite recipes for keeping guests entertained.

FOR THE TARTARE SAUCE • 100g/31⁄2oz good-quality mayonnaise • 2 tbsp capers, roughly chopped • 2 tbsp cornichons, roughly chopped • 1 tbsp chopped flat-leaf parsley • 1 tbsp chopped fresh dill • juice of 1⁄2 lemon • sea salt and freshly ground black pepper

reparing the tartare sauce is easy: just mix all the ingredients together – it really is no more complicated than that. Heat the groundnut oil in a deep-fat fryer. Dry-roast the cumin in a hot frying pan. As soon as it begins to pop, take it off the heat, place in a pestle and mortar with the sea salt and crush into a coarse powder. Mix the cumin-salt in with the flour and cayenne pepper and then throw in the fish and coat well. Shake off the excess flour from the fish and deep-fry in batches. They should take 2 minutes to crisp up nicely. Be patient – don’t overcrowd the pan or you’ll end up with a soggy mess. Drain on kitchen paper and then serve immediately with the tartare sauce, a wedge of lime and some bread and butter.

MARGARITA SYRUP CAKE SERVES 8 • 125g/4oz unsalted butter, softened • 150g/5oz caster sugar 250g/9oz yoghurt • 2 tbsp tequila • 3 eggs, separated • zest of 1 lime • 100g/31⁄2oz self-raising flour • 100g/31⁄2oz fine semolina • 1 tsp baking powder • 50g/2oz ground almonds FOR THE SYRUP • 75g/3oz caster sugar • juice and zest of 1⁄2 lime • 1 tbsp water • 4 tsp tequila • 2 tsp Cointreau

reheat the oven to 180oC/350oF/gas 4. Line a 20cm/8in cake tin with baking parchment. Cream the butter and sugar together until the mixture is light and fluffy. Whisk in the yoghurt, tequila, egg yolks and lime zest and beat until you have a smooth batter. Sift in the flour, semolina and baking powder and stir well, making sure all the ingredients are well combined. Finally, stir in the ground almonds. In a separate bowl, whisk up the egg whites until you have soft peaks and then, using a metal spoon, fold into the cake batter, being careful not to knock out the air from the egg whites. Bake in the oven for 50 minutes or until golden and cooked through. To make the syrup, combine the sugar, lime juice, lime zest and water in a saucepan and heat over a low heat, stirring until the sugar has dissolved. Take off the heat and stir in the tequila and Cointreau. Using a skewer, pierce several holes over the surface of the cake. Pour the syrup over the cake and leave it to absorb. Serve with a drizzle of cream and a twist of lime.

PRAWN POPPADUMS MAKES 40 • 1 small onion, finely chopped • 2 tbsp vegetable oil • 1 tsp cumin seeds • 1⁄4 tsp crushed cloves • 3 large tomatoes, chopped • 1 tbsp tomato purée • 2.5cm/1in knob of fresh root ginger, peeled and grated • 3 garlic cloves, finely chopped • 1 large red chilli (deseeded if you don’t want it too spicy), chopped • 1⁄2 tsp turmeric • sea salt • 350g/12oz rawtigerprawns, peeled and deveined • juice of 1⁄2 lime • 3tbspunsweeteneddesiccatedcoconut, plus 1 tbsp for garnish • 40 mini poppadums • 2 tbsp chopped fresh coriander

ry the onion in the vegetable oil until soft. Sprinkle in the cumin and cloves and fry until the onion is golden brown. Add the tomatoes and tomato purée along with the ginger, garlic, chilli, turmeric and salt to taste and cook until the tomatoes have cooked down and are jammy – this should take about 8 minutes. Add the prawns and stir-fry for 3–4 minutes or until they are cooked through. Take the pan off the heat, add the lime juice and stir the coconut through. Allow to cool for a few minutes, then heap a little of the mixture onto each poppadum. Garnish with the chopped coriander and extra coconut and serve.

CHEESES OF NAZARETH…

Historically, cheeses would have been produced and matured in line with the seasons, often relying on the surrounding environment. Nowadays consumer demand has meant that most cheeses are available all year round. One popular choice for Christmas though is Vacherin (Mont D’or) which is still produced seasonally. This marvellous cheese comes in a wooden casket which can be popped straight into a warm oven so that the contents melt like a fondue. It’s even better when drizzled with champagne before warming.

OH COME ALL YE GRAPEFUL…

Aficionados will go to great lengths to find the perfect liquid partners for their cheese, taking into consideration such things as texture, acidity, fat and tannins. Though it’s a trickly business, here are some suggestions of which wine to pair with which cheese when thinking about your cheeseboard this Christmas. Cheddar – Cabernet Sauvignon; Double Gloucester – Zinfandel; Pecorino – Valpolicella; Stilton – Sauternes.

ALL A’BOARD…

Creating a selection of cheeses where there is something for everyone and combines contrasting flavours and textures does not have to be difficult. Choose between 3-5 cheeses including a blue, hard, soft, washed rind and goat / sheep’s milk. Garnishing the cheeseboard with nuts, fruit and honey not only looks attractive but accentuates the subtleties of cheese flavours. If you are having people round for lunch prepare the cheese plate in the morning (I like my cheeses at room temperature and where the soft cheeses start to run). Be a little more adventurous and ditch the cream crackers; try crispy charcoal crackers or handmade lingue (brittle Italian flatbread, commonly known as “Mother in-law’s tongue”) which you can break up like popadoms.

BLUE IS THE WARMEST COLOUR…

For some people blue cheeses can be a little daunting, and perhaps an acquired taste. Over the years, more and more artisan cheeses have been produced providing much more choice,

and catering for many more palettes. EGGNOG Makes 4 servings • 2 eggs, separated • 75 g sugar • 150 ml Hennessy fine de Cognac • 100 ml whole milk • 50 ml double cream • grated nutmeg, to garnish

FOR THE LEMON & LIME GOMME • 50 g lemon zest • 40 g lime zest • 270 ml water • 600 g sugar • 30 ml vodka • 3 g citric acid • 2 g malic acid

ous vide the lemon and lime zest with the water at 60ºC/140ºF for 2 hours. Filter the liquid through muslin cheesecloth, then transfer it to a saucepan. Add the sugar, and heat until the sugar has dissolved, then add the vodka and acids. Bottle and refrigerate until required.

FOR THE CHAMPAGNE GIN FIZZ Makes 6 servings • 400 ml water • 10 g Lalvin EC-1118 champagne yeast brand • 170 ml Tanqueray London dry gin • 90 ml ‘Lemon & Lime Gomme’ • orange flower water, to serve

eat 100 ml of the water to 35ºC/95ºF. Add the yeast, stir fast, then set aside for 5 minutes. Mix the gin, Lemon & Lime Gomme and remaining water in a large mixing bowl. Pour the yeast into the bowl and whisk vigorously to fully aerate the drink. Once fully mixed, transfer the mixture to a sterilized champagne bottle and apply the cork and cage. Store at around 30ºC/86ºF for 9 days, then put in the fridge, standing up, for a further 2 days. To serve, spray chilled Champagne flutes with orange flower water and fill to the brim!

H

ith an electric hand mixer, begin by whisking the egg whites to soft peaks in a heatproof bowl. Bring half a saucepan of water up to the boil and place a stainless steel bowl on top. (Make sure the bowl doesn’t touch the water – it needs to be warmed by the steam only.) Add the egg yolks and sugar to the bowl and give them a good whisk until the sugar is dissolved. Add the Cognac and continue to whisk – it’s really important that you don’t allow the liquid to boil, that is unless you like alcoholic scrambled eggs! Next, add the milk and cream and stir everything together. Check the temperature with a thermometer or probe, it should be around 60ºC/140ºF. Pour the warm mixture into the egg whites, whisking as you go. Pour into glass mugs and grate some nutmeg over the top to serve.

Christmas decorations don’t have to be expensive. With a little bit of felt, twine and ribbon (and some patience) you can make your own for next to nothing! These Christmas garlands are super easy to make (in fact, you could make them while enjoying a cuppa and watching the Downtown Abbey Christmas special, if you like) and look great hung on the mantelpiece or above a window.

Christmas Garland YOU WILL NEED: • Red and white twine • Felt balls • Tapestry needle • Ribbons or scraps of leftover fabric • Lexography cards • Mini wooden pegs - all available to buy on eBay

It can’t get much simpler than this - thread a tapestry needle with the red and white twine, and simply pierce through the felt balls in whatever colour combination you like. If it’s a little tricky to pierce the felt ball, apply some pressure by pushing the needle into a hardback book or ceramic tile. I like to leave about an inch of twine between each felt ball, but you could bunch them up if you prefer. Tie a knot at each end and voila, there’s your first garland!

This garland isn’t exactly rocket science either again, take a length of the red and white twine and knot lots of strips of ribbon or fabric along it. I like having the ribbons cut at varying lengths but you could have the strips at a particular angle (perhaps in a V-shape), whatever you want! Pick a good colour combination for the full effect - I went traditional with red and green, but threw in some polka dots and a little bit of sparkle for good measure!

This final garland is one that I’ve been doing for years, ever since I stumbled across a pack of Lexography cards at a flea market (but you can easily find them on eBay and Etsy for less than a fiver). Simply spell out whatever phrase you like - I went for “Merry Christmas” but you could go for “Ho ho ho”, “Noel” or even “Santa Baby” if you fancy! Attach the cards to the twine with the mini pegs, using the back side of the cards for the space between the words. I think this one is my favourite! UK GE TAWAY Escape the everyday with a trip to the Folly, a luxury Cotswolds cottage exquisitely renovated by interiors specialists Matrushka THE GARDEN

Clamber from your car onto the sweeping gravel drive and the first thing you see is the grey stone and clinging ivy of the cottage itself; a few steps more and the garden is revealed. A lush lawn sweeps up to a near horizon shaded by a spectacular walnut tree complete with a swing, while a series of steps (plus a safely covered fishpond and cute hump bridge) lead down to a large paved terrace that’s perfect for entertaining. The master suite is under the attic eaves and features an adjoining bathroom with spectacular copper bath, while the remaining rooms range from the soothing Provencal rusticana of the Dorothy to the colourful, child-friendly charm of the Toad (complete with antique rocking horse). The furnishings and decor betray a masterful magpie’s eye for everything vintage and unique

The Folly is both easy to reach and pleasantly secluded, tucked away down a quiet lane on the fringe of the village of Didmarton. Within walking distance are a few neighbours, a teeny chapel and some lovely allotments teeming with raspberries and rhubarb. It’s all very Cotswolds in the best possible way, and the wider landscape continues the theme with its rolling pastures and grazing horses. The cottage is also just a few miles from Tetbury, which must be one of the nation’s bestpreserved country towns – as well as being internationally renowned for its antiques shops and the rural seat of a certain Prince Charles.

The Folly can be rented for a short break or by the week. Teenagers are tricky customers, but the Swiss resort of Laax might just be the answer says Georgie Lane-Godfrey

A

s I carefully pick my way down the sheer face of a monstrous mountain a blur of neon whooshes past me. What appears to be a medieval jester on skis is in hot pursuit. I’m not seeing things, it’s just another morning on the slopes of Laax, the very coolest ski resort in Graubünden, Switzerland. Having recently undergone a reinvention to become the freestyle capital of Europe, Laax is now full of neon-clad, powder-junkie energy.You probably won’t have heard of it. The region of Flims–Laax is

still relatively unknown, despite its reputation for being one of the most snow-sure destinations in the Alps. At just 1hr 40minss from Zurich, it’s close enough to make child-laden transfers bearable, yet slopes are surprisingly uncrowded. Plus with an almost perfect split between the levels of difficulty on the pistes, it’s a practical choice for families with varying levels of ability. When we visited in January, conditions were perfect and the slopes were all but deserted – a skier’s dream. But then, it’s not just the weather here that’s appealing; Laax boasts the largest halfpipe in Europe and enough snowparks to occupy avid snowboarders and skiers for days. The annual Burton European Open snowboarding championship is even held here. We travelled with luxury holiday company Powder Byrne, who have turned family ski holidays into an art form. Focussing on the idea of ‘bespoke experiences’, they’re very good at taking the stress out of skiing: personal travel consultants, private transfers (and flights, should you

wish it) and a complementary ski guiding service for the duration of your stay. This service is not just for the grown-ups; the Freezone Ski Guiding is specifically for teens who want to ski with friends but still need, ahem, adult supervision. These guides will take you down the best runs for the conditions, avoid those annoying bottlenecks and secure the best tables for lunch. They also happen to mainly be made up of rather handsome men in their early twenties, which is guaranteed to put a smile on your teenage daughter’s face… Meanwhile, PB’s Yeti Club can keep pesky younger siblings entertained. Divided up into different programmes depending on age group, the club organises skiing during the day and activities in the evenings – from painting and sing-alongs for tots to bowling and ice-skating for tweens – so that parents can ski in peace. Alongside these programmes run more advanced ski courses such as the Freestyle Course, which teaches how to ride the half pipe, parks and rails, and develops technique for the snow park and freeskiing. Perfect for daredevil teens, classes take place both out on the slopes and in the Freestyle Academy at Laax Base Station. The Academy is Europe’s first indoor freestyle hall, and is filled with trampolines and squidgy foam pits to let pupils practise big air tricks and jumps in safety before hitting the dedicated Fun Park on Crap Sogn Gion. Crap, incidentally, means rock in Romansh, one of the four national

languages of Switzerland, and the local ‘Crap Bar’ in Laax will solicit a snigger out of even the most moody of teens. Further adding to Laax’s cool credentials is the resident Porsche chair lift. A sleek black beauty and world first, it swivels to take you up the mountainside to Crap Masegn at a civilised 45 degree angle, allowing you to enjoy views of the Alps rather than the woman in far too tight salopettes in front of you. It also boasts solar-powered heating, making it one of the few ‘green’ ski lifts in the world. In fact, the whole resort shares the same sleek, design-led feel as the chair lift, from the award-winning rockresort accommodation to the loos at the Rock Bar on Crap Sogn Gion, where the one-way glass lets you admire the Alps and skiers walking past without them being able to see you. Whilst teens might love Laax, parents with more classical tastes will feel at home in adjoining Flims. Sat at the end of a sweeping tree-lined drive, the Waldhaus Flims Mountain Resort & Spa sits on its own private estate bordering the village. Built at the turn of the 19th century, the hotel still maintains much of the grandeur of

the era as is brimming with character. It’s an eccentric kind of place – there’s a dedicated hotel museum – and although some of the décor might be a little dated, it’s all part of the Waldhaus charm. The real draw though is the spa. With six saunas, a floating suite, a huge gym, an indoor swimming pool and an enormous range of beauty treatments, it’s a real beast of a place – which is just as well since the heated outdoor massage pool’s views across the mountains really draw in the visitors. Lazing amongst the bubbles as the steam blurs the alpine scenery, it really is the most fantastic way to soothe sore muscles after a long day of skiing. But if your muscles aren’t sore and the 220km of skiable terrain isn’t enough for you, it’s only just over an hour’s drive to Lenzerheide, a lesserknown resort popular with those looking for something off the beaten British-tourist track. Lenzerheide feels like something out of the 80s,

filled with battered T-bar lifts and Germans in dodgy multi-coloured onesies, yet if you look past this you’ll find a relatively undiscovered gem which is set to be Switzerland’s hot new ski destination. This is thanks to a new ski lift that is set to open in 2014 linking Lenzerheide to its slicker neighbour, Arosa. Filled with wide, cruisey runs and fantastic hotels – the stunning Tshuggen Grand Hotel with its Michelinstarred restaurant and world-class spa being a prime example – it’s no wonder that Arosa got the royal seal of approval (Prince William was spotted skiing there earlier this year). Of course, that’s all great to know, but you’ll most likely have a hard time dragging your teens away from Laax for the day. Or home for that matter. Good luck with that. FREE THINKING Many of London’s free schools are daring to be different and prospective parents are all for it. Amanda Constance looks at what some have to offer.

W

hat was a mere twinkle in Michael Gove’s eye a few years ago has now given birth to an education revolution. Since the Education Secretary gave the first free schools the green light in September 2011, their number has grown to 174 nationwide with many more approved to open in the next academic year. Many of these are already attracting more pupils than they have room for. In a recent survey by the Department of Education, some reported as many as ten applications for every place. It’s a familiar story in London, where there is a critical lack of places at both primary and secondary stages, in both the independent and state sectors. Parents are queuing at the gates of the capital’s free schools, not simply because they don’t have other options. Free schools are just that, and the freedom for parents and educators to set their own curriculum has ushered in some innovative approaches that would have been unthinkable just a few years ago. Maria Evans is the vice-chair of governors at Gladstone Free School, a secondary free school in north-west London that will open its doors to students next September. Previously the director of education at the Royal Shakespeare Company, Evans has more than 25 years experience in art and education and first looked into establishing a school at the behest of other local parents. ‘We’re setting up something enormously ambitious,’ Evans explains, adding that the teaching at GFS won’t deviate much from the national

curriculum. ‘It’s not about changing the curriculum but about teaching it in a different and innovative way. We are looking at how we deliver teaching.’ GFS will be a small school, no more than 800 pupils, a luxury in inner London state education. It will have a mandatory extended day, with classes ending at 5.30 except on Fridays. ‘Enrichment’ will be hugely encouraged and progressive teaching practices, such as moving around the room, experiential learning and lessons outside the classroom, will all form part of the core ethos. And before you imagine this will be an enclave for every Milo and Tallulah in north-west London, think again. GFS will be non-selective and teach mixed ability classes, with pupils drawn from the immediate catchment area. The team behind GFS took inspiration from Greenwich Free School, a secondary on the other side of London that now teaches years seven and eight and aims to have only 700 pupils when it is at capacity. It has a ‘high expectation, no excuses, no shortcuts ethos’, says its head, Lee Faith. The school runs an extended day from 7.45am

to 5.30pm and enrichment activities in the afternoon include Latin and debating. It is already seven times oversubscribed. The Judith Kerr Primary School, in Herne Hill, south London, offers something entirely different. It is the country’s first bilingual state school, with teaching in German and English. It began taking pupils, from the age of four, at the start of this autumn term. Another bilingual free school, The Marco Polo Academy, will be the first English-Chinese bilingual primary school in the UK when it opens in Barnet in September 2014. ‘The emergence of bilingual schools is a good example of how free schools are responding to the demands of local parents and driving innovation in schools,’ says Natalie Evans, the director of the New Schools Network, the charity set up to help people planning free schools. And it isn’t just new schools that are taking up the free school baton. Established schools such as the much-admired Burlington Danes Academy and gold-standard Marylebone Girls are extending their franchise with free schools. BDA will open a primary free school on its 10-acre site next September and Marylebone Boys will open to year seven boys at the same time. What marks out many of the free schools, however, is a return to tradition and academic rigour. When Fulham Boys, a new free school in south-west London held its first open day, 650 people attended. The secondary school is due to open in a temporary home in Fulham next autumn. Built on ‘Christian principles and values’, its website looks like that of a public school. Governors include Barrister Caroline Grieve, wife of Attorney General Dominic Grieve, and Elizabeth Phillips, headteacher at St Marylebone CofE School. This ‘old ways are the best ways’ approach has done well for the West London Free School. The headlinegrabbing school is self-consciously traditional; Classics and Latin are compulsory, discipline is strict and competition is encouraged. Two years after opening, it remains hugely oversubscribed. They are controversial and not without their troubles but, whatever your political stripes, no one can deny that free schools are having their moment.

Some agents will over value properties to win the business, so ask for examples of similar properties that have sold in the area to confirm their valuation, and discuss their marketing strategy to achieve a sale and best price. Going with the highest valuation can sometimes be a mistake. Presentation - The presentation of a property will clearly make a big difference to the level of buyer interest. This is a combination of the property being well presented by the owner, and the marketing agent presenting the property well with good photos, write up, floor plan and location map. The owner should always check they are happy with photos and write ups before marketing, as mistakes can be made. We often ask our owners to de-clutter their properties before we take photos. This may seem obvious but people don’t see their property as messy or cluttered as they often are. This is the reason sales of New Homes achieve best prices. Buyers can see themselves living in a show house, but often don’t have imagination when properties are less well presented. If a buyer needs imagination to look past poor decor or clutter, they will often buy elsewhere. Viewings - My last bit of advice, once you have got the price right, and presented the property nicely (so you have lots of viewings lined up), let the agent do the viewings. They will know the buyers requirements and where the property ticks their boxes. I

grew up in Cardiff in a family that loves property so it seems only natural that I would follow in those footsteps. My father was a surveyor and my younger years were spent either living in my parent’s latest development project or alternatively traipsing around the UK’s wealth of cathedrals, stately homes and architecturally splendid buildings. Cardiff is incredibly vibrant and colourful but it wasn’t long before I heard the call of London and found myself making the inevitable journey down the M4, stopping in Bristol for a short time, before following the path further East into the big smoke. Although I originally settled in Richmond, I soon found myself living in a small one bed flat overlooking Peckham Rye and with a job as a sales negotiator in the Clapham branch of KFH. Fast forward a few years and I now manage the Dulwich Village sales branch, live locally and am the proud father of my smashing little boy called Stan. I find it a real privilege to live and work in an area as sought after as this and all of my team also live here, so our local knowledge is one of our specialities! It’s incredible how well Dulwich has maintained its village look and feel. The Dulwich Estate ensures that the area is sympathetically managed and has gone so far as to preserve one of London’s oldest toll gates, the Dulwich Picture Gallery and, of course, even the original site of the village stocks! Working in property here is always a surprise – one of my favourite stories involves my falling through the floor of a development while valuing it! I landed neatly on the

floor below without a scratch much to my and the vendors surprise! A key factor for families living here is the fact that Dulwich has some of the best education available in South London for both state and privately run primary and secondary schools. The ‘Hogwartsesque’ Dulwich College, which was founded in 1619, is one of the most sought after in London and grandly takes pride of place in the heart of the village. We’re surrounded by greenery with Belair Park, West Lawns, Dulwich Wood and Brockwell Park all nearby while the Herne Hill velodrome, which is one of the oldest cycling tracks in the world, is on our doorstep. The property market has made tremendous strides this year and we’ve seen a marked return in confidence levels among buyers. As a result, prices have risen substantially and in the region of 10% to 15% since the start of the year. We have seen property exceed all record prices and multiple offers and ‘best and final’ bids are common place at the moment. Buyer levels have out stripped those of 2007 and show no signs of diminishing as we approach 2014. With the lifestyle choices available for such a mixed demographic, I expect to see Dulwich continue to grow as more people discover and enjoy the area as much as I do.

he new Help to Buy guarantee scheme is currently only being offered by two groups of lenders. The scheme which requires the borrower to have a deposit of only 5% was introduced by the Government in October, the Government guarantees up to 20% of the loan. The current lenders do not offer this scheme for remortgages where, because of fall in value of their properties, the homeowners are locked into expensive variable interest rates. These “Mortgage prisoners” have limited scope to remortgage their property. More lenders will be joining the scheme in January and it is hoped that the increase in competition will sharpen the rates and extend the offering. Another trend immerging, following the recent property price rises, is surveyors down-valuing the price agreed for the property purchase. This will reduce the amount to be advanced by the lender.
