NOVEMBER Editor's Letter Absolutely’s handiest issue…
W
here do you turn for advice? The internet? A book? Your mum? My own mum is certainly a fount of knowledge but I doubt she’d have many pearls of wisdom on blogging (she’s not very techy, but go to page 49 to learn from an expert). And I’m pretty sure that if I asked her how to turn an old globe into a fruit bowl (page 56), she’d look at me as if I’d gone mad. A fair reaction, I suppose, but these were just two of the things I found myself thinking about trying while putting together our November ‘How To’ themed issue. See, what I’ve realised is that a good piece of advice isn’t just a solution to a problem, it’s also a little jolt of inspiration. This month’s issue – a mosaic of local tips and tricks – will hopefully inspire you make, bake, buy or try things that you haven’t even thought of before, safe in the knowledge that the people offering the adive are neighbours and friends. At the very least it might inspire you to pass on your own pearls. As Oscar Wilde said ‘always pass on good advice. It is the only thing to do with it. It is never of any use to oneself.’ Enjoy! iving in East Dulwich has its plus points: I love the parks, I love the community and, of course, I love the people. If I had to name one downside, however, it would be that non-residents imagine me to be some kind of Dulwich stereotype. I am expected, for example, to indulge certain, slightly ridiculous, middle-class whims. Such as getting into a state if my vegetables are not grown on a co-op allotment within three miles of my postcode. A marrow’s a marrow, as far as I’m concerned. Sometimes, especially when I walk down Lordship Lane and have to dodge a million pushchairs filled with ginger children (why are all babies in East Dulwich ginger?) I feel a bit of defiant pride for not looking like the ‘typical’ Dulwich resident. It’s not reverse-snobbery in any way – citizens, feel free to partake in that finger-painting-with-vegetable-juicetherapy without fear of judgment from me – but when I get one of those Children of the Corn, ‘(not) one of us,’ stares for looking more Hoxton than Boden catalogue, I have to comfort myself somehow. And anyway, while it’s true that I often refrain from engaging in much of the ‘stereotypical’ Dulwich stuff, one thing I do take part in is a twice-weekly Pilates lesson. It not yoga – can’t take it seriously – but it is a rather ‘East Dulwich’ thing to do. We stretch and we bend … and I feel virtuous. After a recent lesson, three of us were walking down Underhill Road with our Pilates balls in our arms (those big beach ball things – you know the ones) when we were stopped by a stranger. ‘Girls, I love those balls!’ he said to us. ‘Check out what you can do with them!’ The man whipped his phone out and flicked to a video. Expecting some side-plank style exercises, maybe some new tricks, we eagerly leaned in. What we got instead was a video of a couple engaging in some energetic sex against a big rubber ball. This is how you do Pilates,’ the man said. We looked at each other and laughed, and as we went on our merry way I wondered if I’d gotten the East Dulwich stereotype completely wrong. What if behind the Bugaboos and organic footwear everyone in Dulwich is a raging swinger and after all these years I’ve been missing out? If nothing else, it would explain all the ginger toddlers. THE PURE GOLD BABY BY MARGARET DRABBLE The Margaret Drabble is covered in suntan lotion. By which I mean the advanced copy of her latest novel, The Pure Gold Baby, the copy that I have used to put this review together, is permanently marked by sticky suntan lotion-ed fingers. It was just impossible to put down! I hadn’t read much by Drabble since the 1960’s, so I approached The Pure Gold Baby a relatively blank slate. The narrator, the ‘I’ of the book, tells us Jess’ story over 50 or 60 years. Jess’ story is also that of her daughter Anna – the Pure Gold Baby of the title. Born in the 1960s, to single-mum Jess, Anna’s innocence becomes the emotional pivot at the core of the book. Set in an enclave of North London, and centred around a group of mothers that Jess knows, the book explores human relationships, responsibility, the crassness of a market economy society and - inevitably - growing old. This is familiar territory for Drabble, capturing the spirit of her brilliant Sixties novel, with an added layer of the wit and wisdom that hindsight brings. For fans of Drabble who may have thought that she’d lost her way, this is a return to form. If you are new to Drabble this is a great place to start. T
he late Gianni Versace claimed that she had the best runway walk he’d ever seen and Karl Lagerfeld lauded her as 'one of the greatest models in the world'. Erin O'Connor however, seems convinced that she looks like a man. ‘I'm utterly androgynous,’ she cries, clasping her hands together in glee, ‘and I truly love it. It has been part of my identity for so long. I've never been that pretty girl, and I wouldn't want to be.’ Certainly a healthy conclusion though you can’t help but wonder whether, in the modelling industry, it was an easy one to have come to. Anjelica Huston (with whom O’Connor shares more than a passing resemblance) reportedly once told her ‘you'll never be pretty but you'll always be magnificent.’ A vote of confidence, undoubtedly, but being told that you aren’t pretty when you make your money from your face must have been a bitter pill to swallow. ‘I suppose, at one point I was invested in that idea, sadly, to pump up some bits and reduce others. I'm not infallible to…criticism. But I feel I got all of that out of my system.’ Moving to Camberwell almost ten years ago, she cites the theatricality of London as a source of comfort and inspiration. It was somewhere that she could embrace the monikers - statuesque, angular, striking, androgynous, masculine even – and bend the industry to her, rather than submit to its standards. ‘I’ve always felt an affinity with Camberwell. It has an artistic edge but is still tree-lined and suburban, like the creativity hasn’t been spoilt by the fact that it’s still very middle class. I think most people migrate to the arts centre, but for me it’s as much about the snapshots of life, the colours of trees against brick walls, the alleyways that disappear off into the darkness. I think a place is defined as much about what is unintentional, as what is intentional.’ Now, seventeen years into her career, having walked or posed for a near endless list of fashion powerhouses – Vogue,

Gucci, Dior, Armani – and become one of the ambassadors of British institution Marks & Spencer, O’Connor is taking what she’s learned and using it to mould a new generation of models. As one of the three mentors on Sky Living show The Face we’ve seen her each Monday evening guiding a team of ingénues through a series of challenges in a bid to outdo the competition, in this case old friends Naomi Campbell and Caroline Winberg. ‘We definitely had to put the friendship aside and move into competitive mode. I mean whatever argy-bargee there was, it was real because you really mean it on behalf of your girls. You want to help them realise their potential.’ Following a well-worn talent show trajectory, the models compete as teams in a weekly challenge. The winners from each challenge not only get to continue in the competition but also to add some impressive work to their portfolios. The

mentors of the two losing teams must then nominate a girl from their own team for possible elimination. ‘I think that was the sting in the tail, as it were, and tough all round. Having to put up one of my own girls for elimination was really not that pleasant, but necessary. There's a relevance to that, it's not just cruel or exploitative for TV purposes. Rejection is a big part of any successful model's career, as ironic as that sounds. It's how you pick yourself up and get on with the job that matters.’ And it seems that rejection has formed an important part of O’Connor’s own career. Not just because of the pressures within the fashion industry but also because of those within the press. Held-up at one time as a poster girl for skinny models, vilified for promoting an unhealthy body image, O’Connor found herself in the strange situation of agreeing with much of the anti-skinny backlash, despite the fact that it was sometimes levelled at her. ‘For years and years we’ve been trying to communicate with the industry as a whole in deciding what a model should look like, trying to encourage fuller shapes and different images of ‘a model’.’ She’s since gone on to set-up the Model Sanctuary and co-found the All Walks Beyond the Catwalk initiative, the former provides help and advice for models in the industry and the latter aims to promote different body types. ‘I remember I was in Los Angeles on a job, and a guy told me what he thought was wrong with me - namely my breasts and nose - on my behalf because he felt like he knew what it was that would improve me. He shall remain unnamed, and it's the first time I found my voice and felt quite forthright about it. I thought, I've spent my own years dissing myself and giving myself a hard time and at the end of the day, I can't really change things and if I did, I'd look like everybody else. You lose what makes you an individual.’ This determination to keep her individuality has served O’Connor well, because as Anjelica Huston predicted, she’s built a career on being nothing short of magnificent. heaven scent Patriotism abounds as Absolutely columnist Lawrence Roullier White tells us how to buy British
F
or centuries the near alchemic skill of creating and capturing a scent was the preserve of a select French few; passed from father to son, it was very much a closed shop. The air of the Parisian salons was filled with fragrances prepared with the wealthy in mind. Then came the French Revolution, which swept away the royals and their court. And riding the winds of change was a new breed of perfumer. No longer curtailed by the whims of the French aristocracy, they travelled throughout Europe, to foreign courts, and with them they took their skills. In London, through the network of licensed apothecaries and barbers, the perfume trade flourished; Lavender Hill in Battersea is where the lavender for perfume and soap making was grown and, being an important port, exotic ingredients flooded in from across the globe. Today British perfumers produce some of the most enviable and creative scents in the world. Seek them out, they are sensational. Ruth Mastenbroek is an architect of aroma, creating scents with absolute precision. Every note, every aspect of her creations is carefully considered. There is nothing haphazard, nothing is a happy accident; Ruth has a vision and she realises it impeccably. This meticulousness really pays off. If you want to feel in control wear her citrusy signature scent. When it comes to buying British, you won't find a more pertinent brand than Union Fragrances. Encased in a steel Union Jack, each
bottle bursts with British derived ingredients. Quince, Mint and Moss , for example, uses quince from Somerset, English garden mint and Irish moss while Gothic Bluebell is full of handpicked woodland bluebells from Devon and Dorset. Head down there and you might be lucky enough to meet the prolific perfumer in person. For me there really is nothing more satisfying than meeting the maker. I struggle to select my favourite scent with this brand (Mandarin and Mint is right up there), so go along and be guided, hopefully, by the lady herself. 4160 Tuesdays is the number of Tuesdays a person will see if they live to be 80, and I would not mind if I spent every one of them chatting with Sarah McCartney about, well, anything really. Sarah is an olfactory lyricist. Her poetic perfumes reference moments in her life and the lives of others. For me,

the sign of a must-have scent is that moment when you find yourself absent-mindedly waving your wrist beneath your nose when you should be concentrating on a spreadsheet. Time To Draw The Raffle Numbers does this to me every time. So sublime that I just want to live in it. Floris is a fabulous fragrance house with a 280-plus year history and, to my mind, its creation, Floris No. 89, is one of the most elegant gentlemen’s colognes on the market. Grossmith dates back to 1835 and three of their re-worked original formulae are still in production to this day. However, it is the newer, Floral Veil, which I find the most captivating. Finally, I couldn’t be more impressed with the first release from Matt Zhuk’s label, Ex Idolo. Thirty Three is one of the cleverest scents of recent years. TURKEY AND COURGETTE SPAG BOL INGREDIENTS: For 4 people 2 x red onions finely diced 2 x garlic cloves finely chopped 2 x carrots finely chopped 3 x sticks celery finely chopped 300g x minced turkey 1 x tsp. cumin 1 x sprig rosemary finely chopped 2 x sprigs thyme finely chopped 100g x cherry tomatoes 400g x Organic tinned cherry tomatoes ½ x pint organic chicken stock 4 x courgettes TO MAKE: Fry the onion in a little olive oil for 10 minutes on a medium heat. Then add in the garlic, carrot and celery and cook for a further 3 minutes. Add the minced turkey and cook for another 5 minutes until the meat is sealed. Then add in the cumin, rosemary and thyme, cherry tomatoes, tinned tomatoes and stock. Bring to the boil then immediately reduce to a simmer. Cook on a low heat for 25 minutes. Season. Using a julienne grater (you can do this by hand but you need to get the courgette very thin like spaghetti) grate the courgettes. Grate them until you get to the soft, seeded centre. Season and set aside. Once the spag is cooked, leave it to rest for 10 minutes. Now plate up some big healthy portions. detoxkitchen.co.uk

A BURNING
ambition to blog? Absolutely: What made you start the blog? Helen Graves: I often wonder this myself and to be honest, it's hard to remember. I was always looking for new corners of the internet devoted to writing about food but no-one seemed to be doing it in a terribly 'real' way. People just made out like everything that happened in their kitchens was automatically perfect, every time. No one seemed to have any stories to tell when it came to recipes and I just thought I'd have a go one day. At least that's how I think of it now, anyway. ABS: How much time did you devote to it when you first started? Has that changed? HG: It has changed a great deal and again, that was a long time ago so I struggle to remember but it was certainly not more than an hour every couple of weeks. Now I spend more time writing about food in general for various publications so I'm constantly [writing], pretty much every day. I might not be on the blog every day but I will be trying a recipe or researching something. At the beginning it was a bit like 'here's a soup I made for dinner'. Then of course I realised – no one cares! ABS: Which aspect did you find most difficult? The techy elements of setting up a website boggle me! HG: I started out using Blogger but became dissatisfied incredibly quickly as it was restrictive in terms of design. I don't know anything about tech either

so I got someone to do the main design and I've picked up bits of html along the way. Not much, you understand, but enough to insert the odd link and picture here and there. You don't need any techy knowledge at all to start on one of the platforms like WordPress; it’s all just a bit of trial and error!
ABS: What is the most important thing for someone to bear in mind if they're thinking about setting up a food blog? HG: Definitely to just write about things you are interested in; if you're forcing it, it will be obvious and other people will quickly lose interest. You need to have something which marks you out from all the other thousands of food blogs out there - you need a unique angle or style. That's the most important piece of advice I can give. ABS: Have you hit any snags whilst doing your blog? Anything that other people who might want to start a food blog should be aware of? HG: Don't be too ambitious, tech wise. As I said it's easy to start with WordPress or TypePad or Blogger, but if you don't know what you're doing you’ll run into trouble if you start faffing about with html yourself. I once ballsed-up my entire site doing that and had to get someone in to fi x it. A terrifying few hours! ABS: What most inspires you about SE London? HG: I think it's the people. Obviously there are certain areas I love more than others and we all know I love Peckham. I've lived here for 8 (maybe 9?) years now and it's the energy of the place that I adore. This comes from the people. Peckham is now 'trendy' and people are worrying about gentrification. The main problem with this is that people may bring money into the area but they will bring it

FOOD & DRINK in a way that transplants another piece of London into Peckham. That is not what Peckham needs. We need our own resources to be used and developed, not painting over. SE also seems so much leafier to me than other areas of London! ABS: Do you have a favourite SE eatery? Or any tips for great places that you know of? HG: I've just written a guide to my favourite places in Peckham and Camberwell and you can check out my SE London page, they’re both on the blog. I also love Toast ED in East Dulwich and Franklins is great. I can spend hours in both. Brockley Market of course deserves a mention! It's incredible what they've done with that little car park space. ABS: What made you want to write a book focusing on sandwiches? HG: Well, I'm a sandwich addict. I write a second blog about them (The London Review of Sandwiches). They are the perfect food stuff, appropriate for any time of day. 101 Sandwiches is a collection of the finest from around the world, and it was hard to narrow them down. I have 72 which didn't make the cut. My publisher, Dog n Bone, read my blogs and approached me to write the book. ABS: Was writing your book much different to writing your blog? HG: Well yes, there was obviously a word limit and so I had to cut bits out in order to fit everything in. Also the book is simultaneously published in the US so coriander became cilantro and all that jazz, which was weird. The wonderful thing about writing a blog you see is that there are no constraints whatsoever. I can write exactly what I damn well like, and I do. ABS: Do you have a favourite sandwich from the book? HG: A tough one, this. Really tough. I basically give a different answer each time because with sandwiches, it really depends on what mood I'm in. Right now I'm thinking it's hard to beat a good fried shrimp po boy (corn coated deep fried shrimp with pickles, a highly seasoned mayo and lettuce in a sub roll mmmm). Then again I do love me a lobster roll. DAMN! I love a lobster roll.

Jerk Chicken Sandwich with Pineapple Salsa
T
o make the marinade for the jerk chicken, put all the ingredients, except the chicken and soaked allspice berries, in a blender and whizz together until smooth. Smother the marinade over the chicken legs, rubbing it in well. Refrigerate for at least 4 hours, or overnight. Allow the meat to come to room temperature and brush or wipe off most of the excess marinade before grilling the chicken on the BBQ. To set up your BBQ for the indirect cooking method, light the coals in the middle in a kind of volcano shape, then wait for the flames to disappear, leaving you with coals that have a light gray ash coating. Move them to the sides. This gets the indirect heat circulating around the kettle when you put the lid on. I find it helps to also brush the grate with a little oil. Chuck the soaked allspice berries into the coals before you start cooking, if using. The chicken pieces will probably take about 30 minutes to cook (although it depends on size)—always check that the juices run clear before serving. While the chicken is cooking, make the pineapple salsa. Mix the honey with the juice of 1 lime in a bowl. Mix this with all the other ingredients in a larger bowl, plus some salt and pepper. Add more lime juice to taste, if necessary. To serve, split the rolls, fill with the hot cooked chicken meat (discarding the bones), top with the salsa, and serve.
Makes 4 INGREDIENTS FOR THE JERK CHICKEN: 11/2 tbsp allspice berries, ground to a powder 1/4 cup (55g) dark brown packed (muscovado) sugar 4 garlic cloves, peeled 1 tbsp fresh thyme leaves A bunch of large scallions (spring onions)—about 5 1/2 tsp ground cinnamon 1/4 tsp ground nutmeg 1/2 tsp ground ginger 1/2 tsp ground cloves 3 fresh Scotch bonnet chilies, seeded Juice of 2 large limes Slug of dark rum 1 tsp sea salt Black pepper, to taste 4 chicken legs (or other chicken pieces of an equivalent size) Extra allspice berries soaked in water (optional)
FOR THE PINEAPPLE SALSA: 1 tsp runny honey Juice of 1–2 limes 1 small fresh pineapple, peeled, cored, and finely diced 1 small red onion, finely chopped A small bunch of fresh coriander, finely chopped 1 red bell pepper, seeded and finely chopped 4 white rolls, to serve

WHAT A CHEAP SKATE…
Don’t just go for the same old type of fish, in the UK we're spoilt for choice! There’s John Dory, Dover sole, mussels, scallops or monkfish to name just a few. For great value, why not try gurnard? It’s perfect in a bouillabaisse or in a traditional fish soup. Mackerel is just as delicious, lightly grilled or seared, with a side of salsa verde. Or, for a treat, go for Cornish crab or lobster. Don’t forget though, it’s important that we protect our oceans and marine habitat, an easy way to do your part is to visit the website fish2fork.com where you can find out whether the fish you are buying is sustainable.
Fish isn’t always expensive - in the UK there is a wide selection of cheaper, but equally delicious, fish available. Mackerel and sardines are two great examples. They’re wonderfully easy to cook, just grill them and serve with a herb sauce or olive oil and a squeeze of lemon. You can also try a lemongrass and fresh chilli salsa on the side if you want more of an Asian touch.
IT’S NOT REINVENTING THE WHALE… Fish shouldn’t be complicated. They are often delicate in flavour and texture so don't overcook or overseason - a classic mistake! You can always add seasoning once it is done. Grilling or steaming is the best way for the fish to retain its flavour and nutrients. And don’t forget to discard all the fish remains in a separate bag!
AN OLD SOLE… Fresh fish is always best and ideally you’d pick it up from your local market (nothing beats Billingsgate) but you can also find good fish in a supermarket. Be sure to look out for the special offers, they change weekly. When choosing fish look for clear eyes, that’s the easiest way to spot freshness. The foolproof method, however, is to check the gills - they should be bright red. Also you can press the fish with your finger, if it springs back to its original form straight away then it’s fresh.

‘M
y mum used to say that if there’s too much left, then it wasn’t good and if there isn’t any left then I didn’t make enough.’ This phrase, my friend and I agree, has sealed it. We’ve officially met London’s most amiable waiter. He nods sagely at our plates as he takes the remnants of our main (a few slithers of venison and some mash left, in case you’re wondering). We smile, patting our stomachs and puffing out our cheeks in the international sign for ‘I ate too much’. ‘Did you see how quick he was with the wine?’ My friend gestures to her full glass. ‘I know! And did you see how he recommended exactly the desserts that we would have wanted anyway? Like Yoda!’ I shoot back. Alright, we might be a bit pissed. This does not take away from the fact that he is a particularly pleasant waiter – quiet but warm, knowledgeable but not officious – and (quite
obviously) attentive with the wine. He keeps up a friendly and unintrusive patter throughout the meal so that by the end - well, see above. One can only assume that the particularly jovial atmosphere in Chapters (lots of people, lots of laughing) is down not just to the food, which I’m getting to, but also to the quiet enthusiasm of the staff. Our starters are a salad of chicory, pear and walnuts with a blue cheese dressing, which crisp and fresh as it is, doesn’t come close to the plate-lickingly
good scallops with celeriac and apple purée and chorizo jam. The former is a good dish, the latter a great. For main we share the day’s special - a haunch of venison - which comes with an appropriate amount of fanfare for such a handsome piece of meat. At one point we’re even congratulated on choosing it, hurrah for us. Languishing pinkly on a wooden board, surrounded by generous heaps of mash, cabbage and veg and accompanied by three different sauces, it is full of bold, arresting flavours. The rich gamey meat is the star of the show, just bloody enough to be succulent but sufficiently cooked-through so as not to put off someone like me who isn’t the biggest fan of red meat. From reinventing an old globe to turning a teapot into a planter, Brixton-based author Ellie Laycock gives Absolutely her top tips on how to upcycle

Clean the globe to remove any dust, dirt, or grease. Prepare your work area for spray painting. Mask off the globe exterior with masking tape and old newspapers. Working in a wellventilated space, spray the interior with your spray paint. Let dry. As the paint dries it may slide down the globe, so keep applying thin layers and allowing them to dry until the interior is covered.

Mask the top edge of the glass ashtray and spray the inside with the spray paint and let dry. Repeat if necessary.
GLOBE FRUIT BOWL Vintage globes are having a resurgence in popularity at the moment and whilst country borders and names evolve, they may not be up to date as an educational aid but can still be used as a fantastic decorative object. Turn a hemisphere into a large fruit bowl or even a hanging light pendant for a touch of globetrotting glamour. YOU WILL NEED: Vintage globe (preferably tin or cardboard but you can use plastic too), Hacksaw, Sandpaper, Masking tape, Old newspapers, Spray enamel paint , Vintage clear glass ashtray or similar, Hot glue gun

Remove the globe from any mounting. Cut the globe in half using a hacksaw, holding it carefully. For tin globes, use a metal saw blade. Use the equator as your guideline and if your globe has a “lip� around the middle, cut above this so you keep it as the edge of your bowl. Sand the cut edge to get rid of any sharp edges.

Turn the ashtray upside down. Place the globe on top, taking note of where the two meet and apply hot glue to this point. Reposition the globe and press firmly down to assemble the bowl.
VARIATIONS Make a pendant light shade using the other hemisphere. Decoupage the inside of the globe bowl with paper maps to continue the look.

TEAPOT HANGING PLANTERS It’s always a sad moment when a beloved teapot becomes redundant after getting a chip or a crack, but with this simple idea you can turn it into a clever planter and give it a completely new lease of life. Build up a collection of fancy chipped china and group them together on the patio, stagger them up garden steps, or simply hang them up for a whimsical display. YOU WILL NEED: Teapot with lid, Garden wire, Wire cutters, Dowling (or similar), Long nails (5in/12cm long or more), Hammer, Potting compost and plants, Gravel for drainage (optional)

Cut a length of garden wire about 40in(1m) long and thread one end down through the teapot spout so that it emerges inside the teapot.

Now simply place your plant pot in the teapot, adding some gravel in the base for drainage, if needed, or planting in potting compost.

Reach inside the teapot, take hold of the wire, and gently pull it part way through so that there is some slack to work with. Take a piece of dowling about 2in (5cm) long and wrap the wire around the center and tie it off. You could also use wooden lollipop sticks or even cotton bobbins or large buttons – anything that will sit across the inside of the spout and stop the wire from coming out.

Pull the wire back gently so that the dowling meets the inside of the spout, then take the other end of the wire and thread it through the handle. Wrap the wire around itself and trim off any excess with the wire cutters.

Hammer a long nail into the wall as a hanging hook – the nail should protrude out from the wall so that the teapot will hand straight down and not lean in toward the wall. Position the wire close to the nail head. To adjust the height that the teapot hangs, skip step 3 and adjust the length of the hanging wire before fastening it off on the teapot handle once in position.

DIY demijohn lamp and fabric-covered lampshade
bands around the base before squeezing it into the bottle neck. To secure it all in place wrap a small piece of heat resistant tape along the join - and don't worry if it's a little untidy, because the lampshade will hide it.
STEP 6: Fold over one end of the fabric to create a neat edge.

YOU WILL NEED: • Demi-john (check out laboutiquevintage.co.uk/blog for a wide variety) • Plain lampshade • Bottle lamp adaptor - available in any good electrical store • Fabric • Ribbon trim • Paper and fabric scissors • Elastic bands • Lightbulb • Pins • Heat resistant tape • Repositionable spray adhesive • Pencil • A large piece of paper • X-Acto knife
STEP 2: Now comes the fun part - customising your lampshade with fabric. To start, you will need to create a paper pattern for your fabric. Place your lampshade on a large sheet of paper and trace around both the top and bottom edges - it's best to start at the seam of the lampshade so that you have a guide as to where to finish.

STEP 3: Add half an inch around the pattern to allow for a small excess, and cut out your pattern. STEP 8: Using an X-Acto knife, trim off any excess fabric across the inner lip of the lampshade.
STEP 9: Cover up the messy inside edges with a piece of ribbon trim (which you can also spray with the adhesive).
STEP 4: Then pin your pattern to the reverse side of your fabric (just as you would with a sewing pattern) and cut out carefully.
STEP 10: Attach your lampshade to the demi-john lamp base, screw in the lightbulb, and voila - a beautiful glass lamp for next to nothing! STEP 1: The first step is to put together
your demi-john lamp base. I searched online for lamp adaptors but in the end I found one in my local electrical shop for just a few pounds. If you find that the lamp adaptor is a bit on the small side - as I did - you can pretend to be MacGyver by wrapping a couple of elastic
STEP 5: Now the messy bit - glueing the fabric to the lampshade. I used a repositionable spray adhesive so that I had time to correct any errors. Spray the reverse of your fabric thoroughly (best to do this bit outside, if you can) and make sure all the edges are fully covered.

Sarah Gilbert takes a Journey through Khmer Culture in Cambodia
ipping on a ‘Femme Fatale’ – Jackie Kennedy’s favourite mix of champagne, crème de fraise sauvage and Cognac – in the Elephant Bar at Raffles Grand Hotel D’Angkor in Siem Reap, it was hard to believe that just a few hours earlier we’d been mud-spattered and sticky, scrambling through the Cambodian jungle. We’d been exploring the remote remains of the lost city of Mahendraparvata, which is so lost that it’s still swathed in vegetation. The hotel opened its doors in 1932 and with its wrought-iron lift, the black and white marble lobby and polished elegant Khmer furniture, has managed to keep much of its French colonial charm, albeit with some contemporary updates. Siem Reap is the starting point for exploring the dazzling temples of Angkor – the world’s largest complex of sacred temples
and a Unesco World Heritage site – and our days were skilfully planned around early starts, visiting the more popular temples minus the crowds and heat. Angkor Wat is the jewel in the crown. Built in the 12th century, it’s believed to be the world’s largest religious building, with one kilometre of bas-reliefs that tell tales from Hindu mythology and the Khmer Empire. But it’s not the only masterpiece: the immense walled city of Angkor Thom is home to the stunning Bayon, its 54 towers each topped with colossal heads depicting four faces of Buddha. Ta Prohm’s crumbling temples are wrapped in the ruthless embrace of strangler figs, and the elaborate carvings of the diminutive Banteay Srei are unmissable. One afternoon, renowned American photographer John McDermott, whose dramatic black and white prints of Angkor
are for sale in his gallery at Raffles, took us behind the scenes at the atmospheric temple of Preah Khan, where we put his professional tips to good use as we watched the setting sun turn the temple walls to gold, with hardly another tourist in sight. That evening, the apsaras – the dancers from the celestial Hindu court of Indra – stepped off the temple walls and came to life on the stage in Raffles’ garden, with their glittering costumes and graceful gestures. Khmer is the country’s original culture and can be traced back to the 9th century AD. But in the 1970s, the brutal regime of Pol Pot and the Khmer Rouge, as well as killing millions of Cambodians, tried to obliterate all traces its artistic, culinary and musical heritage. The frenetic capital Phnom Penh, may be changing at breakneck speed but The Raffles Hotel Le Royal, built in the 1920s,

remains a lemongrass-scented haven of colonial sophistication, its lush gardens and swimming pool a peaceful oasis from the chaos of tuk-tuks, motorbikes and cars that choke the streets. The hotel was once a safe haven for journalists during Pol Pot’s merciless regime. We visited Tuol Sleng, a former school that became the city’s main internment camp, where the cramped cells are still stained with blood. We talked with 72 year-old Bou Meng, one of the few remaining survivors. He was saved by his ability to paint and spent his days replicating a photograph of Pol Pot – his wife was not so lucky. Choeung Ek, 10 miles south of the city, is one of the notorious ‘Killing Fields’ where the Khmer Rouge butchered fellow Cambodians before throwing their bodies into large pits. At its centre stands a 40 metre-high glass stupa, packed with skulls and bones as a testament to the horror.
After a gruesome reminder of the country’s darkest time, a visit to the charity PSE – Pour un Sourire d’Enfant – focussed on a brighter future. Here, we watched a heart-wrenching film about young children forced to forage on a city centre rubbish dump, before it was transformed into a school and training centre, giving even the most disadvantaged the chance of a better life. Indeed, some of the original children helped by PSE are now at university. Since the demise of the Khmer Rouge, Cambodians have strived to reignite Khmer culture and Siem Reap is at the heart of the country’s burgeoning arts scene. Now chic boutiques and galleries stock the work of native and expat artists and designers, nurturing local talent and preserving traditional crafts: At Theam’s House, Cambodian artist Lim Muy Theam updates traditional handicrafts with his neon-bright sculptures, while the
French-owned Wa Gallery stocks funky homeware and jewellery from around the region. And a tuk-tuk ride from the centre, Artisans d’Angkor sells beautiful silk clothes, bags and soft furnishings made in its own on-site workshop. Back at Raffles, the perfect antidote to a long, hot day pounding the pavements and exploring dusty temples was a trip to the spa for a relaxing massage and the traditional Khmer Herbal Body Wrap, which uses local ingredients, such as turmeric, galangal and lemongrass. Later, we indulged in a Khmer feast at the elegant Restaurant Le Grand, and raised a glass to a new chapter in Cambodia’s history.

State-funded boarding schools are back in fashion with Eton’s headmaster leading the way, reports Amanda Constance
he English boarding school. For many, it’s a term that conjures up Dickensian institutions where the upper classes send their offspring to be trussed up in top hats and tails, deprived of love and decent food, and then released, years later, to run the country. Tony Little wouldn’t agree. The headmaster of Eton College is a vociferous advocate of a form of schooling that many regard as archaic. He believes that boarding encourages the development of both self-confidence and a sense of purpose. Though clearly offering an above average education at Eton, the money in question is an awful lot, with basic annual fees coming in at more than £32,000. But Little believes state-funded boarding schools can deliver much of what Eton can – and for far less money. To that end, he is currently in talks with ministers about the creation of a national network of state boarding schools. ‘In Britain, we have an internationally recognised approach to education through boarding. In the state sector, it has only been in the last year or so that there has been a growing realisation of how well this can work for young people. I think we would benefit nationally from having a good quality boarding network across the country, close to where young people live. With such a network, there’s a good chance exam results would go up.’ At present, there are 34 state boarding schools in Britain. The buzz about opening more can be seen in the marked rise in applications for boarding status from academies, educational charities and free schools. In the first four months of 2013, the State Boarding Schools’ Association (SBSA) said it had received more than 20 applications from those interested in opening new institutions. This compares with
has plans to open a £17m ‘Eton of the state sector’ for 600 inner-city pupils in the village of Stedham, West Sussex. And next September, Eton will open Holyport College, the first free school sponsored by and modelled on Eton, in the village of Holyport, near Maidenhead, Berkshire. Eight miles away from Eton itself, it will eventually take 225 boarders and 275 day pupils, who will use many of Eton’s facilities, including its magnificent sports grounds. Not surprisingly, more than 700 families have registered their children – even though some are only two years old. ‘If I could bottle it, what I want to come out of Holyport is exactly what I see here [at Eton],’ says Tony Little. ‘Young people coming out with this sense of self-worth who are going to be engaged citizens, who believe in the art of the possible, who roll up their sleeves and get things done.’ For more information visit sbsa.org.uk

These new schools differ from traditional fee-paying boarding schools by charging only the cost of boarding, reducing the demands on parents’ bank accounts from an average of £30k a year to a more manageable £10k. According to Janette Wallis, senior editor of the Good Schools Guide, the recession is forcing cash-strapped parents to shop around and many ‘feel there are better state opportunities available than in the past.’ Ten thousand a year may still a substantial outlay but it often cancels out childcare costs. There is also a recognition that boarding has changed
dramatically from the days of ‘fagging and flogging’. The new, modern institutions take pastoral care as seriously as academic achievement and most offer weekly boarding, which can be ‘an attractive proposition for working parents,’ according to Hilary Moriarty, director of the Boarding Schools’ Association. Three academies opened boarding facilities last year, with five more announcing plans to do the same. The Wellington Academy in Tidworth, Wiltshire, sponsored by the £30,000-a-year Wellington College, also offered boarding places to 100 pupils in 2012. And Durand Academy in Stockwell, southwest London,

DON’T WORRY HE’LL GROW OUT OF IT… WON’T HE? A sensory profile might sound like something an astrologer tries to sell you, but here Ranji Goodwin tells Absolutely how identifying your child’s can improve their well-being and even their academic performance.
M
ost parents in diverse and culturally rich London can, at times and perhaps inadvertently, compare their child with peers. While this is perfectly natural, the comparisons do tend to hone in on weaknesses. ‘Why can’t he sit still? Why can’t she tie her shoelaces? Why doesn’t he like the sand pit? Why won’t she eat Satsuma? Too rough, too timid, hates sport, hates school? As parents we worry about the repercussions that these difficulties might have in future years. The question is, do we enforce structure from the start - insist that behaviour conforms to ‘norms’ - or should we excuse it as being part of the child’s innate character? We’re all aware of the importance of a loving environment to grow up in, developing good nutritional habits and the need for active lifestyles, these are parental no brainers. We should, however, also consider a vital component that makes us who we are, our sensory profile. We all have distinctive sensory preferences that make up our profi les. ‘Sensory processing’ (sometimes called "sensory integration" or SI) is a term that refers to the way the nervous system receives messages from the senses (hearing, vision, touch, movement, body position, smell and taste) and turns them into appropriate motor and behavioural responses. SI helps us to achieve the right level of alertness, excitement, and focus for different tasks. For driving our cars, for example, we need to adjust our brain to be more alert and focused than when we are watching TV. Instinctively adults will hold a young child’s hand on a crossing, because they assume that their
won’t engage in, and the stimulus (or lack of) can make them anxious and off task. Some are overlooked and others get into trouble at school for ‘not listening’. Behavioural, emotional and socialization problems are not unusual for children that are experiencing SI issues. Kids can spend lot of energy trying to override the sensory feedback that is distracting them. This leads to fatigue and frustration, low selfesteem and at times academic under performance. Paediatric occupational therapists specialising in SI can, through assessment and therapy, treat the underlying cause of the sensory processing system that is ‘offl ine’. It is an effective treatment which helps the child achieve a more regulated sensory profi le that remains unique but also allows them to be more open to new experiences – experiences that perhaps they couldn’t or wouldn’t face otherwise. London is a vibrant, diverse city – make sure your children can enjoy it! sensory feedback and judgement are not mature enough to contemplate all the risks and motor planning involved in the task. Processing information properly allows us to feel safe, which in turn allows us to develop socially and emotionally and to plan and execute tasks efficiently. Kids with skewed profiles can be under or over responsive to sensory stimuli. They may, for example, hate or love certain textures and tastes, they may avoid or seek out opportunities for movement. They may be wary of or more attracted to sound and light sources. When this is the case, children can become rigid in what they will and

irst we sat down with the Herne Hill School Councillors, who kindly answered our questions over lunch in the headteacher’s office. What is your favourite topic at school? SAM I like numeracy and working through the maths books JASMINE, OLIVIA AND CAETLINN are enjoying the current topic of the Great Fire of London. Jasmine likes writing a diary as if she were living in London at that time. Olivia and Caetlinn find it exciting and frightening in equal measure. LUCA AND WILF both like Art best for the painting, cutting and all the fun they have making things. What is your favourite book that you have read this term and what did you learn from it? OLIVIA ‘The Strawberry Jam Pony’. An evil man locks up ponies and an adventure happens to rescue them. JASMINE ‘The Mixed Up Wishing Well’. People get the wrong wishes so it is funny. Luca ‘Sam Snowflake’. Sam thinks his dad won’t come back but he comes back with a nice surprise. Caetlinn. ‘Amelia Jane’. When she is naughty, the toys play tricks on her to pay her back. SAM ‘The Marvellous Mysterious Book About Nature’. It is full of facts and tells how snakes use their fangs and how animals get their food.
What do you like about your school? JASMINE people care and share and we do Golden Time. In Golden Time we spend 20 minutes playing with special games and toys to reward us for being well behaved. SAM I like the big playground, learning lots of stuff and making friends. We also get some extra playtime if we finish all our work. OLIVIA kind teachers who teach us to be clever. I also enjoy school trips and performing in school plays. CAETLINN I love Golden Time. Together the children all agreed that they liked looking after people, Friday afternoons when they either do field sports or swimming and Molly, the school dog. (Molly is the director’s dog and was in the room when the questions were discussed.) What are you most proud of that you and your friends and teachers achieved this year at school? SAM being elected as a School Councillor and playing the cymbal in our performance of the South African National Anthem. JASMINE the fact that we collect money to buy school uniform for some children in South Africa so they can go to school looking smart. WILF being elected as a School Councillor by my class even though I only joined Herne Hill School this September. It happened in the first week of school which was very exciting. hen we spoke to a wonderful group from Rosemead Prep School, here's what they told us. What is your favourite topic at school? OLIVER Art because there are no complicated rules involved like in English and Maths. You can truly be yourself BEN History because I find it interesting to discover the differences in a time period, such as the Tudors. I remember in Year 4 learning a catchy rhyme to remember the eight wives of Henry V111. History tells the story of us. ROSIE English because I love writing and reading, right now I am working on a story called ‘Elizabeth’. I am inspired by my English lessons. What is your favourite book you have read this term and what did you learn from it? LILY ‘A Dog called Homeless’. This book was beautiful, heart breaking and wonderful. I learned that talking doesn’t make things happen, however much you want it to. AMELIA My favourite book I have read this term is ‘Ruby Redfort Take Your Last Breath’. It widened my vocabulary and informed me on important life skills, such as what to do when one comes face-to-face with a shark. What do you like about your school? OLIVER On of things I love about my school is the ever changing lists of subjects and
topics we study each year. LILY I enjoy Rosemead because it really does make you laugh and smile. With so many clubs and activities to choose, outstanding teachers and music staff available to lead you to academic and musical victory. Best of all the lunches. I highly recommend the shortbread cookies. A Rosemead child is a happy child! JAMES I love Rosemead. I enjoy all the teachers who help us travel on our journey, even when we reach our goal they help us go farther. ROSIE What I like about our school is the new art studio. There is so much space and freedom. It is very decorative and makes you feel like you are in a dream when you walk in. Whenever we are in the art studio I give it my best. What are you most proud of that you and your friends and teachers have achieved this year at school? OLIVER Friendships. LILY The thing I am probably most proud of is all the hard work and results the pupils are teachers achieve. AVA Since starting this academic year my friends and I have achieved higher marks in our practise tests. The teachers and pupils have identified where we need to improve and that has helped us all gain higher scores. INTERNATIONAL RELATIONS Do you know the South African national anthem? Us neither. The children at Herne Hill School would put us all to shame. Since 2005, when the school formed links with Khanya Primary School in Cape Town, the children have been learning more about South African culture. As well as supporting the poor South African school, there have been exchanges between the two which culminated at the beginning of October with the visit of Thandeka Jafta and Myrtle February (pictured above) from the Western Cape Education Department.
This month we’ve been charmed by The Villa Pre-Prep School and Nursery. The school building is a Victorian house, the playgrounds are walled gardens and the food is all organic and home cooked - heaven. Our favourite lesson? Same as the kids, drumming! I
have been in the property market for most of my career. My family business is in the restaurant sector, so working face-to-face with the public is something that came naturally to me, and from this experience, coupled with my love of architecture and property, it seemed that estate agency was the perfect fit. I started out in Notting Hill where I learned the trade, it was a wonderful place to start and a great place to learn given that the competition is high and the majority of properties are leasehold. After a successful five years working there I decided to come back to my natural home of South East London. We opened our first office in Dulwich on Woodwarde Road, which is surrounded by beautiful period houses and has a very nice community feel - a perfect place to start. Honor Oak Park followed soon afterwards, and being only two miles from Dulwich this has allowed us to expand into other areas. Two miles in the opposite direction is the West Dulwich office that offered the final piece in the puzzle to unlock almost all the SE postcodes. A phenomenal change is the best description for South East London nowadays, it seems it is fast becoming the place to be! With house prices still relatively affordable compared to the rest of London, it seems people are flocking to register from all over, even from North London – which was unheard of in the past. A major catalyst to this change has got to be down to the introduction of the Overground line, that’s the Orange line or Ginger line as it is affectionately becoming known. If you look at an aerial view of the area, you will notice an abundance of green open spaces, from local parks
such as Dulwich, Peckham Rye and Horniman Gardens to the woodlands of Dulwich Woods and the Forest Hill nature reserve, which, in my opinion, are the hidden gems of our area. Good schools and a great local community are other reasons people are flocking to this area, and people here all seem to be interconnected in one way or another. The normal six degrees of separation is more like four here! Being close to Kent and the coast also has its benefits; flying down to the Garden of England for a weekend can take less than an hour. As a big foodie, my favourite places tend to involve anywhere that sells food! For good oriental cuisine the Begging Bowl in Bellenden Road has to be up there, with a good selection of dishes that are full of flavour and colour. Although there is usually a waiting list to be seated at the Victoria Inn pub, the wonderful food makes the wait much easier to bear. The best gastro pub grub for me has to be the Palmerston on Lordship Lane, a favourite of mine for lunches with clients and suppliers. I am also a fan of our local delis, La Gastronomia and Hills and Parks, they are literally next door to all three of our offices, which makes lunchtime great fun. Due to growing up in South East London I have a vast knowledge of the area, I spent my early days in Blackheath, and the Village effect took to my heart from a very early age. I guess Dulwich and its surrounding areas remind me of my fond childhood memories.

The extra space is very much needed as Heber is oversubscribed, and the afterschool activities have been quite limited up to now due to lack of free classrooms. I’m very proud to be part of this project, which will give a boost to extra curricular clubs and the SEN help that future children will be able to experience at Heber School.” The refurbishment of the schoolhouse would not be possible without the support of local businesses who donated goods, services or discounted items.
