W

hat do you think of when you hear the word ‘art’? Say it to yourself and consider it: art.* Portraits, sculptures, galleries? Hockney, Turner, Leonardo? Many might imagine its more traditional forms, but art is so much more than that. I realise I’m not saying anything particularly groundbreaking here, but for the first time ever I have properly considered how art seeps into our daily lives without us even noticing. And I’ve learnt it through compiling this issue. Take, for example, the Sex Pistols bass player, Glen Matlock (who we interview on p.30). His art – punk rock – and the associated ‘swagger’ image that went with it, never saw a gallery (well, at the time) but ruffled the nation’s feathers all the same. Creative director for The Prince’s Drawing School, and painter, Catherine

Goodman, argues in this issue that taking a picture with your iPhone is basically ‘drawing’. Artist Natasha Law finds art in someone getting their head stuck as they take their clothes off, whilst TV chef Andy Bates reveals a passion for the craft of cooking brisket. It’s not rocket science, but there is art in possibly everything we do. For that reason, I thought it appropriate to dedicate this issue to art, to celebrate something that we have done: given our magazine a brand spanking new design. THE CURIOUS INCIDENT OF THE DOG IN THE NIGHT-TIME Directed by Marianne Elliott

A

novel about a boy with Asperger’s syndrome in which he attempts to solve the mystery of who murdered his neighbour’s dog, and in the process, uncovers a greater mystery about his own family, isn’t the most obvious choice for a stage adaptation. Despite the fact that (or rather, because) the Mark Haddon novel was so loved by so many, the stage adaptation was widely expected to be a disappointment. It couldn’t be done, everyone said (literally, everyone). And then literally everyone ate their words. Last year it swept through the Olivier awards, leaving a trail of disappointment in its wake: Best New Play, Best Actor, Best Director... Now it returns with a new cast in a new venue and a big reputation to uphold.

This time around, Graham Butler plays the lead, Christopher. He is on stage almost throughout the entire show and his performance, with all its ticks and nuances, is particularly commendable. He sweeps his hair and fiddles with his T-shirt, his gaze roves out across the stage and you can’t take your eyes off him. The supporting cast are also very good, and often very funny. This seems to be something that isn’t often said about the play, but there are many laugh-out-loud moments, especially during the first half, which make the emotional crescendo that comes later all the more heartbreaking. The staging and set, on the other hand, are often commended and rightly so. You are drawn into Christopher’s head by the sheer force of Bunny Christie’s set, which for all its bells and whistles manages to work with the cast, rather than against them. A thoroughly enjoyable watch. ◆ By Alexandra Jones

rare treat from one of the 20th century’s most underrated writers A Pleasures and Landscapes chronicles Sybille Bedford’s adventures through Europe over 30 years. She takes us on an enchanting journey dropping into Capri to meet the charismatic war journalist Martha Gellhorn, third wife of Ernest Hemingway. Having stayed up all night with Gellhorn, to watch the dawn break over Capri’s rooftops, we set off for Venice. We sweep across the watery city’s mysteriously beautiful piazzas at night, enjoying its decadent splendour and epicurean feasts. Soon we depart again for a tour of the vineyards of Bordeaux and the landscapes of Yugoslavia. In these delightfully jumbled recollections, mainly written in the Fifties and Sixties, Sybille tantalises our taste-buds with descriptions of delicious French and Italian cuisine, generously laced with cream, truffles, foie gras and aspic. A connoisseur of claret since the age of 11 when her eccentric father taught her to distinguish rare vintages, never doubting that little girls possess a good palate, Sybille pursued her passion for fine European wine and food all her life. Her last years were spent living in a flat with a small garden and a large plane tree in Chelsea. A hedonistic pocket-sized summer treat. Perfect holiday reading! ◆ By Alice Coke

DRAWING CONCLUSIONS BP Portrait Award-winner and artistic director of The Prince’s Drawing School, Catherine Goodman, talks on preserving Rossetti Studios and the difference between male and female painters W o r d s C at h e r i n e H a l e s

G

etting hold of Catherine Goodman is no mean feat. Juggling duties as artistic director at The Prince’s Drawing School, and an exhibition at the National Portrait Gallery, Portraits from Life, makes Catherine an archetypal ‘busy person’. When I do eventually get hold of her, her reassuringly, non-flustered voice informs me she and her graduating students are currently outside, sketching in the Tuscan countryside. ‘We’ve got a few friends of the school here, a few art critics, professional painters and some of last year’s graduates. So everybody is out working,’ she says. Catherine founded The Prince’s Drawing School in 2002, partly in reaction to the decline in ‘unfashionable’ life drawing courses in art schools. ‘The Royal Academy and the Slade, who both had very active life drawing rooms, were closing down and observational drawing was becoming increasingly difficult to find at a serious level. So we set it up. The Prince supported the venture with incredible generosity.’

I THINK THAT a lot of the time men WANT WOMEN TO PAINT LIKE MEN Catherine has sometimes been described as the Prince’s ‘unofficial art advisor’ but she is quick to debunk this. ‘No, I don’t advise him. I’ve worked with him for 25 years so clearly we talk often about painting, but I don’t advise him. He’s got lots of people to do that.’ It is clear, however, that the Prince maintains a high opinion of Catherine, calling her a ‘damn fine artist’ earlier this year. ‘Oh, right, I didn’t hear that but very good!’ she says when I mention it, pleased but unfazed. The first studio in Shoreditch became what Catherine refers to as the ‘mother ship’ and is now one of four across London. ‘The Chelsea studio is in Sydney Close Studios. We’ve got one big teaching studio there that belonged to the sculptor Arnold Machin, who did The Queen’s head on the stamp. It’s always packed.’

Indeed, the slump in life drawing seems to have passed, with the Soho studio attracting 1,000 students a week. When I ask if preserving the art of drawing is an important aim for both her and the Prince, who has advocated the conservation of traditional artistic and architectural practices, she pauses for a second. ‘It’s not so much about ‘preservation’, although of course keeping anything going is about preservation. But drawing is the way in which artists think.’ Her definition of drawing is not limited to pencil on paper, however. ‘Everybody draws. It’s what every child does when they’re tiny and most of us continue to draw throughout our lives, without maybe even calling it drawing. Even if it’s as simple as composing photos on our iPhones, in a sense that’s drawing too, because you’re making visual judgements all the time.’ Although many may be familiar with Catherine for winning the BP Portrait Award in 2002, she is not solely a portrait painter – a fact she makes clear when I mistakenly pigeonhole her as one. ‘I don’t really call myself a portrait artist; I am a painter. I paint as many

landscapes, interiors and paintings from my imagination as I do portraits,’ she insists. ‘But drawing is very central to my work. I work from drawings a lot, and I draw every day of my life, so it’s absolutely part of me. [My current] show has got a lot of drawings in it, on a kind of iPad display on the wall.’ Portraits from Life is Catherine’s first solo exhibition and the first solo exhibition by a woman to be shown at the National Portrait Gallery in quite some time. ‘My show is of 20 portraits, mainly friends, but also people who’ve been having a hard time in their lives. I think the theme of the show is very much linked to the portrait I did of Dame Cicely Saunders.’

Dame Cicely was responsible for the hospice movement in the UK and, somewhat poignantly, Catherine was charged with painting her in the last year of her life, seeing her just days before she died. ‘What it taught me was that if you peel back the front of any life, and look inside, you’ll see a whole multitude of crises and unexpected things.’ Many of her subjects are painted over two or three years and Catherine astutely observes their ups and downs. ‘That’s the point of it, really. Life becomes recorded, time becomes one of the subjects… You don’t exactly see the wrinkles grow and the hair turn grey, but...’ she laughs. I tell her she makes it sound like Dorian Gray and she replies, ‘but they are a little like that. They

absorb a lot, portraits. They absorb my feelings, the feelings of the sitter and they end up being living things – if they’re good and if they work.’ Catherine’s personal studio is located in Chelsea. ‘I work in the Rossetti Studios, where Augustus John, Henry Lamb and everybody started the Chelsea School of Art.’ But these treasured buildings have recently come under threat as property developers have purchased the site – and we all know what that could mean. ‘They are fantastic studios and it’s very important that they survive as that,’ she affirms. Studios aside, Catherine finds the area of Chelsea itself inspirational, especially the streets near the Royal Hospital. ‘They have got such an interesting atmosphere. I don’t think they’re what people caricature Chelsea to be.’ As far as how her own work is ‘caricatured’, or perceived, I ask what she makes of comparisons to Lucian Freud. ‘Lucian was a great, great painter. But I think I’ve got a slightly more melancholic eye. That’s to do with being half-Russian.

People often say my paintings look sad. I wouldn’t say they’re sad but they often have sadness in them.’ Could this be because she paints more emotionally than Freud? ‘As a woman, I think women see people and the world very differently. I learnt that through teaching. It’s not a political stance I take, I can go down to the barn now and tell which paintings were done by women and which were done by men; there’s a different sensibility. That distinction is very important. Because I think that a lot of the time men want women to paint like men.’ Whether that is, or not, the case, her solo exhibition indicates there is certainly room for more female painters. ‘There’s definitely more than room,’ she says seriously. LAW UNTO HERSELF Artist Natasha Law talks motherhood, the female form and why, in particular, she likes painting nipples I n t e r v i e w b y E l i z a b e t h VA N L I E R

ELIZABETH VAN LIER You trained as an artist in Camberwell College, but initially studied history at Warwick University. What made you change to art? NATASHA LAW As a child, I was encouraged to paint, draw and make things, but there was no pressure to become an artist. I studied art all the way through school up to A-level, and watched all my best friends go off to St Martins and Central to do their Foundation. I went to Italy for a year and then onto Warwick University to study history. It’s not something I regret as I loved my time there, and I don’t think it changed how things turned out ultimately. But if I had to explain my decision-making, it arose from a combination of: comparing myself unfavourably with my friends’ artistic talents, a longstanding love of history, and simply being a teenager, not thinking that far ahead. EVL I am loath to ask the question ‘what inspires you?’, as I’m sure it’s a combination of things, but what does? NL It changes. Increasingly it’s something that happens when I’m doing a session with one of my friends. We hang out and they’ll do something that captures my interest, something that fits in with my mood or feels right for where I am at. I like that there is a completely secret, invisible subtext that no one else can spot but me. I could never paint a huge expressive piece about feeling

incredibly frustrated with my teenage daughter; but when I look back at a certain series, I’ll see that I’ve focused a lot on the girls getting tangled up in their T-shirts. EVL Your work is often seen as sexual and erotic. Why is this? NL I think the fact that my work is of the female form means people project onto it what they want to see. To me they are intimate and affectionate, but for a long time now I’ve been focusing on some of the more awkward moments of undressing. It’s less about getting naked, far more about the shapes created. I’ve really got into the ‘T-shirt caught over the head’ – I prefer it if faces don’t feature. I also love the ‘bending over to pull off jeans’. I don’t think nudity has to always be labelled sexual and erotic. It wasn’t that long ago that children could run around naked in paddling pools and women felt able to sunbathe topless. That was the era I grew up in, and it just doesn’t

seem a big deal to me. I like being able to paint the occasional circle, to contrast some of the triangles that the clothing presents me with – nipples are perfect for that. EVL Much of your work depicts the ‘slim’ female figure. Why? NL It hasn’t been a conscious decision. My pieces are not about the flesh itself. What I’m really thinking about is the person themselves. I use whoever of my friends volunteers. My friends are generally women with kids or women who commission portraits of themselves. They are not prepubescent girls by any means (though at times I’ve used my own kids). They’re just the ones who are relaxed enough with their bodies, and me, to not mind undressing. EVL Why do you paint in block colours and do you still use Dulux paint?! NL To me, the paintings are all about shapes and colours. The paint I use has this thick, glutinous quality that is almost sculptural. It is built up in layers, sanded, almost poured on sometimes. I always used Dulux but as EU standards change, and the paint composition is tinkered with, I’ve been shifting between a few brands. EVL You have a celebrity following that includes TV presenter Jo Whiley and actress Kim Cattrall. How important is celebrity endorsement to you?

ART & CULTURE / SPOTLIGHT the figure, almost entirely, from the final piece. It felt like a natural progression for me, leaving the figure as a ghost, allowing the shapes of the clothing to dominate. EVL Both you and your brother [actor Jude Law] have had artistic careers. Were your parents very artistic or theatrical? NL I guess they were quite unconventional in their attitudes to work and careers. There was never huge pressure on us to find stable and steady professions, no panicking when we were seemingly unemployed or struggling. They gave us time to allow things to take off, and the confidence to think it would ultimately work out.

NL I appreciate these women hugely for taking the plunge and liking my work enough to buy it. I think it’s a huge thing to invest in and it still staggers me that people buy my work. I hadn’t realised at first that the media love to know when the buyers are celebrities. It’s important to the people selling or promoting it – but I get a bit worried that the people in question will feel their names are being exploited when all they did was buy my art. EVL Your work often features clothes – T-shirts, jeans, knickers. Whose style do you admire? NL My nine-year-old daughter is pretty flipping stylish. She leaped to mind instantly. She has a fantastic eye for colour and really loves clothes. She always looks good and can wear any hat ever invented.

EVL You are represented by Eleven Gallery on Eccleston Street. What do you like about the space there? NL Eleven have always been my gallery. The size is a great one to paint for as it’s just small enough that I can paint a little too much and then edit it down to our favourites. There’s nothing worse than painting to fill a huge space and feeling like some of it doesn’t work. EVL Tell us about your current exhibition, Put it on Paper. NL Put it on Paper arose as an idea because I was increasingly working with paint on paper and enjoying the fact I could keep the pencil involved and didn’t have to sand! There was a warmer quality to the finished pieces and I’d wanted to experiment with collage – cutting up the painted paper and removing

EVL In an interview you once said you resisted going into painting because you were worried the media might focus more on you as ‘Jude’s sister’ rather than as an artist. Is this true? NL I never said that did I?! I ‘resisted’ painting? That would be inaccurate, possibly a misunderstanding. I didn’t want to have to mention his name at all once I realised that’s what the media were focusing on. But then you have to admit to yourself that why else would these papers be mentioning an unknown artist at all if it wasn’t for the celebrity connection? So then I wanted to protect him from it. It doesn’t bother me for my own sake. I have a very realistic notion of who thinks what about me and my work. I do feel really protective of my brother – though he doesn’t need my protection. When he comes along it’s because he wants to. EVL You have three children – how has motherhood affected your work? NL The two have evolved side-by-side. I can barely remember it any differently. They often find their way into my work, and I really like the prescribed hours being a parent imposes on my work. Never Mind That B*llocks Sex Pistols bass guitarist Glen Matlock remembers life in the punk band but says he’s just as enthused about his upcoming gig Wo r d s e d w i n a l a n g l e y

O

n 2nd December 1976, the day after punk rock band the Sex Pistols were interviewed by Bill Grundy for the Thames Television programme Today, the Daily Mirror ran this headline: ‘The Filth and the Fury’. In their hundreds, viewers called in as lead guitarist Steve Jones’s ‘You dirty f**ker’ jibe and lead singer Johnny Rotten’s use of the word ‘sh*t’, were streamed live into people’s homes, horrifying the middle classes and catapulting punk into the forefront of Seventies Britain. This was the year, remember, when Britain had to ask international bankers for a bail out worth billions; the year where inflation raged at 17%, where strikes were rife and during the driest summer since 1772, a riot broke out at the Notting Hill Carnival. This was the year where King’s Road punks were perceived a genuine threat to civil order. What better leader to give this anarchy, what better label to attach to it, in essence, what better scapegoat, than the foul-mouthed, adolescent Sex Pistols? With this in mind, I made my way to Maida Vale to meet Glen Matlock, original bass player for the band. And if truth be told, I wasn’t sure what to expect. Previous interviews I’d read suggested he had, inevitably, mellowed.

WE BECAME their smokescreen...IT SEEMED like there was NO FUTURE But only last year Johnny Rotten had told a female anchor on live television to ‘shut up’ and not interrupt ‘when a man is talking’. Whilst I would never tarnish Matlock with the same brush as Rotten (the two dislike each other), approaching the interview with caution felt prudent. When I first see Matlock he is sitting outside Raoul’s on Clifton Road with an almost empty coffee in one hand, and a cigarette in the other. So far, so punk rocker. But as I get closer and clock his large brown puppy-dog eyes, I notice there is both tenderness and sadness behind them, which is instantly disarming. As he speaks, I find too, his deep, cockney accent isn’t hard or standoffish, it is weathered, and at times he just stops talking altogether. When he later asks the waiter for some warm milk – ‘not being tight, but I can’t drink too much coffee’ – I almost reach over to give him a hug. Could this person truly be a hellraiser? ‘We became a diversion, a sop,’ Matlock says, when I address the issue of

shouldering blame for an entire country’s discontent. ‘When there’s a lot of sh*t going on, people strike…and they fill the front pages with ‘what a horrible bunch of teenagers you are!’. We became their smokescreen. I think that’s ultimately what happened.’ Did they know what they were doing? ‘We knew the scenario that we was in, we knew the dump that was mid-Seventies London,’ he continues. ‘God Save The Queen [their No. 1 hit] was originally called No Future. The words never changed, it just occurred to someone that it was going to be The Queen’s Jubilee, so we changed the title from No Future. That’s what it seemed like. It seemed like there was no future for blokes like us, unless you did something about it for yourself. That’s what we were trying to do.’ Matlock was born in 1956 and grew up in Kensal Green, attending school on the Du Cane Road and later St Martin’s Art College. ‘People go to art college because they don’t know what to do next,’ he intones. ‘My father was a bit of a trade unionist and we’ve always been a working class family. We didn’t have a lot, it was always a bit of struggle. There are always ‘haves’ and ‘have nots’ and I seemed to be one of the ‘have nots’.’ Whilst at school, Matlock got a parttime job at Vivienne Westwood and Malcolm McLaren’s notorious boutique

‘Live and Let Rock’, later known as ‘Sex’, on the King’s Road. Chelsea back then was ‘a lot weirder’ – ‘every oddball and weirdo in London came in, it was like a melting pot of nutters’ – and it was there that he met founding Pistols members, the aforementioned Steve Jones and drummer Paul Cook. ‘Steve and Paul used to come in and try to nick things. It was my job to stop them. They did it quite regularly, but I think I was reasonably successful – there was a pair of socks that went missing once or twice. But I overheard them saying to Malcolm, who they were trying to get involved [McLaren later became the band’s manager]…that their bass player didn’t take it seriously. I said I played the bass and they asked what bands I liked. I said ‘The Faces’ and they said, ‘ooh, so do we!’. We had a play and then…’ he drifts off in reverie. John Lydon (renamed ‘Johnny Rotten’ by Jones) was recruited in August 1975, the band’s name was confirmed – ‘Malcolm’s shop was renamed ‘Sex’ so ‘the pistols from the Sex shop’ was an obvious pun for four blokes’ – and they were set to reek havoc. If that was even

their intention. ‘We were surrounded by hip people who were a bit older and who helped us with what we were trying to do.’ Which was? ‘To stir things up a little bit, you know.’ I suppose I knew what he meant. But there’s a vast difference between graffiting a playground to ‘stir things up’ and smashing equipment on stage in front of aggressive audiences. I looked at the amiable man sitting in front of me, really quite polite, and I just couldn’t imagine it. ‘Steve Jones was a rogue and he had a sort of cocksure arrogance. I didn’t have that, I was a bit, you know, genteel.’ That sounded apropos, though he later contradicts himself, asserting he was also cocksure, but ‘not arrogant’. ‘When John came along he encapsulated it in his lyrics – the vibe that we had. When we was at Malcom’s…there’d be Antony Price and Bryan Ferry

swanning up and down the road, all multimillionaires. Malcolm thought they were a load of tossers, and we did too. We didn’t have a pot to p*ss in and it gave us a certain kind of arrogance, which is quite handy in a rock and roll band.’ As was probably inevitable, tensions rapidly grew within the group. When I ask Matlock if there was ever a point where they were all friends, he replies simply, ‘no.’ In February 1977, eight months before Never Mind the B*llocks, Here’s the Sex Pistols was released (the band’s only studio album) Matlock quit. In a telegram to NME McLaren said Matlock had been thrown out because he liked The Beatles. Matlock tells me ‘that was b*llocks’ and that he left because ‘it was more trouble than it was worth’. I wonder why it mattered even if he had liked The Beatles. ‘They were perceived to be The Establishment, and we were anti that, you know.’ Did he like them though? ‘Yeah, I didn’t mind them. I liked bands like The Kinks and The Stones – slightly harder-edged stuff.’ He was replaced by the ill-fated Sid Vicious, who Matlock had initially offered bass lessons to. ‘I was mates with Sid,

I think that’s where he went wrong.’ Once out of the band, possibly also inevitably, Matlock’s contribution to 10 of the 12 album songs was disputed. He maintains he wrote Pretty Vacant, but when I cite Steve Jones’s outright rejection of this, he replies nonchalantly: ‘Well, he’s full of sh*t. He doesn’t know because he wasn’t there when I wrote it. Steve wrote what he wrote. I wrote what I wrote and John wrote what he wrote.’ I probe Matlock further about his experiences in the band, but after a while he grows tired and emphasises it was ‘just’ something he did, ‘like learning to drive’. He is obviously frustrated that he’s never been allowed to forget it, ‘not that I’m trying to,’ he quickly adds. His next band, The Rich Kids, he considers as much of an achievement. ‘We was flavour of the month for a while, and I’m proud of that.’ He also singles out performing with The Faces alongside Ronnie Wood at the Fuji Festival in Japan. ‘I used to stand in front of the mirror when I was 14, pretending I was in ‘em.’ Today, life still revolves around music. In fact, he is gearing up for a gig at Under The Bridge this month, playing with David Bowie’s guitarist Earl Slick, and Slim Jim Phantom from the Stray Cats. I’d listened to some of his newer music and found, perhaps unsurprisingly, it lacks the devilmay-care rebelliousness of his former compositions. ‘I’m not the most crazy political animal, I’m not saying ‘bring the government down’. Although they probably should be [brought down].’ He pauses for a minute and seems suddenly intensely sad. ‘I look around the world and see such horrible things going on, that maybe we’re blessed with this benign bunch of idiots.’ In spite of God Save The Queen lyrics – ‘she ain’t no human being’ etc – he now doesn’t include The Queen in that category. ‘She’s alright,’ he says. ‘I think England is a lot more of a meritocracy now. I wouldn’t say no [to meeting her]. But whether The Queen wants to meet me is another matter.’ Matlock currently lives near Paddington with his two sons (17 and 21), both of whom have followed him into music. ‘I’ve tried to dissuade them, but that’s what they want to do. It must be ‘ard,’ he ponders. ‘‘Dad was in the Sex Pistols, what do we do?’.’ It’s possible they’ll try to eminent his rebelliousness, but Matlock doesn’t

seem too bothered by it. At the very least his riotous days are over. ‘How do you know?’ he jokes. It’s an innate love of music that drives him – ‘I’m too old to do anything else’ – though I have to ask if money was ever a stimulus and, since I feel strangely ballsy, whether he has a lot of it. He pauses for a second. ‘No. I’m comfortable but I’m not loaded. I think that’s quite good for writing. If I was a multimillionaire,

I wouldn’t know what was going on. I think that applies to most of the [punk rockers] – their current work is more valid than Phil Collins’.’ I imagine Matlock crooning into a mike singing love songs and the thought makes me cringe. ‘We all like a hug every now and then, there’s nothing wrong with that. It’s just when it becomes twee and whack…’ and once again, he drifts off. I like to think he is thinking what I am thinking. Yes, Matlock has mellowed. But a Sex Pistol will never be twee – or whack. ’m not used to being this happy with a haircut. I’m used to I barbers making pained faces as I describe what I want it to look like. Then I walked into the Errol Douglas salon, was greeted by easy smiles, and I suddenly realised something: this could actually be fun. The salon is clean with sleek lines and provides luxury service with all the subtleties of privacy which that entails. Every booth is its own private kingdom, which I thoroughly appreciated. My stylist Joel, half mind-reader, half sleight-ofhand scissor magician, takes one look at my shaggy barnet and sums up my exact intentions in one sentence: I want a simple, unpretentious cut. I nod my approval and am whisked off to have my scalp massaged by aromatic Moroccanoil, a luxurious leavein conditioner. Back in the chair, Joel gets to work, sculpting my hair with immaculate control and precision. With every flip of the quiff and snip of the sideburn, he lets me know exactly what he’s doing to my hair and why. Like all stylists at Errol Douglas, he’s been trained in every discipline, on every type of hair, including carpet-esque growths like mine. My hair isn’t a challenge to this team; it’s a canvas, and I walk out feeling like a goddamn masterpiece.◆

was feeling miserable. And after contemplation I decided I much the only way to feel better, would be to do something that would make me more miserable, but miserable in a different way. A distracting tactic. Pushing my body to its sweatiest was one idea, so I went with it, booking a session with Kieron Vorster at personal training gym fit8. On arrival, Kieron told me he was going to make me a unique metabolic profile. fit8’s ethos isn’t about time-related exercise (how long you can do something for) but about heart rate-specific exercise (raising your heart rate to a fat and carb burning level). Obviously this differs from person to person, hence the need for profiling. I was weighed and measured (I am shorter and heavier than I thought – that was depressing, my plan was working), and then made to sit still

for 15 minutes whilst my oxygen intake was measured (to see how many calories I burn at rest). Turns out I burn quite a few (not so depressing). Next, my anaerobic threshold was ascertained, which meant running on a treadmill as fast as I could, for as long as I could, whilst wearing a heart monitor band, and a blue and red mask, all of which made me look like Darth Vader crossed with a Transformer (extremely depressing). But once that was over Kieron had a good idea of how hard he could push me. And push me he did – with warm up exercises, weights, bunny hops (my term, not his), pull ups… We chatted and laughed throughout though. So much so, I quickly realised something truly dreadful – I was enjoying myself. I can therefore conclude my fit8 experience was a disaster. Far from making me more miserable, Kieron made me feel better. This was not the plan. But in retrospect, of course, it was a better one.

EASY AS PIE Want to start a successful street stall and have your own cookery show? It couldn’t be easier, or so says TV chef Andy Bates Interview by edwina l angley

EDWINA LANGLEY Morning Andy! How are you? ANDY BATES I’m alright. You’re going to have to excuse me, I’ve got a summer cold. EL Well, in that case, we can’t do the interview now can we?! AB It’s SO annoying… EL So, you’ve recently come back from Brazil. What did you do there? AB I was there for an English festival, exploiting English chefs and English food. The Brazilians love pies. I was making cheese and onion, and pork pies. We sold out in three hours. EL Do you travel a lot? AB I’m very lucky. Over the past four years I’ve been to South Africa, America and done the whole of the UK. It’s always good, being a Londoner, to get out of town. EL And obviously travelling helps with your cooking… AB Yeah, I like meeting people as a chef. I’m definitely not a chef who ‘knows everything’. I’m always learning.

EL You did a show called ‘Street Feasts America’ for Food Network. What did you think about American cuisine? AB It’s great, very diverse. I got to see how they do things – how proper brisket is made, slowly, over 18 hours of cooking. EL It’s good that now people over here are also taking more time over cooking. That, and we’re becoming much more conscious about our ingredients and where it comes from. Which, of course, is something you care about, not least through your promotion of the Quality Standard Mark. AB Yes, the QSM indicates the quality of what you’re about to buy. That stamp ‘says it all’ to everyone. There are meats we can buy from everywhere around the world – a chicken from Thailand – but when you look at that label, you know where it’s come from. EL Let’s chat about your childhood. You grew up in Mersham near Ashford... AB Yeah, in a small little village. My parents were both Londoners and we were always coming up at weekends. But I got bored as hell as a kid there [laughs]. Looking back though, it was amazing.

LAMB CUTLETS WITH CREOLE MOJO SAUCE

EL Your first job was washing up in a pub? AB: Yeah, I was one of those kids that started working at 15. It really stood me in good stead, being able to watch from the back. I’m still good at washing up now! EL After that you studied catering at Canterbury College… AB How do you know so much about me? It’s scary! EL Ha, ha, sorry! Then you spent a year in France, in Normandy… AB I spent nine months there. It was very regional, I could only cook their food. So I cooked with lots of Calvados and learnt to make the best beurre blanc.

• 60ml/4tbsp olive or vegetable oil • Grated zest and juice of 2 oranges • Juice of 1 lime • Salt • 10ml/2tsp ground cumin • 3 garlic cloves, peeled and finely chopped • 15ml/1tbsp hot pepper sauce ME T H O D

● To prepare the marinade; in a large shallow non-metallic dish, mix all the ingredients together. Place the cutlets or chops in the marinade mixture and coat well on both sides. Cover and refrigerate for 2 hrs, or if time allows overnight.

EL Then you came back and, surprisingly, stopped cooking – for ten years! AB I was always cooking but yes, I worked in production. EL Why? AB I came back to London and I fell into it. But in that world you’re surrounded by catering. I always found myself hanging around the catering truck thinking, ‘I can’t get away from food’. So after nine years I started making pies for my friends birthdays – pork pies. That inspired me to eventually put my first stall together on Brick Lane. EL Then, I read, a friend of yours who worked for Food Network mentioned the channel were looking for new talent. Apparently they spotted you, pointed and said: ‘It’s YOU!’ Is that how it happened? AB Yes! I just fell into it. But I think I’ve got along with it quite well. I’ve had a great time. I’m very grateful.

● Remove the cutlets or chops from the marinade (reserve the marinade) and cook on a prepared barbecue or under a preheated moderate grill for 6-8 mins on each side. Meanwhile, heat the marinade in a small pan until piping hot and pour over the chops before serving.

EL Is that all? AB: Yeah, that and I don’t eat pies everyday. Simple as that. People ask me all the time when I’m filming, ‘why aren’t you fat?’. It’s because as soon as they say ‘cut’, I’ve got a soundman, a director and a cameraman, biting my hand for whatever’s in it. EL So you’re starved basically, you eat none of your food... AB No, obviously I eat and love my food! EL I was joking! AB It’s just when I’m filming, I take one big bite and then the whole crew jump on it. EL Just as well it’s not live – you’d have the whole audience jumping on you. AB [Laughs] Basically, I eat healthily and enjoy food during the weekends. EL Trivia questions. What’s your favourite pie? AB Any pie. At the moment, beef and oyster. EL Your three favourite ingredients? AB Flour, [long pause] butter…it’s a tough one. You’ve got me now. EL Flour and butter will do – that’s the beginning of a pie. What would be your last supper? AB Probably something simple but well done – like a surf and turf. Beef and lobster with fries and a béarnaise [sauce]. Very simple. EL What would you say is your favourite restaurant in Chelsea? AB Bibendum is the best I’ve been to. And also Tom’s Kitchen is a favourite.

EL What’s coming up next? AB I’ve been doing ‘Rescue Brunches’ at The Liquor Store in Dalston, and am also preparing for my new TV series. Hopefully I’ll get to do some more travelling as well. You’ve gotta enjoy it while it’s there and see what happens.

EL What is it about street food that you like so much? AB At that time, in 2008, we were in the midst of recession. A lot of people were out of work and didn’t know what to do. I was part of a movement that wanted to ‘do it for themselves’. I really enjoyed working with suppliers, it was very hands on – a great way to start a business.

TENDERSTEM®, RYE KERNEL & TARRAGON SALAD his salad is based on the Nordic diet, which focuses on interesting grains and a characteristic love of aniseed flavours. This recipe uses traditional Västerbotten cheese but you can also use feta, which is widely used in modern Scandinavian cuisine.

TABLE TALK SERVES 4 PREPARATION TIME 10 mins (plus overnight soaking) COOKING TIME 25 mins INGREDIENTS For the salad • 300g Tenderstem® • 150g Västerbotten (or feta cheese) • 100g rye kernels/grain, boiled (or ready made quinoa) • 3 small spring onions, roughly chopped • ½ red pepper, finely sliced • Handful of chopped fresh tarragon • Salt and pepper For the vinaigrette

• 3 tbsp extra virgin olive oil • 1 tbsp balsamic vinegar • 1 small shallot, finely chopped • ¼ red chilli, finely chopped METHOD 01 Soak the grains for 24 hrs then boil until just tender (about 22 mins). Drain and leave to cool. 02 Blanch the Tenderstem® in boiling water until just tender (3-4 mins). 03 Add all the salad ingredients, including the Tenderstem®, to a bowl and crumble in your chosen cheese. Season. 04 Mix together all the ingredients for the vinaigrette and drizzle over the salad just before serving. 05 Grilled chicken can be added for a meatier salad. ◆

YASHIN OCEAN HOUSE Scale-to-tail dining is so in vogue. Will it sink or swim with our restaurant reviewer? Wo r d s e d w i n a l a n g l e y

W

hen I accepted an invitation to review Yashin Ocean House – a Japanese fish restaurant offering the nowaste ‘scale to tail dining’ – I took my mother with me. She brought me up in Japan after all, she knows her sōmen from her soba. I arrived at YOH early to find an office party at the bar. This told me the restaurant would soon be buzzing – great, I thought, it needs to be. It’s situated in a solitary spot on Old Brompton Road and seats 70, boasting counter-seating

so diners can ‘ooh’ and ‘aah’ at the chefs as they craft. Sadly, however, when my darling mother arrived half an hour later, there were still no more than a handle of diners. This was a shame, I considered; it left you feeling rather exposed. Once seated, our waiter announced he was going to order for us. Whilst this meant we were going to get YOH’s best ‘signature’ dishes – the headliners – it also meant we’d see neither ‘scale nor tail’ of the other dishes. This isn’t exactly the point of a review, but he was so charming I decided not to argue. And so the culinary show got underway. We were presented with a jug of Sakegria – an unusual mixture of

sake and sangria, odd since YOH doesn’t deal in Spanish-Japanese fusion, but still, it tasted fruity enough. Then some truly excellent ‘warm up act’ dishes: the Smoked Tuna Ponzu, Melon and Shisu ‘shot’ slipped down all too quickly, and the accompanying Squid Ink Bread Roll was a revelation – squidgy (literally) and black. The standout plate came next – Tuna with Truffle-Infused Ponzu Jelly. It was a masterpiece, one where the star of the dish was the fish, and the truffle, a clever ‘backing’ flavour. The Umami Mackerel Bone and Skin with Deep Fried Veg was similarly moreish – crunchy and crispy. On the edge of our seats now, we prepared ourselves for the main act. But alas, it never materialised. The Omakase Sashimi Plate, which arrived with ‘yuzu smoke’, lived up to my theatrical expectations – visually – but all tasted strangely similar. And whilst I enjoyed the Yellow Tail Terriyaki and Yuzo Miso flavours, as Mum whispered sweetly afterwards, it was a little overcooked. The grand finale, a pudding of Yuzu White Chocolate Mousse, had some good textures but it didn’t taste of chocolate, more like, sweet cream... Oh, dear. I had wanted to love YOH, truly I did. The staff were so nice, the dishes, so beautiful, and the concept of the place is an admirable one. But I have to admit, for me, it didn’t quite deliver. Every show has to have style, but not at the expense of substance.◆

The Palazzo del Cinema on the Lido esplanade hosts several screenings and a limited number of tickets are available to the public the day before – head to the office of La Biennale, the festival organisers, to secure some hot seats (labiennale.org). Don’t worry if you miss out on tickets though – the city itself is the star of the show, a living film set for more than 2,000 films. Get a sense of its cinematic history by booking a tailormade tour courtesy of Belmond Hotel Cipriani. Escorted by a private guide, a gondola ride transports you to St. Mark’s Square where scenes from Orson Welles’ Othello were filmed, before moving on to Caffe Florian, the historic coffee bar setting of Anthony Minghella’s The Talented Mr Ripley. Stop at the Rialto Market early on a Saturday morning to watch the locals barter over the catch of the day before exploring the quieter streets of surrounding Castello, housing the ancient Basilica di San Giovanni.

For classic Venetian cooking, head to one of the simple trattorias and traditional bacari (bars) where you’ll find the locals grazing from a selection of informal canapés, or chiccetti. Book a courtyard table at Al Giardinetto da Severino (algiardinetto.it) for inventive fish dishes, while the home-cooked pasta at Da Gianni (00 39 041 52 37 210) is favoured by locals. For a shot of glamour, a Bellini at iconic Harry’s Bar (harrysbarvenezia.com) shouldn’t be missed, while San Marco’s Da Ivo (ristorantedaivo.it) offers seductive fine dining.

ast year, we went to Bestival and didn’t take a tent. For us there was no lugging equipment from car to pitch; no time wasted setting up camp and no sweating over ropes, poles and pegs. Instead, we rocked up to Hotel Bell Tent, confirmed our reservation and fell in love with our beautiful five-metre canvas palace. For comfort and style, there’s no competition. Guiding light When The Week’s founder couldn’t find his daughter a decent study guide for her AS-levels, Jolyon Connell decided to create his own Wo r d s A M A N D A C O N S TA N C E

W

hen Jolyon Connell’s daughter Flora didn’t achieve a perfect A in her AS-level on Shakespeare, it got him thinking. Flora – in the sixth form at St Mary’s Calne – got straight As in every subject apart from the great bard. It was The Tempest that had been the problem, a tricky one at the best of times, so Connell immediately offered to help. He dug out his old notes, yet found little to help him there and then scratched his head, as he had no idea which critic to turn to. ‘What do you do if, at the age of 17, you need some direction?’ Connell asks. ‘It’s York Notes or nothing and they don’t give you any idea of which critic to start with.’ And surely if Flora – the privately educated daughter of the ex-deputy editor of The Sunday Telegraph – needed help, many others did, too? Connell’s lightbulb moments are not to be ignored. The last time he had one, the result was The Week, the news digest that became the publishing success story of the last two decades and is now Britain’s highestselling weekly subscription magazine. He rang his old tutor at St Andrews, Graham Bradshaw – acclaimed by Harold Bloom as one of the best Shakespeare scholars of the last 50 years – and asked him to write a guide to The Tempest; five years later, the first Connell Guide was born.

CONNELL’S lightbulb moments are NOT to be IGNORED

With each dedicated to a single, classic text, there are now 20 in print. Other Shakespeare plays covered include Othello, King Lear, Macbeth and Romeo and Juliet, while the range of novels includes Jane Eyre and Great Expectations, along with modern classics such as The Great Gatsby, Heart of Darkness and The Waste Land. Every guide is written by a leading academic in the field, is no more than 20,000 words long, and is accessible and beautifully designed. Like The Week, the guides illuminate without sacrificing complexity and seamlessly convey the viewpoints from both sides of the critical spectrum. Last September, Connell Guides also launched a subscription service for schools. 275 have signed up so far ‘including all the major public schools’, says Connell, who adds that he is keen to get state schools on board. For £195 a year, schools receive all 20 guides, the four new ones published in the following

year, plus access to Connell Shorts – briefer, digital guides to modern texts, such as Atonement, The Road, and The Bloody Chamber. Subscribers also receive the Connell fortnightly review, regular new essays and a monthly quiz. Colin Hall, head of Holland Park School, says, ‘In these days of Facebook, text language, downloads... the ‘plugged in’ generation find it harder to digest academic texts. What Connell Guides bring is immediacy and clarity; brevity with depth. They unlock the complex and offer students an entry route.’ This September, Connell Guides is launching a virtual Book Club. Designed to appeal to a wider audience, subscribers will receive a monthly Connell Guide or Connell Short (either in print or digitally), a fortnightly literary review, plus a literary briefing, quizzes and more. Connell has also started filming a series of video talks with university dons. When he spoke to Absolutely he had just returned from Oxford, where he discussed Romeo and Juliet with Simon Palfry, a Fellow at Brasenose and distinguished Shakespeare critic. Next in the pipeline is a film with Valentine Cunningham, a Senior Fellow at Corpus Christi College in Oxford, about King Lear and Mrs Dalloway. And his work has not gone unnoticed. At The Sunday Times Festival of Education a few months ago, the former Education Secretary, Michael Gove, said what many teachers are most likely now thinking: ‘John Connell should be garlanded with roses.’ ◆ connellguides.com

have been travelling since a young age – my father ran a business in New York and I have memories of him constantly away on business trips. When I wasn’t travelling with him, he would always send me postcards from wherever he was – it was like a library of exotic places. This sowed the seeds of my love of discovering new countries and cultures and led to me spending my gap year working in Paris and New York and then, after graduating from university, working for an investment bank in Japan and Holland before returning to the UK. As it turned out, these youthful experiences were an excellent grounding for working in international property. When you live and work overseas, you learn that every nationality is different with a different way of doing business. My experience of travelling over the years has taught me that no two nationalities are the same and therefore must be dealt with differently. Hong Kong is different in the way it conducts business to mainland China, Malaysia is different to Singapore, Qatar is different to Abu Dhabi, the US is different to Canada. I think to be successful you have to know how to adapt. This is perhaps the single most important thing I’ve learned from my travels - and that knowledge is invaluable when it comes to understanding the needs of our international clients. And we have a few – looking through our records I discovered that we currently have landlords from 32 different countries who own property in Chelsea. When it comes to international tenants, the figure is even higher. Clearly, while Chelsea is a relatively small

area, it attracts international investors and professionals in droves and perhaps its compact size adds to the kudos of living in this exclusive enclave. With so many overseas clients, we work hard to ensure that we can speak to as many of them as possible in their own language. Inhouse we now have staff speaking 30 languages inlcuding Arabic, Mandarin and Russian. Even landlords and tenants who speak good English often prefer to speak to us in their own language – it helps them express what they really want to say and enables us to build a personal rapport. This global perspective is an integral part of our business with our ever expanding network of international offices – we set up our first one in Hong Kong, in 1995, followed by Singapore and now have offices in Malaysia, India and Dubai as well. Our Managing Director, Anita Mehra, and I travel almost every month to meet clients, and we regularly hold presentations and seminars for investors both to update and educate them on how the London rental market is performing and to grow our understanding of their needs. Few will be surprised to learn that rental demand is always strong in Chelsea and, although rents are fairly static at the moment and certainly aren’t increasing in line with capital values, we’re seeing an all time high number of applicants registering with us to find a home, from one bed apartments to large family homes. Without doubt, the magnetic draw of the Royal Borough of Kensington and Chelsea makes this one of London’s, and perhaps the world’s, most exclusive addresses – and a fascinating place to work.

We have worked with and been able to rely on these contractors for, in some instances, 30 years. When relying on a third party, as inevitably we need to do, our contractors have to be an extension of ourselves in order to have the trust to get the job done in a timely and professional manner whilst understanding the impact any problem has on a tenant's home life. When a problem is reported, our aim is to get the relevant contractor on site immediately to assess the problem and, in an ideal world, rectify it there and then. When parts are needed this is not always possible and on occasion we are at the mercy of a supplier. Some tenants insist that their property is professionally managed and we have tended to find over the years that the real plus to a landlord who instructs our management service is a trouble free and often longer tenancy.

e are at that time of year again when the less serious buyers focus on their sun tans, the World Cup and Wimbledon. If they are British then only the former remains an excuse, however the reduction in demand has reduced the upwards pressure on prices that Fulham has experienced over recent years. We typically do fewer viewings but with more motivated buyers and therefore are still agreeing many sales if the asking price is right. Buyers are keen to tie up a purchase before the widely expected rise in mortgage rates. For a vendor, however, it may never prove more costly if you choose an agent that overvalues your property.

ollowing several months of extraordinary price growth and a shortage of properties coming on the market for sale, there now appears to be a change in mood - a cyclical change. There’s a sense that the market has become a little over-heated and from the reduced level of enquiries from buyers in the past two weeks, it would appear that the onus may be shifting from sellers to buyers. Various research bodies have suggested a price correction by the end of the year which is likely to result in more properties being taken on by agents, but probably less overall price growth next year.

This should be seen by buyers and sellers as a positive development as it's likely to bring asking prices to more realistic and sustainable levels. The next six weeks are usually quieter in any event, so we may have to wait until September and the Autumn market to discover whether the pendulum has started to swing away from sellers and more towards favouring buyers.

They instilled a love of the area in me – its traditional architecture steeped in history, its literary and artistic roots, the river running along one side. 1.What standard does my property have to be at before it can be rented out? You will need to make sure all aspects of your property are up to scratch and meet all of the required standards to give you the best chance of finding the right tenants and achieving the best price. As well as the internal presentation and decoration of the property itself, there are numerous other standards that will need to be met, including safety regulations for gas and furniture. Your property may be classed as a HMO (House in Multiple Occupation) i.e. if there are more than four sharing tenants and other stipulations. If this is the case, further regulations will need to be adhered to as well as registering with your local authority, details of which you can obtain from the local council.

2.Why should I have an inventory? An Inventory/Check-in is usually underestimated by landlords as many don’t believe in its necessity. But it is actually quite important when letting as it benchmarks a property at the start of a tenancy and will avoid any headaches at the end of it. It's best to have it done through an independent clerk who will be able to compile a list of what is in the property (Inventory) but also in what condition the property was before a tenant moves in (i.e. a Schedule of Condition also called a Check-in).

3.I already have two buy-to-let properties. Should I continue to expand my portfolio? Yes. Rental demand in London remains strong and while rents are not rising significantly, this consistently high demand looks likely to continue, ensuring steady yields for landlords. The potential for long term capital growth also remains good. Stick to your budget though, and research your market so you know what type of property to buy. For example, in Chelsea we see high demand for one and two bed apartments which appeal to young professionals – this type of property tends to let very quickly, especially if it is within 10 minutes or so of a tube station. Three bed properties are also popular (they must have at least two bathrooms though) as they appeal to the increasing number of professional sharers.

4.What will you do to ensure my property is properly advertised and marketed? Once instructed, we will formulate a considered marketing strategy, created specifically for the target market. This includes the best quality photography, a creatively written description, an advertising schedule (we advertise in a large number of local and national publications), and the potential for PR

angles. Once this is ready, usually within 24-hours, we will launch the property formally, and it will appear on our website as well as some of the largest property portal sites. In most cases, we will have already contacted our existing network of tenants, registered with all the local, relevant offices and will have started booking viewings. In addition to the 8000 potential tenants registered with our seven offices in the Royal Borough, our Corporate and Relocation Services Department work with a number of large companies looking to relocate their employees to London. In our experience, these tenants often pay the highest rent and commit to the longest tenancies, so it’s more than likely that we'll already have the perfect tenant for your property.

5. How will I receive my rental income? Here at aspire we are different to many other agents, in that we collect your rent on a monthly basis and take our fee from this. This is something that is extremely popular with our landlords for a number of reasons. Not only does it entice us to make sure we secure a reliable tenant who is going to remain in the property for as long a period as possible, but it is extremely helpful with a landlord's cash flow.
