feel rather sorry for January. Amidst an explosion of fireworks, balloons and confetti, 1st January is born. But once Big Ben has struck 00:01, and the fireworks have sizzled to smoke, where else is there for January to go? With its notoriously dismal weather, the thunderous ‘back to work’ cloud it hovers over our heads, and that odious pressure to detox, there’s really nothing to look forward to is there? No. Wrong! At Absolutely we have discovered January is one of the most uplifting and exciting months of the year. Yes, I’m exaggerating slightly, but morale is crucial to making the most out of what could become a highly productive month for all of us. Take the inspiring Detox Guide we feature, for instance. I have never detoxed in my life, but this year I am adamant I shall. For the advice provided by our top local health specialists makes me want to own the abs and the skin and sense of serenity they tell me is so easily obtainable. Similarly, our What’s On in 2013 is certain to blow away January blues in one big gust, for there’s so much to look forward to this year. If you’re looking to redecorate, have a read of what happened when I met star of Location, Location, Location, Kirstie Allsopp. You won’t be afraid to mix old with new after that, nor fear that horrible monstrosity left to you once, which is currently residing in the attic. We also profi le the iconic life of Blondie’s Debbie Harry, so that come mid-January (when we’re struggling through our month of abstinence) we can comfort ourselves we were never that wild. And with our interview with the delicious Marcus Wareing, plus a fascinating history lesson by BBC’s Dr Nick Barratt, there’s so much to read in this issue I doubt there’s time enough in January to do it. With any luck you’ll be so distracted, your detox will carry on into February and you won’t even notice. Well, that’s the plan anyway. I very much hope it works.

THIS MONTH’S HIGHLIGHTS
TRIVIAL PURSUITS PETER JONES
Peter Jones is the Mecca of Chelsea. Just looking at its glass curtain walls overlooking Sloane Square is to feel at home. But from whence did this institution come and who indeed was Peter Jones? Peter Rees Jones (1842-1905) was the son of a hat maker who moved to London from Wales to find work. He started as a draper in Hackney before opening a small drapers shop (‘Peter Jones’) in 1871 on what is now, Draycott Avenue. In 1877 he relocated to 4 and 6 King’s Road (where the shop stands today) and in time bought out the entire block. In 1902 the store suffered financial trouble and after Jones’s death, was sold to entrepreneur, John Lewis. Allowed to retain its name, Peter Jones underwent a £107m refurbishment, completed in 2004.
Addressed as ‘Mr President’ on set, Daniel Day-Lewis’s all-consuming methods were once again brought into play in his magnificent personification of the 16th President. But if we put aside his awe-inspiring performance and turn ourselves to the film, I’m afraid to say ‘The ultimate homage to Abraham’ it just ain’t. Charting his final fated months, the film details how he insured the House of Representatives passed the 13th Amendment, marking the epochal abolition of slavery. With the well-worn life of Lincoln in question, Spielberg’s biggest problem was creating tension in the face of the famous outcome. Whilst it’s important to set the historical scene, Tony Kushner’s script is so slowly paced, so lazy at humour, that I managed to scamper to the Ladies and stock up on jelly babies without missing so much as a scene change. The absence of Civil War battle scenes means it really is a film of intrinsically wood panelled rooms and worthy tête-à-têtes. And what novel nuggets of information do we learn by the end? That Lincoln was a kindly old gent who struggled to balance his political and family life. Yawn. It’s like a very pretty history lesson – vaguely edifying but ultimately leaves one clock-watching and biting the heads off jelly babies. In cinemas nationwide from 25th January. ALICIA MACDONALD

BBC’s Who Do You Think You Are? genealogist consultant, Dr Nicholas Barratt, guides us through the fascinating history of ‘suburban villages’, Chelsea and Fulham
I
t’s amazing how we take the layout of modern London for granted and forget that the vast, teeming city that surrounds us is a relatively recent creation. You only need to glance at a map from the first decades of the 19 century – little over two centuries ago – to realise most of what we now call ‘central London’ was actually open fields and meadows. Today, if we wished to reach Chelsea or Fulham, we’d jump on a tube train and hurtle along underground, avoiding the bustling commercial and residential streets congested by cars and delivery vans,

‘The famous World’s End public house on the King’s Road can be seen on maps from 1795’ compounded by seemingly endless road works and parades of traffic lights. Back in the 1790s and 1800s however, a carriage journey would take you away from newly built terraces, squares and parks and into open countryside as you progressed through turnpike gates (interspersed with clusters of farms and windmills) as you headed towards the villages – yes, villages – of Chelsea, Kensington and Fulham.
The famous World’s End public house on the King’s Road can be seen on maps from 1795 and its name could not have been more appropriate. Surrounded by common land, open fields and a few orchards, it stood the first sign of imminent civilisation as you approached London on the river road from the west.
Dominating the landscape at the time would have been Kensington Palace and the Royal Chelsea Hospital – with a cluster of newly developed properties around Sloane Square or along Cheyne Walk by the river. Footpaths criss-crossed the common land, where today we’d see multi-million pound mansions set in grand streets. Fulham remained a prime location for market gardens well into the middle of the 19 century and since the Bishop of London owned much of the land, it was very much part of the river ‘Palace economy.’ Rural isolation, however, was not to last long. The 19 century witnessed a period of rapid and confused change. New technology, economic expansion and accelerated population growth transformed London into a vast sprawling metropolis. Railways snaked across the landscape creating new towns out of sleepy villages; Battersea, for example, grew exponentially once Clapham Junction was sited nearby, for it meant that commuters could afford to live a bit further out. Economic expansion also meant a growing percentage of the ‘working class’ could leave the slums that cluttered central areas and find more affordable accommodation. Consequently, a rash of house building turned greenbelt into brick terraces, footpaths to bustling highways, and bridges began criss-crossing the Thames. Yet Chelsea and Fulham managed to retain their quintessential village character. In many ways this was due to their proximity to the river and the fact that their previous closeness to the centre – and the all-important presence of palaces nearby – had made them desirable places of residence for the wealthy and aristocracy, who needed to be close to Court and the source of power. Money attracts money and so the nouveau riche industrialists and commercial magnates of the Imperial age also aspired to move there. Thus large houses and gardens that were swept away in other parts of the inner suburbs, were preserved in these areas. We now consider districts such as Chelsea and Kensington as part of the centre of London, yet in the 1860s and 1870s they 19

would still have been considered ‘outer suburbs’. It was only the further expansion of the railway networks, in particular to the north and west, that created the type of uniform, planned and much-derided outer commuter suburbs that were constantly mocked in popular culture. Throughout all this change, Chelsea and Fulham retained their kudos as places to live, coming up trumps when more illustrious neighbours, such as Kensington, experienced periods of decline. Even the rules governing the naming of the 32 London boroughs, created when Greater London was born in 1965, were bent in Chelsea’s favour. The new boroughs were meant to only have one name, but ‘Kensington and Chelsea’ was created to reflect the prestige of both. Fulham was resurrected seven years later when it took its place alongside Hammersmith as part of the borough’s name. From rural village, via a desirable suburban outpost, to an inner-London village again, places like Chelsea and Fulham reflect the rich and dramatic history of our amazing city, unique in their own identity and each having a role to play in the wider story of Greater London.

Winter, brrr, we’d love a holiday! What designs are selling well this winter? Our prints differ greatly and sell as well as each other. Fresh with fun names, they remain inherently unique. Our Classic shorts, for example, are available in sizes for men and boys – perfect for all ages to enjoy in the winter sun. How do you come up with your prints? Many of our prints are actually vintage designs that I have sourced and adapted to swimwear. For our Spring/Summer 2013 Collection I have created my own series. I come from an architectural and art background and love design. What are they made out of? All our swim shorts are made from nylon, milled in Japan. The prints are limited

In the past 100 years 90 per cent of the world’s Asian elephants have disappeared. They are simply running out of space – and time – as the human-elephant conflict continues and habitats diminish. The remaining elephant herds have nowhere to go, other than ever closer towards extinction. We support charities like Elephant Family that are dedicated to stopping this from happening. So far have raised over £6million towards conservation projects. You design swimwear for men and boys. Us girls feel left out. Are you planning to launch women’s swimwear? I am asked this a lot and my lips are sealed. It is something I would love to do but not just yet.

Our fabric is very soft and dries extremely quickly, both key attributes to swimwear. Why are your trunks different? Aside from the uncompromising quality of our shorts, what really makes them special goes back to my core point about Love Brand. They are not just shorts, they stand for something. Our bikinis and swimsuits only last a month before their colours fade and they start to sag like sacks of potatoes. How do we preserve them? In terms of preserving the elasticity, don’t wash or dry them ‘hot.’ With swimwear colourfastness, wash them by hand in some warm fresh water to get rid of the salt (or chlorine) and then air dry. After extensive exposure to sunlight, colours (especially lighter pastels) will fade. Opt for darker colours. At the end of the day, it’s worth paying the extra bucks for quality – and if possible, buy more than one pair. Budgie smugglers, what are your thoughts on them? I think they are hilarious. Probably the biggest beach faux pas, along with extreme sunburn and the white socks-sandals combo. The top three beaches you’ve been to are…? That’s a hard question. My life so far has
been one long beach recce – my parents, my sister and I have lived in Barbados, Hong Long, New Zealand, Japan, UAE and England. My father loves a good beach holiday and from the places we have lived in, we’ve holidayed all over the world. So I consider myself extremely fortunate to have experienced a number of unforgettable beaches. The top would have to be in the Bahamas, where my girlfriend’s family have a house, as the sea is bluer than anywhere else on earth. There is a secret secluded beach in the Exumas, but that is going to remain a secret! Another favourite is the beach in Punta del Este, Uruguay, for no other reason than I went to the best beach party of my life there. The third would have to be the Fulham Road aka ‘The Beach,’ where I live in London. Living in SW3 what do you like about the area? I love living in Chelsea. Lots of pubs, restaurants and shops tucked away amongst beautiful streets. It’s where lots of my family and friends live. Finally, what’s coming up in 2013? I am very excited about my Spring/Summer 2013 Collection and the second ‘Trunks for Trunks’ swim event in the Serpentine. Every year we host swimming races in the lake to raise money for Elephant Family. Absolutely readers can get in touch with Love Brand & Co. to either race or find out more about it. I
n a national newspaper last October, Kirstie Allsopp was grilled on her reputation as a Stepford Wife, and then described as having ‘nation’s nanny’ tendencies. This vexed me somewhat as the two are polar opposites in my opinion. As I headed to interview the lifestyle guru on her newest design range for children, ‘Little Living’, I wondered which character would suit her best. Would she, Stepford-like, greet me at the door dressed in a Cath Kidston apron, smile sweetly and offer me a cupcake? Or would she bear the face of ‘matron,’ comment on the puddle leaking from my sodden umbrella and suggest I hotfoot it to the ladies to comb my hair? The instant I met her however, it was clear to me that she was neither; for in under
a minute she had referenced the weather disrupting her son and husband’s recent trip to Kenya and predicted that with two sisters staying that week, her house would likely come to resemble Piccadilly Circus. A Stepford would never let-on that weather and visitors could upset the natural order of things and the ‘nation’s nanny’ just wouldn’t stand for it. Kirstie’s ‘que sera sera’ approach spoke volumes – unlike Stepfords, she is human and unlike Nanny, relatable. She speaks with authority in a way that means you don’t interrupt, but you can’t help but instantly like her. We sat in a room with the view of London, (the top floor of Peter Jones), surrounded by Kirstie-style made-up beds. An explosion of pink and orange characterised the Alphabet linen designs,
whilst the pale purple Alberta had the sort of understated sophistication that would appeal to teenage wannabe 10 year olds. Although Kirstie herself, is all about the design process. ‘It’s probably one of the nicest things that I do professionally. I take small pieces of fabric – flowers, things from Instagram – and transfer them pretty accurately onto fabric. That’s the fun bit. The Top Dog design is literally made up of silhouettes of dogs that I know. I’ve ensured that there’s a dachshund, a border terrier and a whippetlooking dog, just so I can tell my godchildren I’ve made material with their dogs on it.’ It’s no surprise that Kirstie is a godmother, and that she should consider her godchildren when designing, serves to confirm something you already suspect: she is precisely the sort of

where it fits into their pristine home. But you can mix and match.’ I started making mental notes as she dished out a lightening list of dos and don’ts. Her lesson, interrupted solely by a series of yawns (‘I had both children in my bed last night’), fascinated me to such a degree, I was worried if I appeared too interested she might think I was just using her for my own interiors information (I was). ‘I hate people buying flat-packed furniture,’ she continued. ‘There’s so much second hand stuff out there that’s cheaper and better. If you must buy the other, for God’s sake buy it off eBay. Flat packed furniture loses

She’d not only remember birthdays and turn up at concerts, but any monstrosities that happen to find their way onto bedrooms walls would be instantly expelled, however old the godchild. Thinking of my own walls (currently naked) I asked about the latest decorating trends. ‘Interiors these days are so polarised,’ she answered confidently. ‘What worries me is that people don’t seem to see you can merge two different looks. They lose confidence. There’s still a lot of glass, steel and white smooth walls around. And then there is a lot of rural, floral, vintage-inspired stuff. And I think you can mix the two – soften things a bit. Also, not being afraid of older things is important. A lot of people are frightened of things they get left – an ugly old sideboard – and they just can’t see

It’s allegedly cheaper because you go there and you load it into your car. But people aren’t looking round and seeing that actually, you can get a beautiful vast mahogany chest of drawers, paint it white, and have something much nicer than a faux Edwardian chest you’ve had to put together yourself.’ The store she’s not mentioning is IKEA and whilst it has its uses, I agree, providing statement furniture shouldn’t be one of them. In fact it’s rather comforting that Kirstie should still care so much about interiors, for
as house prices rocket out of all affordability, it’s becoming less about where you live and more, what you live in. Even Robbie Williams recently labelled the cost of Chelsea properties ‘astronomical,’ a lament Kirstie echoed when I asked if we should be buying at the moment. ‘In Kensington and Chelsea? You’d be lucky! The change in stamp duty has seemingly had a dramatic impact on our transaction levels, which are falling all the time. This pushes prices up, which in Chelsea are now at an all time high. But a lot of people buying these properties aren’t living in them. Whilst I don’t live in my London home at the weekend, I live there more than I do anywhere else – not just two or three months of the year. Recently a house was sold on our street for a great deal of money, but it’s basically unoccupied.’ She has a point and it’s rather sad to note that some of London’s most exquisite houses are out of reach of those who’d make the most of them. Still, there’s no point dwelling. At times like this, the Allsopp ‘rule of thumb’ is best applied – ‘Buy the best you can afford in the area you most want to live.’ As our interview drew to a close, we strangely ended up chatting about bicycles. ‘I saw someone bike passed me with their child in the basket,’ she said, ‘and I thought “I’m not entirely sure that’s what they’re used for.”’ How apt we should end the conversation where it began – with children. It was then that I came to the irrevocable conclusion, Kirstie Allsopp is neither a Stepford Wife nor the ‘nation’s nanny’ – but I’d happily put her down as Mother of Britain. HEART OF SASS Absolutely takes a look at the colourful life of Debbie Harry, the striking subject of Proud Gallery’s new exhibition

other to Madonna, granny to Gaga and a name so synonymous with the word ‘icon’, you’d be forgiven for thinking it was part of it. Debbie Harry, lead singer of rock band Blondie, is widely considered the face of the 1970s New–Wave revolution and as for Punk, well, she practically gave birth to it. Indeed it’s entirely appropriate to consider her a ‘matriarch of the music industry’ for she pioneered female liberation like no other before her. ‘Not suppressing’ her sexuality wasn’t enough for Harry. She used it – a performance technique so common these days it’s no wonder we forget where it came from.
Born in Miami in 1945, at just a few months old, Harry was adopted by shop keepers Catherine Harry and Richard Smith and moved to New Jersey. ‘As the first child they had to be really good parents,’ she told Kirsty Young on Desert Island Discs in 2011. ‘I don’t think that they really knew jack about the music business... My mother always envisaged me having a life very similar to hers – marriage and family.’ One can’t blame Catherine for not adequately predicting her daughter’s future, for it’s unlikely anyone else would have been able to either. Harry started her music career in the late 60s as a backing vocalist for folk rock band The Wind in the Willows. In 1974 she joined The Stilettos and it was 47

there that she met her future lover and Blondie guitarist, Chris Stein. Splitting from the group, Harry formed Blondie with Stein in 1975, named–so after the catcall truck drivers would often shout at her. Recruiting Clem Burke to drums, Jimmy Destry to keyboard and Gary Valentine to bass, the band enjoyed varying degrees of success in the late 70s. But it wasn’t until they released their third album, Parallel Lines, that they hit the big time. Featuring their first US No. 1, Heart of Glass, Parallel Lines saw Blondie burst from the underground, led almost entirely by their front man – a woman. From there, hit followed hit – Call Me, One Way Or Another – and Harry descended
into the lifestyle of a–typical rockers: sex, drugs and rock n’ roll. ‘I was one of those idiots who thought they were gonna live forever,’ she remembers. After their sixth album, the band split and Harry embarked on a solo career achieving chart success across the world. Reforming again in 1997, Blondie have remained active ever since, releasing their ninth studio album in 2011. Today, at 67, that notorious hair and those prominent cheek bones continue to set her apart. Indeed, Debbie Harry is as ravishing as ever. Which is why it is timely that friend and photographer, Brian Aris, has chosen now to present an exhibition of never before seen shots. Crediting her as
‘the punk princess’ in his diary on the day they first met, Aris photographed Harry throughout her career. The results will be on display at Proud Gallery, Chelsea, from 17th January. Featuring pictures of Harry in her flat in New York, this unique collection captures the raw essence of the woman – her boldness, her playfulness – and stands as a worthy tribute to the life of an icon. But what would Harry make of this attribute? ‘Iconic? I guess so,’ she once said, ‘but it’s impossible to live up to. I’m still sort of a cult figure.’ We won’t disagree with that. Love is the message. Our true nature is to give love and be loved, and cultivating a loving attitude towards life will have repercussions for those around you. If we all focused on giving and accepting love, it would raise the vibration of the world. Pay attention to the areas of your life that need addressing. If you feel fearful, remember the classic saying: ‘feel the fear and do it anyway’. Vow to value your intuition this year.

Food and health consultant, and practitioner, Elizabeth Peyton-Jones, gives us 10 steps to healthy eating…
In my experience, to be at the top of your game you need to feel great in every way. But how do you achieve a lean, fit, healthy, focused, agile and youthful body instead of one that bloats, sweats, breaks out in spots, or aches all over? These tips will get you in great working order:

Give yourself a quick detox every morning: first thing, drink a glass of hot water with sliced lemon. Add fresh ginger if you have joint pain or stomach problems, and ¼ tsp turmeric if you have bad skin or inflammatory disorders.
2
To control cravings and reach your optimum weight: eat a protein (plant or fish); carbs (as vegetables); and fats (as essential fatty acids from whole foods). Avoid refined carbs, refined sugars and high salt.

If you break tip two, try this rejuvenating antidote: have a freshly pressed green vegetable juice (containing spinach, kale, cucumber, celery etc) instead of tea in the afternoon.

Plate your food (use a 22cm diameter plate): fill it as full as you like but know, that’s your lot.
To help your body stay young and vibrant think ‘alkaline.’ Your body works best at a slightly alkaline pH – to support that, eat 70/30 or 80/20 alkaline (green) foods to acidic foods (see the alkali/acid food chart in Eat Yourself Young for more details).

To keep lean, spend one day a week eating no sugar at all. That means no fruit, fruit juices, cakes, biscuits, sweets, alcohol, dairy, starch, potatoes, grains and bread

Wean yourself off high salt/sugar tastes by adding herbs and spices into your dishes, instead of salt.
Boost your immune system by eating garlic, onion, cayenne pepper, turmeric, ginger, sweet potatoes, seaweed, shitake mushrooms and elderberries regularly.

Eat some cinnamon daily: it contains chromium which helps regulate blood sugar levels. To tone your muscles and strengthen your mind, exercise for at least 20 mins a day.

COCONUT OIL Use something rich in coconut oil to protect the skin from harsh winds and central heating. It leaves the skin soft, supple and hydrated. It’s especially good for people who suffer from eczema and psoriasis.

FACIALS Living in the city, one’s skin tends to look dull and lack-lustre. Facials ensure the skin is thoroughly cleansed and do wonders for radiance. MASSAGE I find the Balinese or Malay massage treatment the most beneficial. The Balinese originates from the Spice Islands of Indonesia and is deeply rejuvenating and invigorating. The
Malay on the other hand is detoxifying. It boosts the circulation and is incredibly relaxing - the only massage ever to have sent me to a deep sleep.

EXFOLIATE For exfoliation it has to be Ushvani’s Kaffir Lime Cane Sugar Scrub. I know it’s mine, but I love it and would use it every day if I could. It leaves the skin truly moisturised and smells divine – really zesty and invigorating. It’s a great ‘wake-me-up’ during these cold months.

CONDITION I put a few drops of coconut oil into the palm of my hand and rub it into my hair. Then I wrap my head in a towel and go to sleep. It is a Malaysian tradition to deeply condition the hair.

Alternatively, dissolve it in hot water as an inhalation; it’s very beneficial for colds and flu. I also use it on long haul flights to relieve tension. HIBISCUS Hibiscus has fantastic anti-oxidant properties, even more so than goji berries or green tea. At least two cups of hibiscus tea a day is great for expelling toxins. Garden designer Marcus Barnett talks to Poppy Cross about Fulham, the front line and why he’s planning for the future
W
hen does a soldier decide to change his career to that of a landscape garden designer? On the front line, during training, over a period of leave? That was the question at the forefront of my mind as I headed to Fulham to interview garden designer du jour, Marcus Barnett. ‘It was nothing dramatic or impressive,’ he told me after a very fi rm handshake. ‘It just dawned on me that I wanted to build gardens. I actually tried to ignore the idea. But I never imagined a lifelong career in the military.’ After completing RMA Sandhurst in 1991, Barnett served seven years in the Scots Guards where he undertook a series of commands and military appointments. In 2003, he enrolled in the Inchbald School of design – completing the course in 2004. Talent and determination propelled his career forward, and in 2005 he exhibited at Chelsea Flower Show. It was there that Savills spotted his talent and subsequently offered him sponsorship in 2006 and 2007. In 2011, he beat six other designers to win further sponsorship from The Times (in association with The Royal Botanic Garden)
and his garden was relocated to Kew, following the show. Today, he has 25 projects on the go. It sounds like rather a hefty workload, but with a background in organisation and strategy, he is more than qualified to manage it. Luckily most of it is based in London, although his reputation is such, his client list is now stretching overseas. Instantly intrigued, I quiz him on his ‘foreign clients’ hoping for an impressive list of the world’s highest fl iers. Quite why I thought I’d be able to lure into indiscretion, a man schooled at the foremost military training ground in the world, I’ve no idea. Safe to say, I didn’t succeed. He did tell me however, that projects in the pipeline include a park in Central London (an infuriating response – which park?), a ‘glaringly modern’ villa that needs revamping in the South of France, an ‘obscenely modern’ project in Nigeria, and a large-scale landscape in a ‘Type A’ suburb in Taiwan. So, France, Nigeria and Taiwan. Not what I’d call similar terrain. I wonder where he gets his inspiration from. ‘I’ve definitely got a natural tendency to draw on traditional English design,’ he says. ‘I’d say
my style is suitably modern. But all my designs are created to last – they have longevity.’ I revert back to his clients and ask if there are any specific ‘types’ he prefers to work with. ‘My ideal projects,’ he responds tactfully, ‘are those where the client isn’t afraid to embrace a modern style. It’s exciting to be free and adventurous with materials, shapes, forms and ideas.’ His eyes are sparkling now and it’s clear to me that he is somebody who is doing exactly what they were born to do. Though I couldn’t help but wonder if perhaps there might be another obscure career-change in store, like piloting perhaps? He laughs. ‘My aim is to have a legacy. To create something that people can enjoy and that won’t come into its own for 200 years. I want to plant trees and build for the future generation.’ He makes it all sound so simple. There must be a downside – otherwise, we’d all do it. ‘YES!’ he exclaims, ‘it’s very stressful. When undertaking personal projects, you’re dealing with someone’s home so naturally they’re passionate about it. I can work with them for four years – that’s a long time. There can be 79

rainy months, which makes building and planting difficult. Of course there have been disasters...’ I think about his own garden, and wonder if in spending so much time and effort on other peoples, whether that might be considered a bit of a disaster. But en contraire. Th e Times have recently exhibited the results of his two month garden redesign. It now boasts a Wendy House, lots of new trees, shrubs, and even a garden shed. It does sort of beg the question, does the man ever relax? Thankfully the answer is yes. In fact, he is shortly to embark on a family holiday to Morocco. ‘It will be peppered with work,’ he warns, but assures me he will defi nitely take time out to enjoy it and also partake in another of his great passions – kite surfi ng. ‘Kite surfi ng!’ I shriek. ‘With the whole family?!’ ‘My children don’t kite surf yet,’ he chuckles, ‘but they will... they don’t have a choice!’ With that, our 30 minutes are up. As I walk back down the King’s Road, I think about the conversation I have just had and the extraordinary man I have just met. Marcus Barnett is clearly someone who enjoys freedom. Freedom to do what he loves – garden design. He is adamant, however, that the success of his business lies in his team; skilled workers with whom he has a great relationship. But I think it’s his passion for the business that propels it forward. It couldn’t survive without it. After all, anyone can plant a seed – but it takes care, patience and passion, for a garden really to grow. 80

Did you always want to be a chef? From the age of about 14, yes. I followed my brother into catering and went to catering college straight after leaving school. Prior to that I thought I would go into the family fruit and vegetable business. Who are your culinary heroes? I am probably a little bit old for heroes but I have huge respect for Guy Savoy, Nobu Matsuhisa, Daniel Boulud, Danny Meyer, Chris Corbin and Jeremy King. What was the meal that changed your life and why? It was the Chinese meal that Mum and Dad took me to on my 18th birthday. It made me realise that I needed to go to London to learn to cook properly. What’s been your proudest moment? My children give me lots of proud moments. Last summer my eldest son was awarded the sports prize for his year group. My other son has just been selected to swim backstroke, he is so delighted that I cannot help but be proud of him. However, personally I think being given the opportunity by the
Maybourne Hotel Group to work with them and open a restaurant in my own name was great and something I will always be proud of. You and your team just won an Acorn Award – what did that mean to you? Well, Dimitri Bellos our restaurant manager received an Acorn this year. I am very proud of his achievements; he started with us as a commis waiter and has moved through the ranks. Chantelle Nicholson received an Acorn a couple of years ago; she is now the general manager at The Gilbert Scott. The success of both restaurants is down to the hard work and passion of the dedicated teams in each site. When individuals are recognised by their peers it is a huge boost for them and for me as an employer. I could not do it without them. What are your current favourite dishes at Marcus Wareing at The Berkeley? It’s a difficult choice – like asking me to choose my favourite child! The dishes would not be on the menu if I didn’t like them. However, I know the haunch of
venison that we serve on our lunch menu is very popular with our guests. What are your top three ingredients? Salt, sugar, vinegar. Without them many dishes would be flavourless. Ultimately I like most ingredients and the challenge is to make something tasty. What’s the best culinary advice you’ve ever been given? Chef and friend David Nicholls, who founded the Nicholls Spinal Injury Foundation on behalf of his son, once offered me some very sound advice. I use it time and time again: ‘Don’t make important decisions on emotions. Sleep on it. You will wake with a different opinion in the morning and make a more considered decision.’ Where do you eat out in London when you’re not working? I like to try everywhere and there are so many new places at the moment. I recently enjoyed an evening at 34 and Delaunay remains a favourite but equally I would return to Ducasse at the Dorchester for a special meal or go to Goodmans for a steak.

What do you like to knock up for a quick supper? I don’t tend to cook quick suppers as I am normally at work. Risotto is a favourite or a dish that can be used to empty the fridge – bolognese is a good one. What’s your guilty food pleasure? Chocolate biscuits and cake (and the kids’ trick or treat sweets. They now hide them). How do you like to relax? I like to watch sport on TV, such as football and boxing which is always relaxing. Equally I love exercise; it gives me time to think and makes me feel healthy. I recently broke a bone in my foot after competing in a charity boxing match ‘Rumble in the Kitchen’. Seven weeks later I am now finally managing some exercise again and I have really missed it. What are your future plans? To expand the company using loyal talent grown from within. COFFEE CHOCOLATE MOUSSE 100g 70% chocolate 100g egg yolks 120g sugar syrup 175g semi-whipped whipping cream 2x shots of espresso, cold 1x tsp ground coffee
Ingredients:
MASCARPONE CREAM 500g Mascarpone 200g semi-whipped whipping cream 150g egg yolks 150g masala 2x gelatine leaves
Ingredients:
SABLE BRETON 500g butter 450g demerara sugar 160g egg yolks 675g flour 10g salt 45g baking powder
Instructions:
• Using the yolks and sugar cooked to 121°C, make a sabayon. • Scale off 90g and fold into the warm chocolate. Make sure it’s free from ‘particles.’ • Once the mix is cold and fluffy, pour in the cold coffee and add the ground coffee. • Gently fold in the cream, make smooth,
but being careful not to over work the mousse. Ensure the mousse is strong enough in coffee or and add more coffee if necessary. • Whisk the yolks with sugar until they are light and fluffy. • Fold through mascarpone then the cream. • Warm the masala and add bloomed gelatine before straining. • Fold through mix until smooth. • Cream the butter and sugar until fluffy. • Slowly incorporate the yolks. • Add the flour, salt and baking powder and mix well until completely smooth. • Cling film and leave to rest in the fridge for at least an hour before use.

Roll the sable out. Bake at 170°C until golden Cut out into 7.5cm discs and leave to cool Using a cutter as a mould, place back over the sable and pipe the chocolate mousse around the inner rim, with the tiane mould in the centre keeping a clear hole. Allow to set. • On top of the mousse, pipe the mascarpone cream (still with the mould in the middle). Allow to set. • Once firm remove the two moulds and spray with part 61% chocolate to part cocoa butter; freeze. • For service allow the rings to come up to fridge temperature and finish with grated 70% chocolate. 85

Edwina Langley takes a culinary journey down the Kings Road to discover wet walnuts and a fondu of leeks
T
he entrance to Medlar on the King’s Road is so discreet, I walked straight passed it. The unassuming grey-fronted restaurant, characterised by the spindly green Medlar name, blends in almost too well to its surroundings, you are in danger of confusing it with an upmarket antiques shop. In the midst of a rainstorm, I arrived for dinner. Swimming through the door, a legion of staff stood ready to take my coat – mercifully unfazed by the jumpers, scarves and bags that accompanied it. I walked into the restaurant and what first struck me was how small it seemed – and by small, I mean close – when in fact, as I think back to it now, it probably wasn’t that small at all. The dining area was set up mainly in tables of two, which suggested its intimate feel was not accidental. We sat down and were instantly introduced to our waiter who looked after us throughout the night. Opting for sommelier assistance, we started off with a deliciously crisp glass of champagne – precisely what was in order after my swimming gala. I opted for the venison tartare to start, mainly because I was excited by the idea of polenta chips. It arrived, a perfect crown of ruby flesh, scattered decoratively with pickled
mushrooms and those ‘chefy’ herbs, made to look slapdash on the plate but had most likely been placed there with tweezers. It was so good, I practically ate my fork. My dining partner opted for the crab raviolo, which she said was delicious and properly satisfied her curiosity as to what a ‘fondu of leeks’ would taste like: ‘scrumptiously leeky’, apparently. Her one complaint was that salt and pepper weren’t on the table, and when we asked for it, it was taken-away half way through the main course. My food was seasoned perfectly, but ‘everyone has different tastes,’ she reminded me, which I suppose is a fair observation. At around this point our sommelier returned to check we had enjoyed his wine choices. We had done, very much, though our appreciation wasn’t entirely enough to prevent a fit of giggles when we learned the wine I had been drinking was unfairly titled ‘Bolyki.’ Our main courses arrived as resplendent as that which had gone before. I chose the gnocchi of cavolo nero and reblochon because it contained ‘wet walnuts,’ and wasn’t that just a bit intriguing? I don’t know what I was expecting but what I got looked like an edible meadow. Brilliant green in colour, each gnocchi had been drizzled with melted
reblochon, making what could have been rich and heavy, light and incredibly moreish. The walnuts were not, in fact, wet but dry, which added crunch to an otherwise softly textured dish. My friend had the duck, which I tried and can verify was the perfect pinkness, perfect plumpness, perfect everything. After that mountain of food we couldn’t possibly eat another mouthful – so naturally ordered the tarte tatine for two and polished off the lot. I am not a pudding person but what the chefs at Medlar infused into that sticky, sweet, apple pastry of joy is something worthy of the word ‘heavenly.’ We had arrived at 7:30pm and were still in our seats chatting at 11pm – a miracle since the norm these days is for waiters to breathe down your neck, as if willing you to stuff your face and get out. At Medlar, they filled up our water glasses and left us to it. ‘As good as it gets,’ said Jay Rayner. ‘The best value anywhere in Chelsea,’ said A. A. Gill. Devilish to find though it may be, visitors to Maison Talbooth quickly swap exasperation for delight as they note with relief upon arrival that this place is well worth any battle with the satnav. Something of a trailblazer, the hotel opened 40 years ago to much fanfare on account of having been one of the first truly boutique offerings in the country – and happily its reputation has never dwindled. Cosy flagstone floors throughout, comfortable yet grand reception rooms and exceptionally warm hospitality make Maison Talbooth an utter joy. Staff will happily run guests down to the nearby town of Dedham Vale, which is not only all Georgian elegance itself, but is also the gateway to Constable country walks along the River Stour to Flatford Mill.

The spa is a source of great pride at La Maison Talbooth – and it’s easy to see why. Situated in the Pool House, the expert therapists use Dermalogica products and a soothing manner to ensure you spend a pleasingly soporific time here. For those hardier than we were, the outdoor pool is worth a plunge – but is perhaps most inviting during the warmer months.
The restaurant
Le Talbooth – just a short drive from the main hotel, which the staff are happy to drop off and collect from – is a grand timber-framed building where the excellence of the riverside setting is matched by the menu. Championing Anglo-French cuisine, which includes such dishes as Colchester crab ravioli and cumin roasted scallops to start and breast of Creedy Carver duck to follow, local provenance is essential here. There’s an excellent list of both old and new world wines at prices for all pockets. Meanwhile, try the avocado and chilli and rye bread at breakfast (served in the main hotel); it has a sublime kick and is just the thing to start the day. It is little surprise then that it should be so covered in awards and accolades, including the 2002 Conde Nast Johansen Guide Award for Restaurant of the Year.

Otto Herwig came to Arosa in 1883. He was recovering from a lung condition and he needed clean mountain air to recuperate. It must have worked because he set up the Berghilf Sanatorium for lung patients in 1892. And so Arosa became primarily a place for bronchial sufferers until the winter season of 1929/1930, when it transformed into the Tschuggen Grand Hotel. Now, apart from Mario Botta’s new 43,000 sq/ft spa, the peace and quiet and fresh air of the little mountain-top village has hardly changed. The hotel lies at the top of a winding road and, when it finally comes into view, it’s like some secret place surrounded by pine trees that’s just sitting in the side of a mountain, waiting to be discovered by errant travellers. As well as taking on Mario Botta’s architectural vision, Carlo Rampazzi has recently been entrusted as designer of the rooms and, my word, it feels like you’re in an artist’s vivid dream. Huge, taller-than-needed headboards with individually decorated squares, colourful-patterned ceilings, high-back chairs and, in the south-facing rooms, just the panoramic gloriousness of the Alps. With 400 sq/ft to walk around in the smallest room, space isn’t exactly lacking, and the adjoining bathroom with marble-covered surfaces and heated floor is amazing. The spa triumphs: hot and cold pools, 12 treatment rooms, Swedish and Turkish saunas, a Jacuzzi… any sore joints after a hard day’s skiing will be well and truly loosened up. To add to this, the newly-built Tschuggen Express takes 12 people straight from the hotel onto the mountain in two and half minutes. The amount of times mornings have turned into mayhem with the disorganisation of assembling skis and heading to the chair lifts – that hassle is, thankfully, completely gone. ravelling to Greece when the headlines scream doom and gloom doesn’t feel quite right. Or does it? Are we supporting a dying economy with our imported pounds or exploiting a disastrous situation? What about rioting and will people resent us? We weren’t sure. The travel industry assures us that it’s fine, safe and a good idea to visit Greece. And anyway, it seems that there’s Greece, and there’s Corfu. In Corfu, it’s business as usual, from the bustling airport to the tourist trail. Corfu is a place that relies so heavily on tourism that there’s little industry here that’s not fuelled by it in some way, from big hotels to shops selling snorkels and lilos, and if we all stayed away there would be no economy at all. The same applies to most of the islands and much of the mainland too, thanks to its beautiful, craggy coastline, sunny climate and decades of tourist-friendly development.
Marbella Beach is one of the island’s finest hotels (the confusing name refers to its beautiful beach, not the entirely unrelated Spanish resort) and it’s a large, hilltop structure, spread over an irregularshaped site, an easy half-hour taxi ride from Corfu’s airport. While we are in the taxi, my phone rings. ‘Ms Harte? I’m afraid you’re going to miss dinner, but would you like us to set something up in your room for you? Do the children have any preferences?’ Someone at reception has clearly been reading my mind. The children haven’t eaten and it is getting late. This feels like a good start to a week that’s designed to be undemanding and indulgent. We arrive in our deluxe family suite to find, as promised, a meal laid out for four, complete with – oh joy – a bottle of wine, plus mini desserts for the children. Switching off the extreme air-conditioning and opening the (two) balcony doors, we

acclimatise to the fiercely warm evening air and wonder what the view will hold when the sun rises. Though not huge, our accommodation is cleverly designed for a family of four: there’s a children’s bedroom with its own bathroom, a living area with a sofa and outsize television, plus a main bedroom with a second outsize television (our girls are very impressed with this – two televisions!) and a decadent-sized bathroom. When the sun does rise, it reveals spectacular views from both balconies. We can look down over the hotel’s manicured gardens to the beach and along the luscious coastline. And because of the angle of the rooms, and the lack of internal doors, we can see the sea from anywhere in the suite, including the bathroom. It’s a well-equipped arrangement; we have an espresso machine, a constantly refilled fruit bowl, a mass of toiletries, an extravagance of towels and a well-stocked mini bar.
You can hire a car and tour the island easily from Marbella Beach, and a day in Corfu Town is definitely not to be missed, but if you’re here for a week as a family there’s ample amusement to be had without leaving the hotel. There are five swimming pools for a start, and access to the beach (clear water and good snorkelling) is down some rocky steps. We spend the week wafting from meal to meal via the pools, the beach and our balcony, with a few visits to the gym and some of the planned activities – we avoid pool aerobics (too comical) but enjoy archery, while our daughters (age six and three) love the daily mini club, run by the energetic and lovely Steffi, who takes everybody’s children off their hands for a very welcome two hours every afternoon. You can never be hungry at Marbella Beach. Mealtimes comprise an allencompassing spread and the buffet offers a schizophrenic abundance of international favourites in a dining room that overlooks the sea. For children, it’s heaven. Left to their own devices they can have coco pops and pain au chocolat for breakfast, followed by spaghetti and chips for lunch and dinner. For us, ultimately, the most delicious things were the simplest and most local – yoghurt
and honey, for instance, and tomatoes and feta. Every evening brings entertainment that ranges from the bizarre but more hilarious than you’d expect (an Eastern European Beatles tribute band) to the fun for all the family (fire-eaters on the beach). If you wanted to eat out every night, you’d have to hire a car since there’s nowhere really to walk to, but this is a family holiday and it’s hugely convenient to stay put. Moreover there’s a kids disco every single evening and who could bear to miss that? With its beautifully kept grounds and spacious feel, Marbella Beach offers proper relaxation. It may be large, but it doesn’t feel crowded; it may be family-oriented but it’s not full of screaming brats. It retains a calm, almost otherworldly feel, while catering quietly to your every need.

Bottom line is that if you’re going to have to pay the Annual Levy you have a problem. Your choice will be to stay and pay a large annual charge plus tax on any gain after April 2013, or, if you unwrap your property into your own name you may be left with a huge IHT liability. I suppose HMRC is telling you to effectively make sure you don’t die in your own house. Lovely. Still, pensions are the next big worry. Over 350 removal boxes were filled across the company’s 19 offices, weighing over 6.5 tonnes, to create Christmas hampers for London’s most vulnerable children. This years master removers Anthony Ward Thomas supported the charity day by providing lorries, removal men and boxes for the day to help transport donations from the D&G offices to the Kids Company Headquarters in Blackfriars. The day was also supported by The Keyholding Co who helped collect donations across their network. The items, ranging from packets of pasta to luxury boxes of chocolates, were packed into thousands of individual hampers by Douglas & Gordon staff, ready to be handed out at
Christmas to the 17,000 children that are looked after by Kids Company. As well as food and 750 toys, Douglas & Gordon collected over £10,000 from generous donors within Douglas & Gordon territory. Ivor Dickinson, managing director of Douglas & Gordon said: ‘Once again we have been amazed by the generosity of homeowners and businesses within D&G land. In previous years we have collected over 8.5 tonnes, but considering the recession, it is no surprise that the total donations weighed in at 6.5 tonnes. RUTH BLOOMFIELD The residents of Chelsea were given a little pre-Christmas gift by the Government when controversial plans for a socalled Mansion Tax on properties worth £2m or more were ditched by Chancellor George Osborne. Estate agents from Flood Walk to Danvers Street breathed a collective sigh of relief at the news, but where does the status quo really leave us? One thing is certain. Prices in the area remain astronomically high. The Candy Brothers recently spent £75m on Gordon House, which lies within the grounds of the Royal Hospital, fighting off competition from Roman Abramovich, and which they plan to double in size and sell for an estimated £150m+ Pity poor old Robbie Williams, a mere international pop star who has been house hunting locally and is finding the “astronomical” prices” frightening - even though he’s worth £100m. “I don’t know how anybody can afford to live in London full stop,” he said. However, according to forecasts by Savills estate agents, the wild growth in prime central London will settle this year/2013 with the market stagnating and no above-inflationary price increases expected until at least 2015. So bad luck to those who enjoy calculating the paper profit their properties are earning, but good news for those not keen on living in a ghetto of absentee oligarchs, where the local pub has been closed down to make way for another McMansion. Consider the cautionary tale of how Hampstead mutated between the 1970s and today: once a quirky urban village where millionaires and artists rubbed shoulders and everybody used the local, independent shops. Now this pretty suburb is a tourist attraction stuffed with chain stores where most of the locals vanish to the City in the morning – or aren’t in fact there, since their NW3 home is only one of their bases around the globe. Future capital growth is not to be sniffed at, of course, but in the here and now a little bit of stability could be just what Chelsea needs.

F
or many people, living within a stone’s throw of the office could potentially feel claustrophobic or all-consuming. However, if, like me, you love your work and you also love where you work then it can feel like a tremendous privilege. I have lived in Pimlico for almost ten years now, first as a young batchelor and now as a happily married young man. Pimlico has provided the perfect backdrop for both these stages of my life and apart from a short sabbatical at our Jackson-Stops & Staff Holland Park office, I have also spent most of my working life in Pimlico. Prior to living here, I spent a short while in Chelsea and another – even briefer – period residing just off Sloane Street in Knightsbridge. Both areas clearly have their own merits and attract a great many loyal, die-hard residents, but for me it can only be Pimlico. My wife and I divide our time between London and Hampshire, but I often find myself running back to all that Pimlico has to offer. If that well-known phrase, ‘location, location, location’ is anything to go by, then Pimlico simply has it all: stunning architecture provided by Thomas Cubitt, among others; peaceful streets to spend time meandering through; the Pimlico Grid, The Westmoreland Triangle, The Moreton Triangle and the stunning garden squares such as Eccleston, Warwick and St George’s. Then of course there are the fantastic local residents, who add to the unique sense of community. I shall not embarrass them by naming them, but they know who they are. One of my favourite pastimes is eating out and we are fortunate that Pimlico offers a
plethora of different cuisines to sample. If you’re after a traditional English pie and a glass of cider, perry or fruit wine you can do no better than a visit to Chimes; the Pimlico Tandoori is renowned among locals for its excellent home cooking – and you can take your pick of fabulous Italian food at O Sole Mio, Carrafini and Uno, among others. If you enjoy preparing good quality, organic food at home then a visit to the Pimlico Road Farmers Market and Tachbrook Street Market is a must. For cultural excursions we are close by to the highly acclaimed St James’s Theatre, the West End, as well as the National Theatre, where Felicity and I recently enjoyed a wonderful production of She Stoops to Conquer. In terms of advice, for buyers it can be useful to prepare a ‘wish list’ and if you find something that falls within a 60% strike rate then you’re doing well, the perfect property is virtually impossible to find. I would strongly urge sellers to put their housekeeping in order, eg lease information, service charge documentation, any planning applications and a preferred solicitor. Applying for local searches in advance of agreeing an offer can also save time. Finally, be realistic in terms of what you ask. A huge amount of time can be saved by not spending the crucial first few weeks treading water before being asked for a price reduction in order to agree your deal.
