t’s a fact that’s never ceased to bemuse me. Not in my worst nightmare would I sit down to Sunday lunch in a restaurant wearing solely my bra and pants. But add some sun into the equation, position the restaurant seaside, change my attire to a bikini, and somehow it’s acceptable. We spend most of the year trying to cover our bodies up, but in July, we’re required to set them free. It’s therefore most important that we feel proud of them. So that when we emerge from the cool waters of the Mediterranean, we too can do so in the manner of Ursula (Andress, not the Sea Witch). Welcome to The Body Special. Filled within these pages are all sorts of features, tips and ideas to help you either achieve your dream body or maintain the wonderful one you already have. No-nonsense Jo Malone chatters about her favourite scent, guaranteed to make our necks and wrists smell like Covent Garden Flower Market in spring. rixton, the 80s, riots, drugs, drink. It’s powerful stuff. Not least when you’re seated less than half a metre from the action. Doug Lucie’s Hard Feelings at the Finborough Theatre sees a band of Oxford graduates battle with their youth as rioters battle with police outside. Landlord Viv rules with an iron fist. She accommodates freeloading friends – artist/model, Annie, and wannabe pop star, Rusty – whilst alienating those who wish to excel – Jane, the law student, and her left-wing journalist boyfriend, Tone – anyone,
in fact, who poses a challenge to the hedonistic order of the house in which Viv finds stability. Questions of sexuality, privilege and violence are called into play in this dark and poignant comedy. A stellar cast supports James Hillier’s revival. Isabella Laughland brings an excellent balance of vulnerability and vindictiveness to Viv, whilst the sharp comic timing of Margaret Clunie, as Annie, offsets some of the play’s darker moments. Jesse Fox injects Bowie-esque sexuality to Rusty, whilst Zora Bishop, as Jane, impresses with genuine tears. A fantastic piece, not to be missed. fascinating well-researched new book by local author Lucinda Hawksley explores the history of the suffragettes and how their courageous fight for equality came to change the world. Published to commemorate the 100th anniversary of the death of Emily Wilding Davison, the suffragette trampled under the King George V’s horse during The Derby, it offers valuable insight into the political and social struggles of women in the 19th and early 20th centuries. Using fascinating contemporary diaries, anecdotes and accounts, Lucinda recalls the huge sacrifices made by courageous figures such as the Pankhursts, Dora Montefiore and Annie Kenney to achieve voting rights for women. ‘They knew that they would never see equality in their own lifetimes, but worked selflessly to ensure women of future generations would,’ explains Lucinda. She examines how women were portrayed in contemporary literature and newspapers, such as in Mary Wollstonecraft’s The Vindication of the Rights of Women in 1792. Lucinda specializes in writing about 19th and early 20th century women and has written riveting biographies of the artists Lizzie Siddal and Kate Perugini, as well as a bicentenary commemoration of Charles Dickens – her own great, great, great grandfather. F
riday afternoons are often torture. Seemingly endless, they represent the cruel barrier between you and weekend freedom. One Friday last month, however, was a blissful exception as I had been invited to take a sneak peek into the daily workings of the Blue Harbour Health Club and Spa at the Wyndham Grand Hotel. My tour was to include sampling one of their new massage treatments and so, needless to say, I was out of the office like a shot. Situated in the Chelsea Harbour, the area around the Wyndham Grand Hotel is not a part of the city I often find myself in. The clustered boats bobbing gently in the marina had a calming effect and the novelty of being in such an unexplored area of London was quietly exciting. Due to the elation of my Friday afternoon escape I had arrived at Blue Harbour an
eager 20 minutes before schedule. Luckily, my therapist was free and greeted me warmly before asking me what I wanted to do first. I was slightly taken aback as I had assumed a tour of the facilities plus a massage was all I’d enjoy. ‘I’m afraid I didn’t bring a swimsuit – or anything,’ I said hesitantly. ‘Well, why don’t you start off with a little steam and then maybe a sit down in the sauna? After that you’ll be ready for your massage. I think that’s best, don’t you?’ Who was I to argue with a professional? In no time at all I found myself wrapped in a fluffy robe, shod in classic spa slippers, walking along the corridor to the sauna. The heat was enjoyable but very intense and so I didn’t last long. My next port of call was the steam room. Unfortunately, as short a time as I’d lasted in the sauna, my occupation of this room was even more pathetic. My slight asthma combined with
the incredibly large, sudden influx of steam made it a trifle difficult to breathe so I decided on a hasty exit and returned to the relative safety of the sauna. After a quick shower with some delicious smelling shampoos I ambled into the changing room to find my cheerful and attentive therapist waiting there for me. ‘See?’ she said, with a knowing air, ‘much better to do all that first. Now you’re ready.’ I had to admit, my mildly traumatic experience in the steam room aside, I did feel infinitely more relaxed than I had done before and much more comfortable with the thought of stripping off for a massage now I was squeaky clean. As we made our way upstairs to the therapy rooms and away from the pool and sauna area, the atmosphere and lighting changed, signalling a definite shift in environment. My lovely therapist pointed out various landmarks on the way, such as the dimly lit and entirely inviting relaxation room, festooned with plush chaise longues, specifically designed for after-treatment unwinding. The treatment I was about receive was the new Russie Blanche Signature Massage and as I readied myself, I was told I was one of the first to test it.

The brand was created by Yulia Lemigova, a fashion model and the last Miss USSR, to combine Russian and French massage techniques. My therapist selected the destress massage as the one best suited to me, an innovative combination of relaxing and deep massage. The oil used smelt heavenly and contained Siberian Golden
Root (a recurring ingredient throughout the Russie Blanche Range), Bergamot, Lavender and Macadamia Oil, as well as a few others. The massage itself lasted an hour but from minute one, I could feel my cares fall away under the expert touch of my therapist (who was quickly becoming one of my favourite people). This status was
cemented when once again in a conciliatory tone she declared that I wouldn’t have experienced the full range of the products if she didn’t give me a quick facial cleanse. The Russie Blanche Serum she used on my face worked wonders, which I was assured was down to the hyaluronic acid found in the ingredients, which completely revitalises the skin. I left the spa in a state of dazed relaxation, having passed a gaggle of similarly blissed-out women lounging in the post-treatment room on my way out. My face was glowing and my skin was silky smooth all over. The only slight cloud on my horizon was the unfortunate way in which my hair had dried, perpetrated by the head massage portion of the treatment. Outwardly, I may have looked a little bonkers. Inside I was completely tranquil – save the frantic plan I was hatching to return there next Friday afternoon. With a hair drier.

Siobhan Wood discovers the lost shots of sixties photographer Eric Swayne

hilst rooting around the late Eric Swayne’s studio, his son, Tom, uncovered a cardboard box labelled simply: ‘Do not throw out’. Inside, were found hundreds of never before seen negatives; images of some of the 1960s most iconic faces. ‘I discovered a beautiful trove,’ Tom remembers. ‘Pictures of Mick [Jagger] shot informally in Dad’s studio, just test shots for a friend, and Keith [Richards] and Charlie [Watts] too – a whole series of them fooling around in Dad’s flat with Chrissie Shrimpton.’ Eric Swayne was born in the East End in 1932 and started working life by following his father into the police force. He was expelled for giving his uniform a ‘Mod’ makeover and travelled to Paris to try his luck as a nightclub singer. Returning to London in circa 1960, he took up work as a barista in a hip new Soho coffee house, which won him a dedicated following. London’s best and brightest visited regularly to sample his much-loved Frenchstyle coffee. Photographers David Bailey and Brian Duffy, both regulars at the café, encouraged Swayne to take up photography after noticing his interest. Bailey and Swayne bonded over their mutual East End upbringing and became good friends; Bailey often acted as mentor and confidant to the aspiring photographer in years to come. From his inauspicious beginnings, Swayne went on to photograph some of the world’s greats. A baby-faced Mick Jagger at the birth of the Stones, and the pre-wrinkled Keith Richards, were amongst the faces he snapped. Others included
Swayne captured icons in their more vulnerable moments
David Bailey and his then wife, the stunning Catherine Deneuve, famed designer Ossie Clark, Grace Coddington sporting the late Vidal Sassoon’s famous five point bob, Swayne’s then girlfriend, Pattie Boyd (pre-George Harrison), and Chrissie Shrimpton (Mick Jagger’s first love). Swayne’s all-access pass to the most sought after names of the decade allowed him to capture these icons in their more vulnerable and unguarded moments. At the height of his career, Swayne was shooting for Italian Vogue, Vanity Fair and Queen. But by the late 1970s, Swayne had gone bankrupt and lost his studio. Forced to go down the less glamorous route of working for advertising agencies, his career never recovered – though his passion remained. He died, tragically, in 2007, just weeks after learning he had terminal cancer, leaving behind his much-loved sons, Tom and Matthew. ABOARD STATE-FUNDED BOARDING SCHOOLS ARE BACK IN FASHION WITH ETON’S HEADMASTER LEADING THE WAY reports AMANDA CONSTANCE
T
he English boarding school. For many, it’s a term that conjures up Dickensian institutions where the upper classes send their offspring to be trussed up in top hats and tails, deprived of love and decent food, and then released, years later, to run the country. Tony Little wouldn’t agree. The headmaster of Eton College is a vociferous advocate of a form of schooling that many regard as archaic. He believes that boarding encourages the development of both self-confidence and a sense of purpose. Though clearly offering an above average education at Eton, the money in question is an awful lot, with basic annual fees coming in at more than £32,000. But Little believes state-funded boarding schools can deliver much of what Eton can – and for far less money. To that end, he is currently in talks with ministers about the creation of a national network of state boarding schools. ‘In Britain, we have an internationally recognised approach to education through boarding. In the state sector, it has only been in the last year or so that there has been a growing realisation of how well this can work for young people. I think we would benefit nationally from having a good quality boarding network across the country, close to where young people live. With such a network, there’s a good chance exam results would go up.’ At present, there are 34 state boarding schools in Britain. The buzz about opening more can be seen in the marked rise in applications for boarding status from academies, educational charities and free schools. In the first four months of 2013, the State Boarding Schools’ Association (SBSA) said it had received more than 20 applications from those interested in opening new institutions. This compares with just one application a year in the past five years. These new schools differ from traditional fee-paying boarding schools by charging only the cost of boarding, reducing the
village of Holyport, near Maidenhead, Berkshire. Eight miles away from Eton itself, it will eventually take 225 boarders and 275 day pupils, who will use many of Eton’s facilities, including its magnificent sports grounds. Not surprisingly, more than 700 families have registered their children – even though some are only two years old. ‘If I could bottle it, what I want to come out of Holyport is exactly what I see here [at Eton],’ says Tony Little. ‘Young people coming out with this sense of self-worth who are going to be engaged citizens, who believe in the art of the possible, who roll up their sleeves and get things done.’

According to Janette Wallis, Senior Editor of the Good Schools Guide, the recession is forcing cash-strapped parents to shop around and many ‘feel there are better state opportunities available than in the past.’ £10,000-a-year may still be a substantial outlay but it often cancels out childcare costs. There is also a recognition that boarding has changed dramatically from the days of ‘fagging and flogging’. The new, modern institutions take pastoral care as seriously as academic achievement and most offer weekly boarding, which can be ‘an attractive proposition for working parents,’ according to Hilary Moriarty, Director of the Boarding Schools’ Association. Three academies opened boarding facilities last year, with five more announcing plans to do the same. The Wellington Academy in Tidworth, Wiltshire, sponsored by the £30,000-a-year Wellington College, also offered boarding places to 100 pupils in 2012. And Durand Academy in Stockwell, southwest London, has plans to open a £17m ‘Eton of the state sector’ for 600 inner-city pupils in the village of Stedham, West Sussex too. And next September, Eton will open Holyport College, the first free school sponsored by and modelled on Eton, in the

A Middle Class Author’s Day in
CHELSEA with Zebedee Helm
A
nyone who is talented lucky enough to have had a book published will tell you that despite our best efforts, most of us allow ourselves the pleasure of indulging in wildly unrealistic expectations as to how the thing will fare. We imagine weeks at the top of bestseller lists, film offers, award ceremonies, gala dinners and free clogs, so the reality of those first meagre sales figures stings like a bucket of cold bathwater to the face. To avoid this we dream up wheezes to increase awareness of our precious creations and agree to pretty much anything that could possibly help sales. So, just for the fun of it, and in no way a cynical ploy to get anyone to buy my book (The Middle Class ABC), I decided to don a piecrust collar and quilted jerkin and spend the ultimate middle class day in Chelsea.
His Majesty The King’s Road
I
f Sloane Square is the Mecca of Chelsea, then to badly map read a metaphor, Peter Jones is its Taj Mahal. It was at this shrine that I started my pilgrimage. There was actually a thing I wanted to buy there too, a halyard for my Nigerian straw hat, which because of its wide brim and shallow bowl, keeps blowing off my head when my dog farts. I hadn’t been inside the place for 30 years, since my grandmother took me there on my birthday to buy me a purple pillowcase. It might just be me, but I found
it distinctly reminiscent of a John Lewis. I drew a blank on halyards in both Hats and then Haberdashery and was sent to Shoelaces in the basement, a joyless journey down several escalators. I lost heart (and my way) amongst the Le Creusets so let myself out of a side door and settled straight into the plastic whicker seats outside dear old Colbert for a well earned pot of coffee. Colbert has been on the same spot at the head of Sloane Square for decades, although it recently underwent a change of name, and ownership, and style, formerly being a completely different place called Oriel.

The Croissant
S
ince Colbert was new I thought it best to play safe and order something simple, so I chose that noble British middle class staple, the croissant. It was the most expensive croissant I have ever met (£3.75) and it arrived all alone on a small plate. I asked the garçon for some butter and jam to liven the thing up and he reappeared several minutes later with some butter. He evidently felt that he had fulfilled his duties, so in that dignified middle class way of not causing a fuss I didn’t push him any further on the jam. The scientific process of judging the quality of a croissant is to draw a diagram [page left] of the thing before and after the eating of it. If your plate, table and shirtfront are completely covered in pastry flakes then it has been a successful croissant.
Overcoming A Trauma, For The Sake Of My Readers
A
few years ago a terrible thing happened to me in the Saatchi Gallery on the King’s Road. I, the poorest person by over a mile attending a charity auction, accidently bought a child’s painting of some cows standing in a water meadow for £6,000. There was no way I could pay for it but, to cut a long story short, I hatched a cunning plan, to issue 300 prints of a cartoon depicting my moment of rashness and sold them for £20 each, thereby raising the sum I had pledged. It worked brilliantly, but the incident scarred me, not least because the charity never gave me the painting and, to make matters worse, the infant phenomenon went on to become a superstar, and his work now

is worth £6,000 (the cow ones even more). So the Saatchi Gallery on the King’s Road is a place that sends shivers down my spine, but in the interests of this piece I decided to confront my demons as it would be the perfect place for that very middle class thing, a dose of culture. You can only guess at my delight disappointment when I discovered it was ‘closed for a private function’, then horror when on closer investigation it turned out that the function was a Rosé Wine Tasting Gala in aid of Starlight, the very charity that had stitched me up.
Factor again in the autumn. I suggested drawing him for this article at which point he dashed across the road to accost a woman with dogs.
The Chugger
Luncheon
staggered away from the awful place reeling with emotions and crazy thoughts of revenge and in this vulnerable state fell instantly prey to a chugger. He claimed to have stopped me because of my Wind In The Willows striped blazer, but we both knew it was because I had the wild look of fear about me. Summoning up all my skills of persuasion, I steered the conversation away from the possibility of me pledging £30 a week to The Red Cross for the rest of my life, to himself. He informed me that the people of Chelsea were the least generous givers to charity he had ever encountered before revealing that he turned down the opportunity to be in the boy band One Direction to pursue a career in charity, but that he might try and get on X
nvestigative journalism at this level is a very hungry-making business, and the effects of one croissant and a small bowl of butter were starting to wear off. I decided that the most middle class challenge was to lunch at the Chelsea Physic Garden while simultaneously attempting to paint a botanical watercolour. After a brief detour past the former dwelling place of Dante Gabriel Rossetti on Cheyne Walk (which I was disappointed to note was much altered from his day when he kept armadillos, wombats, kangaroos and flamingos in the garden) I found myself seated at an outdoor table, with a paintbrush in one hand and a fork in the other. I can’t decide if it was more difficult eating salmon en croûte with a paintbrush or

painting an allium with a fork, but I got through both as best I could.
A Literal Disappointment
I
n need of a confidence boost after the way my botanical drawing turned out I entered Waterstone’s Waterstones to gloat at my book. Weirdly there was no sign of it on the humour shelf so I asked the assistant if they had copies elsewhere, like in a pile on a table? She furrowed her brow and tapped away at the keyboard. The furrow deepened, ‘I’m afraid they decided not to publish that book,’ she informed me. ‘Are you sure?’ said I, ‘I’m pretty sure I saw a copy around Christmas.’ ‘Oh actually,’ she admitted, ‘it was published, you’re right, we just don’t stock it. Shall I order you a copy?’
Another Garden
T
here is nothing quite so exciting, apart from an alien visitation or getting a new pair of x-ray glasses, than the discovery of a secret garden. When planning this jaunt, news of
a fabled Moravian cemetery reached my ears. I am not alone (I checked with my Editor) in thinking Moravia was a made-up country from Tintin. In brief (I’m running out of words), I looked on a map, walked up and down, found the hidden entrance and entered. Normally when one finds a long lost Moravian cemetery one is underwhelmed, not this time. It was a triumph of enormous plane trees, fig groves, wisteria, a lawn chequered with the horizontal headstones of departed Moravians and joy of joys, when out of nowhere appeared a black Labrador. I sat at a table and immediately began painting the scene. As I worked, people started emerging out of buildings and from behind trees, rather like they do when the clock strikes twelve at Fortnum and Mason. A Moravian called Kevin Kevich stood on the cobbles in native costume and played a jig on an accordion while a little girl danced with the Labrador. If anyone disbelieves me I filmed it on my camera-phone and if you take me to the pub and buy me a glass of sherry, I promise I will show you.

nnoyingly I’ve used up my words so can’t tell you about the yoghurt shop which I had to leave because it smelled too yoghurty or The Conran Shop where I involved all the assistants in spurious searches, and then left with their cheapest item, a spatula (£2.50). To conclude, I can confirm that Chelsea is the perfect destination for a middle class outing. If you don’t know what middle class is, then you’ll have to buy my book. But remember, the best books have to be specially ordered.

ery few can say they’ve had the world’s most powerful leaders as putty in their hands – except for perhaps Chelsea artist, Shenda Amery. After fleeing Iran during the 1979 Revolution, Shenda returned to Britain (she had grown up in Somerset) and was encouraged by her husband, Nezam Khazal, himself an architect, to develop her interest in art. Who could have imagined that two years later, in 1981, she would find herself in Number 10 Downing Street, crafting the first ever sculpture of Margaret Thatcher? I arrive at Shenda’s ‘organically’ designed studio near World’s End, with slight trepidation. What sort of character, I wonder, lies behind such powerful works of art? The imposing wooden doors swing open to reveal a smiley lady with bouncy chestnut curls and a scarlet red artist’s overall (appropriately speckled with paint).
Originally a chemist for May & Baker, Shenda’s desire to take up sculpture was first fuelled by frustration at her unfortunate circumstances. ‘When you’ve just lost your house and your life, you need something to get your hands on. Clay is perfect for that. It’s very stress relieving,’ she says, with a chirpy giggle reminiscent of someone who knows a thing or two about life. She maintains that sculpting gives her confidence – ‘it’s just you and the clay’ – which must have come in handy when taking on intimidating figures like The Iron Lady. What nerves of steel she must have needed to unveil the final piece, I say. On the contrary. Shenda assures me that Thatcher was brimming with praise when she first clapped eyes on her creation. ‘It’s your genius that has put my expression into that bronze,’ Shenda mimics, ‘I don’t know how you did it!’ Her uncanny impression of Thatcher takes me quite by surprise and I almost look

ART&CULTURE over my shoulder for the late great Prime Minister herself. Shenda continues to explain that Thatcher was most interested in how, as an artist, she manages to capture the expression and essence of a character when working in such a hard medium like bronze. Apparently the key is intense study of the subject; finding parts of their anatomy that give them life. ‘The expression in the eyes is very important,’ she reveals. ‘I also look at the lines on their face and their lips. John Major has extremely characteristic lips. The more character in the face, the more interesting they are to sculpt.’ But it is clear that Thatcher made the strongest and most lasting impression. She relives the encounter in minute detail and relishes every second. ‘Margaret had an amazing ability to stay in control at all times. From the very moment we met, she shook my hand and pulled me towards her until my nose was almost touching hers,’ Shenda beams.
‘She was also absolutely charming. When she talked to you, you thought you were the only person in the room. But you really had to think quickly to keep up! She was a very clever woman – always five minutes ahead of everybody else.’ The success of Shenda’s ‘Thatcher’ launched her distinguished career as Downing Street’s premier artist. Like dominoes, commissions from Prime Ministers John Major and Tony Blair swiftly followed, as well as other parliamentarians – Betty Boothroyd, Robin Cook, David Blunkett and Mo Mowlam. She also found favour with key royal figures, such as Princess Diana, King Hussein and Queen Noor of Jordan. I poke my head up the handcrafted wooden staircase and am amused to see King Hussein’s bust nobly peering down at me. Shenda laughs as she points to a photo of her sitting with the Jordanian royal. ‘I call this ‘The King and I’,’ she wryly quips. Shenda’s studio – or ‘zone’ as she refers to it – is a pocket of tranquility. With classical music floating in the background, it’s no wonder people in high places have chosen to sit with her for hours on end. I find it a fun and nurturing atmosphere, not least because
John Major has extremely characteristic lips. The more character in the face, the more interesting they are to sculpt
biscuits and After Eights find themselves to a tray in front of me. A true matriarch, Shenda has two sons, Rockney and Saladin, a brood of grandchildren and a husband of 52 years, whom she describes as ‘an absolute darling.’ She is passionate about family values and the preciousness of life, both of which feature strongly in her paintings. I am struck by one [pictured] of a young baby being thrown away into the jaws of ‘Capitalist monsters’. ‘Society can learn from the birds,’ says Shenda. ‘They don’t just lay eggs anywhere. First they make a nest, then they lay their eggs in it. Mothers and fathers should make their nest before they start having children.’ Shenda goes on to show me her ‘Chaos Collection’, which includes snippets of Dylan Thomas’ poetry and newspaper cuttings, screaming such messages as ‘carbon cap dilemma’ and ‘obstacles ahead’. It’s very powerful. Like her political subjects, it seems Shenda is also intent on instigating change. ‘I have spent a lot of time doing beautiful things; it’s time I really made a statement through my paintings, about what I feel is happening.’ I leave with the feeling that this delightful bronze sculptor, who captured the Iron Lady, is worth her weight in gold.

’m just a normal Aussie – cool, calm, collected. Not today. Today I’m standing tall in an attempt to keep my nerves under control. Why? I’m going for a wax. I take off my thongs (flip flops to you Brits) and as I lay on the bed, tension builds. All of a sudden I am sweating. W
hat scent does one wear to meet Jo Malone? I agonised over it for days before. Would she think I was try-hard if I wore one of hers? Or that I had no taste if I wore someone else’s? In fact, I needn’t have worried. For I had barely stepped foot inside the showroom of Jo Loves (Jo Malone’s new fragrance business) and my nostrils were filled with the heady smell of something so delicious, every other aroma petered out into insignificance. ‘It’s called Pomelo,’ Jo told me. ‘It was the first fragrance I created following my absence from the industry, so I’m very attached to it. I wash the floors of my house with it, even the dog. It says to me: ‘You still have something to give.’’ It was a muggy day in June and Jo and I were sitting opposite each other on red leather sofas, drinking coffee, chatting scents. It’s rare you feel comfortable enough to sit back and properly enjoy an interview. But I did, and when Jo announced she was sweltering and wanted to take her shoes off – ‘I hate being hot and I’ve painted my toe nails, so it’s alright’ – I felt I could almost do the same. And I would have done, had I also owned lovely feet with painted nails. But I didn’t and that wasn’t alright. Born in St Stephen’s Hospital (now Chelsea and Westminster) Jo grew up in a council flat in Kent. She was terribly dyslexic and left school at 13 to look after her mother who had suffered a stroke. Attracted to perfumes from a young age, Jo’s first job at 16 was working in a flower shop on Elizabeth Street. ‘I was fired because I was a bit cocky but it was a really happy time in my life,’ she remembers. ‘I came from a council estate and yet there I was, working on this wonderful street in Chelsea.’ I couldn’t help thinking it was all rather My Fair Lady. Young Jo, with her Bexleyheath accent, arriving at Chelsea, a mere flower girl, only to dominate it on the scent stakes a short while later. So it’s no surprise she has returned to Chelsea, to Elizabeth Street, to open her flagship Jo Loves store.
You earn rights in life – you’re not born with them
She sees it as going back to her roots. ‘That street has always been about shopkeepers, it’s very artisan. I’m the new kid on the block but I think our new shop is going to be amazing,’ she said. ‘I won’t give anything away but I don’t think anyone has done what we’re about to do.’ I’m glad she said that because I had been wondering what challenges she could possibly find in an industry she has already mastered. ‘I’m proud of what Jo Malone [Ltd] has achieved,’ she told me, ‘but
it doesn’t have my personality stamped on it any longer. I haven’t come back to do something different for the sake of being different nor to compete with myself. ‘Jo Malone’ was a young entrepreneur, 20 years ago, who was prepared to do it differently. But now, this is who I am and what I’m doing,’ she gestured to the showroom. ‘I’m prepared to take much stronger risks. And it could fail. But the excitement I feel about it...’ She trailed off. I examined the barefooted woman before me. With her hair tied back in a loose bun and slightly skew-iff glasses, it might be hard to believe she sold her business to Estee Lauder in 1999 for ‘undisclosed millions’. But it wasn’t. For her very manner – direct, assured – left me in no doubt whatsoever as to her business acumen. This was definitely a person who could start a multimillion pound business from a kitchen table. Definitely a person who could beat aggressive breast cancer, undergo a double mastectomy, walk away from a global brand and start up a new one from scratch. Definitely. ‘I left Jo Malone [Ltd] in 2006 because I had just recovered from a year in chemotherapy and I thought the cancer was going to come back. After having sold the business and left my role as Creative Director, there was a time where I couldn’t compete. And that was fine because I wasn’t going to come back into the industry. But, of course, that first morning after quitting, I got up and I thought about fragrance. Those five years were torturous for me. Knowing that I couldn’t go back.’ Never defeatist, she threw herself into charity work and even made a television series – High Street Dreams – for BBC1. But she simply couldn’t

kick fragrance from her system. Her husband, Gary, bore the brunt of her frustration and she credits him for putting up with her moods. ‘I wouldn’t be able to do it without him. He’s a wonderful human being; we’ve been married for 28 years. But he’s been very unwell recently. It’s been a horrible time. I can’t tell you how much I’ve missed him. arlier this year, I had a lifechanging encounter with a formidable woman at an Ayurvedic retreat. he trouble with having a haircut is you invariably go into the salon wanting to come out with the exact same hairstyle. Having had nightmares with hairdressers previously - the ones who promise they’ll ‘trim’ but actually ‘lop’ - I was dubious about going to the Gina Conway Salon for a snip. But I needn’t have been. For just minutes after meeting my delightful stylist Ronan, he exclaimed ‘What beautiful hair you have, I think we should keep the length!’ I’m sure he was just being nice
(my hair was disgusting) but I appreciated the sentiment nonetheless. Following a heavenly head massage/wash, Ronan gave me all sorts of tips as he merrily snipped (NOT chopped) away. Thin hair has nothing to do with straightening (phew) and massaging one’s scalp during washing is essential. I left clutching some Aveda products and a newfound love of hairdressers. ith exercise it is most important to remember…
Consistency will win over severity. You can’t out-train a bad diet, so you must eat beautifully and train in a clever way.
The most effective exercises… Leave you burning calories long after you have finished working out. I am obsessed with ‘metabolic uplift’ – which ensures the moves you do keep your metabolism burning at a higher rate for at least 24 hours after a session.
If we don’t have time to go to the gym we should... Train at home. Set up some space to train with a professional or do a DVD. Your body is the only tool you need – I use very little equipment.
Is there such thing as the ‘wrong exercise’? Yes, relying on ‘steady state cardio’ – cycling or jogging at the same pace, for the same duration – if you’re trying to transform your body shape. Reduce the duration, but increase the intensity.
Should we be dieting? Not as such. We suggest a lifestyle diet. To lose weight we have an initial ‘transformation phase’ where metabolism is increased, bodyfat dropped, and a regime (or diet) is stuck to 100% of the time. Beyond that, during ‘maintenance’, portions sizes are slightly increased and that’s it. 20% of the time our clients eat out, drink wine and don’t worry about it.
On a ‘maintenance day’ we should eat… A balance of protein, fat and carbohydrate at each meal. Typically, I would eat: Breakfast: Yoghurt, berries and granola Snack: Ryvita with cashew nut butter and some fruit, such as an apple Lunch: A large salad with butternut, feta and pine nuts with a small brown roll Snack: An orange and a handful of almonds Supper: Some fish or chicken with plenty of veggies and a green salad
The dreaded drink… Should we be drinking alcohol? In a weight loss phase, no. During maintenance, a couple of glasses of wine over a weekend is OK, but little more.
HOW TO Exercise our children From an early age, so they grow in confidence and enjoy it.

Our main inspiration comes from the client and how they will be using the space. We are also inspired by the location of the project and the existing architecture. We enjoy the use of historical referencing. Even in the most contemporary projects, we feel it is important to use some historical referencing to give the spaces integrity and character. Describe a typical day... My days are always different. After I work out and do a little meditation, I have a 9am meeting with my assistant to go over the day’s schedule and emails. Then, the morning is
set aside to work with my design team — this is when I create, design, and get inspiration for our projects. The afternoons tend to vary a lot: between client meetings, site visits, showroom and supplier appointments, the day gets full very quickly. I try to head home around 7pm, but it isn’t always possible as there is so much to do! Do you have a favourite project that you’ve recently completed and if so what is it? My favourite project right now is one we completed in April this year. We were commissioned

to create a characterful, contemporary interior scheme for a duplex apartment opposite Hyde Park. The interior has a subtle mid-century influence, where lighting, furniture and fabrics reveal a vintage aesthetic, resulting in a striking and glamorous interior. Bespoke joinery can be found throughout, providing ample storage and display, as well as the concealment of AV equipment. High gloss lacquers, specialist gloss veneers, inlaid fabric panels and jewel-like

Edwina Langley: So, tell us about your new venture.
EL: Why did you choose that particular location?
Tom Aikens: It’s in Canary Wharf and it’s very similar to Tom’s Kitchen in Chelsea in terms of the menu (home cooked food) and service style. I think the difference between the two is that in the City, lunchtimes are going to be a lot busier. We’ve got a big bar and also a private dining room, which fits about 12-14 and which we’ll turn into a kiddies’ room at the weekend. We’ve got a deli right next to us as well, where we’ll serve breakfast things in the morning (granola, muesli), sandwiches and pre-made boxed salads for lunch, and cookies and cakes throughout the day.
TA: Canary Wharf is a great place – you have a captive audience. We’re quite different to our competitors there, like Canteen and Roka, who don’t have the deli offering. It’ll be interesting to see how it goes. We’re hoping there will be a conveyor belt of people going from one Tom’s Kitchen to another, and then another and another…
At the end of the day it’s only food
EL: And then world domination! TA: And then world domination, indeed. It’s exciting. And it’s nice for us as it gives us the chance to crosstrain staff and promote them from within, moving them across from restaurant to restaurant.
EL: So we can just live in your restaurant and never leave?
EL: Speaking of your other eateries – Tom’s Kitchen and Tom Aikens Restaurant – why Chelsea?
TA: We hope so!
TA: We originally looked in Mayfair
and Piccadilly, but back then in 2003, we didn’t find anything. This [gestures to TA Restaurant] was an old pub. We looked at it and we liked the location. Chelsea has definitely changed since then though. Now we’ve noticed a younger crowd, particularly after the refurbishment in 2010. It’s really busy, but of course in the summer it gets quieter.
EL: And will you take a holiday? TA: Yeah, to spend time with my daughter. She’s 18 months.
EL: Has being a dad changed you as a chef? TA: It’s changed my whole life. At weekends, I’d always be working and running around doing things but now I simply play with her. It’s really nice because it de-stresses me. Though there is the lack of sleep. I never have a lie-in these days – the only downside.

EL: But you must be used to early starts, being a chef and all... TA: Yes but you do wish for at least one day where you could catch up on a couple of hours’ sleep.
EL: Do you help out? TA: I’m very hands-on at weekends and do a lot of the cooking, especially on Sundays. I almost always do a roast.
EL: Can you describe your roasts because I’m certain they’re nothing like my roasts. TA: What do you do?
EL: Umm… roast beef, potatoes. Bog standard. Nothing special. TA: Ok well, I generally do beef too. So I’ll do a rolled and tied sirloin –
EL: Rolled and tied? TA: It’s just a rib of beef, cut off the bone, which you then roll and tie -

EL: With your hands?
EL: No Bisto gravy?
TA: No…with string. Give it a trim, nice and tight, so it keeps its shape. I always have people round - probably eight or nine.
TA: [Laughs] Definitely not Bisto gravy. I’ll have taken some stock home from work – never a cube – and then I’ll do a reduction with thyme, bay leaves, pepper corns, shallots and red wine. Reduce that down so it becomes nice and sticky. And then later obviously I’ll do roast potatoes – in beef dripping.
EL: Is there a waiting list? TA: Yes, I bump people off or up, depending [laughs]. So yes lots of people, which means I’ll take the beef out the night before so it’s relaxed by the morning. I’ll start at 10.30am and slow cook it for 2-2.5 hours. Medium rare, of course. I serve it with Yorkshire pudding, a nice red wine sauce and the usual horseradish [mimics grating].
EL: That’s not usual horseradish. Horseradish comes out of a jar. TA: We do sometimes use jars, but we’ll grate some fresh in there too. And then add a bit of extra crème fraiche. For the red wine sauce we’ll do a reduction.
EL: You have that just lying around too I suppose? TA: Absolutely! And then vegetables – carrots, peas or broad beans – depending on what’s in season. My daughter will have a concoction of all of that, mushed up – feeding her can sometimes be quite difficult.
EL: During those moments do you ever think to yourself ‘Some people would kill to be eating this’? TA: Yes, but she doesn’t really give a sh*t!

FOOD&TRAVEL EL: Gosh – heartbreaking! TA: It was! I shed a tear. I did! I was only 24 and I was, like… [pulls a sad face]. I couldn’t believe it. But then I thought ‘Ok, you do your thing, I’ll do mine. See ya later’ [laughs]. I think we’re going to try to do something next year. It’d be great a PR story for us – two twins, two great chefs.
EL: Finally, you won the starter course for this year’s Great British Menu. Tell us about it. We’ve heard you’re all hugely competitive in the kitchens.
EL: So she’s your harshest critic? TA: Yes. Sometimes she cries, throws it on the floor and turns her nose up at it. Our trick is to bung in something creamy, like cottage cheese, which she loves. It’s our way of getting her to eat things. Not all the time though. For breakfast I’ll make fresh pancakes or waffles.
EL: How are you not the size of a house? TA: I go to the gym every afternoon when I’m having a break, for an hour or so.
EL: That’s not really a break. TA: It’s an active break – it’s a nice way to escape, to de-stress a bit. So I go to the gym or do a couple of laps of Hyde Park.
EL: A couple of laps? It’s quite a big park. I’d do one and I’d die. Do you get recognised on your runs? TA: No, because I probably look pretty badly wrecked by my second lap. But I enjoy it because it energises me for the evening. I like to keep myself fit because the workload is pretty tough.
EL: Do you eat proper meals? TA: I do in general. Breakfast is very important, so I always make sure I have a big one. And then I eat the same food as my staff for lunch and dinner.
EL: How are you in the kitchen? You have flaming auburn hair, do you have a flaming temper to match? TA: I don’t, no. I did in the past when I was younger but I’m not really into the hysterics now. I’d say I’m quieter. If someone has messed up badly then I will take them to one side after service. But if I start getting upset then it makes all the staff go wobbly and they can’t concentrate. If I’m cool, calm and collected then they follow suit. I used to shout, scream and
swear over a cracked egg, but now I have much more perspective. At the end of the day it’s only food.
EL: You have a twin brother, Rob, who is also a chef. How did you both get into the culinary world? TA: My mother was a very good home cook and my father was in the wine business. So as kids we grew up amongst good food and wine. We lived in Norfolk and my mother was a keen gardener. From the age of six we started growing our own vegetables – carrots and rhubarb. We started cooking by the age of eight in the kitchen. Simple stuff, like cakes. Then we progressed to making a main meal by the age of 12.
EL: Impressive! TA: We knew we wanted to be chefs. And we both didn’t like school. We wanted to join a catering college in Norfolk and when I found out you didn’t need qualifications, I thought, ‘Great! This is the career for me!’ I could see the horror in my parents faces when I told them we were going to be chefs. I think they saw us deep frying chicken at KFC.
EL: How was it starting out back then? TA: It was very difficult to begin with. Long hours, tougher working conditions, tougher bosses. But that didn’t matter. Because if you actually got a job in a Michelin-starred restaurant, you were so thrilled you worked your socks off. When I first came to London I was earning £80 a week.
EL: Then what happened? TA: Then I went to work in France and Rob went to America. My idea was that we’d go abroad separately for a bit then come back and open a restaurant. But when I was working in Paris, just before Rob went to the US, he came over and told me he didn’t want to work together.
TA: We all respect each other a lot, but once you’re there, you’re in competition. It’s very tense and stressful. Even at the level we’re at, we can all crumble under the pressure. It’s also quite funny to see yourself on TV. I often think, ‘Oh my God, how could I have been like that, I’m going to bits!’ You can literally fall to bloody pieces on camera.
EL: Has Pru Leith ever cooked for you? TA: Ha – no! It would be quite nice to turn the tables. But in all seriousness, it’s great fun. And I like that viewers can actually see the attention and skill we put into each dish. But when you watch it on TV, you don’t see how knackered we really are. Being on your feet all that time, with the cameras constantly stopping and starting… You’re also thinking about how you’re coming across – no one wants to be that complete tosser or the mute. You want to be seen as someone who’s fun, lively and chatty – otherwise you just look completely lost and crap.
EL: What did you like about the ‘Comic Relief’ brief in particular? TA: Bringing fun and humour to dishes. Most people think chefs are miserable gits, that we don’t have a funny side, we’ve all got chips on our shoulders and are grumpy and serious.
EL: I’m sure you’re never like that. Ever. TA: No [smiles]. With the Comic Relief brief, people could see we have a sense of humour. That we can at least have a joke and a laugh – which was nice.

Nozomi
I
t was on a hot and stuffy evening in June that I headed to Nozomi. As I sweated my way down Beauchamp Place, it was lucky I’d heard it had won the Best Restaurant Bar Award 2013, for the thought of icecold liquid salvation lying at the end of my trek was all that kept my melting body from having an actual meltdown. I arrived, exhausted, and slumped into a chair, whereupon I was handed a drinks menu. A sea of options presented themselves but I was too hot to read them so let

the barman decide. He waxed lyrical about the refreshing properties of the pomegranate and grapefruit ‘Pomegranita’, so I agreed, knowing full well he’d have to pull one out the bag because I hate grapefruit. Following a substantial glug of that fluorescent pink elixir however, I have now decided I do actually like grapefruit and also think that every bar could benefit from such a barman. Now in the midst of a smogfest, the very last thing on one’s mind is food. So when edamame beans were offered as a pre-starter I was all up for declining. But my
wise dining companion, the delectable Emily, was thrilled by the idea so we went with it. Two bowls of the little beans appeared, one with sea salt, the other with chilli and kimchi. Now I’ve no idea what kimchi is, but forget edamame-anything you may have sampled at YO! Sushi or wherever, THIS is the real deal. In fact I’m quite sure you won’t find a better dressing for the little beans were you to journey to Japan in search of one. Thus began what was to end up a truly spectacular feast. Hamachi Tempura Rolls were first up – little deep fried bundles of yellowtail, rolled (but not bathed) in chilli served with a daikon ponzu topping. Crunch. This was balanced nicely against plates of smooth, soft New Style Salmon and Marinated Yellowtail Sashimi. The Octopus Salad came with slivers of potato and cubes of mango, which I loved. This was surprising for owing to an unfortunate incident with that well-known sixties classic, ‘Duck a la yuk’ (err, ‘orange’) I don’t tend to like fruit in savoury dishes. But the stand out starter was Emily’s, which she graciously allowed me to share. ‘Seared Scallops’ is glazed with Japanese plums, glistened with saffron miso and crowned with caviar. The
King of Starters. To follow, the Queen of Mains. ‘Black Cod’ is a dish I’ve had many times, and whilst the taste is heavenly, the serving size is not. Two £40 mouthfuls of ‘Mmm’ and you’re done. Not at Nozomi. This version arrived resplendent in its very abundance and I would have eaten it all by myself had not I owed Emily a mouthful for the scallop-sharing. Her almost-as-good main was ‘Jumbo Prawn’, which she especially liked because it hadn’t been slapped on the plate, like a pregnant pink slug, but thoughtfully sliced into manageable morsels. Thick, sweet tiramisu and light frothy white chocolate (here’s the genius) cocktails were next, followed swiftly by a trio sorbets and Coconut and Rice Harumaki Rolls – so comfortingly stodgy, I’d have battled Emily for half had I had the energy to physically eat any more. But as we were leaving, a tray of raspberry shots flew passed us and well, it would have been wasteful not to… Nozomi: for liquid salvation – and ultimate salivation. By Edwina Langley

F
our weeks in and The Five Fields on Blacklands Terrace is already causing a stir. Tucked just off the King’s Road, with a modest chic cream and pistachio coloured façade, I have an inkling that I’m going to be in very capable hands. Inside, I find a subtle but luxurious interior full of promising light and warmth. The designer, Robert Angell (responsible for The Wolseley), evokes an air of Georgian elegance and poise with his sleek and modern lines. His palette of muted honey, ivory and ochre, with leather seating, creates an atmosphere of exclusivity, of intimate dining for grown-ups. When the exquisitely plump ‘Orkney Scallop’ – seared with cauliflower and pistachio – appears, I realise that the understated setting acts as a canvas for the true artwork: the food. Fresh and perfectly cooked, the scallops burst with flavour, as does ‘Kitchen Garden’– a beautifully arranged selection of freshly plucked herbs, fruit and vegetables. All these, I discover, are grown in The Five Fields’ kitchen garden, lovingly tended by Heather Young (formerly of Le Manoir aux Quat’ Saisons) deep in East Sussex. Next are the mains, which look like they’ve been served up straight from the Garden of Eden. Seasonally focused, ‘Berkshire Venison’ is tender, succulent and rich, with a cheeky touch of sweetness courtesy of perfectly ripe blackberries teamed with baby beetroot and smoked ricotta. ‘Yorkshire Lamb’ with romesco, burrata and almond is simply first class too. The devotion to quality and detail is second to none here. Alongside these delights, our
sommelier carefully selects flavourful wines to enhance and chime with each dish. In particular, the Moscato d’Asti from Piedmont, Italy 2012, makes a memorable impression with the succulent ‘Cep and Peach’ dessert. This startling and original combination seems to work, as does the daring ‘Garden Pea and Coconut’, which comes with mint cassonade and chocolate soil – the garden theme runs throughout! Pansies and coriander flowers spring up on dishes to embellish, charm and delight. At the end of this feast for the senses, I surprise myself and my fellow diner by managing to consume one final delight – the homemade ‘Passion Fruit
Marshmallows’. Like soft clouds on my tongue, they explode with a fruity piquancy, which contrasts wonderfully with their springy texture. As the meal comes to a finely orchestrated end, I long to rewind and relive it again. I leave on a high, thoroughly impressed. The Five Fields is truly a triumph of good taste in every sense, surely destined to become one of London’s elite restaurants. By Alice Milner

Baked Citrus Cheesecakes ˜ Serves Six˜
40g (1 ½ oz) butter, melted 6 digestive biscuits, crushed into crumbs Grated zest and juice of ½ lemon 250g tub mascarpone cheese 100g (3 ½oz) full fat soft cheese 50g (2oz) golden caster sugar 2 medium eggs plus 1 egg yolk 75ml (3fl oz) double cream A few drops of vanilla essence 300g (10oz) fresh raspberries 6 tbsp Bonne Maman Mandarin Marmalade 2 tbsp orange-flavoured liquor d Preheat oven to 140°C (fan oven 120°C), gas mark 1. d Pour the melted butter into biscuit crumbs. Stir. d Set aside 2 tbsp of crumbs and divide the rest between 6 Bonne Maman jars. d Compact and freeze for 5 mins. d Beat lemon zest, cheeses, sugar and eggs until smooth. d Beat in the lemon juice. Gradually add the double cream and vanilla. d Stir in half the raspberries. d Divide the mixture between the prepared jars. d Place jars in a roasting tin. Add hot water to the tin, up to 1 inch. Bake for 30 mins. d Separately, warm the marmalade and liquor until melted. d Cool for 1-2 mins. d Stir in the remaining raspberries. d Cool. Spoon the glazed fruit on top of the baked cheesecakes. itting high above the shores of Lake Geneva in the French spa town of Evian, the serene Hotel Ermitage seems to float upon a cloud of well-being and tranquillity. From the moment I stepped into my room and opened the French doors to the clear lake air, I understood why the resort has been a Mecca for rest and recuperation for over 100 years. Taking the lift from my floor directly down to the hotel’s Spa Quatre Terres, I was transported to Bali via India and China through the dark wood decor and the healing hands of expert therapists. There’s a holistic focus – my massage therapist incorporated the use of healing crystals while giving me one of the best deep-tissue massages of my life. After recuperating on a soft bed with a glass of Evian – naturellement – I then spent the afternoon lazing in the spa’s Jacuzzi and steam room. The next morning the hotel’s dashing chauffeur took me down the hill to the lake and into the heart of the resort. I came, as others have been for centuries, to Les Thermes D’Evian to ‘take the waters’. This involved being pummelled by hydro-jets (seriously enlivening) and being ‘rained on’ by heated Evian water while a therapist gave me an all-over body massage. Evian cannot be rivalled for its blend of serenity, excellent food and winning service. Next time I’ll be returning with my family in tow to take advantage of the superlative Kids’ Resort with its own pool, tennis lessons, cooking workshops and much more.... A
typical day at Ti Sana starts with power walking at 8.30am along the Adda River, juice for breakfast – think courgette, apple, carrot and ginger – and an hour-long fitness session. Lunch is served at the ‘Food Lab’ from 12.30pm and consists of a large bowl of salad and dehydrated flax seed crackers, followed by (yes, thanks be to the detox gods, there’s a second course) a faux carb dish like courgette ‘spaghetti’ in a cashew nut sauce (no added spaghetti, of course, just cleverly cut vegetables). Five meals a day doesn’t sound too bad – breakfast, snack, lunch, snack, dinner – but when three of these ‘meals’ are juices, and one day a week is liquid only, things become a little more Spartan. Minimal food and gentle exercise are combined with a medical assessment, blood tests, a doctor’s appointment and a colonic – this is the only spa in Italy with the ‘Angel of Water’ machine which you operate yourself, keeping your dignity intact. The spa is well equipped, stocked with organic products (like the Anika range) and kitted out with
an infrared sauna, normal sauna, steam room and several jets and rain showers. Spa treatments, however, are limited to one or two per visit depending on your regime – Raw Food, Juicing or Energising. The focus is very much on what you are (or are not) eating, and the aim is to regulate cortisol levels by exercising in the morning, eating in the middle of the day and practicing Chinese Qi Gong meditation in the evening. This takes place in a large, light studio in one of the restored 18th century terracotta-roofed buildings – the hotel is made up of a cluster of these stone houses and the 22 bedrooms are scattered between buildings. You’ll leave enlightened – the emphasis at Ti Sana is on educating guests, with daily lectures on well-being so that you can continue the good work long after you have left. Ti Sana has three Active Life Programmes: Juicing Detox fasting; Fresh Lifestyle raw food and Energy Lifestyle with raw and healthy cooked foods. Prices start from €170 per person per day. et amidst the vineyards of the Chateau Smith Haut Lafitte estate in Bordeaux, Les Sources de Caudalie is a rural retreat with a twist. Inspired by the concept of the ‘French Paradox’, whereby the diet and lifestyle of Southwest France is seen as conducive to good health, the hotel has taken the concept to heart, playing host the original and now worldfamous Vinothérapie spa. Here, treatments are winecentric, incorporating the benefits of the grapes from the Graves Grand Cru Classé vines which the spa overlooks. During my visit, I sampled the 100% Grape Cure, which involves three oenophilic treatments a day, including the signature Crushed Cabernet Scrub, the Merlot Wrap, the Fleur de Vigne Wrap and the Red Vine Bath. I loved the Wine Maker’s Massage, which involved a smooth, wooden stick – usually used for crushing grapes – that was rolled over my back to relieve the tension. However, Les Sources de Caudalie is not for dieters – the food is too good. Choose from Michelin-starred fine dining at La Grand’Vigne, Chef Nicolas Masse’s restaurant overlooking the lake, or bistro-style food in La Table du Lavoir, in a 19th-century wash house formerly used by winegrower’s wives – both too delicious for words. very day, without fail, I find myself in need of a sugary, three o’clock pick-me-up. It doesn’t matter whether it’s biscuits, chocolate, or a saccharine drink, these little daily indulgences are my weapon of choice in the battle against the dreaded afternoon slump. I know, of course, that it’s not the healthiest of choices, but my sugar cravings are too strong to be ignored. I needed a solution, and when I finally found one, it just so happened to be in the ambient micro-climate of southern Spain. Lucky me. Nestled on a hillside in the Sierra Helada Natural Park is the SHA Wellness Clinic, a sprawling expanse
E
of whitewashed buildings boasting stunning views. Providing an oasis for those seeking a detox or relief from more serious health conditions, the foundations of SHA are rooted firmly in the science of macrobiotics; the term derives from the Greek macro, meaning long or great, and biosis, meaning life. Leading the quest for this ‘long-life’ is SHA founder Alfredo Bataller Parietti, who I meet upon arrival. I have to admit that I was nervous about the imposed diet; I am not good at being told what to eat. My day could include three balanced meals, but on the other hand, it might just be dinner and snacks – it’s anything but balanced. I voiced these concerns to Alfredo, yet he assured me that the diet would be ideal for a vegetarian like myself. The plan
regulates energy levels by balancing the nutrients that the body receives, rather than feeding it what it craves. Guests at SHA are introduced to the menu of medical, aesthetic and therapeutic treatments with a series of meetings at the beginning of their stay. There is a food consultation in which the myths of this vegetable and whole grain-friendly diet are broken down, aesthetic consultations in which you can discuss conditions or imperfections, and a full medical check-up. During my food consultation with Dr. Kenneth Prange, I realised that this diet is not as restrictive as I had previously thought. It is true that animal products, such as meat and dairy, do not feature regularly on your dinner plate, but naturally sweetened desserts

and a whole host of other inventive and exciting ingredients get a chance to tickle your taste buds. What impressed me most at this wellness haven was the level to which you could tailor your experience to match your particular dietary, medical and aesthetic needs. I was assigned to the ‘Biolight’ diet during my stay, a healthy, middle-road menu for those who want a detox, but who aren’t necessarily looking to shift pounds. There is also the Kushi diet, a strippedback, extra-light menu of salads and soups, and the gastronomic SHA diet – many an evening was spent eyeing-up the pungent steam-filled cloches as they passed our table in the Shamadi dining room, on their way to SHA menu devotees. Lunch was the first meal that I tucked into at the clinic. I had a cucumber, dill and yoghurt cream soup, which was perfectly fresh and zingy. This was followed by a modest portion of spelt tagliatelle in a creamy pesto sauce, garnished with crispy basil chips and toasted pine nuts. Happily for me, meal times on the Biolight and SHA
menus are always split into a starter, main and a dessert, tricking my stomach into believing it was consuming more food. This fact – coupled with the macrobiotic teaching that digestion starts in the mouth so food must be chewed properly – meant that mealtimes were generally a pleasurable affair and I felt satisfied for longer. The food at SHA was a welcome surprise – head chef Pablo Montoro served inventive and delicious alternatives to desserts, sweetened with barley malt or rice syrup. I even had a spelt bread pizza one joyous evening and the most mouth-wateringly succulent grilled scorpion fish with beetroot foam, grated tonka beans and black fennel tempura. Once you are alive and kicking, the fun really starts; SHA offers macrobiotic cookery classes, healthy eating seminars and a wide variety of fitness classes, both inside the state-of-the-art gym and outside on the sundrenched terrace. I chose to spend much of my time in the spa, where the gentle sound of trickling water follows you everywhere as you float about in a fluffy white robe. The lymphatic drainage massage is highly recommended to aid the detox, coaxing any
lingering toxins from your body. The spa has one of the most impressive menus I’ve ever seen, and guests can enjoy all manner of traditional treatments as well as some of the most technologically advanced aesthetic procedures in the world. Book a Thermage Comfort Pulse Technology consultation – the before and after results images are seriously impressive. After days spent swimming, exercising, and spa-ing, I collapsed onto my humongous bed to watch the twinkling lights of houses down on the hillside as my final day drew to a close. I definitely left SHA Wellness Clinic feeling happier and healthier, with the cravings that had been troubling me completely eradicated. I’m happy to report that I’ve stuck to my diet since arriving home, encouraged by the threat of relapsing back to sluggish energy levels. If this is how I feel after a threeday stint, I can only imagine how guests enjoying a two-week programme must feel. Sublime, I would imagine.

Penny and I have worked together since the late 1970s, giving us a sense of continuity rarely experienced by our competitors, and a longevity our clients have come to rely on.
