W
ho could disagree? Whilst I’m sure I have, many times, I don’t think I’ve ever dressed badly on purpose. In fact, if I thought what I was wearing was likely to induce hearty guffaws from passersby I very obviously wouldn’t wear it. By that token, I’ve never coveted the closet of someone who I think dresses dreadfully either, however ‘fashionable’ what they’re wearing might be. My point is that fashion is personal. We can follow all the trends in the world, but if we don’t truly love what we’re wearing, we won’t ever feel comfortable wearing it. So here, I present you with our Fashion Special. Not a manual of ‘what to’ and ‘what not’ to wear, simply an indicator of what you could wear, if you want to. First off, the designers. Georgie Lane-Godfrey meets Irish designer Paul Costelloe and finds herself inadvertently playing a game of Happy Families, whilst I talk Swinging Sixties with the legendary Caroline Charles. Walking through wardrobes that lead to magical kingdoms is what Catherine Hales discovers behind the scenes at jeweller Theo Fennell’s, whilst Said Cyrus Ismael of Catherine Walker & Co. shows us what magical things inspire his creations. And what with all the pleats, shoots and sleeves, after reading this issue I’m quite certain you’ll be in need of a power nap – I hear they’re quite fashionable too.

am not a fan of musicals. The singing, the dancing, the wholly improbable and conveniently happy endings…eyulsh, get me out of all that merriment pronto. But Billy Elliot, The Musical… Billy Elliot, is a totally different story. Because it is a different story – no rainbows or sunsets here. Set in Country Durham during the miner’s strike of 1984-5, 11-year-old Billy is the son of a coal miner, who shuns the after-school activity of his peers – boxing – in favour of ballet, a hobby that leads to escape from poverty. Adapted from the award-winning 2000 film, Lee Hall’s story translates perfectly to stage, losing none of the wit and rawness with which it tackles sociological issues of the day: capitalism, class division, sexuality, masculinity. together with astounding choreography and some rather hit-tastic melodies (courtesy of Elton John) this show quite literally packs a punch. The supporting cast – Anna-Jane Casey as ballet teacher ‘Mrs Wilkinson’ and Thomas More as Billy’s gay friend ‘Michael’ – were sensational, but the star of the show was Billy himself, played by Tade Biesinger. His poise, pirouettes, taps and leaps saw my jaw crash to the ground with a very obvious ‘clunk’ as, step by step, it became abundantly clear this boy can dance, and sing, and act. Not an ounce of Billy’s vulnerability nor a jot of naivety were lost, and the standing ovation for the lad at the end was worth every hand-slapping clap. I would advise anyone, anyone, to see this heartbreakingly moving show, of the northern boy who danced his way to success. exy, ethereal and phenomenally talented, Vaslav Nijinsky became an icon of the 20th century world of dance. In 1913, he revolutionised dance overnight with his controversial modernist ballet, The Rite of Spring. Born to gifted Polish dancers in 1889, Nijinsky grew up performing in circuses, until gaining admission to Russia’s prestigious Imperial Theatre School. Singled out for his outstanding talent, his rise to fame was meteoric. His turbulent relationship with the charismatic, older Diaghilev, founder of the Ballets Russes, turned him into the world’s best-known dancer and a gay icon. When Nijinksy eloped with a ballerina from the company, Diaghilev was furious and vengeful – which had dire consequences for Nijinsky. Unable to work, he tragically descended into madness and poverty, spending the rest of his life being treated for schizophrenia until his death in 1950. By Alice Coke

All That Glitters Catherine Hales sparkles up and goes behind the scenes at jewellers, Theo Fennell
I
had walked past Theo Fennell’s flagship store on the Fulham Road many times before my invitation to take a peek inside and had always admired the inventive displays adorning the windows. I would stop, arrested by the colours and unusual designs, but never suspected the flurry of industry that lay within. On arrival, I was greeted by the smiley Theo Fennell PR, Rosie Lillis, who led me to the back of the showroom, through
several keycard controlled doors, and up a staircase to the design studio. What immediately caught my eye was a table littered with papers and sketchbooks, which I quickly surmised was the desk of Creative Designer, Hazel Clucas. ‘Theo sketches pretty much everywhere he goes,’ she informed me. That much was clear. As she flicked through pages of the sketchbook, I saw inked doodles on every page (though to call them 'doodles' is somewhat of a misnomer;
the quality was breathtaking). Some were patterned, others repeated designs (with minor alterations), and some, whole landscapes. So resplendent were they, I considered this must definitely be Theo’s favourite part of the design process. ‘Not really,’ he said when I asked him a few days later (he had been abroad during my visit). ‘I enjoy the whole process and always have, but I suppose the ‘final reveal’ is the most rewarding moment. You never know what a piece will look like until the

final polish. That moment is the ‘climax’ and still gives me huge joy with any new, original piece.’ Hazel, whose stunning engagement ring is bespoke Fennell, then explained how the team works. They look through Theo’s drawings and decide which designs have the potential to be translated into jewellery. Each piece is then hand drawn and coloured with 100% precision before being mounted on card, to serve as a blueprint for the craftsmen and a record of the transition. It was incredible to see the attention to detail and bespoke nature of the process. I was also struck by the level of involvement Theo has at every stage – there is nothing of ‘the figurehead’ about this designer. I was then shown into the workroom itself, where several gents sat at workbenches covered with odd-looking implements and half-finished jewellery. As I peered over their shoulders, I spied a miniscule bird affixed to a tiny birdbath, destined to stand as the centrepiece on an incredibly intricate ring. The workmen’s leather aprons, wooden benches and lack of electric tools, were oldfashioned to say the least, and bore a strong resemblance to those used in the early 19th century. I shared my observation with Richard, one of the craftsmen, and he explained that with the exception of the laser tool, their trade has indeed remained largely unchanged for 200 years. What keeps each piece

modern, however, is undoubtedly the designs – bold and risqué pieces such as a series of brooches featuring skeletal renderings of Marie Antoinette and Shaka Zulu. Is there no line Theo is unwilling to cross in terms of subject matter? ‘I don’t think so,’ he replied when I asked him. ‘The only real line is whether it is worth making as a piece of jewellery or an objet and whether the concept translates into something worth spending time on. ‘If I think an idea will work in a precious medium, however simple or theatrical, that it will last and still have some resonance in years to
come, then it is worth working on,’ he added. Of all the Fennell craftsmen, none have worked there for less than five years, which was pretty impressive. Furthermore, their enthusiasm for the job was almost palpable, evident through the time they took to show me their silver engraved hunting cups and a magical ring with let down-able drawbridges. It was a truly unique sight and I can’t image why other jewellers don’t work in the same way – with their studio and workshop in such close proximity to the showroom. ‘It is the only way I can work and the way I have always worked,’ said Theo. ‘It is the difference between having a kitchen in a gourmet restaurant, and having things cooked elsewhere and sent over, frozen, in huge quantities with an expensive name on the packet! Fortunately, the world is opting more and more for originality and craftsmanship. I am lucky to have a group of artists and craftsmen that I work with, who can translate almost anything into a reality.’ With not a jot of edginess for edginess’s sake, the designs convey fun and a desire to please their buyers. For me, the piece that really sums up the wonder of Theo’s work is the Wardrobe Ring. Based on C.S. Lewis’ The Lion, The Witch and The Wardrobe, the Wardrobe Ring has ornate wardrobe doors on either side. One door opens to fur coats and the other, a snowy scene featuring a single lamppost. eenagers are lazy, right? Wrong. According to a growing body of research they just have a different body clock from the rest of us and if schools would wake up to this evidence and let teens start their day later, scientists believe they would see great gains in both the health of their students and academic results. Some schools are taking note. When the UCL Academy in Swiss Cottage, north-west London, starts the new term this September, it will have been a year since it became the first London school to allow teens to ‘sleep in’. When the academy, which is sponsored by University College London, opened in September 2012, its students were allowed to start at 10am and leave at 5.30pm. Headmistress Geraldine Davies argues that the school is already seeing positive results. ‘Youngsters are turning up alert and ready to learn and are focused and engaged in lessons,’ she says. ‘We have no hard data on exam results yet… but pupil and teacher surveys have so far been positive.’ Scientists say there is now biological evidence underpinning the argument that schools should start later. It was in the US in the 1990s that researchers first identified an ‘adolescent time shift’ in the sleep pattern of teenagers and in the past two decades, a number of US schools have adopted later start times. In the UK, Professor Russell Foster, a professor of circadian neuroscience at Oxford, has been at the forefront of work on teenage sleep patterns and their effect on performance at school.
A new academy in London is the first in the city to let its students start later. Amanda Constance reports on the teen sleep debate
He explains: ‘The biology of human sleep timing changes as we age. As puberty begins, bedtimes and waking times get later. This trend continues until 19.5 years in women and 21 in men. Then it reverses. At 55 we wake at about the time we woke prior to puberty. On average this is two hours earlier than adolescents. This means that for a teenager, a 7am alarm call is the equivalent of a 5am start for a person in their 50s.’ Prof. Foster observed a UK school in Liverpool where many students were getting just 5 hours a night; unsurprisingly, teachers reported students falling asleep in class. He says a lack of sleep increases stress and is associated with a loss of humour, lack of empathy and low mood. It also greatly impairs blood-glucose regulation in young men, with research showing that their insulin levels are comparable to the early stages of diabetes. But it isn’t just a biological problem. Society isn’t very conducive to a good night’s sleep due to more relaxed parental attitudes to bedtimes and access to TVs, PCs, gaming devices and mobile phones, all of which promote alertness that doesn’t aid healthy sleep. Prof. Foster has become so persuaded of the need for schools to adjust their start times that in 2009, he
instigated a 10am start for 800 students at Monkseaton High School in North Tyneside, the first British school to do so. After observing the students, Foster says that the outcomes were clear: ‘The Monkseaton experiment shows, frankly, that if you start at 10am, grades go up.’ There are doubters, however. One issue is a perceived negative impact on after-school activities, particularly competitive sports, although schools in the US have reported that this hasn’t been a problem. But a greater issue here and in Australia is union objections to longer working hours for teachers and support staff. Prof. Foster, however, remains convinced that there is an ‘overwhelming case’ for shifting the times of a school day: ‘It will reduce their sleep deprivation, their learning will improve and, crucially, it will help to protect their physical and mental health.’

ICE CRYSTALS
The delicate and fleetingly beautiful shapes of ice crystals are a recurring theme in our work. Designed for evening dresses, many ice crystal pieces have proved as popular as wedding dresses.
ART DECO Jewellery from the twenties is very symbolic and we knew it would translate well into design. So last season we used the imagery of jewelled watch straps and bracelets as shoulder detail for our dresses [image, above].
The lace we find near Calais is always inspiring for wedding dresses. Perhaps the most dramatic dress we have designed was for the wedding of Catrina Guerrini-Maraldi (nĂŠe Skepper). It took eight months to make and was embellished by hand with 300 metres of satin cording and 44,000 pearls.
ROSE
The rose continues to inspire our work. We use it in crystal beading, so rich and intense it rises up in 3D off the surface of the silk.

for long, Caroline’s big break came when she was asked to design the dress for actress Susannah York’s first film premiere. Soon after, orders flooded in and she set up on her own. ‘I dressed a lot of people who were connected to photography – journalists and pop singers. The press were very keen on ‘the young’, and so, well, you know how you get discovered!’ No, Caroline, I don’t! ‘I’m not sure quite how it all happened,’ she continued, ‘but it all seemed to happen quite easily.’ Commissions from Marianne Faithfull, Cilla Black (‘she was very trendy in those days’) and Lulu secured her the celebrity seal of approval. It wasn’t long before the States beckoned. Buyers at department store, Macy’s, invited Caroline to New York to present her collections to them, and subsequently put down what she refers to as a ‘proper’ order. ‘I’d done something for Ringo [Starr] and Mick [Jagger] and the Americans loved The Beatles. So I was put on all sorts of television shows, just to say: ‘Yes, I’ve met The Beatles and yes, I was a dress designer and wasn’t I just cute?!’’ she laughs. ‘I was offered the chance to stay there [in New York] but London was so off-the-wall, I felt more comfortable here. I went back and forth a lot, and that was how I managed to sit next to Bob Dylan on an aeroplane. ‘So Ma’am what do you do?’ he said. I replied, ‘I make dresses!’ So he wrote ‘God bless you Caroline’ in my sketchbook. There were lots of chance meetings like that. The whole thing was a bit of a thrill. But in some peculiar way, I wasn’t particularly surprised by it. That was the mood of the moment, very unserious. and gotten serious. The trend of long dresses, flowers and straggly hair suited Caroline who had grown tired of the ‘dolly bird’ look. ‘Everyone used to wear the same thing so there was a huge buzz around each new season. We fought to get away from such ‘fashion bossiness’. But now, every look is OK; everyone’s got everything on.’ One of the first designers to join what is now London Fashion Week, Caroline bemoans the seriousness of today’s catwalk and longs for the jubilant freedom of yesteryear. ‘We’d have a rock and roll band, girl dancers onstage and towards the end, the audience would get up and join in. The whole thing was incredibly jolly and thousands of garments were sold because of all that excitement. Far more models back then were known as ‘characters’. But over the years, catwalks have become a centre for girls who don’t have the language or the fun for it. They’re terrified – and I don’t blame them. They come on and do their very serious best, and whilst they are marvellous, it isn’t a party. It’s a piece of modern art. Cooler.’ Caroline remains the ‘thinking woman’s designer’. Paying tribute to her extraordinary career, she was awarded an OBE in 2004, which she received from The Queen – ‘I wish my mother had been alive, she would have been so pleased’ – and last year, she published a book celebrating her 50 years in fashion. Still designing today, Caroline lives with her husband Malcom, with whom she has two children, Kate and Alex, and is now grandmother to five granddaughters. What a wardrobe they
shall inherit! ‘Yes, it’s lucky isn’t it?’ Caroline laughs. ‘They’re very smart, a completely different generation – not at all like us, we just winged it, always.’ ‘Winged it?’ Pah. It takes more than a wing and a prayer to reach 50 years in fashion, morphing one’s style again and again to capture the effervescent ever-changing mood of the most iconic decades in fashion history. And to do so with such ease and enjoyment? No, Caroline Charles has done far more than ‘wing’ it. She has most definitely swinged it.

A F FA I R Georgie Lane-Godfrey talks to Irish designer, the bad grandad of fashion, Paul Costelloe
I
t would be fair to assume that when you arrange to interview Paul Costelloe, you would interview, well, Paul Costelloe. You don’t anticipate being party to a Costelloe family gathering. Yet here I am, sat in Starbucks with not only Paul but his daughter Jessica and son William too, on one of the hottest days of the year (Paul is hungry and wants to do the interview over lunch). We talk as he eats, and his children fill in for him between mouthfuls – joking with each other, explaining any details he’s missed and moderating some of his less media-friendly comments. Paul is something of a lovable rogue and often comes out with opinions which seem purposely provocative; when I congratulate him on becoming a grandfather, he replies sardonically, ‘Oh yes. I’m really excited. At least she’s a girl.’ You see, the thing you need to know about the Costelloes is that there’s a veritable army of them – seven children to be precise, of which six are boys. ‘Anne, my mother, is the eldest of seven. Dad’s the youngest of seven,’ Jessica explains. ‘Seven is the lucky number!’ William puts in. This can’t have been a coincidence.
‘I’m a competitive person,’ Paul admits. ‘Having seven was to meet my father’s figure.’ Owning a raincoat factory in Dublin, Costelloe’s father was also in fashion, although he swears this didn’t influence his career choice; creativity simply runs in the blood. Jessica is an opera singer, sons William and Nicholas are artists, and Paul also paints on the side, selling his fashion drawings in a gallery in Dublin. An arty family, you might say, and an exceptionally tall one. All of the children, including Jessica, reach the 6ft mark and are of model proportions. It’s a great marketing tool, Paul admits, and one which he hasn’t failed to exploit; his sons have all showcased his designs on the catwalk and are heading out to Dublin in the next few weeks to represent the brand again. ‘It’s because we’re cheap,’ laughs William, ‘very cheap; we’re free!’ ‘Oh whatever! They have a great time,’ his sister interjects, waving her hand dismissively. There’s an easy friendship between the siblings and their father; they bounce off each other, banter flying between them as they talk over each other at breakneck speed. It’s hard to keep up and, quite frankly, a nightmare to transcribe,

but it’s a portrait of Costelloe as both father and fashion designer. Consequently, the label itself is well and truly a family enterprise, and every answer Paul gives me seems to link back to one or more of his children. It’s not annoying, it’s just a part of the brand. And, of course, part of being Irish. Yet Costelloe has something of a tempestuous relationship with his native land, having found himself in hot water a few years ago when he declared that Irish women ‘wouldn’t know style if it tottered up to them in 10-inch heels.’ He groans when I bring it up. ‘I do get myself into trouble. You have to be very careful, the Irish are very sensitive. If you say anything it’ll end up in the paper immediately. Ireland is a village, but once you realise that, you’re fine.’ So the Irish do have some style then? ‘Yes, but fashion doesn’t really come into Irish style, it’s their charm and how they wear their clothes which sets them apart. Jessica, for example, reflects Irish style perfectly.’ A designer for well over 30 years, Costelloe can afford to speak with such authority. His flagship store was located in the prestigious Knightsbridge and over the past three decades, he opened LFW for 13 years consecutively. He also designed the uniform for BA and Aer Lingus, and even dressed Princess Diana – ‘the high point of his career’. Now he’s reinventing his ladieswear line after the company producing it went into administration a few years ago, throwing the label into chaos. The experience proved a learning curve and taught Costelloe ‘that you have to diversify. If you don’t, it can bring the whole company down’. Today, the label includes homewares, menswear and accessories, but it’s the womenswear line which is
demanding most of his attention. So, what can we expect next year from this reinvention? ‘You know, I was looking at AW14 fabrics. No different to AW13 fabrics, if you ask me,’ he snorts. It’s rumoured the Duchess of Cambridge has been buying up his collection – is there anyone in particular he’d like to see in his new designs? ‘Dolly Parton,’ he answers straight-faced. ‘We’re big Dolly fans,’ laughs William loudly. ‘No, I wouldn’t mind dressing Gwyneth Paltrow, but to be honest I’d be just as delighted if you wore something of mine as anybody else.’ Very charming, but false gallantry I suspect. Surely he’s seen his clothes on someone at one point and been utterly distraught? ‘Oh god yes. But you know what? I just think of the money!’ he says, before all three of them erupt into peels of laughter. Next on the agenda for the Costelloe brand is a move into the Chinese market with his men’s collection. ‘Chinese style for men is very formal, very tailored, expensive,’ Paul tells me. ‘My son, Robert, lives in Beijing actually,’ he continues, bringing it back again to his favourite topic. ‘How old are you?’ he demands suddenly. ‘25,’ I answer quickly, slightly taken aback. ‘Oh Robert is 25, we’ll have to set you up.’ ‘He’s cute,’ pipes up Jessica. ‘A cool, red head,’ offers William. ‘We’re having a party…’ ‘A garden party,’ interjects Jessica. ‘You should come!’ ‘We’d love to have you,’ says Paul. ‘Wait,’ says Jessica, ‘are you even single?’ Erm, no, I stammer, a little embarrassed, and once again they burst into laughter. Our hour’s up, but it’s a fitting conclusion to what feels like an impossible task – keeping up with the Costelloes. 51

Fascinated by this process, I decided to visit the De Beers store in Westfield, to observe how the special For You, Forever process works from start to finish. ‘Each story begins with a personal appointment,’ I am told. ‘During this, your requirements are established and De Beers shares with you their original drawings and inspirations for your design.’ Whether it’s a classic Round Brilliant, an elegant Emerald or a contemporary Princess Cut, you then select your diamond and setting – it’s designed to find what is perfect for you. ‘For You, Forever pieces are a true statement of self – not only in the choice of style but also in the opportunity it affords a client to be very precise about their requirements.’

I can clearly see how the perfection of the diamond’s cut causes all eight facets to illuminate simultaneously and symmetrically. It is well and truly mesmerising. With what I have viewed today, the De Beers promise to ‘honour the light of your love’ makes perfect sense. As I watch a kaleidoscope of sparkling shapes bounce off each diamond, it takes my breath away and I’m even tempted to propose to myself!
As I peer into the pristine display cabinets, I’m bedazzled by their stunning portfolio of designs and ask how they source their comprehensive range of diamonds. I discover that each year De Beers inspects over 25,000 diamonds in their quest to find the highest quality jewels for their clients. They qualify the rarity of the diamond through their special ‘4Cs’ criteria, which rates

Anyone else bored of turning? Maybe it’s an age thing, but I’m over it. I don’t care whether tartan is ‘in’ – I love looking at it, but neither the combination of colours nor the pattern look good on me. Ditto the Autumn/ Winter catwalk trend for matte skin – charming in pictures, it makes me look dead. Not exactly the look I am after. ‘Know thyself,’ the Ancient Greeks recommended and the older I get, the more I accede. While I may yearn for a ‘wardrobe update’ after reading the latest glossy catwalk report, the reality is that most of the trends don’t suit me, work for my lifestyle or my budget. Instead, I find it much more satisfying to ‘fill holes’ in my closet (fashion and beauty) with pieces I keep wishing I had when getting dressed, and buying variations on themes that suit my body shape, emphasise my assets, lift my skin colour and make me feel confident. Perhaps not the most fashionable of approaches, it seems to get me a lot of compliments nonetheless. Which, knowing myself, makes me a lot happier than appearing in an imaginary bestdressed list. BOSI? Michelin-starred chef Claude Bosi talks fresh produce, pub culture and the uses of Twitter ABSOLUTELY: Why did you decide to become a chef? CLAUDE BOSI: My parents owned a successful restaurant back in Lyon when Cedrick [brother] and I were growing up and we were just immersed in that world from an early age. I was fascinated by all the beautiful produce going in one end of the kitchen and then leaving the other, looking really good to eat. ABS: You grew up in Lyon yet at your two Michelin-starred restaurant in London, Hibiscus, you serve British cuisine. Why? CB: It wasn’t really a conscious decision. One of the things that intrigued me when I first came here was the British palate – like the traditional flavours in kedgeree, pork pies, brown sauce and bread and butter pudding. I was blown away by the quality and availability of homegrown and reared produce. I had absolutely no idea it was so good and genuinely believed I’d end up importing everything from mainland Europe. We’re all really proud of our produce in France, the way they are in Italy or Spain, and anyone who visits knows how good the food is
Over the years, I’ve drunk in some dives
before they arrive. I was amazed that other than chefs, few British people at that time knew of, or worse still, were using it here! I just wanted to get my hands on as much as possible and champion it on the menu – the way we did back in France. ABS: Has that attitude to produce in this country changed since then? CB: Thankfully yes. Artisan producers and quality suppliers have filtered through to delis and
supermarkets, and farmers’ markets have sprung up all over the country. I believe a restaurant should say as much about the area it’s in, as the creativity of the kitchen, and I want to support quality suppliers that share that vision. You’ll find some of the same producers on the menus in the pubs, as you will in Hibiscus. The only difference obviously will be in the process of preparation and presentation of the dishes, as Hibiscus has two Michelin stars.

Pea & Mint Tart ˜ Makes 8 Small Tarts˜ Chocolate Pastry 400g flour • 100g cocoa powder • 300g diced butter 75g icing sugar • 3 egg yolks • 1 egg 01. Mix all the dry ingredients in a bowl and sieve. 02. Add butter and mix together in a food processor, slowly, using the paddle attachment. 03. Once the mix resembles breadcrumbs, add the egg and yolks. 04. Remove the mixture and bring together by hand. 05. Wrap in cling film and leave to rest in the fridge for 1 hr. 06. When rested, roll out thinly and line the tart cases. Fill with baking beans and cook at 180 degrees for 10 mins. 07. Remove the beans and cook at 160 degrees for a further 4 mins.
Pea & Mint Purée 200g peas • 30g mint 01. Cook the peas in boiling water for around 3 mins. 02. Blend with mint until smooth. 03. Cool down in a bowl over ice.
Pea Tart Mix 280g cream • 250g white chocolate • 84g sugar 2 eggs • 100g pea purée • ½ leaf gelatine (soaked) 01. In a Bain Marie, cook the chocolate, sugar, eggs and cream until really thick. 02. Blend until smooth. 03. Add gelatine and pea purée; season with a little salt. 04. Chill the mix down and place in a piping bag.
Pea Foam 100g white chocolate • 100g water 100g milk • 100g pea purée 01. Boil the water and milk. 02. Melt in the chocolate then chill. 03. When cold, blend in the pea purée. 04. Transfer to a gas siphon and charge with 2 gas.
Crystallised Coconut 250g diced fresh coconut • 400g sugar 100g water 01. Bring the water and sugar to the boil. 02. Cook to 140 degrees. 03. Then add the coconut mix quickly and put on a tray to cool.
Assemble 01. To assemble, pipe the pea tart mix into the cooled cooked pastry shell. 02. Add the pea foam on top 03. Garnish with the crystallised coconut.
ABS: When you lost your second Michelin star back in 2008, a lot of other chefs spoke out to say you should be re-awarded it. How did that make you feel? CB: I was expecting it, to be fair. We moved Hibiscus from Ludlow to London in 2007 and when we re-opened in Maddox Street, Michelin only had two weeks to assess us again before going to print with the 2008 guide. As you can imagine there were one or two hiccups in that first month, so I knew we’d probably be dropped. It was still me in the kitchen, and Claire [wife] running front of house, so once we got over that initial blip, it was business as usual and we got the second star back in the 2009 guide. The support from the industry was phenomenal though and really helped with all the ‘transitional’ stress. ABS: Is there a lot of camaraderie amongst chefs or are you all fiercely competitive? CB: We’re a naturally competitive lot but I think we compete more with ourselves than each other. When you stand at that pass – service in, service out – the last thing on your mind is what anyone else is doing. ABS: If you were ever to do a culinary collaboration, which chef would you most like to work with? CB: Alain Passard from L’Arpège in Paris. I worked under him as a young chef before I came to England. He’s had a huge influence on me and I’d love to work alongside him again. ABS: You’ve recently opened The Malt House in Fulham. Why did you decide to move into pubs? CB: Since I first came to the UK, when I was 25, I’ve loved pubs. The good ones had such a great atmosphere. They kind of reminded me of my parents place back in Lyon, which was very much a local family restaurant. You were just as welcome to drop in for a coffee or a glass of wine with pâté as you were a four course dinner. They’re just a reflection of time, place and people. I still love them. ABS: Do you think these openings have helped address French misconceptions about pubs? CB: I think some of those misconceptions were well-deserved if I’m honest. Over the years I’ve drunk in some dives and in my early days you were hard-pressed to find decent pub food. The practice then seemed to be: you went to the pub first, then for a curry or kebab after, as those were the only places still open! It started to change slowly when the licensing laws meant you could stay open for longer. The
main change seemed to start outside the cities where pubs in more rural areas rely on people driving to them. That meant a shift in what they offered and for most, that was food, and the quality of that food. Once that trend started to hit the cities, it gained momentum. Increasingly pubs are now catering to more than just the drinks trade. I felt there was a real gap in the market for that style of eating. In France for years bistros have sat alongside fine dining restaurants, and in Italy trattorias do the same. We needed somewhere along the same lines and pubs were just the natural fit. ABS: What makes a dish truly exceptional? CB: The best quality produce you can find and simplicity. ABS: Do you believe anyone can cook? CB: Yes. If you can read, you can follow a recipe. However, if you want to be competent, best to practise the dish first. ABS: But can anyone critique food? CB: Yes they can. Although the same rules apply as with cooking. ABS: Twitter: friend or foe? CB: More friend than foe in general. We work long, busy hours in the industry and Twitter means I can keep in touch with chefs all over the world. ABS: What’s next for Claude Bosi? CB: We’ve just had a refit at the restaurant and am looking forward to the Masterclasses in the new Development Kitchen. W
hen I used to think of the word ‘feast’ I would imagine Henry VIII drowning in a sea of boar heads, mutton chops and roasted swan. I did not expect such a word would be applicable to a quiet Tuesday dinner at contemporary Japanese restaurant, Zuma. In fact, one
of the reasons I chose to visit Zuma was because I thought I’d enjoy a morsel-like supper, which would in no way affect the unforgiving waistband of my summery dress nor my bulging stomach beneath it. Fifteen dishes later… well, I gave up the pretence. I was there to stuff my face, and stuff it I did. Luckily I had a companion willing to stuff their’s with
me: my suave banker cousin. Suave banker cousin (who I often call ‘Bond’, but whose real name is ‘Hugh’) delighted me by announcing that he ‘eats everything.’ This was music to my ears, and the maître d’s too, for the latter beamed and suggested he come up with a special menu, just for us, featuring all sorts of signature yummies. And so it began, this feast: grilled artichoke with truffle wafu; thinly sliced fatty tuna, chilli, coriander and sesame; tuna nigri with ginger and wasabi; stir fry soy beans with chilli, garlic and ginger; crispy fried squid with green chilli and lime; seaweed salad, apple wafu vinaigrette and toasted pumpkin seeds; sliced yellowtail with green chilli relish, ponzu and pickled garlic... not even half way through yet… diver scallop tartare with fresh wasabi ponzu; spicy yellowtail roll with sansho pepper, avocado and wasabi mayo; grilled Chilean
sea bass with green chilli and ginger dressing (amazing); spicy beef tenderloin with sesame, red chilli and sweet soy (heaven)… a platter of pudding? Go on then… coconut ice cream with fruit jelly; fruit salad of mango, papaya, pineapple and dragon fruit; Masterchef-worthy chocolate fondant with caramel, praline and vanilla ice cream, and finally, some sorbets. Belch. All of which were paired with the most delicious wines (the Riesling was my favourite), which followed a trio of sakes, served on a tray of crushed ice. In case you’re wondering, I crawled out of the restaurant and didn’t eat for a week (lies). Zuma: the ultimate Japanese – one that truly puts the ‘East’ in ‘feast’.

week on and I’m still having flashbacks. My friend and I enter through the Boisdale’s bright red facade all geared up for a lavish meal for two in the heart of Belgravia. After a warm and friendly welcome at the door, we’re escorted through a series of tartan-clad chairs and dark red and green walls to our dining

spot in a shady courtyard. It’s not exactly delicate and breezy, but our flutes of delicious ‘Boisdale Vintage Cuvée Speciale 2005’ help us see it through rosé-tinted spectacles. It’s a warm summer’s eve with al fresco dining so we can’t complain. Yet. We focus our gaze on the busy menu and dodge the 1980s throwbacks – ‘Lobster Cocktail in Marie-Rose Sauce’ – non merci! Left in limbo, we were relieved when our waiter finally appears and jots down our order in true Fawlty Towers fashion. My dining companion (who happens to be a famous TV chef and a discerning salmon connoisseur) insists we opt for the ‘Dunkeld Scottish ‘Gold Medal & Multiple Award-
Winning’ Wild Smoked Salmon with Shallot and Caper Relish’. We’re treated to a generous portion of the fish with the piquant shallot and caper relish that, sadly, overpowers the delicate fish. We also wonder how wild the salmon actually is. Its murky sheen doesn’t suggest it was the happiest fish in the sea and it certainly doesn’t live up to its £24 price tag, that’s for sure. Mind you, the wafting cigar smoke billowing down from the upstairs private function room doesn’t do the dish any favours either – though granted it might have done, were we eating smoked salmon. We press on ready to embrace our suitably Scottish ‘Aberdeenshire 12oz 28 Day Dry Aged Fillet On The Bone’ and ‘40 Dry Day Aged Sirloin’. I have to say that my fillet is deliciously flavoursome and effortlessly tears away from the bone. My eyes close in pure delight, but open to find my poor companion’s squeezed in horror – her tough sirloin had been rejected, so ‘dry aged’ she says, she feels compelled to spit it out. The accompanying vegetables were tasty but clearly not fresh from the vegetable patch – a crying shame. Pudding consisted of an intense ‘Rich Dark Chocolate Cake’, sweetened with honeycomb ice cream, which refreshed the palate. The ‘Blueberry and Yoghurt Parfait’ left me indifferent but perhaps I was put off by a couple kissing on the dance floor. Maybe it was too optimistic of us to expect silver service and haute cuisine from a place renowned for its live music. So we tuned in to the ‘Reuben Richards & Soul Train’ on stage and wonderfully, the food was forgotten. If you’re no great foodie, but fancy a jazzy night in Scotland, go to the Boisdale Belgravia – breathe in the atmosphere, breathe in the music but, ahem, breathe out the cigars.

SERVES 4 INGREDIENTS ½ cup dried figs • ½ cup pitted dates 10 chopped almonds • 6 chopped cashew nuts • 6 chopped pistachios ¼ cup ghee METHOD 01. Soak dried figs in two cups of water for three hours. 02. Drain and grind into a purée. Add a drop of water if required. 03. Chop the dates and place in hot water for about 15 mins. Grind into a purée using very little water. 04. Heat ghee in a pan, add both purées and cook on medium heat stirring continuously. Cook until all the excess moisture has dried up. 05. Add the nuts and mix well. 06. Continue to cook for 10 mins or until the mixture leaves the sides of the pan. 07. Spread on a greased tray. 08. Once cool, cut into desired shapes and serve. We loved the outside balcony boasting one of the best views of the city – to stay in this Penthouse Suite is to be spoiled rotten.
On the ground floor lies the hotel’s scrumptious restaurant. Quality ingredients and presentation are buzzwords here. Triple cooked chunky chips are a must (regardless of what you order) though the Tiger Prawn Caesar Salad makes for a nutritious yet filling healthy option. The wine list is extensive, and if you happen to have a birthday during your stay, a mini cake with candles will find its way to your table upon request. Best of all, the restaurant is situated next to the slick Whisky Bar, which serves up a choice of 270 whiskies and numerous cocktails should you feel like a nightcap to help you digest.

PARIS BEST FOR: CHIC SURROUNDINGS t may look like just a sweet, local boulangerie from the outside but inside, in the words of Ab Fab’s Edie, ‘It’s Lacroix, sweetie! Lacroix!’ Decorated by the eccentric French designer, the interiors are pretty fruity to say the least. Each of the hotel’s 17 rooms is unique, filled with an eclectic mix of punchy patterns, clashing colours and opulent fabrics. Striking doesn’t quite cover it – think polka dot carpets in the corridors, baroque mirrors in the bathrooms, Flemish frescoes in the bedroom and 60s furniture throughout. e arrived at Rangali Island, the home of the spectacular Conrad Maldives resort, in style – aboard a petite seaplane piloted by a relaxed, barefoot captain. It was an exciting yet slightly more rustic journey after the supreme comfort of a Business Class flight with Turkish Airlines, who recently launched their Maldives flight path via Istanbul. I immediately recognised the scenery below as if taken directly from the pages of a brochure; the semi-submerged islands and reefs dotted sparsely across the vast Indian Ocean. On a hot yet overcast day, the hazy sky and endless water seemed to join up as one, which we slowly and dreamily cruised through. I was swiftly brought back to earth (mentally, thankfully, and not literally) when we entered a heavy cloud and the tiny plane rattled enthusiastically. Luckily the pilot remained, like the ocean, absolutely calm. All agitated nerves were swiftly appeased with a warm welcome and a cold flannel when we arrived at the gorgeous resort – two separate islands connected by a wooden bridge. The precarious nature of the Maldives (it’s the planet’s lowest country at just 1.5 metres above sea level) has been well-documented and sits in contention with its unspoiled, honeymoon paradise cliché. Though it is a touch surreal to be essentially deserted amidst a fragile archipelago miles from anywhere in the heart of the Indian Ocean, it’s incredibly easy to give in to its abundant natural beauty. The resort has every kind of expected luxury on tap, but its clever design demonstrates the belief that no mod con could begin to compare to what you’ll find outside your bedroom window. Even the most ardent city worker will soon resign their BlackBerry to the hotel
room. The Conrad has plenty of activities to keep you entertained, should you tire of il dolce far niente; from a wealth of spa treatments to water sports, a kids club, excursions to your very own desert island and even a whimsical looking three-man submarine available for hire. We were informed, quite candidly, that Maldivian cuisine isn’t exactly sought after, but fortunately there are ten outstanding restaurants to choose from at the resort that cater to the varied nationalities of its guests. A fabulous champagne and lobster buffet romantically set on the beach is a highlight, but the intimate nine-course Japanese feast prepared in front of your very eyes at the Koko Grill restaurant is simply not to be missed. By far the most spectacular activity on offer, however, is the opportunity to swim with whale sharks, the world’s largest fish (don’t worry, they’re vegetarians) through the Maldives Whale Shark Research Project
(MWSRP). The Conrad has sponsored the MWSRP for over five years and the excursion is a way of assisting their research into these vulnerable gentle giants. It’s a true once-in-a-lifetime opportunity. If you don’t fancy getting your toes wet (then you may very well be in the wrong place), the ethereal manta rays that are attracted to the lit up bridge at night are a must-see. These enormous, ghostly creatures swim in graceful figures of eight and are a joy to behold. We spent four incredible days in the Maldives – an island nation that, prior to my visit, I’d written off as a destination solely for newlyweds. This, however, is a nation that needs to be seen to be believed. Forget what you think you know and lose yourself in its spellbinding natural beauty which will – to dip well and truly back into the book of clichés – create memories that will last a lifetime. I
spent the first 16 years of my life in Hong Kong, and attended a prestigious International School. Like most other international school children, I was taught by English and American teachers and we all went to Universities around the world. Raised by an English father and Hong Kong Chinese mother, I’ve come to realise that the main thing the Chinese love more than food or family is purchasing property, either locally or abroad. However, in recent years, the government of Hong Kong have introduced additional stamp duties and increased mortgage rates, so property prices have increased by 40% in the past year, therefore making foreign destinations like London a perfect place to invest. The media have publicised the fact that 73% of new developments in Central London are purchased by foreign investors, and 50% of these are South East Asian investors (Malaysians, Singaporeans, Hong Kong and mainland Chinese). Asian property investment in London increased from approximately £20 million in 2011 to over half a billion in 2012, and this number will keep rising due to the globalisation of the East. London is seen as attractive to Chinese investors for many reasons, such as its flexible regulatory and tax systems, as well as the fact that it is seen as a safe haven for their capital and a desirable destination to send their children to school and universities. ou’ve probably heard the poem that opens “What is this life if, full of care, we have no time to stand and stare”; but what you may not know is that it was written by William H Davies, who often visited Chelsea to see his friends the Sitwells at their home in Carlyle square. Having recently moved jobs from a global firm to take over lettings for the residential agent Maskells, I am beginning to see what the poet meant. The Royal Borough is a vibrant and varied place, where each street seems to have its own nuance. Those of us lucky enough to live or work here should occasionally find ten minutes to simply look and appreciate. Take property for example, from the formality of Christopher Wren’s Royal Hospital through to the elegance of Egerton Gardens, it’s a feast for the eyes. But, of course, the Borough is so much more than just the sum of its buildings. It has been home to so many of the great and good; blue plaques abound. People as diverse as Oscar Wilde, Alexander Fleming and AA Milne have called Kensington and Chelsea home. I’m quite lucky, because Maskells have specialised in the area since 1965, my job description means I get to walk the streets and meet the people of Chelsea daily. I’ve the best excuse in the world just to appreciate my surroundings. So, if you see me standing and staring, or chatting, don’t be misled – I’m actually working flat out.

July supply sits at about 40% of what it was three years ago and the trend is relentless. We need to stop and examine whether the entire show is going to grind to an unedifying halt, if we extrapolate the figures at some point in c. July 2015 there won’t be anything for sale at all. We know there are those who HAVE to sell, but they’re rare and the excitement generated by our area and the market it creates now resembles a faded big top circus. Unashamedly mixing my metaphors here, those who make a living from it are like animals visiting a drying waterhole, and we know what they’ll do to get a life saving drink. To continue with the theme, a subtle player in the market told me last week that in the old days people wouldn’t miss the odd deal as the herd was moving so fast, but now it’s very tough and everything has thinned out with competition fierce, and many of the beasts are dying off. Shame.

Bartholomew Landscaping explains the tricky aspects of planning and how they tackled problems to transform a Kensington garden
A
s far as the planning authorities are concerned, landscape is now termed a ‘material consideration’ when planning is under scrutiny, and as such, the importance of landscape has never been higher. Judiciously submitted landscape plans can have a positive effect on both planning officers and councillors. The insistent push for green space, whether in the form of roof gardens, green walls or in the creation of contemporary ‘outdoor spaces’ can only be good for both the environment and the appeal of all developments, while adding significant value to homes. In existing private gardens, the intrusion of planning into the development of a site can cause some furrowed brows and rethinking, but in one garden we recently constructed, there were benefits to be had from a re-examination of the design process after consultation with the local planning department.
Kensington is a minefield of conservation areas and heritage listings, meaning green space is at a premium, and the gardens here are subject to more than the usual scrutiny. Situated in the centre of this planning maze is a quiet square that contains very few outdoor spaces. Our client wished to relax in their private grounds, where outdoor seating, all weather surfaces and significant screening were high on their list of desirable factors. The existing garden was poorly laid out and had little or no space for relaxation. As they had just had extensive renovations completed on their home, the time was ripe to tackle and transform their garden completely. The client’s desire to have privacy and space demanded that a fence be used across the main part of the boundary, but consultation with the local planning authority quickly showed that a fence through a protected root area of a major tree, and the planning officer’s wish
to avoid solid fencing, precluded this. Our solution satisfied both parties and allowed the character of the square to remain intact. This was achieved by keeping the fence structure of individual panels, but to offset and overlap the screening line. Should I redecorate pre-sale?
I
n my experience redecorating can have a positive or negative impact on attracting the right buyer. A home is usually a reflection of a person’s life. However when selling a home you need to present it in a way that people can ultimately visualize it as their own home. Dealing with emotional responses can be a delicate matter that needs to be carefully dealt with on a case to case basis. Where should I invest?

hort term, I’d look to invest in SW5 due to the regeneration taking place. For a longer term investment, I’d advise investing in areas with the highest yields. We’re currently marketing a twobedroom apartment on Rutland Gate, which I think would be a great rental investment. It’s on the market for £795,000 and despite occupying the lower ground floor, this property would easily rent and produce a great return.

irstly I think it is very important to listen to your agent, they are acting in your best interest and will give you sound advice. One of the most important requests we ask of our sellers, is to have a solicitor instructed with all the paperwork in place. It is all too often that when an offer is accepted on a property, the seller hasn’t furnished, let alone instructed their solicitor with all the necessary paperwork - this will obviously delay matters in what should be a swift process. Therefore ensure you give your solicitor completed fixture and fittings forms and property questionnaires, request the deeds if necessary, and action the local authority searches if you want to be very organised! The buyer will pay you for these! The presentation of a property is critical, and first impressions are paramount. It’s easy to keep one’s own home tidy, however if you are selling a property with messy tenants in situ, this can jeopardise the chances of finding a buyer – so maybe consider selling it vacant.

When is the best time to sell?
raditionally, the spring and September are the busiest months, but in prime central London it is not so seasonal because buyers look all year round. August is the quietest month as the well heeled retreat to their summer homes abroad en masse.
f your home has been on the open market for some time without selling, quite often, this will be down to the price. There are good buyers in London currently and properties are being sold, so there is always a buyer for a property, provided it is priced correctly. Should your home have been on the market for a while without much success, it is important to prevent your home from going “stale”. This can be done by removing your home from the internet for a short period, adjusting the price and using a different main photograph.

Vendor Advice Should I use an agent?
Y
ou’ve always been able to sell your property privately, so why would you use an agent? Agents have the ability to make a market, i.e. forward value, and don’t have to rely solely on historical perspective, as would a private seller, and build up a database of ready and willing buyers in order to best farm that market. You need to be questioning your prospective agent as to how many prospective buyers they have for your property. The English in particular are terrible at asking the right questions, often and erroneously, seeking the highest price and the lowest fee. Choosing on that basis partly explains why “the Industry” doesn’t enjoy the best of reputations, as in life you get what you pay for. Always get at least three agents in, a local one, a national and a bigger local agent. Check from their websites that they sell, what you want to offer and ask to see a list of buyers they have for your price range. All this is easily available. Don’t stand for any rubbish about marketing costs etc. being loaded on to the fee or demanded up front, agents should put their money where their mouth is, no sale, no fee.

t the moment, demand in Chelsea is more heavily concentrated towards 1 and 2 bedroom flats as opposed to large family houses, so if I was going to buy a flat to let in Chelsea I would buy a really good sized one bedroom property in a great location and furnish it in the style of a 5 star boutique hotel as that is what most tenants seem to want! But do beware of purpose built blocks with very high service charges.

Rental yield vs capital growth?
R
ental values have not risen at the same rate as the capital value of properties in Fulham, (can you name a period of time for this in the last six months?), with a current average rental yield of less than four per cent for the area. As the sales market has increased in price so rapidly, the gap between lettings prices and capital values has widened and we are therefore witnessing a huge rise in in the number of landlords wishing to keep hold of their ever increasingly valued assets.

property is usually someone’s biggest asset so I cannot stress enough to my clients the importance of using an ARLA accredited management agent to look after it. A professional property manager not only helps the property run efficiently, but tenants often prefer to deal with a third party especially corporate tenants who are relocating from abroad. Allowing an agent to manage your property ensures problems are fixed swiftly and whether you are a landlord or a tenant, you have complete peace of mind that only reputable contractors are entering your home. Statistics show that managed properties retain their tenants for a longer period of time and the services offered will benefit both the landlord and the tenant in the long run saving not only time, but money too.

resentation is key in the current market. The first five to six months of this year saw a far greater supply of available properties and this saw rental values soften. It used to be that if the location was right even properties that were slightly past their prime would attract tenants at a certain price point. Not all tenants have taken advantage of the market conditions by insisting on more space or a superior location – there has been a shift to quality. The market is changing again, supply has dropped off and we are expecting the market to become less price sensitive in the coming weeks and months – typically September is out busiest month.
