y earliest childhood memory of a family holiday was two-fold: one, sitting in a car for what seemed like an entire week, and two, sitting watching the beautiful sea. Although we often had holidays abroad, Cornwall was a frequent destination for the Kebble summer jaunts. I still hate the thought of the car journey, though. As I have got older, thankfully the sea has got a little nearer. We are blessed here in Sussex to have access to some of the UK's finest beaches – and as I discovered this month, Bognor Regis enjoys the most sun in the country – and it wins over everyone. Pearl Lowe tells us this month about the lure of the sea and how it enticed her to purchase a property in Rye. With summer here, it seemed apt that we created a mini special that looks at how Sussex comes up trumps during the warmer months, and it's not just about the seaside. Inside we look at the best festivals winging our way, remind ourselves of what's right on our doorstep, and also understand that you don't need to travel far – or even get in that wretched car – to experience a staycation like no other.

I

t has always been a lifelong dream of mine to have a house by the sea. I’m not sure what it is about the call of the sea that I find so compelling, but it is as though I am magnetically drawn to it. The sound of the waves breaking onto a reef, the sight of the tides rebounding and receding, the smell of salt water… all of these experiences do wonders for my body and soul. I have a deep affinity for water and ever since I moved away from London in 2005 I have always lived close to it – be that by a river or even just a stream – but as soothing as that is, I still found myself longing for the waves and have yearned to have a bolthole of my own on the coast. It was fantasy of mine, shared by my husband Danny Goffey, and a subject that would inevitably resurface every summer when we took our four children – Daisy, Alfie, Frankie and Betty – to the sea for our annual getaway. “Wouldn’t it be wonderful to have a house here?”, was the refrain as we sat on the beach and watched them play in the waves. We both knew back then that this was just wishful thinking. But last year that little pipe dream became a reality when we took possession of an enchanting wooden house on the south coast of England. We had, finally, taken the plunge. Back in the day, when we dreamt of our fantasy coastal home, I think we both imagined that it would be in warmer climes. As a result of our careers, Danny, as the drummer in the band Supergrass, and I, in my work as a designer, have been lucky enough to travel to some of the most exotic locations in the world and our family holidays were usually to some idyllic Mediterranean isle.

THE NEW VINTAGE SWIMWEAR COLLECTION

Great British Tradition But when it came to eventually finding our house by the sea, we both knew that we wanted to be here in the British Isles. Maybe that’s a sign of getting older and, perhaps, wiser. To be honest, plane travel no longer holds that same allure it once did when I was footloose and fancy free. And these days I am more conscious of my carbon footprint, too. When Danny and I set out on this journey, we soon realized that we didn’t just want a house by the sea, we wanted it to be a home by the sea. It should be a place for family and friends to gather or where we could just be alone with our dogs. We didn’t want a sterile villa that we would only visit in season. We wanted to use it all year round, come rain or shine, and most importantly of all, for me at least, it would be a place I could put my mark on because this was going to be our retreat, our home from home. And so it was that we ended up here in East Sussex, just a stone’s throw from one of the loveliest beaches I have ever seen. I have always had quite a nostalgic love of the British coast, which I think is often overlooked in our quest to find the exotic. But for me, it makes my heart sing. Think of all the majestic Victorian and Edwardian hotels on the promenades of our coastal towns. The rows of beach huts, painted in vibrant sherbet and ice-cream hues that line our shores. Then there are fish and chip shops, the rickety shacks, the cafes, the piers, those wonderful old guesthouses. All of this appeals to my aesthetic – a sense of faded glamour, a style that I would describe as a mix of the gloriously decadent yet well-lived in. It is elegant but whimsical, eclectic but well thought-out. From the moment when I first set eyes on this house, I knew that I had found my dream property by the sea. I didn’t even need to set foot inside to know this was the one. There was just something so enchanting about it that made my heart skip. Truly making the most of being by the sea, Pearl Lowe has launched a new swimwear collection inspired by all things vintage

Q What do you love about the area you live in? A It feels like it could be in New Orleans. There is a lot of wood everywhere. It doesn’t feel as though it’s in England. Q How have you recently renovated your home? A When we first looked around the house, there was a pond and I thought it would be great to build a pool where the pond was situated, and clad around it, so it feels as though it has always been there. It was quite stressful though, as we had to take down a couple of lovely sheds, as they looked dreadful next to it. Q What is your favourite part of the house? A I love our bedroom - on a clear day you can see the sea in the distance and we recently put in a Burlington roll top bath, so it’s a tranquil room. The place where I relax. Q What can you tell us about your SS22 swimwear collection? A I wanted to create a collection that felt very British. I love the old British 20s swimsuits and hats. I think they are so stylish. I love a swimsuit with a matching hat. I couldn’t find any to buy for myself, so I created my own collection. Q Why have you always been inspired by the vintage look? A There is something about vintage that makes me feel so happy. The fact that if you wear a dress from the 20s, 30s or 40s. Someone has either made it or worn it and perhaps loved it and now you’re wearing it 70 years or more later! I also love the shapes, they are so flattering. Q Who is the collection aimed at? A I would say a fun, curvy lady. Although, they look great on skinny ladies too. Q What’s next for you? I’ve just launched my first antique furniture and textile collection on my website, so I will be constantly uploading new pieces there. I have a collab with Coco & Wolf next month, a jewellery collab launching soon and my very own Wallpaper range. Q What have been the highlights

of your journalism career?

A Although I started out on weekly

magazines, which is the world where my book, The Time of my Life, is set, I always dreamt of working for glossy magazines – specifically Cosmopolitan. After a few years, I landed my dream job as a feature writer there, and unlike most dream jobs, the reality actually lived up to my expectations. I worked with an amazing group of funny, talented women; got to interview celebrities including Daniel Radcliffe and Steve Carell; attended film premieres; was flown business class to attend the launch of the Apple Watch; and landed my own monthly column, called Sex and the Single Girl, which made me feel like a real-life Carrie Bradshaw. Q The Time of my Life has been described

as a modern take on Groundhog Day, was that an influence for the book? A I’ve always loved time-loop and timetravel stories, and Groundhog Day is one of my favourite-ever movies. I noticed that a lot of books that feature time travel are dramatic stories, but I wanted to write a comedy that could act as a bit of a palate cleanser after the pandemic. Unfortunately, when I set out, I didn’t realise how hard it is to write the kinds of visual scenes that make Groundhog Day so funny – for example, seeing the main character fail at the same tasks over and over again on different days. It was an interesting challenge, which I tackled with the help of my editor, and I think we cracked it… Q Is the main character, Jess, based

different character, who was a lot like me – a stickler for the rules who loves writing lists for everything, and is generally a bit anxious. But as the book evolved, the main character was given a new name and a whole new personality – Jess is disorganised, chaotic, and lives life by the seat of her pants. Jess does have my sense of humour though, because I wanted to write a book which, if I hadn’t written it myself, would make me laugh.

Q You’ve recently moved from London to

Sussex. What drew you to the county?

A I’ve always had a real thing for Brighton

– I knew I’d love it before I visited and stupidly saved my first visit for when I had a boyfriend, so I could enjoy a romantic weekend there. It meant I was in my late 20s by the time I visited Sussex, and I couldn’t stop grinning all day. It was exactly as vibrant and as much fun as I’d expected it to be, and I’ve always loved the seaside. From that first visit, I had it in the back of my mind that I’d like to live in Brighton one day, but as my fiancé and I are both in our 40s now, we were looking for somewhere a bit quieter to live, that’s still within easy reach of the city. As soon as we visited Worthing we fell in love with it – it’s got old-school seaside charm, but it feels vibrant and exciting, too. I do quite like picturing myself

as a tortured novelist, gazing intensely at the roiling sea as I come up with ideas but, unfortunately, I write comedies so that doesn’t really work. I’ll have to giggle at the sea instead, I suppose.

One of the things I love about Worthing is that on some streets, you can see the sea in one direction, and the South Downs in the other. I’ve never seen such stunning

He keeps popping up at awkward moments as she tries to land a new boyfriend, and realises that she needs to work out how he died to get rid of him. Hilarious japes ensue. SEA of CHANGE The co-founder of the little art gallery in West Wittering picks out the local artists who embrace the coast and all of its elements By L I N DA F O S K E T T

rtists have always been attracted by the sea and skies in its various lights: strong, violent, soft and atmospheric. At the little art gallery in West Wittering, we always have a selection of coastal works by some of our artists, and something to cover all tastes and budgets. This is a selection of our regular artists whose work is often based on the coastline of Sussex.

FRANCES KNIGHT

Paddy MARTIN

Paddy works on recycled sailcloth, and his images of surfers and backlit sails attract a lot of attention in our gallery. Since Paddy graduated in Fine Art in 1998 at the time of Brit Art, and studying under some of the YBAs, he has been fascinated by paint, light and by the juxtaposition between the paint and the surface it is applied to. He spent many years painting surfers, surf and subaqua vistas before moving towards painting commissioned works. He likes to think that every recycled sail he uses for his paintings already has tales of adventures woven into it over the years of use. Add to this adventure, paintings that are very much about atmosphere, space and light and also about the very stuff they are made of – paint. Then overlay a process of sourcing materials, repurposing, layering paint and sanding back to reveal both the studio activity and the very history of the sail and you start to understand his aim to engage viewers in his work through the three narratives of the history of the materials, the process in the studio and the atmosphere and light of the finished pieces.

Frances graduated from Camberwell School of Art in London, and she then won a Commonwealth and British Council Scolarship to do her MA in India. Frances works in oils, outside on location directly from nature. She often works from these plein air studies back in her studio to create much larger paintings that explore further the relationship of colour, light and structure in the landscape and seascape, working them in to much larger paintings. She is not so much interested in rendering the surface qualities of a landscape or seascape, but in conveying the underlying structure, colour and atmosphere. She likes to explore the interaction between abstract qualities of the two dimensional painted surface with the illusion of space. Although some

people may find her paintings have an unfinished look, she finds that if she continues past a certain point the painting will lose what she wanted to express, by getting bogged down in surface detail. Frances would like her paintings to help people feel happy, experiencing the underlying harmony in nature that is the essential nature of everyone. Visitors to our little gallery are constantly surprised to see the variety of work we have to offer. It is not always possible to display all the paintings a visitor can see at any one time because, as the name suggests, we are a little art gallery. It is why we offer private appointments, so if anyone wishes to view more work of a specific artist, style of work, subject or size, we can arrange to have a selection available on the day of your visit.

SHAZIA MAHMOOD

Shazia MAHMOOD

Shazia makes strong vibrant images of the local beaches and dunes. She works with oils, acrylics and inks on canvas and handmade paper. She makes watercolour sketches on location, which she then uses as a colour map when she returns to her studio. Shazia has been a full-time artist for over 25 years. She studied for her Masters degree in Fine Art in Barcelona. She has travelled and painted all over the world, but the Sussex coastline near her home inspires most of her work. Her dramatic land and seascapes capture the detail of the coastline and sand dunes. Bold washes of colour and movement add drama to the skies and sea. As an experimental artist, Shazia loves using different tools to evoke the landscape around her.

Sue GREEN

Susie has a BA in Fine Art Painting from St Martins School of Art and an MA in Fine Art from Brighton Art School. Her work evolves from speedy responsive drawings and rapidly painted sketches made directly from nature. These rapid drawings capture expressions of fleeting moments and inform the larger paintings, capturing the elements at a moment in time. She works in a very physical way, in an outside studio space for as much of the year as is possible: this helps to keep the air on the paint allowing its life and energy to gently invite the process of pushing, pulling, splashing, scrubbing and scraping to take over, at which point a painitng may or may not emerge and evolve into an expression of something that taps into what it felt like to be there.

Sue is a very popular artist and her work often adds the finishing touch to a modern designed space. Sue was born in Belfast, and she studied at Nottingham College of Art and Vienna College of Art. After College, she worked in fashion and interior design. The coastline and the turbulent English Channel are a constant inspiration, as is the café life on the continent and the swirling wash and exotic excitement of Africa and South America. She approaches these rhythms of shape and colour from different viewpoints attempting to capture and freeze a moment of movement, quality of light and atmosphere through layers of broad confident brush marks and a palette of subtle hues and contrasting vibrant colour.

Help us celebrate the creative arts in Petworth as part of Culture Spark 2022 Celebrities and Artists are busy decorating lanterns as part of the Petworth Vision Lantern Art Trail taking place between 1st - 30th July. Six of Petworth’s independent galleries will be exhibiting the uniquely decorated lanterns and visitors will be given the opportunity to place a bid and display one in their own home. However, the celebrities and artists will remain anonymous until the end of the exhibition and will only be revealed when the winners come to claim their prize. n 28-29 May, over 12,000 people and many more dogs of all shapes and sizes filled the grounds of Goodwood Estate in West Sussex for the launch of Goodwoof presented by MARS Petcare; an exciting new event celebrating everything we love about our four-legged friends. The two-day extravaganza opened with an iconic parade of over 240 spaniels, the breed celebrated at this year's first event. The fabulous celebration kick-started a day where supreme showmanship and spellbinding canine competition came to the fore. The Disc Dog World Champion, Adrian Stocia, got proceedings underway in the Action Sports Arena, with daring freestyle acrobatics starring charismatic terrier Icaro and border collies Inu and Iris. The adrenaline-fuelled competition continued, with the scintillating flyball knockout tournament wowing the bustling crowd who were packed three deep in the main area, while those that wished to test out their own dogs' skills could enter into the 50m fastest dog dash, which proved hugely popular with contestants including the likes of tennis ace Johanna Konta and dog Bono. Incredible handling harmony was observed in Heelwork to Music, where Anne Shuker curated an enchanting display with Freckle. Border Collie Jonah showed poise under the careful commands of champion sheepdog handler Ricky Hutchinson, guiding the sheep with patience through the gates. Aside from awe-inspiring exhibition moments and have-a-go elements, a multitude of activities for those that enjoyed calmer surrounds could be experienced. Hugh Bonneville, of Downton Abbey fame, and Anne Robinson hosted Literary Corner, reading a plethora of dog tails. To finish, the Barkitecture competition presented by Mastercard united the world's best architects and designers, raising a phenomenal £30,150 for Goodwoof's charity partner, Dogs Trust.

fter a successful debut in June 2021, where its shows were 100% livestreamed, this year Chichester Fringe is bringing the magic of performance to a live audience. This year promises a fantastic mix of performances, from Indie musician Jacob Palmer, comedy from TikTok stars The Sugarcoated Sisters, puppetry from Dodo Dramatics, drama from new young company Juvenile Behaviour Theatre, as well as brand new musical The Girl in the Mirror. Chichester Fringe will take place at three venues in the city: Graylingwell Chapel, Chichester Canal and Oxmarket Contemporary. The fringe will start with a bang in the recently-refurbished Graylingwell Chapel, where shows will run over three days (1-3 July). Chichester Canal is home to more events, starting with Comedy on the

Canal at 6pm on Thursday 7 July. This unique event sees comedians take to the waves and entertain on a canal boat, complete with a supper of fish and chips. A Music & Art showcase of incredible artists will be held on Thursday 14 July at 7.30pm at Oxmarket Contemporary. ot many counties can compete with Sussex when it comes to historic castles. There’s not enough room to cover them all here, so we have decided to focus on Arundel Castle. The story begins in 1067 and continues right through to the present day. Many of the original features such as the Norman Keep, medieval Gatehouse and Barbican survive. Between the 1870s and 1890s the house was almost completely rebuilt and the magnificent architecture in Gothic style is considered to be one of the great works of Victorian England. In July, immerse yourself in the atmosphere of a Medieval Weekend at Arundel Castle.

Marvel at the skills of their falconers and their magnificent birds of prey, and the clash of steel will ring from their fearsome sword fighting and the hammers of the craftspeople making armour and jewellery. All around you will be the scents of history, with woodsmoke, cooking and blacksmiths’ forges, all accompanied by the sounds of pipes and drums. independents and surprises. Lovers of the arts aren’t left disappointed either, with plenty to while away the time. The Royal Pavilion is a fabulous palace in the centre of Brighton with a colourful history. Built as a seaside pleasure palace for King George IV, this historic house mixes Regency grandeur with the visual style of India and China. And to be able to take it all in, the best views of Brighton can be found at the top of British Airways i360. As well as enjoying the sights, this iconic landmark hosts regular events. On 14 July, you can enjoy a special extended 45-minute Brighton Gin Tasting Flight Experience hosted by the makers of Brighton Gin on the BA i360 Pod. Across the county, there’s so much choice when it comes to entertaining all

the family. A walk along the South Downs way is a must, where you can see the stunning views of Cuckmere Haven and Seven Sisters. For families with dogs, there is the Weald and Downland open air museum, which is welcoming to all on two legs or more. The volunteer-run Bluebell Railway was the UK’s first preserved standard gauge passenger railway, re-opening part of the Lewes to East Grinstead line of the old London Brighton & South Coast Railway in 1960. Since then, it has developed into one of the largest tourist attractions in Sussex, yet it still remains true to its objectives of the preservation for posterity of a country branch line, its steam locomotives, coaches and goods stock, signalling systems, stations and operating practices. The gardens of Leonardslee are designed around seven interlaced lakes set in a steep valley, offering a variety of walks with stunning views. Famed for outstanding displays of rhododendrons, azaleas, camellias, magnolias, bluebells and the beautiful ornamental rock garden, there are numerous places to explore throughout the 240-acres of Grade I listed gardens, parkland, lawns and forest areas, with an abundance of fascinating fauna as well as flora. Walkers can see a rare colony of wallabies introduced in 1889, as well as several species of deer. Visitors can also enjoy the newly opened Sculpture Park currently showcasing ‘The Walk of Life Exhibition’ featuring more than 80 individual sculptures by renowned artist Anton Smit, or pop into the Dolls’ House Museum. Leonardslee also offer a year-round programme of visual, music and performance arts, including crafts fairs, pop-up restaurants and other entertainment.

In fact, when it comes to gardens, Sussex is a haven for lovers of nature and wildlife. Throughout July, there are a whole host of beautiful outdoor spots open to the public. I

n the heart of West Sussex, at the foot of the South Downs National Park, is a site that has plenty to offer. The Tinwood Estate is known for its English sparkling wines, but it is also home to luxury accommodation, tasting tours, afternoon tea experiences and, this month, even a summer festival. Not bad for a venue celebrating its 15th birthday this year in its current incarnation. Art Tukker is a second-generation farmer who took over the land in Chichester from his father, who made a living growing iceberg lettuce. “When large supermarkets became harder to sustain income from growing vegetable crops, I believed there must be another way,” Art himself says. “After studying agriculture at university, it dawned on me that growing vines could be mine and my family’s future – so I planted the first vines in 2007.” The location, for one, was ideal for this. “The family farm is perfectly situated at the foot of the South Downs, only three miles from the sea,” says Art. “The top layer of our soil is formed of gravel, flint

and a fertile loam. At different points on the farm, we have varying depths of chalk ranging from 50cm to 300cm deep, very similar to the chalk found in parts of Champagne and Burgundy. Our flint, gravel loam soil layered over chalk at the base of the South Downs is truly a magical place to grow our vines.” The result has been award-winning English sparkling wines – which you can read more about over the page – that quickly caught the attention of the general public. Sales rocketed, but so too did an interest in the vineyard. “Lots of people come daily to enjoy the tours and tastings,” Art says, “which are available all year round, come rain or shine. During the one and a half hour tour, your host will guide you into the vines and walk you through the story of the Tinwood Estate, and offer an insight into how we grow our grapes at the vineyard. You can then relax in The Tasting Room for a tutored wine tasting and explanation of the traditional method of the sparkling wine-making process. “Three of the lodges offer the most beautiful views of the sunset and the vines” in The Tasting Room, but luckily there is another string to the bow of Tinwood Estate that means there truly is no rush: The Lodges. “They ooze luxury,” Art agrees about the on-site accommodation, which has been a part of the operation for six years. “Three of the lodges are south-facing, which offers the most beautiful sunset views and you wake up with a perfect view of the vines. Surrounded by the South Downs, there are countless walks and mountain bike trails over the family farm and into the National Park.” And for those not so sportily inclined, there’s a two-person Jacuzzi bath, a barrel sauna, private decked terrace and – of course – a fully stocked wine fridge. You get the feeling that there is always something new just around the corner at Tinwood Estate. This month, in fact, they will be hosting a special summer party on 9 July for us all to make the most of the sun. “There will be live music, DJ set with percussion and sax player, wood fired pizza, and more,” adds Art. And lots and lots of fine English sparkling wine.

Tinwood Estate Brut is a blend of 50% Chardonnay, 30% Pinot-Noir and 20% Pinot-Meunier grape. Pale gold in colour with a lovely mousse and a fine stream of bubbles, with aromas of citrus melon fruits with hints of toast and honey. Fresh fruit flavours continue on the palate with depth and refinement added by the Pinots. Chardonnay dominance brings finesse, along with crisp fruit freshness and toasty notes. The two Pinots add depth and character, a beautifully balanced finish. Savoured beautifully on its own, or the perfect fizz to pop at any special occasion. •

Tinwood Estate Rosé is a blend of 20% Chardonnay, 60% Pinot-Noir and 20% Pinot-Meunier grape. Delicate pale salmon colour with an abundance of bubbles with a beautifully creamy mousse. A We decided that as we were already visiting rather a lot of doorsteps every week it made perfect sense to offer a wider selection of carefully chosen, high quality goods. On average we’re now putting down around 15,000 items each week, which is incredible. Q What are the popular items right now? A At the time of writing we are currently

Milking it Since launching in 2018, Southern Dairies has taken the county by storm. We speak to Greg Parker to find out how they did it Q The milkman seems like something from a bygone age – so why did you think it was a viable business idea? A It’s a real trip down memory lane for sure! When our founder, Robbie Cameron, was in a position to start a new business he wanted to do something he knew a bit about – he was a milkman many years ago – as well as do something he believed in. Southern Dairies also launched just as the ‘David Attenborough effect’ kicked in and everyone was becoming much more aware of their impact on the environment. It was a bit of a perfect storm really! Q What was the early reaction like? A The early reaction was so encouraging.

Our first milk round started with 50 customers in Walberton & Barnham and we carried a few extra products like bread, eggs and cream. We now deliver around 300 different product lines

throughout most of West Sussex and just over the border into Hampshire. Q Why do you think people have responded so well to you? A We think mainly it’s our commitment to service. It’s so rare these days to be able to call a company and immediately speak to a person that can answer your question. Our delivery team also go above and beyond to make sure deliveries arrive no matter the weather and are left in exactly the right place. In other words, nothing is too much trouble really.

Q Where would you like to go from here? A In short we’re a small business with

big dreams. We’ve got some long-term ambitions that could be very exciting, but in the short term our most important goal is to keep building the numbers on our rounds and steadily growing the business. All whilst making sure we keep our focus on providing the highest levels of customer service and providing the highest quality milk and goods we possibly can.

Fried halloumi and chickpea rainbow salad feeds 2 as a main

Definitely make this! It’s also delicious stuffed into a wrap, or serve it with rice or quinoa. Halloumi needs to be served straight away, so make this fresh. Swap the halloumi for paneer, or use extra-firm tofu, patted dry, for a plant-based version of this dish. Prepare the salad and arrange in two bowls. 15 mins

INGREDIENTS • 2 tbsp ghee or coconut oil • 400g tin of chickpeas, drained and rinsed • 4 tsp garam masala • 2 tsp ground cumin • 225g halloumi, cut into small cubes • 2 tsp maple syrup • Sea salt and pepper Salad • A little diced red onion or chopped spring onions • 1 large carrot, scrubbed and roughly grated • 1 handful of diced ripe tomatoes Cashew-coriander-mint chutney makes double • 4 tbsp cashews or other nuts • 4 handfuls of fresh coriander • 2 small handful of fresh mint leaves • 2 fresh green chilli, deseeded if you prefer, chopped, or a good pinch of chilli flakes • 1 tsp ground cumin • Juice of 3 limes • 4 tbsp olive oil

METHOD 1 Heat up a large frying pan and toast the cashews for the chutney on a medium heat for 3–4 minutes, tossing halfway through, until lightly golden, then tip half of them into the small bowl of a food processor and save the rest for garnishing. 2 Put the pan back on the heat, melt 1 ½ tablespoons of the ghee and fry the chickpeas (making sure they are dried well in a tea towel before so they don’t spit in the hot oil) on a medium heat for 4 minutes with half of the spices and a pinch of salt, stirring every now and then. Tip into a bowl, scraping out the delicious bits from the bottom of the pan as you go. 3 While the chickpeas are frying, add all the other chutney ingredients

to the food processor – saving a few herbs for garnishing, if you like – along with about 3 tablespoons of water, then blend together, seasoning to taste with salt and pepper. 4 Put the pan back on the heat with the rest of the ghee and, when melted, fry the halloumi on a medium heat for about 2 minutes on the first side (keep the pieces of halloumi spaced out) and then turn, sprinkle over the rest of the spices and fry for about 1 minute on the other side until lightly golden brown and crispy at the edges. Straight away add the fried chickpeas and the maple syrup, then toss together with the halloumi and fry for 30 seconds so that the chickpeas warm through and the maple syrup bubbles and thickens. Scatter the chickpeas over the bowls of salad with the halloumi on top, drizzle over half of the chutney and top with the remaining nuts.

Big broccoli and spinach salad with carrotginger dressing feeds 2

A favourite lunchbox salad of mine, and happily this makes extra dressing, so drizzle over roast veg and noodles. I love carrot-ginger soup in the winter, and carrot-ginger dressing is one of my go-tos in the warmer months. It’s inspired by a Japanese dressing, the white miso paste giving it a beautifully salty-sweet umami flavour. Swap the cooked chickpeas for lentils or other beans, if you like. 15 minutes (25 minutes if cooking the quinoa)

INGREDIENTS • 1 large handful of bite-sized broccoli florets, stems sliced thinly • 100g baby spinach • 400g tin of chickpeas, drained, rinsed and dried • 1 handful of cherry tomatoes (I like a mix of colours), halved • About 150g cooked quinoa or brown rice (about 80g uncooked – see tip) • 1 handful of seeds (such as pumpkin or sunflower), toasted, to serve dressing makes extra • 2 medium carrots, scrubbed (about 200g) • 2 tbsp chopped fresh ginger • 3 tbsp extra-virgin olive oil

• 1 tbsp toasted sesame oil • 1 small white onion or 3 spring onions • 3 tbsp rice vinegar or apple cider vinegar • 2 tbsp white miso paste • Sea salt

METHOD 1 Steam the broccoli for 4–5 minutes in a small pan until just tender. You can do this by putting a small amount of water with a little pinch of salt in a pan so that it covers the bottom by about half an inch, and cooking the broccoli in it with a lid on the pan. 2 Place all the ingredients for the dressing – except the salt – in a high powered blender or a food processor and blend until smooth, then season with salt to taste. If your blender isn’t high-powered, roughly grate the carrots and ginger first before adding them to the blender with the rest of the ingredients. Add about 4 tablespoons of water to the dressing to make it drizzly; it is a thick dressing, but add more water to thin it out further if you fancy. 3 Toss all the salad ingredients together, drizzle over about half of the dressing and scatter over the seeds. Serve any extra dressing on the side and keep the rest in a clean screw-top jar in the fridge.

Tip To prepare the quinoa from scratch, cook it following the packet instructions and, in the last 4 minutes, add the broccoli florets to sit on top. Remove from the heat and leave the lid on for 3 minutes. A B S O L U T E LY m a g a z i n e s

Mum’s Filipino chicken with mangotomato salsa feeds 4

My mum calls this ‘any way chicken’ because you can make the chicken any way: I like cooking it in the oven (so I can forget about it); my mum likes to make it on the hob (to keep more of the sauce); and my boyfriend Henry likes grilling it on the barbecue (so it’s smoky and crispy). However you do it, I recommend making extra so that you can shred it into soups, wraps, noodles and salads later in the week. This sauce is fantastic in its own right and you can use it with vegetables too. If you have time to marinate the chicken in the sauce overnight, go for it, but I often forget and just cook it straight away. 30 minutes

INGREDIENTS • 4 large chicken thighs, skin on and bone in (about 600g) • Sea salt and black pepper • 2 spring onions, finely sliced at an angle, to serve Filipino-style sauce • 3 garlic cloves, finely chopped • 4 tbsp apple cider vinegar • 2 tbsp tamari or soy sauce • 2 tsp–1 tbsp fish sauce or 2 tsp extra tamari or soy sauce • 2 tbsp (coconut) sugar or maple syrup • 2 star anise • ¼ tsp chilli flakes (or to taste) Mango-tomato salsa • 1 big handful of fresh coriander • 100g cherry tomatoes, quarterd • 100g peeled ripe mango, pineapple or stone fruit, diced • 2cm fresh ginger, finely grated • ½ garlic clove, finely grated • 1 jalapeño or other chilli, deseeded and diced • Juice of 1½ limes • 4 spring onions or 1 small red onion, finely diced • 2 tbsp extra-virgin olive oil • A dash of hot sauce (optional)

METHOD Preheat the oven to fan 220°C/gas mark 9. If using a barbecue, get it going now. 2 Mix all the sauce ingredients together. Place the chicken thighs in an ovenproof dish big enough to arrange the pieces about 2cm apart (but not so big that you lose all the sauce as it cooks off in the oven), then add the sauce, coating each piece of chicken well in the mixture and leave for a few minutes, if you like. 3 Place the chicken thighs skinside up in the dish, sprinkle a little salt and pepper over each one and roast for 25 minutes or until well cooked and the juices run clear when pierced with a knife. 4 Meanwhile, make the salsa. Roughly chop the leaves of the coriander and finely chop the 1

stalks, then add to a serving bowl with all the other ingredients, mix together well and leave to sit for 20 minutes (while the chicken is cooking). Serve the chicken scattered with the spring onions and with the salsa on the side.

D R I N K I T I N Wiston Estate’s journey to becoming an internationally awarded wine producer

I “Tasting the wines which have come from the vines you are in the midst of is a very special experience”

t would be fair to say that a disused turkey shed may not be the most obvious site for a winery, but this is where the Wiston Estate wines began their existence. For winemaker Dermot Sugrue, the old farm near Washington in West Sussex was ideal; close to the vineyards and with enough room to house a traditional coquard press from Champagne. This beautiful piece of winemaking equipment, which presses the grapes very slowly and carefully, preserving their delicate aromas and flavours, has become an icon of the Wiston Winery – it is the only one of its kind in the UK and one of very few which exist outside Champagne. Sure enough, not long after Wiston’s first wines were released, they began receiving international plaudits that have continued through to today – 2021 saw the winery named ‘Winery of the Year’ by WineGB for the third time. The transformation is open for all to see – the recent refurbishment has dramatically enhanced the space and the coquard press remains the centrepiece of the winery. It is used to extract grape juice for the very best wines made at Wiston – such as the Estate Cuvée –

which comes from the original vineyard planted in 2006. The juices are then allowed to ferment in aged Burgundy oak barrels, which give the wines a beautiful texture and smooth mouthfeel. There are lots of options for wine tours and tastings at Wiston. The classic Wiston Tour & Tasting runs Tuesday–Sunday at 11am and 2.30pm, which is a great introduction to the world of Wiston. The Vineyard Safari Tour is a more luxurious option – including tasting the full Wiston portfolio of wines and a trip over the hills to the original secluded vineyard, hidden away in the South Downs. And for those looking to combine a tour with dinner on selected evenings in the summer there is the Sundowner Tour & Dinner. As Dermot Sugrue says: “Seeing the vineyard in the late summer afternoon, and tasting the wines which have come from the vines you are in the midst of, is a very special experience.” After the tour and tasting guests enjoy dinner at Chalk Restaurant, which serves a delicious set menu on Friday and Saturday evenings. How Fizz on Foot is opening up the world of wine and more, in a whole host of ways across East Sussex

izz on Foot is an Eastbourne based business, which like many others was in hibernation last year. However, with the restrictions at an end, founders Ian and Penny Shearer are now busy planning tours for social groups and many companies. The business is a mix of all things centred around wine and walking. There are guided walks with wine tastings; courses to learn all about wine; wine tasting evenings; and wine and food pairing dinners. The guided walk starts somewhere in the Ashdown Forest or the South Downs National Park, usually East Dean or Alfriston, with an expert guide who knows about the geology of the chalk downland as well as local history, so your walk will always be made interesting

and diverting. The walks are matched to the fitness of the group, so don’t worry if you don’t want to hike the ups and downs of the Seven Sisters – you can stroll along the River Cuckmere with an opportunity to see flora and fauna instead. Once you have had your fill of lunch you will be taken to one of over 20 vineyards in East Sussex. An example would be a visit to Ridgeview or Court Garden Vineyard in Ditchling that specialise in producing some of the best English sparkling wine. You will receive a tour of the vineyard to see how the vines grow and hear just how critical the weather is to grape development. You will see how the grapes are crushed and the huge tanks in which the wine is made, as well as the details of how the bubbles get into the wine to make it sparkling. Once you have appreciated the hard work that goes into the production of a bottle of

sparkling wine – it's too good to call it ‘fizz’ – you will have the opportunity to try it. The wine maker will guide you through a tasting of four or five different wines and tell you all about what makes each one different. If that all sounds too exhausting, or you aren’t an enthusiast for the great outdoors, why not take the much gentler option and join a wine tasting or wine and food pairing dinner. These events are monthly and hosted in Eastbourne. The wine tasting evenings are for those of us who walk along the wine aisle in our local supermarket and feel lost – or even intimidated by the huge choice. Fizz on Foot choose the wines and you come along to taste. Their wine expert will tell you a good story about the wine and why it looks and tastes as it does – if you like it that’s great, if you don’t, well try a different one! The evening is relaxed and friendly and a good opportunity to meet people who are genuinely interested in wine. Q Tell us a bit about the history of Wakefields... A My great grandfather started the business in 1911 and passed it down to my grandfather and father. My brother Dominic and I are fourth generation and have been running it for 30 years. I left college to work at Wakefields and my brother joined after training in accountancy. I have a good eye for buying and I am a qualified gemologist. I feel privileged to be able to hold this business in trust for the next generation. Q Wakefields has survived two wars and a pandemic. What is the secret to your longevity? A During the Great War our workshop became a munitions factory and we employed women to polish shell cartridges. We were fully involved in the war effort. We have seen so much change in the High Street, but we’ve been the mainstay. It’s hard to purchase something sentimental like an engagement ring online – you really need to feel, touch, and try it on. People are bringing valuable items to me so they need to trust that we will make it good, make it wearable or turn it into something different that they can wear. We underestimated the demand for our services after the pandemic; it was unprecedented. We’ve just had our best year ever despite being closed for six months. Q How do you continue to evolve as a business? A Last year we completed a refit of the shop in six months, and it was the best thing we ever did. We have increased the size of the shop and our interior has been inspired by Art Deco, which was popular during the

time Wakefields first moved into 11 West Street in the 1930s. We are more luxury and bespoke these days – Rolex has brought a high-end nature to our business. We sell more statement pieces and a larger jewellery collection than ever before. We are also building a watch workshop to add to our existing jewellery workshop. It’s exciting to think that in five years’ time that we’ll be a centre of excellence for watches and jewellery.

Q Do you have any stories that have moved you during your time at Wakefields? A My son’s good friend lost his dad, so the whole family came to us to make bespoke rings and insert ashes into the ring. We engraved “I love you daddy” inside. The family wear these all the time and it gives them comfort. It’s emotional what we are dealing with, and I feel privileged to share in these life experiences. incredible value for money and the detail is impressive – an iconic brand. Q What is popular now and what are customers looking for? A My clients want something that’s unusual. I try to sell unique pieces and our bespoke side of our business is unreal! People want something that they can’t get elsewhere. There’s a demand for teal-coloured sapphires, yellow diamonds, and cognac – and even pink diamonds. People love something with a story. Remodelling is also huge right now. We redesign inherited jewellery to create something in keeping with our customers’ style. Jewellery lasts a lifetime and it’s considered an investment, so people don’t mind spending money on it. Q Tell us about the current trends we’re seeing this year? A Green is huge! Emeralds, teal sapphires and green sapphires. I’ve been asked a lot about coloured diamonds, which follows celebrity culture. The Toi et Moi rings, which features a coiled band with two gemstones nestled side by side, is also popular, influenced

by Megan Fox’s engagement ring. Cocktail rings surrounded by an edge and diamonds by the yard – stones dotted along a chain – are big right now. The layered necklace is still on trend and rings worn on every finger now, or stacked, is becoming popular. The ear wardrobe is huge, and people want high-end and bespoke pieces. Yellow gold is massive and mixing metals is taking off.

Q What does the future hold for Wakefields? A Technology is helping us to become more

efficient, we have a 3D printer which is a massive advancement in our workshop. Though you can’t replace the customer relationship – coming into the store to touch, feel and see jewellery. Having a conversation can never be replaced.

I

started Pilates in 2003 having been told to by a back surgeon or risk having a spinal fusion. The latter choice was a good enough reason to listen to the surgeon! The immediate benefit was a decrease in pain. That was a major lightbulb moment of the power of movement. When we are in pain, we can block movement because we are scared it will result in increasing our pain. Our body goes into protection mode, but the less we move, the more pain we are in. By building my core strength and realigning my posture, I started to feel more resilient, elongated and a by-product was that I was less stressed as a result from doing Pilates (it is a body minded movement practice). One could say active meditation. The long-term benefit is that I could return to playing sports and rarely suffer from back pain. I knew quite quickly that I wanted to teach Pilates. I wanted to be a physio when I was younger and for various reasons went in a different direction at university.

However, when I started working in a desk-based job, my back really did not like the length of time I was sitting at a desk. In 2006, I enrolled on a Pilates course and in 2007 I qualified. I have never regretted that decision and continue to work on my movement and anatomical education. I am fascinated how resilient the human body is and how movement, good nutrition and lessening stress is paramount to our health. Since becoming a teacher I’ve always had male clients. I think this is because I am a bit of a ‘Tom Boy’ – I used to play boys’ cricket and later for Sussex Women’s, so I am sporty and accustomed to a male environment. In addition to this, my back injury led me to specialise in more rehab Pilates and I think men can relate to me more than perhaps a teacher that comes from a dance/ballet background, which the majority of teachers do come from. Towards the end of lockdown I set up an online video platform and had a section for men because of having some male clients – and Men Do Pilates just grew organically from there. I niched my online offering to solely men and in October 2021 MDP launched on International Men’s Day. I felt there was a missing offering for men and hope that Men Do Pilates fills that gap. I also set the business up because I was frustrated that Pilates isn’t that accessible to men. Classes are often majority female; held at times that isn’t suitable to men; offer exercises that aren’t targeted to their body and in a language that isn’t easily relatable. I often see men privately for the reasons above, which is also expensive and, let’s face it, the majority of the population can’t afford a weekly private Pilates lesson. Men often don’t realise what Pilates is and how it can be of benefit to them. I see lots of men at the point of injury or surgery having been told to do Pilates by a medical professional. That’s frustrating for me as women are already clued up on these benefits and will do Pilates as a preventative measure. Women are far better at pre-empting, whereas men are more reactive. Hopefully with more awareness building, more men will follow suit and realise how Pilates can support them as they age and help them to continue doing the activities they love to do. I live just outside of Brighton and love it, especially the natural beauty of the South Downs and access to the great outdoors. I like running and dog walking on the South Downs and my husband loves mountain biking there as well. I also love going high for a panoramic view and that feeling that you’re pretty insignificant when you’re standing on top of a hill. Being in nature and outdoors is when I am most relaxed and we are very lucky to live in this part of Sussex within a short drive or train ride from the vibrancy of Brighton. I love going to Birling Gap at the Seven Sisters for a dip and picnic. Brighton is busy, but a lot of fun in the summer. The beach front has cool bars and a brilliant relaxed holiday vibe. Q Why did you decide to start CherryBomb Aesthetics? A I knew when I was at University training to be a nurse that I wanted to go down the route of aesthetic medicine and one day open a clinic of my own. As soon as I qualified as a registered nurse, I booked myself on my first course and chose to develop the foundations of my nursing skills within the private sector and pursued a career in medical aesthetics. The studio featured treatment stations for indoor plants, which included a Juice Bar that provided plants with nutrients to aid photosynthesis, a Steam Room that was represented by a large terrarium created by Worcester Terrariums, and a Soil Bar, made of bespoke potting mixes, enabling visitors to get their hands dirty and learn the best way to pot their houseplants.

A Room to Dance was designed by •partners Antonia and Ian Adams, owners

of The Planted House. They brought their beautifully delicate design to life in Malvern Garden Buildings’ Studio Apex. The team won a Gold medal for their design that featured a diverse selection of tropical and sub-tropical indoor plants, alongside a plethora of beautiful pots. Plants cascaded from the ceiling and climbed the walls with rattan woven throughout the space to create a dramatic aerial garden.

Planet Studio was a nostalgic feast for the eyes for show visitors. It was the second year that Malvern Garden Buildings teamed up with stylist and curator James Whiting of @Plantsbythere and the second Gold medal for Whiting. Planet Studio was also awarded the accolade of Best Houseplant Studio. The design was inspired by the iconic Manhattan club Studio 54, alongside Whiting’s love of the Palm House at Kew Gardens and childhood memories of his 90s-bedroom. Whiting aimed to show visitors how easy it is to create a piece of city nightlife in any garden – and Planet Studio certainly did just that. Styled with hues of orange and red, complemented with an array of retro and more instagrammable houseplants, out-of-the ordinary mushrooms, ceramics, textiles and lighting; it truly did showcase a nostalgically funky disco feel.

Following on from their medal-winning •success at last year’s RHS Chelsea Flower

Show, The Edible Bus Stop returned with their design Botanical Rhapsody, showcased in Malvern’s Studio Pent building. This year, the team were awarded Silver-Gilt for their immersive studio, which used unique technology, known as bio-sonification, to translate the bio-rhythms of living organisms into sounds. Taking initial design inspiration from the Japanese practise of forest bathing, Shinrin Yoku, visitors were invited to feel a sense of calm and stress reduction whilst surrounded by the luscious planting inside and out. Who knew plants could create such soothing sounds! W

hen I sold my first flat, I was convinced it would get snapped up: I tidied up, got some estate agents round and picked the one with the highest valuation. Then I sat back and waited for the offers to roll in. Only they didn’t. After an initial flurry, viewings dwindled and eventually stopped. I felt my only option was to lower the asking price until there was an offer. Looking back, there were some simple, inexpensive ways I could have made it appeal to more buyers – if only I’d known how. That

demoralising experience, and watching friends go through much the same, ultimately led me to launch Jane Lee Interiors in 2019. Home staging is a marketing tool that aims to boost viewings and offers, by creating a look that appeals to buyers. Tired décor, unfinished DIY and cluttered rooms ring alarm bells that a place lacks storage and hasn’t been cared for. Several red flags can put people off viewing altogether. Well-presented rooms enable buyers to connect emotionally and imagine themselves moving in. When it came to selling my second property I decluttered, depersonalised

and styled it with the target buyers – young professional families – in mind. Despite the stagnant market, it went to sealed bids after three asking price offers came in on the first day. Many of my clients feel overwhelmed and are unsure what to do. Often I talk them out of major, but unnecessary, improvements, which can save thousands (and easily covers the cost of my consultation!). Unlike interior design, staging creates a lifestyle that appeals to the next owner – not the current one. It can be difficult to see your own home through buyers’ eyes. The icing on the cake is a styled photoshoot. In today’s Instagram world, professional styling and images can blow the competition out of the water – something the owners of one particular beautiful seafront property in East Sussex (pictured here) immediately recognised. After their consultation, staging day and photoshoot, the couple accepted an offer a month later. Earlier in June, that seafront project won myself and my photographer, Elissa Jane Diver, Best Staging & Photography Team Of The Year in the House Wow Property Services Awards 2022. Elissa says I make her job a breeze, while her stunning images lift my staging and styling to another level. We make a great team.

I also won the Rising Star Home Stager of the Year, Occupied Staging Category. Working with furnished properties, and making the most of what’s already there, is my passion. It’s cost-effective and planetfriendly. My clients’ average spend is around 0.1% of their asking price, which in my opinion makes the investment a no-brainer. Home staging started in the 1970s, when US estate agent Barb Schwarz started helping clients prepare their properties for sale. It’s since spread through Australia, Scandinavia and Europe. While it’s gaining popularity here, most sellers still don’t stage – which gives those who do a big advantage. s so much of Sussex has a view of the sea, bringing the seaside into your home is the perfect way to create a carefree holiday mood that makes your interiors restful and relaxing. When choosing a colour scheme look to coastlines for inspiration. The classic beach hut palette of crisp white with accents of navy blue is just one approach. In fact, our shores offer such a diverse range of beautiful shades and tones. The underwater wonderlands of coral reefs offer a strong room decor. They feature bold bursts of colour that add vibrancy and personality to rooms. Strong pinks, rich oranges, and vivid aqua blues are used alongside each other. ince December, I have been very fortunate to have made frequent visits to Somerset. It is proving a unique experience in my life, seeing how the seasons are evolving every month in one particular, very rural spot. From the dark December days to the joy of turning the corner and seeing the first budding daffodils, followed by May’s bluebells and watching the birth of lambs. All this is often missed in busy urban lives and it has highlighted to me, once again, just how important it is for all of us to learn from and in nature. One very obvious way for children to embrace outdoor learning is through Forest Schools. Not only are there opportunities for young children to enjoy nature-based, child-led activities on a regular basis, but there are also opportunities for taking part in school holiday Forest Schools. Besides Forest Schools, there are many courses and activity holidays available for children of all ages to learn in and about the outdoors – such as sailing, kayaking, climbing, birdwatching... something for everyone. Indeed, many schools are, once again, taking classes on residential trips focussing on outdoor learning and activities. In my own early and adventurous teaching days, we took two classes of eight-yearolds to an island in the middle of the River

“It can lead to a lifetime of greater confidence and adventure” Thames for a few days, crossing over in a small rowing boat type ferry. On another occasion, we even discovered the fjords in Norway with a group of 11-year-olds. These educational visits afforded amazing creative education for those children. Of course, over the years, regulations and safety requirements have become tighter, but the same rewarding experiences still remain. As children grow older, many take part in the Duke of Edinburgh Award Scheme, the highlight of which is the expedition. If they stay the course through the Bronze and Silver Awards and learn, develop and familiarise themselves with the skills, the Gold Award Expedition can provide challenging and exciting experiences that can lead to a lifetime of greater confidence and further adventures. However, perhaps the most valuable times of outdoor learning are those spent as a family. I am a huge advocate of allowing children to dig in mud, climb trees, investigate worms and insects, and simply explore the outdoors. Not only do they learn about nature and wildlife but, without knowing, they are developing their co-ordination, spatial awareness, sensitivity to things and people around them, learning to work as a team – and embracing well-being. One of my happiest family holiday memories is set in the rural Languedoc. Our three young children and those of our friends spent two weeks messing about in a shallow stream, with a local French boy who spoke no English. They made dams, went “upstream”, watched fish and were totally engaged in all that they discovered and the adventures that they had. For them, it opened up a new world. Modern life has so much to offer, but let us all – children and adults alike – grab as many opportunities to learn in and from nature. I still have so much to learn. STEM MAKEOVER

Hurst College’s STEM Leader Amanda Jayne on why we need a major makeover in the promotion of science, technology, engineering and maths

I

t’s 20 years since UK engineer, Sir Gareth Roberts, produced his report for the Chancellor on UK productivity and economic growth. He identified a significant shortage in the number of young people pursuing science, technology, engineering, maths – and ‘STEM’ subsequently became part of the educational lexicon. Initiatives have been around ever since, so when I introduce myself as the ‘STEM Leader’ at Hurst College, the

acronym no longer requires laboriously spelling out – or so you would think. Economic data shows that all developed countries still have a massive shortfall of trained people to meet predicted workforce demands. The UK is facing a well-documented engineering crisis. What is even more worrisome is that we still aren’t rearing a population fully prepared for the world they will live in. No matter what their career choice, they will all need skills to be able to

cope with ever-increasing mechanisation, digitisation and artificial intelligence. A STEM-focused education system addresses these issues, helping students to develop confidence in experimentation and risk-taking (also building creativity). Students learn to examine problems and create logical plans to solve them, and in so doing develop critical-thinking skills. This, along with teamworking, data recording, report writing and presentation – all skills to prepare them for the workforce. Students with a STEM-focused education are more likely to be motivated to access careers which offer highly competitive salaries and rapid career progression. So why, after 20 years of government intervention, do we still need to promote STEM? Studies cite several key reasons, with one of the main ones being the poor perception of technical jobs that young people and those who influence them still hold. Careers guidance is also blamed for not putting sufficient emphasis on these subject areas. There’s also a lack of employer engagement with STEM initiatives. A bigger problem is that STEM promotion is everywhere and nowhere, with over 600 organisations involved in supporting engineering education. involved with the Engineering Development Trust, the Big Bang Fair, CREST, Industrial Cadets and STEMnet. After 15 years, I am frustrated that I cannot quite explain how they link together, what they do differently or why there is a need for so many bodies. This appears to have created confusion and led to what could be referred to as ‘STEM fatigue’. So, what’s the solution? From my own experience I can state with confidence that teachers are significant role models. We are all ‘influencers’ within the education system; our attitudes and passion for a subject can motivate and drive students to make career choices. What we say to our ‘followers’ does get heard, and we can help steer the next generation towards making better informed subject and career choices. Pancurricular teacher training is also required; we can all play a role in promoting awe and wonder in the pivotal roles that science and engineering play in our daily lives. STEM-based industries also need to be encouraged to be more active in

Without doubt, the STEM machine itself needs an overhaul, streamlining its provision and with clearer accessibility to the excellent initiatives it does offer. And finally, that acronym needs to be rescued – moved on from ‘the elephant in the room’ to something instantly acknowledged for its status as a respected enterprise designed to safeguard the economic security of our country and better equip us all for modern life.

A

recent article in The Guardian estimated that 3.4 million children across the UK are at risk of long-term health conditions and infectious diseases due to poorly ventilated schools. Children spend a large portion of their lives in school – equating to around 7,800 hours across their educational life. We all generate CO2 when breathing out, and when you combine multiple bodies in an enclosed space with increased temperatures and humidity, this can significantly reduce air quality. It is known that a CO2 level above 1,000 ppm has a negative impact. Studies have shown it can cause pupil performance to decrease by up to 15 per cent, cognitive performance to worsen by 60 per cent and could even lead to a significant (30 per cent) increase in headaches and respiratory issues. According to a February 2019 report, also in The Guardian, CO2 levels in schools can regularly exceed 2,500 ppm, causing children to lose focus. There are some 32,000 schools across the UK and indoor air quality is a challenge for many of them – most specifically those in older buildings without good mechanical ventilation. However, even newer school buildings put pupils at risk without proper measures to ensure indoor air quality and

ventilation. Many believe opening a window is a way of generating a fresh air supply, but it isn’t a practical long-term solution. There’s also the very real issue of external pollution, such as vehicle emissions – particularly for schools located in some urban areas. The solution lies in further investment and tighter guidelines for schools to ensure the protection of pupils’ health and wellbeing. Investing in CO2 sensors and air quality technology allows schools to continuously monitor indoor air quality and adapt the ventilation accordingly. Although the government has begun a £25m initiative to supply over 300,000 CO2 monitors to state-funded facilities, there won’t be enough to cover every classroom. Moving monitors around is not a viable solution, as this can lead to inaccurate readings. What's more, indoor air quality must be monitored over a sustained period.

At Plasma Clean, we've partnered with the air monitoring company Airthings, to deliver air quality technology to the education sector. This includes nondispersive infrared sensors (NDIR) to monitor indoor air quality (these are recommended by the Chartered Institution of Building Services Engineers). As well as monitoring CO2 levels, the sensors assess temperature, humidity, radon, VOCs, pressure, light and virus risk – all in real time. When a problem is discovered, the right solution can be found. Ultraviolet germicidal irradiation (UVGI) improves indoor air quality and reduces the risk of airborne infections. It's a proven technology, used by schools for more than 80 years. From the hallway to the classroom, it is effective for old and new buildings. Upper room UVC can provide up to 20 air changes per hour in comparison to mechanical ventilation, which generates between two and four changes per hour. What matters here is the impact: improved air quality has been shown to improve performance and cognitive function – and support young people's health and wellbeing. In addition, it's a vital means to limit the potential for airborne infections. It's time for the nation's schools to tackle this issue head on because all parents have the right to know that their child’s health and education are not being impacted by poor air quality.

Q When did you launch The

Private Home Care Agency? A I launched The Private Home Care Agency Ltd in October 2020, wanting to give people exceptional one to one live-in care in the comfort of their own homes. I wanted to offer full live-in care support as an alternative to residential care – care at home rather than in a care-home. Q What kind of services do you offer? A The main service we offer is live-in care.

This is where the carer lives in the client's house with the client, offering full support and assistance. Live-in carers can assist with administering medication, bathing, toileting, changing if necessary, managing the shopping, cooking, cleaning and laundry. Some clients need assistance with running their home, making GP appointments, assistance with mobility. Others require post-operative care, careful monitoring of the client's

Q How tough has it been for you to offer what you do during the pandemic? A One of the worst things for everyone has been the taking of lives before their time. This was especially true for the elderly and fragile. Many also felt isolated by the restrictions care homes imposed upon visiting hours. We were quiet during the midst of the pandemic. Clients were too afraid to reach out for help before the vaccinations were introduced. We work hard to build up trust with our clients. The wearing of masks by all of us, regular testing and monitoring ourselves for symptoms is the most sensible thing we can do and our clients appreciate this and they expect it. Q How does your live-in care service work? A I speak with the client or the client's

family to see if the client needs general assistance, post-operative care or end of life care. I source and vet live-in carers by studying their CVs, interviewing them and taking up references. I then personally introduce the client to the chosen carer. Q Do your carers and clients often become friends? A Clients and carers share a wonderful professional bond. Clients, even if they don't want to admit they need assistance in the beginning, quickly appreciate the support and practical help. They also find the companionship a real tonic. There is something golden about the client/carer relationship. Q Whereabouts in Sussex do you offer your service? A We cover Sussex, Hampshire and parts of Surrey. We'll try to be as accommodating and helpful as possible.

eld this year on 16-18 September, Goodwood Revival is an immersive vintage experience set in period theme. Each year as they recreate the glamour and excitement that suffused the glory days of motor racing at Goodwood from 1948 to 1966, this is an opportunity to revisit a time when people would ‘make do and mend’ cherished belongings for a lifetime of use. In 2022, the Revive and Thrive Village will embrace that strikingly relevant mantra with heritage skill-focused workshops and demonstrations, sharing ways to reduce, reuse, repair, restore and recycle for authentic circular consumption. A series of crafting cabins will give visitors the chance to see artisans and experts using the wisdom of the past to revive timeworn treasures, while a schedule of sewing workshops will empower visitors to make and mend their own clothes and accessories. On Friday and Saturday, style activist Dandy Wellington will host the Vintage Style Not Vintage Values series of talks, offering rare insights into his vibrant vintage community. On Sunday, sustainable living will be the theme of the day, taking in zero-waste fashion, interiors and craft.
