ovember seems to bring lots of birthdays. In the run up to the official party season, there’s a wave of pre-season parties. So, as well as our very own fi rst birthday party (thank you to everyone who came, and to Beach Blanket Babylon for hosting, as well as to Femi Fem for providing sounds, and to Miller’s Gin, Beauty Works West and all our other sponsors) there are full diaries all round. Supperclub is celebrating its third anniversary with a characteristically colourful bash (22 November; don’t miss it) and Westbourne Studios (handily home to Absolutely magazines) is reviving its old identity as a late night venue with an all-new club that’s dedicated to becoming west London’s favourite new nightspot (with a licence until 4am, it’s likely to be a winner). So that, of course, was another party, doubtless the fi rst of many, while just a short hop across the railway line from Westbourne Studios, variety show extraordinaire Medium Rare is about to return to the scene with a new show at the Portuguese club. ale Youth: Forgotten Dreams is an evocative photographic memorial of a once-thriving boxing club right at the heart of the Notting Dale community. Shot by renowned creative director and photographer Steven Wallington, the pictures tell the story of the original Dale Youth Boxing club in a Victorian lodge on Portland Road, W11, ten years after the site had been abandoned and just days before it was demolished to make way for a modern development. The resulting images are a unique record of this inspiring club and saturated not just with extraordinary colour and light qualities captured through the lens of his Leica M2 camera, but with the hopes of the young men who trained and fought there, and for whom the club nurtured ambition and purpose. Having come across it by accident, Wallington photographed the site in the abandoned state in which he found it – with old gloves, boots and punch bags left behind and original photos of local fighters still tacked up on the walls.

Dale Youth Boxing Club has a rich history of achievement, including two controversial and highly regarded boxers James De Gale (who won the Olympic Gold in Beijing in 2008 and is the current European Super Middleweight Champion) and George Groves, who beat James De Gale in a close fought fight to become the current Commonwealth & British Super Middleweight Champion. Proceeds from the sale of Steve’s work will contribute to travel expenses for the young boxers who travel great distances to Dale. Steve Wallington is a London-based photographer, film-maker and cultural entrepreneur. Following an award-winning decade working in advertising, he went on to found creative agency Point Blank, along with Vanishing Point Films and the fashion label Worn By. SPICE BOY Stevie Parle, the hot young chef behind the Dock Kitchen, is about to appear on our screens in new series Spice Trip. Pendle Harte meets him

S

tevie Parle is ridiculously young to be a restaurateur. Especially one fronting such a successful, original eaterie, and especially when you consider that he is also just bringing out his third book, writing a regular column for the Telegraph, expecting his second child and preparing to hit our screens in his first TV show. All this at the tender age of 27. Is he a workaholic? An insanely driven, precocious perfectionist? I don’t think so. Parle is quiet and modest-seeming, and comes across as too laid back to have achieved so much, too laid back even to be any sort of chef. Which could be deceptive, of course. With the slow, lumbering walk of a teenager and indie kid looks, Parle is softly-spoken and smiling. We meet in the Dock Kitchen, his restaurant that was supposed to last a week but has survived for four years in Tom Dixon’s stylish Portobello Dock showroom. But we’re not here to discuss the Dock, we’re here to talk about Spice Trip, the book and TV series (starting this month) that follows him and fellow spice enthusiast Emma Grazette as they travel the

world learning about growing, handling and cooking with spices. He’s pleased with it, of course, albeit quietly, in his near-whisper of a voice. ‘The trip was really fun. And one of the great things about it is that it’s really real, it’s not dissimilar to something I would do anyway – me and Emma do travel, eat and cook as well as being very very interested in spices and that’s what it’s all about.’ He and his chefs travel a lot in search of the obscure and the exotic, and their approach is global, unfettered by tradition (on today’s menu there’s ‘grouse from the Yorkshire moors cooked in a Persian pomegranate & walnut fesenjan with chelow rice & fresh rose petals’, for instance.) So was it hard to select what to put in the book? ‘There’s loads that didn’t make it into the book. We could have done six books,’ he smiles. One of the highlights for Parle was seeing fresh cloves growing. ‘I couldn’t have imagined that they’d be so beautiful. They look like brightly coloured sweets, bright pink and bright green flowers on a huge tree. And then they dry into little black cloves.’ The book and the show are themed in chapters according to spice, instead of country, or course. ‘I chose the

six spices that were really the best known, but wanted to surprise people by showing them where they come from and how they can be used in different ways.’ Their spice odyssey spanned Kerala, Cambodia and Mexico (‘some of my favourite places in the world’) as well as places Parle had never been before, like Zanzibar (‘really, really interesting’) and parts of Turkey, where the food was ‘extraordinary’. This book, says Parle, is designed to educate people about spices in a non-threatening way, it’s what he calls a ‘supermarket cookbook’, unlike his last one, The Dock Kitchen Cookbook, which called for a range of obscure ingredients ranging from rabbit legs to rose petals, via freekeh and pomegranate molasses. ‘You can get everything in the book within a mile of the restaurant,’ he says. There’s none of that with Spice Trip, which concentrates entirely on chilli, cinnamon, cloves, cumin, nutmeg and pepper, none of them obscure. Parle wants to demystify cooking with spice. ‘I think people can be scared, they think it’s all about complicated spice mixes that take

Aged 16, he ate a dish in Cambodia that changed everything

hours to make, or they worry that things will end up too spicy, but I want to show that it’s easy and fun. These are the original flavourings, and they’re there to make food taste better.’ Parle has been cooking professionally since he was 16, and actually, he claims, started when he was two. He cites family holidays as inspiration, along with a pivotal moment aged 16, when he ate a dish in Cambodia that changed everything. It was crab with fresh green peppercorns ‘and I thought, I just can’t eat food like this

at home – not that southeast Asian food wasn’t represented, it was that honest, simple, homey food wasn’t represented’. So he went to cooking school in Ireland and from there to some of the world’s famous kitchens – the River Café, Moro, Petersham Nurseries in London, and The Spotted Pig in New York. The Dock Kitchen was his first independent project and at first it wasn’t really a restaurant, more of a dinner party, where Parle would cook a single multicourse meal, and serve it up at 8.30pm to a roomful of diners who had pre-booked in the wake of a word-of-mouth buzz. This informal, creative setup soon inspired a near-frenzy in the press, leading it to outgrow its homespun feel and evolve into the established, busy restaurant it is now. There’s still a feast every evening, which ideally the entire table shares, but the Dock now incorporates the regular restaurant model of having an actual menu too. Not having a menu at first wasn’t because Parle ever particularly objected to people choosing – ‘I’m not one of those chefs who say “you must eat this” – I just want people to have a good time’ – but because of the logistics. ‘It was only me cooking, and when I was cooking for 20 and two people didn’t like it I could quite easily find something

else, but when you’re doing 100 people and the two who don’t like it turn into 10 who aren’t so sure… and then you get a review in the broadsheets and your small following becomes more mainstream... I just didn’t want to give people food they didn’t like.’ Until recently, Parle lived on a houseboat, another passion of his, but he and his partner have swapped canalside living for a regular house in Hackney. ‘We lived there with a baby for nine months, but it was one room.’ That baby is now two, and already a foodie, liking veal and grouse, says Parle, alongside a taste for dahl and chapattis. Despite his heavy workload, he claims he does sleep (‘a little’) and runs a relaxed kitchen. ‘I am demanding and I expect a lot, but I’m not highly strung and I’m not shouty. In a kitchen you create an environment that is stressful but I do understand that actually it’s just dinner and if we mess it up we’ll apologise.’ How does he feel about being on TV? Parle looks thoughtful. ‘I feel okay about it. I don’t think I’m going to have people coming up to me in the street.’ And where to go from there? ‘I’ve got lots of different ideas. I’ll either do another TV project or another restaurant next year. I’ll try not to do both. We’ll have a tiny baby to look after too.’ Parle is so young, so quietly confident, you wonder whether he might be a closet megalomaniac. He seems too nice, but who knows? Medium Rare is back with a new venue and a new programme. Pendle Harte meets Mat Whitley, the man behind London’s most outrageous variety show

W

hat do you get if you cross an octogenarian hip hop artist with an 18-stone ballerina? Add a German porn star, lots of hula hoops, some roller-skates, a ventriloquist’s monkey, a dapper host and more than a sprinkling of stardust and you have Medium Rare. This is a variety show, but you won’t find tatty tinsel or tired jokes. It’s a clever, charismatic cabaret, rooted in tradition but anarchic in approach. And now it is returning to W10 with a series of riotous nights combining food, cabaret and disco with bingo and party games. With surprises, of course. Behind all this is ex-film industry man Mat Whitley and his partner Poodle, who live the bohemian dream on a canal boat (mirrored furniture, wonky pictures, Indian bedspreads) in the shadow of Trellick Tower. With his theatrical voice and sartorial swagger (more of this later),

he is a natural actor, oozing charisma and charm. For the past ten years he has been masterminding Medium Rare, and reinventing a genre. ‘Variety was a four letter word when I started. It was so naff, so end-of-the-pier,’ he tells me, on the boat. ‘In fact, when Robert Elms interviewed me back then he said I couldn’t call it that and I should call it vaudeville instead. But it’s not vaudeville. It’s variety, which doesn’t pigeonhole me, so I can have anything I like in it.’ And what does Mat like? An eclectic mix of acts, as long as they’re funny and in possession of what he calls a ‘sassy awareness’ that sets them apart. ‘You can have a technically brilliant hulahooper,’ he explains, ‘but without the glint in the eye it’s nothing.’ And what doesn’t he like? No hesitation. ‘Burlesque. I find it really boring and I just don’t get it. I am bored of girls taking their clothes off for no reason.’ One girl he could never get bored with, however, is the marvellous Ursula Martinez, she of the amazing hanky striptease fame. ‘She has been part of my life since we started,’ he says. ‘Her hanky act is the consummate act, it’s simple, beautifully performed.’ Another favourite is Bridge Markland, whom Whitley discovered in Berlin. ‘Bridge is an extraordinary androgynous creation. Even when she’s naked you don’t know whether she’s a man or a woman.’ 49

Medium Rare was doing three nights a week with Maison du Chien at Westbourne Park Road’s Bumpkin last year and now it returns with Casa de Cao (literally, the dog house) at unlikelysounding venue the Sporting Club of Lisbon. It’s the place at the top of Elkstone Road, opposite Meanwhile Gardens and the canal, and very handy for Mat and Poodle’s bateau d’amor. Medium Rare has performed at the Tabernacle, which has one big advantage – ‘I can fly people there,’ – but there are noise restrictions and no late license. What the Portuguese club lacks in glamour it makes up for in space (it can seat 100 for dinner) and licensing (until 2am) – and lack of complaining neighbours. The new show will include Ida Barr, the OAP rapper and queen of bingo, Madame Galina the 18 stone ballerina, Gunther the German porn star and others. Plus there will be dinner and a disco, along with bingo and musical chairs.

But Mat and Poodle aren’t simply about cabaret. They have a variety of other business interests, all of them ‘a bit silly’. There’s a sideline in vinaigrette, for instance, of which they have so far sold four bottles with the label ‘je ne vinaigrette rien’ and there’s the far bigger venture, Mat’s Menswear. Mat works with a tailor in Tangier who makes up suits to his exacting specifications in fabrics ranging from tweed to French military blue cotton or yellow velvet – it’s a classic three piece suit with a stylish slim cut and dandyish constrast lining (Mat’s is neon pink). Customers so far have included Mark Hix, Alice Temperley’s husband Lars, Dan Lywood and Ben Bridgewater. Fittings take place on the boat and the hand-made final product costs £350. Stop him and ask. LOVE CHAKRA Katie Randall quizzes Daisy Jewellery’s Maya Claughton about the company’s Portobello roots

Can you tell us a little bit about the founding of Daisy Jewellery? We’ve heard it was a hippy affair on Portobello Road. It was indeed! Although it wasn’t actually Daisy back then. My husband James’s father, Noel Boyd, arrived in London from Australia in 1971 and set up a jewellery stall on Portobello Road. That was the beginning of the Daisy legacy. James took over in 2009 and I came on board in 2011. What was the stall like? The company was called Aztec and they imported and sold Mexican silver jewellery. They were the first people to do it and were hugely successful for many years. Noel went on to work in the industry for 40 years and is the inspiration for much of what James and I do. Can you tell us about the belief system behind the jewellery and the Chakra bracelets especially? The seven chakras are the seven energy points within the body. Most Eastern philosophies, including Buddhism, teach you that these seven chakras need to be balanced in order to regulate the energy

flow within the body and therefore aid spiritual and physical wellbeing. By wearing a Chakra bracelet you are constantly reminding yourself to work on this system of balance. Do you think jewellery pieces with meaning are becoming more prevalent in the jewellery market? Yes I do. I think that we are in an age of heightened awareness, whether it’s regarding the economy, the environment or just personal wellbeing. People want to see beyond consumerism and I think offering them the ability to combine a luxury (jewellery) with something to think about is an attractive prospect. What is your personal favourite piece in the Daisy jewellery collection and why? Oooooh, tricky! I love my Heart Chakra pendant and classic Heart Chakra

bracelet. I adore our new Sahara range, especially the rose gold and smoky quartz pieces – so exotic. And I think our new Halo concept is brilliant and I’m really looking forward to adding new designs to that collection. What do you foresee in Daisy’s future and what would you like to achieve? Any exciting upcoming projects? Very much so. Daisy is really focusing on overseas expansion at the moment and we’re enjoying developing the international wellness and luxury spa side of the business. In London we are super-excited about plans for our fi rst retail space and James and I are ensuring that the company continues to be involved in charity. We’ve had very successful collaborations with both Fashion Targets Breast Cancer and 53

It’s super easy and central, so great for press appointments and meetings, and until recently we’ve always lived in and around the area. I love the energy of the area and the architecture – it’s an inspiring place just to walk around. What do you like to do when you are not working? Any favourite places to visit in Notting Hill? Tons! Cold bright winter mornings at Portobello Market and summery afterwork drinks at The Cow, right by our studio. I love The Spice Shop on Portobello Road and we often have breakfast at Oporto on Golborne Road before work, after James’s Jivamukti yoga class on Kensal Road. Best coffee ever. James used to buy a new pair of grey cashmere fingerless gloves from Brora on Ledbury Road each winter. It’s closed down now so I guess he’ll have cold hands.

Do you wear much jewellery yourself and what are your favourite pieces in your own collection? Yes, loads! I wear a lot of our pieces – I always wear a gold Heart Chakra pendant – my best girlfriends and my mother wear it too. I wear a lot of our gold bangles and I always wear a very long claw pendant that was designed as a collaboration between us and our friend Tomasz Donicik. Tomasz also made my engagement ring, which is a huge pentagonal cocktail ring set with a blue topaz and 20 diamonds. It’s insanely beautiful and exactly the same colour as the sea in Ibiza where James proposed. I also wear a lot of my mother’s jewellery from her travels and I love Katie Rowland’s gold and quartz knuckledusters.

Which celebrity or person in the public eye do you think wears jewellery really well? And who would you like to see wearing Daisy jewellery? That’s hard. I think Olivia Palermo has a great way with accessories – she isn’t afraid of statement pieces or items that clash and she carries it all off looking so polished, so top marks to her. I’d like to see her in Daisy sometime. We’ve been lucky in that Daisy has always had a huge amount of celebrity support, but it would definitely be Poppy and Cara Delevingne who are our favourites and who always get it exactly right. What is your most treasured possession? A vintage charm bracelet that belonged to my grandmother. She collected a different charm everywhere she went and there are all sorts of amazing ones. It tells her story and I never met her, so it’s amazing to feel like I know a little more about her. Plus all the photos of my parents travelling the world in the 70s; my collection of globes that my dad started for me when I was 10 and my mother’s ivory crepe Ossie Clark wedding dress. Darren’s been telling me about the Hoffman Process, which he recently went through, and how he was finally able to forgive his parents for sending him to a state school instead of a Steiner school. 7.42 pm. Waiter arrives with seasonal vegetables, but Darren thinks that the dressing has been made with sugar and sends them back. He says that sugar is worse than heroin. He’s so right. 7.46 pm. Darren tells me about the sweat lodge he recently attended in Totnes. He had a vision that he turned into a giant golden eagle circling the planet. I pay because he has no pockets in his lungi pants to carry a wallet. 8.43 pm I suggest a walk on Primrose Hill, so we head for the bench on the top from where you can see the whole of London. 9.02 pm We sit down on the bench next to a man who’s rolling a cigarette. Darren asks him of he knows what effect smoking has on his etheric body. The man tells him to sod off. 9.05 pm Darren says that we need to move away quickly because the man has a very dark energy. 9.08 pm Darren says that he needs to go home and process everything that has happened this evening – the dressing with sugar in, the alcoholic dining companions, the rude roll-up man. Darren’s a very wise being. 9.26 pm We reach Chalk Farm tube and Darren asks me if he can borrow a tenner to get home. 10.15 pm Arrive home. Text Darren to thank him for a lovely evening and suggest we do it again sometime. 12.59 am Darren still hasn’t replied to my text.

Swapping modeling for catering is an unusual move. What prompted it? I have always had a passion for cooking and at university I studied Physiology and Pharmacology – I think that’s where my love of mixing, testing and experimenting first came from. While my peers were in the student bar, I preferred to throw large dinner parties for my friends at home. After university, I continued with the dinner parties and my friend Jackie suggested I cater for a friend of hers who was throwing a party for 100 people in Chelsea harbour. The friend turned out to be the soon-to-be-famous Simon Cowell. It was such a success that I went on to start my catering business, employing my model friends to serve the food. I carried on doing both the modeling and catering jobs for quite a while and whichever job came up first I accepted. I still use models today in my events business.

“My husband named me the Crazy Baker ” Can you describe your day? The main thing I can say is that no day is ever the same. One day I may have to go in to think up a new recipe for a job or test some cakes at 4am when the bakery production ends, the next day run a canape reception for 50 in the evening or go to a meeting with some samples for a new bread customer. We now make about 8,000 loaves a week. I try to do the school run occasionally but my husband does say he feels like a single dad sometimes. Would you give a lay person a few bread-making tips? Is making bread something we need to be afraid of? You definitely shouldn’t be afraid of bread making and don’t give up if you don’t get the most beautiful loaf the first time. One of the main tips is to keep working (kneading) the dough if it is very sticky, but do not add more flour, as the more flour you add the heavier the loaf will become and the more water, the lighter the loaf. Have you had any bread disasters? Not really but my shaping was very rustic to begin with. Fine for a home baker, but although we make artisan bread, it is important to keep the loaves fairly uniform. Why are you called Crazy Baker and what’s next for Crazy Baker? My husband named me the Crazy Baker. When I started baking professionally I made one loaf and he came home and saw it on the kitchen table, the next day there were two loaves, then I decided to make some bread for our café and he came home and there were three crates of ciabatta on the kitchen table, he walked into the kitchen and there was flour everywhere and he said “Oh my god, you’re the Crazy Baker.” I think maybe we could manage a few more Crazy Baker shops and few more wholesale customers.

RECIPE

PUMPKIN BREAD This is a delicious pumpkin bread made with roasted pumpkin. Although you only need a small amount of pumpkin you can always use the rest in pumpkin soup, pumpkin lasagne, or pumpkin pie A pizza stone or piece of granite makes a great surface for baking bread. Otherwise, place the loaf on a lightly greased baking tray.

FOR THE ROASTED PUMPKIN I pumpkin 5 cloves of garlic a sprig of rosemary, roughly chopped drizzle of olive oil

Cut the pumpkin into big chunks (about 8 to 10 in all), scrape out the stringy centre and the seeds and throw away. Drizzle the chunks of pumpkin with olive oil and place in a medium oven 180C, 350F for 40 mins or until the pumpkin is soft, then add the garlic and roughly chopped rosemary and roast for another 10 mins or until the garlic is soft.

FOR THE BREAD

Strong white bread flour 500g Water 325g White sourdough 100g (optional) Olive oil 5g Yeast 10g Salt 15g 160g roasted pumpkin (as above) If you happen to make your own sourdough or have some from your local bakery then add 100g to your dough this will make it extra light and give the bread a lovely flavour (email me at sgrey@ crazybaker.co.uk if you would like to know how to make a sourdough of your own). In a large mixing bowl or in the bowl of your KitchenAid add the wet ingredients water, sourdough, olive oil and then yeast, then the flour. By hand, using a small plastic scraper with a round end work around the edge of the bowl until the dough comes together into a sticky mass. Tip it onto

your work surface and knead it until the dough becomes smooth. Time yourself for about 10-15 mins. If using a dough machine and hook, mix on the middle speed for 7 mins. Add the salt and knead (mix) for another 5 mins then add 70g of the roasted pumpkin and carry on mixing until the pumpkin is evenly distributed. Form the dough into a round shape – it should look like a little plump belly. Lightly oil your bowl and place the dough inside with a damp cloth over it and set aside in a warm place to rise until nearly doubled in size. This will take about an hour. After an hour shape the dough, tip the dough onto your work surface. If you are making two small loaves divide into two at this stage – flatten out the dough and fold the sides to form a triangle, then bring the top over like you are rolling a package (you can be quite firm). Roll the dough over and towards you to form into a baton shape, place on a tea towel lightly dusted with flour, top the large loaf or the two small loaves with a little more roasted pumpkin and leave for the final rise, about 40 minutes, until nearly doubled in size again. Heat the oven to the highest temperature. Open the door of the oven, quickly steam the oven with a water spray or pour a quarter of a mug of water in the bottom of the oven. Close the door. Place the loaf on a peel/piece of wood or the back of a baking tray and shunt it onto your stone in the baking hot oven if you can, try to do this really quickly so the steam and heat are kept in the oven. Turn the oven to 220C /425F and bake for 30 minutes. Check at 30 minutess, tap the bottom of the loaf and if hollow the loaf is baked if not leave it to bake for 5 to 10 minutes longer. RECIPE GUY FAWKES WHOOPIE (MAKES 6–7 WHOOPIES) These whoopies taste great and are really eye-catching, with a beautiful bright orange ‘bonfire’ on top – perfect for any Guy Fawkes night party. You can buy the pumpkin purée, but I’ve also given instructions for making it yourself.

2–3mm orange food colour paste (more if you want a really strong colour)

SPONGE 125g plain flour 1⁄2 level teaspoon bicarbonate of soda 1 level teaspoon ground cinnamon 1 level teaspoon ground ginger a pinch of ground cloves 100g soft light brown sugar 60ml sunflower oil 100g pumpkin purée (see method)

First make the pumpkin purée. Preheat the oven to 180°C/350°F/gas 4. Cut a pumpkin into pieces, leaving the skin on and scraping away the seeds and stringy bits. Put the pumpkin pieces on a baking tray and roast them in the preheated oven for 2 hours. Leave to cool a bit, then scoop out the flesh and purée it in a food processor. You need 100g for this recipe – use the rest to make a soup for your bonfire party. Preheat the oven to 190°C/375°F/gas 5. Sieve the flour, bicarbonate of soda, cinnamon, ginger and cloves into a bowl and stir in the sugar. Mix the oil with the pumpkin purée. Mix the wet ingredients with the dry ingredients and fold in with a large metal spoon – use the ‘figure of eight’

FILLING 65g very soft butter 130g icing sugar, sifted 200g Philadelphia cream cheese 2 teaspoons good-quality vanilla extract or essence

TOPPING 4 x 39g packets of Mikado biscuits or Matchmakers

action – keeping air in the mix until you have an even colour (do not over-mix). Pipe or spoon 12–14 x 4cm dollops (at least 4cm high) on to the baking tray, spacing them well apart to allow for spreading, and bake in the preheated oven for 8 minutes. While the sponges are cooking, you can start to make the filling. Cream the butter and icing sugar together and add the cream cheese and vanilla. Mix until the filling is smooth, but take care not to over-beat or it will become runny. Add the colour paste, a little at a time, on the end of a spoon. Take the sponges out of the oven and leave to cool on the tray. When cool, lift them off with a fish slice. Sandwich them together with the orange cream cheese filling and pipe a swirl of the filling on top, making peaks so it looks like a fire. Chop the Mikado biscuits or Matchmakers so you get a mixture of short and long twigs, and arrange them on top like a bonfire.

ITALIAN JOB Aldo Zilli is covered in awards and still hungry for more. Harriet Compston meets him to talk world records and contemporary Italian cuisine Did you always want to be a chef? No, I originally wanted to be a concierge in hotels and learn lots of different languages. That’s why I went to Germany at such a young age – 17 – but then work was only available in kitchens and with food, there is only one language. Culinary heroes? My heroes in London start with the Roux brothers and now Roux junior. In so far as television chefs, I loved Keith Floyd for his bigger-than-life personality. Meal that changed your life? I can safely say that one of the finest (and simplest) meals I ever had was in a shack restaurant on the beach in Portugal – it was fish at its best cooked on an open fire with baked potatoes under the coal. What’s the best thing about Italian food? The best bit about Italian food is that it’s for everyone, but don’t think it’s only about pasta and pizza. The new generation is showering us with tasting menus now, like one of my favourites, Cicchetti in Piccadilly, run by the San

Carlo family who’ve taken the Italian tasting menu to another level. What has been the proudest moment of your career so far? I’ve had lots of proud moments in my long career, but it would have to be winning awards for my restaurants, such as ‘best Italian in London’. The list goes on, and let me tell you, it’s not over yet. What projects do you have going on at the moment? Since the sale of my restaurants, life has been very busy with all my new projects and TV work, including the building of Zilli Media, my new company that looks after restaurants and gives advice on food in general. But I can’t reveal it all yet. Top three ingredients you like to cook with? Well, let’s start with a great olive oil, as I always love to finish my cooking with it. Then fish – pretty much any type as long as it’s fresh – I love it! Also, I can’t say I’m Italian if I don’t go for pasta; I could eat it three times a day.

What are your favourite plates on the menu at Sub-Zero & Wolf’s new supper club? Well, it depends on the season. At this time of year it will be truffle, game and of course, my absolute favourite: lobster ravioli. What do you knock up for a quick supper? In my fridge and cupboards, you will always fi nd ingredients for a quick meal, such as garlic, onions, basil, tomatoes, parmesan and chilli. So, a quick sauce to make for me has to be arrabbiata with plenty of chilli. Best culinary advice you’ve been given? The best ever advice I ever got has to be that it’s important to keep your feet in your kitchen even if you’re famous. iners at Kensington Place generally divide into two camps. There’s the mature crowd, who have been coming here for years and know that this is an eaterie with a past, an eaterie that’s fundamental to London’s gastro history and without which we can assume that things on the dining front would be pretty different today. Then there are the younger diners, who know the restaurant as part of the foodie establishment and may – or may not – be aware of what a stir it caused when it first opened, thanks to Rowley Leigh’s groundbreaking mix of informal surroundings with unfussy but high class food. This month marks 25 years since that first opening, and changes are afoot.

To celebrate their first quarter century, the restaurant that was for years famous for its postmodernist chairs (now long gone) has taken down its equally famous mural, the one that dominated the entire far wall. In its place is a moving gallery, currently home to young artist Jelly Green’s cow paintings and the whole interior was refurbished earlier this year, marking a new start with head chef Dan Loftin, who is focusing strongly on fish. Eating here remains a reliably good experience. On our recent visit we started with KP classic foie gras with sweet, tasty brioche, and a delicious seared swordfish with sesame, soy and mirin and a small, beautifully

dressed salad. Recommended by the waiter, in ever-competent Kensington Place style, was an Italian verdicchio white wine, a good pairing for fish. Plates are pretty, hand-painted French pieces, blue with leaf edging, while a salad main course of marinated squid and prawn with fennel and lemon vinaigrette came in a big wooden salad bowl with wooden servers. Delicious, crispy sourdough bread was a delight. We also ordered the unusual halibut darne from the fish menu, baked, with hollandaise, which was flawlessly done. And for pudding, a hot chocolate fondant with marshmallows and praline ice cream was decadent and intense. Happy birthday, KP. 77

oving the new cafes and independent shops springing up in W10. It is great that there are new businesses coming into the area that suit its eclectic feel. The wonderful Lowry & Baker and Golborne Deli are now joined by the Crazy Baker and Bluebelles of Portobello – so much great coffee and not a chain cafe in sight. And even though Mr Skött was never a fan of our hybrid car, perhaps he will be interested in a hybrid bike with the arrival of a new electric bike shop at the north end of Portobello. We could have done with a bit of an electric boost on a bike the other night when on a very wet evening we cycled to Chelsea Town Hall for a talk by Mikael Colville-Anderson, Mr Cycle Chic Denmark himself. How to make London as inviting a place to cycle as Copenhagen? Quite a challenge considering the infrastructure. There are certainly many things to be done, and cycling has been intrinsic to the Danes and their culture for so long a time that I don’t think we can catch up over night, but a great start anyway. Hairdressers are known to be some of the happiest people, but I don’t think that bakers can be far off. What would we do without good bread? Rome controlled the mob by giving them bread and Russia had a revolution because of the lack of it. We had a great trip to Chichester to visit Master Baker Troels Bendix at his bakery. Mrs Skött looked particularly fetching in the blue hair net and Mr Skött got very excited by all the cool equipment. Then on to the Hungry Guest in Petworth, which must be one of our favourite food emporiums of all time, an amazing selection of the bread we had just seen being baked, a fantastic cheese room and some of the best steak we have eaten. Well worth a visit to Petworth just for this. We are going to have to find time to fit in a pre-Christmas trip. mrandmrsskott@zest-media.com 81

MUSE NEWS Portobello Road’s Muse Gallery reopens as a new platform for emerging artists

after nine years of wear and tear on the ‘Bella. the Muse gallery has recently undergone a refurbishment. Now that it’s back and looking slick, floors gleaming and walls displaying its characteristic provocative work, it’s like taking a step back in time to the glory days of its opening. The gallery and studio can be found just south of the Westway at 269 Portobello Road and it supports emerging and established artists by providing exhibition space with limited costs. At the core of the operation is a residency programme located in a studio at the rear of the building. Since opening, BA and MA graduate artists have worked on site for eight months per year, mingling with contemporaries, before ultimately producing their

the in-house commercial support of a gift shop. For once you will be able to walk out of a west London gallery with something original that doesn’t cost the earth. The Muse continues to host all types of events, from film nights and sound art to readings, gigs and performances. The calendar for 2012 is as varied as always, with painting, sculpture, photography and fabric design exhibitions rotated monthly. The space is also available upon application for nonresident emerging and established artists, plus The Muse is available for venue hire throughout the year.

Island Life

Katie Randall discovers her culinary ability while unwinding in the idyllic subtropical climate of Sardinia

S

ardinia has always been regarded as more laid back and quieter than mainland Italy. Its proximity to Africa makes the climate balmier, its mafia marginally softer and its pasta fregula gentler on the stomach than a Napolese Spaghetti Peperoncino. During the 90s, it became a beachy haven for honeymoon couples, retirees and young women hoping to reduce the odds of getting their bottom pinched in the street – but over the years it has concentrated its qualities into some seriously luxurious resorts, in the way that only a small island can. Enter the Forte Village in Santa Margherita di Pula. This exclusive area on the south west coast of the

island has patented the best of what Sardinia has to offer in accommodation, food, beaches and that all-inclusive term ‘wellbeing’. Holding the vaguely intimidating title of World’s Leading Resort from the impressive-sounding World Travel Awards, expectations were high, and it did not disappoint. Upon arrival I was immediately struck by the resort’s ability to cater for all sorts of holidaymakers. The brains behind Forte Village describe it primarily as deeply Sardinian in culture, varied and ‘discreet.’ Two giant pools, one with 250 metres of slides, are dedicated to families with children, or just sit nearby the picture-perfect Il Villaggio complex which are bungalows and villas with patios and gardens and

all the mod cons you would expect for young families. My ‘home’ during my stay was in one of the southernmost bungalows called the ‘Le Dune,’ a stone’s throw from the beach and a retreat from the busier areas of the resort. Every suite within ‘Le Dune’ has its own tropical garden and patio, a luxurious bathroom with a rainforest shower, whirlpool bathtub and French windows which looked out on to immense tropical greenery in front of the idyllic ocean horizon. With such a huge range of things done well, the choices presented to me were numerous. Weightloss bootcamps hit the beach in the morning and run past the specials boards of the village’s fine dining restaurants: Gordon Ramsay’s La Locanda offering Trattoria-style Spaghetti Carbonara and the Caviar Bar, tucked away on the seafront servingup its namesake, raw seafood and lobster. There is a private pristine beach

beautiful enough to rival any Caribbean stretch of sand and a plethora of pools and canopied bars where holidaymakers can relax and polish off bottle after bottle of the region’s Sangiovese. In the spa – recognised as one of the ‘leading spas in the world’ – there are six seawater pools boasting a whole range of health benefits. The ‘method’ of the pools is called Thalassotherapy, a graduating series of temperatures and salt concentrations which act as a treatment and tonic for the body. Stepping into some of the pools, I was immediately swept off my feet. The salt density in some is so intense that you can become weightless upon entry – perfect for the relaxation plan – floatation renders all muscles out of use. On my second visit to the spa, I received a Sardinian honey and salt exfoliating massage. This consisted of standing in a wooden hut surrounded by greenery and scrubbed with natural sea salt, before honey was drizzled on my body and massaged in. It does not get more

authentically rustic than this. In contrast, I discovered that the spa also stocks the international skincare brand Murad – reassuringly expensive, high-end and non-rustic. As an alternative to eating, drinking, sleeping and repeat, you can take part in cooking lesssons at the Forte Gourmet Cooking School. Taking place within the Forte Gourmet Restaurant, there is an emphasis on theory and

special Sardinian pasta, and we also cooked pasta en papillote - the kind of treatment I thought only fish received. The resort has its own kitchen garden and as well as these fun and informal cooking classes, guests can enjoy a tour around the gardens with the chefs, learning and tasting as they go. Most excitingly for food buffs, the resort often brings in culinary-greats to head up the gourmet restaurants and to give lessons. Gordon Ramsay regularly makes appearances at special gala dinners and hosts classes, as does Rocco Iannone, a Michelin-starred chef from Naples who takes over the chic white space that is Forte Gourmet every summer from the end of June until the end of August. The opportunity to grill world-renowned chefs while tucking into their fare is just too juicy an opportunity to miss. The thinking behind most resort holidays is that you never have to leave the surroundings of the resort, and this very fact might scare people off. With

Gordon Ramsay regularly makes an appearance as does Michelinstarred chef Rocco Iannone technique. The on-site chefs teach guests how to make Sardinian dishes with fresh ingredients. We learnt to make a perfectly smooth creamy tomato sauce, with the juicy Camona tomato typical to the region and with the largest fresh and fragrant basil leaves that I have ever seen. The sauce accompanied little balls of

When sharing a house with young children, it’s easy to get so caught up in the day-to-day that you forget the quieter, less frenetic moments that a family can enjoy together. This project was all about creating a living space that was at once culturally fulfilling for the parents and perfect for relaxed Sunday afternoons en famille. With all the bustle of family life, the living room on the ground floor of this home had gradually turned into a dumping ground for overspill from the hallway, cluttered with buggies and scooters. The basement kitchen had become the heart of the home by default, and the clients were desperate for a

comfortable room where they could play and listen to music, or hang out with their children. The first stage in the transformation was to create a storage space in the front garden

It’s a kind of luscious minimalism to accommodate scooters, bicycles and prams. This allowed the living room to be returned to its original function. At some stage, a wall had been removed between what were originally two separate rooms to

create a single space. As a result, the conjoined room had two doorways to the hall. One door was replaced with a large pane of glass, which allows light to flow into the hallway from the windows at the back of the room, and gives anyone entering an inviting view of the garden. Because there are so few pieces of furniture in the room, each one has to act almost as a piece of sculpture, so it needed crisp shapes full of personality; not squashy country-style sofas. It’s a kind of luscious minimalism; the space looks very elegant so long as it’s not cluttered. When considering an interior such as this, it is important to be realistic about the 95

We recently dressed a two bedroom apartment in Lennox Gardens, Chelsea that had remained unlet for 11 weeks, despite being newly refurbished. We furnished it and it got rented the next day at £1,400 per week. In St John’s Wood we staged a three bedroom apartment in a mansion block and it sold for the full asking price within five weeks.

How is In:Style Direct different to other interior design companies? Our turnaround times and the affordability factor. A client may want help creating an interior that reflects their personality, or they may want to make better use of the space they have without the expense of using an architect. Often clients simply don’t have time to put together a new look themselves. We have a large warehouse where we hold a lot of stock and as we make all our own soft furnishings and window treatments, we’re able to achieve a unique look within a week if need be. live and breathe Bayswater. It is my home, my place of work and where I raise my family. Appreciating its historic buildings, convenience and cultural offering is difficult to do unless you experience it as a resident. My home in Gloucester Terrace, which I share with my wife and twin boys, Sonny and Dexter, is totally in the thick of it. From the quiet garden squares of Cleveland through to the hustle and bustle of Queensway to the boutiques and quaint village atmosphere of Westbourne Grove, the rich diversity of it all is quite unique. I’ve been selling property in the area for the past 26 years, since I left school and have seen it change tremendously over the years. In my opinion, it has never been so good nor offered as much as it does today. Half a mile from my front door is St Mary’s Hospital, where our little boys were delivered three months early, making it our second home until we could take them home. Next door to that is Paddington Station which is home to the Heathrow Express and offers travel to the rest of the UK and beyond. It’s quite a luxury being able to wheel your suitcase a few minutes from your front door to catch a train, or even a plane. A five-minute walk westwards and we’re at the cinema in Whiteley’s or at our favourite Chinese restaurant, Gold Mine, while a few minutes more will bring us to our favourite pub, The Walmer Castle in Ledbury Road. A shuffle further down the road will find you shopping the antique markets of Portobello Road. And I don’t need to mention how close Hyde Park is. My boys have the best backyard. The property market here over the past ten years has been interesting to say the least. Property prices in W2, although briefly affected by the credit crunch, have now increased by over 15% since the heady levels of 2007 and continue to rise. Recent reports of a family home in Notting Hill which was purchased for just under a million pounds in 1993 and sold last month for £35 million have created quite a deal of excitement and conversation among local residents. It’s true that we’ve seen prices rise considerably in this area over the past ten years. This summer has been quite exceptional and I noticed that the quarter from July to September was our most successful this year, despite the high number of bank holidays and other exciting distractions. reetings from Notting Hill. Good things to report: our market is busy. Having left our slow summer behind, autumn has been fantastic so far. We have been dealing with an exceptionally exciting property in Linden Gardens this month. Owned by an older lady who sadly passed away, the derelict lower ground floor flat has finally gone to sealed bids, having had numerous viewers, the highest level we have had on one property for a little while. We’re hoping for a great result and will leave the torch for the lucky winning bidder (there is no electricity). In between work, we do occasionally get spoilt and have a party which leads me onto our summer bash at the Westminster Boating Base. It was a great night, full of canapés, champagne and unbelievable dancing skills (namely the quiet ones). Next stop – the Christmas party, whose venue is kept a secret right up until the day before. We have achieved some very strong prices for properties finished to an exceptionally high specification, with some landlords securing premium prices without even bringing their property to the open market. Demand remains high at the upper end of the market (£4,000 per week plus), with a shortage of stock to meet these applicants requirements. The corporate market, as ever, is strongly present.
