EDITOR’S letter

T

his month we have put together an issue that features more men than usual. There's gallery owner Paul Stolper, who lives quite anonymously but discusses with us his dealings with some of the art world's biggest names – Peter Blake, Damien Hirst and Gavin Turk, among others. And then there's playwright Enda Walsh, whose Ballyturk was a sellout at the National last year and described as a 'manic physical comedy', which provides a clue as to the probable nature of his new piece for the Royal Court, an adaptation that sounds unlikely but may in fact not be at all unlikely. Roald Dahl's The Twits is a gruesome story about a cruel and abject couple and the nastiness they inflict on birds and monkeys, with an outcome that must be very difficult to stage. Walsh gives us a tiny taster of the show, which opens this month. There's also Tim Lott, a novelist and lifelong west Londoner who rhapsodises slightly defensively in

this issue about e-bikes, and chef Rowley Leigh, who despite having abandoned his Queensway eaterie for Hong Kong, can be seen in his home kitchen thanks to The Idler Academy's online tutorial in the history of cooking. It's not an entirely male issue, though, and of course we've got a wealth of fashion and beauty, with a special focus on bags, shoes and jewellery, alongside a spotlight on a local dressmaker and a new regular fitness page as well as all our usual culture, food, interiors and property. n celebration of its fabulous show Alexander McQueen: Savage Beauty, the V&A is honouring one of contemporary fashion’s greatest visionaries in permanent form. Alongside the travelling exhibit, the Cromwell Road museum has also recently acquired 13 photographs featuring fashion designer Lee Alexander McQueen. These behind-thescenes images, taken by noted photographer Ann Ray, were dubbed by the renegade himself as 'my life in pictures.' While the

late McQueen was alive, Ray's friendship with the visionary granted her an all-access pass to McQueen's design studio and, more importantly, the inner workings of his fantastic, yet tortured mind. TURN AGAIN Form meets function at the Royal College of Art’s contemporary ceramics fair, Ceramic Art London

ecognising some of the world's best contemporary ceramicists is what the Royal College of Art’s latest exhibition is all about. Ceramic Art London is a collaboration between Ceramic Review and Craft Potters Association and it sees the exquisite work of 80 emerging and established artists featured in a weekendlong fair held in the RCA’s Henry Moore and Gulbenkian Galleries. Now in its 11th year, Ceramic Art London is not just for avid collectors or those in the industry; it is for all pottery enthusiasts. Visitors of the shoppable event can expect ceramics spanning a range of forms, as well as a programme of expert talks, technique demonstrations and films. pieces also have global appeal, too, as the former apprentice of Edmund de Waal spent six weeks as Mashiko Museum of Ceramic Art’s Artist-in-Residence. The Japanese ethos of marrying form and function was certainly a perfect fit for Keenan’s double-glazed porcelain designs, which, despite their fine appearance, are built for everyday use. Despite only starting in ceramics in his mid-30s, this late bloomer has made substantial ground, now rivalling his contemporaries one bowl, cup and jug at a time.

Myung Nam An yung Nam An’s aim is simple: to encourage us to think. Whether it’s by putting forward designs that challenge our notion of beauty, or by encouraging us to question a certain issue she feels needs addressing, Myung's audience is pushed to become active participants when examining her work. Angela Mellor or Angela Mellor, experimenting with bone china’s ability to transmit light is the focus of her artistic attention. While seeking to re-interpret her 'visceral response to the effects of light on the landscape,' Mellor finds that the 'organic contours, tonal contrasts and patterns provide a continuing source of inspiration.' The Cheshire-born artist is renowned for her delicate translucent texture signature, a tracery technique achieved by F

manipulating the paperslip medium she integrates into her pieces. Mellor continues to investigate the bounds of decorative and functional design, no doubt influenced by her time spent in Australia where she had a solo exhibition at Craftwest in Perth.

Ipek Kotan pplying a deft hand to vessel construction, Turkish ceramicist Ipek Kotan adopts a ‘less is more’ approach to her designs. The emphasis of her timeless creations is in the nuance, preferring to make subtle changes to classic styles. Centring on the finer details is what separates Kotan from a lot of ceramicists, who typically make larger A

ENDA WALSH: Oh I think it's a very natural digression. But yeah it's my first play that children can see. Writing dialogue for monkeys – in our case Welsh monkeys – was a major incentive, obviously. ABS: And why The Twits? EW: Mr and Mrs Twit are Dahl's most atrocious and ridiculous villains. The worlds of their house and the garden are terrifying places and the theme of revolution – the fight between them and the unfortunate monkeys – is a very strong dramatic strain. ABS: How true is it to the book and what is changed? EW It’s described as a ‘mischievous adaptation’. The book is very slim. We've been faithful to it, but other characters have emerged and more story has been written. Mr. and Mrs. Twit get to express their wickedness more flamboyantly, let's say. There is still a lot of gluing. ABS: Do you have a favourite scene? EW: Several at the moment - a very nasty Morris dancing sequence is very funny.

ABS: Did you have Quentin Blake’s illustrations in mind or an entirely different vision? EW: The writing and those illustrations are so entwined – you can't think of The Twits without seeing the energy of Quentin Blake's drawings. But Francis Fulford is somewhere in our production, and also the world of English fairgrounds. ABS: Are you a fan of Roald Dahl? What other children’s writers do you like? EW: I adore Roald Dahl - it's a huge honour to adapt one of his books. BRAVE ART One of the country’s most influential art dealers is Paul Stolper, who lives unostentatiously in Kensal Green. Absolutely meets him Wo r d s E d w i n a L a n g l e y

L

ying discreetly on the slim but vibrant Museum Street is Victorian shopfronted Paul Stolper Gallery. A leading publisher of contemporary fine art prints, and exhibitor of artworks, photographs and sculpture, the gallery’s whitewashed walls display a riot of colour and creation: Damien Hirst’s lenticular For The Love Of God, Gavin Turk’s shocking yellow Sneer. A resplendent claret violet resin sculpture from Peter Saville’s Unknown Pleasure series has its own island stand, and a bronze skeleton on a dustbin – Shaun Doyle and Mally Mallinson’s Metro Homo Tesco – sits naughtily in the corner. What type of person brings these works together, you might ask. The pulling power required for such a high profile collection must be fairly substantial. At the very least, the person would have their own Wikipedia page, you would think… But Google the words ‘Paul Stolper’ and while there’s lots about the gallery, you find out very little about the man. So with almost nothing to go on, I enter Paul’s gallery not really sure what to expect. And it’s safe to say that, minutes

AS A COLOURED SOCK of flamboyance IN SIGHT after, when a man walks in off the street with short greying hair and rimless rectangular glasses (the type worn by computer technicians) I suddenly realise what I wasn’t expecting: the very unostentatious Paul Stolper. In the most understated clothing imaginable – plain shirt, plain trousers and not so much as a coloured sock of flamboyance in sight – Paul sits down next to me and starts to ask questions. I sense he is not in his comfort zone. ‘I don’t do interviews, really,’ Paul says directly. ‘It’s not that interesting. These guys do the work,’ he motions to the art behind him. ‘Interviews are just opportunities to trip up.’ I assure him I’ve not prepared any awkward questions. ‘I won’t answer awkward questions,’ he retorts. Paul Stolper studied drawing and printmaking at Camberwell College of

Art in the early 80s. ‘It could have been a brilliant course,’ he remembers, ‘but it wasn’t quite. It was that whole early 80s, early 90s, explosive period of Goldsmiths. There was this teeny art world. I was aware of that group emerging. I remember trying to flog paintings to people on street galleries… I was finding the right artists but I couldn’t keep hold of them. It was really difficult. ‘I didn’t have a gallery,’ he continues, ‘I didn’t have money. There weren’t that many galleries, so I thought it was best to try to get a body of work that I could sell and control. I decided to publish some prints – by two Goldsmiths artists.’ The result was an exhibition entitled the Pidpit Series, launched in 1991. Featuring the ‘very expressionist, figurative’ works of Goldsmiths alumni Peter Kinnelly and Ray Richardson, it was unfortunate that the private view fell on the eve of the start of the first Iraq War. As a result, no one went. ‘Because [the war] was all on television, it wasn’t a huge success,’ Paul explains. ‘But it taught me loads of things – about how you work with artists. Print projects are big. There are so many different things that need to be resolved. For me, it allowed me to be that much closer to the artists.’

Honing his artistic taste through his 20s, Paul was influenced by trips abroad. He cites one in particular, to India, where he went with his father, who was travelling on business to buy manuscripts. Paul bought ‘contemporary stuff’ and put on a ‘weird contemporary Indian show’ back in Britain. ‘I was just doing what I wanted to do. I didn’t know any rules,’ he admits. ‘In retrospect, it helped me be stronger in my convictions. I did lots of shows that never sold anything and didn’t do well. So I adapted, and then something would sell.’ His first gallery, A22, was a rented space on Laystall Street in east London, which he ran from 1998-2002. It was a large two-storey space with a balcony. ‘It made me learn that whatever space you have, you fill it. So, I ended up doing bigger and bigger shows. It was bonkers. I remember this one show, I had these big Kilkenny limestone sculptures and we had to close the road to get them in.’ In 2004, Paul moved to a smaller location on Luke Street; a rectangular gallery where he put on the ‘enormous’ (and hugely successful) Damien Hirst show, New Religion. ‘Damien was brilliant. I had this tiny space and he did a great interview where they asked: “How did you feel about putting all that work in Paul’s space?” And he said: “Fine. I told him to be like a carpet-seller – stack

things against the wall, so you can flick through them.”' In 2008, Paul moved again, to Museum Street – ‘the best address ever. If I travel anywhere in the world and am asked: “Where is the gallery?” I say: “In front of the British Museum” and everyone knows it.’ His inaugural show was Peter Saville’s Accessories to an Artwork, and since then Hirst’s Schizophrenogenisis last year (and more recently his pop-up, Love) Peter Blake’s Side Show and Gavin Turk’s Transit Disaster have all, at times, occupied the space. ‘Gavin [Turk] was the first of all those artists [the YBAs] I really knew. I bought work from his first show, an exhibition he did based on his own signature. I told the dealer: “Don’t tell me what’s sold. I’ll tell you which one I like, and then tell me if it’s sold or not.” (What tends to happen is you go up to the one that has a red dot and say: “Oh, if that hadn’t got a red dot, I’d definitely buy it!”) So I walked around and there was this great big torn paper tablecloth with some food stains on it. [Gavin] had signed it. “I thought, who is this artist, straight out of college, who has signed a tablecloth as if he were Picasso or Matisse?” That was the one I bought,

which I still have.’ He lives, as he has done for the past 15 years, in Kensal Green with his wife, Anna, and their two daughters Celia (17) and Georgie (14). ‘It’s interesting being in an area that long, to sit and watch everything around you change. And it’s changed an awful lot. We used to live above a restaurant called 192 on Kensington Park Road. It was the epicenter of that Notting Hill before it… ‘changed’. The people who owned it also founded the Groucho Club. It was this magnet for everyone and anyone who lived round there. You never knew who was going to be there. It was amazing.’ Paul shows me round the gallery, paying particular attention to a Peter Blake in the window. A silkscreen print, it features a photograph of Kate Moss – entitled Kate – and is signed by both Blake and Moss. ‘She came in and we had a great, long afternoon,’ Paul recalls. ‘A couple of bottles of Prosecco... By the time she had parked, there were 10 cameras. I have no idea how they knew she was here. When she goes out, she’s just so recognisable.’ A small indication, perhaps, as to why – in the public arena at least – Paul prefers to remain largely incognito. nyone whose mantelpiece is bearing the weight of a wedding invitation or several for summer 2015 knows the feeling. What am I going to wear? It's a thought that recurs as we get dressed in the morning and scan our existing wardrobes, it rears its head as we see the new season's clothes and sometimes it might even keep us awake at night. The knowledge that we are going to need some serious outfits relatively soon can be a source of excitement or dread, depending on our mood or the state of our wardrobes. There's no escaping it. What do I want to wear? What colour? What length? Sleeves or no sleeves?

Where am I going to find it and when am I going to schedule in the shopping? Francesca (Chessie) Grievson knows all about this. She is a dressmaker with a talent for combining style and aesthetics with practicality. Having honed her skills under the guidance of Alice Temperley, she set up on her own as Tephi (her sister's nickname) in2009, with the idea of creating collections that are wearable and luxurious. And now, from a mews house in South Kensington, she offers

a bespoke service that's quick and easy. Need a dress for a wedding in two weeks? No problem. Her trick is to show you her collection and let you customise it for yourself. Here's how it works. First you arrive at her house and drink Lapsang Souchong while having a browse through the rails. Tephi's collections are regularly updated but they retain their signature styles – and while you could choose an exact replica of one of the

YOU CUSTOMISE IT YOURSELF samples, you can just as easily adapt to fit. So on my visit, I start with a fabric – a lovely silk satin that I'm immediately drawn to on a little silver dress. But the dress doesn't work on me, so I move on to another shape, keeping the silver silk in mind. Trying several things, under Chessie's guidance quickly establishes some starting points – I like the neckline on one dress, the hang of another and the sleeves on a third. Can we combine that with the original silver silk? Of course, only that the silk also comes with a big book of colour swatches and once all of those are taken into account it's possible that the blue might even be a smidge nicer. There are lots of decisions to be made, though

they're all fun ones to make. Of course there's bridal wear as well, which probably makes up the majority of Tephi's work, but there are outfits for all occasions in this wardrobe. And it's not exclusively dresses either – the new collection, pictured here, features several variations on the trouser, with a selection of accompanying jackets and coats too. There are a few prints, and a vast selection of colours and

fabrics to work with. My choice in the end? It's a blue silk satin dress with silver contrast piping and blue chiffon sleeves (same blue, different fabric). In just two fittings and just over two weeks, the piece is ready to pick up and wear, beautifully finished and exactly as I'd imagined. FABRICE LIMON having once upon a time dreamt of being a furniture designer, H 38-year-old Fabrice Limon entered into the world of hospitality at a young age. Working for his family business, he developed a passion for great drinks and

flavours. Fabrice is now a brand consultant for premium and luxury spirits brands at his own consultancy firm Scotch&Limon. ABSOLUTELY: Who influences you? FABRICE LIMON: First and foremost, my wife and my father are both huge influences in my life. Beyond that, I’m influenced by anyone who strives to do the best they can in whatever it is they do. In terms of style, draw my influence from the people I observe going about their business in everyday life.

ithin 10 minutes personal trainer owner of Hybrid Wellbeing, W and Liston Wingate-Denys, has established the fact that I am hypermobile. A word that makes me sound like a superhero but actually means that I’m overly flexible and subsequently have an abnormally curved spine. This isn’t really news to me, but it is something that no doctor or fitness instructor has ever picked up on before – and with medical parents and a penchant for some of London’s hottest workouts, that's a surprise. Liston impresses me straight away. During our introductory personal training session, he puts me to the test both physically and mentally with, among other things, speed waking, resistance band sprinting, bicep curling and TRX leg raises. Here is what he obtains: I’m in good shape (able to hold a conversation while speed walking), I’m not lazy (I refuse to count a poor attempt of a move as a rep), and when I stand flat against the wall there is a gigantic gap between my back and the wall. Armed with a series of (difficult) moves to help correct my spine, I leave the gym feeling well worked out and safe in the knowledge that Liston actually has the ability to change my body for the better. u

f you want to guarantee a sneer from a Lycra-clad cycle junkie there is one foolproof strategy – mention electric bikes. Nothing offends their puritan sensibilities more. They mentally file it somewhere between an invalid carriage and a child’s toy. ‘Loser!’ said one cyclo-path to me contemptuously as I wheeled out my new purchase to show off to him – a £2,000 high tech E-bike, the Sparta Ion, a Dutch handcrafted bike that I bought from Justebikes on the Portobello Road. “That’s not a bike, it’s a mobility scooter.” Of course I knew that he was just jealous – the Sparta Ion is a jet black, ultra-cool looking machine – but in the following months, I got my revenge on him and his ilk. The most satisfying of

all – worth the purchase price alone – is sitting quietly at a set of traffic lights with a herd of ‘authentic’ cyclists, poised like greyhounds, then flicking my electrics switch and, as the lights change, heading off smoothly ahead of them as they puff and blow to catch up with me. It’s a deeply enjoyable experience for a 59-yearold man. Nevertheless, the bad reputation of the e-bike remains in place – as an

assisted vehicle for the elderly and infirm. The older age group, particularly outside of London, is by far the largest demographic, and this gives it an image problem. It’s stigmatized as being for the lazy, and suggested that it gives the rider no fitness benefit whatsoever. I can testify to the contrary. I have probably covered more miles in London than any e-biker during the last two years (I have also taken the bike across Dartmoor), and I have lost weight, increased my fitness and had a lot of enjoyment. In others, it visibly mounted, usually on the rack above the back wheel. And the battery driven motor supplies assistance – if you want it. That’s a crucial caveat. A lot of none-bike riders think that you don’t even have to pedal. You absolutely do have to pedal. In fact, the majority of the time, I don’t even have my electrics switched on – the bike is so well made, I cruise nicely without any help and it provides just the same benefit as any manual bike. On top of that, the fact that I know I have an electric friend who will give me a bit of help if I want it means I can extend my range of cycling considerably. Once I wouldn’t have contemplated taking a 16 mile round trip in a day. Now I don’t give it a second thought. The real payoffs come from simply reducing the unpleasant sides of cycling. I have a writing studio in Hampstead which is at the top of a number of steep hills. Depending how motivated I feel, as I struggle up the incline, I can switch on my electric on a level from one to five. Then it feels like you have anything from a stiff breeze to a helpful gale behind you, pushing you forward. This is a nice option to have at the best of times. At the worst of times – for instance when it is pouring down with rain, or there is a freezing wind – it is an absolute godsend. You can switch on the power and get home in half the time and with half the effort. It’s not a speed machine, although it can feel very nifty when you are cruising on top power – but there is a limiter that (by law) keeps your top assisted speed to 16.5 mph. At first I resented this – but now, it ensures that I don’t get too indolent. You can quite easily reach this speed on the flat, and then the manual

kicks in so you have to exercise harder – and that, to my mind, is a good thing. E-bikes have a tiny share of the market in Britain, but that’s changing, as people begin to see the advantages. There are many of them – but few are as profound as watching the faces of ‘real’ cyclists as you overtake them, nonchalantly, without a backward glance. Now who’s the loser? u

FRESH HERB TART R e c i p e b y R oy L e v y of Gail’s Artisan Bakery Serves 8 INGREDIENTS For the pastry: 120g butter, at room temperature • 60g cornflour • 1 egg yolk 2 tbsp water • ½ tsp fine sea salt • 1 tsp caster sugar • 130g plain flour For the filling: 25g butter • 1 onion, thinly sliced • 4 spring onions, finely chopped • 3 garlic cloves, finely sliced • 3 eggs • 100ml crème fraîche, plus extra to serve (optional) • 120ml double cream • ¼ tsp salt • ¼ tsp black pepper • ¼ tsp coriander seeds, lightly toasted and ground • 120g mature cheddar, grated • 2 sprigs of parsley, roughly chopped • 4 sprigs each of tarragon, thyme, oregano, marjoram, and chervil, leaves only, roughly chopped • 2 tbsp snipped chives

METHOD

01 First, make the pastry. In the bowl of a stand mixer fitted with the beater attachment, beat the butter until smooth and soft. Stop the machine, scrape it down, and add the cornflour, egg yolk, water, salt and sugar. Mix again on low speed until a soft paste forms. Stop, scrape and add the flour, then mix slowly until you have a soft dough. Flatten out into a thick disc and wrap in cling film. Chill for at least 2 hours, or overnight. 02 Cut in half and roll one half out on a lightly floured surface to 3mm thick disc. Use it to line a 24cm tart tin and bake blind. Set the baked case aside to cool completely. Reduce the oven temperature to 180C/gas mark 4. 03 To make the filling, melt the butter in a frying pan and cook the onion, spring onions and garlic over a medium heat until very soft – about 10 minutes. Set aside to cool slightly. 04 Whisk together the eggs, crème fraîche, double cream, salt, pepper and coriander. Add the onion mixture and mix well. Stir in all the herbs, then mix in the cheese. Pour into the tart case and bake for 10 minutes, or until very slightly coloured. Reduce the temperature to 170C/gas mark 3 and bake for a further 20-25 minutes. Remove from the oven as soon as it’s completely set. Serve while still warm, perhaps with an extra dollop of crème fraîche. u

owley Leigh is the godfather of London’s restaurant scene. It’s impossible to read anything about him without learning that if he hadn’t opened Kensington Place in 1987, we wouldn’t be where we are now with food. With his beautiful Café Anglais at Whiteleys now sadly closed (bought by mysterious developers) and Leigh himself opening a restaurant in Hong Kong, the only way for west Londoners to get their fix of those signature dishes such as his parmesan custard with anchovy toast is to make them themselves. And now access to recipes and instructions couldn’t be easier. Leigh has found a natural home in the Idler fold, where his six-part history of food takes the form of a filmed cookery course, though it’s about as unlike regular TV cookery as is possible. It happens in real time, with a static camera and no clever editing or extra flourish. Leigh speaks slowly and with the slightly clipped, uber-correct enunciation of a 1940s radio commentator. Making up for the lack of visual interest is Leigh’s languid, informative banter. ‘I want to illustrate how we got where we are with food,’ he opens, in the first class. ‘It is thought that what differentiates man from other animals is speech – but nobody else cooks. I think that’s what distinguishes us.’ This is episode one, which takes us back 50,000 years ago or so to when the UK was inhabited by 'frutarians with boring diets' until the discovery of fire brought early cookery. ‘We were gathers more than hunters. Wild food and foraging, picking bits of herbs out of hedgerows is very fashionable now but I grew up in the countryside for a while and used to cook really

They were the root of the switch from hunter gathering to farming, when we stopped running round throwing spears at things and started to live where our food was.’ Farming leads to rice, and rice to risotto, so Leigh demonstrates a brilliant courgette risotto that uses the

wild food. We used to have a lot of bunny rabbits but now the only way you’re going to get one is if you shoot one, or you know somebody who shoots them. Rabbits are a much under-used resource.’ Yes, Leigh is going to show us how to skin a rabbit. ‘I thought it would be rather fun to show you how to skin a rabbit,’ he says, beginning to pull the fur away from the limp creature. ‘You will observe that it’s rather distressingly simple to rob this sweet animal of his exterior vestments,’ he says. ‘And when we’ve finished we could send the fur to Gwyneth Paltrow to make a hat with’. Naughty. He pulls the fur off casually and snips the tail, reminiscing all the while. ‘It’s something like 35 years since I last did this.’ The second class focuses on fire and cooking – and we learn that a taste for rare meat is a relatively recent thing. ‘In early times people were slightly suspicious of meat and tended to cook it all the way through. The irony is that liking blood in meat isn’t part of a primitive instinct, it’s learnt behaviour and rather decadent, and now of course

PARMESAN CUSTARD & ANCHOVY TOAST INGREDIENTS • 300 ml single cream • 300 ml milk • 100 grams finely grated Parmesan • 4 egg yolks + 2 whole eggs • 20 grams extra Parmesan for dusting • 12 anchovy fillets • 50 grams unsalted butter Lemon juice • Bread for toast METHOD

Bring cream and milk to the boil and pour over Parmesan in a bowl and whisk well. Beat egg yolks and eggs together and whisk in the cream mixture. Pour into cups and seal with film. Cook in a steamer for 25 minutes or until set. Sprinkle with Parmesan and brown under a hot grill. Blend the anchovies and butter with a little lemon juice. Spread on thin slices of bread, sandwich, and toast. Cut into little fingers for dipping.

water from the courgettes to cook the rice. ‘I’m no vegetarian but I think stock is unnecessary for risotto,’ he announces. And then: ‘It is quite labour intensive, stirring. But you can look out of the window or listen to the radio or possibly if it’s getting near lunchtime you could enjoy a sip of the wine you’re using.’ Chapter four is dedicated to the egg because ‘the egg is a very powerful building unit in the lego of cooking.’ Leigh recalls a brilliant omelette before elaborating on the theme of oeufs a la neige or ‘floating islands’. Chapter five is chicken – ‘It is a triumph of evolutionary science that we have produced something so delicious from what was a scrawny and difficult bird. Trouble is, we’ve taken it too far’ – and chapter six is salt – ‘life without salt would be very very boring’ – which results in this recipe (left) for parmesan custard, invaluable for anyone missing Le Café Anglais. Students come away with some memorable pieces of wisdom. For instance: ‘Nowadays the English are so desperate to be correct in their eating habits that if you told them you’re supposed to eat rice raw they would lap it up.’ And ‘I can use a lot of butter because I’m a chef.’ Also: ‘Some people would make their garam masala in a blender but I actually think that a pestle and mortar is a superior piece of technology.’ Food for thought, certainly. u The Idler Academy’s online course, A History of Cooking in Six Chapters With Rowley Leigh, is available to download at idler.co.uk and costs £40.

his fragrant and aromatic version of shepherd’s pie makes a lovely sunsetcoloured spectacle. I use the individual ramekins as a dinner party starter or you can line a muffin tray with pastry. I prefer to do this and my children eat them cold for lunch, with or without ketchup.

hroughout the world the most popular Easter symbol is the lamb. Provenance Village Butcher, winner of the recent UK Best New Butchery of the year award, recommends Cambrian Mountain Lamb. Its premium quality and exceptional flavour comes down to to the traditional way in which the sheep are reared. The meat is produced by the Cambrian Mountain Co-operative, a group of 22 farms in midWales, whose flocks roam and feed freely across miles of open hills and mountains. For a low maintenance yet impressive meal, you can collect a rosemary, garlic and lemon infused leg of lamb, available pre-marinated and vac-packed. The uniform thickness of this cut of meat makes it extremely easy to cook, around

15 minutes total for medium-rare. After cooking, rest your delicious lamb loosely covered in foil for 20 minutes. For something more New Zealand inspired, try this twist on the traditional shepherd's pie: lamb and sweet potato pies with rosemary. u

For the lamb base: 2.5kg lean lamb mince • 6 tbsp olive oil • 6 onions, finely chopped • 6 cloves of garlic, finely chopped • 2 tsp cumin seeds • 2 tsp ground coriander • 1 tsp cinnamon • ½ tsp chilli powder • 50ml sherry • 1 rounded tbsp tomato purée • 600ml lamb or other meat stock For the mash: 2.5kg sweet potatoes, halved • 600ml Greek yogurt • 60g butter METHOD

01 Heat the oil in a large pan and add the onions and garlic. Cook gently for about 20 minutes, until the onions are pale brown. Scoop them out with a slotted spoon then pour the excess fat into a bowl. 02 Brown the mince in the pan, with a little of the fat, working in batches, adding each batch to the cooked onion. When you have finished, discard any excess oil. 03 Return the meat to the pan with the onions and add the spices. Cook for two minutes then add the sherry, scraping the base of the pan. Add the tomato purée, followed by the stock. Simmer for about 40 minutes over a low heat. Season to taste with salt and pepper. 04 Meanwhile, prepare the sweet potatoes. Bake them at 220C/gas mark 7 for 30 minutes, until soft. Remove from the oven, scrape out all the flesh and discard the skins. Mash with the yogurt and season to taste. 05 Either line your muffin tray with puff pastry first or simply spoon the lamb mixture directly into individual ramekins, pile the sweet potato mixture on top and add a sprig of rosemary, cook in a hot oven for 12 minutes and serve with Indian pickles or mango chutney for grown ups or ketchup for the kids. u

New Town W36 is Golborne Road’s most fabulous new opening Wo r d s p e n d l e h a r t e

I

t generated a lot of local excitement when we heard that the people behind Beach Blanket Babylon had taken on the abandoned Golborne Road pub that was last known as the Earl of Portobello and probably last visited with any enthusiasm back in the days of Golborne House. Now the entire building, the only remainder of Southam Street's original Victorian terrace, has been given a stylish makeover and reopened as an impressive townhouse hangout spread over three floors. When we arrive for dinner on Friday night a couple of weeks in, the place is full. The restaurant is on the ground floor and upstairs are a variety of heavily designed nooks and private areas, all

black-walled and cavernous. It feels a bit like a busy house party, an animated crowd giggling as they pass on the narrow stairs. But we're in the restaurant, which is white-tiled and leafy, the space divided with wood and glass partitions that can't help but spark comparisons with the Chiltern Firehouse. It's tightly packed

and we're not spoilt for space, but it all adds up to an intimate, members club feel (without the actual membership). It's a grill house menu – meaty, with an extensive steak list. There's a tasting board for sharing slivers of every type of steak (they age their own beef here). While we're studying it, a vast rack of ribs arrives for the next table. 'I did try to talk you down to the half rack,' says the waitress apologetically, responding to the table's utter shock at the sheer volume of it. Of course, it's a lot of bone, but still a feast. To start, we order a crab and avocado trifle and a sweet and simple dish of ricotta, pickled quince and honeycomb – both are delicate and tasty, a lot gentler than the rib feast. I order a lobster from the grill menu, with garlic and hazelnut butter and fries, which comes looking glorious and tasting sweet and juicy – though the restricted dimensions of the table don't make the lightest work of all the cracking. My partner enjoys a very high-class rib-eye steak with perfect Swiss chard – and later, the waitress walks round with a large apple pie straight from the oven, dishing out generous portions like a true domestic goddess hostess. This is absolutely our new favourite place. u

Advice for students and parents on picking the best kind of holiday tuition before exam season starts

s we head towards the final leg before the countdown to A GCSEs, AS-levels and A2s begin, it is vital that students have a clear revision schedule mapped out. Ideally this should begin now, avoiding the mad, last minute cramming spree. Using constructive criticism received from their mock exams, specific areas of weakness can be identified. If extra tuition is needed this can then be arranged in advance. Doing so helps to ensure that the student has the tutor of their choice, which will likely result in more effective study. Quality over quantity is definitely a cliché that rings true in this instance. There is no point in spending hours poring over books if the student’s main achievement at the end of a day is staring out of the window for several hours or arranging their summer holidays to the minutest detail. So what revision approach should students adopt when? It is far better to combine structured and rigorous study sessions with outdoors study, where possible, and sports to keep both the brain fresh and morale up. And, it goes without saying, a healthy, balanced diet and plenty of sleep are key to an alert mind and prolific memory. Though simple, these tactics are the best methods for students to learn their class material, as efficiently (and as painlessly) as possible.

ometimes great change happens quietly. Such a moment happened a year ago in a corner of south-west London when King’s College School hosted True Grit, a conference on developing emotional resilience in schools. A conference to openly address issues surrounding teenage mental health with representatives from the country’s most elite schools was a first. Within a week of advertising the event tickets were sold out, with nearly 200 leading school head teachers and pastoral heads attending. Highlights included a speech from child psychologist Prof Tanya Byron, Prof Russell Foster’s talk on adolescent sleep and neuroscientist Sarah-Jayne Blakemore shedding some light on the complexities of the teenage brain. The day was a resounding success. As Robert Milne now says: “The wave of public interest and support that surged the True Grit conference along has continued into other schools, professional

development events and the media.” Closer to home, Godolphin & Latymer recently ran a week of ‘resilience training’ for its high-flying girls entitled Challenge Your Limits. And in south-east London, Colfe’s School’s ‘Developing resilient minds’ programme shows that concern for teenage well-being is still uppermost in teachers’ minds. So much so that Dr Nihara Krause, an adolescent psychologist and key speaker at True Grit, has been asked to headline the Headmaster’s Conference deputy heads’ conference in Glasgow. King’s hasn’t stood still either, a few weeks ago it ran a sister conference entitled ‘Caring to Achieve’ and mental health campaigner Ruby Wax making the keynote speech. Why has personal resilience struck such a chord? King’s headmaster Andrew Halls says: “It is partly because we were openly discussing matters that some schools have been very reluctant to address. With an apparent perversity, some adults and children seem to ‘have everything’ – except happiness.” 

T

he mustangs are on the move. Thundering across the Nevadan plains – hooves pounding, flared nostrils snorting, a whirling dust cloud in their wake – these wild horses are running for their lives. Like bestial Bonnie and Clydes, they’re on the run from the government, who in 2008 announced that 30,000 of these horses were to be slaughtered or sold in a bid to control numbers, destined for cruelly crowded corrals at best or the European meatmarket at worst. As a result, one of the most iconic symbols of the Wild West is slowly disappearing, and with it a piece of authentic American history. But there is one place where these horses have found refuge. Created by billionaire animal rights campaigner Madeleine Pickens, Mustang Monument is a luxurious not-for-profit eco-resort situated in the high desert of Nevada. Here you’ll find 1000 of these wild horses, rescued and roaming free on 600,000 acres of rolling desert plains. Believing that the answer to their plight is tourism, Pickens is spreading their story through the visitors who come to stay here and experience the mustangs’ own unique

THIS PLACE is far more THAN JUST YOUR average dude RANCH brand of magic. Yet the resort has faced opposition, with local cattle ranchers contesting the benefits of Picken’s altruism. Seen as an agricultural pest, they argue that the horses threaten their livelihoods and without a natural predator, numbers will become unsustainable. Sabotage attempts have

been made, from wire fences cut to allow unsolicited trespassing on neighbouring lands, to stallions being planted in castrated herds to breech breeding regulations. Local men who work here have even been disowned by their families, such is the intensity of emotion that the ranch provokes. Despite this, Mustang Monument has proved a huge success, and it’s easy to see why. This place is far more than just your average dude ranch – accommodation here takes the form of either luxurious, handpainted teepees or decadently designed cottages. Illustrating the true meaning of glamping, teepees come kitted out in Navajo rugs, huge beds and bundles of cosy faux-fur throws. Pick the teepee painted with running horses and you’ll get to watch the mustangs in flight once again as the sun goes down and the crickets begin to sing. Meanwhile, for those who prefer their creature comforts, the sumptuous safari cottages are decked out in Ralph Lauren interiors and beautiful bathrooms with a tub big enough for two. Days are spent in the saddle, out on horse safaris in search of the herd or hacking over Spruce Mountain to picnic up on the hilltops overlooking the Goshute

It’s eerily quiet as you ride, with nothing but the untamed wilderness around you. Apart from the Mustang Monument team of course, who cruise up in 4x4s to spread out the blankets, plump up the pillows and prepare an alfresco feast for lunch. Here, luxury is never far away. But you don’t have to be an equestrian enthusiast to enjoy all that Mustang Monument has to offer. Resident cowboy Clay Nannini is on hand to teach you how to lasso and take you out on the old, open wagon before breakfast to feed the herd. Rattling down the track behind the two giant draft horses, Pat and Duke, these trips make you feel like you’re starring in an episode of Little House on the Prairie. It’s worth the early start though – lured in by the food, the mustangs come tantalizingly close, allowing you to get as near as humanely possible to these wild animals. It’s easy to waste hours watching them. But for those looking for some more high-octane activities, there’s also rock-

climbing, shooting and off-road buggy rides on offer. You can fire anything from small pistols to large assault rifles on the ranch’s range, where the targets take the shape of various villains – zombies and bandits who each squirt fake blood when you make a hit. Ex-SEAL Monty Heath runs the adrenaline-fuelled rides in the Maverick, an off-road buggy complete with roll cage. Even with seatbelts and crash helmets, it’s still a hair-raising ride as you whizz around the dirt tracks at 70mph, dust flying in your trail as you narrowly avoid rolling. After a long day out on the plains, things taker a slower pace back on the ranch where guests return to a homecooked meal served communal style in one of the dedicated dining teepees. Food is wholesome and hearty – think pumpkin

soups, roast chicken, corn on the cob and cherry crumble to finish. After dinner, roll on over to the saloon bar, take a seat on one of the saddle-turned-stools and enjoy the country tunes crooning over the stereo as the bourbon flows. As the night rolls on and your teepee beckons, take a moment to reflect in one of the wooden armchairs under the twinkling night sky. Out of the silence of the cool desert air comes a distant rumbling rolls as the hooves once again begin to pound across the plain. Diners come from further afield than the ingredients, thanks to the 25 Mile Menu which requires that anything not grown or reared in the Pig’s own kitchen garden must hail from the area. So there’s beef from Frome, chocolate from Shepton Mallet (okay, with some imported help), cheddar from Cheddar, bread from Bath plus honey, oils, fish and more from within striking distance. On site are the eponymous pigs (you can’t miss them. The snoring was impressive on our tour) as well as an extensive vegetable garden, deer, chickens and a corrugated iron smokery, where the kitchen smokes its own salmon and salt, among other things. T

he Greek islands may have been popular with holidaymakers for nighon 50 years, but someone forgot to tell the people responsible for Kefalonia’s only airport. A small building tucked away in the island’s southwest corner, it’s not the most auspicious or well-appointed place to start your visit; fortunately, its small size means that no sooner are you out of the door and in your rental car than you’re leaving it far behind. The real Kefalonia immediately becomes apparent: winding roads, tiny villages, hills and valleys of pine and crumbling stone. And, of course, the light, described by Louis de Bernières (author of the bestselling Captain Corelli’s Mandolin, set on the island) as ‘overpowering’. Forget the cheesy commercialism of Corfu and the whitewashed minimalism of Mykonos; Kefalonia occupies its own special spot

on the spectrum of Greek island life, a spot defined by the rugged earthiness of the landscape, the friendliness of the inhabitants and an appetite for the good life. The other defining factor is plate tectonics, or earthquakes to you and me. Kefalonia has experienced a few (including one in the 1950s that shook almost every building in the island to pieces), and as a result you can’t expect much in the way of historic architecture or level ground. Of course, this only increases the raw romance of the place – the roads torn to gravel and beaches edged with tumbled stone are incredibly picturesque – while serving to emphasise the character and charm of the few spots the great quake left unscathed. Nowhere is this more evident than in Fiskardo, the island’s most chi-chi spot and a regular stop-off for celebs and oligarchs yachting their way around the Ionian Sea. Fiskardo survived the

BROMPTON Brompton is a loose geographic term to describe a patch of West London around the Junction of Cromwell and Brompton Roads but also taking in parts of the Kings Road, the Old Brompton Road and Fulham Road. It most famously houses the Brompton Oratory (after which the eponymous folding bike was named). Despite its wealthy residents, Brompton has retained its reputation as an artistic

his ironic that a type of property built exclusively to house the servants of London’s super wealthy during the 18th and 19th centuries has ended up being the latest and most fashionable type of property that London’s well-heeled want to live in. Mews homes, which were designed to keep the horses and servants who looked after them away from the front of London’s

Victorian mansions, were until recently seen as a second-best choice for today’s wealthy house hunters. But that is no longer so. Yes, they are usually cheaper than the huge houses they back onto but nevertheless they are doing their best to catch up. While a large white stucco Regency mansion in Kensington might fetch £40 million at the moment, the mews houses at its back can achieve up to £15 million. Built in their thousands all over London, mews houses are most commonly found in Mayfair, Marylebone, Knightsbridge, Kensington, Bayswater, Notting Hill and Fitzrovia. They are named after the annual ‘mewing’ or moulting that Falcons go through each year because the buildings in which these birds lived (during the 13th and

14th centuries) later became stables. And the name stuck. “Mews homes are also found in lesser numbers in Battersea and Fulham but not so much in the latter as this area developed at a time when the incomes of even the wealthy could no longer pay for private coaches and coachmen,” James Robinson of estate agent Lurot Brand. But wherever they are found, mews homes have been enjoying a renaissance over the past five or six years. “Above all, buyers like them because they are in quiet, private roads that are often dead ends,” says James Robinson. “Mews residents also usually enjoy a really amazing sense of community. Also, many come with their own garages which, in central London can be a rare and valuable feature.” Such privacy makes them extremely popular with celebrities. There’s a list of over a 100 who have owned or currently live in mews homes including WW2 pilot Douglas Bader, F1 driver James Hunt, Sharon Osbourne, Paula Yates, Sean Bean, Daniel Craig and perhaps the most famous mews house of all, the property where the Profumo affair played out (in Wimpole Mews, Marylebone). But search in London for a mews and you’ll soon discover that ‘mews style’ new homes are almost as numerous as their period counterparts. In recent years developers have realised ‘mews’ and its connotations of bijou luxury can be applied to almost any small new-built townhouse in London – although some do lay them out as recognisable mews streets, but without any links to falconry or servants.

Y

ou might wonder why an apartment within an Art Deco block in Soho might fetch £2.75 million when it’s in an area which was recently called the ‘seedy underbelly’ of London. And that was by one of its fans. Why is it so popular with online house hunters? The property has been viewed nearly 30,000 times online, making it the most frequently viewed even though it’s one of hundreds of apartments for sale over £2.5 million in central London. So what’s going on? Rob Hill, MD of Greater London Properties, says it’s probably because the vendor, the CEO of a huge multinational corporation, recently dropped his asking price by £250,000 and this will have put the property on people’s ‘reduced price properties’ alerts. But the apartment, which features high ceilings and a large roof garden, is also typical of the new kind of upmarket apartment now available on Dean Street and this reflects the changes that Soho’s property market is undergoing. Not so long ago multi-millionaire CEOs were unlikely to have considered it an appropriate place to have a London crash pad and instead would have settled for neighbouring

Mayfair, Knightsbridge or Kensington. But attitudes are changing. Only a few years ago, Soho was best known for its sex shops and hedonist nightclubs which have dominated the area since the 1950s. But under pressure from Westminster Council to licence or close, many of these establishments have chosen the latter and are making way for more conventional retail outlets. The area is gentrifying too radically for some. Stephen Fry recently headed up a Save Soho campaign supported by Benedict Cumberbatch, Pete Townsend and Eddy Izzard to have Soho’s square mile of mostly low-rise Georgian and Victorian houses declared a ‘heritage zone’. And this apartment is in the thick of it. Famous residents and visitors to Dean Street include Mozart, who gave a recital at No.22, while

Admiral Nelson spent the night in a house on the street before the Battle of Trafalgar plus an impoverished Karl Marx lived at both No.28 and No.56. The street also has strong connections to the music industry, the chief of which is Dean Street Studios (at No.59). A litany of artists have recorded songs there from David Bowie to Duran Duran. But for how long will it continue to be a working area as well as a residential one? Now that the sex industry has been largely rooted out it’s becoming better known as a prime property market, helped by the expected marble-cladding of Dean Street’s northern end; Tottenham Court Station is to be torn down to accommodate Crossrail and reborn as a combined tube and rail station plus new offices, a theatre and housing.

grew up in a small village near Chester in the North West of England, so remote that we didn’t really have any neighbours. As a result, it was no surprise that I chose the opposite of this tranquil environment of my upbringing as a destination for my higher education, so a London university it was. I had always had in my mind that I was going to be a DJ so in between lectures, I found a part time job at Ministry of Sound, which eventually turned into a full time one at the end of my studies. However, I did always have doubts of making a long term living out of the occasional DJ performance here and there. I have always had a passion for property; my father worked on the commercial side and from a very early age, used to take me with him on site to hold the end of the tape measure when he was valuing shops, so a career in property seemed like a natural choice. My first job was at an agency that worked the Notting Hill and Kensington patch. As soon as I started working in the borough, I fell in love with the unique feel that the area has to offer, a perfect combination of tradition emphasised by the grand architecture, coupled with a close knit environment of community. After a year, I went on to work in Westminster before moving back to Knightsbridge to work at Harrods. Working at Harrods Estates was a fantastic opportunity to be part of a global brand which is synonymous with quality and service. Being part of the world famous department store completely changed my perception of the high net worth individuals requirements, not only in property but also in art, jewellery and wine.

At Harrods Estates we can go far beyond the estate agent's role, helping with interior design, advise on investing in luxury goods, hiring a private jet, stocking a fridge or arranging a translation from one of the many experienced members of the team in store. I have worked for Harrods Estates for six years and I am delighted to have been appointed to manage the new Kensington Church Street office. I live in the vicinity so I not only have a professional understanding of the area, but also a personal one. Kensington is going through an interesting transition at the moment with a variety of new build developments currently under construction, which offer concierge services and parking such as One Kensington Gardens and Vicarage Gate House. International purchasers are broadening their search for a London home beyond Knightsbridge and this will be a contributing factor with property values in Kensington. We expect that Kensington will see new record prices achieved in 2015, as a result. We are also seeing a change in the buyer demographic in the area as many families are now looking to W8 and the surrounding area, to own either a substantial family home or a lateral apartment. The new office is opening Spring 2015 with a team of six experienced staff who will help provide advice and information on sales, lettings, acquisitions, asset management and property management.
