EDITOR’S LETTER
n the wake of meeting the inspirational Orsola de Castro this month, Absolutely been thinking about upcyling. Reusing materials has got to be the way forward in this age of excess, and with mountains of waste generated by all kinds of industries, making clothes out of surplus materials makes complete sense on all counts. Especially when, as de Castro demonstrates, we’re not talking about clothes that look like they’ve been cobbled together. This woman’s skill lies in making beautiful things out of (what would otherwise be) nothing, and she has gained the respect of the fashion world for it. Read all about her on page 36. Also, more salvage is happening in the garden, where an increasing trend for garden rooms, studios and summerhouses is gaining creative momentum. We meet a man who makes selfcontained garden rooms from reclaimed timber and salvaged materials, another venture that makes complete sense. And meanwhile, in Portobello, a rescued printing press is being given a new lease of life by a creative local entrepreneur; and there are lots more local ideas, people and places in this issue. We hope you enjoy it.

Stay Alive
A new book offers a preview of the V&A’s forthcoming exhibition on 1980s fashion. Absolutely takes a peek

hink 80s and think Katherine Hamnett, Bodymap, John Galliano and Leigh Bowery. ‘Stay alive in 85’ was the slogan and nuclear panic was everywhere. An oversize silhouette, a punk aesthetic, a camp glamour and a militant attitude all co-existed in a variety of looks brought together in a new book on the fashions of the 1980s. Club to Catwalk includes commentary from fashion authorities Wendy Dagworthy and Paul Smith as it traces the looks from the design studios to notorious nightclubs such as Leigh Bowery’s Taboo and Steve Strange’s Blitz, highlighting the decade’s creative interaction between fashion and music. Club to Catwalk: 80s Fashion (V&A Publishing, £19.99) is published this month and supports the V&A exhibition of the same name, which opens on 10 July. 21

RAG TRADER Eco fashion warrior Orsola de Castro is exhibiting her work at Great Western Studios this month. Pendle Harte caught up with her
I
’ve got a career in rubbish collection, really,’ says super-modest Orsola de Castro. Which isn’t really the way the fashion world looks at it. De Castro is an established designer and a highly respected fashion industry figure, albeit an outspoken one who talks about waste and ethics and actually cares. Founder of green label From Somewhere and curator of the Bristish Fashion Council’s Estethica, the hub of the sustainable fashion industry, she is known as ‘the queen of upcycling’ or, in her words, ‘a rubbish collector’. Of course it’s not just any old rubbish. From Somewhere’s fashion is entirely made from surplus fabrics and de Castro designs specifically for the kinds of remnants and remainders she has come to predict will be available. ‘With upcycling, inevitably you have to be a bit imaginative with your combinations. There’s an aesthetic that comes from patchwork and paneling – inevitably we’re using little bits and pieces – and luckily it’s an aesthetic that works well right now.’ It all started at The Cross. With a background in Fine Art, and not really considering herself a fashion person, de Castro was selling textiles at the Holland Park boutique in 1997 when she began mending moth-eaten cashmere sweaters by crocheting around
the holes. Soon The Cross starting selling them as customized jumpers and demand quickly grew, so she moved into customizing all sorts of existing pieces and selling them to boutiques everywhere.
was interesting because at the time, eco fashion didn’t exist, sustainable fashion didn’t exist, recycling didn’t exist and none of the vocabulary was there.’ It wasn’t that she felt fashion was wasteful particularly – though she soon discovered that it was. ‘There were quite a few designers fiddling with vintage in the late 90s – Russell Sage, Preen, Jessica Ogden – and for me, there was a lot of humour in it. It made me laugh that I could approach these amazing boutiques with rubbish and that the more rubbish it was, the more I could sell it for because there was more manual work, so I loved the

I don’t need anybody to be green enough for me. I’m green enough for myself
correlation.’ And then it became ‘a mission. I realized that I could run my own label just using waste forever.’ The design process requires more flexibility this way, of course. ‘I might dream red but can only find blue, so you have to make yourself like it. It’s very challenging but for me the whole issue of design is about finding solutions. I think if you told me there was meters of fabric at my disposal I wouldn’t know what to do with it. For me, it’s about how to make an ugly thing that nobody else wants beautiful.’ And she’s not smug or selfrighteous. Happy to collaborate with companies not known for their green credentials – Tesco and Topshop for instance – shows a realistic approach. ‘I’m not going to sit here and wait for 20 years for someone to be green enough for me. I don’t need anybody to be green enough for me. I’m green enough for myself. Sometimes they
may be using us in order to appear green, but I call it my infiltration.’ A new collection with Topshop is out soon and an unlikely but successful collaboration with Tesco saw de Castro dealing with ‘massive amounts of obsolescence’. From Somewhere had its own shop (in Westbourne Park Road and then in Portobello Road) but thanks to massice rates increases, it has been online only since last year. A new web concept is set to launch this month, which de Castro calls ‘a mixture between the super high-tech and the totally artisan. The site is super high tech but the concept isn’t – the concept is like having your clothes made at a little local boutique.’ This is hard to imagine, but all is set to be revealed soon (fromsomwhere.co.uk). Working with designer Brandy Easter and engineer Jack Kindred-Boothby, there’s a small core collection of pieces that stay very similar. ‘Luckily I tend to love colour and texture which is perfect for right now, ideal for online sales. Bloggers are saying that black is over because it doesn’t pop on the internet. And that couldn’t have suited me more because I respond to colour,’ says de Castro. Her ‘personal journey through wasteland’ – aka an exhibition of her work – goes on show at Great Western Studios from 10-20 June. You get the sense that everything in their world is beautiful and lovely
t’s about keeping it fresh,’ says the willowy, flamehaired Arabella Greenhill soothingly. Then pauses before adding: ‘But not looking like you’re in fancy dress.’ In her candypink jeans and emerald cashmere, she is a walking embodiment of this sentiment – her outfit perfectly pitched for a bright, crisp spring day, stylish but not try-hard. All of which is reassuring, since her job is to advise others on their fashion choices. Likewise her petite, elegantly-clad friend and fellow stylist Susanna, who has the reserved, understated demeanour of a woman who most definitely knows her stuff. Sharing a pot of mint tea with them at Susanna’s impeccable home in Westbourne Park is an oddly calming experience. You get the sense that everything in their world is beautiful and lovely. And unlike some makeover gurus, they don’t seem that bossy, although Arabella concedes she does sometimes have to be ‘firm’ with clients, in order to help them out of a ‘rut’. And let’s face it, most of us have been there at some point – staring into the abyss of our wardrobe as we realise there is nothing to wear that looks on-trend without being mutton-ish, or just plain wrong. Plus there is the weekly onslaught of new trends to keep up with. ‘Most women now are time-poor,’ says Arabella. ‘They don’t have time to trail around Zara or Selfridges or wherever. It’s like: “Where do I begin?” But we can tell you what works in real life. If you’re nervous about prints, wear a printed skirt with a plain top. Spend money on jeans, but a Gap t-shirt can work.’ In fact, she adds, Zara shopping is a personal obsession of hers - along with Green & Black’s chocolate and grey sweatshirts. With all this in mind, the two friends are launching a new venture, TheFabEdit.com. A fashion-andbeauty site that aims to distil trends and provide a definitive edit of what is out there - its catchphrase is: ‘When too much choice is a bad thing’. They will also offer a personal consultation service through the site, and will not run advertising – all tips and advice will be non-partisan. The tone, says Susanna, will be ‘friendly and never bitchy’. And there will be down-to-earth advice, she adds, on ‘where to spend and where to save’, and practical tips, too – keep your nail polish in the fridge, for instance,
or stuff cotton wool in pointy-toed shoes to keep their shape. Both women are devoted Notting Hill-ites – Arabella enjoyed a creative, bohemian childhood here, and the area is in her bones, she says. Susanna loves ‘the village atmosphere, and that old and young mix together so well, and that the market is the main artery through the area. I love walking down Portobello, past all the vintage and flower stalls, and hearing the music blaring out.’ Interestingly, they both lived in New York in the early 90s. As Arabella puts it: ‘It was the only place to go after growing up around here that would take that energy and excitement to the next level.’ They have been at the centre of the fashion industry for years. Arabella was first a model, then a stylist and senior fashion editor at Marie Claire, working with A-listers from Victoria Beckham to Anne Hathaway and Naomi Campbell. It was at Marie Claire that the two women met. Then the magazine’s Beauty and Style director, Susanna is also a stylist who has worked on shoots with an equally glittering list of stars – among them Cate Blanchett and January Jones – and is frequently to be seen on CNN providing red-carpet commentary. She boasts several high-profile private clients (though she is far too discreet to say who). As far as beauty goes, she says: ‘There is just too much product and information out there. I was in the Harrods beauty hall recently and it was a complete sensory overload, like an assault. There’s a lack of quality advice, with all the consultants who are all plastered in make-up pushing their brand’s products with a real hard sell. Our choices will be tried and tested.’ Times have changed since they began their careers. ‘Fashion used to be an exclusive club,’ recalls Arabella. ‘Now catwalk shows are streamed on-line for everyone to see - fashion has become so much more immediate and accessible.’ It’s a brave new world, and they are embracing it - they like the idea of democratising fashion, ‘mixing it up’, as Arabella puts it. They see their role as ‘defining the looks that are relevant now,’ but within reason. ‘Without looking like blogger fodder,’ she adds dryly, with a small shudder. TheFabEdit.com 41

I met Karl Lagerfeld recently. He didn’t say much. I go to fashion parties, book launches and gallery openings. Warner Music threw an amazing party at Tate Modern. Doing the social scene is fun. But ultimately it’s not really creative enough. I enjoy commissioned portraits and I’d like to move into advertising photography. I’m a very creative person. I’m also a nail artist. People book me for hen parties and baby showers. I love painting nails.

CASTING The art of Letterpress is being revived in Portobello Road. Pendle Harte enrolls at Unite and Type for an introduction

etterpress may be outdated as a method of printing, but it still has a lasting presence in language. Ever wondered why letters are ‘upper case’ and ‘lower case’? It’s to do with the cases the type is kept in. And when you are ‘minding your ps and qs’ you are in fact taking care not to confuse two very similar pieces of type. Which is very easily done, as I discover in Portobello Road, where a new shop is dedicated to reviving the Letterpress. Unite and Type is the brainchild of former antiques dealer Gloria Daniel, who founded the Big Tomato Company, which soon grew with its range of slogan mugs (it was a love of the Helvetica font that started it) and other ceramics into a vast enterprise with its own factory in Stoke on Trent and over 300 stockists. This month, inspired by a new-found love of letterpress, she is launching a new service whereby you can design and commission your own ceramics in a variety of fonts and styles through her website. And last year she couldn’t resist buying a collection of old printing equipment (an 1860 Albion press and an 1880 Cropper press as well as a TP48 Adana, plkus lots of wood and metal type, for those who know), so, not really knowing what to do with her aquisitions, she opened Unite and Type . Which is where I am for a course with artist and letterpress expert Mary Kuper, who knows exactly what to do with it all. After her general introduction in typography and fonts, I am faced with a huge drawer full of tiny pieces of type, struggling to break down a brief scrap of poetry into individual characters and drop them in the right order into my composing stick. That’s having counted the characters first, and completed a complex calculation involving the average number of letters per word, a special print measure called the ‘pica’ and the 24-point Bembo we are using. The aim is to print seven lines of verse and it is taking a long time. Of course, all of this could be achieved within minutes on a computer but as everybody knows, nostalgia for traditional methods is on the rise. There is a value in knowing how things are actually made and appreciating them for what they are. Artisan bread, handcrafted furniture, hand-dipped candles. They are all very much part of the romantic ideal. Once I have arranged my verse, letter for letter, and packed it tightly into a frame (called a ‘chase’)– making sure to fill in all gaps with varying sizes of leads – and locked it all into place by tightening with special keys, we’re finally ready for the press. Spreading ink with a palate knife onto a plate, we manoevure the

ABSOLUTELY | LOCA L rollers over it, slot in the paper and we’re ready to print. On the other press we’re trying something more abstract with Gloria’s extensive (though incomplete) collection of large fonts and wooden type blocks. Inspired by Mary’s books on 20th century European graphic design, I am aiming to bundle all my family’s initials in a variety of fonts and sizes to create a stylized poster, though it’s not as easy as it looks (by which I mean as easy as it would be on a computer). Working with different overlapping colours means that everything has to be done separately, and aligning needs to be done unreliably by eye or very carefully with a ruler, working meticulously in millimetres. Results, though, are incredibly pleasing. The joy of pulling the print lever to reveal, after several botched efforts, a near-pristine copy where alignments are in place, ink is even and nothing is backwards. And now that I know where to start, I can return to Unite and Type to make my very own beautiful cards and prints. And so can you. T
atiana Karelina is passionate about hair and has created from scratch a brand and a business centred around the revolutionary Micro Ring hair extention technique. On visit to the United States, Tatiana discovered by a chance a damage free hair extension attachment technique which had yet to make an appearance in the UK. Realising that she could to do it better, Tatiana left her job in the salon and set up an in-house salon using Micro Rings as the sole attachment technique. ‘Micro Rings are small copper cylinders covered in plastic for comfort that range in different colours according to your hair colour. These individual rings are used to attach the hair extensions to wearer’s hair by combining strands of natural hair with the extension hair.’ This is the safest technique on the market
allowing for maximum comfort with no damage. The extensions feel like, behave like and blend with your natural hair. This technique was an immediate hit and within two years Tatiana’s living room could no longer accommodate her growing client list. Opting for a location that echoed the sophistication of the clientele, Tatiana opened her fi rst location on Holland Street in 2009, before outgrowing it and moving to a larger salon on the same street in 2012. The hair used in Tatiana’s salons is ethically sourced from her native Russia. ‘Russian hair is perfectly suited for Western women as it has the same texture. I visit Russia myself several times a year to pick out the best hair possible for our clients.’ Tatiana offers free consultations where extension hair is matched to your natural hair; and if you love the result you can have a same-day fitting, a rare offering in the UK, and one that is a result of the their large inventory of hair. ll sorts of bizarre things can happen to your skin when you’re pregnant. For me, it was increased pigmentation and a general all-over thinning. For others it is random dry patches and rashes. And, probably universally, it is an unwelcome beginning of permanent dark circles under your eyes. Beauty journalist Grace Timothy, author of thepregnantbeautyguide.com concurs. ‘I was so sick during my pregnancy, that I only had about 30 seconds to apply eye makeup before it all became too much. Laura Mercier Caviar Eye Sticks were just the ticket – liner, shadow and highlighter all in one.’ And for those dark circles she really rates Benefit Fake Up Hydrating Concealer – ‘launched since I had my baby and I’m left wishing I’d had while I was pregnant. A traditional cold cream such as Pond’s removes make-up quickly without dehydrating the skin and if you use a hot flannel to wipe it off gives your face a gentle exfoliation at the same time. What appeals to you about Africa? Everything. It’s where it all began, really, Africa. I had no idea of what to expect on my first visit over 20 years ago, its was an amazing assault on the senses. The fabulous colours, cultural richness, space and light was an overwhelming memory that lives with me still. The rich colours of the earth, the scent of the soil after the first rains, the vast skies with amazing cloud formations and colours especially before a rainstorm, the plant and animal life. In spring, the freshest of every hue of green that you can imagine, suddenly bursting forth out of the driest of bark of a tree that you think is lifeless. My life in design started in the fashion world, and I never dreamed in a million years that I would visit or live in Africa. This change of circumstance enabled me eventually to develop the Baker & Gray collection that I have today. Can you tell us about a recent project? My most recent project was adding the finishing touches to a beautiful house in Wiltshire. Taking time, when its available, allows clients to really understand and appreciate how their home is going to work for them in the best possible way. Until one starts living in a space it is very difficult to understand how the natural light and changing seasons affect our living spaces. With furniture, it takes time to decide which existing family treasures to keep and what to get rid of. What’s your best seller? ho doesn’t love the idea of sitting in their own miniature house in the garden? It’s not just old men in their sheds. There are writers in garden offices, designers in garden studios, party people in private garden speakeasys, arty types in workshops and even radio presenters broadcasting from their very own gardens, all over west London. A room of one’s own can take the form of a grown-up wendy house, a high-tech soundproofed recording studio or a green-roofed eco shack. All these things are very possible in your own tiny patch of green. And further benefits are obvious. The extra space might mean you don’t have to move house. You can add value to your home for less than the price of an extension. If you are a business, it is tax-deductible and can save you money on rent and the commute. Ultimately, most people seem to love being in a shed on their own.
Christopher Hodge of Shackadelic has built a shed for a radio presenter, who frequently broadcasts from his own west London garden. Q What sort of rooms are people building in their gardens? A Either an office or a workshop/studio. Two people have asked for a den for their teenagers/20-somethings. You are keen on using reclaimed materials. What sort of things and where do you find them? We mainly use reclaimed materials for the doors and windows. We also use old floorboards for the cladding. The building’s core is made from new sustainable wood/materials. This has to be so as it needs strength and although you can buy timber it is usually in small quantities and of different sizes. We get them from reclamation yards like retruvioius or lasco. I have bought stained glass windows on eBay and even got a bunch of sash windows from a builder who was putting in double glazing in Kensal Green. 67

What kind of budget do we need to build a shack? Anything from ÂŁ8000 to ÂŁ30,000. You could spend even more if you really tried, it depends on the size and finish. If you want oak panelling, lovely floorboards and old French shutters you can creep up to the higher figure.

Under pressure A leading head teacher has condemned ‘hothousing’ children. Are we asking too much of our children too soon? By Amanda Constance
W
e all know the sort, don’t we? Those children for whom the odd ballet, piano or swimming lesson isn’t quite enough. No, little Atticus has a maths and English tutor, plus Kumon, Mandarin and extra French lessons after school; and that’s before drama, violin and flute lessons on a Saturday morning. His parents, pushy, anxious and ever-present, schedule his every waking moment in the pursuit of excellence. They started plotting how to get poor Atticus into St Paul’s the moment the umbilical cord was cut. Now Richard Harman, headmaster of the prestigious Uppingham School in Rutland, has said enough is enough. A few weeks ago, he condemned such pushy parenting saying the current approach ‘may get short-term results but risks longterm damage.’ Harman, who is taking over as leader of the Headmasters and Headmistresses Conference next year, condemned teachers and parents who create a ‘hothouse atmosphere’, adding that ‘the entire social life of some London parents is consumed by whether or not their children are going to get into the school of their choice. They put their children through seven, eight or nine entrance tests. There is paranoia and a pressure that is just unhealthy for parents, as well as their children.’ And the evidence seems to suggest this
hothousing is starting at an increasingly younger age. The latest edition of the Good Schools Guide made headlines this year when it revealed that some turbo-charged London parents have been hoping to get their little darlings a head start by paying for professional interview coaching for their three-year-olds. Such startling news raises the questions: why do parents feel the need to do it and why on earth are pre-preps interviewing prospective pupils? The answer is simple. The best schools in the capital are massively oversubscribed from pre-prep u
Well-meaning parents are often convinced that their offspring are brighter than they really are pwards, so parents are doing everything they can to squeeze that little bit ahead in the race. Yet, ironically, as any sane parent or teacher already knows; you can’t coach a three year-old for an interview. Jo Newman, head of North London Collegiate Junior School – all girls, reception to year six, and which selects 40 four-year-olds from around 200 applicants – told the Good Schools Guide: ‘I always tell parents that if they’re paying to coach three-year-olds, they might as well burn £20 notes. The only useful preparation is to talk to them, play with them and read
them stories.’ Of course, it isn’t wrong to be academically ambitious for your child. But Anthony Seldon, headmaster of Wellington College, says all too often wellmeaning parents are convinced that their offspring are brighter than they really are. This may be because of their own academic ambitions or due to a distorted vision of what their child should achieve, both of which only increase the stress for the child. Seldon’s advice is to listen to the teachers and remember to ‘love our children wisely.’ You only need to go online to see that it is anxiety as much as ambition that is causing us to hothouse our youngsters. The parental blogosphere is full of worries about competition; from a shrinking job market to an ever more crowded world to academically brilliant Chinese children. Harman agrees that difficult economic times have fuelled the panic but his answer is that, ‘instead of focusing on results, schools and parents must help children handle failure, develop different strengths and become resilient people who can make relationships with others, because that is what brings proper happiness in life-long terms.’ Charles Milne, Eton’s tutor for admissions, concurs. He says that when looking for its brightest boys – the socalled King’s Scholars – Eton looks for ‘boys with an original and enquiring mind, with the ability to go beyond the mere 75

The right direction Absolutely talks to David Wellesley Wesley about inspiration, imagination and The Independent Schools Show So, tell us, what exactly made you launch the ISS? It was actually the result of chance encounter with my old school in 2006. That, and an obvious lack of information for parents when choosing the right school for their child. League tables had far too much influence and prospectuses all seemed to say the same thing. I wanted to do something which would change this. How does the ISS help potential parents make their decision? Firstly, ‘The Theatre’ provides lessons in education – we create talks which are of maximum value to parents themselves. Secondly, there’s the ‘Wise Heads’ area, which provides free, independent and impartial advice on all pedagogical matters. Finally, and probably best of all, representatives from each of the 170 exhibiting schools are there for parents to talk with face-to-face. It’s especially good for busy parents, as all your questions can be answered under one roof in as little as a couple of hours.
What was your personal experience of schooling? I started off at The Mall School in Twickenham, before moving to Ashdown House at the age of eight, and The Kings School, Canterbury at thirteen. I loved them all. Personally, I don’t think London is the best place for teenagers, so I’m a firm believer in weekly boarding at that stage. Not only does it let you fit in vast amounts to a school day, but you’re also surrounded by all of your best friends. It’s a great way to nurture a child’s interests, confidence and imagination. How has the show developed in recent years? New for 2013 is the London Schools Pavilion, a selection of leading local nursery schools and pre-preps. In fact, each year we attract a finer selection of school options. For instance, this year Winchester and Eton are coming for the first time. What will be the next big education trend?
‘Teaching in the round’ – that is to say, teaching in smaller groups with far more student-teacher interaction. I’m also expecting to see a reduction in fi nal exam assessments and an increase in continuous assessment, much like the GPA system in the US. And finally, what do you hope parents will take away from a day at ISS? I would hope that they’d fi nd attractive solutions to London’s crazily competitive places. There’s a vast amount of schools on offer, each with a different curriculum and ethos. Consider alternative options – a different route isn’t necessarily a bad one. For example, two siblings may well attend completely different schools and then converge at university level. It’s worth having an open mind. Visiting a real life urban chocolate factory may be a let-down for fans of Roald Dahl, but Pearl Boyd discovers a colourful world of truffles and treats in NW10
A
dmittedly, the place is a bit disappointing looking from the outside. No great gates, no intense aroma and zero sense of mystery. In short, no Willy Wonka. It’s just a factory. I am here to tour a real life chocolate factory and even though I am totally prepared for there to be no river of cocoa or actual squirrels, it’s still all a bit, well, industrial. Once inside, though, I discover that the story behind the place truly is a bit Dahlesque. Chocolatiers are quirky characters in real life as well as in fiction, it seems. This is the factory belonging to Prestat, which has been making chocolate in London since 1902 and here, a short stroll up the Grand Union Canal from Notting Hill, is a factory that produces hundreds of tonnes of chocolate every year. Showing me around is Bill Keeling, who, together with his half-brother Nick Crean, bought the company in 1998 and has made it grow enormously in a very short time. Chocolate, clearly, is recession-proof. Former investment banker Keeling researched the history of Prestat and uncovered a saga that spans over a century and features a theatrical disaster, two sets of brothers, a red velvet curtain and
a South Molton Street basement. I’d love the factory to be full of exotic fairytale figures and incredible edibles but the reality is more health and safety-led, with white-coated and plastichatted workers delicately placing crystallised violets onto thousands of conveyor belt chocolates, and hand-wrapping slabs of chocolate in fiddly tissue. The temperature controls are intriguing – there’s the melt room, for instance, where vast slabs of chocolate, imported from France or Belgium, are simply left alone to sweat in 40 degree heat, and countless fridges where storage has to be carefully controlled and flavours separated. One fridge is labelled ‘no peppermint or rose’, quarantining the most infectious flavours to preserve the more subtle ones. Today, Prestat’s products are sold all over the world, easily identifiable by their brightly coloured boxes, gold blocking and Royal warrant. (You’d expect the Queen to know chocolate – a lifetime of polite company and gifts must lead to a solid appreciation of chocolate in its many varieties – so the fact that she chooses Prestat for her annual (giant) Easter egg, even specifying it in the contract that accompanies her warrant, is a pretty good endorsement.) The story starts in 1902, when

the company was launched by French ex-pat Antoine Dufour and named after his chocolateloving cousin. It was run by his family until 1959 when it was sold to brothers Neville and Maxwell Croft. Maxwell was a former theatre costumier who had a fur business, while Neville was a disappointed playwright (his great work became the shortest play run ever when a crowd of drunken hecklers drowned out the actors on the opening night, leaving the press unable to review the show and leading the producers to simply pull the entire production). Neville abandoned the theatre and devoted himself to Prestat, which he ran with a theatrical flair, appearing with a flourish from behind a red velvet curtain in the South Molton Street shop for important customers such as John Gielgud or Peggy Ashcroft. Prestat received its royal warrant

in 1975, under Neville, but began to lose its way in the 1980s, when it was bought by an investor with little personal interest in it. It was Nick and Bill who revived the brand by hiring Kitty Arden to redesign the packages, creating an easily identifiable bright selection (‘I was struck by how dull most chocolate packaging is – it looks like stationery or talcum powder, and all the colour is in the downmarket products,’ says Bill) and launching new products including the banoffee truffle and the London gin truffle (complete with
space dust for fi zz). Still, the bestseller remains the violet fondant, which is defi nitely not just for grannies, assures Bill. ‘It can’t be – the original Prestat grannies aren’t around any more.’ Incidentally, Prestat does have a Roald Dahl connection, it turns out. In Dahl’s My Uncle Oswald, a love potion is inserted into a Prestat truffle. The Prestat mythology is just as delightful as the actual chocolates themselves, and the story could quite easily be dramatized too. Food for thought next time you open a box. 81

he little sister of El Pirata in Mayfair, this Westbourne Grove eaterie is stylishly and simply decorated. There’s an instantly intimate feel when you walk in, perfectly suited to the tapas style of dining where plates are shared and swapped. My companion and I were led down to the private dining room where we were to experience the new menu, whose concept, as the manager Roberto Mata explains to us, is to contrast very traditional tapas with a more modern take. As such, each course presents two versions of similar dishes: one prepared in a modern fashion and one traditionally, each course matched with a glass of wine. We had already been given an excellent glass of sangria while waiting which was
cleared to give way to a glass of white and our first course. The first two items on the menu were marinated sardines in sherry vinegar with lemon parsley and olive oil (representing the traditional) and escabeche of mackerel, mousse of Idiazabal cheese, pine nuts and a veil of basil gelatine (for the modern). Sardines were served in an adorable faux sardine tin and were incredibly zesty and fresh. The mackerel was more complex and the saltiness of the fish contrasted well with the mild creaminess of the cheese mousse. The wine served turned out to be sherry, which was slightly surprising but not necessarily unpleasant. Hake was next on the menu. Again, the traditional dish was very simple
and comprised hake in salsa verde. The modern was hake pil pil in an emulsion of garlic with mange tout jus and white asparagus puree. For me the modern incarnation of the hake was the clear victor as I adored the asparagus puree and felt the hake had been cooked brilliantly. The third course was my favourite: broken eggs, Iberian ham, potatoes and mushrooms. The flavours combined perfectly, it was like having a delightful mini breakfast and a delicious Tempranillo Rioja accompanied it. I was less enamoured of the modern option, which consisted of an egg poached at a low temperature in Iberian ham consommé. Oxtail was next and it was nearly impossible to choose between modern and traditional as both were cooked to perfection and melted in the mouth, although I particularly enjoyed the coca cola jus that accompanied the modern braised oxtail. The traditional pudding of fruit salad in cream of yoghurt was slightly unremarkable but the modern interpretation made up for it. A Rubik’s cube of fruit salad impregnated in mint topped with popping candy. It’s exactly what it sounds like and it tasted great. By the end my companion and I were full but not stuffed; we had also thoroughly enjoyed the tapas style of dining. Excellente. 83

ysters have been on the earth a long time, long before humans or even dinosaurs and date back to the Palaeozoic period, that’s 540 million years ago.
Oysters have been eaten in Britain since before Roman times and up to the 19th century, oysters were a cheap food and were commonly eaten by the middle class. The ancient Romans prized oysters for being aphrodisiacs. The 18thcentury lover Casanova is said to have eaten 50 oysters for breakfast every morning to make him virile. So are they really aphrodisiacs? Oysters have high zinc content and are rich in amino acids that trigger increased levels of sex hormones, which may have the effect of increasing the libido. Oysters are filter feeders, consuming plankton and organic particles from the water column. An individual oyster is capable of filtering up to 50 gallons of water per day and oyster farms can significantly improve water quality and the health of surrounding waters. Because of this and the fact that no artificial feed inputs are required to raise oysters, oysters are considered one of the most sustainable seafood choices. Many believe you should swallow oysters whole in one go. In fact, you will enjoy them much more and appreciate their subtle flavor if you chew them first. It is often said that oysters can only be eaten when there is an ‘r’ in the month but that is only true of native oysters, pacific or rock oysters (the most common variety in the UK) may be eaten all year round.
THE GINGER PIG SAUSAGE ROLL RECIPE The Ginger Pig sausage roll - makes four huge ones • 850g pork mince • 100g fresh breadcrumbs • 2tsp dried mixed herbs • 1tsp fresh sage, finely chopped • Salt • Freshly ground black pepper • 600g strong white flour plus a little extra to dust • 450g chilled butter • 2tbsp white wine vinegar • 1 egg 1. Place the minced pork in a mixing bowl and add the breadcrumbs, 125ml water, the herbs and season generously with salt and pepper. Mix with your hands until evenly blended. Set aside. 2. Sift the flour into a large bowl. Melt 50g of the butter and mix with a pinch of salt, vinegar and 230ml ice-cold water. Add to the flour and mix to a smooth dough. Place in the refrigerator to chill for 1 hour. 3. Place the remaining butter between two sheets of cling film and roll out to the thickness of your finger. Roll out the pastry to a rectangle just over twice the size of the butter. Place the butter in the middle and wrap by making an envelope with the pastry, totally encasing it. Roll out again to a rectangle the same size as it was before the butter was added, then fold three times, like a letter. Roll out once more, turn 90 degrees and fold three times again. Wrap and chill in the fridge for 1 hour. Repeat the rolling and folding four more times, adding a light dusting of flour each time, and chilling after each repetition. In total, the process should be performed five times. Leave to rest in the fridge overnight. 4. Preheat the oven to 180°C/350°F/ gas mark 4. Roll the pastry out to approximately 41x26cm (16x10in). Work the sausage meat into an even, long roll and place along the length of the pastry. Brush the exposed pastry with egg, then roll over and crimp the join together with a fork. Cut into 4 sausage rolls. Brush the outside with egg, place on a baking sheet and cook for 50 minutes.

They are high in Omega 3 fatty acids, vitamins A, B, C & D, high in zinc and protein with only 110 calories per dozen. To get the most of their nutritious contents, go raw. 86

Tales of the Orient From Singapore to Bangkok, Harriet Compston takes a trip back in time aboard the glamorous Eastern & Oriental Express
A
n experience so luxurious you almost can’t believe it’s true. Timeless and elegant, this is a grande dame whose journeys are staggeringly good – and totally spectacular. The Fable of the Hills is the latest extravaganza from the Orient Express and, what a triumph it is. Starting in Singapore, it’s a magical seven-day, sixnight trip through Malaysia, past buzzing cities, tea plantations and royal palaces, before emerging in Bangkok. A stay in the wedding-cake-white Raffles – whose namesake founded Singapore – kicks off the enthralling adventure. A perpetual haven, the feel is romantic colonial: traditional afternoon tea, lots of pretty chandeliers, fourposters, marble… yet it’s not stuck in a time warp. This is a place bang up-todate with Louis Vuitton and Tiffany & Co lining the courtyards. There are four restaurants, which cover any cuisine you can possibly imagine – ask for the legendary Singapore Sling, a lethal cocktail and another example of the hotel’s excellence. Even check-in for
the Eastern & Oriental Express is done in one of their reception rooms before you’re whisked off to the station. The storybook train is just what you imagine and more. Glistening in the Asian sun, lashings of green and cream decorate the 22 carriages. It looks so classic that you expect Poirot to come round the corner any second. He would have approved of the dress code too – relaxed refinement. No jeans or trainers, people! The imperial elegance (and the colour scheme) continues inside. Every wall is decorated in elm, cherry, teak and rosewood. Cabins are two person, postage stamp size but it doesn’t matter. Beds transform into upholstered sofas while nifty design tricks provide bucket loads of storage (even your suitcase is swallowed up). There’s a sparkling ensuite bathroom to boot with Bulgari products and a power shower. The spirit of Agatha Christie remains: the slick making up of beds, the pushing of bells to summon drinks, the whisperings in the corridor, the knock on the door by your personal butler (the smiley Prochak is a favourite). Venture out of your newfound bedroom, down the thick carpeted
corridors and there are plenty of places to relax: the saloon, library, bar, and the breezy observation carriage. There’s also neither reception nor wifi – basically no modern distractions whatsoever. The food is wonderful. Head Chef Yannis Martineau is a whizz in the kitchen – think beautifully presented Grilled Snowfish Steak accompanied by Teppanyaki of Vegetables in a Vermouth and Soya Sauce. Breakfast and afternoon tea are served in your room. Lunch and dinner (a dressy affair) boast umpteen courses and take place in the dining car with its archetypal gold lamps and brass overhead racks. Drinks and canapés are served beforehand so you can get to know your fellow guests (a fascinating mix of avid travellers, anniversary couples, siblings, best friends et al). Days are filled with incredible adventures (there are several options each day). Beginning with the crossing of The Straits of Johor into Malaysia, the train snakes its way to the first stop – the capital city of Kuala Lumpur. An industrial hotspot, sprawling factories squeeze in amongst the mosques, bazaars and occasional British beauty (the cricket ground is very English). 91

Having climbed past massive banana trees and luscious vegetation, a cuppa awaits in the Cameron Highlands. A tapestry of tea plantations, it’s mindblowingly scenic with strawberry farms and flower galleries lying prettily by the wayside. This beauty spot is also home to one of Malaysia’s greatest mysteries: the disappearance of ‘silk king’ Jim Thompson 50 years ago. Yes, in true voyeur fashion, you can follow in his footsteps through the jungle. The vibrant island of Penang serves as the highlight of the trip. Founded in 1786 by Englishman Captain Francis Light, its colonial capital Georgetown radiates colour with its rich blend of Chinese, Malay and Indian cultures. Hair-raising trishaws speed around in their bossy way as the sweltering streets heave with people, market stalls and places of worship. Dinner is hawker food – super delicious (the fish is excellent), cheap as chips and served in an outdoor eating area as buzzy as a honeypot. As the train rattles on, the Malaysian jungle gives way to the open Thai countryside. The thatched houses on stilts remain but bright green rice paddies now emerge, peppered with straw-hatted farm workers steering water buffalos through the fields. The wildlife part of the expedition has now begun. Decamp to the Monkey Training College at Surat Thani where its skillful ‘students’ are taught how to choose a ripe coconut and collect them from the trees. Or visit an elephant camp and jump on a ride with a mahout. The River Kwai is the last stop of the
journey – and a very moving one. After a tour on a local barge, the Thailand-Burma Railway Museum gives a horrific insight into the atrocities inflicted on the POWs working on the project. The Don Rak War Cemetery next door provides a raw testimony to the 6,982 soldiers who died. As The Fable of the Hills comes to a close and you draw into Bangkok, you don’t want to leave. Living on a train is actually rather nice. In a surreal way, it has started to feel like home. However, the madness of the city soon awakens you from any slump of sorrow. As does your beautiful bed for the night – the Mandarin
Oriental. A cocoon of comfort towering above the slums, the rooms are fresh with clean lines and boast a view which will take your breath away. The numerous restaurants are fantastic – choose Sala Rim Naam (a hop across the water) or hang out in the author’s lounge, where Somerset Maugham, Tennessee Williams, Joseph Conrad, and many other literati have held court. Bangkok’s a whirlwind but worth a few days. Head to the Grand Palace, which is so lined with gold that you are almost blinded. Or visit Jim Thompson’s house, made up of six antique Thai houses – so beautiful that you want to change your décor back home immediately. But this is also a city of contrasts: In amongst these landmarks lies the ‘forgotten people’ and the watery slums they live in – shocking and a stark reminder of the opulence the Orient Express lavishes upon you. It’s hard heading home. This is an experience you know that you’re unlikely ever to repeat. But in the everwise words of Monsieur Poirot: ‘Life is like a train, Mademoiselle. It goes on.’ Prices start at £5,700 per person for ‘Fables of Hills’ six-night journey in 2013 aboard the Eastern & Oriental Express, based on double occupancy in a State Cabin and includes all meals and tours. THE GARDEN
The garden at the Rectory Hotel is no afterthought. Flowers line the borders and dogs and children are free to play on the grass while adults sip cool drinks at one of the nearby tables. In one corner, a ‘secret garden’ style gate leads to a discreetly hidden (and thus all the more magical) extra: a perfect blue swimming pool. Here you can bathe and soak up the sun away from prying eyes – and when you’re fully bronzed? Take a walk around the front lawns, which are dotted with playful sculptures and works of art, and which look out over the village of Crudwell – a place so pretty that you’d be forgiven for thinking that you’d stepped into The Darling Buds of May.

The 12 bedrooms have been individually designed, but all are large and elegantly furnished with a mixture of contemporary pieces and antiques. Our bed was an imposing four-poster that nonetheless left ample space for our dog to frolic in front of the fireplace. The bathroom was massive, a gloriously airy space boasting dual sinks and a classic white and chrome colour scheme. Our views were of the garden, where honey-bees tumbled among the late-summer blooms and songbirds stopped to drink from the pretty pond. All in all, a soothing and comfortable haven from city life.
The Rectory is an ideal rural retreat, an old country house brimming with books, nooks and English charm. Its contemporary take on classic Cotswolds style means you can enjoy all the little luxuries of a modern hotel stay (including in-room health and beauty therapies) while reconnecting to a gentler pace of life. Visit during summer: the house’s beautiful gardens and pool are a blessing on a sunny day. A stay here is like a trip into the idyllic, sun-hazy houses at the heart of so many 20th century children’s novels: enchanting.
THE RESTAURANT
On the ground floor of the Rectory, leading out to the garden, sits a real foodie-magnet: the Dining Room. Lucky guests can enjoy homemade breakfast and supper here, all prepared under the direction of head chef Peter Fairclough. The menu focuses on local, organic and foraged produce, and food can be enjoyed in your room as well as in the restaurant itself. Guests can also head a hundred feet over the road to the wonderfully cosy Potting Shed pub, which shares its owners with the hotel. The menu there is geared more towards informal pub dining – but is no less delicious for it.

The Rectory is situated three miles from Kemble Station, which is 70 minutes by train from London Paddington. Driving is very easy and the lawn is also large enough for helicopter landings too.

Instead, property prices in Holland Park increased by 2.5% in March alone, and buyer activity in April and May were extremely impressive with demand exceeding supply. Typically, prices here can vary quite a bit but you’re usually looking at prices in the region of £450 to £650 per week for a one bedroom flat while two bedroom properties can range from between £500 and going up to £2000 per week depending on the size and finish.”

’ve been with Winkworth since the beginning. Not c.1835 I should say, but since the beginning of our fledgling new office in Willesden Green which opened its doors at 90 Walm Lane in January 2003. Back then you really would never have predicted the massive upturn in the areas around Willesden and Kensal, but there were signs that Queens Park was starting to attract attention. I was a lettings negotiator straight out of university and really had to stay sharp as I learnt the trade, but I always loved the personal side of the job. Delivering results for many different people from all walks of life has always been the driving force that has made me love this industry. From lettings negotiator I moved into sales, then to sales manager and valuer. In 2008 during the downturn, a business partner and I bought out the franchise. Since then the company has gone from strength to strength, resulting in us opening our sister office this year in Kensal Rise and Queens Park where I live. Th roughout this time we have had a distinct advantage over our competition. Because we are a franchise of local business owners we understand our communities and their needs, whist still being able to offer a London wide marketing force and multiple offices working on individual properties. James Kerman and I have worked together on many properties in the area giving those customers the local knowledge they need with a wider coverage for exposure. My Great Grandfather ran an upholstery business on Westbourne Grove and my Grandparents owned a dry cleaning business on Latimer Road, so my local connections made it an easy decision to get into the North Kensington property business. After plying my trade as a negotiator, then a sales manager for several years, the opportunity arose to buy the North Kensington franchise area in 2007. It was clear back then that the area had a vast amount of growth potential and with the newly established Winkworth office in Willesden Green, we covered an incredibly diverse area from Notting Hill to Willesden and everything in-between. North Kensington has seen a vast change in fortunes in the last decade with the help of Portobello Road, Golborne Road and some high profile residents. Areas such as Queens Park and The Avenues have become the natural step for Notting Hill residents looking for family houses and the recent opening of the office in Kensal Rise has formed a vital link between the two territories.
