lowers are flavour of the month. It’s May, which of course means the Chelsea Flower Show, which in celebrating 100 years is generating more interest outside the flower world than usual. A flower feeling is spreading throughout London, with a flower-arranging craze about to erupt in the unlikeliest places. East London’s hipster Flower Appreciation Society are coming west to work with Anthropologie, while Kensal Rise’s flower queen Vic Brotherson – the woman behind Scarlet & Violet – will be fi lling Kensington Park Road’s fabulous Couverture boutique with flora and hosting workshops in the fi ne art of the bouquet. Why not put a flower in your hair and join the movement? On a less floral note, this issue of Absolutely includes a spotlight on Scandinavian food, a big focus on swimwear, a tour of one of west London’s most unusual homes and words of wisdom from the eternally fashionable Barbara Hulanicki. Human experiences... issues of the contemporary society: its progress, shortcomings, gender issues and, most of all, the human mind. What first drew you to paint? Its colours and textures. It was a natural progression for me to move from pencil drawing to paint. One day a lovely friend of mine offered to sell me a set of his oil paints, and from there it all took off.
which I explore femininity/masculinity in the contemporary world. I have also decided to go beyond canvas and draw on other media: photography, film, interior design, music and finally live performance. It is going to be one big surprise, and I feel very excited about this project. The team which I managed to gather I could not even dream of working with more talented, interesting, generous people. Beverley Knowles, the curator I’m working with for the first time, I admire very much... her presence and involvement has informed and reassured some of my choices...
What other artists do you admire? There are so many, but for this exhibition, I can very much relate to Frida Kahlo, Ghada Amer, Joseph Beuys, Gerhard Richter and Sarah Lucas, whose sense of humour always puts a big smile on my face.
How long have you lived in Notting Hill and why do you like it? I moved here last year. I like its relaxed atmosphere, I love the market, the great variety of people and most of all, the peacefulness and the down-to-earth unpretentiousness of my neighbourhood.

Most inspiring experience? I used to live in Ibiza and I always come back from a trip there full of inspiration. I am also lucky to have met and worked with so many inspiring people. Starting Merchant Archive five years ago has made everyday an inspiration. I feel very lucky. Favorite piece of clothing ever? It has to be this 1920s Piano jumpsuit.

While the world can’t get enough of Biba, Barbara Hulanicki is always looking for the next thing. Pendle Harte meets her
B
arbara Hulanicki is not one for nostalgia. She doesn’t like to look back. But for her there’s no escape from her past – the Brighton Museum recently hosted an exhibition dedicated to Biba and next year, the V&A is planning a book to mark the brand’s 50th birthday. Interest in Biba seems to grow and grow, to Hulanicki’s amazement, which is one of the reasons she likes living in America, where nobody cares. ‘In the States yesterday is like a dead dog,’ she says. ‘Here, everybody loves the past.’ Hulanicki opens the door to me in her trademark head-to-toe black: black sequined Uggs, permanent dark glasses, a black manicure, big black rings. She may live in Miami Beach but you’d never catch her in a Floridian fluoro playsuit. Black is and has been her look for as long as anybody can remember. She’s tanned and blonde, slim and fit – looking nowhere near her actual age (mid70s). When in London, she stays with an old friend from their Biba days in a big house in North Kensington and this time, she’s brought a torch and has plans to search the attic, because what’s left of the Biba stuff is mostly up there, and the V&A wants things that nobody has seen. Biba, as everybody knows, was the original retail lifestyle concept,
launched in Kensington in 1964 and changing the world of shopping forever. Hulanicki has been credited with inventing throwaway fashion and creating clothes that young people actually wanted to wear, a then revolutionary move in a high street populated mostly by Kensington old ladies in tidy hats. Her store started out as mail order, then outgrew small shops in Abingdon Road and Kensington Church Street before taking on the old Derry and Toms building as Big Biba – but instead of world domination, the next step was a corporate takeover which killed its spirit and resulted in Hulanicki losing the licence to her Biba brand, named after her sister and now owned by ‘a man in LA’. ‘It’s a messy situation,’ she says now. ‘And very painful at the time.’ Throughout the 1980s, Biba was forgotten by a generation that hated anything to do with the 1960s and then, during the 1990s, ‘suddenly it took off.’ It’s not that she hates talking about the past, it’s more that she doesn’t really care that much any more. ‘I don’t like looking back.’ Anyway, she is so busy with all her current projects that there are lots of other things to talk about. has mostly worked as an interior designer from a studio in Miami Beach, notably for Chris Blackwell on his Caribbean resorts and now she also does ‘anything that anybody asks me. If they’re nice.’ She loves collaborations and has designed her own ranges for George at Asda, Topshop, Habitat, Graham and Brown wallpaper, Chesney’s fireplaces and others. ‘It’s like a busman’s holiday. You do your bit then you hand it over and from there it’s their problem.’ Even now she has no desire to slow down. ‘It’s very nice now,’ she smiles. This month she’s launching a new collection of t-shirts and scarves printed with her own illustrations under the label Icon Club, as well as a new book, Seamless, designed by Hulanicki herself as a scrapbook of her design life. Icon Club will be the first range of clothes she’s done not under license to anyone since Biba, though she’s very wary of getting involved in any production issues. ‘You can’t go that wrong with a t-shirt. We’re definitely avoiding challenges. There will be simple patterns with no seams – black and white stretch jersey fabrics and silk scarves. Easy!’ Like Biba’s collections, everything will be made in London and aimed at teenagers (I love them! They’re so intense about clothes. Probably because I never had a daughter.’) The book spans all her phases – from slushy colours and tight sleeves for Biba to stylish contemporary Miami interiors via candy colours and beach glamour for Chris Blackwell’s island resorts and cheerful prints for George at Asda – with her own photography and illustrations, and accompanied by quotes and mini essays from friends including Twiggy,

Andrew Logan, Molly Parkin and others. As a scrapbook, it’s a paper record of everything that Hulanicki is reluctant to trust to the digital world. ‘I’ve got stacks and stacks of stuff and I worry it’ll disappear of the computer thing,’ she says, and then whispers: ‘I hate technology.’ The book is also a solution to the problem of ‘design waste’ – where ‘you give them 20 and they choose five and the rest is left over.’ Interior design clients can be tricky, says Hulanicki, especially the very rich ones, who she might even turn down altogether. ‘You can never finish the job because they’ve got too much money. It can go on for years! They’ll come back from Europe and suddenly want everything to be while when you’ve been working in colour.’ Despite finding everybody’s relentless interest in Biba mildly baffling, Hulanicki is happy enough to humour us. As I leave, she’s off to the attic to uncover some Biba gems that have been there for over 20 years, hoping to find something to impress the V&A. We’ll have to wait until September 2014 to find out. ult concept store Couverture and favourite London florist Scarlet & Violet have teamed up to create a floral pop-up shop with a difference. Throughout the week of Chelsea Flower Show (21-25 May) traditional English flowers with a vintage feel will fi ll the Couverture store with colour and fragrance. Alongside the floral arrangements, there will be the chance to buy bespoke vases from renowned London ceramicist Jacqui Roche. Commissioned by Couverture founder and owner Emily Dyson, the vases have been created by hand in natural ceramics with accents of gold: a tribute to the gold medals that will be distributed at Chelsea Flower Show.
On Thursday 23 May, Scarlet & Violet founder and florist to the stars Vic Brotherson will be in store to give a series of flower arranging demonstrations. There will be three classes throughout the day at 10am, 12pm and 2pm offering the chance to watch Vic create her distinctive bouquets and to ask questions about floristry. STEP 1: Select flowers that are fine in stem yet full in flower, such as hydrangea or roses, as they are much easier to handle. Rounded head shapes work together much better than a mix of rounds and spires. The magic will come with the fillers, in this case wax flower, astrantia and foliage. Chop all the stems to a manageable length (c.30cm) and clear them of thorns, leaves and painful nodules at least 15cm from the stem base. Lay out the prepared flowers on a clear surface so they are easy to select.

HOW TO MAKE A HAND-TIED BUNCH, SCARLET AND VIOLET STYLE
STEP 2: Begin by holding one of the leading flowers in your left hand and then, using your right, add from the flowers and foliage on the table. (Reverse if left-handed.) The flowers are held in place in your palm with your thumb and forefinger; the other fingers grip

in and release as more flowers are added. Every third stem or so, turn the bunch using your right hand. Keep all the stems facing the same direction; as they are added the twist will become apparent. As each stem is added, slightly drop the height so as to get a lovely rounded shape. STEP 3: Finish with the hardiest stems, protecting any softer stems so that the string
STEP 4: Trim the stems to fit your container. Test first – you can always cut shorter! The stems should touch the base of the container and the shape of the bunch should start at the neck. ‘I
only really got to know myself at 40,’ says Kay Montano, then laughs. ‘I know that sounds a bit LA, but it’s just how I feel.’ Now aged 46, she is one of the UK’s top make-up artists, has worked with most of the world’s best-known photographers, supermodels and Hollywood stars and is a brand ambassador for Chanel cosmetics. Unusually in her industry, she is also an enthusiastically outspoken activist. She regularly tweets ‘but not about make up’, preferring to share her inspirations or raise awareness about events such as the recent One Billion Rising campaign opposing violence against women. This morning, as she sits at her kitchen table in Kensal Rise, her black pug Quincy sitting devotedly on her lap, she’s on a roll. ‘Some women say your 40s are a cliff edge, and that you lose your currency. But I think that a woman who doesn’t care what people think is very powerful.’ Her ‘thirst for rock ‘n’ roll glamour’ began early, and she has fond memories of west London in the 1970s – its social and cultural mix gave her a ‘head start’ in life, she says. She loves Notting Hill’s rich heritage, encompassing Marley, Hendrix and the Clash. ‘It’s where my many lives collide – from my mis-spent youth on,’ she laughs. Having started as a make-up artist at 16, in her 20s she became a protégé of styling guru, the late Ray Petri. A turning point came when she was booked to work on the Calvin Klein Obsession campaign in the early 90s with
photographer Mario Sorrenti and his then girlfriend Kate Moss. The work came flooding in, and she moved to New York, where she was soon working with photography legends such as Steven Meisel, Helmut Newton and Bruce Weber. For 10 years, she was based there, regularly working for US Vogue, specifically requested by Grace Coddington, travelling to shoots in far-flung places – a round trip to Timbuktu was the norm. Sounds glamorous. ‘But pressurised,’ she says. ‘I missed home, and I was living a life that was making me miserable.’ Then in the late 1990s, the film and fashion worlds began to cross-pollinate, and increasingly she was being requested by the movie
She regularly tweets ‘but not about make up’ A-list – Nicole Kidman, Salma Hayek, Jennifer Connolly, Cameron Diaz. ‘That was my trump card, and I didn’t need to be in New York – I could do it from anywhere.’ Back in her beloved west London for several years now, she chats happily about her preferred hang outs - she feels ‘completely at home’ at the Cow, loves the vibe at the Rum Kitchen on All Saints Road, ‘one part of Notting Hill that’s still not “ethnically cleansed,”’ as she puts it. She shops frequently in Portobello and at make-up mecca Screen Face. The Gathering Goddess on Westbourne Park Road is a regular haunt – her friend Thandie Newton wears
dresses from there to premieres, she says. ‘They do timeless, rock ‘n’ roll princess clothes.’ Today she is as busy as ever, continues to work with big names, notably Bruce Weber, represents Chanel cosmetics, is beauty director of Lula magazine, and contributes to theconverstion.tv and getthegloss. com. She also works with Spring Creative, the agency founded by Vogue’s former creative director Robin Derrick, and on frequent shoots for Harpers Bazaar. ‘Social media has been incredibly liberating – it’s the first time in my career that I completely know who I am creatively.’ A quick glance at her own website or her Pinterest site shows her eclectic influences – from Cecil Beaton to Jerry Hall. ‘She was my icon as a teenager,’ says Montano. ‘So tough and womanly.’ Of all the supermodels she’s worked with, though, the most inspiring is Christy Turlington. ‘All along she had a brain and a personality. ‘ She dismisses the old-school line that make-up is anti-feminist and that we wear it just to please men or to hide behind. ‘Why should a woman not look beautiful? It’s not about being insecure – I wear it when I’m happy.’ So what are her make-up tips for the spring? ‘Bold colours - for lips, red and raspberry, jade for the eyes. But essentially, do what feels right for you.’ And the biggest lesson she’s learnt so far? ‘Rich, beautiful people aren’t necessarily happier than anyone else – that’s a myth. I
admit it. I’m a sucker for a fad diet. Atkins, South Beach, blah blah blah... For some reason, the traditional route of joining a gym never really appealed, until I was offered a six-week trial at the Westbourne Grove branch of fitness emporium, BodyWorksWest. My preconceived idea of a high-profile gym being full to the brim of toned, lithe 20-somethings barely breaking a sweat, while I strained to tie the laces on my bought-especially gym shoes was, thankfully, completely unfounded. I was introduced to Andre, my personal trainer, who began our proceedings with an informative and non-scary run-down of the uses and benefits of each machine, weight and class that was available. The completely relaxed atmosphere got me genuinely curious about exercising in a way that seemed completely out of my league, and even made me forget about the emergency Snickers that was hiding in my locker. With a main gymnasium area separated into two levels, packed with a variety of equipment that doesn’t pack a fear-fuelled
horror of usage for the everyday person who, say, may have trouble operating their microwave, I was instructed on the most suitable and realistic ways to reach my personal targets and stay motivated. So far, so surprising, not least when I discovered that my new passion in life is boxing training. I confess, the idea of donning huge padded gloves and beating bosses/boyfriends to a pulp had crossed my mind once or twice, but I never
actually thought I’d enjoy floating like a butterfly and stinging like a bee in reality quite so much. (FYI, aforementioned bosses/boyfriends currently remain intact and un-pulped.). Another part of my membership included meetings with Jackie Lynch, Bodyworks’ in-house nutritionist who trained for four years at the Institute of Optimum Nutrition. When discussing my diet (and finally confessing my lifelong Haribo addiction), I discovered that, joy of joys, I wasn’t actually eating enough, resulting in an imbalance of sleep, mood, skin quality and energy levels. In conclusion, I am now a converted gym-bunny. BodyWorksWest and its fantastic team are ready and waiting to change the opinions of those afraid to get on a crosstrainer and dedicate time and effort to an ultimately enjoyable mode of exercise, weight loss and fitness. The insider Arabella Preston’s tips for bronzed skin
I
t’s that time of year when suddenly pale, wan-looking skin starts to emerge from opaque tights and haphazard layers of clothing. In me, this usually induces a blind panic and a call to London’s tan guru, James Read. Tanner to the stars and the capital’s glitterati, Read has his own brilliant range of self-tan products too. ‘Having a tan adds definition to your body, making you look toned,’ he explains. ‘My tan icon has to be Farrah Fawcett. She defines tan to me – that iconic poster with her wearing that red swimsuit is the biggest-selling poster of all time.’ The success or failure of your self-tan is all down to the preparation of your skin. Product applied to dry, rough skin will result in a patchy, uneven finish. James recommends exfoliating 48 hours before tanning and waxing or shaving 24 hours before, then moisturising any dry areas, making sure to include your hands, knees, elbows feet and ankles. James always uses a tanning mitt on clients and these are now almost always sold or included with self-tan products. They give the most uniform fi nish and also stop the palms of your hands becoming streaked. ‘With the hands, use excess product from the arms and work it down to the hands. Don’t wash your hands for eight hours. This will stop you getting white hands,’ he advises. A lovely scented body oil is the perfect way to finish off a tan once your colour has had time to develop fully. Rubbed into shins and collarbones, it will create that just-stepped-off-the-private-jet look in a jiffy.

A TALENT TO AMUSE Familiar to viewers of Grand Designs, Ian Hogarth and Claire Farrow’s unusual Kensington mews house is a multi-coloured house of fun. Pearl Boyd takes a tour
M
ost family houses don’t feature the following: an underlit dancefloor, a DJ booth, colour-changing bathtubs or a teenager’s bedroom inspired by Manchester’s old Hacienda. Nor do they have enough solar panels to make them self-sufficient, a carp pond or a sauna, and certainly not a bullet-proof door. Especially not when they’re built on a tight, Victorian mews in Kensington. But this house does – though not that you’d know to look at it. It’s called the Hidden House because on entering the mews, you’d never even know that it was there, let alone guess that
it spanned 2,500 square feet and housed all of the above as well as four bedrooms, a large garden and a sunken cinema area. Built by architect Ian Hogarth and his wife Claire Farrow, this house featured on Grand Designs and described by Kevin McCloud as a ‘madcap multi-coloured house of fun’ – and last September’s Open House Day saw 1000 people queuing in the rain to visit it. Standing outside the front door, I still have no idea what to expect. Claire – who cofounded Hogarth Architects with her architect husband Ian in 2000 – invites me in and explains that this is her dream house, incorporating everything

It’s called the Hidden House because on entering the mews, you’d never even know that it was there, let alone guess that it spanned 2,500 square feet
that each member of the family wanted. ‘Every architect wants to build their own house,’ she enthuses, though building the house was no mean feat, even though it was done remarkably quickly given the huge constraints – access exclusively down a narrow residential mews, for instance, and strong neighbour resistance, plus numerous planning and budget constraints. ‘What we wanted was four bedrooms and a garden and a disco,’ says Claire. They certainly got all those things. We tour the house, starting in the kitchen, which takes over the entire ground floor and overlooks the railway at the back through a long slim, train-shaped window. ‘Lots of people can’t believe that we’re happy to live this close to the railway, but we love it,’ says Claire – and the whooshing
train, unobtrusive behind heavy glazing, becomes a visual feature both here and upstairs. Clever kitchen features include a breakfast bar that slides in and out to cover an electric hob, and cupboards that hide all the necessities including ovens and sink, so that it needn’t actually look like a kitchen at all. As McCloud says: ‘Ian is a master of illusion.’ Up a narrow staircase to the first floor that houses two children’s bedrooms: his based on the Hacienda with a shiny metal ceiling, yellow and black walls and huge matching audiovisual equipment that screams teenage boy; and hers serenely white with colour-changing lights and a curved, photo studiostyle edge in place of a skirting board. Up another staircase and down a confusing corridor with mirrors and a Bridget Rileyeffect striped carpet (very good for your balance, according to Claire, though it doesn’t feel that way) to a third bedroom, dubbed the ‘train room’ on account of the views, with a bathtub lit by more colour-changing lights (‘you can’t tell in daylight but if you’re cycling down the street at the back at night you get the full light show,’ says Claire). So far, the dimensions of the place are fairly tight, but going back downstairs and into the basement, things suddenly grow. More than half of the floor space in this house is underground and it’s here in the basement that the house’s real character shines through. There’s a vast living area with a sunken sitting room dominated by a large mirrored artwork blaring out the colourful line ‘I just can’t take it any more’ and a discreet cinema screen. 61

And then there’s the famous LED dancefloor and huge DJ booth. ‘We have curry nights on Fridays and always end up dancing,’ says Claire, and of course the children have parties here too. ‘We wanted the house to be somewhere they would want to hang out,’ she says. Beyond this is Ian’s spa room, with another cleverly-lit bathtub as well as a sauna and a meditation mat, while on the other side of the living room, separated by a lightwell that incorporates a fi shpond and yet more coloured light effects, is the master bedroom, a large and eerily quiet space with a high specification shower area. But this house isn’t all about gimmicks (even if the inspiration for much of it does come from Ian’s childhood visits to the Blackpool Illuminations) because behind all the quirky features lies a sophisticated eco-system. This is the borough’s first Code 4-rated sustainable house: all its electricity comes from solar panels cladding the entire railway-side of the house; intensive insulation means that they barely use the heating; rainwater is recycled and there’s a green roof.
Building your own house is a stressful experience, as documented in the Grand Designs focus, but this is a characterful family home that also serves as an effective business tool for Hogarth’s practice. The house generates lots of interest and curious types are often found lurking in the mews
hoping for a peek, or peering out of passing trains. Luckily, the Hogarths are always keen to show people round and business is booming as a result. Whether you’re after your own ‘madcap’ house or not, this is definitely a fascinating take on domestic life.

FABRIC OF LIFE Notting Hill-based Susan Deliss is the woman designers call when they need textiles. She tells Absolutely about her tastes and her travels
antique furniture upholstered in my fabrics and with decorative objects and fine art. I sell to private clients and the design trade in England and abroad. I supplied hand woven silk and cotton ikat for cushions and chairs for the public areas of the 5* Ile de France Hotel in St. Barths. and have sold textiles quite regularly through the brilliant Christopher Hodsoll. I do a lot of bespoke work, helping clients to tailor my fabrics and furniture to create something unique for them. Where do you source your textiles? I travel frequently to Turkey for buying trips and source textiles from long-standing contacts in Egypt, Uzbekistan, Kazakstan and Afghanistan. We holiday in Burgundy, France, where I buy vintage hemps and linens, antique glass and majolica during the summer months. Can you describe your signature style? Sophisticated, eclectic, warm. I love colour.
What is it that you do? I sell stunning textiles and home furnishings using new and old silk ikats, embroideries, kilims and velvets, all made by hand using traditional methods. I also design and sell limited edition cushions and lampshades, which I complement with one-off mid-century or
What are your favourite fabrics? Anything beautiful, old or new, that has been woven or embroidered or made by hand but with something that gives it charm and character. One favourite from my current stock is a cream Anatolian hemp rug – it looks incredibly modern but is semi-antique, incredibly textured and
heavy, with a turquoise bead stitched onto it as a lucky charm. Can you tell us about a recent project? Working on a roomset for the exhibition in March this year about wool for interiors at Somerset House, with Arabella McNie, its curator. What is your background? Eclectic. I read law at Edinburgh University before going to Brussels to work for Sir Leon Brittan and then to Boston for a masters degree, specialising in 20th century pre-revolutionary Iranian history. Six years in the City were followed by 15 setting up investment funds in Egypt. That came to a rather abrupt end with the 2010 revolution, when I decided that I should pursue my great loves of hand-made textiles and interiors for a living rather than just a hobby. We recently dressed a two bedroom apartment in Lennox Gardens, Chelsea that had remained unlet for 11 weeks, despite being newly refurbished. We furnished it and it got rented the next day at £1,400 per week. In St John’s Wood we staged a three bedroom apartment in a mansion block and it sold for the full asking price within five weeks.

THE MOST POPULAR DRESSING FOR PICKLED HERRING IN SCANDINAVIA Often people mistake the shop-bought mustard herring for the real thing, but it is super easy to make your own and it dresses up any pickled herring for a smörgåsbord. You can of course pickle your own herring, but it is a bit timeconsuming so this is an easy cheat. INGREDIENTS: 1 x 220g jar of plain pickled herring (we prefer ABBAs onion herring). FOR THE DRESSING: 1 tbsp white wine vinegar 1 1⁄2 tbsp sunflower oil 1 1⁄2 tbsp crème fraîche 1 1⁄2 tbsp caster sugar 1 tbsp Slotts Skånsk mustard (if you can’t find this, use a grain mustard instead) 1⁄2 tbsp normal Dijon mustard 1⁄2 tbsp single cream 1 tbsp mayonnaise 1 shallot, very finely chopped 2 tbsp chopped fresh dill 2 tbsp chopped fresh chives METHOD: Drain the herring, discard onion bits and put herring to one side. - In a bowl, mix all the dressing ingredients together. Whisk really well until the mixture is creamy and combined, then add salt and pepper to taste. Add the drained herring and marinate for a few hours. London is waking up to the benefits of Scandinavian food – which is both healthy and delicious, as Absolutely discovers
S
candinavian food is having a moment in the spotlight. With Copenhagen’s Noma holding Restaurant magazine’s improbably impressive title of Best Restaurant in the World (yes, that’s the entire planet) for the past three years running and recent studies praising the Nordic diet for its significant health benefits, London’s Scandinavian eateries are heavily in demand. But how does the uninitiated British palate cope with all those herrings and why would anyone add salt to their liquorice?
Bronte Aurell is the Kensal Risebased Dane who, together with her Swedish partner Jonas, founded the Scandinavian Kitchen in Great Titchfield Street five years ago. For her, it was all about foods she missed from home, mostly rye bread, which was a real wrench. They thought that setting up a café would be the solution to the work/life/family balance issue, so they left their jobs (she was working for Innocent; he at the BBC) and opened (timing the opening to coincide precisely with the birth of their first child). At first they assumed that the café and food store would appeal mostly to ex-pats like themselves but now 85% of their customers are not Scandinavian at all. ‘There had always been Scandinavian restaurants in London,’ she says – ‘it’s just that they were never promoted to anyone else.’ And most of those places offered dinner, while what she really missed most of all was lunchtime food – rye bread, herrings, crisp bread, salmon, lots of dill. And also cakes. ‘There’s a

Swedish word fika which means chatting over coffee and cake,’ says Aurell. So the café offers a range of small open sandwiches – ‘you choose a few and eat them with a knife and fork. It’s a bit like sushi in that it doesn’t make you feel overly full. Rye bread isn’t as filling as wheat bread,’ she explains. Toppings span smoked and cured salmon, marinated herrings in various sauces, and more unusual things like Norwegian cured lamb (‘we though people would never eat it but it proved really popular’) and Brown cheese (a Norwegian goats cheese that tastes like caramel and comes in five different strengths). Cakes include the favourite kladdkaka which is a sticky chocolate cake (‘gooier than a brownie’) plus a wide range of creations
made with cardamom and vanilla sugar, a Scandinavian staple that’s unknown here (though there are five different types stocked at the Scandinavian Kitchen). The nordic diet is characterised by rye, fish and rapeseed oil, as well as berries and cheese, plus locally sourced seasonal produce including apples, pears, plums, root vegetables and cabbage. It’s the rye and the fish that offer the secret to long life and avoiding heart attacks. When Aurell first started the business, basic ingredients were hard to find here, so they cleverly became an importer and wholesaler too, now stocking Ocado and other suppliers. So, there’s no reason not to become a convert and start the herring diet today. And the salty licquorice? Try it and see.

INGREDIENTS 1 jar of pickled beetroot from Beauvais or Felix (300400g in total), drained. Cut into 1 cm pieces. Make sure the beetroot is well drained. 2 Granny Smith apples, cut into 1 cm pieces (peeling optional - we don’t). A good quality mayonnaise - we like Scandinavian mayonnaise, but you can use any full fat good quality mayonnaise. Creme fraiche Salt, pepper, squeeze of lemon juice METHOD Mix the beetroot and apple pieces, add two tablespoons of mayonnaise and two tablespoons of creme fraiche. Stir. You are looking for a good creamy consistency without being too fatty. Pieces need to be coated, not drowning. Add more mayo and creme fraiche as required, little by little. Once you get to the preferred consistency, check the colour - you are looking for a good light pink colour – think Disney Pink. Don’t worry - it will go darker once it sets as the beet will continue to colour. Add seasoning to taste - the lemon juice is very important. If you fancy, add a dash of balsamic vinegar too. Leave to set in the fridge for a few hours. If it goes too dark, just add a bit more crème fraiche or mayonnaise before serving.
1. CRISPBREAD We eat it for breakfast, lunch and as a snack. Forget the stuff you are used to in the UK, we’re talking proper crunch, lots of rye and seeds. Personally, I prefer Leksands crispbread. 2. RYE in all shapes or forms. I love rye bread, rye flakes for my porridge, rye flour for my bread, rye grain for my salads. 3. GRAVAD LAX dill cured salmon. I love salmon in all shapes and forms, but dill-cured salmon is my favourite, served with…. 4. HOVMASTERSAUS a mustard and dill dressing. It works so well. I love the one from Erik’s Sauser. 5. MARABOU CHOCOLATE WITH SEASALT AND TOASTED ALMONDS I will eat a whole pack if you let me.
Perfect as a side salad on the smorgasbord or on a meatball sandwich. If you are using UK or Eastern European pickled beets, these tend to be more sour. Add a spoonful or two of icing sugar to the beetroots after draining and leave for a few minutes - this will sweeten them a bit. Add more sugar to taste if necessary. or a place so majestic and beautiful as the V&A museum, it seems only fitting that the café should follow suit. And they came up trumps. Housed in the Morris, Gamble and Poynter Rooms, the three rooms formed the first museum restaurant in the world. Widely considered to be one of the most ravishing dining spaces ever constructed even the hordes of children temporarily paroled from school for half term couldn’t dim the splendour of the décor. We were seated in the Morris room, a stunning example of the Victorian artist’s unique and unmistakable style. Considering the intimidating surroundings the food had a tough act to follow and, despite the pressure, it lived up to its expectations. As part of the award-winning Benugo Group, the café’s fare is impressive in its own right.
The menu offers a deli counter brimming with mouth-watering cold options including mulled wine and beetroot cured salmon or black pudding and scotch eggs for the English traditionalist. A great range of sandwiches are also available for hungry
art-lovers looking for a lighter option. We decided on the café’s hot counter. The starter of broccoli soup was deliciously creamy and light with a lovely smooth texture, perfect for the artic conditions of a London spring, and accompanied by bread and ‘beurre des charentes’. Feeling somewhat spoilt for choice, my lunch companion and I settled on our mains. The chicken, mushroom and chestnut pie was nutty and velvety and altogether delectable. The puff pastry in particular was incredibly fresh and resulted in much licking of lips, as all good puff pastry should. My companion’s double pork chop with caramelised fennel, spiced red cabbage and cider gravy was well received and decided to be of a similarly high standard. The only criticism offered was of the slightly excessive portion of vegetables, which was more than made up for by the tasty gravy. For dessert we were powerless to resist sampling one of the cakes. The Victoria sponge (a classic choice) proved to be a masterstroke; packed with cream and jam it was the perfect conclusion to a stellar meal. As good as the food is, however, it is the incredible beauty of the surroundings that truly makes this dining experience such a treat. An essential part of any trip to the museum. 79

A
s gentle Thai hands scrub and massage my skin, I can feel the stresses and strains of a hectic London life beginning to leave my body and mind. I feel myself drifting in and out of sleep as I lazily make out the coastline and distant islands beyond from my secluded cliff-top haven. As a celebrity stylist, I have travelled all over the world but I have never visited the white sands and crystal blue waters of Thailand. And now here I am, embarking on a ten-day trip to Kamalaya, a luxury holistic spa on the island of Koh Samui, with Samantha, one of my oldest friends. Our previous trips have seen us climb mountains with crystal healers in Peru, we’ve ‘ommed’ and ‘ahhed’ at yoga and meditation retreats in India, we’ve visited Buddhist festivals. In short, we’ve always been up for spirituality but in a five-star kind of way. No scrubbing Ashram floors for us. But what we’re about to experience on Koh Samui is something beyond our expectations or experiences. We arrive on the island late at night.
As we drive 45 minutes north to our destination, the only thing I can make out through the car window are rows of fairy lights adorning the dimly-lit streets. Exhausted from 14 hours of flying and a busy week styling private clients, gracing London Fashion week and appearing on Chanel 5 as a fashion correspondent, I dive straight into bed and wake up to find myself in a sun-soaked paradise. This holistic spa is nestled on a hillside on a secluded part of the island with sweeping views down to a pristine coastline. Huge tropical trees, birds, butterflies and waterfalls make up the natural habitat. My bedroom feels like a giant tree house, with all the furnishings made out teak and bamboo. Off to my early morning appointment at The Wellness Centre, where I learn from my own personal dedicated naturopath that the place has 70 different treatments on offer. After my blood pressure is checked and a Body BioImpendance Analysis taken, measuring my body composition and in particular body fat, I sit down for a lengthy chat with my naturopath about what I would like to achieve from
my stay at Kamalaya. We discuss the holistic health programs – there are nine on offer, including stress and burnt-out, sleep enhancing, weight management and optimal fitness. Between us we decide the detox is the program for me. Having had ill health for 18 months prior to my trip, suffering from chronic vertigo migraines and hormone issues, I had been put on some serious medications and this was my chance to rid them from my body. It was agreed that my seven-day program would consist of hourly supplements, inferred saunas, three colonics, lymphatic drainage massages, Thai and stomach massages complimented with a diet rich in vegetables with no meat, sugar, diary or wheat. I have an addiction to raw chocolate and having none at all was going to be hard. I am told the regime is going to be tough and I’m warned that I will feel pretty dreadful with headaches and fatigue for the first few days. I leave feeling apprehensive and a little daunted. This is supposed to be my holiday. The rest of the day is spent relaxing on the quiet beach, drinking fruit smoothies and swimming laps in the

breathtaking natural infinity pool complete with its own waterfall. On day four, after a long rest, I am up early, renewed with energy. There are different activities available such as Qi Gong, a form of exercise that aligns breath, movement and meditation to balance the body’s natural energy, holistic lectures covering a range of holistic subjects including Chinese Medicine and Astrology. I choose the 7.30am Chakra meditation class with resident Guru Rajesh, followed by Ying and Yang Yoga taught by Simon Low, cofounder of London’s hip Tri Yoga. Next up is an appointment with resident practitioner Dr Song, a traditional Chinese doctor. A guest I met on the beach told me that when he is not in residence at Kamalaya, Dr Song is flown around the world by patients to treat them for all manner of ailments. When I meet him, I’m surprised to find he looks much younger than his 43 years. A smiling man, he radiates health and trust. His diagnosis is spot on when he tells me that my water retention, the bane of my life, is due to my right kidney not being as strong as my left. He asks me if I have suffered
from bad kidney infections in the past to which I answer in stunned awe. ‘Yes!’ I almost yell out. He goes on to tell me other aspects of my medical history and I am astounded by the accuracy of his diagnosis, all gleaned from simply examining my face. He massages my meridians to get my energy moving and to help with my water retention and tells me to eat a diet with no sugar, a big breakfast, medium lunch and a small dinner. He says this is the key to losing weight and to staying healthy. I must exercise every day for half an hour and my new bedtime is to be 9pm so that I can rest my kidney energy. Not the best thing in London where most of the fashion parties and celebrity bashes are only just beginning to liven up at that time, but he is firm about this. The next few days start to form a routine: yoga and holistic treatments in the morning are followed by lounging on the sun-drenched beach in the afternoon, swimming in the warm brilliant turquoise ocean, sipping on juices and feasting on vibrant Thai-inspired dishes. I’m so chilled out that any form of communication from the outside world becomes unwanted (for
someone who is practically glued to her iPhone, this is a first). I’m thrilled to see my body is becoming more defined. My mood has changed; I can now see how stressed and agitated I was on arrival. My old self trapped in fear and trepidation has melted away and I’m feeling positive with a sense of renewed calm and serenity. Kamalaya does exactly what it promises. ‘A holistic lifestyle experience that aims to cultivate the seed of divine potential that exists within each one of us.’ For the first time in years, I feel like the old me, raring to go and ready to embrace life with energy and enthusiasm. Without a doubt, this has been a lifechanging experience. If only I could breathe in every aspect of Kamalaya, bottle it and take it home for regular top-ups. It is the closest I have come to heaven. In fact, I don’t believe heaven has got anything on Kamalaya. People are arriving for a wedding in the 14th century tithe barn, 4x4s are disgorging blondes at the entrance to the hotel’s spa, small children are running around immaculate lawns in chill winter sunshine and the Gumstool pub, one of two restaurants in the hotel, is packed with visiting families and well-heeled locals in shiny wellies. This country house hotel, set in more than 220 acres of Cotswolds countryside near Tetbury in Gloucestershire, has managed that rare thing. It is all things to all people. It is both brilliantly family-friendly, with a staffed creche plus a raft of children’s activities and also the perfect hideaway for weekending couples.

THE BEDROOM There are 35 individually designed rooms to choose from. These include 10 dedicated family rooms housed in converted farm buildings which surround the courtyard while the ancient Cotswold stone manor house is home to 12 bedrooms to suit couples. Our room was a so-called ‘large family suite’, although ‘house’ would be a more accurate description of the picturesque little clapboard cottage with its own garden and front door. Inside was pure luxury with a huge double bed in a large open room, plus another bedroom with bunks and an entire first floor given over to bathroom heaven. Under the eaves, two large adjacent baths faced a wall mounted TV, and there is also a large walk-in shower. Naturally, we opted for a his ‘n’ hers bath, each filled to the brim with Aromotherapy Associate bubbles courtesy of the hotel and wallowed in front of trash telly until we had both turned into prunes.
THE RESTAURANT The more formal of the two restaurants, The Conservatory underwent an overhaul last year with a new look, new cocktail bar and a change of menu. Out went the classic fine-dining menu and in came a more informal eclectic menu. The chef, however, has stayed the same and judging by our meal, he is a bit confused as the dishes were a bit hit and miss. A starter of risotto Milanese and beef shin, and a main of marinated beef fillet were notable highs but a red curry with seared Cornish mackerel was an unruly mess on the plate and a dessert of salted caramel mousse all too forgettable.
To sit immersed, a glass of cold champagne in hand, in the bubbling outdoor hot tub whilst a well-stoked fire roars in a brazier behind you and the reddening sun sets on a cold winter’s day must be one of life’s true pleasures. Calcot Spa is hugely popular, and rightly so. It offers both an indoor and outdoor pool, sauna, steam, gym and a wealth of treatments to guests and members alike. A recent addition to the treatment menu is the Rodial skincare brand. An hour’s Sculpt Facial using Rodial’s Dragon’s Blood Serum range (£70) was not only relaxing but left my tired, windswept skin feeling really soft, smooth and rejuvenated.

cannot think of a better place in London to live than in Notting Hill. Particularly in the spring time with all its vibrant colours, longer days and even the occasional ray of sunshine. The spring sales market is in full swing and business is brisk. Without a doubt, the improved weather puts a skip in everyone’s step and these conditions are set to remain for the second quarter of the year. We already have a number of record sale prices for local streets and our aim, as always, is to build on this and continue to set new sale price benchmarks throughout the year. It’s something that we as a fi rm have become synonymous with over the years and it is an attribute that we will not be changing any time soon! Our job is made somewhat easier by the sheer desirability of the area. Notting Hill has been very popular with our European and American cousins for many years now, but it is also starting to attract more attention from Russia, the Far East and the Middle East. It truly is a globally renowned address. That’s no great surprise to those of us that live or work in the area as we have fi rst-hand experience of all the amenities that are on offer here. I have been selling houses in Notting
Hill for the last 12 years and have witnessed remarkable changes in that time. Most of these changes I feel have been for the better and as a result local residents have certainly seen a dramatic increase in the value of their homes. In particular the Artesian Village, a cluster of charming tree-lined streets just off the ever-vibrant Westbourne Grove, has cemented itself as one of the area’s most sought after enclaves. The architecture and location of these beautiful houses has made them immensely popular with our purchasers and demand consistently outstrips supply. The wonderful thing about Notting Hill is that it still retains its charm and the often mentioned ‘Village’ feel. The locals in the area do tend to know each other and I often see familiar faces as I go about my working day. For me, it is the eclectic mix of people who live here that are a major draw to the area; I find them to be particularly interesting and affable which, in turn, adds a real sense of community.
