SUMMER MADE SIMPLE

e’re focused on fitness this month. For those of us who have finally gotten round to booking that muchneeded holiday (after covering ourselves up like Michael Jackson for what seems an eternity) the big reveal of one’s pasty self can seem... well, downright daunting. Now is the time to get primped and preened, but fear not: we’ve put together a guide to holistic health, perfect for your summer health overhaul, and included yoga tips from Good Vibes founder and director Nahid de Belgeonne. The bikini body countdown is sorted. More health and beauty inspo comes in the form of our ultimate Spa Guide, a round-up of Absolutely’s top European destinations for rest and rejuvenation. From wine-based treatments in Bordeaux to Spartan stays in Lombardy, there’s something for everyone, whether you want to detox or beautify, cleanse or simply kick back. Nowadays, it’s all about enlisting on a boutique bootcamp (adding soul to your body workout) to get your rear in gear and set you well on your way to becoming a golden girl (by which I mean athletic and glowing rather than skinny). With that in mind, Katie Randall reports from SHA Wellness in Alicante, while elsewhere we feature the Feng Sushi summer diet, which shows you how to shed pounds without doing much at all... seriously. Speaking of golden girls, this issue we managed to bag an interview with Emma Watson. Actress, fashion muse and of course, one of the breakout stars from the Harry Potter phenomenon, the one-time Hamsptead resident has well and truly broken the ‘Potter’ spell, moving out of Hermione Granger’s shadow and into the limelight as ‘one to watch’; and what better way to flex her acting muscles than by teaming up with director Sofia Coppola for her next movie, The Bling Ring. Meanwhile, another culture industry Hampstead heavyweight – Costa prize-winning novelist and Vogue contributor Francesca Segal – speaks to us about her exciting debut novel, The Innocents. Set in the leafy environs of North London, the prize-winning book relocates Edith Wharton’s The Age of Innocence among the modern Jewish community. It’s encouraging to see a literary newcomer bagging esteemed accolades so early in her career, and Segal’s book is definitely one to add to your holiday reading list. Enjoy the issue and the sunshine (we live in hope).

#FESTIVALFRESH

Glasto may be over but there’s still a (frankly, less messy) slew of other festivals happening at a park near you. Besides, one-dayers are better for staying fresh and getting your street-style on. To this end, I’ve chosen a simple tee from Mario Testino’s limited edition Mate Collection, paired with classic denim shorts; this slouchy pair come ready-ripped from J Brand, adding the necessary touch of grunge. Finally, I’ve kept it casual with these neat Penelope Chilvers Siesta sandals - because let’s face it, wellies without mud look wrong and overdone. Now all you need is the perfect playlist for full-on summer vibes.

THE ELEMENTARY

Watson

S

Harry Potter star Emma Watson talks to Frank Grice about reinvention and revision

tepping out of the shadow of Hermione Granger has arguably been the greatestchallenge of Emma Watson’s career. In the movie world, the perils of typecasting are much discussed, but when the sticking tape is a billion-dollar franchise – the biggest of all time – breaking free is no mean feat. That ex-Hampstead resident Emma has managed to do that within two years and three fi lms of the final Harry Potter instalment, is remarkable, and her latest project, The Bling Ring – which premiered at the Cannes Film Festival last month - is another reminder of why the 23-year-old has the potential to become a true English rose. In The Bling Ring, Watson plays Nicki, one of the real-life group of teenagers who, between 2008 and 2009, ransacked the homes of their favourite celebrity icons Paris Hilton, Lindsay Lohan, Megan Fox, Miranda Kerr et al. The fi lm offers an interesting vehicle through which Watson convincingly crosses over into her darkest, most absorbing role yet. The result is further validation that she is a serious and versatile Hollywood player. ‘I think people are making a lot out of the fact this is such a major diversion from Harry Potter, but in actual fact, the main driving force was not the role itself. Instead, it was the lure of working with Sofia [Coppola],’ she tells me. ‘I’ve been a big fan for many years and I was so anxious to work with her. She has a very acute perspective on celebrity culture and I am so appreciative of the fact that she writes and directs her fi lms, and has a very distinct and uncompromising sensibility. Sofia is a very smart and strong woman and I feel privileged to have had the chance to work with her.’

“In actual fact, the main driving force was not the role itself. Instead, it was the lure of working with Sofia [Coppola]” What Watson found ironic, was that to work with such a respected figure in modern fi lm, she had to immerse herself in the very brand of throwaway reality TV that she usually attempts to steer clear from. Her research included subjects such as Kim Kardashian, UK show The Only Way Is

Essex, and reading matter more likely to be seen on the coffee tables of the UK WAG fraternity. ‘At first I hated Nicki because I’m so against the superficial values she embraces,’ admits Watson. ‘It would have been easy to turn her into a parody, but then I started to find more insight into her perspective, and realised how Sofia was trying to explore the way fame has become so important in society today. I also learned a lot as an actress from playing a character who is so different from me and finding a way inside her psychology. ‘It’s a very interesting phenomenon,’ she continues. ‘Reality TV stars are a new and different breed of actors and actresses. It’s a different way to tell stories and something that is very specific to my generation. Many 9

PROFILE

people thought the whole reality TV trend would fade away but it’s still very much alive and it seems to be just as popular as ever. It’s a strange thing.’ That Watson should embrace such a role is only to be expected. Set up for life as a result of JK Rowling’s creation, the actress has always been reluctant to sit back and wind her way down to a fashionable early retirement. Indeed, in the time leading up to shooting The Bling Ring, the Paris-born star was combining studying Virginia Woolf (as part of her course at Brown University, Rhode Island) with enveloping herself in the latest reality TV gossip – a fantastic contradiction. ‘I’ve never really known a point in my

career where I’ve not been trying to learn, so it feels natural to carry on in that manner. I’m still evolving and discovering more about myself and I hope that journey is going to inform my work and lead to good things.’ And is Hermione something that can still be enjoyed, or is Watson’s focus purely trained solely on future projects? ‘I don’t feel in any way dismissive of the time I spent playing Hermione and so I’m not trying to find roles which are completely opposite her. She was a huge part of who I am, and will be for a time to come.’

I don’t feel in any way dismissive of the time I spent playing Hermione, so I’m not trying to find roles which are the complete opposite to her.’

The Bling Ring is released on 5 July nationwide

North Star El Baumann speaks to Francesca Segal, whose debut novel, The Innocents, has established her as one of Britain’s brightest young talents

B

udding writers are often advised to write about what they know, but how wise is it to follow such advice – and can writing about what is most familiar come back to haunt you? When journalist and sometime Vogue contributor Francesca Segal published her debut novel earlier this year, no one could have known how rapidly her star would rise. Her book, The Innocents, is a comedy-tinged drama centred on the Jewish community in Hampstead, the same area in which she grew up. In fact, Segal still lives in Hampstead today – but ask her if the novel documents her own life experiences and she rebuts the notion without a second thought. ‘The book is very much fiction,’ she says, ‘it’s not about my life, or real people I know. Thank goodness! But the tapestry beneath it is a world I know very well, as I’ve lived in or near Hampstead most of my life.’ If inspiration is to be found anywhere, in fact, it’s in the past and far away: The Innocents is a clever riff on a much older book, Edith Wharton’s classic American

novel The Age of Innocence. But where Wharton’s story is set among the social elite of 19th century New York City, the action in Segal’s novel remains firmly rooted in London, where its protagonist, Adam, has spent his formative years. Born and raised in Hampstead, Adam is a straightforward, dependable sort of chap whose future seems likely to be one of safe, comfortable

love, lust and freedom – the exact things he always took for granted. The novel is extremely well-constructed, full of crisp description, memorable characters and sharply drawn observations of contemporary life. So what are the parallels Segal sees between modern-day, middle-class Hampstead and the high society of 19th century New York? ‘Many,’ she says, ‘although it’s not only Hampstead. I think the echoes are almost universal and will resonate anywhere that people live very closely-interwoven lives, any small community, any small town or village. There was something familiar in the closeness of the community, with all the warmth and support – and claustrophobia – that offers.’ Segal’s words ring very true: her book’s focus on a specific London community doesn’t stop it seeming universally identifiable. In fact, the pages positively ring with moments of recognition. In one of the novel’s most memorable moments, Adam, always so thoroughly ensconced within his community, is shocked suddenly to consider ‘a world outside NW11’. Did Segal ever experience a similar ‘moment of awakening’?

‘The Innocents is a clever riff on a much older book, Edith Wharton’s classic American novel The Age of Innocence.” convention. He has good friends, a loving family and is engaged to Rachel, his childhood sweetheart; life is rosy. Of course, all his easy assumptions are suddenly swept away when he encounters Rachel’s beautiful cousin, Ellie, around whom swirl fascinating rumours of mischief and sexual scandal. Adam is smitten, and finds himself forced to confront uncomfortable questions about

CULTURE

‘No! Not at all,’ is her answer. ‘I grew up as a Londoner, part of a larger, broader community too.’ Still, the book is brimming with colourful characters and gives a precise portrait of a community, its values, traditions and foibles – does she think the picture she’s painted will still be recognisable in twenty years, or are social ties and cultural identities of the sort she portrays on the decline? ‘I think [the picture] will still be recognisable. I think social ties are weakening, as your question suggests, and that patterns have of course shifted over the past few generations. But I think the community I’ve described in the book has a pretty solid core of values that can sustain it.’ Perhaps, I suggest, the novel might help to preserve and protect something of the community’s identity – does Segal think literature can play an important part in telling ‘local’ stories within an increasingly globalised (and homogenised) world? ‘I think one of literature’s roles is to paint a miniature, and in it to show the universal. My novel is set in one specific world, but the pressures at its core, and the dilemmas it explores, are universal themes – it has a classical love-triangle at its heart, and that is as old as time. Navigating between individual needs and social expectations,

how to choose a life-partner – these are and have always been the trials of growing up, anywhere at all.’ It’s an eloquent response that goes some length towards explaining how this young writer (Segal is just 32) won the Costa First Novel Award. Did she ever dream that her debut would earn her such instant acclaim? ‘It was, without question, the most extraordinary day,’ she says. ‘I had secret dreams for this novel, of course, but that exceeded them!’ The success didn’t end there: The Innocents also picked up the National Jewish Book Award for Fiction. Has life in northwest London changed now that she’s made it into the subject of a celebrated novel? ‘Not, really,’ she replies, ‘although I do love it when people talk to me about the novel – tell me whether they think it ended as it should have – whether or not they think he made the right decision. Those conversations are always a pleasure.’ Segal is about to start work on her second novel, which she says is ‘exciting – and a little nerve-wracking’, but her growing fame hasn’t detached her from her roots – she’s still out and about enjoying the local area. And one of the nicest writers doing so it seems.

“I grew up as a Londoner, part of a larger, broader community too.”

MY STYLE

Cleo B will unveil her AW13 collection at Andaz Liverpool Street this month; she shares her inspirations Favourite holiday destination

It has to be Barbados. There are amazing resorts and restaurants and you can jump in a Jeep, explore the island, eat at local cafes and bathe on any beach you choose.

Favourite designer House of Holland (left) and Holly Fulton are two of my absolute favourites.

Style icon

Most treasured possession Most inspiring experience

In 2008 I spent two weeks touring India with interior designer Nina Campbell. I spent time in her embroiderer’s factory, visited her suppliers and rode elephants.

Favourite shoe of your own design

My gold Sucker MCs cassette tape heels which come in a rainbow of bright coloured suedes (above). I also love Tribeca, which is a classic Cleo B wedge shoe boot from Spring Summer 2010 (right). It has intricate criss-cross detailing down the front, which I took from the facade of an Art Deco building in New York.

Honey B – my miniature wire-haired dachshund. She is a star and constant companion. She is also the face of our new dog collar collaboration with accessories brand Beauchamps, launching in March.

I don’t have a particular style icon. I love colour and I have a bold sense of style, so I find it’s influenced by anyone and anything. However, if I was allowed to steal anyone’s wardrobe, it would be Rihanna’s.

Favourite piece of art

My favourite painting is Egret by James Aldridge (left). I received it as a 21st birthday present from my parents. At the time, his work was typically dark, creepy even, often involving skulls, black crows and dark woods, but this piece was an anomaly and I fell in love with it straight away. cleob.com

BEAUTY

The insider Arabella Preston’s make-up tips from behind the scenes

T

he Spring Summer catwalks were brightened by swatches of vibrant neon make-up. What better way to step from winter into spring than with a splash of fluoro flair? Don’t be fooled: this isn’t ‘80s throwback neon, rather something cool, modern, clean and graphic. Your canvas is key here, and beautifully exfoliated, glowing skin allows you to get away with a shock of bright colour. Try Astalift’s new Intense Replumping Moisture Mask to give your skin a youthful boost and allow it to recharge. Although, that said, bright colour is also brilliant for drawing attention from unwanted blemishes and imperfections. If you have a slash of pink neon on your lips, that’s all people will be looking at. Trust us. MAC Senior Artist Rebecca Butterworth advises using matte lip colours ‘that can be built up from a subtle stain to an intensely bright lip,’ pressing a matte neon pigment like MAC Bright Fuchsia on top for added intensity. If you simply want to dip a tentative toe in the trend, then a neon nail (these OPI polishes are spot on) will add a pop of colour that gives you an instant wardrobe update. But why stop there? Charlotte Stockdale’s latest offering for Jo Malone is a neon-dipped Red Roses cologne bottle – perfect for embracing the look. Now go on – turn on those neon lights.

HEALTH

Let’s Get

Physical

Complement the healing process with these popular alternative therapies OSTEOPATHY

PURE SPORTS INJURY CLINIC THE LOW-DOWN Osteopaths work from the principle that wellbeing depends upon the skeleton, muscles, ligaments and connective tissues functioning smoothly together. Sessions seek to restore the body to a state of balance, replacing the use of drugs or surgery (where possible) with physical manipulation, stretching and massage to increase mobility and relieve muscle tension. THE RESULTS An initial consultation at Pure reveals that I have a slight curve in my upper back (rather than my lower back, as thought), which is causing me to lean more to the right and hunch in the shoulders. As I am not currently experiencing pain, Daniel Cohen advises I continue my regular yoga sessions and work on strengthening my core. This will address the misalignment in my spine, supporting the upper back and shoulders. For prices call 08447 700 800, 2 Cabot Square, E14; puresportsmed.com

ACUPUNCTURE THE HERBAL INN

THE LOW-DOWN Acupuncture is said to serve as both a treatment and a preventative therapy. It is meant to stimulate blood flow, improving overall health and helping to treat a number of ailments including hypertension, headache, sciatica and morning sickness – as well as those which more acute pain. The Herbal Inn specialises in acupuncture and cupping – a healing therapy that’s become a firm favourite with celebs (Jennifer Aniston recently turned up to a premiere with the tell-tale circular marks on her back). THE RESULTS After an initial consultation, we agree to work on my digestion and circulation. By understanding the key tenets of qi, Dr Peng looks to restore the natural harmonic state of mind, body and soul. Penetrating my skin with needles in specific points of the body, the flow of qi is opened up; the results are noticeable after one session – however, ongoing treatment to align the balance and detox the body is recommended. 47 Upper Street, N1; herbal-inn.com

LYMPHATIC DRAINAGE

THE HEALTHY LIVING CLINIC THE LOW-DOWN A massage that stimulates the lymphatic system (the body’s secondary circulatory system), improving metabolism and the elimination of toxins while boosting the immune system. It’s an ideal treatment for those suffering from any swelling and can help with healing after surgery, but is equally good for relaxation, improving circulation, problem skin, cellulite, dysfunctional respiratory systems and low energy levels.

REFLEXOLOGY LIZ GARNER

THE LOW-DOWN Reflexology refers to the application of pressure to the feet and hands using specific thumb, finger and hand techniques; the ‘reflex points’ touched are mapped to corresponding parts of the body and various associated tensions and maladies. A ‘healing art’, reflexology is relaxing but should not be mistaken for a foot massage: it employs far gentler micro-movements to create a response within the body.

THE RESULTS This gentle massage really revives the body. Working the lymphatic fluid towards the drainage ducts, (rather than focusing on the muscular or skeletal aspects of the body), it is recommended for those with metabolism concerns and is often used in conjunction with a detoxing programme.

THE RESULTS My therapist, Liz Garner, talks through any issues we can work on. Reflexology is commonly used to help with numerous symptoms specific to women (PMS, menopause, infertility, pregnancy and traumatic birth experience being just a few of them), and Liz identifies a lot of activity in the pituitary gland, indicative of hormonal imbalance, though more sessions are needed to address the problem fully.

See the website for more details, 282-284 St Paul’s Road, N1; thehealthylivingcentre.co.uk

Fast-track your child’s healthcare When it comes to making children better, The Portland Hospital has the highest levels of paediatric expertise and the most advanced technology in the UK. Discover how your child can benefit from the country’s leading experts in children’s health today. Story by Stacey Jackson

C

ommon sense tells you that, if your child gets ill, the best person to treat them is a leading paediatric consultant experienced in their condition.

Our dedicated children’s unit is home to the largest group of private paediatricians in the UK, covering over 50 different clinical specialties. They are among the best in the world at diagnosing and treating both common and complex childhood conditions from birth to age 18. Using the very latest technologies, they treat over 40,000 children each year, ranging from routine check-ups to extremely rare and complex cases. Many of our consultants hold senior posts at leading NHS trust hospitals such as Great Ormond Street and St Mary’s Hospital. They’re supported by a team of experienced children’s health professionals, including specialist children’s nurses and play specialists.

We don’t treat any adult patients in our children’s unit, so your child’s hospital experience will be completely tailored to their needs. We find that this can relieve your child’s anxiety about visiting hospital and help them to make a speedy recovery.

Rapid appointments Don’t wait. For same day and next day appointments, including evenings and Saturdays, call 020 7390 8203.

When you’re thinking about private healthcare for your child, safety will of course be an important consideration. Do bear in mind that some private hospitals don’t offer any on-site critical care facilities. Our children’s unit is fully equipped with the latest medical technology and facilities. Should the need arise, we have a Paediatric Intensive Care Unit, Neonatal Intensive Care Unit and Special Care Baby Unit staffed by a dedicated team of critical care experts. You’ll be pleased to know that you won’t need to join a queue for this exceptional service. Our convenient and rapid appointments give your child the care they need at a time that suits your family and your lifestyle, including during the summer holidays so none of the new school term will be missed.

TOP TO TOE

TOP DOWN

ASK FOR Craniosacral Therapy THE LOWDOWN Using a feather-like

touch, a trained therapist ‘tunes into’ the patient’s body, searching for the inherent motions of muscles, organs and cranial bones, focusing on manipulating ‘primary respiration’ and the flow of cerebrospinal fluid. It may sound complicated, but this therapy – which developed out of osteopathy – feels like simplicity itself. The therapist’s aim is to pick up on rhythms of contraction and expansion in the body, identifying patterns of distress and smoothing out the flow of energy. The idea is that areas of pain are redistributed or ‘released’, thereby restoring a healthy balance and helping the body to heal. The treatment can be deeply relaxing and is believed by some to stimulate the body’s own stress and pain management resources. RESULTS Those who find it hard to relax may find that several sessions are required to address the stress patterns and discomfort in the nervous system. Others feel rejuvenated and replenished straight away. From £60 for 60 minutes

UNDER PRESSURE

ASK FOR Shiatsu THE LOWDOWN Shiatsu was developed

in Japan from the principles of Chinese medicine (shiatsu means ‘finger pressure’ in Japanese) and the practice is similar to acupuncture – the therapist analyses the body’s energy channels (known as meridians) and massages accordingly, helping to restore inner wellbeing.

Shine Holistic offers a wealth of beauty treatments and complementary therapies; Absolutely picks its three favourites for instant summer wellbeing

Despite its history and popularity, Chinese medicine often meets with scepticism, so I’m immediately taken aback when, soon after we begin, my therapist applies pressure to the stomach and asks if I suffer from headaches – I have done, since childhood. The treatment follows a set format, but is semi-tailored to each client and their particular ailments. It makes use of gentle, methodical pressure and stretches. RESULTS Shiatsu is designed to support your body’s natural healing ability, providing profound relief from numerous conditions and amounts to a highly relaxing (and all too fleeting) hour. From £60 for 60 minutes

PULL TOGETHER

ASK FOR Myofascial Release (MFR) THE LOWDOWN For those unfamiliar

with the practice, myofascial release aims to straighten out and release tension held in the web of connective tissue that runs throughout the body, linking all our

internal structures. This web is called the fascia and it actually contains 90% of our nerve endings, meaning that any physical trauma we suffer is registered there. It also means that pain we think is located in our muscles is very often actually due to a restriction of our fascia. The massage administered by Helen Brown, which aims to work out these tensions, can be intense – even painful – but the subsequent sense of release is something I have rarely experienced with traditional massage. Sitting at a desk all day means I have a tendency to hunch, but Helen’s deft manoeuvres open up the back. The momentary discomfort soon gives way to a deep relief. RESULTS Energising rather than relaxing, this is the perfect mid-week pick-me-up, particularly recommended for anyone suffering from localised, specific tensions. £60 for 60 minutes 52 Stoke Newington Church Street, N16 20 Newington Green, N16; shineholistic.co.uk 41

Each month until November, the club will host a different Michelin-starred chef from outside London, who will create (and oversee the first two days’ service of) a special menu. July sees Hywel Jones (of leading country house hotel and spa Lucknam Park) bringing his culinary expertise to the capital. Head to the website for more details on forthcoming residencies. 15 Abchurch Lane, EC4; londoncapitalclub.com

Little Fishy

Who doesn’t love fish and chips? The solid, golden dish so beloved of Brits dates back to the 17th century and is little short of a national treasure; now Des McDonald, former CEO of Caprice Holdings, is getting in on the act. McDonald has launched his own take on the classic chippy, serving up sustainable fish fresh from British waters and approved by the Marine Conservation Society. A selection of line-and-hook caught cod, plaice, haddock and pollock arrive daily from Brixham to be grilled or fried in the Fish & Chip Shop’s own-recipe batter, made with local Camden beer. Kids will love the fish finger butties, too. 189 Upper Street‚ N1;

PITT AND CUE

The Almeida

Martin Nisbet has joined the Almeida restaurant from West London’s Angelus. The culinary maestro brings new and contemporary flourishes to the menu, including ballotine of smoked ham hock with pistachio and pickled pear and vanilla cheesecake with rhubarb jelly, poached rhubarb and arctic roll. Some traditional elements will remain, of course, and every week will see a rotisserie Tuesday, when diners can enjoy a whole chicken and carafe of wine between two. All of which makes the restaurant our hot pick for pre-theatre dinner this month! Almeida Street; N1; almeida-restaurant.co.uk

In 2011, Jamie Berger launched Pitt Cue Co, slogging his guts out in an American BBQ food van with business partner Tom Adams. His successful startup got bigger and bigger until they had to move from their parking spot to join the big guns via a bricks-and-mortar establishment in Soho. To coincide with the launch of their first ever cookbook (recipes include signature dishes like pulled pork, crispy pickled shiitake and sticky bourbon and cola pudding), the boys will be holding a ‘How to Launch a Food Startup’ Guardian masterclass in King’s Cross next month. 11 August, 10am5pm, The Guardian, 90 York Way, N1; pittcue.co.uk

The Grill on the Market

Herb garden cocktails will be springing up at the Grill on the Market throughout July and August. Using herbs to enhance flavours is a trick as old as time, but herb-based cocktails makes for double the dining experience. The bar’s master mixologist has dug up some harmonious, herbaceous concoctions to tantalise taste buds. 2-3 West Smithfield, EC1; blackhouse.uk.com 43

Why should you go? With considerable expansion recently leading to their first international opening in Istanbul, Tom’s Kitchen are also launching in Canary Wharf this month. The restaurant works with British suppliers and is committed to fresh, ethically sourced ingredients. When should you go? Early birds catch much more than the worm at Tom’s Kitchen. Choose from dinerstyle booths or sit down at the communal tables in the deli. Made famous at the Chelsea and Somerset House establishments, the cult menu will include brunch classics such as eggs Benedict and brioche French toast with caramelised apples and cinnamon.

THE FOLLY

41 Gracechurch Street, EC3; the follybar.co.uk Billed the City’s ‘secret garden,’ this botanical-themed canteen restaurant is perfect for those on a health-kick. The tape-measure symbols denote meals under 500 calories and high-energy ingredients populate the menu. Order your burgers carb-free or sup on a skinny cocktail. Their use of yummy vegetables is unmatched in the area.

NATURAL KITCHEN

7 Pepys Street, EC3; thenaturalkitchen.com This place is all about eating well on the go. Seasonal wherever possible, everything is fresh (no preservatives or nasties) and there’s an impressive menu of fruit and veg juices. For those who aren’t watching their weight, the selection of cakes and sweet treats include goodies such as eggy bread French toast and chocolate fudge sundae.

VANILLA BLACK

17 Took’s Court, EC4; vanillablack.co.uk Veggie cuisine goes haute at this fine-dining restaurant in the City. The menu might be meat-free but food comes foraged, seared and salted. The desserts, too, sound out of this world: liquid doughnut with warm espresso gel or smoked paprika fudge, malt loaf and builder’s tea... not to mention the dried chocolate, fig and port ice-cream.

THE CROWN AND SHUTTLE

226 Shoreditch High Street, E1; crownandshuttle.co.uk

What’s the deal? A hotly anticipated relaunch of the Crown and Shuttle has seen the historic pub benefit from a new look. Having served two queens and a king, survived the Blitz and even served time as a notorious strip club, it last closed its doors twelve years ago. Now the exotic dancers are gone and the pub has reopened to the public. Why should you go? The renovation breathes a new lease of life into what could have been ‘just another pub’. A massive plus is the huge garden complete with Shuttle Bus kitchen and wood-burning oven, from which spring forth amazing wheat beer and poppy-seed flat-breads for use in the pub’s own sandwiches.

143 Bethnal Green Road, E2; wellandbucket.com The Well and Bucket finally makes good on its chequered history as not only a pub but a Chinese restaurant and leather wholesaler. Though not as indie as it might appear (it’s an outpost of sizeable chain Barworks), the bar fills a hole on Bethnal Green Road, where there was previously little for well-heeled drinkers. Extra points for the 5CC Cocktail Club, which resides downstairs.

The Gilbert Scott Bar

St Pancras Renaissance Hotel, Euston Road, NW1; thegilbertscott.co.uk Two years from opening and the Gilbert Scott has become a mustvisit culinary destination for those touching down in King’s Cross. The bar is exemplary of how far London’s cocktail scene has come, now headed up by renowned mixologist Dav Eames. Served up in stylish, eagle-shaped, Art Deco glass decanters, that and the dramatic setting will transport you to a bygone age.

Worship Street Whistling Shop

63 Worship Street, EC2; whistlingshop.com A semi-secret location, Dickensian trappings and fun interpretations of classic British drinks are what bring the locals to this antiquated speakeasy. Most exciting is the windowed laboratory where the concoctions are cooked up, brewed and distilled in a throwback to a Victorian apothecary. Not quite a gin palace but expect a gustatory experience. 45

SUSHI LADY

How does a Danish woman become one of London’s major sushi players? Absolutely meets Feng Sushi’s Silla Bjerrum to discuss sustainable fishing and healthy eating

47

I

n 2008, Silla Bjerrum was the first woman to be invited to the prestigious Seven Samurai Sushi Competition. That’s no mean feat, especially since she’s not even Japanese. The Danish-born sushi expert has also served as a judge for the competition twice, teaches regularly at Leith’s cookery school, Divertimenti and Billingsgate and is a leading voice on issues surrounding sushi and sustainability. She’s also a serious businesswoman, having launched the Feng Sushi chain that now has eight branches (the latest in West Hampstead), and is a founding member of the Sustainable Restaurant Association, recently winning a Sustainable City Award and another from the Sustainable Restaurant Association for Innovation. Hers is a company with some highly ethical credentials and a dedication to both healthy eating and healthy fishing. Bjerrum is a busy woman. Recently appearing on Japanese TV talking about the crisis of endangered Blue fin tuna, she’s passionate about her causes and about sushi, which she first discovered in London almost 20 years ago. ‘I went for an interview at Nippon Tuk, owned by Jeremy Rose, in 1994. I fell in to sushi, but soon

discovered I had a flair for it.’ She saw immediate parallels between Danish and Japanese food, and soon abandoned her plans for an academic career for a life in sushi. ‘Japanese food is clean, simple flavours with a real focus on ingredients – not dissimilar to Nordic cuisine – and it has been so interesting to see the growth of Japanese food in the UK.’ Feng Sushi first opened on Fulham Road in 1999. ‘My then business partner Jeremy Rose and I wanted to do a good quality delivery sushi concept, while offering casual eat-in too. Over the years we have expanded organically. In 2010 the original shareholder group departed and Luke Johnson came on board as serious investor. Since then we have enhanced the business, in particular online delivery, and opened up to new projects: a delivery hub in Billingsgate Market and a gorgeous restaurant on West Hampstead’s West End Lane offering eat-in, takeaway and delivery. Our latest venture is a new design focusing on keeping the eat-in experience undisturbed by the delivery service.’ Running a business is very demanding, as everybody knows, so how does she manage any sort of work/life balance?

‘I would lie if I said this is easy, but I love my family and I love my job, so it is all about ensuring one does not exclude the other,’ says Bjerrum. ‘I think it can be useful for children to see that a parent has an important role outside the home which they enjoy, but in return it is important to switch off at home and be there for the kids and do things with them they like to do regularly. I do not always get it right, but parenthood is a wonderful challenge in life.’ Silla actively supports the Marine Stewardship Council and has become an authority on sustainable fishing. ‘All our fish is sustainably sourced, it is our ethos, conscience, our insurance for future deliveries and our knowledge that well-sourced sustainable fish simply tastes better.’ And health-wise, sushi is one of the best things for you. ‘It is a well-balanced meal of good carbs, right protein, the good fats, veg and omega 3 and omega 6. Sushi is also very good for portion control, leaving you satisfied but not bloated.’ For summer, Silla has devised a special three-day diet, which promises to kick start a healthy season by helping to get rid of cravings. She says: ‘It consists of complex crab, seaweed and protein, but not wheat, sugar or preservatives and is approximately 1,500 calories a day, so you will not starve, but be inspired to keep up with good eating habits.’

Food fans rejoice: Southeast London’s most iconic market just got a shiny new addition...

A

n elegant glass structure adjoining the venerable Green Market and opening out onto Borough High Street, the hall is billed as ‘a classroom, kitchen, orchard, function room, reception area, information hub and dining hall’. What that translates to is a beautiful city garden perfect for meeting friends and enjoying some of the market’s world-famous wares. But there’s more... The new space is not just an aesthetic triumph; it’s a living environment filled with herbs, hops, fruits and flowers that will be used in education programmes, workshops and tasting sessions. Over the last decade, Borough Market has pioneered ideas like sustainability, community involvement and the importance of local, ethical produce, and the Market Hall is proof that SE1’s finest foodie destination is as forward-thinking as ever. Borough Market opens Monday- Wednesday, 11am-2pm, Thursday 11am-5pm, Friday 12-6pm, Saturday 8am-5pm. 8 Southwark Street, SE1; boroughmarket.org.uk

DON’T MISS With its emphasis on quality and provenance, Borough paved the way for London’s foodie revolution. Here are three traders (among many) worth seeking out: Rubies in the Rubble Lipsmacking jams and chutneys made from perfectly delicious fruit and veg otherwise destined for the dump. Established by former hedge fund employee Jenny Dawson, the company fights unnecessary waste and employs people struggling to get into work.

Chegworth Valley Granddaddies of the artisan produce movement, Chegworth Valley produces incredible (and incredibly English) juices from fruit plucked from the orchards on the family farm in Kent.

The main living area of this home is deceptively simple. Beyond the high ceilings and expanse of white floorboards, you’ll find an incredible attention to detail. A modern coffee table sits in front of a soft grey couch, the wall is adorned with multiple canvases and touches of European contemporary design abound. The kitchen is robust, with butchers’ tiles and a collection of Victorian-style copper saucepans, while the dining table seats four in white Eames chairs. The master bedroom makes use of reclaimed furniture to wonderful effect, contrasting a bulbous green light with architectural bedside tables. GOLDMAN & RANKIN P The secret to stylish interiors is revealed

eek inside the little black book of many a top interior designer and you’ll find the name Goldman & Rankin. The firm specialises in the creation of bespoke kitchens, wardrobes, studies and occasional furniture, and its approach – which combines an intuitive flair for design with the very highest production standards – has won it adoring fans across the industry. Now, with the opening of a beautiful new showroom in Kensal Rise, the secret is out, and it’s possible to explore the world of Goldman & Rankin for yourself. The showroom is a 500 square-foot treasury of ingenious design ideas and bespoke furnishings, the perfect space in which to discover the firm’s trademark blend of classic designs, traditional techniques and inspired modern flourishes. Every part of a Goldman & Rankin design is made in the UK using traditional methods and a wide variety of solid and veneer woods and complementary materials; the result is a range of unique interiors that are as desirable as they are practical. Company founder Nicholas Goldman grew up in a family of designers and worked as an interior designer himself before starting Goldman & Rankin in

2008. The business has gone from strength to strength ever since, and the Kensal Rise space has everyone excited. Goldman himself says that, ‘The showroom was the natural next step; it gives us a place to showcase our work and somewhere to invite new and existing clients to get a feel for what we offer. The local area is a hive of creativity and energy.’ Asked about trends for the months ahead, Goldman enthuses: ‘Metallics are a big trend right now and one that works beautifully in the kitchen. Textures, mixed materials and unusual finishes add definition to a kitchen, and are surprisingly easy to incorporate whether you’re planning a full refit or just want to update an existing design.’ Of course, visitors to the showroom can witness Goldman & Rankin’s take on new trends first-hand, as well as browsing other interior offerings including Aga cookers (the firm is an authorised dealer) and a forthcoming range of upholstered furniture. A welcome new addition to the buzzing Kensal Rise scene, then – and a new must-visit for the aesthetically inclined. Open Monday to Friday and weekends by appointment. 6A Regent Street, NW10; goldmanandrankin.com 63

Evian Resort France

By Arabella Preston

itting high above the shores of Lake Geneva in the French spa town of Evian, the serene Hotel Ermitage seems to float upon a cloud of well-being and tranquillity. From the moment I stepped into my room and opened the French doors to the clear lake air, I understood why the resort has been a Mecca for rest and recuperation for over 100 years. Taking the lift from my floor directly down to the hotel’s Spa Quatre Terres, I was transported to Bali via India and China through the dark wood decor and the healing hands of expert therapists. There’s a holistic focus – my massage therapist incorporated the use of healing crystals while giving me one of the best deep-tissue massages of my life. After recuperating on a soft bed with a glass of Evian – naturellement – I then spent the afternoon lazing in the spa’s Jacuzzi and steam room. The next morning the hotel’s dashing chauffeur took me down the hill to the lake and into the heart of the resort. I came, as others have been for centuries, to Les Thermes D’Evian to ‘take the waters’. This involved being pummelled by hydro jets (seriously enlivening) and being ‘rained on’ by heated Evian water while a therapist gave me an allover body massage. Evian cannot be rivalled for its blend of tranquillity, excellent food and winning service. Next time I’ll be returning with my family in tow to take advantage of the superlative Kids’ Resort with its own pool, tennis lessons, cooking workshops and much more.... ituated in a grand Victorian building just inches from the River Thames, the Corinthia is by far the most sumptuous hotel in all of London. The Spa certainly helps. ESPA may well be the world’s leading spa company, with several awards to its names and outposts all over the world, but the concept spa at the Corinthia, ESPA Life, is the first of its kind. It’s tailored to give you the ultimate in luxury spa experiences: there are lifestyle programmes to follow for anything from insomnia to pregnancy, intricate beauty treatments (for both men and women) and a vast nail studio and gym. Even the most basic of massages and facials last an hour, for the highly elaborate runthrough that beauticians afford every client is never rushed, and comfortably performed in the ultra-private spaceship-like treatment pods. The relaxation area greets you with heated marble chaise-longues, roaring fires and bathtubs for oil rub-downs, while there’s also an ethereal sleep pod, where a hanging fireplace warms a pitch-black room with cut-off sections replete with black and ruby cushions and dramatic velvet drapes for privacy. Afterwards, drag yourself up to The Lobby Lounge and indulge in the Afternoon Tea in the tranquil outdoor courtyard. Expect an endless flow of cakes, tea chosen from a dedicated three page long menu and plates of triangle sandwiches so elegant, you won’t want to actually eat them. Doubles from £450 per night. no refined sugars. Satisfying and flavoursome dishes such as roasted chicken breast with ceps and organic red rice followed by poached pear with vanilla ice cream and chocolate sauce belie their low fat and calorie content to deliver a truly delicious meal. Les Sources de Caudalie Bordeaux, France By Ursula Van der Vorm

Ti Sana

Detox Retreat & Spa, Lombardy, Italy By Gabriel O’Rorke

typical day at Ti Sana starts with power walking at 8.30am along the Adda River, juice for breakfast – think courgette, apple, carrot and ginger – and an hourlong fitness session. Lunch is served at the ‘Food Lab’ from 12.30 and consists of a large bowl of salad and dehydrated flax seed crackers, followed by (yes, thanks be to the detox gods, there’s a second course) a faux carb dish like courgette ‘spaghetti’ in a cashew nut sauce (no added spaghetti, of course, just cleverly cut vegetables). Five meals a day doesn’t sound too bad – breakfast, snack, lunch, snack, dinner – but when three of these ‘meals’ are juices, and one day a week is liquid only, things become a little more Spartan. Minimal food and gentle exercise are combined with a medical assessment, blood tests, a doctor’s appointment and a colonic – this is the only spa in Italy with the ‘Angel of Water’ machine which you operate yourself, keeping your dignity intact. The spa is well equipped, stocked with organic products (like the Anika range) and kitted out with

A

an infrared sauna, normal sauna, steam room and several jets and rain showers. Spa treatments, however, are limited to one or two per visit depending on your regime – Raw Food, Juicing or Energising. The focus is very much on what you are (or are not) eating, and the aim is to regulate cortisol levels by exercising in the morning, eating in the middle of the day and practicing Chinese Qi Gong meditation in the evening. This takes place in a large, light studio in one of the restored 18th century terracottaroofed buildings – the hotel is made up of a cluster of these stone houses and the 22 bedrooms are scattered between buildings. You’ll leave enlightened – the emphasis at Ti Sana is on educating guests, with daily lectures on well-being so that you can continue the good work after. Ti Sana has three Active Life Programmes: Juicing Detox fasting; Fresh Lifestyle raw food and Energy Lifestyle with raw and healthy cooked foods. Prices start from EUR 170 per person per day. For reservations: +39 039 992 0963/79 or 1711.it

et amidst the vineyards of the Chateau Smith Haut Lafitte estate in Bordeaux, Les Sources de Caudalie is a rural retreat with a twist. Inspired by the concept of the ‘French Paradox’, whereby the diet and lifestyle of Southwest France is seen as conducive to good health, the hotel has taken the concept to heart, playing host the original and now world-famous Vinothérapie spa. Here, treatments are wine-centric, incorporating the benefits of the grapes from the Graves Grand Cru Classé vines which the spa overlooks. During my visit, I sampled the 100% Grape Cure, which involves three oenophilic treatments a day, including the signature Crushed Cabernet Scrub, the merlot wrap, the Fleur de Vigne wrap and the red vine bath. I loved the Wine Maker’s Massage, which involved a smooth, wooden stick usually used for crushing grapes being rolled over my back to relieve the tension. However, Les Sources de Caudalie is not for dieters – the food is too good. Choose from Michelin-starred fine dining at La Grand’Vigne, Chef Nicolas Masse’s restaurant overlooking the lake, or bistro-style food in La Table du Lavoir, in a 19thcentury wash house formerly used by winegrower’s wives – both too delicious for words. The 3 day Grape Cure costs EUR 525. Stays from EUR 250 per room per night; sources-caudalie.com

E

very day, without fail, I find myself in need of a sugary, three o’clock pick-me-up. It doesn’t matter whether it’s biscuits, chocolate or a sugary drink, these little daily indulgences are my weapon of in the battle against the dreaded afternoon slump. I know, of course, that it’s not the healthiest of choices, but my sugar cravings are too strong to be ignored. I needed a solution, and when I finally found one, it just so happened to be in the ambient microclimate of southern Spain. Lucky me. Nestled on a hillside in the Sierra Helada Natural Park is the SHA Wellness Clinic, a sprawling expanse of whitewashed buildings boasting stunning views. Providing an oasis for those seeking a detox or relief from more serious health conditions, the foundations of SHA are rooted firmly in the science of macrobiotics; the term derives from the Greek macro, meaning long or great, and biosis, meaning life. Leading the quest for this ‘longlife’ is SHA founder Alfredo Bataller Parietti, whom I meet upon arrival. I have to admit that I was nervous about the imposed diet; I am not good at being told what to eat. My day could include three balanced meals; on the other hand, it might just be dinner and snacks – it’s anything but balanced. I voiced these concerns to Alfredo, yet he assured me that the diet would be ideal for a vegetarian like myself. The plan regulates energy levels by balancing the nutrients that the body receives, rather than feeding it what it craves. Guests at SHA are introduced to a menu of medical, aesthetic and therapeutic treatments via a series of meetings at the beginning of their stay. There is a food consultation in which the myths of the vegetable and whole grain-friendly diet are broken down, aesthetic consultations in which you can discuss conditions or imperfections, plus a full medical checkup. During my food consultation with Dr Kenneth Prange, I realised that this diet is not as restrictive as I had previously thought. It is true that animal products, such as meat and dairy, do not feature regularly on your dinner plate, but naturally sweetened desserts and a whole host of other inventive and exciting ingredients get a chance to tickle your taste buds. What impressed me the most at this wellness haven was the level to which you could tailor your experience to match your particular dietary, medical and aesthetic needs. I was assigned to the ‘Biolight’ diet during my stay, a healthy middle-road menu for those who want a detox, but who aren’t

necessarily looking to shift pounds. There is also the Kushi diet, a stripped-back extralight menu of salads and soups, and the gastronomic SHA diet – many an evening was spent eyeing-up the pungent steamfilled cloches as they passed our table in the Shamadi dining room on their way to SHA menu devotees. Lunch was the first meal that I tucked into at the clinic. I had a cucumber, dill and yoghurt cream soup, which was perfectly fresh and zingy. This was followed by a modest portion of spelt tagliatelle in a creamy pesto sauce, garnished with crispy basil chips and toasted pine nuts. Happily for me, meal times on the Biolight and SHA menus are always split into a starter, main and a dessert, tricking my stomach into believing it was consuming more food. This fact – coupled with the macrobiotic teaching that digestion starts in the mouth and food must be chewed properly – meant that mealtimes were generally a more pleasurable affair and I felt satisfied for longer. The food at SHA was a welcome surprise – head chef Pablo Montoro served inventive and delicious alternatives to desserts, sweetened with barley malt or rice syrup. I even had a spelt bread pizza one joyous evening and I must not forget the most mouth-wateringly succulent grilled scorpion fish with beetroot foam, grated tonka beans and black fennel tempura. Once you are alive and kicking, the fun really starts; SHA offers macrobiotic cookery classes, healthy eating seminars and a wide variety of fitness classes, both inside the state-of-the-art gym and outside on the sundrenched terrace. I chose to spend much of my time in the spa, where the gentle sound of trickling water follows you everywhere as you float about in a fluff y white robe. The lymphatic drainage massage is highly recommended to aid the detox, coaxing any lingering toxins from your body. The spa has one of the most impressive menus I’ve ever seen, and guests can enjoy all manner of traditional treatments, as well as some of the most technologically advanced aesthetic procedures in the world (it’s definitely worth booking a Thermage Comfort Pulse Technology consultation, as the before and after results images are seriously impressive). After days spent swimming, exercising, and spa-ing, I collapsed in my humongous bed to watch the twinkling lights of houses down on the hillside as my final day drew to a close. I definitely left SHA Wellness Clinic feeling happier and healthier, with the cravings that had been troubling me completely eradicated. I’m happy to report

that I’ve stuck to my diet since arriving home, encouraged by the threat of relapsing back to sluggish energy levels. If this is how I feel after a three-day stint, I can only imagine how guests enjoying a two-week programme must feel. Sublime, I’d imagine. Essential Escapes offers a seven night Detox Holiday at SHA Wellness Clinic from £2989 per person based on two sharing including transfers, accommodation in a Deluxe Suite, full board, a general medical check-up, plus detox treatments and massages (020 7284 3344; essentialescapes.com). OWN WORDS PHOTOGRAPHY: REBECCA NOONAN

can’t say that when I was younger I had a burning ambition to work in the property industry, as my first passion lay elsewhere amongst paints, fabric and a sewing machine! I also had an inquiring mind and adventurous spirit that naturally led me to travel and experience other cultures. However, after three years living and working in South East Asia I had a chance meeting at a party in Crouch End. It led to the offer of a job to cover maternity leave and paved the way to a 16 year long career in the world of property. The business of buying and selling houses is really a ‘people business’ and my job satisfaction ultimately comes from seeing happy clients sell their home and others settle in the house I’ve helped them find in an area I love. I am committed and passionate about providing a superior service (as are all of our staff ) to the local community and thrive on knowing I have achieved this. I’ve worked in three different areas in North London, starting off in Stoke Newington, moving onto Upper Street in Islington before finally coming to Prickett & Ellis in East Finchley. Coming to the area 10 years ago to manage Prickett & Ellis was like coming home, as I grew up locally and went to Tetherdown Primary School and Creighton (now Fortismere). I have obviously seen the area change significantly over the years but continue to marvel at how lucky we are to have the beautiful open spaces of Coldfall &

Cherry Tree Woods on our doorstep. We can also boast with Highgate and Queens Wood, the Heath and Kenwood House only a short walk away. The iconic Archer presides over our Underground station, and the historic Phoenix Cinema offers a selection of diverse films and educational experiences. Local creativity in other arts fields also continue to go from strength to strength with the East Finchley Open, which we sponsor, now in its 10th year. Even more exciting is that we will be playing host to a 2 week exhibition from 6th July – so come and visit our High Road office to admire some of the great local art. With all the change in the area it’s amazing how we have managed to retain such a sense of community on the High Road. This has been helped by local residents getting involved and organising events such as the East Finchley Festival, which is held in June in Cherry Tree Woods. Good schools and transport also enhance living here and we have a fantastic mix of practical shops (not many hardware/electrical shops remain in other areas). Not to forget the ever present delicious cafes and restaurants and pretty boutique gift shops for original presents and special wrapping paper. Don’t get me wrong, I’m all for a nice boutique, but sometimes knowing you can buy a packet of screws from your corner shop is very handy. Oh yes, we also have some pretty good pubs nearby too.

e are a block of 15 flats and are considering Right to Manage. Can you give us some practical advice about managing our building? The ‘Right to Manage’ is the statutory right of leaseholders to take over the management of their building (under the Commonhold and Leasehold Reform Act 2002). It is a powerful tool, which subject to meeting criteria and without the need to pay a premium to the landlord, entitles leaseholders to carry out most duties that a landlord is obliged to undertake under the terms of your leases. For example, arranging the insurance, repair and maintenance of the building, providing heating and cleaning of the common parts, overlooking major works and generally the day to day management of the building.
