Personally, I always find summer hideously stressful, what with having to dig out my long lost summer wardrobe, fit in last minute beauty treatments and motivate myself to get off the sofa and do some exercise so that my body is a bit more bikini-friendly (although the more swimwear shopping I do, the more a trip to the Arctic sounds appealing...). Anyway, this month’s issue aims to get a handle on these problems, solving them with our usual stress-saving panache. Joanne Hegarty gives a simple, straightforward guide to summer style on p.21 (as well as some pointers on where to actually find these key pieces) and we round up the season’s best fitness gears so that you’ll actually want to work out. crupulously researched and elegantly written, curator at Kensington Palace Dr Joanna Marschner’s fascinating biography of Queen Caroline re-evaluates her importance in Georgian history. Blonde, blue-eyed and fashionably chubby, Caroline was much sought-after as a royal bride. At 22, she married George II and was crowned alongside her husband in 1727. Cleverer than the dim George, Caroline was loved by the British people, played a key role in politics and supported freedom of the press. Though born and raised in Germany, Caroline spent much of her life at Kensington Palace where she surrounded herself with leading artists and thinkers, such as Voltaire. She managed private matters as deftly as public ones, and kept her husbands’ mistresses under close surveillance (Henrietta Howard, the Maîtresse en Titre, was appointed her lady-in-waiting). Caroline’s tolerance and loyalty won her George’s esteem (he left her as regent when abroad) and they had eight children. She was widely mourned when she died in 1737, not just by the public, but by her husband who refused to remarry. Today they still lie side by side in Westminster Abbey.

A
t its core, London is a city in constant structural flux; an ever-evolving mass of glass and steel that shifts with the demands of contemporary design. Beyond the blaze of neon lights and the banshee shrieks of braking red double-deckers, however, an older city survives. Its rugged, brick visage, weathered with character and history, is yet to be given a smooth, concrete facelift. It is in these forgotten nooks that faded adverts of old slowly, silently decay. These adverts, sometimes called ghost signs or brick adverts, come and go with the churn of commerce and often all that is left is some carefully painted, spectral lettering. This book is a catalogue, of sorts, of the adverts currently visible in London. Faded signs

THE MIGHTY WHITE This summer, white is a key player. Embrace it with a tailored white blazer, a wonderfully flexible piece, which I have recommended to several of my clients this season. It works effortlessly over a pair of blue jeans or a colourful dress for evening wear and is the perfect tool for toning down bright yellows and greens. Not so long ago, our staple friend, the white shirt, was relegated to a life of starch, poking out from dark corporate blazers. Not any more. On the high street, Zara, Reiss and Ted Baker have some great options. For those with a little more cash to splash, Theory and Boss also have some real beauties in stock.
MODERN FLORALS An explosion of florals appeared on the catwalks this year, firmly in bloom on tops, trousers, jackets and accessories. Although it’s not exactly ground breaking – florals for summer – there’s plenty of variety to choose from. In particular, Massimo Dutti have some gorgeous floral shirts in stock in soft greens and lemons. Just remember, when wearing florals, keep the rest simple and accessorise with solid, single shade bags and colour block shoes.

THE PRETTY PASTEL TREND Minty green, citrus lemon, baby blue – beautiful pastel shades are a huge trend this summer mmer and a perfect way to infuse your wardrobe with a burst of colour. Pastels go beautifully with their vibrant brighter cousins, so don’t be afraid to pair mint greens with bright greens and baby blues with cobalts to create a striking look. he French would describe it as ‘bijou’, but the size of Charlotte Cave’s diminutive salon in Clapham makes it feel all the more exclusive. It’s decidedly cool, much like a studio in fact, which is unsurprising considering the owner’s credentials. Celebrity stylist Charlotte has worked with numerous top titles including Harper’s Bazaar, InStyle, French Vogue, ID and GQ and the Beauty Lounge is plastered with framed images from the shoots she has styled. I particularly enjoyed gazing upon a brooding Daniel Craig (to appreciate his hair, of course) as I received my expertly executed manicure. The Beauty Lounge is a subterranean boudoir of sophisticated femininity: white-washed beams, pastel floral wallpaper, armchairs you sink into. Here, beauty treatments are conducted by the lovely Amy using decadent Sisley products. I trial the bespoke Sisley mini facial, which leaves my skin smooth and glowing after just 30 minutes. As I head back upstairs, I peer in the mirror and see that my pores are already visibly reduced, proving that the treatment is worth its weight in gold. Back upstairs in the Hair Room, Charlotte waits to reinvent my hair. My layers, she tells me, are too separate and need to ‘speak to each other more’ in order to give me a more harmonious look. This will, she tells me, require that I lose some length... I’m apprehensive as she chops my locks and the end result is much shorter than I’d usually go for. But it quickly grows on me, and the synergy between the layers makes my hair feel lighter and look younger in style. Back in the office, with my hair styled for summer and my nails in the latest Essie shade of a pretty pale blue, the compliments come thick and fast. The place to go for the fashion forward seeking some very stylish pampering – all it takes is a little trust. By Georgie Lane-Godfrey

Forget the eyebrow. This season it’s all about the lash, says Arabella Preston

ashes are the new brows. Or so the Spring Summer catwalks decreed. After seasons of heavy-duty Cara worshipping, there was a new idol in town. A kind of modern Jane Birkin, a doe-eyed sex kitten, with tousled hair and lashings of lashes. Mascara in the noughties was top heavy, drawing the eyes upwards and outwards into a feline shape. The look for the twenty-tens is based upon placing equal emphasis on the lower lashes to widen the eyes. At the JeanPierre Braganza show, MAC make-up artist Terry Barber even placed individual lashes on the lower lash line creating a model line-up of Bambi-lookalikes. The key to starting this look is an eye palette like this Estée Lauder one – use the pale shade to sweep all over the eyelid, then a fine brush to line the eyes with the black shade and take it into the socket, using a softer eye brush to blend, blend, blend. Charlotte Tilbury’s clever Eye Cheat pencil is a modern take on the Twiggy white-pencilin-the-waterline look. It is an instant eye brightener and essential for creating the rounded eye. Follow with a liquid liner along the top lashes, drawing out a soft flick and taking mid-way along the lower lash line. Then curl your lashes like you never have before and load on a volumising and truly black mascara, top and bottom. I love this Hourglass one. If you can manage it, a set of false eyelashes will set the seal on this look. Eylure are the original and best. I am never without a set of their 020 Naturals. Get a decent glue (the best is DUO, available at MAC and online) and cut the lashes to fit your eye before applying, always snipping at the inner corner. A pale peach on the cheeks and a nude lip are all that is required for the finishing touches. It’s a look that has stood the test of time because it is feminine, seemingly effortless and, above all, very sexy.

ver the last few years, the number of diet delivery services on the market has rocketed, yet in the luxury sector, there’s still one clear leader: The Pure Package. Dinners meanwhile are more varied – plaice served with artichokes, kalamata olives and pepper sauce or rocket pesto snapper.

The main attraction here is the convenience. There definitely is a luxurious feel to the experience and although the quantities keep me full, I struggle to stick to it. This is mainly down to the fact that there’s no pudding allocated after dinner, so I have to save my fruit snack in the morning to satisfy my cravings in the evening. It definitely makes me feel lighter, but at a cost. Social invitations have to be declined to make it work – there’s no drinking allowed and really no point in eating out. But if you stick to it, you’re guaranteed to lose weight and the results are impressive. Great for busy people with no time to prepare healthy meals – just make sure you clear your schedule first. Making a splash From bikini bodies to menopause and makeovers, Georgie Lane-Godfrey catches up with Battersea-based interior designer and presenter, Linda Barker
BE HAPPY IN YOUR SKIN. IT'S NO MORE COMPLICATED THAN THAT
W
hen I meet Linda Barker in the basement of Soho House, she looks a little tired. Which is ironic, considering she’s promoting an energy supplement. I’m her last interview of the day but, despite this, she still manages to muster up a genuine enthusiasm when I ask her about it. ‘It’s given me a turbo charge,’ she tells me, all her former fatigue dissolving. ‘A friend told me about it – it’s very much one of those products that gets spread through word of mouth – and I’ve become crazy about it!’ The product is Revive Active, an energy supplement taken once a day which claims to make you feel younger, stronger and more alert. ‘I’m usually quite sceptical about these products, but I believe in this one and what it does,’ she gushes, in her chipper Yorkshire tones. It would seem that Linda Barker has become something of an authority on wellbeing these days. Ever since she appeared in Splash! dangling off the edge of a 7.5m high diving board in nothing more than a splangly fuschia bikini, the media attention has been shifted from Changing Rooms to changing figures, with viewers desperate to know the secrets to her trim, toned physique. So impressive was Barker’s bikini body that last year FHM put her on their list of the world’s 100 sexiest women. ‘That was really funny,’ she laughs when I bring it up. ‘I got an email from a friend, telling me I was on it, and then the phone just didn’t stop ringing. Even my daughter called from Manchester and just said, ‘Mum!!!’’

IT JUST WASN'T SOMETHING THAT WAS TALKED ABOUT. I THINK IT WAS A GENERATIONAL THING.
From then on the question was always the same: 'What's your secret?' ‘I’m naturally drawn to a very healthy way of life and I’m very active,’ she tells me. ‘I go to the gym, I run, I cycle, I do yoga. That’s something I’ve done all my life.’ Of course, no one really wants to hear that there’s no real secret to it, that it’s just exercise, healthy eating and good genes. ‘And being happy in your own skin,’ she adds pointedly. ‘It’s no more complicated than that.’ As disappointing as that might sound, she does, however, reveal herself to be a fan of juice diets – a fad questioned extensively in recent press. ‘I know there has been some controversy about it, but it works really well for me,’ she insists. ‘There can be nothing wrong with drinking a carrot or celery, extracting the goodness out of it.’ Originally trained as a fine artist, Linda started off in the world of interiors as a stylist and writer. Having established a name for herself, Barker was then invited to make the pilot programme of Changing Rooms alongside Laurence Llewelyn-Bowen. The show was an international success, moving from BBC2 to BBC1 and attracting a UK audience of over ten million viewers per episode in its heyday. Today, she’s still very much a familiar face in home makeover shows such a 60 Minute Makeover, one of ITV’s
daytime staples. Now, there’s also a new show on the horizon, A New House for £5000, set to air on prime time Channel 5. ‘We’ve been really resourceful,’ she tells me enthusiastically when I ask her about the show. ‘We’re skip raiding, we’re begging for stuff that people have thrown out, we’re shopping in charity shops. It’s all about thinking about interior decoration in a completely different way and showing people how they can transform their home.’ It all sounds great, I tell her, but surely it’s not very realistic? What you manage to get your hands on a lot of the time is simply a matter of being in the right place at the right time. ‘It does depend on luck,’ she concedes, ‘and you do have to think on your feet, which television producers don’t
really like! But there are certain places where you can go that you know are going to be good. On Battersea Park Road, for example, there’s a wonderful charity shop called Oasis Furniture. It’s on my route home and I’m always caught by what they have in there.’ But for Barker, it’s not just about making a statement in the world of interiors. She’s also been speaking out about menopause and the need to remove the stigma attached to it. ‘I wasn’t unhappy chatting a little bit about it,’ she says softly when I bring up some of her recent articles. ‘I think it’s about communication at the end of the day. My mum died 12 years ago, so I never had the opportunity to talk about it. But then it just wasn’t something that was talked about. I think it was a generational thing.’ She does, however, think this attitude is changing, albeit slowly. ‘The fact that there are older women in the magazines, that you don’t have to fib about your age anymore, that people are saying 50 is the new 40 makes you think that things are looking more positive for women.’ Does she think there is a sense of community amongst women of a certain age in the media? ‘I’d love to think there was. I think it might be beginning, but it’s slow. We’re getting there. Women like Dame Judi Dench and Helen Mirren are flying the flag for older women and they’re amazing.’ And what about Linda, is she flying the flag for an ageless generation by appearing in FHM? She laughs and considers this for a moment. ‘Maybe.’ reviveactive.com

A
pproaching the renovation of an entire house can be daunting. You obviously want to put an individual stamp on each room, but at the same time, these rooms have to harmonise. They are in the same house, after all. So, where to start? When I renovated my own home, adding a basement and loft extension, I began by looking very carefully at how, as a family, we lived in each space. This really helped with some of the fundamentals, like deciding that the new loft space should be the master bedroom and ensuite and that a first floor playroom/teenage den would allow us all to have our own space to breathe. With the help of local architect Matthew Heywood (matthewheywood.com), we then conceived the external design. In contrast to the Victorian façade of the house, we chose floor to ceiling glass, with modern aluminium bullnoses around both the side return and loft extensions. This stark contrast between the modern exterior and the original house was a deliberate one and formed the basis for the interior scheme. Take the sitting room, for example. Just as the modern additions sit comfortably beside the original house, a contemporary limestone mantle surrounds a fireplace featuring a high-efficiency glass-fronted gas fire. This is then framed with

HOUSE & GARDEN NEUTRAL COLOURS DON’T SAP THE DAYLIGHT AND HARMONISE WELL antique furniture on either side that is more in keeping with the room’s original features, such as the cornicing we had lovingly restored. Meanwhile the newly built areas are delineated with modern features. The glass balustrade leading down to the new basement area acts as a clear divide, defining the line between the old and new, the contemporary and the classic. Our new master bedroom at the top of the house is a modern, calm oasis drenched in light. It’s the only room in our London terrace that is double aspect and, as a result, the
light is fantastic, letting you play around with colour. The feature wall of Designers Guild wallpaper is very dark with a bright pink floral motif – something you couldn’t do in a dark, back bedroom. It is also air-conditioned, the best investment you’ll ever make if you are planning a loft extension. For the central areas, we chose to decorate in Farrow and Ball’s Shaded White, Off White and Slipper Satin. These areas are dark in any terraced house, but neutral colours don’t sap the daylight and harmonise well with rooms that feature a brighter palette. Efficiency was a key factor in the modernization, so the original sash windows were all replaced with stunning double-glazed replicas that, unlike their predecessors, actually go up and down and keep drafts out. We also installed energy-efficient
LED lighting, which cuts the cost of running the house in the long-term. These financial considerations are important. The budget certainly wasn’t bottomless and though I splashed out on certain items, I saved on others. A bespoke Carrera marble shower tray and bath surround for the new ensuite, for instance, was counterbalanced by classic yet cost-effective white Metro tiles which, when teamed with a soft grey grout, complement the marble perfectly. It has turned out to be a great family house to live in, with enough space so we don’t tread on each other’s toes. My son basically lives in the music room in the basement (so thankfully the rest of us can still hear ourselves think) and the kids love their bedrooms, which are sufficiently boyish and girlish without being twee or overtly themed so that they grow out of them instantly. After all, homes have to be lived in and the challenge is always to find that winning combination of great style and liveability. osa rugosa ‘Alba’, is a shrub rose of Japanese origin whose pure white flowers have charmingly crinkled petals. Rugosa roses are semi-evergreen or deciduous and are very tolerant, growing in poor soil and in both sun or semi shade. These roses make wonderful hedges, and although they are notoriously prickly plants, the blooms of this rose have an incredible scent and in late summer and autumn the flowers give way to large decorative hips. The foliage is a rich green in spring and summer and turns wonderfully golden in autumn, making this rugosa rose a beautiful addition to a garden whatever the season.

They won’t charge you for potting up either – you just pay for pots or window boxes, the plants you (or they) choose, and the compost. They offer garden advice and encourage people to
bring or send in photos of their difficult shady corners, or their balcony that needs screening off, or a poorly plant. Whatever the challenge, they are on hand to help. They even offer garden visits, with no charge, to help you plan your space. With free local delivery, and a friendly expert team – what’s not to love?
THEIR TOP 5 TIPS FOR YOUR GARDEN
Be bold, be brave. Good design is never half-hearted. Size doesn’t matter. Don’t ever think that you can’t have an amazing, show-stopping garden just because you’ve only got a balcony or a back-yard. Clear up the clutter. A lot of gardens and balconies would be half way there just by clearing up accumulated junk and introducing a sweeping
brush. Throw away old paint tins, deflated footballs, car tyres, broken pots, mattresses etc. Don’t use your garden to park things you don’t want indoors! Think big. A few large things (pots, plants, furniture) will make your urban Eden feel more spacious. Lots of small things will make it feel … small. We’ve all got used to filling our rooms with hulking great sofas, floor-to-ceiling mirrors, and statement wall art but we lose the plot as soon as we move outside & worry that we don’t have room to put a mug down. You do. Repeat, repeat, repeat and keep things simple. Repetition helps to pull a space together. There’s a reason we like cornflower meadows, bluebell woods – they’re simple, bold, with lots of repetition. Having one of this, one of that and then one of the other does nothing for a space.

Local food blogger Rob Allison on the secret to serving the ultimate summer barbeque
T
is that wonderful time of year, when for a short but blissful period Mother Nature does an impression of Summer and pushes normally sane men and women outside to cook. In a frenzy of flip flops, firelighters and barbeques, we all become culinary experts attempting to cook meat, fish and even squeaky cheese atop burning coals. Unfortunately much of this solar-powered vigour is misplaced and even through cider and rosé-tinted sunglasses we still see far too many slabs of meat cremated on the outside yet raw in the middle. And then there are those sausages which somehow make it through the grill to mix in with the burning coals (these, by the way, are NOT ok to serve).
INGREDIENTS THAT WERE ONCE HARD TO COME BY ARE NOW EASILY SOURCED
Pour 100ml of light soy sauce into a dish, and mince in 3 cloves of garlic along with 3cm of peeled, fresh ginger. Roughly slice 4 spring onions and add to the soy along with 2tsp toasted sesame oil and 2tsp caster sugar. Mix the ingredients thoroughly before pouring over your chosen steaks and leaving to marinade for a minimum of 2 hours. Allow your meat to warm to room temperature before grilling hard on the BBQ for 2-3 minutes each side. Give your steak as much time resting as it has had on the grill to ensure even cooking and tenderness. Serve with sticky rice, baby gem lettuce and plenty of kimchi.
It’s time to take a few lessons from the masters (and I’m not talking about the Australians, Argentinians or South Africans). The Koreans have been cooking over coals for centuries. Their national dish, Bulgogi, is traditionally cooked on the barbeque, and the many accompaniments Koreans like to serve with their meals seem tailor-made to cut through the rich darkness of barbequed meats. The strong combination of spring
onion, garlic and soy sauce which they use to marinate their beef not only stands up to the smokiness of the barbeque, but is also sweetly enhanced by the smoke. The vinegary and spicy pang of the side dishes such as kimchi cut perfectly through the richness of the fat and flavour of the meat. Luckily enough it seems that Korean food is in vogue at the moment, so ingredients that were once hard to come by are now easily sourced in any Asian supermarket. G
etting to Battersea’s Ransome’s Docks is always a bit of a pain for those who aren’t local – the overground stations aren’t convenient, the buses get caught in traffic, tube stations are a distant dream. All the better for us residents who can walk here and jealously guard the area’s spoils for ourselves. Source is exactly one of those places – an independently run restaurant hidden away from wandering eyes. Settling into our fashionably mismatched seats, we start off by ordering Mogintos from the excellent cocktail menu, fizzy twists on a mojito with gin, mint, lime and Prosecco. We also order some of Source’s filtered water, collected from their own spring. Costing £1 a bottle, 80p of this goes to Magic Breakfast, a charity providing free morning meals in London schools to children too hungry to concentrate. With a maxim of ‘Seasonal. Simple. Social.’, Source’s focus is on locally-sourced seasonal produce chosen to showcase the very best British ingredients. The menu is short but sweet, filled with a mixture of small plates and more substantial ones (so as you can be as social as you want when it comes to sharing). The chef is James Adams, previously
of Kensington Place and the River Café, who serves up balanced dishes where vegetables are celebrated, not overlooked as accompaniments. Our starter of heritage carrot salad with feta and sunflower seeds proved this perfectly, the sweet carrot singing against the soft cheese and crunch of the seeds. Onto the mains: lamb sweetbreads accompanied with polenta, asparagus and wild garlic, and an Israeli couscous salad. Wholesome and comforting, the sweetbreads and polenta were rich and creamy, while the Israeli couscous, with its oversized grains, offered a more filling take on the traditional summer salad. To finish, we shared the chocolate fondant with peanut butter and toasted marshmallow, which proved too sweet to finish – it didn’t need the extra sugar hit from the marshmallow. But overall, one of the best restaurants I’ve eaten in south of the river. My only gripe? The décor, which feels a little too industrial for the fresh, farm-totable seasonal menu. VIBE On the first floor you’ll find Olivier award-winning Theatre503, which stages over 300 shows a year showcasing new writing talent. As a result, there are plenty of diners in for the pre-theatre menu, as well as your usual punters drawn to the pub’s busy, buzzy atmosphere.
FOOD Burgers and fish and chips might be on the menu, but the food here is high end in comparison to the usual pub fare. Light, summery dishes such as the Pecorino & honey ravioli with buttered broad beans, peas and mint capture the season, as well as poached sea bass, crispy potatoes, baby gem, peas, chorizo crumble and Bois bourdain sauce. Delicious.
DRINK Here red wines steal the show. We recommend a dark, ripe and juicy 2012 Merlot from Gran Haciend, Chile.
VERDICT Forget the theatre, the food is worth coming for alone. Don’t miss the exceptional black pudding scotch eggs – a twist on the classic, much like the pub itself.

Once all the sugar has been added, pour in the oil in a slow, constant stream and beat until you have a very thick, pale mixture – you’re creating an emulsion. Stop the mixer, add the flour mixture all in one go, and mix again very briefly until just combined. Add the apples and fold them in with a large metal spoon until the fruit is stirred right through. Spoon it into the cake tin or tins, smooth the top, then sprinkle the tops with crumble. Place in the oven and immediately reduce the temperature to 170°C/gas mark 3. Bake the cakes for 40–45 minutes (for two small cakes) or 60–70 minutes for a large cake. They are ready when risen, springy and when a skewer inserted into the centre(s) comes out clean. Leave in the tin until completely cool.

This cake is so moist that it will keep for 3–4 days without trouble. Store it on a wooden board, loosely covered with a cloth, rather than in an airtight container.
CRUMBLE TOPPING INGREDIENTS
• 150g plain flour • 100g salted butter, chilled and diced • 50g caster sugar
APPLE CRUMBLE CAKE INGREDIENTS

• 2 eggs, at room temperature • 180g caster sugar • 220ml vegetable oil • 200g plain flour • 1 tsp ground cinnamon • 1 tsp mixed spice • ½ tsp ground cloves • ½ tsp grated nutmeg • 1 tsp bicarbonate of soda • ½ tsp fine sea salt • 300g peeled, cored Bramley apples (roughly 3 apples), cut into 1cm cubes • ½ quantity crumble topping
1 large or 2 small loaf cakes METHOD

Butter two loaf tins about 19cm x 8cm, or one large loaf tin measuring 24cm x 10cm, then line with baking paper. Preheat the oven to 200°C/gas mark 6. Sift together the flour, salt, spices and bicarbonate of soda and set aside.

In a stand mixer fitted with the beater, beat the eggs on a low speed, then gradually add the sugar, beating all the time.

Put the flour and butter in a bowl and use your fingertips to rub the butter into the flour (you also can do this using a mixer fitted with the beater attachment) until the mixture resembles breadcrumbs. Add the sugar and continue until you’re left with large crumbles – distinct nuggets of buttery dough should form. Don’t be afraid to really go for it and work the dough, pressing and rubbing it together between your fingertips.

Spread the crumble out on a plate or baking sheet lined with baking paper and chill for at least an hour in the fridge, or overnight. Don’t cover – the cold air in the fridge will help to dry it out and make it even crumblier. It will keep for 3–4 days.

the loaf. Coat the inside with mustard – use the back of a spoon or, even better, a pastry brush, to help you spread it evenly. Set the hollowed-out loaf aside and increase the oven temperature to 200°C/gas mark 6.

To make the filling, toss the leeks with the olive oil, salt, pepper and thyme and roast them for 30 minutes until meltingly soft. Leave to cool, then drain off any excess oil. In a separate jug, make the custard by whisking together the eggs and cream, then season well with salt and pepper.

Begin to assemble the loaf: place the bread bowl on a baking tray and spread the goat’s cheese evenly on the base, then top with the leeks. Pour the eggs and cream into the bread bowl in three stages, waiting a few minutes each time before adding more. Once all the custard is added, carefully transfer to the oven. Bake for 10 minutes, then reduce the temperature to 170°C/ gas mark 3 and bake for a further 25–35 minutes until the custard is set. Check the custard is cooked by inserting a skewer into the middle; if it comes out wet, give it another 5–10 minutes. Leave it to cool for 45 minutes to an hour. It should look rather like a quiche, and you can slice it up to serve it in just the same way.
VARIATIONS
As long as you stick to the same measurements for the savoury custard (the eggs and cream), anything goes – think of your favourite quiche and reinvent it as a picnic bread pie.
LEEK & GOAT’S CHEESE PICNIC LOAF INGREDIENTS
• 1 round loaf of bread, 20–25cm in diameter – any kind you like • 1 garlic clove, halved • 2 tsp Dijon mustard • 4 leeks, finely sliced, dark leaves discarded • 100ml olive oil • ½ tsp salt, plus extra to taste • ½ tsp black pepper, plus extra to taste • 5 sprigs of thyme, leaves only, chopped • 2 eggs • 150ml double cream • 250g soft, fresh goat’s cheese, crumbled
TO MAKE IN ADVANCE
This can be baked the day before you want to eat it. Reheat at 180°C/gas mark 4 for 10 minutes to bring it back to life before packing up and heading out on your picnic.

Preheat the oven to 180°C/gas mark 4. Prepare the bread bowl. Slice across the loaf of bread to remove the upper third, then use your hands to pull out as much of the middle of the remaining loaf as you can, creating a crusty bowl. You won’t need this excavated bread for this recipe, so set it aside to make breadcrumbs.

rundle two minutes down the hill, past the village church, and you’ll find yourself on the seafront in the middle of St Mawes. The treatment involves an application of moisturiser to the face the with aid of the electric current and soundwaves, followed by a very cold heavy gel mask, which then sets, sealing in the product. The current is used again, along with a hand held roller to aid deep absorption. Throughout the process high squeaks can be heard and a sensation of mild pinpricks is felt, which, although not painful, isn’t necessarily relaxing – more of what you’d call ‘an active treatment’. merging from a £10m facelift, this charming 17th-century farmhouse hotel now packs an impressive spa punch. Two years in the planning, the groundwork has paid off: everything from the deeply comfy massage beds to the posttreatment sorbets shout ‘indulgence’. At the heart of the spa lies a generous relaxing-areacum-café dominated by a towering funnelshaped fireplace. Chess sets and cashmere throws add to the informal atmosphere, while a selection of ‘posh nibbles’ from the pastry chef ensure spa-goers don’t go hungry. Sticking to a British theme, treatments are by Temple Spa (a family-owned English brand), and for a touch of glamour, there’s an ultragirly Veuve Clicquot nail bar. Therapists are trained by Pure Massage (so expect the best) and for something a bit different, there’s Rasul Mud therapy or an enriching ‘Mediterranean marinade’ facial available. One of the signature treatments is the ‘Silent Night Lavender Sleep’, which consists of two and a half hours of massage, scrubbing and foot rubbing, certain to settle even the most jittery of souls. I roadtested the lavender sauna, but it didn’t have quite as much lavender in the air as I would have liked. The salt-infused steam room and outdoor hydrotherapy pool, on the other hand, were fantastic. If you’re staying the night, expect to be spoilt rotten. Rooms are homely yet hi-tech – a tablet allows you to order fresh milk at the touch of a button – whilst in the communal areas, original flagstone floors, wood paneling and exposed stone hearths come together to create a most welcoming rural retreat. My favourite spot was the chic blue lounge just off the lobby – the perfect blend of Soho House meets mummy’s living room.

Carminger is also the brains behind the spa, so it comes as no surprise that the spa suites are airy and contemporary with plenty of attention to detail. Overall, Ockenden Manor’s yoga retreats are well conceived and hugely enjoyable. You’re certain to come away feeling pampered and clearer headed. Our only quibble is the scheduled 9pm dinner times, which made rising for early morning yoga a bit of a challenge. ax intrantibus. Salus exeuntibus. reads the motto engraved above the entrance at Grayshott – ‘Peace on arrival. Health on departure.’ It’s a statement which really does ring true. Secluded and peaceful, Grayshott lies in the heart of the Surrey countryside, a million miles away from the hustle and bustle of London, yet just an hour’s drive down the A3. A historic country house that was once the home of Victorian Poet Laureate Lord Alfred Tennyson, Grayshott has been showered with awards over the fifty years it has been in business. Admittedly the rooms feel a bit dated, but we can pretty much guarantee you’ll spend little enough time indoors; you only have to look out of the window to yearn to be outside. Set amongst 47 acres of beautiful gardens and adjoining over 700 acres of National Trust woodland, it’s a haven for walkers and cyclists – bikes are available to hire from reception. The spa itself has a real health focus and their celebrated 7 Day Regime centres on the digestive system, getting back in shape so that your body can restore, renew and cleanse. But all the usual high-end treatments are also on offer, as well as a few off-beat options too. One of which is the Equilibrium Therapy, a slow, rhythmic massage of the body, face and scalp designed to release negative emotions and give

might suggest, the spa is one of epic proportions, offering a dizzying array of treatments. It is also wildly popular. Combined, these things can, at times, make the experience less than relaxing. It attracts groups and caters well to them, but you might feel a little outnumbered if you go, as I did, for a quiet weekend with just one other person. The treatments themselves do make up for that: the therapists are bright, friendly and adept at creating a serene environment. The ‘beauty’ treatments were more accomplished than the massages: we sampled the Exotic Lime and Ginger Salt Glow and felt suitably squeaky-clean afterwards. The massages didn’t have quite the same impact; billed as ‘deep tissue’, mine felt a little limp. Titanic is perfect for a stylish, robe swaddled, hen weekend. THE JUNGLE, BOOKED. Sarah Gilbert discovers serenity and seclusion in the Indian paradise of Maharashtra
I
f you escape the chaotic megacity of Mumbai, with its terrifying, tumultuous traffic, and drive for a few hours past Lonavala, a hill station on the road to Pune, you’ll find yourself in the midst of the northern reaches of a spiny mountain range that stretches from Gujarat in the north along the coast until it reaches Kanyakumari, at the southern tip of India. These are the Sahyadri Mountains, or Western Ghats, and they form
the breath-taking backdrop to the Hilton Shillim Estate Retreat and Spa. Nestled in the 3500-acre private Shillim Estate in the bucolic district of Maharashtra, the retreat feels blissfully serene and secluded – a verdant haven after the hubbub of the city. Created with an emphasis on wellbeing and relaxation, the retreat’s watchwords are conserve, sustain and heal. 99 contemporary villas were built from local stone, designed to blend into the natural landscape. Inside, all have the same aesthetic: there’s no ostentation, just clean lines, neutral tones, space and privacy. No trees were cut during their construction; in fact thousands of endemic trees and shrubs were planted, creating a lush paradise for over 120 species of birds. Exploring the region, we drove along winding, unpaved roads through sleepy villages,
witnessing a kaleidoscope of rural life. A crocodile of immaculately dressed schoolchildren giggled as we passed. Women in vivid red, orange and pink saris stood out against the emerald-green, post-monsoon landscape, walking along the road carrying anything and everything on their heads, from firewood to gourds of water and bushels of wheat. In the fields, wooden ploughs were still pulled by oxen. Back on the retreat, there are electronic buggies to ferry you back and forth across its 320 acres, but it’s a paradise for walkers. Early one morning, we trekked up through

steamy rainforest to Shillim Peak; at 920 metres it’s the estate’s highest point. Arriving on top of its grassy plateau, we found a breakfast feast laid out for us, which we devoured as we looked out on the show-stopping views over the valley and Lake Pavna. And although the surroundings are beautiful, it’s the spa here that is the real draw. I began each day with a yoga class on an open-sided pavilion, surrounded by verdurous foliage and bird song. I sweated it out in the steam room, infra-red sauna and hot
tub before cooling off in the outsized swimming pool, and ended the day staring into the flickering flame of a candle in their contemporary take on a meditation cave. With over 150 treatments on offer, it’s one of the most extensive spas in the world, and many can also be taken in the privacy of your own villa. You can also learn to conjure up your own favourite Indian dish in a cookery class with the Executive Chef, who showed us the artistry and spices – bright red chilli powder orange cayenne, golden turmeric – behind some traditional recipes. Incredibly diverse, Indian cuisine is based on Ayuvedic principles and differs by climate and geographic region. That evening, after a
Cucumber Ginger Martini at the Valley Bar, we opted to sample more of his delicious dishes at the Chef’s Table. You can dine anywhere on the estate and on a balmy evening, sitting by the lake under the stars, it’s really something special. NUMBERS GAME Schools are bending over backwards to offer bursaries to the bright but broke. But, as Amanda Constance discovers, finding out if this means you is an altogether trickier question ILLUSTRATION PHIL COUZENS

our child is bright but you are broke, or at least you think you are. Does this mean a private education is out of your reach? Not necessarily. The good news is that private schools are offering more assistance with fees than ever before. The difficulty is in trying to work out if you qualify for any help. Susan Hamyln, Director of the Good Schools Guide Advice Service, says that, in the past few years, she has seen such an ‘explosion in demand’ from parents investigating bursaries that the GSG has now set up a dedicated Scholarship and Bursaries Service to help parents navigate a confusing system. One of the first questions she is always asked is: ‘Do we qualify for help?’ The answer, frustratingly, is that it depends. ‘What qualifies you for a bursary in London is different from the rest of the country,’ says Hamlyn. ‘Broke in London is far richer than broke in Yorkshire.’ Bursaries are certainly more plentiful than they were. The recent census from the Independent Schools Council (ISC) trumpeted that more than one third of private school pupils now receive assistance with fees, the amount of relief rising by 5.6% in the last year. This is partly because schools are bending over backwards to justify their charitable status with the Charities Commission. As Barnaby

Lenon, former head of Harrow and now chairman of the ISC explains, there has been a drift away from providing scholarships to bright children to providing bursaries for the less well-off. So what about Londoners; do the capital’s day schools offer decent bursaries, too? Hamlyn says the general rule is the richer the school, the better the bursary, which is why the older public schools can seem extremely generous. Hamlyn established the Scholarships and Bursaries Service following a talk by Tony Little, headmaster of Eton, about making public school education open to the most disadvantaged children. Most schools make it clear that bursary applications are treated on a case-by case-basis. It’s not simply
income that affects fees assistance but the value of your house, car, investments, even holidays. In collating what information is available into a central resource, the GSG has uncovered a huge disparity in provision. If you want a bursary at City of London School, for example, don’t bother applying if your gross household income is more than £45,000. In contrast, Godolphin and Laytmer, once proud of its assistedplaces scheme but now popular with the offspring of oligarchs, declares its threshold for bursary applications is £100,000. Most schools, such as Latymer, St Paul’s Girls, Dulwich College, King’s College School and UCS state that bursaries are offered on the basis of a student’s performance in entrance exams and interviews. And there’s the rub with bursaries. Applications for fee assistance can only be made after your child has been through the rigorous academic selection process. Only the most academically able will be offered a bursary, as schools can cherry-pick the best and competition in London is especially fierce. Hamlyn cautions that she frequently deals with the parents of a bright child who contact her with a view to getting a bursary but whose income renders them ineligible. Nevertheless, they put their children through the entrance exams for academically selective schools, only to find they don’t qualify for a bursary, can’t afford the fees, and the process has been in vain. ‘That’s an awful position to put a child in,’ Hamlyn says. ‘If you do look at high-flying academic independent schools with your eye on a bursary, you must be very clear with your child that you are taking a chance and you need a good state school as a back-up,’ Hamlyn adds. ‘Be realistic about your child. Just because he or she is in the top 10% at their state primary, doesn’t mean they will cut it in some of the most selective academic independents.’ This can be squeamish territory for the middle classes. We might joke over dinner about how rich or poor we are, but we rarely like to lay bare the numbers. But with independent education beyond most salaries, there is at least now less of a stigma when it comes to asking for help. goodschoolsguide.co.uk

1.Should I redecorate pre sale? I strongly feel that first impressions count. Therefore, unless the property is unmodernised, a well presented and clean exterior both front and rear is vital and shows that the owners have taken care of the property whilst it has been in their custody. However, this principle does not have to apply to the interior. Buyers like to redecorate even if the property is bought in good condition, and if internal building works are planned like a new bathroom or kitchen, the interior will need to be redecorated anyway after the builders have finished. However, if a property has been ‘maxed out to the full’ i.e. side returned and loft done and the paint work is obviously chipped and damaged, a fresh coat of paint never goes a miss.
2.Where should I invest? Escalating house prices in south-west London have outpaced property values in the capital’s centre for the first time (The Telegraph 13/2/14). With forecasted property prices set to rise by figures in excess of 26% over the next five years there has never been a better time to invest in property in the prime suburbs of London.

3.What common mistakes do sellers make? Whilst having coffee brewing on the stove and freshly cut flowers are not a requirement to sell a property, some simple tips will improve saleability. Decluttering is essential, especially in a smaller room, so prospective buyers can visualise a particular space. I always advise clients to have the windows cleaned as this makes a world of difference in terms of bringing light into a room.
4.When is the best time to sell? The property market tends to have peaks and troughs throughout the year and this is often dictated by the school holidays! Christmas, Easter and Summer all tend to be quiet periods. Most people look to sell during the first six months of the year, as the big decisions to move are often made over these holiday periods and people want to be settled again before the school year starts again at the beginning of September. Whilst not an exact science, a good agent should know the optimum times to launch a property to maximize the amount of buyers coming through the door.
5.Why hasn’t my property sold? There may be external factors such as a neighbours house which has junk piling up outside. Other factors can be proximity to a busy road or planned development. In truth, one of the most consistent reasons a property doesn’t sell is the asking price being too high in relation to others on the market. If the price is too high then the information available on the internet will quickly demonstrate this and will therefore lead to a house sitting on the market for months. A small adjustment in price is often enough to help get a house sold.
6.Should I use a financial advisor? A financial advisor can be really useful in helping you find the best deal for your mortgage. The difference between using a financial advisor and going straight to your bank or building society is that financial advisors have access to many different mortgage products, making it more likely that they will find the best deal for your circumstances. A ‘whole of market’ advisor is not limited to the amount or type of products they can recommend to you and is therefore a great option if you are unsure of what is out there.

Most of my time was spent in the Himalayan hills, Afghanistan or the backwaters of Kerala where for not a lot of money you could live like a king. I returned a few years later and in 1989, just as the market crashed, I started Ellisons. It was exciting, but very hard work. We now have four sales and lettings offices in Merton and are the largest independently owned estate agency in the area. I still love what I do and really enjoy the buzz of agency. Wimbledon has changed dramatically since then. Before the development of the Centre Court shopping centre it was a drab town centre, but now it has a vast array of both major label stores and boutique shops, the great theatre, beautiful parks and gardens, Wimbledon Common and Village and some excellent restaurants and pubs. We took a conscious decision many years ago to get involved in the community and to assist when we
could, and many of our 30 staff live in the area. We’re unusual in the fact that over 65% of people who work for Ellisons have been here for a minimum of 10 years and 50% have been here for more than 15 years. We decided to arrange something extra special to celebrate our 25 years in business and came up with the first annual Ellisons ‘Our Merton’ School Art Competition for the local schools. The idea being that we gave a joint prize of £8,000 to a junior and secondary school, with the two winning artists winning an iPad Mini or a family trip to London Zoo. We received over 2000 fantastic paintings/ drawings from more than 37 schools, the three judges from Chelsea Arts Club picked the winning portraits from The Ursuline High School and The Priory Primary School. The Merton Mayor Krystal Miller presented the prizes at a gala evening at Cannizaro House. You really should check out our website and have a look at the shortlisted 25 paintings. Most interesting property I’ve been involved with: We recently sold a property on Viewfield Road, which was the former Vicarage for St Michaels Church. It’s a stunning detached property with great character and charm, including the original receiving room.
Most unusual interior: A property on Southfields ‘Grid’ which had not been changed since the war. It had all of the original features including the bells for the maid and a full Anderson air raid shelter in the garden.

I never thought I’d see: House prices at their current levels, with so many buyers now focusing their search specifically on Southfields. It is no longer the secret haven it once was!

y personal best is a 22 minute Exchange of Contracts from receipt of papers for a dilapidated house between the commons and my personal worst is 18 months for a repossessed new build close to the Battersea Heliport (it took longer to sell the flat than it did to construct the entire new development on which the Heliport sits). Both are extreme examples, however, there is no doubt that property transactions are taking longer, especially for people who require a mortgage. It is a litigious world we now live in and given the vast sums of money involved in buying property solicitors rarely advise their clients to ‘take a view’ any longer. Conveyancing is a process that requires input from third parties, such as mortgage valuation surveyors and managing agents, at it can sometimes move at a glacial pace. That said, sellers can ‘grease the wheels’ by completing various legal forms and provide the necessary consents for any works that have been carried out, lodging them with their lawyer before finding a buyer. We are also now seeing many more vendors asking their own lawyers to apply for the Local Authority Searches before finding a buyer to reduce delays. A good yardstick for any seller from terms being agreed to an Exchange of Contracts is around five weeks.
