KRISTIN HJELLEGJERDE ON LEAVING THE AMERICAN ART SCENE TO START HER OWN GALLERY IN WANDSWORTH
I
moved to Putney from New York City with my husband and two sons early last year, for professional as well as personal reasons. It made sense to transfer my business, which had originally started as an art blog in the US. I had never been to Putney before so I was incredibly surprised by how much I enjoyed it. Initially, we thought we would only live here for a short time, but now I don’t want to leave. Having lived in Manhattan and also L.A, I was familiar with the art scene in the States. However, London is now the art capital of the world. There’s a thriving art scene underpinned by strong cultural institutions, more recently established at art fairs like Frieze, which draws a diverse and international crowd as well as a local customer base who are becoming more and more interested in contemporary art. I opened my own gallery, ArtEco, in Wandsworth on the loveliest street in South West London, ‘Old York Road’. The gallery is a bright open space which represents cutting edge international artists in a comfortable and relaxed setting. I like the idea of showing contemporary art in smaller, more intimate and diverse spaces that resemble an artist’s studio or a home rather than the traditional big box – the default setting for the last 40 years. I work with young emerging artists who have a fresh approach to materials, inviting us to see things in a new way. For example, Soheila Sokhanvari paints with crude Iranian oil on canvas and Radhika Agarwala re-invents the way bronze is used in contemporary sculpture. Another artist is Hector Castells-Matutano who creates negative and positive sculptural pieces in a photographic technique - his show starts on 16 November. About every five weeks we will have a new exhibit that will be curated around a

theme. In December the exhibit is called ‘Chromatic’ and will be the fifth here at ArtEco. It will be a colourful and powerful exhibit with window pieces, photographic sculptures and panoramic paintings. The gallery is for both serious collectors as well as new buyers or even people who just want something fantastic for their living room. I also hope the gallery will bring more people who are unfamiliar with the area to visit. I’ve actually seen people who have never been here before rush down to the Battersea sales office to look at the riverside apartments as they liked the area so much.
FAVOURITE SW PASTIMES I love taking the kids to playgrounds, going to the Wetland Centre, feeling the welcome from the neighbours and the real village atmosphere . Old York Road is my favourite place in London, home to my gallery and the famous Pantry, Doukan and Amirs Kitchen. There’s a great sense of community and I also adore my hairdresser Margareta at Geddes who fixes me up before the openings.
The gallery has a new show and opening every five weeks. Groups, schools and private clubs come here on a regular basis for evening events. We have had two artists’ talks so far and we are planning a series of performance art events and book readings. My perfect Saturday would be to go for a run down the river from Putney Bridge to Wandsworth Bridge. We usually go to the farmer’s market in Barnes where our boys enjoy Scandinavian hot dogs and we buy our food for the rest of the weekend. We enjoy our local pub ‘The Spencer’ on Lower Richmond Road. W
ith a soft, unassuming name like ‘Blake’ one might expect a morning in the company of the man band (not ‘boy band’ they assure me) would be rather sedate. But I was quick to discover, quite the contrary. In an ornate suite at the Mandarin Oriental, I sit with three out of the four band members – Jules Knight, Stephen Bowmen and Humphrey Berney. Relaxed and comfortable, they play off each other like schoolboys, and as a result, have me giggling like a schoolgirl. I’m convinced this has nothing to do with how good looking they are though they are, of course, very good looking. Jules has the cheeky smile of a loveable rogue, Stephen, the Hollywood-esque smoulder of Colin Firth, and Humphrey comes straight out of an Austen novel. With manners to match, any one of them would be ‘Mrs Bennet friendly’ and that is probably why their music, hitherto described as ‘classical pop’, is so loved by the 45+ market. But with their new album Start Over, they are hoping to introduce a younger audience. They have left Universal, the record company whose music videos had them crooning into the sea – ‘Why would you wear a brown suit on a beach? Ridiculous,’ snorts Stephen
– and they now operate under their own independent label, Blake Records. They have spent the last two years honing their very first pop album and are enthused by their new direction. ‘We’d describe it as “harmony pop,’’’ says Jules, ‘with a particular focus on the four voices. I don’t think anyone else is doing what we’re doing.’ They seem confident of success in the charts; confidence no doubt born from their solid fan base (I hear they are mobbed in the Far East). ‘Our fans are real fans,’ says Jules. ‘Over a period of years, they have stuck with us. That is building your house on rock.’ So, where did it all begin? Where most things do these days: Facebook. School friends Jules and Ollie Baines contacted contemporaries Dominic Tighe and Stephen from their respective training grounds – Central School and the Guildhall – to form a quartet. After wowing an audience at a house party, they approached former ‘Blue’ boss Daniel Glatman, and shortly after secured a £1m deal with Universal Classics and Jazz in 2007. Their debut album sold over 100,000 copies in the first three weeks and they were awarded a Brit Award for Album of the Year in 2008. Chaos ensued when Dominic announced he was leaving the band, just six weeks before their first tour, and with
so little time to recruit a new member, they turned to social media once again. Posting the opportunity on Twitter, they received hundreds of responses, one of which was from Humphrey. ‘I tweeted something like “Look no further” and then put my website,’ he remembers. ‘I’d actually already worked with a producer who had worked with Blake. So they contacted him and he said...’‘... Humphrey’s rubbish but you haven’t got a choice,’ interrupts Stephen, deadpan. ‘Yes, I feel I made a huge error in my career,’ Humphrey bounces back, equally as deadpan. ‘No, it’s been brilliant.’ Brilliant, yes, but easy? No. I later discover the boys rarely have time at home and when they do, it’s like gold dust. ‘I’d have brunch with my girlfriend Charlotte,’ says Humphrey, ‘and then go for a run along the river. I am a new resident of Wandsworth and have a little cottage with a garden. It’s a gorgeous place to live. I love The Alma, The East Hill and The Ship – three great pubs all within two minutes stumble away. But I think the great thing about Putney and Wandsworth is the River.’ ‘I’ve just bought a flat in Putney,’ adds Jules, ‘so at weekends I’ll walk up Roehampton Lane and sit and have brunch – all alone. And then I might go to the Odeon on Putney High Street. On my own...’

Although I sense he enjoys the attention, it is surprising that Jules should be the only unattached band member for he is probably the most well-known. It has been well documented that he attended St Andrews alongside Prince William and Catherine, Duchess of Cambridge, and spoke about his time with them in the run up to the Royal Wedding. Since he’s so often asked, I wonder if now, in retrospect, he regrets talking about them. He suddenly looks panicked and uncomfortable. ‘At the time [of the Royal Wedding] Blake were approached to do interviews on the subject. Everyone knew that I went to university with them and that there was a link, and it doesn’t take a genius to work out we studied Art History in the same year. We were approached and so yes, I was very happy to relay my brief experience of coming into contact with them and to talk about how nice they were.’ Their Royal connections don’t end there however, for they later reveal they performed at the unveiling of the Bomber Command
Memorial in July where they met Prince Charles. Indeed, they seem to charm royalty of all kinds for they go on to have a lively conversation about their friends in musical royalty – Vera Lynn, Tom Jones and Shirley Bassey. ‘Shirley is one of a kind,’ says Stephen, ‘it’s lovely to have people who have careers that have lasted up to 60 years, say
wistfully. ‘She listened in on some of our music and she was very complimentary. What is special about Caroline Randell compared to other lingerie services? I have been working in the lingerie industry for nearly 10 years. During this time I have worked in Rigby & Peller as a fitting consultant and gained a lot of expertise in fitting lingerie and lingerie product knowledge. I opened my first boutique in Wimbledon Village three years ago, and I have just opened my second boutique in Richmond. I opened them because I wanted to create a lingerie experience with impeccable service in a friendly environment and without intimidating staff. We pride ourselves on knowing your bra size within three seconds and, for many people, giving them their first perfectly fitted bra! Who are your favourites of the lingerie brands and designers that you stock? That is difficult as we house over 30 designer brands and I love each one for different reasons. Our designers are picked for their excellent fabric quality, superb fit and their flair to create stylish and flattering products. I think having the right collection of designers is so important for the success of my business as our customers know they are getting the very best that the world has to offer. We have just launched Marlies Dekkers and are so pleased with the collection. I must say, this is the brand I am wearing at the moment. How would you describe the ethos of Caroline Randell? First of all, to share my knowledge and expertise by offering an expert fitting service with no tape measures in sight! Secondly, to make buying lingerie a convenience where everything is on display. There is no hunting around for different colours or sizes. It is all there. Thirdly, to create a boutique where nobody feels
intimidated when they come in. Lingerie can sometimes be a tricky subject for women and an embarrassing one for men who might want to buy a present, so we try to fill the gap and make people feel comfortable. Finally, to give women what I think is actually a life-changing experience – wearing lingerie that actually fits them! Why is well-fitting lingerie so important? It is of paramount importance. It is well known that 80 per cent of women are wearing the wrong size bra. In our
experience this is true, with most women wearing a back size that is too big and a cup size that is too small. Not only does this mean that we are not getting the correct support from our bras (which can lead to sagging, as well as neck ache and back problems) but in addition, using our fitting service can totally transform your figure – putting the curves back in the right places and improving the silhouette dramatically. What is your greatest daily pleasure of running the boutique? In a nutshell, it is amazing to be able to make a difference to how women feel about themselves. I realised I wanted to be a hat designer when… After graduating from The National College of Art & Design I won a place on the MA Fashion Design course at the Royal College of Art in London. When I was interviewed I didn’t know whether to play down the hats or play up the hats, but they were thinking of setting up a millinery course so I became their guinea pig. After one day there I said to my tutor Sheilagh Brown: ‘What should I do? Should I make hats or clothes?’ She said: ‘Make hats.’ It was very practical, not a great revelation. My career break came when… In 1989 I took one of my hats to Michael Roberts, fashion director of Tatler magazine, and his style editor, Isabella Blow. Our conversation that day was all of about 20 seconds and I thought nothing of it. A few weeks afterwards, the secretary at the college said: ‘Some lady has been phoning up. She wants to know what your schedule’s like for the next six months.’ It turned out to be Issy who was getting married and had decided I was going to make a hat for her. THE GOOD NEIGHBOUR Highlight of London Fashion Week this
September was… Lady Gaga opening my fashion show. I went to see her backstage at Twickenham [for the Born This Way Ball], and I was telling her about the show and then she just suggested it. It was all her idea. She was going to be in Dublin the night before, so she said that she’d fly over. Playing to 80,000 people on one night and then appearing in my show the next? Amazing. My inspiration behind the S/S 2013 collection was… African women getting rich! Alek Wek and Jourdan Dunn represented the collection well because… like all African girls, they know how to carry a hat! My favourite hat of all time is… A 17thcentury Dalian or sailing ship hat. I’d seen old renderings of ships in women’s hair – it was a costume designer’s dream. The idea for this hat was inspired and created from a chapter in Olivier Bernier’s Pleasure and Privilege titled ‘Rule of Fashion’ about life in France in the 1750’s. The chapter described a British Fleet Admiral, D’Estaing, losing a famous battle to the French fleet. In celebration, women in Paris wore ships in

their hair to go to the opera; I loved the emotion attached to this. It is made from satin and the bone of the feather while the sails are paradise feathers. My biggest inspiration is… from natural forms and the beautiful lines in nature. I use contemporary influences, whether it’s sculpture, art or whatever is going on in the world today. I always try to do something new and fresh – there is always something new inspiring me. I’d like to design a hat for… Luise Rainer is one person. It’s the fact that she is still so alive and has lived through so much in her 101 years. I admire her spirit and the times she lived through. Modern contemporary glamour comes from old Hollywood. I’d like to collaborate with… I am not trying to be diplomatic, but I’ve worked with so many designers that I really can’t choose a favourite. It’s fun to work with Valentino because there is only one Valentino, and the same goes for Karl Lagerfeld or Alexander McQueen
when he was alive. It’s exciting to work with strong designers because they let you interpret their style. Some are specific, but many give me free reign to design with their collections in mind. My plans for the future are… I love the idea of the unknown and the future; you don’t know what is going to happen next week, and that’s a fashion attitude. Fashion animals are obsessed with something for a moment, and then they move on to something else. That’s the nature of the industry – it’s all about change. I like living in SW London because… It’s a wonderland! I live on Elizabeth Street in SW1, which is also where my shop is. I lived with Isabella and Detmar Blow in their house there when I first left the Royal College of Art and I set up my studio in their basement and consequently never left. I’ve lived here for 13 years and have little intention of going anywhere. I live with… My partner and my two little dogs T-Jay and Archie.
My favourite restaurants in SW are…. Il Corriere on Elizabeth Street. It does the best egg and chips in England and it is run by Diana, who is a fantastic mix of Italian and Cockney. And Metrogusto in Battersea. Oh, and Ambro does the best gnocchi ever! My favourite designers in SW are… Bruce Oldfield and Anna Valentine. My favourite travel destinations are… I have many but Venice is always a wonderful place for a city break. It is full of mystery and hidden corners. I like to stay in the Gritti Palace, because it simply couldn’t be anywhere else but Venice. The best hotels always capture the essence of their location. I’m most looking forward to… Christmas. DESIGNER OF CHEET LONDON, EMILY CHEETHAM, ON SWAPPING SOUTH WEST TRENDS FOR SINGAPORE STYLE
S
outh London was both home and workplace for over a decade until my husband’s job relocated to Singapore last year. Many friends had started to leave London and we felt that, instead of escaping to the country, we would escape from the country. So, we duly packed up the container, rented our house and headed off to Asia where a new phase began – a chance to embrace a new life in a different city, full of new adventures. Singapore has a reputation for being so clean and well ordered that it is clinical, sterile and lacking in character. True, it isn’t as colourful or as vibrant as Hong Kong, it is more Zurich-in-Asia, but we find this perception somewhat outdated. Yes, it is strict with severe punishments for rule-breaking, but having a young son we welcome the fact that we live in a safe and clean environment where life runs smoothly. If you look beyond the shopping malls, you’ll discover a diverse country, which, as a result of its Chinese, Malaysian, Indian and former colonial inhabitants, is rich in history and culture. Has life changed immeasurably since we swapped Balham, gateway to the south, for Singapore, Lion city of Asia? Well, we get our fair share of rain but with a year-round average daily temperature of 30+ degrees and 80 per cent humidity, it couldn’t be more different to the UK. As a fair-skinned Brit, I’m not sure I will ever feel truly comfortable in this climate, but you do acclimatise. One challenge of working as a handbag designer in a season-less environment is remembering which colours and materials are suited to cooler climates, particularly when
considering autumn-winter designs – so I have to rein in an instinctive gravitation towards hot, summery hues. Climate aside, as a former British colony, Singapore is, in many ways, a home from home. English is widely spoken, cars drive on the left hand side of the road and there is a Westminster style parliament. In terms of day-to-day living, many aspects of our old life in SW resonate with our new life in Singapore. Our pleasures remain the same in the east and west – whether it is seeking out the best coffee, new restaurant or simply watching our son on the swings and slide. Singapore is famously urbanised (when they run out of space they just reclaim more land from the sea), despite this, it does not feel like you are living in a concrete jungle. There are abundant immaculately kept parks, open spaces and tropical walkways and brand new playgrounds on practically every corner. The Victorians’ invention of the park as being for the public good seems to ring true in Singapore as well as in London. We’ve swapped running around Battersea Park for boot camp in the Botanics (by the Victorian bandstand no less!), walking on Wandsworth Common for a stroll around MacRitchie Reservoir and hiring bikes to take in the sea air of the East Coast Parkway over cycling through Kew Gardens. Being a working Mum, I don’t conform to the stereotype of the lady who lunches (but wouldn’t it be nice!), however, a trip to New Zealand a few years ago opened my eyes to the pleasures of a really good coffee – flat white of course. My favourite local haunt in London was the Bullet Coffee at the Roastery on Wandsworth Road, with 39

its heavenly range of organic coffee, not to mention the mignon of brownie that came with it. We are spoilt by a growing number of coffee houses here – one of the best is Carpenter & Cook, tucked out to the west of the island which serves exquisite cakes and coffee in an English-tea house setting and sells antique Newgate clocks. Food is one of Singapore’s main draws. My husband and I love Asian food and find that the best food is often in the least astounding setting. Some of our best eating experiences have taken place at plastic tables at hawker food markets: amazing ramen (usually involving a half hour queue such is its popularity) or rich seafood laksa, curry puffs or curry on a banana leaf. For an upscale dining experience, we are big fans of recently opened Jason Atherton’s Pollen restaurant at Gardens by the Bay. Whilst Singapore wins hands-down on food (sorry, London), my inner Britishness misses good pubs such as The Abbeville (Clapham) or Avalon (Clapham) for
leisurely, Sunday lunches with friends and probably too much red wine. The closest we get to a roast here is a barbequed shoulder of lamb with salad. Brunch is a more climate-friendly pastime, something the Singaporeans embrace with gusto. Many of the hotels will lay on elaborate all-you-can-eat weekend banquets with free flowing fizz. For a more family option, we enjoy our eggs to the tropical backdrop of Labrador Park’s Eco Café.
and one of the biggest living expenses (along with rent, cars and luxuries such as wine). We are fortunate to live very close to an excellent wet market, Ghim Moh, and so will buy fresh fish, fruit and vegetables from there, just as we might have sauntered to the local fruit & veg man. Being in this part of the world, our choice of spices is just incredible. Our local supermarket is akin to Waitrose – even offering the latter’s ‘essential’ range but at four times the price. We tend to head to a local butcher for meat – not least because that way the chicken comes without head and feet! Singapore offers a great lifestyle, with everything we could want at this stage of our lives. We have super friends and enjoy regular travel adventures. We are far from family and friends but visitors often travel through. Nonetheless, it is amazing how any ‘tired-of-London’ feelings we had are replaced by nostalgia and we will find our way back there at some point. For now though, we are making the most of our tropical post.

I tend to avoid Orchard Road and prefer the boutiques on Hajji Lane or Yong Siak Street – a similar feel to Northcote Road or Bellevue Road. Almost everything is imported, not least the food, making food costs high

POPPY CROSS SPEAKS TO RANDLE SIDDELEY ON BEING HELD AT GUNPOINT, DESIGNING VALENTINO’S GARDEN AND THE DEVELOPMENT OF BATTERSEA POWER STATION
’ve been anticipating talking to Lord Kenilworth – known professionally as Randle Siddeley – for over two weeks. Our interview has been postponed a handful of times due to a series of events which conspire against us; first Randle is called to duties abroad, then he was caught up in hurricane Sandy and the last time he was unwell (as his apologetic secretary explained), after blowing back in from New York. But then this should come as little surprise given that Randle is a man very much in demand. As the 4th Baron Kenilworth and son of the great interior designer, John Siddeley, his every move has been held under the microscope since childhood. ‘People always used to say: “Oh your father was wonderful, wasn’t he very clever?” And I used to say: “Well, actually, his son’s not too bad either”’. A touch of the breed of self-possession we Brits are little used to? Sure, but I would be inclined to agree with this self-judgment after just moments in his company. By the time I catch up with him, he’s back ‘in the land of the living’ after ‘dodging the hurricane’ and has just opened an office in New York and Canada, (there is also a satellite office in Hong Kong), the former of which is being managed by a previous client. ‘The proof of the pudding!’ Randle
happily hoots, before adding: ‘When someone asks what work’s like, she can actually vouch for it both ways’. Having founded his landscaping business in 1975, Randle designs projects all over the world and uses his tenure in the House of Lords to raise awareness on key environmental issues. He is also a founding member of Sustain Worldwide – a not-for-profit, pioneering organisation that brings together and promotes global developers who are mindful of their impact on the environment and are committed to enriching their local communities. Considering he plants trees for a living,
it’s little wonder that Randle is passionate about sustainability and where possible, he advocates using recyclable materials – to give you the measure, he’d like to see recycling ‘grey’ water (bathwater) to irrigate gardens become common practice. ‘It would be nice if one day that was part and parcel of conservation,’ he says. As a public figure, Randle’s personal life is frequently in the press. 2010 was a particularly prolific time for headlines, after he was held at gunpoint outside his home in Battersea in a terrifying daylight mugging, which he describes as ‘a devil wanting experience’. Then, just six months later he announced the end of his 19-year marriage to society jeweller Kiki McDonough, an old friend of the Duchess of York. As if that wasn’t enough, this summer his company was forced to stop work on designing the new garden at the house of President Assad’s residence near the coastal city of Latakia on the Mediterranean Sea, which, due to confidentiality reasons, Randle can only comment: ‘The project did happen, part of the project was built – that was it. And obviously when the situation took hold of the country we stopped.’(The site was subject to fierce fighting between government forces and rebels.) Yet, true to form, Randle maintained a stiff upper lip, stoically playing down the

‘I DID DO VALENTINO’S GARDEN IN HOLLAND PARK, WHICH HE CALLS HIS FAVOURITE GARDEN, EVEN THOUGH HE HAS GOT QUITE AN AMAZING PAD JUST OUTSIDE PARIS’ commotion, saying ‘life has to go on’ and so it did, with the successful launch of his new book Garden (amongst other things) which was published last year. ‘It demonstrates the traditional English garden, the backbone of all gardens, the skeleton and whether you make that traditional or classic,’ he explains. And if the client wants something more contemporary, Randle’s team are quite prepared to ‘be on the edge of it’. Do Londoners especially lust after the contemporary, I ask? ‘There was a time when I thought: “Oh my god, is this the time where I hang up my clogs?” This phase lasted a year or two but I think now it has settled down.’ On that note, I ask if he’s had any disasters. ‘Invariably… but ones I hope which haven’t cost the client.’ The publication of Garden coincided with what Randle calls his ‘bête noire’ – aka the Chelsea Flower Show, which he criticises for the waste of materials and man power ‘for an exhibition which takes two months to build only to have it exhibited for six days and then taken away.’ However, despite his feelings for the show, its timing invariably helped
draw attention to Garden – in fact, so much so that a second book is scheduled to follow next year. As I enviously leaf through the pristine lawns and beautiful blooms which proudly percolate the book, I’m keen to know who all the wonderlands belong to. But unfortunately my curiosity cannot be satisfied since Randle has to keep most names hidden, but he does say, ‘it is public knowledge that I did do Valentino’s garden in Holland Park, which he calls his favourite garden, even though he has got quite an amazing pad just outside Paris’. Ever the diplomat, Randle doesn’t have a favourite among the gardens he’s designed but describes the ‘wonderful project’ of the Aleppo – Beit Salahieh Hotel, (featured in Garden), which he did for a very old client. ‘You can look down from the roof terrace at the famous Citadel, it’s very special’ and explains that he lives for ‘the times when the client says to him, ‘it’s rather like waking up every morning looking at your own Monet painting.’

What do you think of the Embassy Gardens development? It’s created a big emphasis to Battersea and thank goodness because it needs something big like that to come along. For or against the development of Battersea Power Station? Get on with it! That’s what’s needed around here. There is now the impetus to get on with it because the new developers [A consortium of three of Malaysia’s biggest companies, SP Setia, Sime Derby, and the Employee’s Provident Fund, have paid £400m to buy the power station] have got the money and resources to get it up and running. And I think once they’ve got a section of it going then it creates a bit more interest and people will start looking at it and taking it seriously. Then you’ve also got the development. Favourite Park in London? Battersea Park’s great. I go there twice a week with my trainer. What’s your own garden like? I’m busy creating other people’s gardens – I don’t have time to do my own! Favourite Restaurant? Chez Bruce What are you looking forward to? The development of Battersea Power Station and its surrounding areas. My biggest prayer is that the developers don’t go and over develop it all. It would be nice to have a central urban area streetscape and having the buildings set back so that not everything’s on top of you. There should be park squares and gardens.

Christmas Cake If you’re more of a purist when it comes to your Christmas cake, this recipe is the one for you. It’s packed with dried fruit and roasted nuts, and, of course, delicious French brandy!
SERVES 8
Preparation time: overnight soaking, + 25 minutes Cooking time: 3½–4 hours 350g (12oz) golden sultanas 350g (12oz) raisins ¼ bottle brandy 350g (12oz) unsalted butter, plus extra for greasing 200g (7oz) good-quality dark chocolate (about 70% cocoa solids), broken into pieces 200g (7oz) dark soft brown sugar 100g (3 ½ oz) molasses sugar 4 large eggs 300g (11oz) plain flour, sifted 2 tsp ground mixed spice 1 tsp ground cinnamon finely grated rind and juice of 3 lemons 150g (5oz) chopped mixed peel 100g (3½oz) glacé cherries
50g (2oz) walnut halves 50g (2oz) shelled whole hazelnuts, roasted (see tip page xx) 1 Soak the sultanas and raisins in about 150ml (5fl oz) of the brandy in a covered bowl overnight. 2 Preheat the oven to 150ºC(fan 130ºC)/300ºF/gas mark 2. Grease a 20cm (8in) diameter deep cake tin with extra butter and doubleline the base and sides with enough baking paper that the paper stands a little above the sides of the tin. 3 Put the chocolate pieces in a heatproof bowl that fits over a pan of gently simmering water (the base must not touch the water), and stir until it melts. Leave to cool slightly. 4 In the bowl of your blender/processor, using the power beater attachment, cream the measured butter and the sugars together at high speed, until the mixture is light, pale and fluffy. Add the melted chocolate and then the eggs, mixing them in at a slower speed. (Add a little flour if the mixture looks like it may split.) Scrape down the sides occasionally, and mix until
everything is incorporated and well blended. 5 Sift on the flour and spices, followed by another 150ml (5fl oz) of the brandy along with the lemon rind and juice. Mix together well then stir in the fruit and nuts gently, without breaking the cherries or walnuts. 6 When combined well, spoon into the prepared tin and level the surface. Cover the top with a disc of baking paper and bake in the preheated oven for 3½–4 hours or until a thin-bladed knife inserted comes out clean. 7 Let the cake cool down in the tin, and then turn it out on to a wire rack. Peel off the lining paper and pour on some more brandy (there will be a bit left in the bottle) while still warm.When cold, add some more brandy to taste, then wrap in clingfilm and store in a cool dry place until ready to be decorated (see the royal icing recipe on page 00) in time for Christmas. This cake can be stored in an airtight tin for up to six months – but make sure you feed it regularly with brandy.

Chocolate and Chestnut Yule Log Preparation time: about 1 hour Cooking time: 10 minutes FOR THE SPONGE 3 egg whites 130g (4¾oz) golden caster sugar 4 egg yolks 50g (2oz) unsalted butter, melted 100g (3½oz) plain flour 2 tsp baking powder 50ml (2fl oz) dark rum For the chestnut cream 100ml (3½fl oz) double cream 400g (14oz) crème de marrons (sweet chestnut purée or spread, available in good supermarkets and suppliers) FOR THE CHOCOLATE GLAZE 150g (5oz) dark chocolate, broken into pieces 50g (2oz) unsalted butter 2 tbsp golden icing sugar FOR THE DECORATION chocolate shavings, a few marrons glacés, halved icing sugar
a pastry brush. Spread the chestnut cream on to the sponge with a palette knife then, using the silicone paper or mat, gently roll the filled sponge up nice and tight. Place on a serving plate, join down, and cut the ends at an angle. Save one of these ends to use as a ‘branch’ when glazing with the chocolate glaze. 9 Now make the chocolate glaze. Melt the chocolate in a bain-marie, stirring occasionally, then add the butter and sugar. Leave to cool down. 10 Using a palette knife, cover the whole log with the chocolate glaze. Cover the saved end with glaze too, and stick it on top to mimic a branch.With a fork decorate all over for a wood effect. Place a few chocolate shavings and pieces of marrons glacés on top, and dust with icing sugar. 1 Preheat the oven to 220ºC (fan 200ºC)/425ºF/gas mark 7. Cover a baking sheet with silicone paper.
2 To start the sponge, beat the egg whites until stiff with an electric hand whisk, then gradually add 50g (2oz) of the golden caster sugar. 3 In a separate bowl, beat the egg yolks with the remaining sugar until the mixture is fluffy and white. Stir in the melted butter. 4 Sift the flour with the baking powder into the egg yolk mixture, then fold all the ingredients together. Mix in a little of the whipped egg white, then gently fold in the remainder. 5 Spread the mixture on to the silicone on the baking tray with a palette knife, rather like making a Swiss roll. Bake in the preheated oven for 10 minutes, but you must keep an eye on it as it cooks fast! 6 When out of the oven, cover the sponge with a damp tea-towel to stop it drying. 7 To make the chestnut cream, in a large bowl, using an electric hand whisk, beat the cream to soft peaks, then fold in the crème de marrons. 8 To construct the cake, firstly soak the sponge with the dark rum, using

What are you up to at the moment? I have just finished shooting my next book which will be out in 2013 and I’m still promoting my current book Tart it Up! The book is all about sweet and savoury tarts and pies – it’s the first time that I’ve included savoury baking in a book. How did you go into TV? Our cakes – particularly our wedding and celebration cakes started getting lots of attention and a producer came knocking on the door. Proudest moments? Too many to mention but finishing best pastry chef in my region was a very special moment and then going on to finish second best apprentice patissier in the whole of France. Opening Cake Boy, my Putney cake emporium, five years ago was a ‘stand out’ moment and a dream come true. It includes a cookery school and glamorous lounge area – it’s for people to eat cakes, bake cakes and chill out with a glass of champagne or two! Favourite thing to bake? At home I like rustic baking – my favourite pudding being a Pear Tarte Tatin. In my professional kitchen I love a bit of glamour – so my Tower of Desserts – is pretty show-stopping and can be used to celebrate birthdays or weddings. What can people expect from the classes you offer there? I do demos and the recipes tie-in with the theme of the class. By the end of the day the students are putting the final touches to their baking.
What will they eat for lunch? It will be seasonal – using fresh ingredients – I cook the lunch and we’ll always have a fine wine to go with it. Is it all French inspired? Not at all. Sometimes classic Breton recipes – it really depends on the class – what we are baking and what has inspired me that week or even that morning. Where does your inspiration come from? I love to travel and try out new restaurants, new produce and ingredients – so often it comes from that. I love experimenting with different flavours and working out a recipe based around them. I think if you are creative you can take inspiration from anywhere and everywhere. Sweet or savoury? Believe it or not I do not actually have a sweet tooth – give me a plate of cheese and I am a very happy man.
Why do you like living in Wandsworth? It’s full of interesting people. I love the greenness of Wandsworth – we live between the commons and it’s wonderful. It feels like a village. It’s local to where I work and has a lot to offer in terms of great restaurants and pubs. Which chef do you most admire? The Roux Brothers – they look after me, they were so generous in their encouragement. I worked with them when I first came to London and stayed with them for five years – running their pastry kitchen. We are still great friends today. Top Tips for the perfect Christmas cake… Use a good recipe and the best ingredients that you can lay your hands on. Ensure that your dried fruit is plump and not ‘dry’. Use golden caster sugar and pure vanilla extract (my favourite brand is Nielsen Massey) – a must for flavour. Remember that baking is like chemistry – follow the recipe and use an oven thermometer to check the temperature of your oven. 73

Restaurant review SUPPER IN A PEAR TREE SISTERS ARE DOING IT FOR THEMSELVES
S
upper In A Pear Tree caters for the creatively minded palette – both of the culinary and painterly persuasion. The brainchild of sisters Charlotte Partridge (a Charles Cecil-trained artist) and chef Annabel (who trained at the Michelin-starred Petersham Nurseries), the duo combine their artistic and gastronomic flair on the last Thursday of every month for an evening that puts the ‘art’ into hearty fun. Upon arrival, guests are welcomed with a rich glass of velvety red wine and the sound of melodic acoustic music playing softly in the background, before you get down in earnest to the serious business of life drawing. Initially, it’s each to their own as you and your charcoal are left to your own devices. Charlotte then demonstrates the technique, after which it’s back to the drawing board to see the vast improvement the method makes. After all is smudged and shaded, the hearty three-course dinner is served around a big communal table with the other 20-odd guests. The menu,
meanwhile, is inspired by Annabel’s recent trip to a spelt farm – a very much in vogue nutritional alternative to wheat. Its deep, nut-like flavour compliments the menu
perfectly. First up are spelt bread sticks served with a walnut pesto, anchovies, olives, capers and parsley lemon olive oil. Simple and delicious. The main course was an incredibly tender lamb shoulder with a ras el hanout home-made spice mix, and mint and cucumber yogurt dressing. This is served with onion squash, which boasted a delicate and mellow chestnut-like flavour, plus pearled spelt and shaved raddiccio. The combination of nutty flavours, tender textures and wholesome spelt grains, provides a triumphant and toothsome experience, well contrasted by the rich creamy, cold yoghurt and slightly spicy gravy. We finish with tarte tatin and crème fraîche, homemade ginger and blackcurrant vodka and candied ginger florentines. The sweet, spicy sugar and spirit hit ensures that we all leave on a high. The bit I am always sad about is not being around to see the state of the office the next morning and a rather sheepish boss crawling in late hugging a can of coke. This applies to the entirety of the menu, so expect generous helpings of hearty grouse and red cabbage in the autumn, and puddings laced irresistibly with fresh berries in the summer.

It may possibly be a bad thing that once you arrive at the Taleon Imperial Hotel you find it difficult to leave. Fortunately for those who do manage to haul themselves out of the massive marblecovered en-suite jacuzzi, or the top floor spa (where you can look out over the the city’s roofs) – there is a long list of sights just a stone’s throw away. The hotel is at the heart of where the Moika River and the Nevsky Prospect (St Petersburg’s main vein) intersect. And if a five-minute walk to the State Hermitage Museum, Winter Palace, Palace Square, Kazan Cathedral, and all the many exclusive shops seem a little strenuous; the concierge can organise for a water taxi, or a speed boat in the summer to pick you up at the quay, just outside the front of the hotel. You can try both Russian delicacies and continental cuisine if you’re feeling a little over-borsched. The bar staff at the Griboedov make a mean cocktail – do not be afraid to ask for a White Russian. After you’re suitably full and sleepy, and perhaps after having one of the hotel’s rare cognacs, you can retire to one of 89 rooms, which are all unique, with a mixture of old splendor and décor and modern technology. So as well as knowing that no-one else in the hotel has an identical room, there is also a 24-hour butler service and housekeeping. Whether it’s a week or a weekend, the general consensus is that you feel as if you’ve stayed in a palace, and that’s not exactly wrong. THE LEELA PALACE, UDAIPUR
A solitary fat pigeon pecks around for snacks in the brilliant sun and deep shadows of the ancient inner courtyard of Ganesh, a cavernous warehouse shop in the ‘Land of the Kings’, or in other words, the north-western Indian region of Rajasthan. Pigeons are sacred to Hindus which means they are protected and fed. To me they’ve always seemed pretty pointless birds. Looking down from a window seat on the second floor, I watch the fat one flitting hopefully about the restored beauty of the 17th-century cantilevered white stone balconies. Opportunities for sightseeing in India fall into two distinct categories: the obviously spectacular, like the Red Fort In Delhi and the incidentally spectacular, such as the wedding processions of shy brides and proud grooms riding their decorated horses through the remote rural villages. And then, of course, there is the pigeon in the courtyard. One floor up, my companions are finding great treasures among the best selection of
kaftans in Rajasthan. They are encouraged by the prices and the fact that Sarah Burton, head honcho at Alexander McQueen, sacrosanct after her star turn at the royal wedding last year, was a customer here a few days earlier. Later that day, shopping at Udaipur’s exclusive Andraab boutique, I succumb to a finely woven scarlet cashmere pashmina, though seemingly it’s not so much of a ‘discovery’ as I’d first thought; it’s not long until I am told that the shop is a favourite of Judi Dench. It is here, in the lake city of Udaipur – a short flight from Delhi – that our experience of new India begins. The sun is going down and we are thankful for the damp westerly wind that cools us as we make our way down the long avenue of one of the city’s many grand parks to the cremation site of Mahatma Ghandi. This vast, flat memorial stone is the size of a small football pitch and is decorated by a single eternal flame, though the absence of ornament only adds to its power. It is singularly moving to watch the – mostly Indian – visitors stop to compose themselves before placing their floral tributes on the marble edifice. The chimneys of a grim-looking coal
power station meanwhile rise into the sky above the park’s tree line, and in the near distance, a man kneels on the grass facing Mecca, lost in prayer, a sacred stillness disturbed by the roar of insane traffic on the nearby road. The endless competition of car horns, spluttering rickshaws and speeding motor scooters is the mash-up that forms the soundtrack of the new India. The food is a high point in both hotels but the jewel in the crown in Delhi is the classical Indian cuisine of the Jamavar and

a cookery lesson with the head chef, which provides a good alternative to shopping, particularly as, in the Old Delhi market, that means perching precariously on bicycle rickshaws and becoming part of the crazy traffic system. Before setting off for Udaipur we visit the ancient Qutub Minar, a tomb built in 1199 and a Unesco World Heritage site it’s the one to see in Delhi if you only have time for one site. ‘You gotta love my Banynan tree’ says Reggie Sing, our handsome host, a cousin of the Maharajah of Jodhpur and a larger-than-life throw back to the last days of the Raj. We are sitting at a massive table in the garden, laden with a feast and being waited on by men wearing army uniforms and saffron festival turbans. It is a scene straight from a Bollywood movie and we are grateful for the shade of Reggie’s Banynan tree as we have already had two large Pimm’s, mixed by the man himself. A Van Morrisson CD blasts out from the colonial-style bungalow lounge into the surrounding valley and mountains. We’ve popped in to The
Mountbatten Lodge on our way to visit the Jain temple at Ranakpur. If you go, ask him to tell the story of how he just missed out on becoming a king. Glorious though it is, I wouldn’t advise drinking two large Pimm’s before visiting the extraordinary Adinatha Jain Temple; it makes negotiating the 24 pillared halls and focusing on the extravagant detail of the 1444 marble pillars that bit trickier. But this is an experience of old India which is simply unbeatable. We are lucky to be travelling over the wedding season when young brides dressed walk in giggling gangs to the local village to make their matrimonial purchases. We come across dashing grooms riding proudly on decorated horses behind processions of musicians and karaoke vans blasting out Bollywood hits. You get a clue as to village activity from the colour of the turbans worn by the bare-chested locals: red for shepherd, green for carpenter, gold for priest. Back at Leela Palace on the shores of the romantic Lake Pichola in time to watch the sun set over Udaipur City Palace, I pondered
how it doesn’t get much better than this – until, that is, my iPad suddenly packs up. Reception sends a sort of cyber butler up immediately – a charming young chap with a degree in IT who arrives to fix it while I stand on the balcony and watch another youth dressed in the traditional long kuta shirt waving a flag and chasing pigeons in the grounds of a neighbouring hotel. I am told these professional pigeon chasers are employed to save buildings from the birds’ droppings because it is against the Hindu religion to put spikes on the buildings. Though of similar ages, the pigeon chaser confidently preserves the best of ancient India, while the cyber butler shapes her future. Suddenly, a pair of these fat birds land on my balcony. I find myself thinking that they are actually really quite pretty... amily is often the reason why people move home or relocate. Be it upsizing or downsizing to a family’s needs, getting into school catchment areas or simply to be closer to loved ones, family is usually the common theme. I moved to Southfields from Chiswick nearly 10 years ago so that I could be closer to family as my sister lived on the sought after ‘Grid’. The family friendly atmosphere here is one of the many attractions to moving to SW18, and, sure enough, not long after I set up home here, my brother started house hunting. It was then that I first dealt with KFH, and being impressed with their business, I decided to make a career move from the hospitality industry to estate agency and have worked for KFH here in Southfields ever since. I have seen the property market wax and wane, enjoyed the highs and knuckled down during the lows but KFH, one of the oldest on the high street is still thriving. The ‘Grid’ is the most sought after area, although the Southfields Triangle Conservation area is closer to the two most popular primary schools – Sheringdale and St Michaels Primary school. The houses here are mainly Edwardian terraces with private gardens and are snapped up very quickly by young families, as the area is now well established as part of the SW London nappy valley set. With supply low and demand high, we are currently seeing multiple offers on properties going to sealed bids. This is especially prevalent on properties with large gardens and which offer

a degree of renovation or uplift potential. Another demographic we’re seeing is young professionals keen to get onto the property ladder and they tend to invest in the more competitively priced flats located further up the hill towards Wimbledon Common and along Wimbledon Park Road. Since 2009, we’ve noticed a sharp increase in prices, and over the last year there have been increases of up to 10 per cent in the area. To give an indication, a property which sold for between £750,000-£800,000 last year is now achieving in the region of £850,000-£900,000. Property developers are increasingly keen to piggyback on the areas success and our Land & New Homes branch is offering new developments such as ‘The Edge’ on Merton Road, which is a lovely new build scheme comprising of fourteen apartments. The Olive Garden on Replingham Road is one of my favourite restaurants because it’s independently owned and has character. It’s become very popular with local families and singletons alike. Likewise, the local butcher on the same street has a great reputation and I’ve already been in to order my Christmas turkey. Southfields is home to a variety of independent shops and has recently welcomed some supermarket brands – a key indication of a thriving area. A favourite weekend pastime of mine is browsing the Villeroy & Boch Factory Shop on Merton Road, but really, how many more teacups does one person need?
