hen it comes to New Year’s resolutions, weight loss and getting in shape are usually at the top of everyone’s list. But as we’re all painfully aware, it seems that now every passing season has some kind of weight loss incentive attached to it: shaping up for spring, fighting the flab for that fabled ‘bikini body’, fasting to fit into that LDB just before the Christmas party… And even if you’ve reached your target weight, there is always some kind of mediadriven ideal to aspire to, the battle of the bulge, then, is more of an all out war that keeps raging no matter how many pounds you drop. So in this New Year, New You special, we’ve rounded up a few ideas to promote long-term change, rather than temporary quick fixes. Of special note is the Chiswick-based company The Running School. Read how he felt about snogging Jennifer Aniston and why he’s a Chiswick lad at heart on page 31. Andy Greeves talks to TV’s golden boy Jake Humphrey on page 26 about bringing up babies, the most romantic restaurant in Richmond and his incredible rise in the broadcasting industry. The most unbelievable stories are often the true ones. What gave you the courage to start Techlocate in 2000, and what was the first action you took? The year I started Techlocate my confidence was boosted by the whole excitement of the dot com boom. During that year the media was filled with stories of entrepreneurs creating new businesses enabled by the power of the web. I thought: 'If these entrepreneurs can do it, then I can too!' So I left a top job at Arthur Andersen to give it a go! Another factor which I think played a part in the confidence stakes is that my mum ran her own business when I was growing up so selfemployment felt natural. That was 13 years ago and I've been unemployable ever since! Who helped and supported you in your first year of business? Quite a few people. My family helped with moral support and former bosses at Arthur Andersen were very supportive too. You never forget the people who help you in that first year and in your first business. I also had a business partner, so all decisions were taken together and as we were both young, we had a Non Exec Director whose advice came in particularly handy when, 15 months into the business; we received an offer from a bigger company wanting to acquire us. The Non Exec played an invaluable role in advising us on everything from the valuation of the company to how the sale should be structured. You launched Enterprise Nation in 2006 to help people in the UK to start and grow their own home-based businesses. How does Enterprise Nation help start ups? Enterprise Nation helps people turn their good ideas into great businesses, and we do this through providing lots of useful content on the website and in our books/ebooks/ kits, by hosting many events from StartUp Saturday to the 'Go and Grow Online' series and by opening up funding through our partnership with Crowdfunder. More recently, we have expanded the business to offer a voice to government for businesses who join us and want a say in ensuring the UK is the best place in the world to start and grow a business. In March 2011, you co-founded StartUp Britain; the national campaign to encourage people to start businesses and to help existing ones grow.

Tell us about your role as campaign director... It's been an amazing experience and a role that's required quite a bit of energy! Helping launch StartUp Britain with seven other founders was a privilege and we've been pretty busy ever since; going on national tours, hosting StartUp events every month, opening PopUp shops and campaigning for people to start their own business . Half a million new businesses is our target; a figure we are likely to reach this year which is incredible! My role has been to raise the funds, motivate and manage the team and be the link with government who has supported our aims throughout. The most gratifying aspect of the role is hearing from people who have been inspired by the campaign to get started - and it's been a pleasure working with the team that makes StartUp Britain motor from day to day. StartUp Britain now has over 70 local champions countrywide; people like local entrepreneur Helen Roberts, who champions StartUp Britain Richmond. Just how important are local champions like Helen? Champions like Helen are invaluable and a crucial resource to ensure the campaign can do

its job. Helen has been amazing. She has hosted events, provided support and been a great participant when it comes to campaign events outside Richmond too. Helen has delivered in Richmond what we want to see in towns across the UK; a vibrant network of StartUps and growing businesses, working together to create a more entrepreneurial economy and community. You are known as someone who makes things happen - what advice would you give to people who want to make their start up dreams happen? Ha! I try my best to make things happen! My advice for anyone who is reading this and thinking of starting a business is this: take one small step. Do something that gets you one step closer to what you want to achieve. That could be talking about your idea to friends and family, writing a business plan, setting up a website or taking your product to a market stall. Because this is what business is all about - taking lots of small steps. Then one day you'll look back and think "Wow. Look how far I have come!" startupbritain.co 15

THE BOOK THIEF

Every year a book comes out that sparks the imagination. In 2007 it was The Book Thief, Markus Zusak’s bestselling and innovative novel about a nine-year-old girl living with her foster family during the Third Reich. The story of this spirited young girl, the eponymous ‘book thief’, is narrated by Death himself, but despite the macabre subject matter, it is often described as ‘life-affirming’ and ultimately an ode to the power of words. Taking on this ambitious story was no mean feat, but with acclaimed actors Geoffrey Rush and Emily Watson on board for director Brian Percival’s big screen adaptation, The Book Thief looks set to be one of the year’s biggest hits; keeping fans happy and inspiring a whole new wave.

In an effort to get more pupils interested in geography, the Royal Geographical Society have reached out to schools and tasked them to create a sound map of Hyde Park using an app on their mobile phones. GOING SKIING? Terry Rodham gives Absolutely his advice on preparing for and staying safe on the slopes

I

t’s that time of year when many of us start to think about our winter skiing holidays. These are very exciting times with an awful lot of fun to be had, but to maximise your enjoyment on the slopes (as well as off) I would strongly advise adequate preparation. When I say adequate preparation, I’m referring to a specific skiing conditioning exercise programme. When most people think about conditioning for skiing, pretty much the first thought is ‘legs!’ Whilst, of course, legs are important, please remember that other parts of your body and elements of fitness such as upper body strength, core strength, balance, joint range of motion and flexibility and cardiovascular conditioning are all just as important. Developing a good training program in preparation for skiing allows for good overall conditioning that assists in calorific expenditure, an increase in metabolism. As skiing is a recreational sport that we often only do once or twice a year, most individuals are poorly prepared and conditioned. This generally leads to sore muscles, resulting in reduced time on the slopes and the potential for serious injury as a consequence. Both skiing and snowboarding injuries are usually the result of falls, collisions, or muscle overuse. Loose heavy snow can entangle skis leading to knee and ankle injuries. Icy conditions can also lead to more falls and upper extremity injuries. Knee injuries can generally account for a high percentage of all injuries in skiing. Usually the Anterior Cruciate Ligament (ACL), Medial Cruciate Ligament (MCL), or medial meniscuses are involved. Mechanism of injury usually involves a twisting force to a weight-bearing knee. A ski fitness program should generally begin 6-12 weeks prior to

the time of booking. In developing a fitness programme for your skiing, the essential aspects of fitness to improve are: muscular strength and endurance, especially in the muscles of the legs but again, not exclusively. Flexibility is another important aspect of your training, as having good range of movement in the joints will allow for the body to adjust to any sudden changes in direction and also prevent injury when (or should I say ‘if’) you fall. Building up your aerobic capacity (the efficiency of your heart and lungs to transport oxygen around the body) will also enable you to ski for longer periods, as fatigue will be the biggest factor resulting in poor concentration and technique, which again can lead to injury from falling. Now is the time to book your session with a Personal Trainer and fully prepare for the demands of the slopes with your personalised programme. At The Hogarth and The Park Club you can utilise your monthly personal training session to discuss your tailor-made skiing programme. Our fully integrated gymnasium Wellness System also allows your exercise plan to be accessed via an iPhone or Android application in the gym, at home or even on the slopes. Should any of you want to track and log your skiing

activities (distance, moves, duration) and stay connected to your Wellness account and your Personal Trainer, this can again be done via several devices. What could be considered as the obvious exercises to start doing prior to hitting the slopes would include some form of cardiovascular exercise (typically 20-30 minutes on a cross trainer). Strength and conditioning exercises would follow (typically squats, lunges, thigh abduction/adduction, leg curls, calf raises, chest presses etc). To finish off, there should be some joint mobility and flexibility/stretching exercises. I must stress that these exercises I have suggested are a typical starting point which target some of the key areas of a skiing conditioning programme. They are not suitable for everyone, hence the importance of seeking advice and booking in with one of our Personal Trainers who can then personalise your programme towards your needs. BALL Sports broadcaster Jake Humphrey talks to Andy Greeves about his incredible journey that took him from presenting children’s TV to hosting the Olympics

G

iven his passion for sport, it is hardly surprising that Jake Humphrey uses a football analogy to describe his success. From years presenting on CBBC prior to a big break working as a football match reporter for BBC Radio 5 Live in 2005 and now BT Sport. ‘It (CBBC) was an interesting place as there were so many young people there desperate to progress in their career,’ reflects Jake. ‘It was really hard to move on from there though. You felt like you were in the Manchester United reserve side with no chance to get a place in the first team.’ The 35-year-old, who was born in Cambridgeshire and raised in Norfolk, was on our TV screens not long after passing his A-Levels in 1997, presenting a show called G@mers for Rapture TV. He then began working for CBBC as assistant host of Against All Odds and then main host of Rule the School in 2001. His early broadcasting days are perhaps best remembered hosting CBBC’s coverage of Fame Academy alongside Holly Willoughby. ‘Holly would stay with me (in Jake’s old flat in Canary Wharf) occasionally as she lived in Brighton and didn’t have a place in London at the time,’ he says, thinking back to his Fame Academy days. ‘She’s a really great girl and she certainly is as nice off-screen as what you see on-screen.’ It was in 2006 when Jake really signified his switch from children’s television to sports broadcasting. That year he presented part of the BBC’s coverage of the Commonwealth Games in Australia and first hosted Football Focus. At the time he took part in major sporting events including a host of Super Bowls in the US, the 2008 Africa Cup of Nations and the Cricket World Cup. He co-hosted BBC Sports Personality of the Year from 2008 to 2011 alongside Gary Lineker and become the BBC’s Formula One in 2009. ‘My two main presenting highlights to date would be getting asked to host Sports Personality of The Year and also being one of the main presenters for London 2012,’ he says. ‘Hosting the moment Chris Hoy became Great Britain’s greatest ever Olympian is certainly a moment that will live with me for the rest of my life.’ With his wife Harriet having given birth to their first child Florence Aurelia Alice Humphrey in 2013, Jake stepped down from his timedemanding role with the BBC Formula One at the end ’I’m always wary to talk Richmond up too much as covering of the 2012 season – a job that had seen him travel all over the people will discover the best kept secret I have!’ world. He’s now covering the length and breadth of the UK instead, as anchor of BT Sport’s Barclays Premier League action. ‘I knew for over a year that I would be working with BT Sport on their Barclays Premier League coverage and it seems like it took a 27

long time to get to the start of the season,’ smiles Jake. ‘Everyone knows I’m a massive football fan (and Norwich City supporter) and having already felt so lucky with the other sports presenting roles in my career, this is the latest dream to come true for me.’ Though harbouring eventual aspirations of moving back to his beloved county of Norfolk, Richmond is very much home for Jake and his young family currently. ‘I’m always wary to talk up Richmond too much as I think people will discover the best secret I think I have,’ he laughs, on the subject of his home in South West London. ‘I love it when people say “Richmond is miles out of London” and with a wry smile I say, “oh yeah, absolutely”. Of course the reality is that Richmond couldn’t be better placed. Less than five minutes on the train and you’re at Waterloo. And there’s no real reason to want to leave the area most of the time, what with the river, the park, the shops, bars and restaurants.’ ‘I don’t think it’s any secret about how much I love Norfolk and I see myself and my family moving there in the not too distant future. While I’m in London though, Richmond is the place for me.’ Having previously lived in Canary Wharf and on Great Portland Street, Richmond has become Jake’s favourite part of the capital. When he has the luxury of a free weekend, he enjoys cycling, training in Richmond Park and going for walks with his wife and baby. ‘We’ve just become members of the National Trust, so Ham House is a great local attraction we can visit,’ adds Jake. ‘We also love walking along the river, taking a picnic up to Richmond Park. You could happily never leave Richmond!’ ‘One of my favourite places to eat is Bill’s restaurant, which is a really nice individual place near to the river and serves amazing burgers and home-cooked style food. I’m also a big fan of The White Swan for lunch and La Buvette for a great Sunday lunch. If you’re on a date and you really want to impress your other half, then take them to the restaurant at the Petersham Hotel. I went there a couple of years ago for my anniversary and the food is incredible!’ Jake describes his broadcasting career to date as being ‘like a whirlwind’ and it’s easy to why he would feel that way. Amongst his achievements in 2013, he gained an exclusive interview with Gareth Bale the world’s most expensive footballer – on the back of his £85.3m transfer to Real Madrid and also recently hosted a live question and answer session with David Beckham for Facebook Live. 2014 promises to be another big year for one of sports presenting’s golden boys.

THE PERFECT NIGHT IN Winter is the perfect time to curl up in front of the box, but which entertainment option should you go for? Catherine Lister investigates

ith the winter nights at their longest, it’s the perfect time of year to stay in and watch a movie. These days all you need to watch the latest releases is a broadband connection and a tiny set-top box. If you have an Apple iPad or iPhone, then the obvious choice is the Apple TV. This little black box costs £99 and connects to the Internet by WiFi. Movies from Apple are a little bit pricey, but there is a good selection and you only pay for what you watch. There are also other TV services such as Netflix available on a subscription basis. If you’re not an Apple person, then a better option might be Roku. These set-top boxes start at £50 and, in addition to Netflix and the BBC iPlayer, offer Sky Movies for £9 a month with the Sky Sports channels on a pay-as-you-go basis. Both Apple and Roku also let you play your own music, photos and home movies on your TV from your phone or tablet. However, if that sounds like a feature you’ll never use, then the best deal of all is Sky’s own Now TV box. This is actually last year’s Roku box with a few features stripped out. Unlike its rivals it’s not full HD, but it only costs £10, so you could have an Apple TV and a Now TV for the ultimate choice of movies. All three of these options only stream content from the Internet. KING OF COMEDY 60 seconds with actor Will Poulter

When did you first develop an interest in acting? From as young as I can remember, to be honest. I always loved performing / acting like an idiot in an attempt to entertain other people. I suppose the first time that I was consciously aware that I wanted to act was the first time I performed on a stage. I played Cilla Black in a recreation of Blind Date. I wore a black sequin dress and a giant wig. What did you learn through the School of Comedy and its founder Laura Lawson? How does it help budding actors? The main thing is confidence. I think that it’s rare to be in an environment, so young, where you are trusted that much. You’re trusted with adult material, the pressure of performing, the challenge of making people laugh. I wish there were more places offering that to young kids. I’ve seen, first hand, the incredible amount of talent that Laura works with in these classes. If you didn’t know; kids are funny! The fact is, Laura has always believed that and done her best to nurture that. What are some of your favourite comedy films? Any comedy idols? Jim Carrey was always a hero of mine. Will Ferrell is another. I think my favourite comedy film of all time is This Is Spinal Tap. You’ve performed in School of Comedy sketches for the E4 productions and starred in numerous films and TV series. What is next in the pipeline? Do you have plans to venture into theatre work? My next projects to come out are Kids In Love and The Maze Runner. I don’t have any plans to go into theatre yet although I would be totally willing if the right project came along.

Could you imagine teaching drama at some stage? God help the kids! But quite possibly. Occasionally I come in to School Of Comedy workshops and that’s something I definitely want to start doing more.

because people assume I’ve been living and working in the Hollywood Hills for the last few years... I’m like, no I’ve been in North Carolina and I still live with mum and dad in Grove Park!

Your performance in We’re the Millers has received rave reviews. Could you relate to Kenny’s character? To an extent. I definitely wasn’t the cool kid at school so it wasn’t a great stretch for me to play Kenny. I loved that character though. I really respected the kid. So annoying and painfully unaware, but such a sensitive soul.

Is Chiswick a good place to grow up? The best. W4 all day.

So have you been seduced by Hollywood or are you still based in Chiswick? I’m not going anywhere! I cant see myself living in Hollywood anytime soon. It’s weird

o you’ve got deep pockets and sharp elbows but are they enough to get your child into the school you want? In the now hypercompetitive world of our most elite independent schools, the answer, probably, is no. In the race for a place, highoctane parents are using a Schools Placement Service. For a sizeable fee, super-tutor agencies such as Holland Park Education and Bonas MacFarlane will not only identify the appropriate school for your child, they will assess and tutor the child for the examination and interview process, fill in any applications, provide personal references to the chosen schools and even arrange private visits to them. It is hand-holding of the highest order, with both agencies boasting they will look after your loved one’s every educational need ‘from cradle to career’. And it doesn’t come cheap. Holland Park Education charges £5,000 for the service. But as William Stadlen, the Savile Rowsuited founder and managing director of HPE attests, this is ‘investment insurance’. Many of HPE’s clients will be spending ‘500K per child over 10 years’, and ‘we get that investment right for a fraction of the cost’. Holland Park Education’s clients are mostly bankers and the global super-rich. And they start early. Stadlen admits to meeting ‘a bizarre amount of pregnant women’; he recounts having to reassure the mildly hysterical parents of an 18 month-old girl that it was not ‘too late to get her into Cambridge’. Holland Park Education doesn’t carry out assessments on children under the age of five, but it does have an early years consultant who can place your baby in the nursery of your dreams, part one of a ‘road map’, an educational strategy designed for your child that should see the apple of your eye waltzing into Oxbridge 15 years later. The process starts with an initial consultation with Stadlen where he ascertains the family’s situation and what ambitions they have for their children. There follows an assessment; a quantitative analysis using a

sophisticated computer program, and a qualitative assessment with one of HPE’s specialist consultants who have more than 1,000 hours of preparing children for exams under their belt. HPE create a longlist and then whittles this down to a shortlist of the most suitable schools based upon the family’s specific wishes, the child’s academic potential and extra-curricular concerns such as music or sport etc. The assessments will also highlight any areas where your child might need extra help to achieve the sky-high academic standard these schools require. If so, the agency has a battery of young Oxbridgey tutors who can make sure your child is ready for their entrance exams at 7+ or 11 or 13+. Once a shortlist of schools has been decided, HPE will send on the assessor’s reports plus the agency’s own reference to the chosen schools. And this is really what you are paying for. Stadlen has spent the last decade or more building relationships with the registrars and heads in all of the best schools. His recommendation opens doors. As he explains: ‘There is currency to our word because we have successfully placed children before.’ The schools want the best pupils and know that HPE can deliver them. As Stadlen wryly adds, when it comes to the quid pro quo relationships between schools and agencies, ‘we’re not ahead of the curve, I think we created the curve’. HPE refute the notion that ‘there is one perfect school – this often only serves to increase the pressure on a child’, says Stadlen. But how do you tell a Russian oligarch that his Evgeny isn’t a suitable candidate for Harrow? ‘It’s all about expectation management,’ says Stadlen smoothly. ‘In the cases where a family have their heart set on one or two particular schools, then our close relationships with these schools means we may be able open certain doors. BACK TO SCHOOL If one of your resolutions is to finally sign up for that 5k, The Running School can make sure you’ve got the right technique. Gemma Billington pops in for a consultation The moment I submitted my application form for a charity 5k I felt a twinge of regret. Apart from occasionally darting across St Pancras station like a woman possessed, I hadn’t run properly since my school days – when I wasn’t exactly first pick for the rounders team. Childhood trauma aside, I primarily signed up for it as a reason to get fit and to set myself an attainable goal. On my first practice run, kitted out in leggings and t-shirt, I braved a nearby park and got going. About 30 seconds later, face as cerise as a ripe tomato, I gave up in a heap of spluttering and wheezing shame. Determined not to embarrass myself at the race itself, I persevered with weekly runs and by some miracle finished it in 32 minutes. My story is not unique. Asking friends for running advice, I was amazed at how many people take part in regular sponsored runs and enjoy running as part of their exercise routine. More and more I see City types in their sleek exercise gear, work clothes in bag, opting to run to work as an alternative to the crowded tube. Mike Antoniades, founder and director of The Running School, estimates that 50% of his client base are people, like me,

who’d like to get into running, have signed up to a race or are perhaps looking to improve their technique. The other half is of a more specialist requirement; mainly the elderly or people recovering from injury who require rehabilitation. To my surprise, the company also deals with a lot of children – some with suspected dyspraxia, coordination issues or even autism. Mike’s background is in sports rehabilitation and he has over 30 years of experience working with professional athletes. A number of signed football jerseys line the walls, which I’m sure would impress me even more if I knew who any of them were. Mike founded The Running School 15 years ago and though there are now branches in other parts of London and the rest of the UK, the Stamford Brook branch is the original site, and I suspect that Mike has something of a soft spot for it. The team at the Running School pride themselves on teaching you how to run better and faster in just 6 sessions. In the initial consultation, clients are taped running on a treadmill from different angles, so that their performance can be analysed. I’m shown a few ‘before’ and ‘after’ examples, and though

I’m far from an expert on the subject, the vast improvement is obvious. Ever the martyr to the cause, I too subject myself to a recording session. As I suspected, I look ridiculous. My left foot flops out to the side as if it’s broken and my left arm twists around to the right so much it looks like I’m trying to punch myself. The reasons, I’m told, are quite common – mostly due to sedentary habits - and my unique ‘style’ was probably vested by the time I was a teenager. But, as Mike so wisely points out, one is never actually taught how to run. It is just something that we assume comes to us as naturally as breathing, but it is not. So many people start running only to end up with injuries because they’re doing it wrong or are putting their joints in danger without realising. ooking round the freshly completed interior of 5 Westbury Road, I could see that this house had been a labour of love. I was greeted by Chris Cooke, the developer responsible for the refurb, who was beaming from ear to ear and who eagerly offered to give me the tour. The house’s appeal doesn’t sneak up on you – the reason for Chris’ enthusiasm and excitement is immediately clear. The proportions of the hall are grand and perfectly suited to the period style of the house. The lovely black and white tiled floor leads up to a magnificent spiral staircase, which acts as the centrepiece of the space and which I see, as I look up, corkscrews through three floors to the very apex of the house. Chris explains that the impressive structure was handcrafted by a carpenter to the specific requirements of the house, something the developer is very particular about when employing workmen as he believes in avoiding the ‘Jack of all trades, master of none’ style of building. This attention to detail shines through in his choice of high-end fixtures that provide the perfect finish to the bathrooms and bedrooms. The clever and efficient use of space, too, is due to Chris’ input; his experience as a loft-converter makes him loath to waste a single square foot, which has resulted in the addition of two panic rooms to the property as well as a magical, low-ceilinged room at the top of the house that is only accessible through a small door in the top floor bathroom and would be perfect as a playroom. Essentially a high-end family home, the property has many features that make it stand out, not least of which are its enormous garden and kitted out gym/studio/guesthouse/office/whatever you want, which stands slightly cut off from the rest of the outside space by an archway and some saplings. The kitchen, living space and bathrooms come equipped with all the most up-to-date mod cons whilst the reception rooms at the front of the house have a more period feel – but with a distinct contemporary twist. Some might consider such a luxurious development in an area like Ealing a bit of a gamble, but Chris is confident. Although he acknowledges that he is the first developer to risk it, there is no doubt in his mind that he won’t be the last. Looking around 5 Westbury Road, its garden and its airy rooms, its quirky additions and its traditional mainstays, I would be inclined to agree with him.

What made you choose Ealing for such a high-end refurbishment project? Essentially, Crossrail. Ealing has been widely publicised now as a future property hot spot due to the Crossrail Development. Put together with Ealing’s desirability as a family oriented Borough due to its schools, parks, existing transport links, retail space, and substantially sized family homes, I believe Crossrail is the final element needed for Ealing to become one of the next prime locations within London. How would you characterise the style of the house? It is predominantly a period restoration and the house is Victorian but with modern living catered for throughout.

Did any of the original features inspire you? The front entrance had a very small area of black and white Minton mosaic tile. This inspired the Minton floor we installed throughout the ground floor hallway and front garden. What is your favourite addition to the house? Without doubt the staircase. It’s the defining centrepiece of the house. How important is it to have a team with you that you trust and have worked with before? It’s absolutely critical on projects of this scale and in order to achieve such a highend finish. Everyone must be on the same page in the commitment to producing real craftsmanship throughout the project. My team are phenomenal. They are all passionate craftsmen who get huge satisfaction doing things thoroughly. Designing a house is easy, it’s the team that actually makes it happen. Does your background in loft conversion and building work make you more hands on? It does in the sense that I run the project on-site amongst the actual work day-to-day rather than from a desk. Being a carpenter and builder for so many years definitely gives me a better handle on designing a house with both the prospective buyer’s needs and the actual construction in mind. Cornus sanguinea ‘Midwinter Fire’ is a fabulous plant for the winter months. Its bright coral stems associate well with Sarcococca, Hellebores, Skimmia japonica and later on Snowdrops and Fritillaria. For much of the year the plant is clothed in bright green leaves but it is now, when these leaves are gone, that it is at its very best. Saying that though, the leaves turning from bright green to buttery copper before they drop are well worth the wait too. Cornus sanguinea ‘Midwinter Fire’ is easy to grow. For preference a good soil with some moisture is best but it will tolerate sun or even quite dense shade. POACHED CHICKEN 370g skinless chicken breasts / 1 lemongrass, bruised / 2 lime leaves / Salad dressing /

1. Boil a kettle. Pour about 300ml of boiling water into a large sauce pan, add the lemongrass and lime leaves and then add the chicken. Simmer it on a very low heat for 10 minutes. 2. Meanwhile, place the almonds on a baking tray and roast them in the oven for 5 minutes. 3. To segment the grapefruit, cut a slice off the top and bottom to make it stable. Then slice the skin off, taking off all the pith as you go along. 4. Hold the grapefruit in one hand (over a bowl – to catch the juice) and cut between the membranes to release the grapefruit segments. 5. Make the dressing by mixing all of the dressing ingredients together. 6. Dab the poached chicken dry with a paper towel, slice it into strips and mix with the rocket, grapefruit segments and the dressing. Scatter the almonds on top and serve.

Olympic Standard The Olympic has finally re-opened as a sleek local cinema and dining room complex. Gemma Billington puts it to the test

F

ood, like fashion, is subject to ever-changing trends, and in today’s culinary circles, it’s diners that are currently de rigueur. I’m not talking about your grubby roadside digs, however; think plush leather booths and chequered floors as favoured by the recently renovated Electric Diner on Portobello Road or the new Bush Hall Dining Rooms. Guilty pleasures like hotdogs and popcorn are no longer the prerogative of seven-year-olds or overweight Americans; they’ve been given a contemporary and trendy makeover à la Bubbledogs in Fitzrovia or the Red Dog Saloon in Hoxton. It is this marriage of unpretentious fast food with high quality ingredients served up in plush surroundings that is appealing to Londoners and proving to be an enduring hit. Not ones to miss a trick, when local husband and wife entrepreneurs Stephen and Lisa Burdge stepped in to save the Olympic Recording studios from an uncertain future, they not only reinstated the local cinema aspect, but also the cafe and dining rooms too – sinking a substantial amount of personal cash into the ambitious project. And they’ve created something truly exceptional. Absolutely nothing has been scrimped on, from the sleek decor and finishes to the smart and efficient team of staff. The design stays loyal to its glamorous 60s heyday, but doesn’t rely too heavily on its famous past. The diner inspiration comes in the form of some fast food options with a twist, plus a laid-back, all-day dining experience. A decadent brunch morning menu (plus the obligatory healthy options) is paired with an in-house bakery, serving waffles and pancakes and savoury tarts and pies in the evening. The lunch/dinner menu shows off a variety of meals as it flows seamlessly from lunchtime bites to hearty dinner dishes. My partner and I are slightly bewildered to begin with - the menu is split into more sections than we’re accustomed

to: starters, mains, ‘to share’, pastry kitchen, grill, salads, sides and sandwiches. It’s possible to be somewhat playful with all the choices and to break away from the standard three-course affair. My companion so very nearly orders the Olympic dog (with fried onions and hand-cut chips) but after much deliberation we decide to play it safe after all (sorry guys; next time we’ll be braver). I choose delicious deep fried squid with garlic mayo to start, whilst my partner has a delectable duck rillette with sourdough crisps. For mains it’s hand-cut tagliatelle with girolles (my latest food obsession), and roast cod with creamy mash and brown shrimp butter. We share a delightful bread & butter pudding with vanilla custard afterwards and, as we’ve decided to make a night of it by going to see a film too, we each have a shot of espresso to make sure we stay awake (we saw Captain Phillips - any additional stimulants proved to be unnecessary).

Taking on the huge task that was reviving The Olympic was a massive gamble, but the results could not be better. When we visited on a Thursday evening, a mere two weeks after opening night, the place was positively teeming with families, friends, couples on date nights and large parties. And this is the ethos of the Olympic in reality. It serves a variety of requirements; from mums popping in for a coffee at 11am, movie buffs enjoying a tipple in the members lounge, to a group of friends out for dinner, drinks and a movie. Aren’t the residents of Barnes lucky to have this on their doorstep. As for the cinema itself - with the comfiest reclining seats you’ll ever park your backside on and amazing Dolby Atmos sound - well, that’s another story entirely. A

morning spent with William Curley is enough to make Veruca Salt keel over with jealousy; two solid hours in west London’s finest chocolate boutique with award winning chocolatier and pâtissier. A childhood dream come true! But my visit isn’t all an Augustus Gloop-esque binge – I actually learn how chocolate was first discovered and hear the story of an ambitious Scottish teenager, who quit school and set off to become one of Britain’s most exciting chocolate pioneers. For someone claiming he ‘didn’t even know what a chocolatier was’ as a teenager, it’s surprising how far William has come from his humble Scottish roots. William’s face lights up as he tells me how he left school at 15 to attend college where he was faced with a choice of either metalwork, woodwork or cooking. ‘I thought I’d do cooking for a joke! We all had a bit of a giggle, but then I started to realise I actually quite enjoyed it.’ William clearly had enough drive to break the mould his father had for him. ‘I didn’t bother to tell many people I was going to be a chef. My father was a Docker so it went down like a lead balloon. If I’d told him that I was going to go and dig the roads he would have been delighted!’ He smiles and fondly mimics his father’s thick Scottish accent. ‘Cooking? Is that a job for mi laddy?!’

But William laughs at the irony of his father’s misconception; being a chef at La Tante Claire ‘couldn’t have been any tougher’. When William moved to London to work for Pierre Koffmann, his tortuous shifts ran from 8 in the morning and into the early hours. William then tells of how he went on to master the art of the chocolatier and pâtissier, and also Michelin-star dining, during his time in Gleneagles, Belgium, France, The Savoy, and under the watchful eye of Marco Pierre White. I listened intently as William went on to explain the fascinating history of chocolate. Did you know that it didn’t actually exist before the 1850s? I didn’t, until he told me that, ‘up until then it hadn’t been invented. All we had was a chocolate drink. Then Joseph Fry [a Quaker born in 1759 and renowned chocolate maker] mixed cocoa butter with cocoa powder and added a little sugar to make a tablet.’ The chocolate

bar was born! I raise my cup of velvety hot chocolate in honour of this discovery and continue to listen attentively to William’s rippling Scottish tones. With dusty cocoa pods in-hand like a pair of maracas, William plunges our conversation into the depths of the Aztec era. Apparently I’m not alone in my obsessive hot chocolate cravings. ‘Montezuma, the Aztec Emperor, is thought to have had 50 cups of cacao a day! The Aztecs worked out that the cacao drink gave them a lot of energy and made them strong. There was something special in it; it was almost spiritual.’ As William enlightens me, I feel shocked at how little I know about the origins of this irresistible brown substance which has cast its spell over so many. William then pokes a dark, oval shaped bean under my nose and asks if I would like to taste the cacao nib itself. The robust flavour of its raw form makes an 80%

cocoa bar – something I normally regard as ‘daring’ – seem more pathetic than a Milky Bar. William assures me that contrary to popular belief, good quality chocolate shouldn’t be bitter. ‘Lots of people identify high quality, high cocoa content chocolate with bitterness, but that shouldn’t be the case,’ he says. The Amedei chocolate William uses is made from the finest and rarest beans, all ethically sourced, of course. I’m struck by the depth of William’s expert knowledge and passion for his job, which he puts down to understanding ingredients, using the best and not compromising. I get the impression that, like his ingredients, William has always striven to achieve perfection, for that is something he has admired in both his mentors, Pierre Koffman and Marco Pierre White. ‘The great thing I found in the Michelinstarred restaurants I worked in was that we were all aiming for perfection. It’s a great thing to learn in life. If the whole country was like that, we would nearly be as good as Japan. My wife, Suzue, is Japanese, that’s why I say that...’

I’m fascinated to see if William’s Japanese inspired chocolates live up to expectations. The black vinegar chocolate is presented like a square jewel in slick Japanese style. Braced for a sharp hit of vinegar, I’m pleasantly surprised by its smooth, elegant flavour. In the

In pursuit of perfection, William confesses that he has not always known when to switch off. ‘I think my obsession with what I do is a source of frustration for Suzue.’ But he admits the birth of his daughter AmyRose has entirely changed his outlook. ‘If you had asked me two and a half years ago, I would have said, “This is all I do, this is all I want to do.” Now I look at things from a very different perspective.’ It’s clear from William’s recent awards – ‘Cookery Book of the Year’ and the ‘Next Generation Award’ – that he is still highly ambitious. He’s says he’s looking to nurture young talent, ‘to give something back’ to the industry that helped develop him. I leave full to the brim with one thought in mind; if ‘life is like a box of chocolates,’ I hope mine is a William Curley one.

‘When I told my Docker father I wanted to be a chef, it went down like a lead balloon’ tradition of Fry, William experiments with unconventional ingredients, like Szechwan pepper, to offer new chocolate experiences. ‘We are quite pioneering. We try to turn people’s heads.’ However, he clearly knows when enough is enough: ‘I’ve been obsessed with trying to get seaweed in, but it just won’t go. It tastes of fish. Fish and chocolate just don’t work!’

Walking into Bailiffscourt Hotel & Spa is like stepping back in time to the 1920s when it was built as a home for the Guinness family, using medieval timber and stone collected from derelict 13th century buildings nearby. Today, Bailiffscourt still feels like a private family home with its cosy nooks and roaring fires, four poster beds and oak beams, all set within 30 acres of parkland with the pebbled beach at Climping just a short stroll away.

After a glass of Merlot by the fire in one of the cosy lounges, the Tapestry Restaurant beckons. Medieval architecture, dark wood, mullioned windows and candlelight set an intimate atmosphere by night, matched by a menu of re-imagined British classics with fresh, local produce. We ‘ooh-ed’ over perfectly poached duck egg, rump of lamb and a tart-yet-sweet caramelised apple crème brulée. We were equally pleased with the wood pigeon, roasted monkfish and chocolate and praline delice, all the right side of indulgent for a winter getaway.

Par adise Found Beth Fryer discovers a tropical paradise at Mauritius’s Beachcomber Trou Aux Biches Resort and Spa

M auritius is one of those places which grows on you slowly. Don’t get me wrong, I was delighted to be stepping off the plane, but it wasn’t the desert island of honeymooners that I had been expecting. Efficiently organised, Mauritius seemed almost disappointingly developed and the springtime climate here in the south of the island wasn’t exactly welcoming.

This impression, of course, changed as soon as we headed north to Grand Baie and our home for the duration of our stay – the Beachcomber Trou Aux Biches Hotel & Spa. Here, the postcard-perfect images make sense. We’re greeted with smiles and a refreshing cocktail in the reception overlooking an expanse of infinity pools, all perfectly framed by a background of palm trees and a beautiful blue sea – a picturesque indicator of the days to come. Once checked in, we’re driven on a golf buggy to our tropical suite. The room is set within the hotel’s 35 hectares of lush tropical gardens and is one of 333 suites and villas, which have been organised cleverly so it still retains an element of privacy and seclusion. Our room is one of a group that looks into a central garden with a pool lying serenely in the middle – other rooms benefit

from their own private pools. We also have our own outdoor tropical shower which, alongside the rain shower and bath indoors, creates a sense that you really are tucked away in your own tropical escape. These tropical gardens are what make this hotel truly special. When I decide to head out and explore, I’m greeted by an abundance of colour and flora and fauna to which the gardens are home. It feels uncannily like paradise. Wandering out of my beautiful tropical surroundings, I emerge onto the beach – a pristine expanse of white sand and blue sea just shy of 2km in length. It’s also blissfully peaceful, only interrupted by the rattle of the Toy Story-esque golf buggy, which drives back and forth, niftily serving refreshments from the vending machine on board. Of course, as beautiful as the gardens are, there is always the niggling worry with a

hotel like this that there won’t be enough here to keep you entertained, especially if, like me, you’re not the type of person who can easily just kick back and relax on a sun lounger for days on end. We needn’t have worried – the range of activities here far surpassed our expectations. Head down to the boathouse and you’ll find a wealth of water sports, many of which are complimentary. I decide to try waterskiing to feed my action satisfaction, which is great fun, but I’m shown up by a lady who is twice my age and has twice the skill. The windsurfing lessons prove less successful (for which we have to take full responsibility) so we instead resign ourselves to a sedate pedalo cruise around the calm sheltered waters of the bay. But you’re not by any means confined to the hotel, and the friendly staff are more than happy to organise day trips for you. We went on a snorkelling trip to explore the nearby coral –a mini aquarium, just ten minutes by speed boat out of the bay. Here, expect to see the cast of Finding Nemo, thankfully minus the sharks! My other half also tried his hand

at a spot of deep sea fishing whilst I headed to the Spa by Clarins (I feel sea sick when presented with too many speed bumps let alone an actual ocean!). Here I indulged in an excellent facial at the hands of beautician Wendy. As she talks me through the treatment, it proves is so very relaxing that by the time I emerge to meet my boyfriend I feel as good as my now glowing skin looks. With trips to see the local marine life and tropical gardens on hand, Trou Aux Biches is an obvious choice for nature lovers. But it also happens to be perfectly situated for day trips to visit the National Botanical Gardens in nearby Pamplemousses. Amongst the miraculous nature here the gargantuan water lilies are the sight to see, making us stop to gaze in wonder as we strolled around the beautiful grounds. Hire a guide – not only will their expertise put the incredible plants you are seeing into context but their multi-lingual wit will catch you off guard. However, the highlight of our trip had to be when we were swimming just around the bay at Trou Aux Biches. To our delight, a pod of dolphins appeared in the waters and came up to say hello. It was one of those experiences which you expect only to see in brochures and not in real life, and yet it was totally orchestrated, a moment of pure serendipitous magic which summed up our time here in Mauritius perfectly. That night, we dined at Le Deck, one of the six restaurants at Trou Aux Biches, looking out to the sparkling sea. A

t the moment, a popular pricing method is to look at the price per square foot. This trend has come from Central London and whilst it is useful as a guide, the agent should also take into account many other factors. There is a road on Richmond Hill, on which all of the houses have been priced at £1000 per sq. ft. by various agents; regardless of the size or aspect of the garden, the condition of the house, or its position in the road. Although the housing market is very strong, homes still need to be individually priced by an agent who can ascertain their worth, not just by looking at price per sq., or what has sold recently, but by using many factors. H

ailing from Cape Town, South Africa I came to London armed with a town and regional planning degree to see what the world’s greatest city had to offer. By chance I got involved in property, beginning my career as a lettings negotiator at an independent agency in Hammersmith, before moving into sales at another independent in Barons Court. I was lucky to get into the Estate Agency game just as the market was turning in 2010 and have not looked back since. After building up a name in the local Barons Court and West Kensington areas, I decided it was time to move out of my comfort zone and challenge myself in a new area. I like adventure and am very goal orientated. My passions, outside of work, are fishing and staying fit. I am at the gym at 5:30am every morning, before getting ready for my day at the office. I enjoy the occasional fly-fishing outing, but my fishing passion really lies on the sandy shores of Cape Town where you can find me wrangling with all sorts of sharks and stingrays on the beach. You might also find me climbing down the side of a mountain to catch the schools of tuna swimming in the deep waters on the mountains edge. I joined Faron Sutaria as a valuer in their booming Fulham office and, within a short space of time, I caught my big fish and moved across to manage the Shepherds Bush branch. Since working in Shepherds Bush I have discovered that the area is rather like a rough diamond with massive opportunity and

investment potential. Property prices in the fourth quarter of the year, like in so many of London’s premier boroughs and locations, are rising at a rapid pace and are far superior to those that were achieved in the first quarter of 2013. Shepherds Bush is a strong and growing market, attracting investors for multiple reasons. Many buyers, who originally began their search in Fulham, Notting Hill and other surrounding areas, are realising that Shepherds Bush offers exceptional transport links with Central, Circle and Hammersmith and City Line underground Stations, as well as Shepherds Bush Overground station. All of which now enable you to circumnavigate London, especially with the great bus routes and an extensive regeneration programme. Planned projects which will continue the regeneration of Shepherds Bush include new residential developments at Shepherds Bush Market, the extension of Westfield Shopping Centre to incorporate a self-contained John Lewis, as well as the construction of a new hotel, the Dorsett Regency, over-looking Shepherds Bush Green due to open in 2014. A 10-acre site in White City is also being regenerated to provide shops, restaurants, cafes, bars, 1,150 homes, a leisure and community centre and a multi-storey car park, the former BBC White City base is also to be redeveloped and Imperial College London is creating a new technology campus in the area. hoosing the right agent, capable of attracting the best tenants is imperative. A good agent will confidently market any property to its full potential with professional photographs and showcase it on a great website (which in our case is awardwinning!). I would also suggest using an agency with a Corporate department with access to all the best London relocation agents and hundreds of companies ranging from large City institutions and medium sized corporations, to local businesses seeking accommodation on behalf of employees. In our experience, Corporate tenants tend to be the most favourable. Finally, to attract the best tenants, it’s essential that the property is immaculately presented – a deep clean and a lick of paint will certainly help to maximise the market value.

2. Best BTL investments?

P

lease do not hold me to this one! Where does one start, it really depends on whether an investor is seeking a good rental yield or capital growth, and it does make a difference. I advocate one or two bedroom flats as these, if purchased in the right area, will always be in demand. If you invest in the large family houses then the upkeep of a house can be costly and on the whole you will be limiting yourself to the family market, which can be seasonal and you could

have more void periods. It really is best to talk to one of Associate Directors to ascertain which investment might be best in their area.

3. Who is renting in the area?

Landlords can nominate their own contractors who we will contact first and at Featherstone Leigh, we constantly monitor our contractor’s rates, so landlords are guaranteed competitive prices, particularly as the majority of our contractors don’t charge call out charges.

5. Rental yield vs capital growth?

R

ental yields compared to capital values are generally low in Chiswick at around 3% net. But this does not detract from the investment side being an important part of the local market. Generally, investors will be in the market for the long term, either using the buy to let as pension tool, as a foot on the ladder for their children or a means to ultimately reduce the potential tax bill on a high value prime residence. Rental yields in Chiswick have over the years shown a close correlation to interest rates. In contrast, capital growth has out stripped most other investments and with this predicted to continue, it is the capital growth that is the main attraction for buy to investors in Chiswick/West London.
